festive events for all ages this holiday 

season. Forget about the freezing

Whether you’re looking for Santa

or listening to holiday music, there’s

brightest holiday events. 

Northbrook Interfaith Service 

On Wednesday, Nov. 23, at 7 p.m., 

all are invited to celebrate their gratitude 

by attending the Interfaith Community 

Thanksgiving Service at the 

Islamic Cultural Center of Greater 

Chicago, 1810 Pfingsten Road. The 

service is sponsored by Northbrook 

Clergy Association. Please bring 

some canned goods for a collection 

for the Northfield Food Pantry to 

share with those in need. 

Holiday Boutique and Luncheon 

The Northbrook Woman’s Club 

will once again be hosting its annual 

Holiday Boutique and Luncheon 

from 10 a.m.-12:30 p.m. on Thursday, 

Dec. 1, at Skokie Country Club, 

500 Washington Ave., Glencoe. It’s a 

great way to stock up on your holiday 

and hostess gifts. Come shop 

and dine to the sounds of the Glenbrook 

North High School Express 

Show Choir. Funds raised go toward 

grants for nonprofits serving Northbrook 

residents and scholarships 

for high school and postsecondary

Greens and Things Workshop 

On Saturday, Dec. 3, Reds Garden 

Center hosts a workshop to help people

Local dog trainer receives rare decoy certification 

Northbrook, Ill. dog 

trainer Carlos D. Aguirre 

recently joined the ranks 

of an elite group after 

competing in the Championnat 

Du Monde Mondioring 

held in Herve, Belgium. 

The owner of Wolf’s 

Lair K9 now holds a Level 

3 International Decoy Certification 

in Mondioring, a 

level that only four others 

in the entire US have accomplished. 

“It’s a wonderful thing 

to be able to do what you 

are passionate about and 

be recognized for it. Training 

dogs is something I 

have dedicated my life to 

and this certification reminds 

me that all the hard 

work is worth it. I will 

continue to participate in 

the sport and hope to improve 

my skills and world 

rankings in future events,” 

said Aguirre of his Level 3 

certification. 

The certification comes 

after devoting years to 

training and honing skills 

necessary to successfully 

compete with the best in 

the sport. As a Master 

Trainer, Certified Decoy, 

and Marine Corps Veteran, 

patience, dedication, and a 

hardworking attitude come 

naturally to Aguirre. 

The sport at hand, Mondioring, 

requires participants 

to complete three 

phases without interruption: 

obedience, agility and 

protection. Each section 

consists of several exercises 

that are judged based 

on set criteria and assisted 

by a decoy. For most of the 

exercises, handlers are not 

told beforehand what must 

be done. 

Unlike in the dog shows 

and competitions often 

aired on television, Aguirre 

was not there to prove 

his own dog’s prowess, but 

rather to exhibit his own 

skills and earn his decoy 

certification. The international 

competition invites 

trainers and handlers from 

around the world to put 

their skills to the test. 

As a decoy, Aguirre is 

responsible for helping the 

judge evaluate the dog’s 

working ability by confronting 

the dog and allowing 

it to demonstrate 

its protection work. The 

certification that Aguirre 

received is the highest 

available in the sport and 

can only be granted by the 

International Super Selection 

Committee. 

In order to receive the 

certification, Aguirre had to 

have a current Level 2 Certification, 

and compete in at 

least 10 trials. His certification 

also involved a written 

test and practical evaluation. 

The practical exam 

tests the decoy on a number 

of skills, including interaction 

with the dog and proper 

use of equipment. 

The skills necessary by 

both dog and human to be 

successful in Mondioring 

may appear vastly different 

than what is desired 

from a companion animal, 

but Aguirre asserts that the 

training principles remain 

the same. 

“Whether I’m training 

a dog for competition, 

personal protection, 

or simply basic obedience 

I still work with the same 

concepts: patience, control 

and attentiveness. These 

skills are what keep a dog 

physically and mentally 

stable and a good pet for 

your family,” Aguirre explained.

Elly, started Wolf’s Lair K9 

to help owners train happy, 

healthy, and well-mannered 

dogs in 2012. They do everything 

from basic obedience 

to personal protection

Napolita heats thin-crust pizza to perfection 

Napolita which opened 

at the beginning of last December, 

specializes in its 

Neapolitan pizzas cooked 

in a wood-burning Stefano 

Ferrara oven, imported 

from Naples, Italy, weighs 

7,000 pounds and heats to 

900 degrees Fahrenheit — 

about twice the temperature 

at which pizzas are 

typically cooked. 

And this allows the thincrust 

pizza to be heated to 

perfection in less than two 

minutes. 

“We just love the type 

of pizza, we think it’s very 

unique to Wilmette, and 

there’s nothing like it in 

the area,” Napolita’s Josh 

Schonfeld said. “It’s really 

a quality pizza with quality 

ingredients. The ingredients 

speak for themselves. 

Simple is the way to go.” 

Schonfeld prides himself 

on the simplicity of 

the pizza’s dough, which 

has four ingredients: water, 

flour, yeast and salt. 

The restaurant imports 

its flour — caputo — from 

Naples, as well as the salt, 

pepper and olive oil on 

the tables. It also receives 

weekly imports of cheese 

and tomatoes. 

Schonfeld said he was 

first introduced to the Italian 

way of making pizza 

when he studied abroad in 

Rome a decade ago. 

“I know the concept of 

how pizzas are served and 

how they’re cooked,” said 

Schonfeld, who noted he 

lost 15 pounds during his 

six-month stay in Italy and 

attributed the loss to the 

use of fresh ingredients in 

food. 

The entryway opens up 

to a sprawling, wooden 

bar, with the oven housed 

in the far corner. High-top 

tables fill the first portion 

of the restaurant, with regular 

tables occupying the 

side room. 

The restaurant has low 

lighting and dark walls 

paired with white subway 

tiles. 

The owners wanted to 

convey the feeling you’d 

get if you walked into a 

place in Italy. They’re not 

going for American comfort: 

They’re going for authenticity.

and several editors got a 

look and taste of that authenticity 

during a visit to 

the restaurant. 

They tried four of Napolita’s 

pizzas, which are 

separated into two categories 

on the menu: red and 

white sauce. 

First up were the bufalina 

($16) and capricciosa 

($15) red-sauce pizzas. 

The bufalina, a signature 

pizza, was delicious in its 

simplicity: buffalo mozzarella 

and basil on red 

sauce and fluffy dough. 

The capricciosa combined 

mozzarella and red sauce 

with porcini mushrooms, 

olives, artichokes and a 

small, over-easy farm egg 

on top. 

The following pizzas 

were worth the mess of 

their drippy white sauce. 

We tried the prosciutto 

e rucola ($15), a satisfying 

mix of prosciutto and 

arugula, and the salsiccia 

bianca ($15), a ricottacheese 

pizza with its sausage 

made in-house. 

Napolita also serves a 

variety of wines, beers and 

liquor including Grappa, 

an Italian liquor, and five 

Italian beers on tap. 

Napolita is currently 

seven days a week for 

lunch and dinner, with 

brunch service on Saturday
