DUTIES OF OUR<br />
BOARD OF DIRECTORS<br />
Our Board of Directors is charged with<br />
maintaining, preserving and enhancing the<br />
common assets of our association. In order<br />
to perform those duties our Board depends<br />
upon the advice and counsel of experts in<br />
various fields of community association management: our Management<br />
Company, attorneys, landscapers, insurance specialists, etc.<br />
When making decisions regarding our community, the Board is expected<br />
to consider all the facts and factors involved in the issue and<br />
make the best business decision possible.<br />
Sometimes those decisions may not appear to be in the best interests<br />
of all of the owners, however if each owner understood all of<br />
the underlying issues that go into making the decision; they would<br />
understand that the Board’s choice of action is usually the most<br />
practical and well thought out.<br />
In addition to dealing with insurance, maintenance, financial and<br />
contractual decisions, the Board must also balance their positions on<br />
the Board with their role as a homeowner. If assessments are increased<br />
that means they are increased for them also. If rules are enacted, that<br />
means they have to obey them, too. Being a Board member does not<br />
grant one community from the responsibilities of living in an association.<br />
In fact, serving on the Board reflects just how seriously they take<br />
that responsibility. So, please keep in mind that our Board members<br />
are actually doing “double-duty” for our community: they serve as<br />
Board member and neighbor...and they deserve a heartfelt “thank<br />
you” for all of their contributions to our community!<br />

Department is 713-221-6000 the number for the Clay Road station<br />
is 281-463-2648. But if you actually have an emergency and in need<br />
of assistance right away, please call 9-1-1.<br />
REGISTERING ONLINE WITH SPECTRUM<br />
Communication is essential in HOA management and our goal is to<br />
make access to information as easy and streamlined as possible.<br />
Through the use of our website, Owners may gain access to a great<br />
number of resources including; personal account information,<br />
community documents, HOA financials and general community<br />
information is posted.<br />
All residents are encouraged to register online so you can stay updated<br />
on all community information. To register simply follow the<br />
below directions:<br />
1. Visit us online at www.spectrumam.com<br />
2. Select the Login/Register link on the left hand side of the page<br />
3. Select the Register tab and enter in the information<br />
requested on the form<br />
4. Submit your information and within 24-hours, an auto<br />
system email will be sent you with a temporary password<br />
5. Use your temporary password to sign in online at<br />
www.spectrumam.com<br />
6. Select the “My Profile” tab on the left side of the page once logged<br />
in and you have the option of changing your password to one of<br />
your choice<br />
7. Enter your information and picture for your pool tags online.<br />
Avoid lines.<br />
If you have not yet completed this process, make sure you take<br />
5-minutes to do so today!!<br />
WCA GARBAGE COLLECTION HOLIDAYS AND GUIDELINES<br />
Collection Days: Monday and Thursday<br />
Holidays: New Years Day, Memorial Day, Independence Day,<br />
Labor Day, Thanksgiving and Christmas<br />
• Please have waste ready for collection no later than 7 AM.<br />
• Refuse must be in bags or cans, weighing no more than 40 pounds.<br />
• Tree branches, brush, shrubs and fencing must be tied in bundles, weighing<br />
no more than 40 pounds and being no longer than 4 feet in length.<br />
• Branches may be no wider than 3 inches in diameter to avoid<br />
damaging equipment.<br />
• Per Federal Law, refrigerators, freezers and air conditioning units<br />
must be drained of all Freon and have an accompanying bill verifying<br />
Freon has been drained.<br />
• ITEMS NOT ACCEPTED: dirt, rocks, bricks, concrete, tires, batteries,<br />
motor oil, cooking oil, waste generated by a private contractor, hazardous/toxic<br />
chemicals or material, construction material, no more<br />
than 1 room of carpeting, bundled and less than 40 pounds. Items<br />
not collected will be tagged explaining reason for non-collection.<br />
Recycle Collection Guidelines<br />
The following items are accepted in our curbside recycling program:<br />
• Paper: Newspaper, magazines, catalogs, junk mail, envelopes, office<br />
paper, construction paper, colored paper, folders, paper bags, phone<br />
books, holiday cards and greeting cards.<br />
• Cardboard: Corrugated cardboard boxes, paperboard boxes (cereal,<br />
soda/beer, egg, shoe boxes)<br />
• Containers: Aluminum cans, tin cans, steel cans, empty aerosol cans,<br />
aluminum foil, plastics #1-#5 & #7 (milk, soda, water, juice, shampoo,<br />
detergent, pool supplies, pet food), metal pots and pans, copper, scrap<br />
metal (nails, screws, gutters), milk and juice cartons, aseptic packages.<br />
• Commonly Mistaken Unacceptable Material: PLASTIC BAGS, STY-<br />
ROFOAM, GLASS, wrapping paper, used pizza boxes, coat hangers,<br />
paint and solvent containers, light bulbs, mirrors, windows, dishes<br />
and cups, Pyrex pans, wet or soiled paper, paper towels, facial and<br />
toilet tissue, disposable plates and cups.<br />

The internationally acclaimed United States Army Field Band & Soldiers’<br />

free public performances when it appears at Tompkins High School<br />

REGISTRATION NOW OPEN FOR<br />
13TH ANNUAL IMPACT A HERO 5K<br />
An event that brings the community and combat<br />
veterans and their families together. Registration is<br />
now open for the 13th Annual Impact a Hero 5K, one<br />
of Impact a Hero’s major fundraising events of the<br />
year. This year, the race will be held May 20, <strong>2017</strong> at<br />
the Constellation Field and will feature the traditional 5K Run/Walk/<br />
Wheel and Kids 1K beginning at 7 AM.<br />
The 5K registration is $25 for untimed and $35 for timed. The 5K<br />
wheel is $25. The Kids 1K is $15. Prices increase on May 13th and<br />
again on race day. Cash prizes will be awarded for the Men’s Open,<br />
Men’s Master, Women’s Open and Women’s Master categories. Top<br />
fundraisers will also be awarded prizes. Every registration will include<br />
an Impact a Hero 5K shirt, free fundraising page and entry to<br />

WHY IS APRIL 18TH THE TAX DEADLINE?<br />
Tax day falls on <strong>April</strong> 18, <strong>2017</strong>. That’s the deadline for filing taxes on<br />
income earned in 2016. Usually, <strong>April</strong> 15th is the day taxes are due. But<br />
in <strong>2017</strong>, that falls on a Saturday. On Monday, the District of Columbia<br />
celebrates Emancipation Day. That affects taxes the same way federal<br />
holidays do. Emancipation Day is normally <strong>April</strong> 16th, but that’s a Sunday.<br />
Therefore, the tax deadline is pushed out to the following Tuesday,<br />
<strong>April</strong> 18th. That gives taxpayers three extra days to file their returns.<br />

in recognition of the<br />

the Commemorative<br />
Air Force (CAF) Houston<br />
Wing presents its<br />
annual Open House at<br />
the West Houston Airport.<br />
This event provides a rare opportunity for the public of all ages<br />
to immerse themselves in the sights and sounds of WWII and other<br />
authentic vintage military aircraft, which played a huge role in our<br />
American history.<br />
In addition to aircraft, several historic military vehicles will be on display<br />
as well as a very unique anti-aircraft gun trailer exhibit from the Battleship<br />
Texas. Our hangar’s WWII museum will also be open and docents<br />
will be available to help all ages enjoy the museum’s displays.<br />
West Houston Airport is located at 18000 Groschke Rd., 2 miles north of<br />
I-10 and between Hwy. 6 and Barker Cypress, will be the place to visit<br />
on Saturday and Sunday, <strong>April</strong> 22nd and 23rd from 10 AM to 5 PM. The<br />
admission fee is $10 per car, which goes to supporting the organizations<br />
efforts to keep these aircraft flying. Food, drinks and souvenirs<br />

THE TITMOUSE CLUB<br />
The Titmouse Club is a nature program for children ages 2 ½ to 5 sponsored<br />
by the Houston Audubon Docent Guild. The program is offered every<br />
Tuesday and Wednesday morning, 10 to 11 AM, from mid-September<br />
until mid-May at the Edith L. Moore Nature Sanctuary, 440 Wilchester<br />
Boulevard. Each week features a different nature theme and may include<br />
nature talks, stories, hands-on activities and walks in the woods. For<br />

MENTORS AT TIES & TIARAS<br />
Katy ISD celebrated the time, effort and heart of KEYS mentors - while<br />
supporting KEYS Scholarships - at Ties & Tiaras on March 9 th from 5:30-<br />
7:30 PM at NOAH’S of Katy. This year’s festivities included honoring<br />
the <strong>2017</strong> Mentors of the Year and KEYS Scholarship Sponsors, along<br />
Every year Ties & Tiaras honors Katy ISD’s family of mentors, who<br />
spend up to one hour each week with their students. In particular,<br />
the event recognizes a few individuals who’ve sustained relationships<br />
and dedication to the KEYS program year after year. The Katy ISD<br />
<strong>2017</strong> Mentors of the Year and their respective KEYS campuses, were:<br />

Youth toward Success - is a relationship initiative that matches a<br />
caring adult with a student on the brink of success for up to one hour<br />
a week, during the school day, during the school year. Piloted during<br />
the 1995-1996 school year, this program now extends to every campus<br />
in Katy ISD. KEYS is not a tutoring program, but rather a relationship<br />
program, with many mentors and their students sustaining their<br />

AT HOUSTON AREA TEACHERS OF FOREIGN LANGUAGES’<br />
FARRINGTON CONTEST<br />
Katy ISD had 30 high school students win awards at the <strong>2017</strong> Farrington<br />
Contest and Awards, sponsored by the Houston Area Teachers of Foreign<br />
Language. This included six students who took home first place prizes<br />
in Spanish Advanced, Spanish Intermediate, German 2, German 3 and<br />
American Sign Language.<br />
More than 200 Houston-area students participated in the language<br />
competition and schools were allowed to send three students from<br />
each language level. Participants completed a language exam including<br />
reading, writing, listening and speaking.<br />

After winning the TAPPS Eastern Region Division II Swim Meet last year<br />
and moving up to Division I this year, the boys’ swim team repeated as<br />
Region Champions, beating last year’s champion St. Thomas 123-112.<br />
Tomball Concordia Lutheran was third with 108. The girls finished 6 th<br />
with excellent performances from the entire team. The girls had 68%<br />
lifetime best swims and the boys had 76%, for a combined team improvement<br />
of 72%.<br />

seven Region times from across the state will be added to fill the 16<br />
remaining TAPPS State Meet slots.<br />
there are common characteristics found in those with this complex<br />
disability. Briefly, these characteristics include:<br />
Social Skills. People with autism have problems interacting with others;<br />
autistic children do not have adequate playing and talking skills.<br />
Mild symptoms on one end of the spectrum may be displayed through<br />
clumsy behavior, being out of sync with those around them and<br />
inappropriate or offensive comments being made. At the other end<br />
of the spectrum an autistic person may not be interested in others.<br />
Empathy. Empathy is the ability to recognize and understand the<br />
feelings of another person. People with autism find it harder to show<br />
empathy to others although they can be taught to acknowledge the<br />
others feelings.<br />
Physical Contact. In some cases, autistic people do not like physical<br />
contact such as hugs, tickling or physical play with others.<br />
Sudden Changes To Their Environment. A sudden change in the surrounding<br />
environment may affect a person with autism. The could be<br />
a loud noise, a change in intensity of lighting or even a change in smell.<br />
The first National Autism Awareness Month was declared by the<br />
Autism Society in <strong>April</strong> 1970. The aim of this month is educate the<br />
public about autism. Autism is a complex mental condition and<br />
developmental disability, characterized by difficulties in the way a<br />
person communicates and interacts with other people. Autism can<br />
be be present from birth or form during early childhood (typically<br />
within the first three years). Autism is a lifelong developmental disability<br />
with no single known cause. People with autism are classed<br />
as having Autism Spectrum Disorder (ASD) and the terms autism<br />
and ASD are often used interchangeably. A wide spectrum disorder,<br />
people will autism have set of symptoms unique to themselves, no<br />
two people are the same.<br />
Speech. Speech can be affected in people with autism. ‘Echolalia’<br />
is a typical speech symptom in which the person repeats words and<br />
phrases that they hear. The speech tone of an autistic person may<br />
be monotonous. Where symptoms are more extreme, the person<br />
may not speak.<br />
Changes To Behavior and Routine. People with autism often display<br />
repetitive behavior in which they repeat the same action many<br />
times over. For example, a person with autism may repeatedly pace<br />
around a room in a certain direction. Any change to their behavior<br />
or routine can be unsettling for them. This could be a reordering of<br />
daily activities such as when a person brushes their teeth, takes a<br />
shower and has breakfast when they get up in the morning. Other<br />
characteristics of autism include an unpredictable learning rate,<br />
obsessions and physical tics.<br />

Autism Is Widespread, Awareness About This Condition Is Not<br />
In the United States, autism affects 1 in every 110 children. National<br />
Autism Awareness Month aims to make the public more aware about<br />
this widespread disability and the issues which arise in the autism community.<br />
As about 1 in 150 people in America have autism, the chances<br />
are that you know someone with this disability. A better informed public<br />
will be more empathetic and supportive towards people with autism.<br />
This month is backed by the Autism Society of America ,which undertake<br />
a number of activities to raise awareness about autism. The Autism<br />
Society has local chapters throughout the United States, which hold<br />
special events throughout <strong>April</strong>. The ‘Puzzle Ribbon’ is the symbol for<br />
Autism Awareness and is promoted by the Autism Society as means<br />
of supporting awareness for autism. The Puzzle Ribbon may take the<br />
form of a pin attached to clothing, a fridge magnet or a sticker and are<br />
available to purchase from the Autism Society website.<br />
The Autism Society of America also run a year long campaign through<br />
their 1 Power 4 Autism initiative, in which people are encouraged to hold<br />
events to raise awareness and support for those affected by autism.<br />

STS Foundation was founded on the belief that international student<br />
exchange promotes understanding, respect and goodwill among people<br />
of all nations. Opportunities to increase intercultural awareness are<br />
offered to students, parents, host families and communities who are all<br />
involved in the exchange experience. STS Foundation foreign exchange<br />

On February 8, <strong>2017</strong>, the Katy Area Retired Educators(KARE) hosted their<br />
annual Scholarship Chocolate Auction with guest speaker Helen Blocker<br />
Payne, “The Butterfly Lady.”<br />
Following an informative presentation about Butterflies, from Helen<br />
Blocker Payne, “The Butterfly Lady,” The Katy Area Retired Educators<br />
(KARE) members closed out their February meeting with a Chocolate<br />
Auction to support their Scholarship Program, raising $673. Before the<br />
meeting begins, individuals bring chocolate desserts and gift baskets,<br />
then fill out a silent auction sheet naming the item with a suggested<br />
price. As members arrive, they shop the tables of goodies and bid on<br />
items they want. All proceeds benefit the Scholarship Fund, which subsists<br />
on monthly drawings for gift baskets, a collection of loose change<br />
and cash donations. If sufficient funds are collected, we hope to provide<br />
three $1,000 scholarships to students graduating this Spring who intend<br />
to pursue a career in education. Scholarship Applications are currently<br />

THE WILD WORLD OF WORMS<br />
It’s probably safe to say<br />
that most young boys<br />
love worms. It’s equally<br />
safe to say that homeowners<br />
who have had<br />
to deal with tropical sod<br />
webworms are probably<br />
not as enthusiastic<br />
about the creatures.<br />
St. Augustine laws in the<br />
Houston area can be particularly susceptible to infestations.<br />
“With the temperature and the moisture, it was like a perfect storm<br />
and we really got nailed,” said Paul Winski, a county extension agent<br />
who is part of the Texas A&M Agrilife Extension. “In prior years, the<br />
population wasn’t that bad and we didn’t have to treat for them.”<br />
Let’s take a look at a few basic facts first and then we can talk about<br />
treatment options.<br />
• The sod webworm (1 inch long) is the larval stage of a small<br />
white-brown moth (1/2” to ¾” long).<br />
• The worms spend the winter in silk-lined tunnels near the soil<br />
surface and resume feeding in the <strong>April</strong>/May* timeframe.<br />
• In June*, adult moths emerge and begin mating (note: the moths<br />
do not feed on our lawns).<br />
• Shortly thereafter, females lay several hundred new eggs that<br />
may hatch into larvae within a week.<br />
• There are two to three generations per year in most areas.<br />
*Please note that, with our wacky Texas weather, these time<br />
frames can vary slightly.<br />

Sod webworm larvae prefer areas of your lawn that are hot and dry<br />
during daylight hours, so they are most prevalent in areas that receive<br />
lots of sunlight and/or south-facing slopes. It follows, then, that July and<br />
August are when lawns are most susceptible to the webworms. If the<br />
issue is not addressed, damage can spread quickly.<br />
If your yard has a lot of shade, consider yourself lucky - heavily shaded<br />
areas are seldom attacked.<br />
Since we have a pretty decent size bird population, you may be wondering<br />
why the birds aren’t eating the larvae. Winski says it’s because<br />
pest populations can get way ahead of what predators are able to consume.<br />
How do you know if you have a problem? “If you walk through your<br />
lawn and you see moths flying up in front of you, then you know you<br />
should treat,” Winski says. “You won’t be able to see the eggs or larvae,<br />
as they’re difficult to see. They are pretty far down there.”<br />
For the same reason, Winski said you don’t have to worry about<br />
spreading the eggs as you’re walking in your lawn. That is not a common<br />
occurrence.<br />
Unfortunately, Winski said it’s too hard to predict whether the worms<br />
will be a problem again this year. Your best bet is to check your yard<br />
frequently in June.<br />

If you decide to treat, the best time to do so is also in June. You can<br />
either use chemical-based products with Pyrethroids or natural products<br />
with Spinosad. Either are available at your local garden store or<br />
home improvement center. Several sources suggested that a simple<br />
liquid soap wash is an effective method of dislodging the larvae and<br />
eggs and then you just rake the remains off your lawn. Other good<br />
natural solutions can be found on the Planet Natural website (www.<br />
planetnatural.com).<br />
Please keep in mind that preventative measures are much less expensive<br />
than replacing all of your grass. Our deed restrictions do require<br />
nice-looking lawns.<br />

HEALTH NUMBERS TO KNOW NOW<br />
Take control of your health by learning these six numbers; they’ll help<br />
with everything from losing weight to protecting your heart:<br />
1) Daily calorie needs: Most women need 2,000 calories a day for good<br />
health and men generally need about 2,550. One way to work out your<br />
daily calorie needs is to multiply your weight in pounds by 13 to 15,<br />
depending on your activity level. But roughly, that’s 300 to 400 calories<br />
for breakfast, 500 to 600 for lunch, 600 to 700 for dinner and two or three<br />
snacks of roughly 100 to 200 calories each. Trying to lose weight? Eat<br />
roughly 500 calories less.<br />
2) Waist size: For women, health risk begins to rise when your waist is<br />
more than 35 inches. For men, risk increases with a measurement when<br />
your waist is over 40 inches.<br />
3) LDLs & HDLs: Aim for total cholesterol below 5.2 mmol/l (below 5<br />
mmol/l if you have heart disease or diabetes) and LDL cholesterol levels<br />
below 3.5 mmol/l or below 2 mmol/l if you have a history of heart<br />
disease. A healthy HDL level is 1.3 mmol/l or above.<br />
4) Blood pressure: A reading of 140/90 mm Hg or more is considered<br />
high and if it’s between 120/80 and 139/89, you may still be at risk and<br />
should be taking steps to prevent the development of hypertension.<br />
5) Triglyceride levels: A normal triglyceride reading is less than 1.7<br />
mmol/l. Your doctor will advise you how often you should have your<br />
triglycerides checked.<br />
6) Morning pulse rate: a normal resting pulse rate is 60 to 90 beats per<br />
minute. People who are fit tend to have lower resting pulse rates because<br />
their heart muscles are in good shape. But if you don’t exercise<br />
regularly and your heart rate is lower than the normal range, tell your<br />
doctor-it could be a sign of heart disease.<br />

area are on our agenda. We will also be stopping at Blue Bell Creamery<br />
for ice cream. This program is for senior adults only- no exceptions.<br />
Seating is extremely limited. Although the tour is free, participants are<br />
responsible for their own lunch and ice cream. The bus will arrive back<br />
at the library at approximately 5 PM.<br />
• BOOK DISCUSSION CLUBS - The Library hosts book clubs that meet<br />
monthly. The Evening Book Club normally meets on the second Monday<br />

•WEDNESDAY WONDERS - Let imaginations soar as you explore the<br />

necessary materials are provided. This is a ticketed program. Tickets<br />
are available 15 minutes before the program begins.<br />
• INFANT STORYTIME - This program will meet each Tuesday morning<br />
at 10:15 AM and 11:15 AM. This is an interactive program for children,<br />
ages 0 to 12 months and their caregivers. Each session will last about<br />
20 minutes, featuring nursery rhymes, songs and finger plays.<br />
• STORYTIME - Storytime for preschool-aged children is held each<br />
Wednesday at 10:15 AM. Stories, fingerplays and songs are featured.<br />
This is ideal for children ages 3 to 5, but all children and their caregivers<br />
are welcome.<br />
• PRESCHOOL EXPLORERS - Is your preschooler ready to explore the<br />

HARRIS COUNTY LEASH LAW<br />
Animals that are not properly restrained pose a threat to all our residents.<br />
While you may know your pet is friendly, an animal running<br />
at someone who is walking by is very scary for that person. Many<br />
children are afraid of animals and become frightened, which could<br />
result in the child getting hurt trying to avoid the animal.<br />
Harris County Animal Control advises, “All dogs and cats must be kept<br />
under restraint while in the unincorporated areas of Harris County,<br />
Texas. The custodian of a dog or cat is not authorized to have, harbor<br />
or keep any unlicensed dog or cat, nor to allow any dog or cat<br />
to become a stray.”<br />
Restraint is defined as “the control of a dog or cat under the following<br />
circumstances:<br />
1. When it is controlled by a line or leash not more than six (6) feet in<br />
length, if the line or leash is held by a human being, who is capable<br />
of controlling or governing the dog or cat in question<br />
2. When it is within a fully enclosed vehicle<br />
3. When it is on the premise of the custodian and the animal does<br />
not have access to sidewalk or street.”<br />
While it may be nice to have your animal out in the yard while you<br />
work or play, it is against the law, unless the animal is properly<br />
restrained.<br />
Let’s all help keep our community a safe and comfortable place for<br />
all our residents by being responsible pet owners. This will not only<br />
protect anyone who may be walking or bicycling in the area, but also<br />
the pet owner who could be held legally responsible or possibly sued<br />

Without the benefit of Google maps or Waze, they travel thousands<br />
of miles every year and know exactly where they’re going. Who are<br />
we talking about? Migratory birds, of course. About 40% of the total<br />
number of birds in the world migrate. Bar-headed geese are the highest<br />
flying and can reach heights of 5.5 miles above sea level, the altitude<br />
needed to clear the Himalayas in India. The Arctic tern travels the farthest-around<br />
50,000 miles/year.<br />
Why do millions of birds risk their lives to fly to different locations each<br />
spring and fall? Simply stated, it’s for survival. Food availability is the<br />
number one reason but migration is a risky business. Billions of birds are<br />
killed along their journey. Harsh weather conditions is one reason but<br />
urban sprawl tops the list. Up to one billion die every year due to window<br />
collisions and about 7 million die from strikes with radio and TV towers.<br />

But how do they know where they’re going? Researchers believe that<br />
birds have a mineral substance above their beaks called magnetite. It<br />
helps them determine the earth’s magnetic field so they can find true<br />
north. They also use sunrise and sunset to distinguish between east<br />
and west. Night flyers will use the moon and constellations to help<br />
guide them. Birds also learn to recognize landmarks like mountains<br />
and rivers. And how do they know when to go? Birds can “feel” when it’s<br />
time to go. Outside temperatures and shorter daylight hours trigger a<br />
hormone in birds. For a couple of weeks prior to leaving, they eat more<br />
than usual and often times will double in weight. The extra weight will<br />
help them survive their long journey.<br />
Spring is in the air and many species of migratory birds are headed our<br />
way to spend the summer. They’ll be busy building nests and raising<br />
their young before heading out in the fall. TWRC Wildlife Center has a<br />

This month’s selection is Crawfish Fettuccine.<br />
I had this delicious dish when I attended my brother’s wedding in Canton,<br />
Mississippi. The event took place in September of 2004 with hurricane<br />
Francis coming ashore. I almost didn’t get out of Houston because<br />
of the major rain that hit here as well as Canton.<br />
We attended a wedding luncheon in a truly old southern home where<br />
the meal was prepared by some sweet southern women. There was so<br />
much southern charm and the food was outstanding. After asking for<br />
the recipe I received it in the mail by one of those sweet ladies.<br />
With crawfish season here I thought I would share. Enjoy!<br />

CRAWFISH FETTUCCINE<br />
2 sticks butter<br />
3 onions chopped<br />
2 bell peppers chopped<br />
3 stalks celery, chopped<br />
3# peeled crawfish tails or Shrinp<br />
3 cloves garlic, minced<br />
1 TBS. chopped parsley<br />
1/2 cup flour<br />
1 pint Half & Half<br />
1# Velveeta, cubed<br />
24 oz. Fettucine<br />
Chicken broth<br />
1/4 cup chopped jalapenos (optional)<br />
Melt butter and saute onions, peppers & celery until tender. Add crawfish,<br />
simmer 10 min. stirring occasionally. Add garlic, parsley, flour and<br />
cream - mix well. Simmer on low heat 30 min. stirring occasionally. Add<br />
cheese & stir until melted.<br />
Meanwhile cook noodles in chicken broth and creole seasoning, drain<br />
and combine with sauce. Pour into 2 - 3 quart greased casseroles.<br />
Bake uncovered @ 300 degrees 20 minutes or until heated.<br />
Freezes well - 18-20 servings.<br />
If you like a little extra kick add jalapenos to sauce. Also if you freeze it<br />
and it seems stiff or dry when you reheat it, add about 1/4 cup Brandy<br />
or any liquid will return texture.<br />
TIP: If using frozen crawfish be sure to thaw and rinse before adding to<br />
mixture.<br />

<strong>April</strong> Gardening Tips<br />
Mulch - If possible, buy Bagged Mulch. Bagging helps eliminate a great many<br />
pests that die from various causes while in the bag. When you buy ‘loose’ mulch<br />
that is trucked to your home, you are also buying ants, roaches, termites, etc…<br />
Spend a little more on bagged material and save lots of future pest problems.<br />
Keep your mulch at least 4” - 6” below the top of your homes exposed foundation<br />
edge/side. This will aid in minimizing pests in your home and allow for quick<br />
and accurate termite inspections.<br />
Shrubs, Flowers and groundcovers - Trim all shrubs/plants at least 12” - 18”<br />
back from your home. Do your best to create a plant free zone that is 18” - 24”<br />
wide around your home. The exception is your lawn - it can grow up next to the<br />
slab as long as you keep it 4” - 6” below the top of the slab. The most conducive<br />
to termite infestation are groundcover plantings, growing high against your<br />
homes exterior or (especially) ivy that grows on your walls.<br />
Trees - Spray your trees at least twice annually. The spring spray eliminates<br />
overwintering pests and fungi while preparing trees to resist the pest onslaught<br />
of summer with residual pesticides. The fall spray also kills pests from the<br />
summer, prevents most fungi from occurring over the winter and puts your<br />
valuable asset off to a healthy winter’s dormancy.<br />
Lawn - Spring is the perfect time to do a fungicide treatment to stop brown<br />
patch in its tracks along with other fungi. If your lawn is thin and weak in some<br />
areas, here are some important fundamentals: a) lawn aeration b) fertilization<br />
c) weed control.<br />
Most important is proper watering:<br />
• Water once per week (unless you get a 1/2” rain or more - then do not water.)<br />
• Water heavily (1” - 2”) for total lawn coverage.<br />
• In severe drought, water every 5 th day.<br />
• Water from 5 AM to 7 AM in the morning - NOT AT NIGHT.<br />
• A heavy deep weekly watering makes the turf grow deeper, stronger<br />
and more drought resistant roots.<br />
• Less watering also saves you money!!
