The <strong>Creative</strong> <strong>Kitchen</strong><br />

Flavour is what gives food and drinks their magic<br />

and makes our sense of taste so precious. It’s also<br />

the most important driver of food purchases, product<br />

loyalty, and demand from consumers.<br />

We deliver first-to-market, groundbreaking flavours and ingredients<br />

that push the boundaries of convention and help our<br />

customers delight consumers all over the world. Our parent<br />

company, de Kuyper Royal Distillers, has assured our quality<br />

and originality for centuries. We deliver distillates, concentrates<br />

and cream bases to more than 100 countries.<br />

The segments we distribute to are the beverage industry, flavour<br />

industry, confectionery, cooking industry and bakery. We<br />

use age-old methods and the newest technology to achieve<br />

our trendsetting flavours, cream bases and distillates.<br />

The finest botanicles, such as herbs, spices, peels and fruits<br />

are brought to the Netherlands from all over the world via<br />

the ports of Rotterdam and Schiedam. We only use natural<br />

products!<br />

Creating flavours<br />

There are many things to take into account when developing a flavour. We<br />

do not only taste with our mouths but also with our noses and eyes. The<br />

mouth is only able to distinguish four basic taste sensations: sweet, sour,<br />

salty and bitter. We call these the non-volatile aromatic compounds. The<br />

mouth does not actually distinguish the difference between a strawberry<br />

and a cherry. It’s the nose that is able to sense the aromas of the fruit.<br />

We call the fragrant aromas the volatile aromatic compounds. Our Master<br />

Distiller has developed various techniques for drawing the flavours and colours<br />

out of the ingredients.<br />

The ingredients used by the distiller can be divided into a number of categories:<br />

Berries and fruits, such as juniper berries, black current and star anise.<br />

Rinds, such as lemon peels, sweet or bitter orange peels and Curaçao<br />

orange peels. Leaves, such as lemon balm, spearmint, peppermint, bay<br />

and absinth. Seeds, such as coriander, cardamom, aniseed, cocoa beans<br />

and coffee beans. Roots, such as angelica, ginger, gentian, orris, and liquorice.<br />

Bark, such as cinnamon, cinchona and angostura. Flowers or parts of<br />

flowers, such as vanilla, clove, hops and saffron.<br />

Our foundation, our passion,<br />

is the art of distilling.<br />

The essence: a beautiful distillate born of an ancient craft<br />

that is used to formulate quality liqueurs. With a new,<br />

large-capacity distillery, so that all distillates come from<br />

our ‘own kitchen’. Composed in the traditional way, with<br />

only natural ingredients. This new distillery requires fresh<br />

ideas to mix with the old.<br />

Ideas in the form of unique flavours that will inspire new<br />

products or find their place in the culinary world. The perfect<br />

distillate is the result of skill, carefully selected ingredients<br />

and a controlled process.<br />

The <strong>Creative</strong> <strong>Kitchen</strong> Master Distiller, with the aid of a committee,<br />

is responsible for coming up with new flavours and<br />

products. To give a distillate the right flavour, the Master<br />

Distiller must achieve the correct balance between the<br />

non-volatile and the volatile aromatic compounds.<br />

Distillation<br />

is the process used to produce a flavoured alcoholic liquid by<br />

heating a mixture of alcohol and botanicals. The distillation<br />

process is based on the principle of the separation of liquids<br />

with a different boiling point. We use distillation to produce<br />

the main botanicals for clear liqueurs and colourless spirits<br />

such as lemon-flavoured gin.<br />

Extraction<br />

is the process used to produce a flavoured alcoholic liquid by<br />

allowing botanicals to seep in a mixture of alcohol and water.<br />

The process is similar to brewing tea. Extraction makes<br />

it possible to draw both volatile and non-volatile aromatic<br />

compounds, bitter notes and natural pigments from the botanicals.<br />

We use two extraction processes: maceration and<br />

percolation. The first process is similar to making tea, and the<br />

second to brewing coffee.<br />

Creams<br />

Cream drinks are a worldwide success,<br />

but the production of a really good cream<br />

is a trade that not many have mastered.<br />

We have an innovative strength and in-depth knowledge<br />

of the R&D division for both technique and flavouring.<br />

The <strong>Creative</strong> <strong>Kitchen</strong> is one of the few laboratories in the<br />

world that have the technique and the know-how to mix<br />

alcohol with cream into a silky tasting blend. There are<br />

several existing recipes to choose from, but we have also<br />

developed a distinctive nose for new and original recipes.<br />

That is the result of many years of experience.<br />

We have a state-of-the-art production facility. We deliver<br />

cream bases to distillers all over the world, and the<br />

team is also willing to travel and advise manufacturers<br />

at these production sites. It’s also possible for us to fill<br />

your bottles and deliver a complete product ready for<br />

distribution.<br />

Our knowledge in the field of legislation is available to all<br />

of our customers. We have the highest quality and certification<br />

standards for the production of creams. We only<br />

use fresh, local dairy. We have extensive knowledge of<br />

the current market and can always translate the latest<br />

trends into new products.<br />

Over many years, we’ve developed a wide range of successful<br />

recipes and are therefore already a lifelong partner<br />

for a lot of existing brands.<br />
