There have been many good tales that originated from the Hotel Klosterbräu over the years and so it’s no surprise that this 

one has its beginnings ‘in-house’. Alois Seyrling – the eldest of the 6th generation – decided to take a chance on something 

completely new : starting a process with impressive results through revolutionary visions and traditional values: YOUNIQUE. 

SINCE 1516 sets the tone. It is our guiding principle and all-encompassing vision that will be practised in our whole hotel.

Tell us more Mr Seyrling. What prompted you to start such a process? 

When it comes to the business, the core question for the past 200 years has always been: What am I going to pass on to my 

children, the next generation, and how am I going to do it? 

Of course we haven’t done it all by ourselves. We have been lucky to have had many loyal and trustworthy companions on our 

journey, some of whom even worked for my parents, but after just one meeting it was clear to everyone: this is the beginning 

of something quite new and exciting. Our goal has always been clear: the Klosterbräu should remain THE KLOSTERBRÄU, just 

fresher, younger and more dynamic. 

The beginning of something quite new – what can we take from that? 

Our hotel is a former monastery and will be 500 years old in September. That in itself makes us quite exceptional as a family 

business, not only in Seefeld, but worldwide. 

And it was with this singularity in mind that we developed the first part of our supplementary logo, UNIQUE. The more we thought 

about it though, the more it became obvious that a crucial element was still missing: where were the guests, their personalities, 

their needs? In the end, my wife Agnes hit the nail on the head and came up with a new word: YOUNIQUE, which manages to 

connect our guests (YOU) with the concept of individuality (UNIQUE). And that’s no mean feat. 

So, a new strategy for the next 500 years? 

No, it’s not really a strategy, it’s more how we actually live and breathe. It’s how we’ve lived for a long time and we just want to 

make it a focal point. Our hotel, “the Klosterbräu & SPA” has enjoyed a long tradition as a gracious host and in the old days, as 

nowadays, it was important for our forefathers to make their guests feel comfortable and to have personal contact with them. 

We simply want to expand on this sense of well-being and concentrate on the needs and demands of our guests, which have also 

increased and changed with the times. 

Apropos expanding – your own family is expanding... 

My wife Agnes and I are really looking forward to the arrival of our daughter in August and our son Luis keeps us on our toes as 

it is. He recently showed off his skills as an entertainer during the end-of-season staff party so we know 

we can rely on him for support. Even with eight hard-working family 

members in the hotel, there’s always room for more! 

2016 – a year of highlights – both personal 

and professional. What else are you 

hoping for? 

I have lots of different hopes and aspirations, 

but above all I think being happy no matter 

your situation is very important. Thanks 

to our friendly, fun-loving staff, who love 

and cherish the work that they do, we can 

look positively to the future and put all our 

plans into action. Together with my family, 

I want to give our guests a magical summer 

and autumn experience, full of delightful, 

happy, pleasant and Magic Moments in the 

Klosterbräu SINCE 1516.

‘Last Order’ for Ewald and Hand-over to Björn 

After 51 seasons in 

the Klosterbräu, 

there are a 

many great stories to 

tell. Unfortunately we 

can’t get any real secrets 

out of Ewald – a really 

good barman needs to 

be totally discreet in his 

opinion. Ewald is leaving 

Björn our new head bartender the Klosterbräu with both 

a smile and a tear, ”Now I can do what I like and I can spend 

time with my grand-children“. 

However, when Ewald starts talking of the ‘good old days’ in 

the 80s and 90s, he can get carried away. Back then, every day 

was a party with the regular guests. 

Ewald und Björn ran the bar together last winter and so the 

road ahead has already been laid out. Being the creative 

type, Björn has already come up with a few new highlights 

for the bar and he is full of enthusiasm and is very excited 

about his first full season as head bartender in the Hotel 

Klosterbräu & SPA. 

And what does Ewald wish for his successor? Happy guests 

and happiness at work. 

Anyone who knows Ewald, knows that he doesn’t lose his 

coolness easily, patience and resistance to stress are important 

qualities. Many times he had to play the psychologist late in 

the evening. Ewald smiles, that’s part of the job, the same as 

listening and expressing the personal opinion. 

Dear Ewald, we will miss you a lot! A big thanks for your loyalty 

and devotion. You were always solid as a rock and the true 

definition of a bartender.

SEEFELD SOUR 

5 cl Tyrolean raspberry brandy 

3 cl fresh lemon juice 

2 cl sugar syrup 

2 bar spoons of fresh or pasteurised egg white 

Shake for about 10 seconds, sieve the drink 

onto ice cubes in a crystal red wine glass and 

finish off with fresh raspberries.

those classy paws. 

The Premium-Suites are generously-sized and luxuriouslyfurnished 

with a modern take on Alpine style. The eight newly 

renovated suites will be available for guests from June 2016 and 

each suite has a walk-in wardrobe, a large bathroom with vanity 

table and a separate shower and bidet. The living/sleeping 

area feels more spacious thanks to the 3.20 metre high arched 

ceiling and the fire-place with candles lends a romantic touch.

You‘ll feel especially close to nature out on the terrace, enjoying 

Seefeld’s wonderful mountain air as you stroll across the 

grass still wet with dew, while the rest of the family carries on 

snoozing . In the living area the sun rays flood the suite with 

light as they shine through the glass façade. Then at the end 

of an eventful day, enjoy the peace and quiet of the Seefeld 

plateau with some candles and a glass of red wine in front of 

the open fire and perhaps start dreaming of your next hiking 

tour somewhere out and about in the mountains.

or dismantled, we never knew what we were going to find 

behind the old walls“. And that’s exactly what happened when

which then made the feel-good factor even bigger.

If you think Pizza-Service in a 5-star 

hotel isn’t allowed, think again. Not 

only will the Vitalbistro be available 

as of summer 2016, the Pizza-Service will 

be starting up then too. 

Starting at 7 am, you can have fresh 

juice or breakfast after swimming some 

lengths in the outside pool. During the 

day we serve tasty focaccia, pizza from 

the stone oven, home-made breads and 

crispy salads to help fill the gap between 

meals. And hikers who don’t want to miss 

out on their Tyrolean ‘Jause’, can have a 

healthy snack-plate in the winter garden 

or on the terrace. 

Cosy fabrics, wooden beds and a 

tiled stove full of crackling logs in 

autumn - that’s our idea of total 

relaxation. Guests have a lovely view on 

the outside greenery from inside our 

refurbished quiet room and can really 

appreciate the calming effect of the 

monastic vaulting and absorb the energy 

from the wood-design room.

Midi and her husband Alois “Bubi” Seyrling transformed the simple monastery hotel into a vacation 

resort. The Olympic Games in 1964 and 1976 helped to establish the hotel in Austria and pushed it as

The history of your hotel is characterized by exceptional people and events… 

… as Emperor Maximilian I. founded the Monastery in Seefeld … as the Augustinian monks offered board and lodging 

for travelers and pilgrims… as the monastery closed its doors and the family Seyrling began to turn it into what it 

is today… a jewel in the Tyrolean alps… a classic example for cordiality and service, as it can only be offered by a 

family-run business… driven by permanent development but still preserving the 500-year old traditions… a fresh

the good Spirit of our Hotel 

Cristina Seyrling has many full-time jobs. So is the passionate cook not only responsible for the entire interior design, 

the decoration of the hotel and she is an idea provider and inspiration concerning new projects too. You will always 

meet her with a charming smile on her face. Our long-time regular guests have found an affectionate nickname for 

our Grande Dame: the good spirit of our hotel, who you can find throughout the entire monastery. 

The Gewölbsaal (vaulted hall) & Ritter-Oswald-Stube 

The vaulted surrounds lend an elegant flair and add to the 

historic atmosphere in the evening. Choose from a 6-course 

menu selection, exclusive gala dinners or a rustic farmer’s buffet.

Be in the thick of things in the heart of the monastery kitchen. 

Have a look in the pots and let the cooks serve you. 

Talking to Cristina Seyrling you feel her Italian temper and her endless pride of her three kids. She is very happy that the 6th 

generation is already part of the business. “I tried to raise my kids down-to-earth and to give them traditional family values 

on their way. The bond within the family is the most important thing and I can not be that wrong, if I see my kids perfectly 

working together. 

Mrs. Seyrling, you managed the hotel many years by yourself – did you feel overloaded at the beginning? 

No, despite I am a very lively person, who often says what is on his mind, I do not get stressed that easily. My husband rebuilt 

the hotel according to his ideas and imaginations and has been visionary. So to keep his memory, I did not immediately 

change everything as I was in his position. I decided to look at everything calmly. As my kids entered the business, we began 

a process of changes in the management and rebuilding the hotel step by step. When I look at the current remodelling works, 

I see how they preserve traditions and everything their grand-parents and parents built. 

Mrs. Seyrling, do you have a favourite spot in your hotel? 

There are many places I feel very comfortable in the hotel. The wine cellar is the core of our hotel and as summer comes, 

I have already something in mind for an extension of the wine cellar. I do not want to talk more 

about it, because some of the highlights will be presented at our 500-year anniversary. One 

of my absolute favourite posts is the Reflektorium, which we use for yoga. The room 

has an air of strength and peace.

Apropos Yoga – thanks to your initiative we can 

enjoy Yoga retreats at the hotel. 

Yes, the Yoga programme, which I launched four 

years ago, will be again an fixed part of our

HERB GARDEN 

The Common Hop 

(Humulus lupulus) is a type of hop known for 

its use in beer brewing. 

Tradition requires that we brew a natural, 

unfiltered beer, which is actually in keeping 

with our Green Kodex. We use pure mountain 

spring water from the Naturpark Karwendel 

nature reserve and hops and barley from 

our own monastery garden. It’s no surprise 

therefore that our monastery beer was 

voted Austria’s best micro-brewery beer in 

2015 and that it’s wonderfully refreshing 

to drink, smooth and with a fruity note. 

The wholesome amber nectar is available 

as BUBIS Helles (lager), SIGIS WEIZEN 

(wheat beer), ALP-PILS (pils) and the Dunkle 

Bedrohung (dark beer). 

The next project in time for our 500 year 

celebration: Champagne-beer in a large 

bottle, fermented with our home-grown 

brewing barley and Champagne yeast.

500 years – in vino veritas 

The monastery wine cellar in the Hotel Klosterbräu 

& SPA is, and will always be, in the hearts of the Seyrling 

Family. It includes not only a collection of vintage 

wines and Champagnes from exclusive vineyards, but also a 

family shelf with individual bottles to commemorate family 

events. Rudolf Schuchter - recently joined as maître d‘hôtel 

– is personally and passionately responsible for the wine 

stock and for promoting viniculture in the monastery wine 

cellar. When asked about his favourite labels, this ”driving 

winemaker“ inevitably looks to the Wachau region, Burgenland 

or Tuscany. A self-described wine freak, he is always on the 

watch for new, trendy wines. “We want to put viniculture on 

a new footing here, as small growers often produce superb 

wines“. Of course, a well-stocked cellar such as this, also 

includes famous names such as Antinori and rare bottles from 

some of the leading French growers. The 36-year-old fast car 

enthusiast really likes his new post and particularly enjoys the 

challenge: “I would like to compile a balanced wine menu for 

our guests so that there is something to suit everyone’s taste, 

while still keeping an eye on the ”Green Kodex” and the links 

with monastery wines and long-standing family businesses. 

We want to use my passion for wine to really focus on hosting 

wine-tastings and introducing top wines from countries all 

over the world“.

What is a driving winemaker: 

The driving wine-maker (or flying winemaker) 

is a term created by English wine merchants. 

During their ‘off-seasons’, Australian winemakers 

assisted their European counterparts with grape 

harvests and wine-making. 

My favourite topic: by the time of the 500-year celebration 

in September 2016, we will have the new “SINCE 1516 

Wine Collection“. Eight tried and tested, hand-picked 

crops which will only be available as a collection in 

the Klosterbräu & SPA One of the red wines was 

personally blended for me by the vintner. Be prepared

You are very involved with the SPA area and its future development. What can guests expect and what 

makes it different to other hotels in the same category? 

I have followed the development in the SPA area with great interest over the years and have – together with the family – worked on 

a new concept. The concept is very simple as it’s based on the individual wants of our guests. The uniqueness of our programme 

consists in the close cooperation with our guests and in evaluating their personal status quo. We take time before every treatment 

to make an initial “inventory“ and we often discover that the selected treatment is sometimes unlikely to have the desired effect. 

The complimentary 15 minutes before the first treatment is what really makes a difference to all the other 5-star hotels. This 

period allows us to figure out if what the client requests is really what he or she needs at the time. The thinking here is a simple 

question: how do you want to feel after the treatment?

We can achieve holistic well-being once we know your needs, your 

expectations and desires. We will listen, advise and together find out 

what’s best for you now –15 min. additional consultation time for your

You can choose from a hot-stone-massage, a herbal stamp treatment or a 

mixture of treatments and no matter what you choose, it will do you the world 

of good and you don’t have to worry about paying more because you pay one

What is particularly important for you? 

I want to create something unique for our guests and that’s only possible by 

continually moving forward and improving. It’s also about gaining a better 

understanding of people’s needs which is why I am currently training to 

become a qualified mental coach. I am interested in the link between

to reach an inner balance and a happy relationship with oneself. 

For me personally, the training is giving me a better appreciation 

of my body and mind and helps me to live a more positive life.

basis. We only work with ’healthy’ people to help them to 

develop as individuals. Our aim is to pass on to our guests what we 

know about mental strength and how it can affect our lives.

Tuesday, 20.09. 

Era 3 16th and 18th century – the life of the Augustinian:The old monastery in Seefeld reawakes and you‘ll get the 

chance to spend one whole day within its old walls to experience what living in an abbey was like. Apart from this, 

we‘ll teach you the art of meditation and together we‘ll try to find our inner-selves. On this day you‘ll get enough time 

and opportunities to relax in our Spiritual SPA where you‘ll be able to lay back and enjoy the pleasant atmosphere 

of candle lights. 

Wednesday, 21.9. 

Secularisation of the monastery and transfer of the ownership to the Seyrling family - back then your host‘s ancestors 

came to the abbey and slowly turned it from a monastery to a luxurious five-star hotel. We‘ll start the day by going 

for a relaxing walk and having breakfast in a beautiful outdoor mountain scenery. This day will be dedicated to Bubi 

and Sigi Seyrling and the great achievements they‘ve made for the hotel. Dinner is going to be served in the abbey‘s 

beautiful courtyard. We promise, you are going to be surprised. 

Thursday, 22.9. 

On this day everybody is going to feel like a victor when we‘ll stage the Olympic Games for you. We are for sure going

Seefeld was and is the cross-country 

Eldorado of the Tyrolean Alps and with 

279 km of perfectly prepared crosscountry 

trails, the area offers more 

variety than most. There is more or 

less the same amount of classic and 

skating trails and many stretches have 

both styles prepared side by side. 

Additionally, the Olympiaregion also 

has a few special trails such as night 

trails and some are suitable for crosscountry-sledding.

2016. 

Incredible scenes of jubilation broke out in Barcelona 

when FIS President, Gian Franco Kasper, announced 

the chosen host resort for the Nordic Ski World 

Championships 2019. It was quite a sensation as Seefeld was 

the first ever resort to be awarded this major Nordic event at 

the first attempt – Seefeld won out in the final round by one 

vote over Oberstdorf. 

Seefeld is becoming more and more of a sporting 

competence destination. Sporting enthusiasts are attracted 

to the area not just by Mother Nature and the high altitude, 

the super infrastructure is also very persuasive in convincing 

both professional and hobby athletes to train here. 

The Nordic Competence Centre has two brand new ski 

jumps, an up-to-date biathlon facility, 279 km of crosscountry 

trails - with snow-making - and a roller-ski track in 

summer. The crème de la crème of the Alps and proof of the 

Olympiaregion Seefeld’s competency in all things Nordic. 

The Nordic Ski World Championships 2019 in the 

Olympiaregion Seefeld are coming at just the right time. At 

the last general meeting of the Tourist Board, it was decided 

that the region should focus on a “Nordic Lifestyle“ and aim 

to be the best cross-country area. With the slogan “Hand in 

Hand – let’s celebrate a Nordic Festival“, the foundations 

have been laid for a fantastic event in 2019.

Linda, we have read a lot about the YOUNIQUE strategy, what 

makes it YOUNIQUE? 

It’s nice to be in a position where you know what your guests want, that they 

get the room they want, that so many Klosterbräu friends think of Seefeld as 

a second home. With new guests, it’s important for me to find out during the 

first conversation what would be their ideal room. Of course it can happen that 

a suite isn’t exactly what they expect, but then we try to find a solution straight 

away. And if need be, we will look at every single category of room. Linda smiles 

and adds: At Christmas and on New Year’s Eve, I have to be a bit of a magician. 

Happy events in 2016 – what are your highlights? 

I’m looking forward to the completion of the new suites as even just choosing the fabulous 

textiles and materials gave an indication of how tasteful they would be. There are also 

another two building projects which should make a significant improvement to the 

daily routine. In the wellness area there will be more room for quiet and relaxation, 

the Vitalbistro will open up with the first ever “5-star luxury pizza service” and the 

new reception will have more room for giving personal advice. And that’s how the 

perfect holiday starts of course, with a stress-free check-in. The little niches behind 

reception will be for giving individual and personal advice. 

Linda, you were away from the hotel for two years – what made you 

decide to come back to the family business? 

First and foremost I missed the family and working together with the family. We 

have a really exciting time ahead of us, the on-going project should be finished in 

June and there are other new projects already in the starting blocks – I don’t want to 

miss out on this huge development phase of the hotel and it’s nice to be in contact 

with so many regular guests, some of whom I have known since childhood.
