EDITOR’S NOTE
ALWAYS
ON THE
GO
‘As mad as a March hare’ is how the saying goes, and our Active issue this
March will make you want to get up and go wild.
Our cover personality this issue, Jayden Liew, is the perfect face for the
Active issue. The Dealer Principal and Executive Director of Wheelcorp
Premium has big dreams for the future and is only just getting started.
Let us show you how you can practice your game at home with golf
simulators that can display the trajectory of the ball’s flight, replicate
realistic weather conditions and even reproduce famed golf courses.
Tropicana has spared no effort to provide a top-notch educational
facility for Tropicana Indah in the St Joseph Institution International
School, even donating a total of RM3 million to its SJII IB Scholarship
programme. Some high-profile sales were also made from its portfolio as
Dijaya Plaza was sold to Kenanga Investment Bank and the Sky Express
Hotel and surrounding land was sold to Pinnacle Supreme Sdn Bhd.
If you fancy a trip to the club, why not the Rotorua Golf Club in New
Zealand? It hosts one of the most unique 18-hole courses in the world
with stunning sulphuric geysers, steam vents and bubbling mud pools.
On the subject of must-visit exotic destinations, South Africa’s Cape
Town has to be up there on your list for its beautiful scenery nestled
between mountains and azure seas.
Zooming along, the newest Ferrari California T is a dream on the road,
combining powerful performance with streamlined aesthetics to exemplify
the Ferrari image. Electric supercars are not far behind, however – an
automobile revolution brought about by Elon Musk at the helm of Tesla
Motors to change up the car game.
We show you how to bake your own nutrition bars and look at what
women need to keep their bodies healthy. But if you’re after something
more exciting on the culinary front, American Michelin-star Chef Jeff
Ramsey of Babe will be happy to please with his molecular gastronomy.
As always, we hope you will enjoy this issue and perhaps it will inspire
you to get yourself up and moving. Whether it be fulfilling a New Year’s
resolution or simply doing something new, get active!
CHARISTAMIC CHEVRON
Taking a cue from the 70s, Anya Hindmarch has
come out with bags that scream for attention with
vivid chevron lines in contrasting black and white.
Sizes vary and Anya even experimented with
different types of straps that range from industrial
rope to layers of disco-era gold chains. From totes
to shoulder bags, Anya’s chevron creations will
step up your accessory game this season.
LACE IT UP
Burberry has taken a very
romantic fabric and injected a
modern sensibility and edge into
it for a match made in heaven.
Dainty dresses of sheer lace ooze
subdued sex appeal to bring out
the coquette in us. Paired with
stilettos or basic flats, these
lace dresses can be worn for
every occasion. Men, you are
not forgotten; Burberry’s lace
button-up shirts bring new life
to the preppy trend.
For the jetsetters, this Emilio Pucci creation
featuring a pattern reminiscent of lipstick
know you needed - it can serve as a wristlet,
wallet or cute makeup bag. The size is spot on
for travelling and we cannot take our eyes off the
BOHEMIAN RHAPSODY
The muse and partner for Sergio Rossi’s latest summer
collection is the gorgeous Italian socialite, Bianca
Brandolini d’Adda, who gives her take on 70s bohemian
chic. Sky-high platforms, now all the rage this year, get
hand-wrapped wooden marquetry with unique patterns
while the colourful embroidered lace-up shoes are just
waiting to be paired with cropped jeans.
6.
WHITE WASH
Menswear in 2016 takes a minimalistic route
with severe lines and soft fabrics. Ermenegildo
Zegna took that aesthetic but used white as
the base colour for a cleaner look. Detailing
like oversized pockets and invisible button
shirts lend a touch of quirkiness that makes the
collection look almost nautical, as if you were
attending a party at the Hamptons.
NOD
TO PUNK
Take a stroll down memory lane and embrace the
styles of 80s London fashion scene, which was
dominated by the punk subculture. MCQ’s 2016
spring summer collection puts a luxurious spin on
that era, as seen in their take on the blouson. Leather
is used for the solid colour blouson in cool navy or off
white, but it’s the panelled grey blouson with zipper
accents that takes the spotlight.
PILOT BUSINESS
The successor of the IWC Big Pilot’s watch
from 1940 is here and is given a modern twist
with a 55-millimetre case diameter. A definite
eye-catcher, this is a classic pilot watch with
propeller-like hands and calf leather straps.
The modern element is not only limited to size
but material as well, with stainless steel being
replaced by titanium. The 192-hour power
reserve ensures that you always know the time
regardless of the conditions.
MODERNLY RETRO
Subtle, light and distinguished by its essential lines
and maximum clarity of reading and setting, the new
Radiomir 1940 3 Days Automatic is a direct nod to
the practical styling of the 1940s housed within an
absolutely contemporary facade. For the first time
in the Radiomir 1940 collection, the dial of the new
Radiomir 1940 3 Days Automatic is offered in white.
Its graphic design maximises the dial’s clarity and
legibility, with the large black figures corresponding
to the hour markers and the small seconds dial at
nine o’clock - a characteristic of Panerai watches of
the 1940s.
CHAOSMOSIS
PRIMAL SCREAM
Cult British band Primal Scream is back once again with
their highly anticipated new album ‘Chaosmosis’. As with
all of their albums, the band’s 11th studio release takes
on another musical element. The six-second YouTube
trailer released to promote the album seems to suggest a
more dance floor indie-rock sound with a driving beat
and catchy guitar loop. With Primal Scream revealing
no secrets yet, buying the album would be the best way
to find out, but one thing that’s guaranteed is an album
packed with the band’s signature brilliance.
THE WHITE ALBUM
WEEZER
Weezer is back with the self-titled and eagerly anticipated
‘White Album’, their 10th studio album. Inspired by the
band’s experiences with living in the west side of Los
Boys-like sound with all the quirky stylings the band has
come to been known for. Album single ‘King Of The World’
is an instant classic hit with their signature upbeat guitar riffs
and anthemic choruses.
SURRENDER
HURTS
One of the most exciting new albums to come out
recently, ‘Surrender’ is the newest offering from British
synthpop duo Hurts. Packed with moving hooks and
poetic lyrics, Theo Hutchcraft and Adam Anderson
are at their absolute finest. Their third studio album
beautifully touches on the darker topics the group tends
to gravitate towards; however, in this skyscraper of a
record, they manage to maintain a sense of optimism by
highlighting the silver linings in their narratives.
Advertorial
With every car that rolls out of Regal
Valet’s new flagship detailing studio on
Jalan Damansara, Kuala Lumpur’s streets
become just that more sleek. The huge
comprehensive centre opened in February
2015 and replaces its TTDI and Bangsar
locations, becoming the single destination in
the city for all your vehicle aesthetics needs.
Regal Valet’s founders and childhood
friends Ng Soo Jin, Jerrod Ong and Kwong
Wai Loon set out on a mission: to provide
quality car upgrades with top tools and
specialist-grade materials. The three
developed an interest for car detailing whilst
retooling their own cars on weekends,
which blossomed into a passion for offering
a truly unique service – premium and highgrade
vehicle detailing.
So what kinds of things can you expect
to see improved in your car after a visit to
Regal Valet? Common aesthetic problems
include peeling or faded paint, scratches
or dents on the body, stubborn dirt or other
stains, unsavoury smells in the interior or
even missing parts. If none of these apply,
perhaps you simply want to spruce up your
car or restore an old clunker to its pristine
best? Good news – Regal Valet can help
with all of those and more.
When do you need the services of
Regal Valet? Let’s start with the basics:
a deep clean. Cars accumulate dust and
grime over the years and the paint loses
its lustre and shine. However, regaining
its new-car look and feel takes more than
just a quick vacuum or some soap on the
hood, as Regal Valet well knows, which
is why they use specialist products and
thorough procedures on both the outside
and the inside to get rid of stubborn stains,
marks and other flaws, making it look and
feel brand new.

Left to right: Jerrod Ong, Ng Soo Jin and Kwong Wai Loon
BEFORE
AFTER
But there are some things that even the
most thorough cleaning cannot fix, such
as patchy paintjobs or faded paintwork,
particularly in a humid climate like ours. Regal
Valet’s specialist offsite paints and bodyworks
facility, RV Sprayworks, is the perfect solution
for all your paintjob reworking needs – the
detail-oriented process and on-site Master
Painter expertise ensures nothing is missed,
while their prized protection system, GYEON
Quartz, is a ceramic coating that keeps new
paintjobs looking freshly vibrant and shining by
seamlessly sealing the paint in to preserve its
lustre for years to come.
With Regal Valet being the official detailer
in Malaysia for names such as Honda, Lotus
and Quill Automobile (local car dealer for BMW
& Rolls Royce), you know that your car is in
expert hands here. They are uncompromising
on quality and will go above and beyond the
industry standard to revive and rejuvenate
your beloved cars to look good as new. Visit
their website www.regalvalet.my to find out
more about their services.

A HOLE IN ONE
WORDS JUSTIN HEYES
PHOTOGRAPHS FULL SWING GOLF SIMULATOR
WITH GOLF SIMULATORS CONTINUING TO BECOME A TREND
IN THE HOMES OF THE RICH AND FAMOUS, WE TAKE A LOOK
AT WHY MORE AND MORE PEOPLE ARE CHOOSING TO PLAY A
ROUND FROM THE COMFORT OF THEIR LIVING ROOMS.
As virtual technology continues to improve, a growing
number of people are starting to explore the seemingly
endless possibilities of simulators inside their own homes.
One of the most popular applications for this technology
comes in the form of golf simulators: installed projectors
and sensors that allow the owner to experience the joys
of the world’s best golf courses without stepping out of
your front door.
golf in the home
A status piece showcasing the ultimate in home leisure
systems, the golf simulator works by using a combination
of hardware and software components to track your
movements and relay the projected club and ball launch
as well as flight conditions to a projector, which then
simulates what the ball would have done in the real
world in a virtual golf environment.
In simple terms, golf simulators, such as the Full Swing
Golf Simulator, use a set space and area for you to swing
your golf club and show you how your shot would have
carried on a real course. One of the benefits of a golf
simulator is that now, with the development of golf
course software, the Full Swing Golf Simulators enable
you to choose from 93 championship courses to ‘play’
on, including 30 of Golf Digest’s and Golfweek’s ‘Greatest
Courses’, allowing you to experience course conditions
around the world without the incurred travel costs.
13 holes in your living room
Surprisingly, installing an entire golf course in your
home doesn’t take up as much space as you would think,
thanks to the innovative design of the simulators. The
projector hangs from the ceiling with the touchscreen
attached to a wall, while dual tracking systems are
placed on either side of you and wirelessly feed back to
the programme on the computer.
Both the Full Swing Golf S4 and S8 are less than 13 feet
in width, meaning that virtually any spare wall space in
your house can be turned into a round on the greens
almost instantly. Both simulators come with optional
side walls for a more engaging virtual experience,
and the simulators themselves come with remarkable
software which significantly upgrades the look of each
golf course for a more lifelike feel, including effects such
as trees that blow in the wind, crashing waves, running
streams and rippling lakes.
the feather in your handicap
Asides from being an impressive piece of technology,
golf simulators now have remarkable applications to
your own game. Irrespective of the weather, you will
always have a place to practice your drives, chip shots
and putting with accurate feedback. The programme also
comes with a teaching option in which golfers from the
PGA tour share their tips on how to improve your game.
Many of these PGA players also own a simulator
themselves, as Rory McIlroy recently explained in an
interview with Golfer’s Digest; golf simulators are a
fantastic way to refresh your memory of unfamiliar
courses before tournaments. For those that don’t play
golf, like famous rapper 50 Cent, the simulator is more
of a luxury item which provides him and his friends with
a way to blow off steam and challenge each other in a
sport they have no experience in whenever they want at
no extra cost.
For golf enthusiasts who want to introduce others to
the game, a golf simulator is the best weapon in their
arsenal. Conveniently allowing friends to come over
and try out a game whenever they’re free, the Full Swing
Simulator also helps parents to introduce children to the
game. While playing a full game at the club may seem
like too much effort for a child, the opportunity to try
the game in a virtual world at home is highly appealing.
driving the point home
Perhaps a golf simulator sounds like a dream come true,
but you’re not sure if your partner would agree? Fear
not. The Full Golf Swing Simulator’s projector, screen
and interface are also fully compatible with television
sets, computer displays and game systems like the Xbox,
Playstation and Wii, meaning that an investment in a
simulator is also an investment in a large screen projector
system for the entire family.
With exceptional picture quality and an easy-toconnect
link for sound systems, your simulator can
be transformed into a home entertainment system not
dissimilar to the private home theatres now on sale,
allowing you to host parties for sporting events such as
the World Cup, PGA Tour events, Superbowl and so on
as well as nights in with friends to watch the latest films
and television series.
“The simulators themselves come
with remarkable software which
significantly upgrades the look
of each golf course for a more
lifelike feel”
into an agreement with Kenanga Investment Bank to
sell its Dijaya Plaza tower in Kuala Lumpur for a cash
consideration of RM140 million.
The sale comprises a piece of freehold land measuring
approximately 3,674 sqm, together with an en-bloc
19-storey office tower with two levels of basement car
park containing 322 parking bays. Strategically located
in the heart of Kuala Lumpur City Centre, the building
is approximately four years old and is a recognisable
landmark in the city skyline.
Established for more than 40 years, Kenanga is a financial
well as one of the top three brokerage houses with the
largest network of remisiers in the country.
Tropicana’s wholly-owned subsidiary, Advent Nexus Sdn
Express Hotel in an agreement with Pinnacle Supreme Sdn
Bhd for a cash consideration of RM55 million.
The four-and-a-half year old hotel and land has been sold
agreement is under the condition that Pinnacle complete
the purchase agreement by paying 10 per cent in advance,
with the remaining sum paid over the next two months,
with an eight per cent late payment interest (per annum)
calculated on a daily basis.
Arising from the sale of Dijaya Plaza, the cash inflow
is expected to improve the Group’s financial position
by freeing up net proceeds of approximately RM51.6
million. Based on Tropicana unaudited results as of 30
AN INTERVIEW WITH MR JAYDEN LIEW
Road To Success
A BRIGHT YOUNG TALENT THAT MADE HIS WAY TO THE TOP FROM THE BOTTOM
UP, JAYDEN LIEW, EXECUTIVE DIRECTOR OF WHEELCORP PREMIUM, KNOWS ALL
ABOUT LIVING LIFE IN THE FAST LANE.
AN INTERVIEW BY KAVITHA SEHERAN PHOTOGRAPHS BRIAN FANG / M8 STUDIO
ART DIRECTION NOR HAMIMAH ABDULLAH HAIR & MAKE-UP GAVIN SOH
How did you get into this industry?
I started at the age of 18 right after high school as my
father practiced a ‘Chinaman’ style of approach to life. He
felt Generation Y collegegoers were wasting time loitering
around, so he made me work and study at the same time.
He made me start from the bottom – as a general worker.
I’ve done everything from sales administration and even
been a salesman. Only once he felt I was more mature did
he decide that it was time for me to grow with the business.
I am glad he made me go through the whole thing as I now
understand everything from the top to the bottom. If you
think about it, even if you are the managing director of a
company, at the end of the day, you’re still a salesperson.
You’re always selling your brand, whether it’s to higher
corporate businesses to convince them to do business with
you or current acquaintances.
“We aim to provide a one-stop
automotive ecosystem experience
for our customers which can meet
all their needs and serve them
through generations’’
Why the automotive line?
Wheelcorp Group has been in the industry
for the past 34 years, which is when my father
started the business. We did not come from
a well-to-do family; in fact, we were a rather
poor family. My father told me that he loved
cars at a very young age. He used to go around
checking out cars in the neighbourhood.
Everything started after he saved up enough
money to buy his first used car. Wheelcorp
started off as a used car trading business. He
would cycle around and look at newspapers
for advertisements. At his peak, he sold 200
cars in a month.
As a used car trader, we face a challenge: to
find stock. As the demand grows, you have
to find used cars, so he had to meet new car
retailers and sales advisors to ask if they were
open to the idea of trading their customers’
used cars in when they purchased a new one.
After a while, he started to wonder how he
could further develop his business and it hit
him – why not sell new cars to complement
his used car business? That is when my
father ventured into the authorised new
car dealership industry. By selling new cars,
we naturally had stocks of old cars from the
former owners, which ended up helping the
used car business as well.
Back in the 80s and 90s, I would say he was
quite a pioneer in the sense that he was one
of the very few used car business owners to
venture into the authorised new car dealership
industry. As the new car business is more
‘corporate’, most used car business owners
were too intimidated to try it out as they
weren’t that well educated. Thankfully, my
father took a chance and made that leap, which
is a dream come true for used car business
owners. He tried many brands out, challenging
himself, and managed to get a breakthrough
with Toyota and Mazda dealerships.
If you can run a successful retail automotive
business, you can run any retail business.
This is one of the biggest industries and the
car manufacturers think in a very all-rounded
way. They think of selling your car, financing
it, maintenance, warranty, a buy-back
programme for your car, as well as coming
up with new products to suit that lifestyle.
There’s a life cycle and it’s very sustainable.
What are your plans for the future? Will
you be sticking to the same line of work or
venturing out?
To be honest, I may be considered young agewise
but I’ve been in this line of business for
nine years. What we fought for and thought
of five years ago is what this is (referring to the
impressive new BMW Premium outlet) and
I would say this is just the very beginning of
my future. Over the past few years, we’ve been
winning several awards in the industry.
As I gain more experience in the automotive line
and matured as a person, I am inspired by my
father’s initiative to change and continuously
improve ourselves for better growth and
development. I aim to create a one-stop
automotive eco-system experience that offers
various brands for our customers. We want to
provide everything in the life cycle of a car - sales,
servicing and maintenance, upgrading volume
brands to premium brands like BMW, trading
used vehicles, and even accident repair centres.
In the automotive business, when you sell a
vehicle to a customer, you naturally create a bond
with your customer. They rely on you for their
vehicle needs. So instead of recommending them
to another outlet or business, it would be nice if
we could provide them with those services.
MARCH/APRIL 2016 | TM 67

Our core business has always been in the automotive
industry, but development could be something we might
be looking into next. After years of being in the same
line of work, you feel the love for what you do and cars
in general – men and cars just somehow click, after all.
So I do not see myself moving out of the industry per se,
but I believe there definitely will be more exciting things
coming out in the future. We are one of the only SME
businesses to venture into the premium brands in the
Klang Valley.
I can’t begin to imagine what I’ll be doing at 35 if this
is where I am at 26. I believe life is very short, so you
should use every moment of your life to create something
impactful and what you are proud of achieving – money is
a good thing, but it surely isn’t everything.
You mentioned that cars and men somehow seem to
connect. Are you a big fan of racing and all things
car-related?
I’m not really into racing. It’s more about the mechanics
of the car itself and trading. Making money is the whole
point of selling cars, but how you do it is important. Every
time we sell cars to customers, we sell an emotion – a
lifestyle. As a person, not every car will fit your fancy. But
as a businessman, we see beauty in every aspect of a car,
and when we see a customer whose lifestyle fits a specific
car, we sell that to them. Basically, selling them something
we know they will love. You have to really understand
your products and have them at your fingertips.
What’s your advice on people who want to start
up their own business, especially in the current
economy, since both your father and you had to start
from the bottom up?
Be absolutely positive, especially in bad times. My
philosophy is to ignore external factors. I definitely believe
you set your own visions and you put your heart and soul
into them. External factors are simply bonuses, or they
might slow you down a little bit, but you always have to
strive to find your direction or the right ladder to climb.
Having the mindset of ‘Do or Die’ will eventually bring
success knocking on your door. In Malaysia, 600,000 new
cars are sold every year. So even if the economy drops 50
per cent, you still have 300,000 new owners to tap. Sure it
gets tougher, but find a way to get those customers.
If you have the passion for the set targets that you want to
achieve, you can do it. It’s a lot of hard work, but success
does not simply fall at your feet. At my age, I always
believe age is not a factor. However, when I was in my
late teens, I noticed that people might not always believe
in you. So what you need to do is work twice as hard and
prove your worth. Build your inner confidence by learning
every detail in your line of work so that the barrier and
misconceptions of age is broken.
“I believe life is very short, so you should use every moment of your life
money is a good thing, but it surely isn’t everything’’
MARCH/APRIL 2016 | TM 69

What’s your advice for the millennial on working
life?
Always find a balance between work and life. Remember
to spend time with the ones you love while you’re trying to
achieve what you want. Personally, I don’t believe in taking
a day off in between as I feel it breaks the rhythm of your
work. So instead, I prefer giving my full concentration for
a period of time and taking a long leave when you feel like
you need a break. But when you take off, really try and
enjoy your life to the fullest because you deserve it.
What’s your take on the Tropicana properties and
developments as a whole?
My very first purchase was when I was 19 at Casa. I’ve
been living in Tropicana for 10 years, currently residing
in Tropicana Indah. I really love the environment and find
the security is really good. The residential area feels safe –
it’s quiet and green – it just feels very secure. At the same
time, it’s strategically located for me as it is at the centre
of everything. For instance, it only takes me 15 minutes
to get to work here (in Setia Alam) using the NKVE, or
15 minutes to Old Klang Road (where my Toyota outlet
is located) if there is no jam, that is. So it’s easy for me to
head to KL or head south.
Do you have more than one Tropicana property?
We have quite a few as we believe in the developer and
area. I think we have invested in most of the projects that
they have developed. We have properties in the same
area currently – Tropicana Grande, Tropicana Gardens,
Casa Tropicana, Tropicana Golf and Country Resort. Five
years ago, my father invested in the property located next
to Tropicana City Mall, which turned out to be a really
good investment.
‘‘The residential area
CAPE TOWN IS A VISION OF A CITY. WE INDULGE IN THE CASUAL
LUXURY OF THE CAPE ROYALE HOTEL AS WE STROLL THROUGH
THE STREETS OF THIS COLOURFUL CITY.
MARCH/APRIL 2016 | TM 73

The downtown streets of Cape Town are decorated with
brightly coloured buildings; many still retain their Dutch
architecture without eliminating the South African spirit with
their neon walls. As the pull of the ocean breeze takes you
towards the water, you fall in love with the varied blue hues
splashing across the city’s brim. But there is an edge with Cape
Town. You see it when you turn back from standing on the
water’s fringes towards the majestic mountains and hills that
cocoon this city.
To get the five-star treatment and an all-round luxury experience
in Cape Town, the Cape Royale Hotel is one of the places to
stay. Its location between downtown and the waterfront makes
it an ideal place to get the best of Cape Town. Plus, the view of
the mountain ranges from its suites is just the cherry on top of
the cake. Note that the Cape Royale Hotel is an all-suite hotel, so
be ready to get the comfiest and most spacious of travel living.
Choose between sea or hill views as the suites come with Juliette
balconies that overlook the beauty of Cape Town, whether it be
the crystal waters of the Atlantic or the lush scenery of Table
Mountain. Luxury comes in the little things, like their silk
duvets with Egyptian cotton percale linen sheets for you to roll
around in after a day out on the town. Their deep bathtubs call
for a soaking session filled with aromatics and candles, or just
bask in the waterfall from their extra-large shower heads to
wash away your stress.
From top to bottom — The stunning dining view from the Cape Royale Hotel; spacious
suites with multiple bedrooms; elegant living spaces with Juliette balconies
If you are feeling like you deserve extra, the penthouse rooftop
suites are fit for a king. The best feature of the penthouse is
that one does not have to choose between the hills and the
sea because the garden deck on the rooftop gives an enviable
360 degree view. While lounging on your private deck, if you
suddenly feel parched, just call in your personal butler (it comes
with the penthouse) to brew you a refreshing beverage. Fancy
a South African meal on your doorstep? Your personal chef can
whip up some frikkadels (South African meatballs) or any other
dish you crave.
Speaking of food, the Cape Royale Hotel plays host to an array
of eateries. The quaint Cafe Royale serves French cuisine at its
best - we recommend the savoury waffles topped with smoked
salmon. Meanwhile, the outside terrace of the Italian-inspired
Rustica is a fantastic place to soak up the sun while you indulge
in handmade pasta from their kitchen. Plus, signature cocktails
can be enjoyed at the Zenith Sky Bar, where visitors can lounge
and watch the sun set in scenic fashion over the sprawling town
and harbour.
“Celebrities like Christina Aguilera
have been spotted wearing
diamonds from the ‘Platinum
Kings’ of South Africa’’
To take full advantage of the sea just a stone’s throw away, the
waterfront at Green Point is a funky, energetic part of town
with a slew of shops, bars and restaurants. The Victoria &
Alfred Waterfront - or V&A Waterfront - at Green Point is the
local entertainment hub that sports restaurants, such as the fine
dining Beluga, which are known to attract celebrity clientele like
Samuel L. Jackson and Kevin Spacey. Another notable mention
is Baia, which serves some of the freshest seafood in town and
hosts scenic views of the harbour; supposedly glitterati of the
likes of Paris Hilton have dined here.
Africa is known for its diamonds, so a trip to Cape Town
without bringing back some sparkling stones is nearly unheard
of. South Africa’s premier jeweller, Shimansky, is also located
at the V&A Waterfront. Celebrities like Lionel Ritchie and
Christina Aguilera have been spotted wearing diamonds from
the ‘Platinum Kings’ of South Africa. There is also the Cape
Town Diamond Museum, built by the people of Shimansky,
which displays stunning replicas of famous jewels of history.
No one can go to Cape Town without experiencing the wonders
that Mother Nature has moulded in this world-renowned
location. Table Mountain is a rocky boulder with a flat top
that acts as the centre of the city and is definitely the centre of
attention here. Watch pillowy clouds float by above the blue
seas and be wowed by every shade of orange imaginable as you
take in the breathtaking sunset from the top of Table Mountain.
Take the cableway up for the best view in town, and you can
even dine at the Table Mountain Cafe, which serves gourmet
deli favourites.
No matter how you explore Cape Town - be it through its food,
people or history, you will depart with a sense of amazement.
The way Mother Nature has created a green haven bordered by
crystal waters, blended with the rich culture and casual luxury,
makes Cape Town deserving of a spot on your travel list.
THE GAME CHANGER
Elon Musk
THE ENTREPRENEUR & THE VISIONARY
WORDS ROHAN JONATHAN
PHOTOGRAPHS GETTY IMAGES AND ISTOCKPHOTO
AS CHAIRMAN, PRODUCT ARCHITECT AND CEO OF TESLA MOTORS,
ELON MUSK HAS PLAYED A PIVOTAL ROLE IN STEERING THE COMPANY
THAT HAS CHALLENGED CONVENTIONAL CONCEPTIONS OF ELECTRIC
VEHICLES AND ARGUABLY REJUVENATED INTEREST IN THEIR PURSUIT.
Elon Musk has a history of bright ideas; at age 12, he taught himself how to code to a
level of proficiency that enabled him to design his very own video game – ‘Blastar’ –
that he sold to a magazine for a few hundred dollars. Fast-forward to university and
instead of video games, he had become occupied with a more sobering topic: what
would most affect the future of humanity.
Among other things, Musk thought a lot about electric cars – so much so that he
would bore his dates talking about them. But after an itching to enter the Internet
business in the 90s, Musk put his electric car dreams on hold while he established two
multimillion dollar companies (including one which would become PayPal) and even
founded a company to make rockets.
His long-standing automotive interest was reignited when he climbed into the AC
Propulsion tzero – a small electric sports car with perfect torque and incredible
acceleration. After seeing what the car was capable of, Musk tried to convince its
developers, AC Propulsion, to work towards creating a commercial version of the
car – even offering to fund the project – but was ultimately unsuccessful. His wish
would be granted, though, when Martin Eberhard, who had gone as far as investing
in the company to make the dream a reality, approached Musk with business partner
Marc Tarpenning to invest in a new company they had incorporated in 2003 called
Tesla Motors.
Even though low production, relatively successful electric vehicles had been made in
the past, there was still great doubt about whether or not electric vehicles would ever
break free of their ugly (and slow, low-range, long recharging) duckling label, one
that had existed since before Henry Ford’s time. A California law enacted at the start
of the 1990s had mandated that companies sell a small percentage of electric vehicles,
giving rise to cars like the GM EV1 and Toyota EV RAV4. Musk had originally
thought that the industry would naturally shift to electric vehicles and was shocked
when companies went as far as recalling and crushing their electric vehicles once the
California law was relaxed. In the wake of these events, the electric vehicle industry
waned.
MARCH/APRIL 2016 | TM 81

Enter Elon Musk and Tesla Motors. Musk decided to put
up his own money and join this ambitious company, all the
while heading his own recently established and precariously
positioned company – space exploration startup SpaceX. He
was splitting his time but had a strong vision of expediting a
complete industry shift in automobiles. Musk knew that the
company didn’t have the funds nor the technology able to
create a compelling mass production electric vehicle – yet –
but that wasn’t the immediate goal. Instead, inspired by the
AC Propulsion tzero, Musk and Tesla Motors were going to
first show everyone that you could make an exciting, high
quality, long range, all-electric sports car.
And they did just that. In 2008, Tesla Motors released the
Tesla Roadster, the first all-electric commercial vehicle
to use lithium-ion batteries (like the ones in your laptop
and mobile phone), breaking several records - including
distance travelled - on one charge. The Tesla Roadster
quickly changed minds in and out of the industry. Following
the release, Musk took full charge of the company as CEO
and renewed the focus on fulfilling the mission statement
of Tesla Motors, which was and still is, “to accelerate the
advent of sustainable transport by bringing compelling
mass market electric cars to market as soon as possible”. The
small-volume sports car was step one, not the end game.
Following the release of the Tesla Roadster, as Musk hoped,
major companies were producing competitive electric
vehicles again with models like the Nissan Leaf, BMW
i3 and Chevrolet Volt arriving soon after. The industry
appeared to be shifting, but there was work left to be done.
Four years after releasing their first vehicle, the Tesla
Roadster, Tesla Motors released the Tesla Model S in 2012
– a sedan – which continued the company trend of recordsetting
cars. Among its greatest achievements was receiving
the highest safety rating for any commercial car, electric or
not, in history. It would become the first electric car ever to
be the highest-selling vehicle within a month in any country
and remains today the second highest selling all-electric car
in history. But the last fact likely wouldn’t trouble Musk too
much, who has continually advocated for other automakers
to develop and sell electric vehicles – even going so far as to
make Tesla Motor’s patents available for free usage.
Clockwise from top left − Tesla Roadster parked on a street in Hamilton, Ontario;
Elon Musk at a Tesla Model X launch in Fremont, California; Tesla Model S charging
at a supercharger station in Zevenaar, The Netherlands; An LCD touchscreen in the
cockpit of a Tesla Model S
Tesla Motors followed up the Tesla Model S release with
the Tesla Model X – an SUV – and plans to roll out the Tesla
Model 3, the highly anticipated mass market car Musk has
been envisioning since the beginning, within the next few
years. Musk himself has stated in the past that in order to
have a large effect on the industry, the cars must be affordable
to most people. Indeed, Musk hopes to assist companies in
making electric vehicles so that total adoption will increase.
Make no mistake, Musk still wants Tesla Motors to make
the best electric cars – but not at the sacrifice of the electric
vehicle industry as a whole. While Musk certainly hasn’t
done it alone, it was his capital that made this pipe dream
of a Californian startup car company a possibility. Though
once plagued by a muddled history, electric cars are seeing
their greatest renaissance yet and a lot of that is due to the
determination and sacrifice of one man – Elon Musk.
THE DRIVE
Ferrari
CALIFORNIA T
THE LATEST STEED IN THE FERRARI STABLES IS A THING OF BEAUTY
TO BEHOLD - BOTH IN FRONT OF AND BEHIND THE WHEEL.
WORDS ANTOINE COMMARE PHOTOGRAPHS FERRARI
A synonym of luxury and power, Ferrari has, for most of us, always been an
inaccessible dream. The California T won’t change that situation; however, for
those who can, it is an incredible car to lay eyes on - and drive.
If the Ferrari California T had to be summarised in a couple of words, they
would be: sublime elegance, sportiness, versatility and of course, exclusivity.
Since the 1950s and the launch of the California line, Ferrari has constantly
been upgrading its models, and the latest result is this new innovation.
The California T is an amazing articulation of Ferrari’s sporty DNA, while its
retractable hard top and 2+2 configuration make it extremely versatile.
Maranello’s engineers have created a car which is remarkable not only because
of its design and power, but also a slew of unprecedented achievements
that have set a new benchmark in the industry when it comes to blistering
performances and efficient fuel consumption.
As a result of the everlasting collaboration with Pininfarina, the Ferrari
California T appears as a sophisticated, untamed horse that can be used as a
tourer with a fantastic, ergonomic handcrafted design.
MARCH/APRIL 2016 | TM 85

When it comes to the driving experience, the
California T is a true Ferrari. With a pure and raspy
engine, it has a venomous response. The first three
gears were made with an incredible torque so that
you get the full surge only when hitting the high revs.
Once you reach the upper ratios, it becomes a bit more
relaxing, and this is where the California T is amazing. One
moment it can be a supercar, and the next it can immediately
transform into a relaxed cruiser. It all depends on your mood.
We were lucky enough to be able to take this amazing
piece of engineering to the winding roads of Bukit Tinggi
and Genting Highlands. On the highway, the double
turbo will leave you speechless and wanting more. But
the true nature of the V8 engine becomes obvious once
you hit the mountainous asphalt. Take the top down, let
the wind hit you, and it becomes an amazing experience.
Icing on the cake? The noise - or should I say music? - of the
engine is fabulous. The California T is certainly an attentiongrabber
and an eye catcher. Be prepared to make heads turn
by look or by sound. The sleek yet aggressive design combines
all the effects one can expect from such a car.
I am a motorbike rider. If I had to summarise this entire
experience, I would say that the Ferrari California T is a bike
with four wheels. Power, acceleration, the feeling of freedom
with the roof is down, and a massive engine sound. All within
the comfort of a fantastic interior.
"One moment it can be a supercar,
and the next it can immediately
transform into a relaxed cruiser"
From top — The V8 engine beneath the hood is as beautiful as it is powerful; The elegant dashboard features sophisticated
controls; The California T's interior is stylish yet comfortable for long drives
CITROËN SPECIAL
In Safe Hands
With
THE CITROËN C4 PICASSO
Citroën’s new Picasso is superbly safe without sacrificing performance
The Citroën C4 Picasso focuses on safety without compromising
on versatility and performance. The compact five-seater is the
launch vehicle for the new generation EMP2 modular platform
and contains a host of improvements and new features.
Its excellent safety features make it the ideal family car, with
electronically controlled Xenon Dual-Function Directional
Headlights burning bright with halogen bulbs and intelligently
following the steering angle for better, more intuitive coverage.
The Intelligent Traction Control function helps the tyres grip
slippery surfaces, with a tyre pressure monitor in each alerting
the driver to low pressure. Plus, the car’s blind spot monitoring
system creates a bright orange glow on either wing mirror if a car
up to three metres away moves into a blind spot.
To prevent dangerous veering while at high speeds, the Lane
Departure Warning System (LDWS) activates at speeds higher
than 50mph. The driver’s seatbelt vibrates when the vehicle
passes over a straight white line, and all seatbelts in use
engage in pre-tension if a collision is anticipated.
The active cruise control acts on the accelerator and engine brake
to maintain a good distance behind the car in front and drives at
the set speed on an open road. Parking is also made easy as the
car controls everything aside from reversing, accelerating and
braking. A picture is displayed on the upper 12-inch panoramic HD
screen and audible signals are used for guides.
But the Citroën C4 Picasso isn’t just safe, it’s smart. It
automatically shuts down the engine as you roll to a stop and
then restarts the engine after you release the brake pedal to cut
down on fuel consumption and CO2 production, making it perfect
for the stop-start driving style common in cities with heavy traffic.
The lower seven-inch screen controls the dual-zone air
conditioning, media and satellite navigation and the upper
12-inch screen displays the speed, RPM and fuel. The car
feels spacious with a 630 litre boot, wide legroom and a large
panoramic windscreen to increase natural light.
Its eye-catching design features 17-inch alloy wheels and
unique LED light signatures, along with a sleek, stylish
exterior. Add to that a stunning dashboard and three elegant,
comfortable back seats that recline independently.
The convenience doesn’t end there; a simple touch on the door
handle allows access as the car remotely detects the electronic
key fob. No need to get the keys out once inside either –
there’s a start/stop button for that. Everything in the Citroën C4
Picasso is designed with you in mind: the safety-conscious,
convenience-oriented, style-seeking modern car buyer.

SULFUR MOUNDS AND GEOTHERMIC CRATERS GALORE AT ONE OF
NEW ZEALAND’S ODDEST COURSES.
88 TM | MARCH/APRIL 2016

MARCH/APRIL 2016 | TM 89

New Zealand is not all about sheep, men with tattooed faces
or Lord of the Rings. It is also the land where glaciers and
volcanoes rule the region with a slew of epic selfie spots
that you will remember to the end of Middle Earth. Top
that with ponds of sulfur featuring magnificent geysers due
to geothermal activity, which is what you will discover at
‘Te Rotorua-nui-a-kahumatamomoe’ or, in easier terms,
Rotorua, located three hours away by car from Auckland.
Here lies the ‘Arikikapakapa’ Rotorua Golf Club, which is
touted to give you a unique geothermal golfing experience.
Sitting prettily in the picturesque Whakarewarewa
geothermal village inside the city itself, the Rotorua Golf
Club is a full 18-hole, par 70 course that provides variety
and challenge with many holes played over and around both
dormant and active thermal areas. This is an all-weather,
links-style course with easy walking and an excellent
golfing layout where you may just come across hearing the
sound after which it was named, Arikikapakapa – meaning
‘the gentle sound of popping mud’.
The club was established in 1906 and had three homes
before finally settling on the Arikikapakapa Reserve in
1912. The Reserve, especially set aside for recreational and
medicinal use for its hot springs, was gifted to the British
Crown by the representative of Ngati Whakaue – the local
Maori clan that belongs in Rotorua.
On the course, golfers can test their skills using four different
colored tees: red, yellow, white and blue. The course’s
variety of sui generis playing features is highly protected
and well-maintained by its members with a strong sense of
pride, making it one of the most well-known international
golfing destinations south of the world.
This would be one of the courses where the caddie would
tell you that at the left of the 9th hole green, there are a
number of bubbling mud pools and steam vents that should
be avoided, while it would take a bit of skill to maneuver
the odd-looking sulfur mound located on the right. Widely
written about by golf writers around the world, it has even
been featured on New Zealand’s postage stamp.
The spectacular 14th hole brings a bigger surprise, guarded
by a monster geothermal crater - one that is forbidden to
descent into. Opened in February 2001, golfers love to
view it as a signature hole and a par here will be a pleasing
story you can brag about back home.
90 TM | MARCH/APRIL 2016

MARCH/APRIL 2016 | TM 91

This magnificent course is set on pumice ground which
allows for rapid drainage after rain, so golfers are very
rarely deprived of play while greens recover in a matter
of minutes after rainstorms. A warm water stream that
attracts a lot of stray balls is what you will find at holes 3,
4 and 5, reinforcing the view that accuracy is much more
important than length on most holes on this course. Holes
6, 9, 14 and 17 are testing par threes and danger lurks
surreptitiously - except on the greens.
The 7 and 10, both par five holes, present special challenges;
the 7th has a blind tee shot with out of bounds down the
right and the 10th is across a sulfur dome with trees tight to
the fairway and a busy road behind an elevated green with
an invisible borrow to the north.
The 13th is an acute dog-leg right that gives the strong
hitter a chance to drive across the trees guarding the elbow
while giving an easy pitch to the green. Holes 14, 15 and
16 are played across or alongside a lake and apart from the
added danger of water, the chilly winter’s morning steam
rising from the lake is a sight to behold. Accuracy is the
operating word here as these three holes, known as Amen
Corner by locals, are a real threat. Many matches were won
or lost by the smallest errors here as they are classic risk
and reward holes.
Arikikapapa’s 18th boasts great views from an elevated tee
across to the Whakarewarewa geothermal reserve and the
forested hills beyond to a connivingly tricky second shot
between two big trees to a well-guarded green. Making
its mark as one of the favourites on the course, a par here
might be a well-earned one.
Lo and behold, the bunkerless 5th is the most feared hole in
these parts where out of bounds down the right, a monster
tree on the left and a warm steaming creek just in front
of the tee call for good, straight shots. The shallow green
is easier to hold with a wedge than with a 5-iron, so it’s a
good test for the nerves too.
The entire golf course was rebuilt in 1996 with new
bunkers and large undulating greens as part of its ongoing
development. These developments are essential to make it
a sought-after golf course and the apparent shortness of the
layout is deceiving as it will not surrender to par unless
every fairway and green is hit upon in regulation play.
The Rotorua Golf Course is an easy walking course with
good paths and the pro shop has golf carts for hire and as
well as other golfing equipment. It is a soft spike course and
the reduced wear on the greens has been a big bonus since
soft spikes came into force.
What A Girl
WANTS
WORDS SHEREEN KHOO PHOTOGRAPHS ISTOCKPHOTO
LADIES HAVE DIFFERENT NUTRITIONAL NEEDS TO MEN, SO WE TAKE
A LOOK AT WHAT WOMEN SHOULD BE EATING TO STAY HEALTHY.
In conjunction with the International Women’s Day which
is celebrated globally on March 8 every year, let’s focus
on women’s nutritional health, which is vitally important
in relation to women’s quality of life as well as their
reproductive health and pregnancy outcomes.
CALCIUM
Women are at a greater risk of developing osteoporosis
than men. According to the World Health Organization’s
(WHO) report, osteoporosis is estimated to affect 200
million women worldwide – approximately one-tenth of
women aged 60, one-fifth of women aged 70, two-fifths of
women aged 80 and two-thirds of women aged 90.
An individual generally achieves peak bone mass by 18-20
years of age. After hitting the mid-20s, young adults with
low bone density are unlikely to catch up with good peak
bone mass at all. Therefore, it is crucial to have sufficient
calcium intake in the first 20 years of life.
Milk is still the best source of calcium. One cup of milk
(250ml) provides approximately 20-30 per cent of your
daily calcium and the amount varies depending on
brands. Therefore, the best way to choose the brand is
by comparing the amount of calcium that each 100ml of
milk provides and simply pick the one with the highest
amount. Take two to three cups of milk a day to fulfil your
calcium requirement but choose low-fat milk to minimise
unnecessary weight gain.
For those who are lactose intolerant, calcium-fortified
soymilk is a good alternative, or consider taking calcium
supplements. Other food sources of calcium include
yoghurt and cheese.
IRON
The human body needs iron to make the oxygen-carrying
proteins haemoglobin and myoglobin. Many women,
especially those who do not consume a lot of red meat, do
not get enough iron in their diet. On top of that, women
generally suffer more iron loss compared to men. These
may be a result of pathological losses due to excessive
menstruation or loss of iron during the reproductive life,
especially during pregnancy.
Iron can be found in both animal and plant foods. Animal
sources, which are mainly haem iron, include meat, fish
and poultry. Plant sources, which are non-haem iron,
include dried beans, peas and lentils as well as some fruits
and vegetables.
The Recommended Dietary Allowances (RDA) for iron
typically reflects the iron requirements for non-vegetarians.
According to the National Institutes of Health in the U.S.,
the RDA for vegetarians are 1.8 times higher than for
people who eat meat because haem iron from meat is more
bioavailable than non-haem iron from plant-based foods.
To overcome the problem of bioavailability, non-haem
iron is better absorbed by our bodies when it is taken
along with meat, chicken, fish or with a source of vitamin
C. So having a cup of citrus fruits and juices, cantaloupe,
strawberries, broccoli, tomatoes or peppers will be helpful
when consuming a vegetarian source of iron.
FOLIC ACID
Folic acid is a nutrient required by everyone but
requirements are notably increased during pregnancy.
This nutrient is vital for the development of a healthy
foetus as it can significantly reduce the risk of neural tube
defects such as spina bifida. The neural tube closes at days
24-28 after conception and the extra folate must be taken
before this, notably at a time even before the woman may
be aware or certain of her pregnancy. Therefore, as a
preparation to conceive, healthcare professionals advise
every woman of childbearing age to consume a daily
supplement of 400 micrograms of folic acid while they
are trying to conceive, and should continue taking this
dose during the first 12 weeks of pregnancy. If folic acid
supplements was not consumed before pregnancy, it should
be taken as soon as you find out you’re pregnant.
PHYTOCHEMICALS
Detoxification, also known as ‘detox diets’, is typically
characterised by a period of fasting which is then followed
by a strict diet of raw vegetables, fruit and fruit juices. This
is gaining much popularity amongst women; however, the
evidence of the effectiveness of such diets in eliminating
toxins from the body remains questionable. Instead of
relying on unproven fad diets, eating to detoxify should be
based on a system of choosing foods to protect, maintain
and renew the body.
LEAN PROTEIN
Women who are watching their weight sometimes cut
back on protein foods to avoid fat. However, weight
management is more effective if lean protein is included
in every meal because eating the right amount of protein
helps to balance blood sugar, which in turn avoids energy
fluctuations and keeps you fuller for a longer time. The key
is not to eliminate protein altogether but to choose optimal
sources of lean protein such as low-fat dairy foods, eggs,
lean meats, poultry, seafood, nuts and beans.
Eating To Detoxify
Foods with phytochemicals that boost detoxification include:
• At least 1 cup of cruciferous vegetables (cabbage, broccoli, collards, kale, Brussels sprouts) daily
• A few cloves of garlic
• Decaffeinated green tea in the morning
• Fresh vegetable juices including carrots, celery, cilantro, beets, parsley and ginger
• Herbal teas containing a mixture of burdock root, dandelion root, ginger root, licorice root, sarsaparilla root, cardamom
seed and cinnamon bark
• High-quality, sulfur-containing foods – eggs or whey protein, garlic, onions
• Bioflavonoids in grapes, berries and citrus fruits
• Dandelion greens
• Rosemary
• Curcuminoids (turmeric and curry)
• Chlorophyll in dark green leafy vegetables and in wheat grass
THE Pioneer CHEF
BABE, MALAYSIA’S FIRST PERMANENT RESTAURANT BY A MICHELIN-STARRED CHEF, ISN’T JUST
ABOUT FINE DINING. AMERICAN CHEF JEFF RAMSEY AND CO. ARE CALLING IT ‘FUN DINING’ – A
RELAXED AND LAUGH-FILLED WAY TO ENJOY THE BEST OF MODERN COOKING.
WORDS ROHAN JONATHAN
PHOTOGRAPHS SOO PHYE
“We agreed that
we could really
build something
wonderful here
and that the
people deserved to
have something
different to talk
about’’
Chef Jeff Ramsey is a man filled with
ideas, and his latest one is currently
sitting near the top of Damansara
Height’s Work@Clearwater building.
Babe is a new restaurant whose selfprofessed
maxim is ‘Fun Dining’,
a concept that seeks to shake up
traditional notions of how one should
enjoy fine cuisine. As for the food itself,
well, he’s happy to let you be the judge.
So what exactly is ‘Fun Dining’?
“When I enjoy a fancy meal, I want
to be able to laugh and enjoy myself
comfortably. That’s what it’s about,”
said Chef Ramsey. The design of the
restaurant complements its motto –
aside from a complex ceiling fixture, the
rest is simple and conveys refinement
without the pressure of having to put
on your best face or be on your best
behaviour just to eat there. “I see it as
a place to gather with friends and have
a ‘wow’ experience - one that they will
remember with their friends for years
to come,” he continued.
In terms of cuisine, Babe serves
‘Japas’ (a portmanteau of ‘Japanese’
and ‘Tapas’), which is a wide variety of
small plates containing modern dishes
mainly inspired by (but not limited to)
Japanese cuisine and ingredients. Such
is his level of commitment to flavour
complexity and preciseness that Chef
Ramsey has even decided to grow a
rooftop garden to supply his kitchen
with unique herbs he needs that he can
find nowhere else.
As with any interesting concept,
you become curious to learn more
about the mind behind it and it was
with this curiosity that I approached
my meeting with Chef Ramsey. He
greeted me with a warm handshake
and a smile; genuinely friendly with
118 TM | MARCH/APRIL 2016

none of the pretension or loftiness you
might think would come with being
awarded a Michelin star. It wasn’t
his charming manner that struck
me, however, but his understated
confidence – resembling the focus and
resolve of artists or craftsmen whose
belief in their work – and themselves –
resonates from within.
Chef Ramsey grew up in Maryland,
USA after being born in Japan to a
Japanese mother and American father.
His path to the kitchen began as a
dishwasher in a sushi restaurant, where
he rose to the rank of sushi chef. From
there, he started to enjoy the feeling
cooking gave him. “The immediate
gratification of having them taste
something tasty that I prepared makes
me happy,” he said.
He went on to work with some
tremendous chefs, such as Japan’s
official sushi ambassador Masayoshi
Kazato and Spanish-American chef
José Andrés (who himself was the
protégé to Catalonian chef – and
legend – Ferran Adrià of elBu), picking
up plenty of valuable knowledge and
experience along the way and becoming
well-versed in different cuisines.
But it was iconic Japanese chef
Hide Yamamoto’s choice to have Chef
Ramsey head the Molecular Tapas
Bar at the Mandarin Oriental, Tokyo
which opened up his passage to Kuala
Lumpur. That was also the restaurant
that received a Michelin star under his
watch, something that he said “means
a lot of creative freedom. People trust
the Michelin Guide, and that trust is
extended to me”.
The birth of Babe is the story of
like-minded people discovering that
they share in a vision. Datuk Jared Lim
and his wife Datin Dian Lee met him
at a pop-up restaurant he did with the
Mandarin Oriental, Kuala Lumpur and
bonded over an exciting vision they
envisioned. “We agreed that we could
really build something wonderful here
and that the people deserved to have
something different to talk about,” he
said. It was with these partners that he
found the backing and belief to open
up a permanent restaurant in Kuala
Lumpur.
A justifiable impression indeed,
if the dish he prepared for us was
anything to go by – Smoked Oysters
with 7 Citrus Mignonette. The oysters
were carefully placed upon a bed of
ice, decorated with floral elements and
finished with a drizzle of sauce into the
shell - a swift yet precise performance
that exemplified his creativity and
attention to detail.
It captured Chef Ramsey’s vision
for Babe: delicious food which sparks a
conversation. Menu items with names
like ‘1000 Year Old Cypress Smoked
Yellowtail Nigiri’ and ‘Virtual Truffle
Steak’ are bound to be conversation
starters for now, though the menu
changes frequently to keep things fresh.
The selection is the culinary
culmination of – and homage to –
all of Chef Ramsey’s illustrious past
and is like nothing else in the city (or
anywhere else for that matter). In true
intrepid fashion, he is carving out his
own path; innovating, changing and
pioneering the future of dining right
here and now.
NUTRITION BARS
INTO HEALTHY LIVING? TRY THIS VERSATILE RECIPE FOR A
FILLING SNACK THAT CAN BE MODIFIED TO SUIT YOUR NEEDS.
PHOTOGRAPHS ISTOCKPHOTO
With a focus on healthy living going mainstream, people have started to look into cooking their own healthy dishes to
improve their diet. However, many of these people run into problems when they feel the need to snack. One simple,
delicious solution is nutrition bars, and here we teach you how to make your own.
Bursting Granola Bars
One of the simplest, most versatile nutrition bar recipes around, this recipe makes 12 bars and can be adjusted to suit
your needs. As long as the portions are similar, the dried fruits and nuts in this recipe can be switched for any other types
of fruits and nuts and the sugar and butter can be replaced with lighter options, depending on how clean you are eating.
Enjoy baking yourself a wonderful, fully-customised treat.
RECIPE
Ingredients
• 2 1/2 cups Old Fashioned Rolled Oats
• 1/2 cup Whole Natural Almonds (coarsely chopped)
• 1/3 cup Honey
• 1/4 cup Unsalted Butter
• 1/4 cup Dark Brown Sugar
• 1 tsp Vanilla Extract
• 1 tsp Chia Seeds
• 1/4 tsp Kosher Salt
• 1/4 cup Dried Cranberries (coarsely chopped)
• 1/4 cup Dried Golden Raisins (coarsely chopped)
• 1/4 cup Mini Chocolate Chips, plus extra as needed
Preparation Method
1. Heat oven to 350 degrees F.
2. Line bottom of a 9-inch square pan with parchment paper.
Then lightly spray the parchment with cooking spray.
3. Combine the oats and roughly chopped almonds on a small
baking sheet, then bake 7-10 minutes until lightly toasted.
Transfer to a large bowl.
4. While the oats are toasting, combine the butter, honey, brown
sugar, vanilla extract seeds, chia seeds and salt in a small
saucepan over medium heat. Cook until the butter melts and
the sugar all dissolves, making sure to stir occasionally.
5. Pour the butter mixture over the toasted oats and almonds and
add the cranberries and golden raisins. Mix well. Let cool about
5 minutes, then add the mini chocolate chips. Stir to combine.
6. Transfer the oat mixture to the prepared pan. Using a rubber
spatula, firmly press the mixture into the pan until the mixture
is in a uniform layer.
7. Scatter the remaining few tablespoons of mini chocolate chips
over the granola bars and use the same rubber spatula to
gently press them into the granola so they stick. Transfer the
entire pan to the refrigerator and chill for 2 hours.
8. After the granola has chilled completely, gently lift it out of the
pan, using the parchment paper as handles, and cut it into 12
bars. Serve as needed.
9. If you’re waiting to use these, wrap them individually in more
parchment paper until ready to eat.
Champagne
CELEBRATIONS
PHOTOGRAPHS ISTOCKPHOTO
THE DRINK
IT'S TIME TO PARTY, AND HOW BETTER TO DO SO IN STYLE
THAN WITH THE MOST CLASSY OF ALL BUBBLIES?
To the winner of the race goes the champagne bottle - but besides drenching the podium in it and gulping
it straight from the bottle, what else can you do with champagne? We’ve found some fun champagne
cocktails you can try out whenever you feel like celebrating. Pop the cork and let’s get mixing!
128 TM | MARCH/APRIL 2016

The Classic Mimosa
Anyone who’s ever had champagne
will be familiar with the Mimosa;
it’s like the poster boy of champagne
cocktails. However, people often do
not get the mix right and ruin the
taste as a result. Here's our perfect
ratio for the Classic Mimosa; again,
be sure to use a champagne flute for
best results.
Ingredients:
• 2 ounces of orange juice
• 4 ounces of Brut champagne
• 1 teaspoon Grand Marnier
(optional)
• Orange bitters (optional)
Method
Fill 1/3 of a champagne flute with
fresh-squeezed orange juice and top
up with Brut champagne.
Optionally, for a true Mimosa, add
a teaspoon or so of Grand Marnier.
A dash of orange bitters, if you have
them, will add a little complexity to
this simple yet elegant drink.
Barbotage
The Barbotage is a truly indulgent
champagne cocktail, mixing cognac and
Brut champagne; the pricier the bottles
you use, the greater the enjoyment this
combination provides. Be sure to serve
in a champagne flute for best results.
Ingredients
• 1/2 ounce cognac
• 1 teaspoon Grand Marnier
• 4 ounces Brut champagne
Method
Pour cognac and Grand Marnier into a
champagne flute, then top up with Brut
champagne.
Black Velvet
The Black Velvet is certainly the
more macho champagne cocktail.
A powerful drink with quite a
kick, the trick is to combine the
stout and champagne in a Collins
glass to allow the two to properly
mix. Fortunately, this cocktail is
remarkably easy to make.
Ingredients
• Stout
• Brut champagne
Preparation
Fill a Collins glass halfway with
stout and top up slowly with
champagne.
Stir gently with glass or plastic rod.
THE TREND
WORDS AISHAH AZALI
Beard Oils
With the ever-growing trend of
facial hair becoming a fashion
statement, grooming it is as
important as keeping it. Beard oils
moisturise and keep that facial
mane of yours soft and neat. A vast
market for beard oils has popped
up recently, but traditional brands
like Penhaligon’s have been trusted
over the years. The concoction of
sunflower and grape seed in their
Bayolea beard oil is one of the best
in the market for gentlemen that
take great care of their facial hair.
Adam Reed & Blue Hair
Hairstylist to A-List celebrities
including Ellie Goulding and
Jessica Simpson, Adam Reed
recently travelled to Malaysia
to launch the newest hair
products from Percy & Reed.
He talked about the amazing
hair texture Malaysians are
lucky to inherit and that
ink-black hair with cool blue
highlights are making a splash
in the world of hair. With
celebrities like Kylie Jenner
and Demi Lovato already
leading the trend, Asia will not
fall behind.
Game of Thrones Tour
The Game of Thrones books and
television series have been a massive hit
these past couple of years. To recreate
the vision of author George R. R.
Martin, the series was shot in many
spectacular locations from Croatia to
Spain. Tenon Tours takes hardcore
fans around actual shooting locations
in Ireland and Wales where they can
explore the iconic stone castles and the
forested countryside that formed the
setting for their beloved series.
Aerial Shots
With the success of GoPro as a camera to
capture all your special moments while
travelling, especially if it is the adventurous
kind, it is no surprise that GoPro is taking
it a step further and building their own
drone or quadcopter. The device is slated to
come out sometime in 2016 and promises
to be a hit with budding filmmakers and
photography enthusiasts. For now, there is
the DJI Phantom quadcopter to mount your
GoPro with and record away.
