Food & Drink Sombrero Servings Georgia Watson returns to The Fox in Burwell for more Mexican magic During my time at Velvet, I’ve been lucky enough to visit The Fox and its sister restaurant, The Bengal Fox, a number of times. On this occasion I brought with me a new member of the team, Adam, to experience the delights of the quintessential village pub with a Mexican twist. Walking through the bar, you get a real sense of a community pub with locals at the bar and real ale on tap (something Adam was happy about!). Heading through to the restaurant, Adam exclaimed that it felt as if he was leaving Suffolk behind and entering a little piece of Mexico. Greeted by our friendly server, we took our seats as the Mexican music in the background helped build a fun, relaxed atmosphere. With advice from the landlord, Bob, we opted to try the new specials on the board, all of which sounded delicious! For starters we decided to share the wild mushroom, spinach and cheese quesadillas, which arrived on a wooden plate with vibrant green salad and bright red chilli peppers. The perfectly folded quesadillas looked mouthwatering and contained a fabulous mix of cheesy, delicate tasting mushrooms with a little Mexican kick. Again picking our choices of mains from the specials board, I decided to go for the trio of roasted peppers with pulled pork, chilli and refried beans, and Adam chose the wild mushroom and prawn taco with tequila cream sauce. The plates of bright, bold colours reached the table piled high with fabulous smelling food, and we couldn’t wait to jump in. Tasting a forkful of the roasted pepper, the gorgeous slow cooked pork with Mexican flavourings was a melt-in-themouth creation! I could have eaten a whole dish of this pork; with the slight crunch of the veggie accompaniment and gooey melted cheese it was truly inspired. Trying the next pepper, my palette was met with soft refried beans that were packed full of flavour and a spicy hit. The final roasted pepper was a Mexican version of chilli con carne with a building spiciness. Sneakily tasting some of Adam’s taco, the sauce was phenomenal, with the wild mushrooms and prawns offering a light hint of spice, together with the traditional Mexican tastes of a crisp taco, salsa, guacamole and sour cream accompaniments. Although not something you’d associate with Mexican cuisine, the prawns went incredibly well with the flavours, and it was definitely a dish I’d order next time. We’re already looking forward to seeing the team at The Fox again soon, and I think Adam is definitely a new regular! We Recommend you try the wild mushroom, spinach and cheese quesadillas starters!
