EDITOR-1-2V.indd 1
FROM THE EDITOR
Recycling continues to be a big issue today. It’s good
for the earth and good for the soul. When you can take
a discarded item and create wearable art, that is an
accomplishment to be proud of.
Teens from all over Broward County got together
at Young At Art Museum in Davie and put on the
Recycled Fashion Show. What incredible ideas these
young up and comers had. Couture designs made
from various materials, such as soda cans and plastic
bags. Check out the story and photos on pages 36
and 37. It will recycle a feeling of pride for how the
future generation is
thinking.
There are a
few ways to
celebrate
Independence
Day around
town. You
can find local
events on
page 18, and
activities to do
at home on
page 22. Make
plans to have fun, but be safe too.
Planning to travel this year? Check out our writer’s
experience in Canada on page 60 and 61. From
cobblestone streets to street corner cafes and
shopping for shoes, this will give you a hint of what to
expect if you visit the province of Québec.
One of the most heartbreaking trends is the
abandoning of animals in the Everglades. How anyone
can just drop off a pet and leave them there to die is
unexplainable. There is a group who is solely dedicated
to rescuing these animals. On page 52 and 53 is the
story of the Everglades Angel Dog Rescue.
Zika has become a major health concern, especially
for pregnant women. What steps can you take to
help prevent this disease from spreading? How does
it spread? What are the chances of you contracting
the illness? Page 78 has the story for you with the
information you need.
the PARKLANDER 7

PARKLAND MAYOR MICHAEL UDINE
I
hope everyone is enjoying
summer. While things may look
quiet around City Hall, the staff is
busy working on various projects
and preparing the budget for the
upcoming year. As we prepare
for the future, it is interesting how
much we have accomplished so far
this year. Here are some highlights.
Parkland started the new year by
assuming operations of the Parkland
Recreation and Enrichment Center
(P-REC) at Pine Trails Park. This
facility, formerly known as the
community center, has undergone a makeover and looks
brand new. The reason the City began operating the P-REC
was to provide residents with a wider variety of fitness and
enrichment options. Now there are about 50 program offerings
and members can take advantage of the fitness equipment of
Athletic Republic—an elite personal training center housed at
P-REC.
Happy 4th of July
AUTO WORKS
COLLISION & PAINT
“Your Hometown
Body Shop”
Since 1986
As if a 24,000-square-foot indoor facility wasn’t enough, the
Commissioners and I had the privilege in March of breaking
ground on a new state-of-the art tennis facility at Quigley Park.
This full-scale renovation of the park will ultimately include 12
clay courts, canopy shades between courts, a center court
for tournament play complete with grandstand bleacher seats,
and a 4,200-square-foot clubhouse.
Soon we’ll have the pleasure of another grand opening
ceremony, this time for the renovated interactive Splash Pad at
Liberty Park. The Splash Pad features are being upgraded to
make Liberty Park a better experience for the residents.
Parkland isn’t just about facilities though, it’s about events. In
February the unique Passport to Parkland event took place
at City Hall and showcased the City and all of its equipment,
personnel, and safety features. When I left that event I went
straight to Terramar Park for one of my favorite parts of being
Mayor. Throwing out the first pitch and declaring “play ball” to
start another season of Parkland Little League. More recently,
over the last few weeks, it has been graduations and promotion
ceremonies galore. Congrats to all of the students and their
families on their accomplishments.
CORAL SPRINGS MAYOR
SKIP CAMPBELL
Happy Independence Day to all!
I hope you will join us for the
City’s Fourth of July celebration
at Mullins Park. There will be dazzling
fireworks and entertainment for the
entire family. The festivities begin at
6pm, on Monday, July 4, with games,
bounce houses, food, and entertainment.
The fireworks display begins
promptly at 9pm. The event is free, but there will be fees for
food, bounce houses, and games. Parking will be available for
$3 at the Coral Springs Gymnasium for early arrivers, and also
at the main Mullins Park/Center for the Arts parking lot. Please
remember that no pets, alcoholic beverages, or personal
fireworks are allowed in the park. Mullins Park is at 10150 Ben
Geiger Dr. For more information, call 954-345- 2200.
Hurricane season is here and it’s important for residents to
be prepared. In the event of a hurricane, residents can reach
the City’s call center at 954-344-1001. You can also log onto
CoralSprings.org/hurricane or watch CityTV, Channel 25 on
AdvancedCable and Channel 99 on U-Verse, for updates.
Coral Springs residents can also tune their radio dials to AM
1670.
I want to take a moment to remind you that water restrictions
are still in place throughout South Florida. While this is our
rainy season, it’s still important to point out only two-day
landscape irrigation is allowed. Even-numbered addresses
are permitted to water on Thursday and/or Sunday and
odd-numbered addresses can water on Wednesday and/
or Saturday. All households must water before 10am or after
4pm. Also, if you are a Coral Springs Utilities customer, you
may be eligible for rebates. Visit ConservationPays.com and
follow five simple steps to receive $100 when you install a
high-efficiency toilet (pre-approval required). The City also
offers free showerheads, low-flow faucet aerators for your
kitchen, and low-flow prerinse spray valves for restaurants.
This is part of a Broward Water Partnership, and participants
must be Coral Springs Utilities customers to be eligible. For
more information, call 954-345- 2190.
Don’t forget we have an open chess program every Saturday
at the Coral Springs Gymnasium from 2 to 4pm. This
program is free, open to all ages, and the City will provide the
chess sets. For more information, call 954-345- 2200. The
Coral Springs Gymnasium is at 2501 Coral Springs Drive, just
north of Royal Palm Blvd. P
If you would like to meet with me to discuss any City issues,
feel free to visit with me during my office hours. I hold office
hours the second Tuesday of every month from 4:00pm to
6:00pm at City Hall in the City Commission Office. To make
Congressman
Ted Deutch
(D-FL 21 st District)
Florida is fast becoming
the United States’
epicenter of Zika. With
more than 100 Floridians
already infected with the
virus acquired through
travel abroad, experts
are concerned that local
infections will soon occur and continue to spread the
disease.
A new CDC study shows a 13 percent risk that
Zika virus contracted in early pregnancy will result
in microcephaly, causing incomplete fetal brain
development. Already, more than 1,500 Americans –
including nearly 300 pregnant women – have acquired
Zika. In light of these risks, Congress must act swiftly to
prevent an outbreak of Zika virus, and protect families
in South Florida and across the nation.
Rather than quickly acting to address this public health
emergency, the House of Representatives recently
passed legislation that provides only one-third of the
funding requested by public health experts to manage
the response.
Emergency funds will accelerate research, conduct
mosquito surveillance, educate health providers, and
increase health services. I support full funding of an
emergency response, and I will continue to urge House
leadership to cease obstructing, delaying, and denying
funding.
CELEBRATIONS
by David Volz
Fourth of July Fun
The Fourth of July is a time when people get together to honor
the nation, spend time with family, friends, and watch fireworks.
Coral Springs Commissioner Larry Vignola said, “We celebrate
our independence on the Fourth of July. Coral Springs will have
the best and safest fireworks
show. We want people to
come to Mullins Park and have
a good time.”
Coral Springs will be offering
a large family event at Mullins
Park from 6 to 9pm. During
the early evening, people will
be able to enjoy family time
at the park. There will be food
trucks and an interactive disc
jockey. There will be inflatable
slides and a bounce house.
Civic organizations will offer
hamburgers, funnel cakes, and
other treats. At 9pm there will
be a big fireworks display.
“This is an event that families
truly enjoy. We get a big
crowd. People should bring
blankets and chairs. We are
hoping for good weather,” said
Joan Dowling, superintendent
of the Coral Springs recreation
department.
Pompano Beach will celebrate
the Fourth of July with
live music, featuring Chain
Reaction, a Journey Tribute
Band. The party starts at 6pm
followed by a live DJ and
fireworks at 9pm. It will take
place at the Pompano Beach
Fishing Pier and Public Beach.
Tamarac will host a Fourth July
All American Celebration at the Tamarac Sports Complex at 9901
Northwest 77th Street. There will be live music by the Free Radicals.
Food trucks will be on site along with a kid’s area with face painting,
inflatable rides, interactive games, and arts and crafts. The fun starts
at 6 pm with fireworks at 9pm.
Boca Raton will have a Fabulous Fourth Celebration at 1000
Northwest Spanish River Boulevard at the Spanish River Athletic
“It is a great celebration of American
Independence and a nice holiday.”
-Parkland Mayor Michael Udine
Facility at Countess deHoernle Park. It begins at 6:30 pm with family
activities, a live band at 7pm, and fireworks at 9 pm.
The City of Parkland does not have a fireworks display or a family
event on the Fourth of July. Mayor Udine encourages residents to
attend one of the nearby
city’s celebration.
The Fourth of July
celebrates the legal
separation of the original
13 colonies of the United
States from Great Britain
during the American
Revolution. The actual
separation took place
on July 2, 1776 when
the Second Continental
Congress voted to
approve a resolution of
independence, that had
been proposed in June
by Richard Henry Lee
of Virginia, declaring
the United States
independent from Great
Britain. The Declaration of
Independence explained
this decision and Thomas
Jefferson was the main
author. This document
was approved on July 4
after Congress debated it
and made some revisions.
Thomas Jefferson, John
Adams, and Benjamin
Franklin wrote that they
signed the Declaration of
Independence on July 4,
however most historians
believe the Declaration
of Independence was
actually signed on August 2, 1776, according to Wikipedia.
The Fourth of July, also known as Independence Day, is a federal
holiday. It is also a major summer holiday when many people have
family barbecues and enjoy evening fireworks displays. Most of the
events take place outdoors. Community leaders will often appear at
Fourth of July events and praise the United States and its citizens. P
ADVERTORIAL
the PARKLANDER 21

FOURTH OF JULY
by Cynthia MacGregor
For most kids, the
three major patriotic
holidays have lost
their true meaning. They are
beach days or days off from
school or other programmed
activities. But how many kids
really think about what the
holidays mean and stand
for? And how many kids are
likely to spend the day doing
anything other than their
usual activities—videogames,
texting, watching TV, and
hanging out on Snapchat,
Facebook, and other social
media?
Why not suggest to your
kids that they celebrate the
patriotic holidays with some
good old-fashioned fun?
Here are three activities that
honor the patriotism of the
occasions.
REDESIGNING
THE FLAG
Number of players: One or
more. Materials needed: Paper
and crayons or colored
markers
July Fourth is a patriotic
holiday. Many families who
own flags fly them on this
holiday. Have you ever
thought about the American
flag? The stripes represent
the 13 original states, and the
stars stand for the 50 states
we have now. If we ever add
more states, we’ll add more
stars to the flag.
But what if we changed the
flag completely? Suppose
you could redesign the
American flag completely?
Suppose you could change
the design, or even the
colors? How would you
want it to look? Draw a new
American flag.
INDEPENDENCE
DAY ANAGRAMS
Number of players: One or
more. Materials needed: Paper
and pen or pencil
The words in the four
sentences below have
had the letters scrambled.
Rearrange the letters in each
word until you have a familiar
word. When you are finished,
you will have four separate
sentences. One of the words
has an apostrophe. It has
been placed at the end of the
scrambled word it belongs in.
Most people enjoy
anagrams as a game to
play by themselves. The
challenge is simply to try to
unscramble all the words
and form sentences. But if
you’re playing with a friend,
you can turn the game into
a competition. See who
can get all four sentences
unscrambled correctly first.
(Answers are at the end of
the article.)
1 - HOEST WRFEKOISR REA
OTO ULDO!
2 - YMA I EVAH NOREHAT
MBHGRERUA?
3 - REEH MOCES HTE
RAAEPD!
4 - FI YADOT SI RUO
NUCROYTS’ RIAYTBDH,
HEERW SI EHT KECA?
INDEPENDENCE
STAR BOUNCE
Number of players: One or
more. Materials needed: Chalk,
rubber ball or tennis ball
Draw the outlines of
13 five-pointed stars in
chalk on pavement. The
sidewalk, driveway, or paved
playground will do. The stars
should be about 4” across
and about 4” apart, and they
should form a circle, like the
ones in the first American flag.
If you are playing the game
alone, you want to try to
get through each of the five
rounds that are explained
below. If you mess up, start
over at the beginning of the
round you were on. When
you have succeeded in one
round, go on to the next.
When you get through all
five rounds successfully, you
have won.
If you are playing
competitively, decide who
will go first, and who will go
next. If you are first, start
with the first round. If you
get through the first round
successfully, go on to the
second round. If you mess
up, you lose your turn and
it’s the next player’s turn.
When it becomes your turn
again, start with the round
you messed up on last time.
The first player to complete all
five rounds successfully wins
the game.
To play, stand in the middle of
the circle of stars and bounce
the ball into each star one at
a time. Here are more specific
rules for each of the five
rounds:
Round one: Bounce the ball
into each star one at a time.
Do not skip a star. Do not
catch or hold the ball until
you have bounced it in all 13
stars. Do not bounce twice
into the same star. Do not
bounce the ball anywhere
except inside a star. If the ball
bounces partly in a star and
partly out, it still counts.
Round two: Do the same
thing as in round one, but this
time clap your hands after
each time you bounce the
ball.
Round three: Do the same
thing as in round two, but this
time jump up in the air as you
clap your hands, after each
bounce.
Round four: Do the same
thing as in round one, but
name one of the 13 original
states each time you bounce
the ball. Do not repeat any
states. Do not leave any out.
(The 13 original states were
New York, New Jersey, New
Hampshire, Rhode Island,
Connecticut, Massachusetts,
Pennsylvania, Virginia,
Georgia, North Carolina,
South Carolina, Maryland,
and Delaware.)
Round five: Combine the
rules of round three and
round four—name one of
the 13 original states as you
bounce the ball, clapping
your hands and jumping
between bounces. P
Answers to anagrams:
1 - THOSE FIREWORKS ARE TOO LOUD! 2 - MAY I HAVE ANOTHER HAMBURGER?
3 - HERE COMES THE PARADE!
4 - IF TODAY IS OUR COUNTRY’S BIRTHDAY, WHERE IS THE CAKE?
REMEMBERANCE
by David Volz
Military veterans and their
families in Tamarac now have
a Veterans’ Honor Wall.
On Memorial Day Weekend, the
City of Tamarac had a special
ceremony to dedicate the
Veterans’ Honor Wall. The wall includes
six panels each with 100 names of
military veterans from Tamarac both
living and deceased. There are 600
names in total on the Memorial. There
are two additional glass panels showing
uniformed military personnel.
Veterans’
Honor Wall
in Tamarac
The Wall represents a two year effort
among the City of Tamarac, the Tamarac
Parks and Recreation Department, the
Tamarac Public Art Committee and
the Tamarac Historical Society. It is at
Tamarac Veterans’ Memorial Park, 7825
Southgate Boulevard.
“We decided it would be good to have
a tribute to veterans in Veterans’ Park,”
said Barbara Tarnove, president of the
Tamarac Historical Society. “We got the
approval to collect names and we were
able to collect 600 names of Tamarac
residents who had been in the military.
We are continuing to collect the names
of veterans in Tamarac.”
Tarnove had the opportunity to talk
with military veterans and listen to their
stories. “We became friends. It was
a heartwarming experience. We have
created a data base of the names and
we want to collect more names,” she
said. “We will commission a new panel
for every 100 names we get.”
Zachary Knudson, the owner of the
Glass Artist in Coral Springs, was the
artist who completed the Veterans’
Honor Wall. He considered it a privilege
to do this project. “The veterans have
put their lives on the line and sacrificed
a whole lot. I dedicated it to them. I feel
good about this project and I am glad to
give back to the community,” he said.
Knudson said he hopes this project
28 will encourage more young people to
appreciate and become interested in art.
“There are a lot of kids who will walk by
this work on their way to school. I hope
when they see it they will be inspired to
appreciate art,” he said.
He is looking forward to continuing
work on the Veterans’ Honor Wall as
more names are added. It took about
seven months to complete the project.
Knudson also completed an aluminum
and glass pyramid structure at the
ArtWalk in Coral Springs.
The dedication ceremony on Memorial
Day was very well attended and many
veterans and their families participated.
Members of the Tamarac City
Commission spoke on the importance of
honoring veterans for their service.
Captain A.J. Tolbert, U.S. Air Force
retired, was the keynote speaker. He
spoke of the challenges of military
service and the importance of honoring
veterans. Tolbert remembers how
military personnel JULY 2016 were not treated
well during the Vietnam War era. As an
ROTC cadet at the University of South
Carolina, he remembered students
heckling the cadets as they drilled. He
emphasized the contribution the military
makes in keeping the United States free.
Elise Boston, spokesperson for the City
of Tamarac, said she is pleased that the
city’s veterans are being honored. “We
want to honor those who have served
their nation. We will continue adding
names,” she said. P

SHINING STAR
by Martin Lenkowsky
Local Athlete Named
U.S. ARMY
ATHLETE OF
THE YEAR
accepted into Special Forces Group
Former Parkland resident and local
softball standout 1st Lieutenant
April Ortenzo was named the United
States Army 2015 Athlete of the
Year. LT. General Arthur Gregg and
Four Star Commanding General
Dennis Via presented the award
on March 16th at the Association
of the United States Army Global
Symposium in Huntsville, Alabama.
In the fall of 2015, Ortenzo led the
United States All-Army softball
national team to a 9-0 sweep and
gold medal against the Navy, Air
Force and Marine teams at the annual
Armed Forces National Championship
Tournament at Camp LeJeune, North
Carolina. As Army’s starting shortstop,
Ortenzo hit .575 and was then named to
the combined United States All-Armed
Forces Team comprised of the Military’s
best players worldwide. The All-Armed
Forces team then went on to compete
for the ASA National Championship
at the USA Hall of Fame complex in
Oklahoma City.
As the Armed Forces starting shortstop
April once again played errorless
defense and led the U.S. team to an
undefeated (3-0) run to the National
crown. Ortenzo hit .800 with four
doubles, three triples, 10 RBI’s and
nine runs in the three game sweep, and
was named the tournament batting
champion, tournament MVP and named
an ASA All-American.
Locally, April was a standout
player for the Florida Pokers
baseball and Florida Fury
softball travel teams.
At Cardinal Gibbons High School she
was the
Chief’s fouryear
starting
shortstop
and MVP
and in her
senior year she
was named to first team All-Broward,
first team All-Florida and MVP of the
Broward County All-Star game. In 2010
Ortenzo was named the U.S. National
Female High School Athlete of the year
for all Catholic High Schools in America,
and was inducted into the International
Catholic Sports Hall of Fame at the
(Chicago Bears) Halas Hall.
Ortenzo chose to pass on many other
college offers for the opportunity to play
at the United States Military Academy
at West Point where she was Army’s
four year starting DI shortstop, two year
team Captain, and finished in Army’s
all-time top five for games played, at
Museum Turns Recycled Materials into
by David A. Schwartz
High
Fashion
36
From models
on South Beach
to couture in
Palm Beach, fashion
is the word.
And talented teens in Broward
County have been designing
fashionable dresses from the
least fashionable materials for a decade
at the Young At Art Museum in Davie.
Models will display their latest designs
from discarded water bottles, soda cans,
plastic bags, and other recycled items
on Nov. 18 at the museum’s Recycled
Fashion Show.
The show will have a high tech/low tech
theme in association with the Hi-Tech/
Low-Tech exhibit opening Oct. 14 and
continuing through May 21, 2017 at the
museum.
For the 11th annual fashion show
designers and models ages 13 through
18, volunteers from the museum and the
Broward PACE Center for Girls in Wilton
Manors, will use recycled plastic, tin,
aluminum, cardboard, paper, and
other materials to create high-style
dresses. The girls also will research
the technology and science behind the
materials they use and their impact on
the environment.
“Each teen artist looks through a particular
lens for the focus of the outfit,” said
Mindy Shrago, Young At Art executive
director and CEO. Dress designs must
reflect an environmental issue relevant
today, she said.
The show, founded 11 years ago by
Zack Spechler, has grown over the
years. “The runway has become more
sophisticated. It’s become very professional.
But [it’s] still homespun,” Shrago
said. And the “passion and heartfelt joy”
still exists.
“The Recycled Fashion Show started as
JULY 2016
volunteers getting together,” said Sue
Aguilera, Young At Art Institute coordinator.
“It was a fun thing to do at the end of
the summer. The first fashion show was
called - Junk to Funk -” Aguilera said.
Marie Berlin is the manager of YAA
Institute. “We started off very grass
roots, using duck tape and glue pots in
the design and fabrication of a “full-scale
outfit.”
Now girls (and
occasionally boys) are
learning college level
design and spending 100
hours or more creating
full-length dresses that
are “more couture, less
costumery,” Berlin said.
“Finding the recycled items is part of
the fun,” Aguilera said. “One designer

collected plastic water
bottles from a senior center.
Another used dryer sheets
and lint from a laundromat.”
Neilah Richardson, 18,
of Pembroke Pines used
garbage bags for her dress
in the 2013 show and pages
from more than 500 magazines
for a 1970s-inspired
dress in the 2014 show.
For the 2015 show,
Richardson used more than
1000 Walmart bags to create
a four-layer dress to depict
the clarity of the ocean.
“I wanted to tell a story
through the dress,”
Richardson said.
“Overfishing affects
the [ocean] environment.
The corals
aren’t getting cleaned.”
Sierra Decordova, 15, of Miramar, used
more than 4,000 recycled spoons, 500
plastic water bottles, and 800 soda cans
in dresses that she said were costumes
based on fantasy characters. “You wear
it and it brings the costume to life,”
Decordova said. Her designs received
first place awards in the 2014 and 2015
shows.
Young At Art Museum, which had its
beginnings in 1989, opened a 55,000
sq. ft. Gold LEED (Leadership in Energy
and Environmental Design) building in
Davie
in May
2012 through
a public/private
partnership with
Broward County. The
building also has a
public library.
The museum features
exhibition galleries,
art studios, and the
YAA Art Institute for painting, drawing,
ceramics, and printmaking, as well as
photography, animation, and digital arts.
It also has a preschool and teen volunteer
program. Student field trips are
HUMOR
by Victoria Landis
NUCLEAR
CRABGRASS
The return of summer to South
Florida heralds the perennial
problems of living in the subtropics
and having a yard to maintain.
During the short winter, or what passes
for winter here, the local flora grows at a
somewhat manageable pace. More like
what happens up north in the summertime.
Trees and shrubs elegantly sprout
new tendrils that become branches
and pretty leaves. Day by day, the
beautiful process can be admired and
appreciated while sipping fancy-flavored
morning coffee on the porch, like in the
TV commercials. Over a few weeks’
time, the flowering shrubs have produced
the showy colors that will endure
until fall. It’s a lovely thing, to watch
nature unfold like that.
Unfortunately, that Norman Rockwell
picture I just painted for you is only possible
down here for a matter of weeks.
Blink, and you’ll miss it.
The rest of our year is technically
summer, and it’s like the plant life
gobbled steroids. Lots of ‘em. In
fact, judging from the overgrowth in
my yard, they’re suffering from all-out
‘roid rage’. My bougainvillea grows, I
swear, three to four feet a week. The
areca palms, recently chopped down
to a modest eight-foot height, are now
sporting five-foot extensions. And the
40
weeds are once
again completely
out of control. I
can’t fathom what
they’d all be like
if I had actual real
soil instead of a
90 percent sand
mix.
I am in serious
denial about my
green thumb abilities.
In my mind,
I don’t see the
black soot and spider infestations covering
the gardenias. I see lush bushes
with fragrant flowers. I see the potential
of my yard. My HOA, however, refuses
to wear my rose-colored glasses.
If you’ve read my column over the years,
you’re familiar with the fact that, along
with the famous brown thumb, I also
have insanely bad luck with the flora of
my yard. I plant little trees the guy at the
nursery place assures me I cannot kill,
and within months they’re on life support.
Insects attack. Animals burrow
into roots. Lightning strikes. The latest
weird thing to happen in my front yard,
of course, on proud display right where
the HOA guy drives by in his important
little golf cart wearing a jaunty little hat,
is an incredible outbreak of monster
crabgrass. It’s taking over.
I called a pro, and he sprayed the entire
yard. Said it would take some time to
work. I waited and watched an amazing
array of weeds spread further, especially
the crabgrass. Finally, after two months
of the crabgrass pretty much flipping me
the bird, I bought some Weed & Feed
and spread it myself. I waited. Still,
nothing. Zip. Didn’t kill a single weed.
You’re not supposed to treat lawns very
often, so I waited another two months
JULY 2016
and tried a different brand. You guessed
it, nothing. Killed a few of the minor
weeds, but not a dent in the crabgrass.
It’s as though all these treatments were
super-vitamin pills for it. It’s growing at a
ridiculous rate.
So, I’ve gone old-school. I’m spending
an hour each morning on my kneeling
pad, hacking out the nasty things with
a three-prong tool. And I’m beginning
to understand why nothing else has
worked. The root balls of the monstrous
weeds are 12 to 14 inches in diameter.
They are the cockroaches of the
botanical world. They are the nuclear
survivors. They refuse to die.
My neighbors are being quite polite
when they pass by walking their dogs.
They make comments like, “My, that
sure looks like a lot of work,” when I
know for a fact most of them think of
me as that eccentric writer/artist lady.
They’re probably wondering, “why on
earth don’t I just have somebody come
in and treat the lawn?” If they asked, I’d
relay the reason, but they don’t linger
long enough to hear my tale of woe.
Oh, well. Every neighborhood
needs an eccentric creative
type. P

MOM’S PERSPECTIVE
by Cheryl Pangborn
Morning Person
BLUES
I am a self-admitted
morning person.
I know that goes against the grain of
the masses of the non-morning people,
those folks who cannot tolerate my kind.
This has become a serious issue in my
home where it’s me against my husband
and daughter. They are not interested in
my morning sunshine.
I have wondered to myself, is it because
you’re jealous that you are not a
productive member of society with
conversational skills and the ability to
communicate before 7am? Do you want
to be me? Because, being a morning
person has a million perks. First, and
most importantly, is that if you are the
only morning person in your household
(like an only child except you’re the
only nice one and you’re up before
dawn) you can be alone. No phones are
ringing. No one is asking questions, or
for food, or being annoying. Things get
done. You can mop your floors and no
one will walk on them. Drink an entire
cup of coffee while it’s hot. Start dinner,
do laundry, and so on. My favorite part
of this time of day is that I can work out
in peace. I have been doing this since
my daughter was born. So for 16 years
I get up, sneak out to the garage, and
get this unpleasant task done first thing.
I don’t have the pressure of negotiating
with myself later after all the insanity sets
in, about fitting this into my schedule.
Sure, I start every day drenched in sweat
and by 9am I’m ready to crash and
burn, but I persevere. Friends constantly
say to me “I don’t know how you do
that! You’re crazy!” Yes, morning people
are crazy. I accept this.
The cross to bear as a morning person
is that you are very annoying to the
non-morning people in your life. This
is my time to shine. I like to chat, ask
questions, you know, have a little preday
summit meeting with the people in
my world. My husband tells me I am
too “talky” in the morning. I have taken
several opportunities to mention that this
is not a word in the English language,
but Grammar 101 is not met with enthusiasm
before breakfast. I have noticed
lately in the morning while hubby is
attempting to come alive, sitting on the
couch drinking coffee, he has taken to
putting a blanket over his head. Perhaps
this is an attempt to make me think
he’s not there? I’m not really clear and
if I ask, well, early morning inquiries are
frowned upon.
My teenage daughter
is another story. I
drive her to a school
drop off point,
which thankfully
is only about ten
minutes from our
house. While
my husband
is basically
passive,
she is not. I
have been
doing this
route with
her for the
past two
school
years and
I struggle
with the notion of wanting to turbo eject
her out of my car every day. I feel that
at this point the best defense is don’t
talk. And by this I mean I do not utter
a word even if she talks to me. It’s a
trap and I always wind up falling for it. I
feel that being asked a question opens
the invitation for conversation. The
teen clearly disagrees. She will ask me
something or make a comment and I’ll
launch enthusiastically into my answer.
I am now jabbering away about the
subject and suddenly she’ll burst forth
in full teenage whine mode “why are you
still talking?”
Before I speak now, I am using the
H.A.L.T morning method, developed,
well, by me. I ask myself, will it
promote me getting HOLLERED at.
Will I wind up ANNOYED. Will I be
called LAME and finally, will I TRUST
myself to stay calm.
I feel outnumbered and no matter
what I do to try and bridge the gap for
us, it has failed. I do have my revenge
however, because when you get up
that early and have that much morning
energy, by the evening, you’re
toast. I am in no way, shape, or
form interested in any deep and
meaningful discussions after
9pm. I am known to agree to
watching a movie with Steve and
two minutes into it I’m out like
a light. The struggle is real so I
persevere in this world of “late day
bloomers.” To all of you who wake
and embrace the day with joy and
enthusiasm I say – Talk on! P
MALE MATTERS
by Elliot Goldenberg
Summers at Jewel Avenue Park
A Field of Dreams
When I die, and hopefully go to
heaven, I hope the hereafter
reminds me a little bit of the
summers I spent playing ball – any
kind of ball – at Jewel Avenue Park, a
veritable landmark in Queens, New York,
where I grew up.
Truth be told, my own personal Field of
Dreams wasn’t an esthetically beautiful
park. No one ever mistook it for Yankee
Stadium or Wrigley Field but, for the
kids in the neighborhood, it was truly
a mecca of unbridled year-round fun,
especially in the summertime when we
post-war-baby urchins were off from
school and possessed the nonstop
energy of carefree youth.
We would sometimes play
from dawn until dusk, only
taking a break to go home
and eat lunch, which we often
skipped because we were
having such a good time
playing whatever kind of ball
our young minds could
conjure up.
In the summertime, though, baseball
was usually the sport of choice. And it
didn’t really matter that there wasn’t a
lot of grass in the old, dilapidated park,
except for the grass that came through
the cracks in the cement, just like a park
in some third world country, and the
baseball field, if you could call it that,
had no real bases. When we played
softball – since we couldn’t really play
hardball on the cement – we simply had
to draw the bases with chalk.
Left field did have a fence and right field
had basketball courts. Not surprisingly,
going after a fly ball in deep right field
was always a major adventure, even
if you had the skills of Hank Aaron or
46
Roberto Clemente. So, in all honesty,
I dreaded playing right, although there
was a part of my brain that welcomed
the challenge. And I had more than my
share of concussions from running into
the poles holding up the baskets that
had no nets.
Not many of us kids were actually strong
enough to reach those rusty old courts
on a fly, but one who did was Big Vick,
an enormous black man with huge hands
who ran the park for the city and years
earlier had played minor league ball for
the Cincinnati Reds. Another slugger
who could do it – although I had never
seen him at the park, but others swore
that they had – was Joe Pepitone, who
played first base for the Yankees.
There were handball courts near the
park’s entrance by center field where
we would sometimes play stickball
imagining we were Sandy Koufax or
“The Mick,” taking up two whole courts
with a pitcher, batter, and catcher,
usually using rubber balls from the local
candy store. The only black eye I ever
received in my life came from playing
stickball as I grooved one in to little
Michael Lembeck, who was a year or
two younger than me and, in a million
years, never would have hit my Koufaxlike
fastball. It was a “comebacker” off
Michael’s bat that gave me a shiner and
made me feel fortunate that I still had
Michael Lembeck and Valerie Bertinelli
JULY 2016
that eye, although I might have been left
with just a little less pride.
A few years later Michael would move to
Los Angeles with his father, Harvey, who
was a comedic actor and part of the
cast of You’ll Never Get Rich with Phil
Silvers, a.k.a. Sergeant Bilko. Michael
would appear as Bonnie Franklin’s sonin-law
in One Day at a Time. Married to
actress Lorna Patterson, he also
directed The Santa Clause 3, as well
as some episodes of Everybody Loves
Raymond and Friends.
But nothing, I’m sure, ever topped
his glorious summers at Jewel
Avenue Park. P

GUY TALK
Today’s
by Mark Bohm
Political
Incivility
a certain level of decorum adhered to, a tacit standard
of etiquette employed among the contestants befitting
of an aspiring leader of a nation. Not so much this
go-round.
There are plenty of people who have written about the
increasing lack of civility in politics and in our society
generally. Some commentators I’ve read believe the
incivility is necessary, even beneficial. I prefer a more
respectful tone.
It was toward the end of my teenage years when I
watched a debate between vice presidential candidates.
It was 1988, the one between Sen. Lloyd
Bentsen of Texas and Sen. Dan Quayle of Indiana.
Quayle, running mate of the eventual winner of the
presidency, George H.W. Bush, commented about how
he had as much experience as John F. Kennedy did at the
time Kennedy ran for the presidency. Bentsen famously
replied, “Senator, I served with Jack Kennedy, I knew Jack
Kennedy, Jack Kennedy was a friend of mine. Senator,
you’re no Jack Kennedy.”
It still ranks up there among the best political campaign
zingers. What strikes me now upon thinking of it is
how tame the tone seems compared to the statements
routinely flung back and forth among the candidates in
this current election year. In a matter of mere weeks, one
could find some of this cycle’s crop of presidential hopefuls
publicly calling one or the other a “choke artist,” “liar,”
“loser,” or “con artist” -– and those are the mild ones.
During this year’s campaign, there were some other terms
and innuendos offered up that are unmentionable in a
family-friendly publication. While some of the players have
done well to stay above the fray, it seems that getting
into the gutter is what gets the attention. And more than
anything, candidates need the spotlight.
I know that as long as there have been political rivals,
there have been harsh exchanges. In our country,
however, at least in recent history, there usually has been
Trash talk
during some
pickup ball
at the park is
expected, even
fun. On the court
or the field, it’s
part of a game
and mostly harmless.
When it
starts permeating
national and international politics, that’s real life. And not
so innocuous.
To me, the bigger problem is what happens when we
start to get so accustomed to the nasty rhetoric, when
the incivility becomes cultural, ingrained. If our candidates
have no compunction about resorting to vicious verbal
attacks during the campaign, will that translate into the
same treatment toward the rest of the world when they
gain office?
Recently, the former president of Mexico spoke publicly
about comments made during our election campaign,
how his nation was offended. One of the striking things
about his comments was that he was so agitated, he
resorted to an expletive himself on a national cable
network. Hostility begets hostility.
A lack of respect among candidates in the
fight for public office could end up taking
us to dangerous places. Better were the
days when the talk could hit hard while still
remaining on the high road. P
ENTREPRENEURS
J.P. Taravella Students Win Recognition for
Virtual Business Plan
Aaron Mitchell is the CEO of
Focal Point Inc., a company
created by students in J.P.
Taravella High School’s
Virtual Enterprises
International program.
by Bill Johnson
Focal Point Inc. served as
a promotional firm for
other companies in a
virtual, student run, $70 million
economy. It was part of a
yearlong project completed by
students with a strong interest
in entrepreneurship. The students
won a state championship
for their business plan in a competition
hosted by Virtual Enterprises
International.
As CEO, Mitchell was in charge of
various departments including human
resources, information technology,
design, marketing, sales, communication,
accounting, and administration.
“My job with the company was making
sure it made a profit, was heading in the
right direction, and that all the departments
were working together efficiently,”
he said. Mitchell will study economics at
Stanford University next year.
Because of their success at the state
level, the students qualified to compete
in an international business plan competition
in New York, the Global Youth
Business Summit. They competed
against students throughout the United
States and other nations. Although they
did not win, the students were able to
participate in a trade show where they
created a booth and marketed their
products to other firms and generated
sales. They also had to buy from other
companies. “It was an amazing experience.
I developed as a leader and I
enjoyed the opportunity,” said Mitchell.
“I learned how to cooperate with
other people and solve
problems.”
The goal of the program to is to teach
high school students how a business
works by allowing them to set up and
run a company. All the organizations are
connected through Virtual Enterprises
International. It is run along the lines of
an apprenticeship, which young people
learn by practicing. The students also
created an e-commerce website connected
through Virtual Enterprises.
“The students live it day by day,” said
Laurie Acosta, who is the lead teacher for
the Academy of Finance at J.P. Taravella.
She facilitates the Virtual Enterprises
program. “They go through what a real
startup business goes through. They
write a business plan, get funding from
virtual enterprises, and really do it all.
They learn what it takes to run a business
in the real world,” said Acosta.
The money involved, of course, is not
real money. The program provides a
simulation of how a business works. The
students are given a job in the company
and are expected to do it well. They
learn how the corporation must pay
taxes, and make purchases on behalf of
JULY 2016
the corporation. They receive a paycheck
and study how money would be
spent on basic expenses such as rent,
food, and utilities.
“This year we won first place in the state
competition. This was a tremendous
learning experience for the kids,” said
Acosta. “They are no longer in a typical
classroom environment. They are in a
corporate environment that is more like a
think tank. They have nice office furniture
and a conference room.”
Lauren Echols, vice president of sales
for Focal Point, loved the experience
and the chance to travel. “We all wrote
the business plan together. During the
presentation, I explained the promotion
sales plan and marketing sections. I had
never been to New York before and I
met many people from other nations. I
think we learned a lot,” she said. Echols
will study Hospitality at the University of
Houston next year.
The program had a very successful first
year. Acosta wants to grow it and get
the local business community involved.
She hopes they will provide mentoring to
the students. P

VOLUNTEERS
The staff of
Everglades Angels
Dog Rescue coming
out of the bushes
after rescuing Blake.
Meet the
Everglades Angels
by Marcy Albin
The Rescuers of the Everglades
The Everglades Angels Dog
Rescue is comprised of Cathy
Cappillino, who is the spearhead
for this new dog rescue based
in Pompano Beach, and three fellow
rescue friends that first started the
organization. The goal is to help save
the hundreds of dogs abandoned in
the Everglades area. The group now
has seven members, which helps to
spread out the various obligations. The
focus of the rescue is the rural areas of
Southwest Dade County. There was a
need for more rescues here because it
has become a virtual dumping ground
for unwanted dogs. People dump their
dogs there thinking the animals can live
off the land. Domesticated dogs cannot
fend for themselves in the wild. Not all
dogs are abandoned here though; some
of them migrate from local farms and
nurseries, either getting lost or searching
for a better life. They end up homeless
and starving to death.
If you were to take an early morning
ride, just after sunrise, you would find
these poor, lost dogs searching for food
along the roads. Unfortunately, while
looking for food, some get hit by cars.
The intense heat of this southern climate
sunburns most of the dogs, especially
the white, mild
colored ones.
Their burns
evolve into
festering infections,
often
killing them
even before
starvation
does.
While their
name denotes
“Everglades,”
the Angels
operate in
the Florida City and Redlands areas.
They don’t traipse into alligator infested
waters, as the name Everglades conjures
up in our minds. The Angels go to
desolate agricultural areas, where you
can go miles and miles without seeing
people. Many of the farms put security
dogs there, and since most of these
dogs are not being fed, they run away.
They run down Chrome Avenue and
Kendall, going further west, until it’s like
“dead dog alley.” If the Angels went
daily, they could bring in 100 dogs a day.
The breeds vary greatly; they rescue
fox terriers, poodles, Aussies, pits,
bulldogs, Rottweilers, purebred German
Volunteers head into the farm land looking for abandoned dogs.
Shepherds, mixes, Yorkies, and more.
No breed is immune. Unfortunately, no
dog is so lucky to be above the call for
this abuse.
One of the biggest
sources of financial help
is an event called Dogs,
Beaches and Brews, held
at the World Famous
Parrot Lounge on Ft.
Lauderdale Beach on
the last Friday of every
month.
Pups waiting to be adopted.
When Bailey
was found he
was barely
alive and
rushed to
the vet for
ememrgency
treatment.
Today he is a
happy, healthy
dog.
It has grown tremendously since its
start. About 100 to 200 people come
to socialize and bring their dogs to the
beach. At 7pm, people head over to the
Parrot for drinks, dinner, and the raffle.
For everyone who donates $5 to the
Angels program, the Parrot gives a free
drink ticket. The festivities start at 5pm
and ends at 10. Save a dog, talk to a
Parrot-head, and meet new friends.
Since the Angels do not have their
own facilities, most of the dogs are
boarded at Seiler Animal Hospital in Ft.
Lauderdale. They are treated
here and when finished or
cleared medically, and have
not been adopted or in foster
care, they go to the Arfington
Pet Resort. This is the ultimate
dream for a rescue dog.
Many have heartworm, Lyme
disease, among other issues,
and still need follow up care
by the Angels staff. Arfington
is in Tamarac, and they have
a boarding/day care facility.
In addition to the Resort staff,
the volunteers are integral
to the resocialization pattern
to prepare the rescued dogs
back into society. With pools
for swimming, they are joined
by the rescue’s volunteers who
visit daily to help socialize the
dogs, walk, exercise, and play
with them.
One of the most intense
rescues was Angel, a little
Chihuahua. Found in a desolate area of
the Everglades by local people, she was
injured, and was duct taped to a tree.
Angel eventually freed herself, and was
suffering from internal infection, eye and
face lacerations. She was very dehydrated
and emaciated, and nearly blind.
Today, Angel has made a full recovery
and is in a loving home with several
furry siblings, which include two other
Everglades Angels dogs.
Another heartwarming rescue is an
American Bulldog named Cane. Cane
was found emaciated, dehydrated,
sunburned, and hours from death. He
received extensive medical care to treat
his burns and other medical conditions
for several months. The Angels became
his temporary family and showed him
not all humans are bad. He is now in a
home with a wonderful family, and has a
furry sibling named Babe.
The Angels also have many senior dogs
that need homes. Senior dogs are easier
and mellower. They’ve already given
their lives to another owner, who either
decided they wanted a younger more
active dog, or have passed on.
The Angels donations come mostly from
THE ADOPTION COSTS
ARE AS FOLLOWS:
One year, or older, $175;
Under one year, $195.
All have shots, are spayed or
neutered.
They are socialized and ready for
doggie daycare.
All have had basic command training
in good doggie behavior.
supporters; they have a great fan base
of 80,000 people on their Facebook
page, Everglades Angels Dog Rescue.
They also meet future supporters at
various events that take place at venues
such as PetSmart, Petco, and others.
This group of unbelievably dedicated
dog rescuers rehab them, hold them,
play with them, and encourage them to
find their own happily ever afters. Unlike
other residential rescues, where some
dogs can stay for life, this group hopes
for forever homes.
These animals have been given a wonderful
sanctuary and incredible vet care
by the great staff at Seiler. Perhaps these
animals released some anger; for sure
they received unconditional love, and
grew up just a little, or maybe a lot. The
rescued dogs all have come so far and
the Angels of the Everglades are proud
of each and every one. These dogs can
teach everyone a lot about life.
In your next generous, charitable
moment, consider Everglades Angel
Dog Rescue so they can continue to
help these abused animals and give
them a voice, because they cannot
speak for themselves. Donations are tax
deductible. P
CULTURE
by Ali Berger
Broward Cultural Division and Brazilian Music Institute
Make Music Together
Broward County Commissioner Dale V. C.
Holness, left, with Hon. Olivia “Babsy” Grange.
Beneath the full moon in Davie,
at Broward College’s Center for
Performing Arts, 14 legendary
musicians took to the stage to perform,
Felicitate: Happiness Brazilian Style. The
concert took place on the final night of
Brazilian Music Institute’s week long celebration
and in conjunction with Broward
Cultural Division’s day long Creative and
Cultural Industries Symposium. The
symposium, now in its second presentation,
has become a significant meeting
of minds to discuss arts and cultural
contributions in Latin American, the
Caribbean and South Florida.
On this night, in this dynamic relationship
between the University of Florida,
Broward College, and the National
Endowment for the Arts (Hogwarts),
the concert lasted two hours and
was attended by a packed house.
Exceptional musicians performed various
ensembles that passionately captured
the essence of Latin American culture,
making for a remarkable evening.
Brazilian Music Institute’s unique, musical
program at the University of Florida
serves as a training ground for rare
talent. Musicians bring different styles
and techniques together to collaborate
on some truly meaningful pieces. Some
of the 14 musicians that performed on
Friday night include: three time Latin
Grammy Nominee and master pianist,
Jovino Santos Neto, Dr. Welson Tremura,
56
who teaches and performs what he
loves, and vocalist Beatriz Malnic, who is
also the co-founder and musical director
of the local not-for-profit organization,
Brazilian Voices Inc.
The 2016 CCIS was introduced by Dr. Linda
Howdyshell, college provost and senior
vice president for Academics and Student
Success, at Broward College .
In the theme of the evening, “Brazilian,
The Pursuit of Happiness,” all of the
sambas and mixed stylings of Brazilian
music performed carried upbeat and
sultry sounds, creating a positive and
uplifting vibe. Each musician proved to
be a master of their own craft, producing
sounds reminiscent of jazz and mambo
mixed. Professor Larry Crook, co-director
of the Brazilian Music Institute, shared
that, “Brazil is the land of many things,
among them great percussionists.”
Crook then spent the next 12 minutes
interweaving percussion sounds with the
saxophone and piano melodies. Crook’s
drum beats sounded out through the
auditorium, creating a tribal, jazzy score,
while leading the rest of the instruments
through mixed sambas, mambos, and
rumba. As the audience listened to the
sultry voice of recording singer, Beatriz
Malnic, Vadim Arsky and Ulisses Rocha
played guitar and saxophone to a slowed
down version of a mambo.
Next on stage came students from
the Brazilian Music Institute led by Dr.
Tremura on guitar and vocals, and masterful
pianist, Jovino Santos Neto. Jovino
said that, “the biggest healer out there is
harmony, and if we could bring a touch
JULY 2016
of these creative melodies into hospitals
there would be no more sick people.”
This is perhaps why many feel the cultural
and creative innovation of the Latin
American and Caribbean communities
inspires students and teachers from all
over the world to come together and
explore their musical talents for the purpose
of growing local economies. This is
accomplished by sharing and exchanging
creative products in music, film,
visual arts, written and spoken word, and
dance, just to name a few of the possible
creative expressions that can be shared,
exported, and imported in a bid to drive
economies forward. The symposium
was about discussing and opening these
doors and the concert was a celebration
in example
of these
possibilities.
It is reported
that about
$640 billion
was spent
on exports
of creative
goods and
services in
2011, of
which $87
billion or 14
percent originated
in the
Americas,
Dr. Marielle Barrow, arts
management consultant
and founder of Caribbean
Intransit, a Caribbean arts
journal.
according to data compiled by Oxford
Economics. The demand for creative
expression seems to be on the rise,
as Latin American, the Caribbean, and
South Florida communities are finding
new ways to bring awareness to their
rich cultural heritage; and as a concert
attendee it was easy to see why Latin
America is so famous for being carefree
and joyful. P
TRAVEL
by Martin Lenkowsky
Oh
Canada!
A summer trip to beauty
bird-watcher, I loved the tropical birds in
all their splendor.
I came, I went, I planted; a
begonia that is. I know, this
is a rather strange way to
lead off a travelogue, but I’ll
explain it all in a bit.
As I’m writing this, my wife
Amy, and I are aboard an Air
Canada flight heading home
from Montreal. We just spent six days
in Quebec Province; four in Montreal,
two in Quebec City. We’re probably
somewhere above upstate New York
about now, and keep hitting pockets of
turbulence; thunderstorms in the area,
says the pilot.
This was Amy’s first trip to the Frenchspeaking
part of Canada. I had been
in Montreal with a few friends back in
the summer of ’70. To be quite honest,
all I remember now was the French
girl I met, an old dive of a place where
we stayed called the Iroquois Hotel in
romantic Old (Vieux) Montreal, and miles
of cobblestone streets.
Jumping many light years ahead to now,
I wanted to experience that same feel of
cobblestone beneath my feet with Amy
by my side. I wasn’t disappointed. Old
Montreal is a quaint place with coffee
shops, boutiques, and an endless supply
of restobars. This part of town is adjacent
to the scenic St. Lawrence River.
No discussion about Montreal is complete
without mention of its efficient,
60
clean, safe, and easy-to-navigate, colorcoded
subway system. Our downtown
hotel was nice; I had no quarrel there.
However, its location left a lot to be
desired. It was in an area that was a
considerable walking distance from the
metro. A warning to Montreal visitors:
there’s construction detours everywhere,
but once you get to your stop, voilà,
the entire city is just a short ride away. In
fact, we both bought Metro map T-shirts
as souvenirs. (I already own two, from
NYC and Paris respectively.)
We hit all the major tourist attractions.
Our favorite was Montréal Biodôme,
a huge domed structure housing the
world’s various eco-systems replete with
local flora and fauna in free-roaming,
uncaged environments, along with
a habitat-friendly aquarium. Being a
JULY 2016
Another attraction I enjoyed was the
Montreal Botanical Garden, especially
the climate-controlled greenhouse
displays. The cactus house was my
favorite. I couldn’t help but imagine how
wonderful that warmth would feel when
trying to escape the long frigid, snowy,
blustery Canadian winter.
As we strolled along the outside
gardens, we came across some
employees planting begonias for the
spring season. I asked for permission to
plant one myself. My wish was granted.
Now I know for the duration of its
relatively short life, that one special plant
will forever have my fingerprints on it,
a fact known only to the plant, the soil,
Amy and myself.
We left Montreal and headed to Quebec
City on Via Rail, Canada’s train network.
Quebec Provence’s capital city is tiny
compared to Montreal. Our hotel – the
Quebec Hilton - was situated right
across the street from the Quebec
Parliament. We were a moderate walking
distance to Old Quebec, an area
quite similar to Old Montreal with restobars,
cafes, and the feel of cobblestone.
Outdoor cafes abound featuring musical
entertainment with genres ranging from
French tunes, jazz, classic, pop, to folk.
Our top spot for music and culinary
pleasure was called Bistro 1640. While
we sampled a few Québécois favorites
such as boudin, a specially prepared
sausage, and goose confit, we enjoyed
the mellow sounds of an elderly charming
street singer/trumpeter/guitarist who

had a vintage Satchmo sound and style.
I’d be remiss not to mention a few other
Quebecois food favorites we tried,
starting with poutine, a dish made with
French fries, topped with light brown
gravy and cheese curds. It was delicious,
I admit, but certainly not a cholesterolfriendly
item. Thank goodness for statins,
I guess.
Montreal is known worldwide for its
smoked meat dishes. We stood on line
at the famous Schwartz’s Deli to sample
its specialty. Smoked meat can best be
described as somewhat similar to pastrami,
but tastier. And finally, there’s the
highly touted Montreal bagel. However,
as a native New Yorker, I confess to
eating my pizza and bagels with a highly
critical palate. And guess what? New
York’s finest wins this one hands down.
(Je suis désolé, Montréal.)
And then there’s the
drinking. Quebec
prides itself on its
many craft beers.
Admittedly, I’m rather
choosy here as well,
but did find a few quite
worthy of mention
as well as imbibing:
Gaspar Taverne Lager,
Alexander Keith’s
red ale, and La Fin
du Monde, a strong
Belgian-style ale brewed in Montreal.
And in conclusion, a toast to
Quebec: Santé!
Au revoir.
Canada
Currency
speaking
Finally, we went to a foreign land with a
chance of not getting stomped on by
the currency exchange rate. During the
past decade or so, my wife Amy and
I have done considerable European
travel. Whether compared to the euro
or the British pound, our blessed dollar
has always been looking up from
the pathetic bottom of the currency
seesaw.
Not this time. We just returned from a
week in Canada where every American
greenback was worth about $1.30
CAD (Canadian dollars.) Of course my
first reaction was, “hooray, we made it
to the top of the financial food chain,”
but not so fast; there’s always not-sogood
dwelling under the surface of
good.
Purchasing everything in our visual
range from chewing gum, souvenirs,
various tourist must-sees, to relatively
costly meals – without skimping on the
alcohol – (hey, we were on vacation,)
I simply assumed our monthly credit
card statements would amount to little.
Guess again, folks; it still
adds up big time; trust me
on that one.
Case in point: Amy and I were walking
down this quaint little street in Old
Quebec. Both sides of the street were
lined with bars, the mandatory souvenir
rip-off joints, and cute little French
boutiques. We happened to pass a
shoe store and saw a window display
stocked with fine – actually rather hot
– women’s shoes. I spotted a few pairs
of cool-looking boots I felt would be a
perfect fit for Amy, assuming they had
it in her size; another story in itself. I
was all so willing to get her a pair – or
two – but she brought me back to
reality with a simple sentence: “we live
in Florida, I’ll never wear them.
That’s when she spotted another
unique, attractive, still cool-looking
pair of shoes.
I promised her by
day’s end they’d either be
on her feet – or stashed away in our
luggage – for future use. It took us a
few hours to actually make it back to
our little shoe boutique. Food, drink,
and outdoor music cafes intervened,
but I wouldn’t be dissuaded by
circumstance; I used my good sense
of direction to lead us back there.
Amy quickly found the shoes on a
display rack. I started to call for a sales
clerk to hopefully seal the deal. (And
yes, I do speak a tiny bit of Francais.)
Suddenly, Amy called me over to point
out the price posted on the bottom of
the shoes read, $340 CAD, or about
$259 USD, which is the number that
would ultimately appear on my credit
card. I am not cheap; nor am I overly
frivolous. Actually, I’m probably a bit
closer to the latter than the former, but
there are limits.
Most of our local shoe purchases are
made in discount places like DSW.
Most cost less than $50 or so, but the
favorable exchange rate etched itself a
spending spree in my mind and wallet.
I figured if it cost me $100 in Canada,
that’d still only be about $77 back
home; more than I usually spend, but
doable with my newfound friend, the
exchange rate.
Amy put her foot down, and I couldn’t
argue. I shouldn’t be paying $259 for a
pair of shoes, no matter how hot and
rakish they’d look on Amy. I relented,
but all was not lost. Amy remembered
another shoe store a few blocks away
on the same little street. It was a
Crocs only outlet. She quickly spotted
a blue pair of waterproof slip-ons for
$44 CAD. I had promised her a pair
of shoes and was going to stick to
my word. I pulled out my trusty plastic
friend. The $33 charge that’ll arrive in
the mail at month’s end is something I
can live with. That should keep
Amy happy, P
WINE WATCH
OREGON
A SURPRISE FOR
excellent wines
by Sheila and Bennet Bodenstein
KING ESTATE TAKES ADVANTAGE OF RICH LAND TO PRODUCE PREMIUM WINES
As the interest in wine increased in recent years, growers and winemakers began looking for places other than California to grow their grapes:
enter Oregon. It was discovered that the area around the Willamette Valley proved to be a little Burgundy and the Burgundian varieties such as
Chardonnay and Pinot Noir did as well there as they did in their ancestral home and produced wines of equal or better quality. King Estate is a
winemaker in Oregon and their wines put a new meaning to the words quality and premium.
KING ESTATE ACROBAT 2015 ROSÉ
OF PINOT NOIR ($13).
Rosé wines have fallen into disfavor in recent
years probably because of their color similarity
to super sweet blush Zinfandels. There are
however, many rosé wines that are not overly
sweet and are pleasantly fruity; Acrobat is
one of those wines. This wine explores all of
the intricacies the Pinot Noir grape is capable
of but in a lighter, less sugary incarnation.
The aroma features apricot, orange blossom
strawberry, and raspberry. The flavor does
not reprise the aroma but heads off a totally
different direction by showcasing honeydew
melon, strawberry, citrus aided by a delightful
mineral element. Not meaning to be pushy
but this is a wine that should not be missed.
KING ESTATE 2013 VIOGNIER ($22).
At one time Viognier was the world’s most rare and
expensive white wine. In its native land of France, less
than 35 acres of the shy growing, mildew sensitive
variety were under cultivation. While the grape is
difficult to grow in France, it has found a new home
in Oregon where modern farming techniques and a
friendly climate has lead to resurgence in plantings and
the production of outstanding wines from this oftentemperamental
grape. The King Estate 2013 Viognier
is a perfumed wine that almost defies description. The
aroma reminds one of blooming honeysuckle mingled
with apricot, orange peel, honey, and violets. The flavor
accents apricot, peaches, and raisins, which continue
onto the finish that is long, complex, and very interesting.
This wine is nothing short of a masterpiece and
missing it would be like passing the Mona Lisa without
giving it a second glance.
KING ESTATE 2014 CHARDONNAY ($18).
This wine is not a California or a French
Chardonnay lookalike. It is a pure Oregonian that
proudly displays its heritage. The flavor and aroma
too are pure Oregonian and while this wine does
display the basic characteristics of a Chardonnay
it does so in its own delightful way. The aroma is
not big; it’s huge displaying, cantaloupe, peach,
grapefruit, baked bread, honey, and butterscotch
with just a bit of oak in the background. This
wine is also no slouch in the flavor department
by featuring nectarine, lemon zest, melon, vanilla,
honeysuckle, apple, and of all things, the telltale
Burgundian signature of cedar, which is almost
never found in California cousins. A description of
the finish would only be “gilding the lily.” Needless
to say this is an incredible Chardonnay and a
credit to the people who made it.
2012 KING ESTATE DOMAINE PINOT
NOIR ($70)
As different as the King Estate Chardonnay is from
its California counterparts, the same holds true
for the Pinot Noir. While many of the California
Pinot Noir’s have been running an alcohol content
of 14 percent and even greater, this Oregonian
comfortably resides at the traditional 13 percent
region, which results in a greater concentration of
the flavors and aromas. 2012 was an exceptional
growing year in Oregon and this wine not only
benefitted from that but also rejoices in it. This wine
displays an earthy aroma of berries, cherries, plum,
and cranberries with suggestions of chocolate and
black tea in the background. The flavor incorporates
the elements of the aroma where they merge with
blackberries, blueberries, vanilla, and clove. The
finish is as fruity and full as is the flavor. This is not
only a good wine, it is a great wine that will be
spoken about and enjoyed for many years to come.
FOOD
by Cynthia MacGregor
Easy-and-Quick:
Recipes for Busy Days
Busy days come in a variety of “flavors.” You’re busy with the family, working late, and even
having fun. But whatever the cause, busy days leave you pressed for time when it gets close to
the dinner hour. Fortunately the Parklander has some suggestions for putting dinner on the table.
The main course is usually the most time challenging. Side dishes can be quick and easy
through the use of frozen vegetables, or simply slice a tomato and top it with some crumbled
feta cheese and snipped fresh basil (if you don’t have fresh basil, use dried). Another easy and
healthy veggie idea is to halve a ripe avocado, remove the pit, and squeeze lime juice into each
half. Sprinkle with garlic powder, salt, and pepper and voilà, you have two servings of a delicious
veggie.
For your starch side dish, what could be easier than microwaving a baked potato? Another quick idea is to scrub a potato and quarter
it lengthwise, place the quarters skin side down in an ovenproof baking dish and pour a little olive or coconut oil on each quarter. Follow
the oil with some liberal shakes of garlic powder, grated Parmesan cheese, pepper, and paprika. Bake in a 350° oven for an hour.
But what about the main dish?
Here are two suggestions
Beef Aurora
Salt
1 lb ground beef
1 can (10.5 oz.) condensed onion soup, undiluted
1/2 tsp oregano
Freshly ground pepper to taste
Optional: 3 tbs butter (if using optional mushrooms)
Optional: 1/2 lb sliced mushrooms
Salt the bottom of a large, preferably nonstick, skillet and heat it over moderate heat. When the pan is hot, add the beef, breaking it up
and stirring until it’s brown. If using the mushrooms, remove the beef and reserve. Add the butter; when it’s hot, add the mushrooms and
sauté until they’re lightly browned on both sides. Return the beef to the pan and add the onion soup. Add pepper with a heavy hand, and
oregano. Mix well. Reduce heat and simmer for 10 minutes. Serves 3. Doubles nicely.
This next recipe comes together quickly and takes 25 minutes’ cooking time.
Dilled Pork Meatballs in Cream Sauce
For the sauce
Roughly half of an 8-oz. container of cream cheese with chives
1 tbs snipped fresh dill (do not use dried)
3 splashes Worcestershire sauce
For the meatballs
1 lb ground pork
Roughly half of an 8-oz. container of cream cheese with chives
1/4 cup snipped fresh dill (do not use dried)
2 splashes Worcestershire sauce
2 tsp liquid smoke
1 tsp beef broth base
1/2 tsp dried savory
2 tsp liquid smoke
1/2 tsp dried savory
1 tsp Dijon mustard
Salt and freshly ground pepper to taste
In blender or food processor add all sauce ingredients until well mixed. Pour into a large skillet and turn heat to
medium. Allow sauce to warm while making the meatballs. (You will not have a large quantity of sauce. You don’t
need a lot.)
To make the meatballs, in a large mixing bowl add all meatball ingredients and blend well with your fingers,
then form into golf ball size meatballs and place skillet with the sauce. Cover skillet and cook over medium
heat until cooked through, about 25 minutes. Serve JULY hot with 2016sauce. Serves 4-6.
1/2 tsp Dijon mustard
1/4 cup water
Salt and freshly ground pepper to taste

PHILANTHROPY
High school students from the
area are receiving financial
help to attend college – thanks
to a Coconut Creek couple
who support higher education
and want to forge better
understanding of cultural and
religious differences.
Shiva and Lata Gangal established
an endowment because they
believe that “excellence in college
education is the foundation for U.S.
economic progress, including world
leadership and for society’s welfare and
development of humanity.” Students
receiving the financial aid must demonstrate
an interest in understanding
cultural diversity and religious tolerance.
The Gangals registered the “Gangals
Nonprofit Foundation” as a nonprofit
corporation funded wholly by them. The
endowment will provide funds for at least
three students each year, and each will
be eligible for $2,000 a year for three
years.
While the grant
covers a small
percentage of total
college cost, it
makes a difference.
Ashley Browne, a
Coconut Creek High
School graduate who
now lives in Coral
Springs, was one of
the first recipients
and is enrolled at the
University of Florida
in Gainesville. “No matter the amount,
this is a big help towards my evergrowing
college expenses,” she said.
“It’s extremely important to me.” Browne
is using the money to pay part of her
college housing fees. In addition to
receiving the financial aid, she is thankful
to the Gangals for another reason. “They
have introduced me to many people
who have shared so much helpful
information regarding my future career,”
she said.
The scholarships are available to seniors
at four area high schools – Coconut
Creek, Monarch, Coral Springs, and
Deerfield Beach. Students apply through
advisors who work in cooperation with
the foundation. The applicants are
screened by an independent selection
committee, which makes recommendations
to the board of directors. Four
students received the aid in 2015, the
first year the foundation was established.
Besides the scholarships for undergraduate
studies, the foundation provides
postgraduate scholarships for international
students at FAU, $10,000 for a
student over two years. So far, those
scholarships at FAU have been granted
to two international students. They are
strengthen cultural understanding
required to study American government,
including Congress and the presidency.
In addition, a $5,000 grant for other
purposes has been awarded. After
visiting a research lab at the University of
Miami, the Gangals provided a $5,000
grant to a Palestinian woman with a
Ph.D., whose stem cell research is
partly funded by the National Institutes
of Health. The Gangals were impressed
by her
published
papers and
progress in
her research.
Shiva and
Lata Gangal
came to
the U.S.
from India
in 1967.
They arrived with their intelligence,
their resourcefulness, their education,
their skills, and their hopes for more
prosperous opportunities than what
were available in India at that time. As
an electrical engineer, Shiva worked for
large companies. Lata used her college
degree to work in banking. Eventually
they built their own engineering design
and construction business in West
Virginia, he as president, she, with her
banking experience, as treasurer. They
retired to Coconut Creek 17 years ago.
Encouraging a better understanding of
cultural diversity and religious tolerance
is of special interest to the Gangals
because of their experience as Hindus,
which is the religion of the vast majority
of people in India. Here in the United
States they learned that not all religions
are accepted equally. They believe that
understanding cultural and religious
differences strengthens a society. P
SCHOOL SPORTS
by David Volz
Stoneman Douglas Baseball Team is
State Champion
The
Eagles
are flying high this
season, winning the
Florida 9A State Baseball
Championship. Their record
is 27-2, and the score for the
final game was 3-0.
Brady Norris, a pitcher for Marjory
Stoneman Douglas High School, was
the winning pitcher against Miami
Columbus High School.
“It felt great to win the state championship.
We had a great team. We were
all like brothers and this is something
we will always remember. I will always
wear my state championship ring,” he
said. Norris plans to play baseball for
Bethune-Cookman University.
Brandon Kaminer, a junior, was the
winning pitcher in the semi-final game
against West Orange High School. “It
was a good feeling to win the state
championship. We were playing a very
good team but we came together to win
the game,” he said. Kaminer hopes to
play baseball for the University of Miami
and eventually the major leagues. He
was 11-0 as a pitcher.
Ivan Nunez, who played third base, hit a
two RBI double to win the state championship
final. “It was great to be part of a
state championship team,” he said.
Jesus Luzardo, a pitcher who chose
not to go to the University of Miami and
signed with the Washington Nationals,
said, “It was wonderful to win the state
championship. We worked hard during
the season.”
Parkland City Commission members with Coach Todd Fitzgerald and the Marjory Stoneman
Douglas High School baseball championship team.
John McKenna played first base and
will play at the U.S. Military Academy at
West Point next year. “It was the best
feeling to win the state championship.
It takes a lot of work and constant
repetition to be a good baseball player,”
he said.
Stoneman Douglas has a tradition for
having good baseball teams, but this is
the school’s first state championship.
Many of its players will play on college
teams next year and some may play
professionally.
Colton Welker, a shortstop, has enjoyed
being a leader on the team. He had a
.512 batting average and 25 runs batted
in. He also hit six home runs. Welker is
foregoing the University of Miami and
has signed with the Colorado Rockies.
Todd Fitzgerald, head baseball coach
for Stoneman Douglas, was elated with
the state title and is looking forward to
next season. He believes in challenging
the players every day and insists on a
culture of winning.
“The players have to buy in to the
system. They have be able to compete
at the highest level. The players have to
work hard every day,” said Fitzgerald.
Fitzgerald insists on fast paced practices.
When a ground ball is hit, an infield
player has less than 4.3 seconds from
the time the ball leaves the bat to field
the ball and throw it to a base to get a
runner out. “We run our practices by the
clock,” he said.
He is proud of his assistant coaches.
“We have a fantastic coaching staff.
They know how to win and have a
proven track record. The players really
believe in the program. Our goal every
year is to get the players to understand
our system. We do a lot our teaching in
the fall,” he said.
Fitzgerald believes the team
will do well next year. “We
will reload for next season,”
he said. “We have some good
players coming back.”
The Eagles baseball team was honored
during a recent Parkland Commission
meeting. P
FROM THE EXPERT ASK DR. RENAE
Help! I’m feeling
SUFFOCATED
Dear Dr. Renae,
My mother is suffocating me. When I was younger,
I was attached to her but now I am 13, and not
interested in spending as much time with her as
she would like. She expects me to share everything
that happens in my life and doesn’t stop asking me
details. I like to spend time with my friends instead
and she acts like I am hurting her feelings. I also like
my alone time. My grades are good and I help around
the house a lot since my mother is a single mom. It
is just the two of us and I do love her but I need my
space.
-Help!
Dear Help,
I understand where you are coming from. My advice to you is
this: Try sitting down with your mother and explain that while
you appreciate her wanting to spend time with you, you also
need your space. It sounds like you are close with your mom
and it’s difficult for her to let go, and she may need to hear
that you are OK. You know she is there for you, and maybe
you can share some details so she doesn’t feel left out. In the
end, sounds like you have a mom who cares.
Dear Help,
–Your Friend
I definitely feel you. My parents recently got a divorce, and
I’m alone now with my mom as well. At first, I also felt kind of
obligated to spend time with her and do everything with her,
and I worried I was upsetting her when I chose to do something
alone. However, I had a conversation with my mom
about it, and she understood that as a teenager, I needed my
space. I would recommend you have a similar conversation
with your mom. I’m sure she’ll understand and appreciate
your openness, being that she wants what’s best for you.
Another suggestion I would give is to plan a special thing to
do together with your mom. It doesn’t have to be every day,
and it also doesn’t have to be something extravagant. It’s just
nice to plan something you both can periodically do together.
For example, my mom and I watch television together three
times a week. Remember - your mom loves you and wants
you to grow. All moms have moments where they don’t want
their kids to grow up, but ultimately they come through. All
the best!
Dear Help
–A caring friend
I can definitely see why you are frustrated. I’m 13 and I have
a single mom too, so I can relate exactly to how you feel
because I was in that situation too. What I did with my mom
is this: I sat my mom down and told her I don’t want her to
get upset at what I’m about to tell her. I told my mom don’t
get me wrong I love spending time with her, but I’m also
growing older and not a little girl anymore. Now that I’m a
teenager, I want to be able to balance out my time between
quality time with her and my friends. Your mom will definitely
understand and her feelings for sure will not be hurt. As long
as you tell her how much you do appreciate the time you get
to spend with her she will understand. Remember, she was
a teenager once and she will totally get it that you want to
spend time with your friends, especially since your grades are
good and you’re helpful at home, which is which every mom
wants their daughter to be. Good luck!
Dear Help,
–Your friend
Your mom probably feels a little lonely watching you go out
with your friends since she is home alone all the time. Maybe,
every once in a while, you can have a day to spend with her
at the mall or somewhere you both want to go. Also you
should try telling your mom you feel like your personal space
76
JULY 2016

is being invaded. Talk with her, express how you feel and maybe
she will realize you aren’t a little kid anymore. I hope this helps
you!
–An understanding friend
Dear Help,
Your mother has always known that there will come a time in
your normal development when you will want your independence.
Therefore, what you are feeling will not be a surprise
to her. On the contrary, she would be worried if you continued
to maintain the same attachment you needed when you were
younger. Sharing small amounts of time and specific information
about your experiences, changing preferences, opinions,
and feelings will reassure her that you are doing well and she
has done a good job of instilling positive values. I recommend
that you tell your mom what is going on in your life while eating
dinner together, riding in the car, and briefly before going to bed.
When getting together with your friends in your home, be sure to
include your mom for five minutes so she can get to know your
friends. When your mom is driving you and your friends make
sure to include her in the conversation. Having a special activity
that you do together, like taking walks, will be enjoyable and
satisfying to both of you. Telling your mom you love her goes a
long way too.
beach, cold, refreshing treats,
and family picnics at the park. Although
the summer season brings about these
pleasant things we look forward to, it also
marks the beginning of the mosquito season
with populations thriving at their peak in the
warm weather.
Mosquitoes can pose a larger threat than
just causing an itchy bump on the skin;
they can be vectors for Zika virus, an
autoimmune disease mainly spread through
mosquito bites. Most Zika patients only
show symptoms of the virus through fever,
rash, joint pain, and conjunctivitis at worst;
mild symptoms that last for several days
to a week, which may not even cause the
person to realize they have been infected.
However, there have been rare cases in
which it has caused muscle weakness,
paralysis, and even death in some adults
with underlying autoimmune issues.
In addition to affecting people who have
been directly bitten by an infected mosquito,
Zika virus can also have an impact on
expecting mothers and their babies. The
virus can be transmitted during pregnancy
from the mother to her fetus, causing
microcephaly, a birth defect where the
child’s head is significantly smaller than
the average size due to abnormal brain
development.
In order to properly protect yourself against
Zika virus, as well as the ordinary mosquito
bite, it is important to maintain proper care
of your home first.
Since mosquitoes breed and hatch in water
over a span of about seven to 10 days,
preventing the collection of pools of water
on your property is the first step in limiting
mosquito populations. The amount of water
in a small bottle cap is all mosquitoes need
to lay their eggs. Once a week, empty and
scrub, turn over, or throw out containers that
hold standing water. These items can include
vases, pet water bowls, flowerpot saucers,
buckets, pool covers, birdbaths, and trash
cans. If certain items must hold water, make
sure they are covered when not in use.
Besides maintaining water sources around
the house and eliminating these breeding
grounds for mosquitoes, further steps can
be taken to reduce contact with these
insects. Wear long clothing that covers
the arms and legs when going outside,
or use EPA-approved mosquito repellant.
Stay indoors in the air conditioning when
possible, and make sure there are screens
on all of the windows.
With all of these precautions taken into
consideration, summer can still be a stressfree
season for enjoying a family vacation or
exploring the local scene around town. P
DIETITIAN’S VIEW
The Benefits of
by Nancy M. Ouhib,
MBA, RD/N, LD/N
Probiotics. What the heck
are those, some would say?
Others include probiotics in
their diet because someone
said they are good for you.
Let’s try to take the guesswork
out of probiotics and clarify
why we should consume them.
What are probiotics?
Probiotics are live bacteria and yeasts
that are believed to be good for your
health when consumed by both humans
and animals. In 1907, Russian scientist
and Nobel laureate Elie Metchnikoff,
a professor at the Pasteur Institute in
Paris, suggested replacing harmful
microbes in the gut with useful microbes
to modify the flora for the health benefits.
He observed that Bulgarian peasants
that consumed yogurt lived longer. He
attributed their longer lives to their yogurt
consumption. The history of probiotics
can also be traced back to the first use
of cheese and fermented milk products
by the Greeks and Romans who
recommended their consumption.
Why probiotics are beneficial
Some of the most commonly claimed
benefits of probiotics include the
decrease of potentially harmful
gastrointestinal microorganisms, the
reduction of gastrointestinal discomfort,
the strengthening of the immune system,
the improvement of the skin’s function,
the improvement of bowel regularity,
the strengthening of the resistance
to certain allergens, the decrease in
body pathogens, the reduction of
bloating and flatulence, the protection
of oxidative damage to proteins and
lipids, the improvement in urinary and
84
vaginal health, and the maintenance
of intestinal microbiata in individuals
receiving antibiotic treatment. As a
result, probiotics have recently received
renewed attention from researchers,
product manufacturers, and consumers.
Types of probiotics
Many types of bacteria are classified
as probiotics. Most come from
two groups: Lactobacillus and
Bifidobacterium. Lactobacillus is the
most common and is found in yogurt
and other fermented foods. It helps with
diarrhea and digesting lactose, the sugar
in milk. Bifidobacterium is also found
in dairy products. It can ease Irritable
Bowel Syndrome symptoms and other
conditions.
Good sources of probiotics
Acidophilus milk - is a simple way to get
a dose of probiotics. Also called sweet
acidophilus milk, it is milk fermented with
the bacteria. Buttermilk, fermented with
lactic acid, is also rich in probiotics.
Kefir – dates back
to the shepherds of
Eurasia who drank
this bubbly
beverage
fermented
from the
milk they
traveled
with.
Thick, creamy, and
tangy, it has its own strain of probiotics
plus a few helpful yeast varieties.
Miso Soup – Miso, a fermented soybean
paste, is used to make this soup. It is
low in calories, high in B vitamins, and
chockfull of antioxidants.
JULY 2016
Sauerkraut – unpasteurized. Remember
that pasteurization kills all bacteria.
Kimchi is similar, but spicy and is also
loaded with immune boosting vitamins.
Soft, fermented cheeses – like Gouda
and Brie contain probiotics that are
hardy enough to
make it through
the GI tract, which
will boost the
immune system.
Sourdough bread
– San Francisco’s
famous
sourdough bread
packs probiotics
worth biting into.
Sour pickles –
that are naturally fermented with sea salt
and water (no vinegar) feeds the good
bacteria in the fermentation process.
Tempeh – is an Indonesian patty made
from fermented soybeans. Tempeh is
high in protein and it makes a natural
antibiotic that fights bad bacteria. It can
be used in place of meat.
Yogurt – is one of the most familiar and
beneficial sources. It contains live
active cultures that ease lactose
intolerance and may assist in
gas, bloating, and other digestive
problems.
Probiotic products are available at
the pharmacy, but these products
are not monitored or approved by the
FDA. Food sources offering live active
cultures and sound nutrition are always
the optimal choice. If you eat a wide
variety of foods and include foods that
are rich in probiotics, you are doing well
for maintaining a healthy gut. If you have
digestive problems or a condition like
IBS, you may need to adjust your diet or
look into getting treatment. P

ADVERTORIAL
Broward County Residents Relieve Back Pain
and Avoid Epidural Shots and Spinal Surgery
with Laser Decompression
Laser Decompression is working for Broward
County Residents who have been suffering with
Spinal Stenosis, Herniated, Bulging &
Degenerative Discs which can cause very severe,
constant low back, neck, leg and arm pain. These
residents are having this care with Dr. Craig
Kuhlmeier & Dr. Aliyah Stotter-‐Kuhlmeier. These
pain sufferers were desperate for relief and had
no idea it was obtainable without shots or
surgery. Now there is an option that has helped
numerous patients find relief. It’s called Laser
Decompression or LD. And it’s revolutionary new
program that works to restore patients’ lives by
reducing pain and getting to the cause of the
problem.
How it all started
Dr. Kuhlmeier & Stotter-‐Kuhlmeier have been
using non-‐surgical spinal decompression for their
Chronic Low back & neck pain patients. They also
use high powered laser therapy to increase the
success even more. This was the only system that
combines two of the most logical, safe and
effective treatments for chronic neck and back
pain.
Now called LD, it has changed the way many
patients are thinking about treating their pain.
You see, the average back pain patient either gets
better in a few short weeks or DOESN’T.
Chiropractic and Physical Therapy helps many
patients. Even just lying down and icing or over
the counter pain pills helps many.
For the rest, it can mean a lifetime of day-‐in, day-out
nagging, looking for the nearest place to sit
kind of pain. For others, the inability to walk,
drive, or take care of themselves. And pain pills,
lots of pain pills. Then commonly – surgery!
If you’ve never been there, or haven’t talked to a
patient like this, it’s an eye-‐opening experience!
But now, LD patients are experiencing results like
THIS:
“Before coming to see Dr. Kuhlmeier and Dr.
Stotter-‐Kuhlmeier, I had been suffering from
severe back and leg pain all the way down to the
bottom of my foot from my sciatic nerve. For
years I was in severe pain every day. It affected
my sleep, doing stuff around the house, walking
and my attitude as well as fallen a number of
times.
Since having Laser Decompression care
everything has turned around completely
because I am out of pain. I had three epidural
injections and was scheduled for back surgery.
My quality of life has improved. I’m sleeping
through the night and I don’t take pills anymore.
Having Dr. Kuhlmeier and Dr. Stotter – Kuhlmeier
treat me was God sent. I can’t thank them
enough. Everybody in the office is nice and so are
the other patients. I guess when your out of pain
everybody is happy. I would highly recommend
anyone who has back pain, leg pain and disc
problems to come see what they have to offer. It
has been a great experience for me.”
Michelle Feinberg
Coral Springs, FL
What Conditions Has LD Successfully
Treated And Will It Help YOU?
The main conditions it has great success with are:
• Spinal Stenosis
• Back and/or Neck pain
• Herniated Discs
• Degenerative Discs
• Sciatica
• A relapse or failure after surgery
• Neuropathy/Nerve problems
A very important note: LD has been successful
with even the most severe cases… Even when
NOTHING else has worked. Even after failed
surgery… Even after MULTIPLE failed surgeries.
Laser Decompression has provided what many
consider nothing short of miracles for back and
neck pain sufferers who had tried everything
else…
Special Offer
If you would like to see if LD will be the answer to
your back, neck or nerve pain, you can – at a
dramatically reduced cost – for a very limited
time. Just call 954-‐752-‐7373 before the expiration
MEDICAL
by Bill Johnson
What’s up with prescription drugs
besides the price?
A personal story
More likely than not, you have
been stunned by the price of
a prescription drug. You have
probably read about the young fellow who
bought a pharmaceutical company and
immediately raised the price of a drug from
$13.50 a pill to $750 per pill. And it wasn’t
because the drug had been unprofitable;
it had been on the market for years. The
new owner said the increased profits were
needed to pay to develop other life-saving
drugs. So we ask – what’s going on?
I asked that question recently when
my dermatologist recommended a
prescription drug but warned me that it’s
very expensive. It was. The Walgreens
pharmacist told me my out-of-pocket
cost would be more than $3,000. I called
my health insurer, Blue Cross, to double
check and was told that if I got it from
Walgreens, the cost would indeed be more
than $3,000. However, the Blue Cross
representative assured me that Blue Cross
could get it for me by mail order for $108.
This, I suspect you’ll agree, is a staggering
difference. Like me, you may wonder how
this is possible.
This recent experience caused me to
reflect on a time more than ten years ago
when I worked for a Maine congressman
88
who received many
letters from seniors
concerned about
paying for their prescription drugs. At the
time, weekly bus trips to Canada were
organized because Mainers could cross the
border and fill prescriptions for a third of
what they’d pay in the U.S.
Our congressional staff randomly checked
scores of drug stores across the nation to
compare the price of the most commonly
used drugs by seniors, and we found an
enormous difference from store to store.
We also compared prices with what the
drug companies charged the Veterans
Administration, which had buying power
because it bought drugs in bulk. You can
be sure the drug company was still making
a profit. We learned, for instance, that
someone like an 86-year-old widow living
on Social Security would pay multiple
times more for a drug at a neighborhood
pharmacy than what the V.A. paid for the
same drug.
My congressman then introduced the
simplest bill I’ve ever seen – short and to
the point. It simply said that a senior citizen
with a Medicare card would pay the same
price charged to a veteran through the V.A.
In effect, the V.A., which negotiated prices
JULY 2016
for veterans, would be the designated
negotiator for Medicare as well. The bill
was never even taken up for a hearing or
voted on by the House committee that had
jurisdiction over that subject. To me, this
was powerful evidence of the power of the
pharmaceutical lobby.
The industry floods Capitol Hill with
lobbyists, and there are periodic reports
that it spends more money lobbying than
anyone else. As you may know, the industry
often justifies high prices by saying they’re
necessary to finance research to develop
life-saving drugs. Whether that justifies the
cost is a far too complicated question to
fairly address here. But it’s true that we here
in the U.S. pay far more for prescription
drugs than do people in most other
countries. And when my pharmacist says
it’ll cost me more $3,000 for a prescription
EQUESTRIAN NEWS
Malachi Acres was proud to sponsor a fundraiser in support of our son, Steve
Muccio, who was nominated for The Leukemia and Lymphoma Society (LLS) Man
and Woman of the Year Campaign.
It was a lot of work, but a very rewarding and extremely successful occasion. The entire
barn family pulled together their gifts and talents, and created an atmosphere that was
loved by everyone in attendance. The event basically took on a life of its own and as
always, those who had never visited Parkland were elated to experience a piece of heaven
in our unique community. There was food, pony rides, face painting, and Marco’s Pizza’s
mascot hopped on a pony and had the crowd cheering with laughter. It was a beautiful,
fun day in every way.
Steve is also on Parkland’s Parks and Recreation Advisory Board. We knew we wanted
to be a part of this campaign when we attended the kick off. Those nominated are young
professionals who want to give back to their communities. We hear so much negative
in the world, it was an honor to partake with the organization in something so positive in
helping those affected by cancer.
We were thrilled to
help Steve with his
endeavors for this
important fundraiser
Three-year-old Landry was diagnosed
with Acute Lymphoblastic Leukemia
and is currently in the maintenance
phase of his treatment. Five-year-old
Ellie was diagnosed at 11 months of
age with Acute Myeloid Leukemia and
is in full remission. The strength and
commitment of all families touched by
cancer is beyond comprehension. LLS
cures for blood cancers and now other
cancers.
Our sincere thanks go out to the many sponsors in our
above expectations. P
y Glenn Kalick, DVM
Thinking ahead
PET TALK
approval for the surgery from the insurance company. I told her
she could call them, but typically you just send in the invoice. I told
her it was a great idea that she got the insurance on the poodle
considering she doesn’t have it for the Rottweilers. She said her
aunt has had insurance for Bubbles since she was a puppy. The
aunt also made a provision in her will for pre-paid insurance for the
life of the dog, money for the deductible, grooming, and pet food.
She put in her will money for day care and boarding, allocated
money for pee pee pads and for a trainer if the new owner wanted
to train Bubbles. The hope was that the new owner would not be
burdened with these expenses.
The surgery went well. Bubbles lived another five years, outliving
the Rottweilers, and was a fantastic addition to their home. She
never had another bladder stone after the surgery and was on
a specialized dog food for the remainder of her life. She had a
standing grooming appointment at her favorite groomer every
Tuesday and stayed in my largest boarding suite every holiday.
That is forward thinking. P
I
was given a questionnaire for an article to be published about the best case in
which pet insurance helped a pet. I asked my staff for some help and one of my long
time technicians remembered Bubbles. Bubbles was a geriatric poodle brought in by
a client with three young children and two Rottweilers. When they brought Bubbles in
the first time it looked so out of character for the family. Usually the examinations were
high energy. Three young kids, two parents and two of the most well behaved male
Rottweilers that I have ever met, but today Mom brought in Bubbles who was sitting on
her lap looking up at her enjoying the attention.
I asked the owner why she would adopt a geriatric poodle with the Rottweilers and she told
me that her aunt passed away and no one would take Bubbles. Because she spent
time with Bubbles at her aunt’s house prior to college, marriage, and children, and her
own parents could not take the dog, she volunteered. Bubbles was in today because
she wanted to discuss her urination issues. For the past month Bubbles had
been with her, she had been urinating on pee pee pads. That was the way
Bubbles was trained, but now her urine had blood in it and she seemed to
be urinating more often.
I asked the technicians to collect a urine sample from Bubbles and
when they returned I started a physical examination. On physical
exam, I immediately knew what the problem was. I took an x-ray
and found that Bubbles had 3 by 2 inch smooth bladder stone,
which filled the entire bladder. There was virtually no room for
urine to fill the bladder, so poor Bubbles always felt the need to
urinate. Even though the bladder stone appeared smooth it was
rubbing against the bladder wall and causing the blood in the
urine. The new owner thought the stone was her fault.
I explained to her that the stone has been probably growing for years
The owner said the aunt had a care giver who probably wouldn’t have
wanted to worry the aunt about the amount of urine or color of the urine on the pads.
I told the owner that Bubbles will need surgery. The owner wanted to know if she
needed to get pre-
LOCAL ENTREPRENEUR
by Ramishah Maruf
Lacrosse player takes her pitch to
-year-old Rachel Zietz’s school
day consists of three simple
things: homework, lacrosse,
and pitching her million-dollar company,
Gladiator Lacrosse, on the hit ABC show
Shark Tank.
Zietz started Gladiator Lacrosse when she
was 12 with one simple goal: to provide
lacrosse players with high quality equipment
that wouldn’t have to be replaced every few
months. As captain of Pine Crest School’s
varsity lacrosse and a starter on numerous
travel teams, Zietz was all too familiar with
faulty rebounders, a popular bounce back
practice tool among players. According
to Zietz, metal would rust, rubber would
tear, and bars would snap after just a few
sessions with it.
“The company formed out of my discontent
as a lacrosse player and being disappointed
with the equipment out there on the
market,” Zietz said. “I decided there had to
be a better way, and I can’t just keep on
buying these expensive rebounders that are
going to break after a couple of months. As
a teenager, I couldn’t afford to pay $250
every time it broke. So I decided to go out
and start my own business.”
Shark Tank
Last year, while out for a jog, Zietz received
an email from the executive producer of
Shark Tank. She was invited to apply to
appear on the show.
“I just remember sprinting back and
screaming my mom’s name. My parents are
both entrepreneurs, so we’ve watched Shark
Tank since I was little,” Zietz said.
Zietz spent the next few months training to
be on the show by watching old episodes,
and having her dad’s friends pose as sharks
while asking her hard-hitting questions in the
living room.
The training paid
off. A year later,
on May 13,
thousands of
households
across the
nation
watched
as Zietz
confidently
strode
on stage
donning a
lacrosse stick and
rebounder.
“Hi Sharks,” she said. “My
name is Rachel Zietz, and my
company is Gladiator Lacrosse.”
Zietz immediately struck the sharks
as she pitched her business to gain a
$100,000 investment with a 15 percent
stake. Although they ultimately didn’t give
her a deal, they were impressed with her
professionalism, with shark Daymond John
saying he would be doing Zietz a “disservice
by taking part ownership of the company she
built.”
“They basically told me I was going to be just
fine without their help. The sharks had faith in
me that I could do this on my own, and that
I was doing everything just fine. Hearing
those words come from people of that
caliber is just amazing. It was so satisfying to
be told all the work you’re doing is paying
off,” Zietz said.
Despite the rejection, Zietz says the exposure
her company has received from appearing
on the show has been worth it.
“If anything, the show taught me to never be
afraid of anything. [Going on the show was]
very scary but it was so satisfying with the
reward I’ve gotten from it,” Zietz said. “The
amount of exposure I got was crazy, whether
it was from Twitter, Facebook, or just the
amount of orders I’ve gotten. It was probably
one of the best things I’ve ever done.”
Zietz learned these savvy entrepreneurial
skills through the Young Entrepreneurs
Academy, and since then has won numerous
statewide awards for her work as a CEO,
including recognition from Governor Rick
Scott and the Boca Chamber. Her company
is projected to top $1 million in revenue this
year, and Casey Powell, a famous
American lacrosse player, has recently
become her brand ambassador.
“The hardest part [about running
Gladiator Lacrosse] is finding the
time to do it all. People ask me
what else do I do and I tell them
my company is it. It takes up
a lot of time in my day, and it
requires time management
skills that I’ve built up
over time,” Zietz said.
“Customers can’t wait,
teachers can’t wait, and
coaches can’t wait, so
it’s a lot to handle.”
With plans to pursue
both lacrosse and
business in
college, Zietz
leaves one piece
of advice for
students wanting to
start up a business
like hers.
“Be passionate about
what you’re doing.
If you love what you’re
doing it doesn’t become
work to you.” P
Joshua Feinzig wins
Junior Nobel Prize
Josh Feinzig, a Yale graduate and Parkland resident,
was named one of the 13 Most Impressive Students
at Yale Right Now and winner of the Junior Noble Prize
award. He majored in ethics, politics, and economics.
Feinzig received the Junior Nobel Prize Award from the
president of Ireland in November of last year.
Feinzig’s passion for criminal justice pushed him to help
cofound Project Youth Court, a program that takes
trained high-school volunteers in Connecticut into a
federal courtroom to serve as lawyers, clerks, and
jurors in misdemeanor-offense trials. Feinzig, who is
vice chair of the organization, has also worked with the
New Haven Mayor’s office and the New Haven Police
Department to improve the community’s justice system.
During the summer of 2015, he published a study that
highlights the discriminatory practices in St. Louis’
municipal court and jail system. The study gained
national coverage and was featured in an article in
Newsweek magazine.
One of his major accomplishments was winning the
Junior Nobel Prize for a term paper on social justice
and racial politics. Feinzig was selected as overall
winner in Anthropology.
Feinzig will be attending Cambridge next year as a
Gates-Cambridge Scholar. He is a Rhodes Scholarship
finalist, and the Gates Scholarship is an equivalent
award where 35 U.S. scholars will be attending
Cambridge as opposed to Oxford. P
LAST WORD
In an instant
The 3-year-old boy gets away from his parents, climbs into the
gorilla habitat. The gorilla pays the ultimate price for the child
being there. He is shot and killed. Granted, human life is more
important than an animal’s and only the experts can guess at what
Harambe’s actions meant. In choosing to kill Harambe, the public
felt great outrage toward the mother for not watching her child. The
public, and I mean social media users, felt the need to trash and
threaten the family. UMM, hello all you commentators... were you
there? Did you see the incident? Do you know what was going on
with the mom at the time of her young son getting out of her safe
range? I feel this incident is a dual blame. The zoo for not making
sure the gorilla enclosure was safe enough, and the parents for not
keeping a closer eye on their child.
I have three kids. The youngest got away from me in a WalMart.
My husband and I were shopping for a shirt, my little one, who was
about 3-years-old, was playing right next to us. I turned my head
for a mere three seconds to show my husband a shirt and she
disappeared. In a panic we alerted the nearest employee and the
store issued a Code Adam.
by Barbara Negron
She was found by the fish tanks, and when asked why did she leave
us, her simple reply was that she “wanted to see the fishies.”
My point? It only takes a second. If you are distracted even for the
slightest span of time, your child
can take off. If Facebook was
the big deal then that it is now.
I would have been hung by all
the naysayers and people who
don’t understand the difficult job
of child rearing. Or be judged by
self-righteous parents who sit and
say “I’d never let that happen.” In
cyber speak I say to them: LOL.
While I am very sad over the
gorilla being killed, I still feel the zoo should have taken better
precautions when building the habitat. Sure the parents could have
been more diligent, but again, I don’t really know what was going on
when her son slipped away. It only takes an instant to change life
forever. P
