Northbrook Interfaith Service<br />

On Wednesday, Nov. 23, at 7 p.m.,<br />

all are invited to celebrate their gratitude<br />

by attending the Interfaith Community<br />

Thanksgiving Service at the<br />

Islamic Cultural Center of Greater<br />

Chicago, 1810 Pfingsten Road. The<br />

service is sponsored by Northbrook<br />

Clergy Association. Please bring<br />

some canned goods for a collection<br />

for the Northfield Food Pantry to<br />

share with those in need.<br />

Holiday Boutique and Luncheon<br />

The Northbrook Woman’s Club<br />

will once again be hosting its annual<br />

Holiday Boutique and Luncheon<br />

from 10 a.m.-12:30 p.m. on Thursday,<br />

Dec. 1, at Skokie Country Club,<br />

500 Washington Ave., Glencoe. It’s a<br />

great way to stock up on your holiday<br />

and hostess gifts. Come shop<br />

Show Choir. Funds raised go toward<br />

of an elite group after<br />

competing in the Championnat<br />

Du Monde Mondioring<br />

held in Herve, Belgium.<br />

The owner of Wolf’s<br />

Lair K9 now holds a Level<br />

3 International Decoy Certification<br />

in Mondioring, a<br />

level that only four others<br />

in the entire US have accomplished.<br />

“It’s a wonderful thing<br />

to be able to do what you<br />

are passionate about and<br />

be recognized for it. Training<br />

dogs is something I<br />

have dedicated my life to<br />

and this certification reminds<br />

me that all the hard<br />

work is worth it. I will<br />

continue to participate in<br />

the sport and hope to improve<br />

my skills and world<br />

rankings in future events,”<br />

said Aguirre of his Level 3<br />

certification.<br />

The certification comes<br />

after devoting years to<br />

training and honing skills<br />

necessary to successfully<br />

compete with the best in<br />

the sport. As a Master<br />

Trainer, Certified Decoy,<br />

and Marine Corps Veteran,<br />

patience, dedication, and a<br />

hardworking attitude come<br />

naturally to Aguirre.<br />

The sport at hand, Mondioring,<br />

requires participants<br />

to complete three<br />

phases without interruption:<br />

obedience, agility and<br />

protection. Each section<br />

consists of several exercises<br />

that are judged based<br />

on set criteria and assisted<br />

by a decoy. For most of the<br />

exercises, handlers are not<br />

told beforehand what must<br />

be done.<br />

Unlike in the dog shows<br />

and competitions often<br />

aired on television, Aguirre<br />

was not there to prove<br />

his own dog’s prowess, but<br />

rather to exhibit his own<br />

skills and earn his decoy<br />

certification. The international<br />

competition invites<br />

trainers and handlers from<br />

around the world to put<br />

their skills to the test.<br />

As a decoy, Aguirre is<br />

responsible for helping the<br />

judge evaluate the dog’s<br />

working ability by confronting<br />

the dog and allowing<br />

it to demonstrate<br />

its protection work. The<br />

certification that Aguirre<br />

received is the highest<br />

available in the sport and<br />

can only be granted by the<br />

International Super Selection<br />

Committee.<br />

In order to receive the<br />

certification, Aguirre had to<br />

have a current Level 2 Certification,<br />

and compete in at<br />

least 10 trials. His certification<br />

also involved a written<br />

test and practical evaluation.<br />

The practical exam<br />

tests the decoy on a number<br />

of skills, including interaction<br />

with the dog and proper<br />

use of equipment.<br />

The skills necessary by<br />

both dog and human to be<br />

successful in Mondioring<br />

may appear vastly different<br />

than what is desired<br />

from a companion animal,<br />

but Aguirre asserts that the<br />

training principles remain<br />

the same.<br />

“Whether I’m training<br />

a dog for competition,<br />

personal protection,<br />

or simply basic obedience<br />

I still work with the same<br />

concepts: patience, control<br />

and attentiveness. These<br />

skills are what keep a dog<br />

physically and mentally<br />

stable and a good pet for<br />

your family,” Aguirre explained.<br />

Elly, started Wolf’s Lair K9<br />

to help owners train happy,<br />

healthy, and well-mannered<br />

dogs in 2012. They do everything<br />

from basic obedience<br />

to personal protection<br />

Moretta discovered energy<br />

healing through her<br />

own need for healing.<br />

After leading a successful<br />

corporate management<br />

position while raising two<br />

young daughters, she suddenly<br />

found herself in need<br />

of medical help. The stress<br />

and demands of a fastpaced<br />

career and family life<br />

had taken its toll. She was<br />

diagnosed with an autoimmune<br />

condition similar to<br />

Lupus that demanded she<br />

immediately pay more attention<br />

to herself.<br />

Doctors offered a host of<br />

pharmaceuticals, but she<br />

knew the key was in making<br />

life changes and embracing<br />

holistic mind and<br />

body wellness techniques<br />

to heal herself.<br />

“I began practicing yoga<br />

and meditation,” Moretta<br />

said. “Later I received my<br />

first Reiki session, and although<br />

initially skeptical,<br />

I immediately became a<br />

believer and an outspoken<br />

advocate of this transformative<br />

healing art.”<br />

Having experienced the<br />

profound healing that she<br />

did, her passion to share<br />

it with as many people<br />

as possible was ignited.<br />

Moretta left her corporate<br />

career and began studying<br />

different modalities of energy<br />

healing, advancing to<br />

Master Teacher with Reiki<br />

from Naples, Italy, weighs<br />

7,000 pounds and heats to<br />

900 degrees Fahrenheit —<br />

about twice the temperature<br />

at which pizzas are<br />

typically cooked.<br />

And this allows the thincrust<br />

pizza to be heated to<br />

perfection in less than two<br />

minutes.<br />

“We just love the type<br />

of pizza, we think it’s very<br />

unique to Wilmette, and<br />

there’s nothing like it in<br />

the area,” Napolita’s Josh<br />

Schonfeld said. “It’s really<br />

a quality pizza with quality<br />

ingredients. The ingredients<br />

speak for themselves.<br />

Simple is the way to go.”<br />

Schonfeld prides himself<br />

on the simplicity of<br />

the pizza’s dough, which<br />

has four ingredients: water,<br />

flour, yeast and salt.<br />

The restaurant imports<br />

its flour — caputo — from<br />

Naples, as well as the salt,<br />

pepper and olive oil on<br />

the tables. It also receives<br />

weekly imports of cheese<br />

and tomatoes.<br />

Schonfeld said he was<br />

first introduced to the Italian<br />

way of making pizza<br />

when he studied abroad in<br />

Rome a decade ago.<br />

“I know the concept of<br />

how pizzas are served and<br />

how they’re cooked,” said<br />

Schonfeld, who noted he<br />

lost 15 pounds during his<br />

six-month stay in Italy and<br />

attributed the loss to the<br />

use of fresh ingredients in<br />

food.<br />

The entryway opens up<br />

to a sprawling, wooden<br />

bar, with the oven housed<br />

in the far corner. High-top<br />

tables fill the first portion<br />

of the restaurant, with regular<br />

tables occupying the<br />

side room.<br />

The restaurant has low<br />

lighting and dark walls<br />

paired with white subway<br />

tiles.<br />

The owners wanted to<br />

convey the feeling you’d<br />

get if you walked into a<br />

place in Italy. They’re not<br />

going for American comfort:<br />

They’re going for authenticity.<br />

during a visit to<br />

the restaurant.<br />

They tried four of Napolita’s<br />

pizzas, which are<br />

separated into two categories<br />

on the menu: red and<br />

white sauce.<br />

First up were the bufalina<br />

($16) and capricciosa<br />

($15) red-sauce pizzas.<br />

The bufalina, a signature<br />

pizza, was delicious in its<br />

simplicity: buffalo mozzarella<br />

and basil on red<br />

sauce and fluffy dough.<br />

The capricciosa combined<br />

mozzarella and red sauce<br />

with porcini mushrooms,<br />

olives, artichokes and a<br />

small, over-easy farm egg<br />

on top.<br />

The following pizzas<br />

were worth the mess of<br />

their drippy white sauce.<br />

We tried the prosciutto<br />

e rucola ($15), a satisfying<br />

mix of prosciutto and<br />

arugula, and the salsiccia<br />

bianca ($15), a ricottacheese<br />

pizza with its sausage<br />

made in-house.<br />

Napolita also serves a<br />

variety of wines, beers and<br />

liquor including Grappa,<br />

an Italian liquor, and five<br />

Italian beers on tap.<br />

Napolita is currently<br />

seven days a week for<br />

lunch and dinner, with<br />

brunch service on Saturday<br />

ill-informed views on what is<br />

good and bad for both the consumer<br />

and the environment<br />

being fed to us from different<br />

moment you start turning proteins<br />

into amino acids, splitting<br />

fat molecules, effecting hydrolysis,<br />

executing esterification or<br />
