Once characteristic of the Val Sarentino/Sarntal Valley is the care spent on the villages and 

the landscape: it can be seen everywhere, from the well-tended farmsteads and paths to the 

flowers in the gardens and at the windows. Yet traditional and modern exist quite naturally 

alongside each other. Many of us, such as the folklorist Maria Kröss, make it their task 

to keep these customs alive, making each visit to the Val Sarentino/Sarntal Valley an event 

and an experience.

one of only five South Tyrolean chefs 

to be awarded two stars. 

Six questions posed to Heinrich Schneider 

– Head Chef of the Restaurant TERRA 

at the Auener Hof Dining Home 

Heinrich, you and your sister Gisela took over 

the Hotel-Restaurant Auener Hof from your 

parents. What were the most-important stations 

in your development from kitchen apprentice 

to master chef with two stars? 

I spent three weeks in France and an entire 

winter season in South Tyrol. But I acquired 

most of my experience at home. So I guess that 

you could say that I learned most of what I 

know on my own. The studies I completed at 

the Research Center for Agriculture and Forestry 

in Laimburg / Castel Varco on the topic of 

„Cultivation of Herbs,“ specializing in „Wild 

Herbs“ certainly played a big role, as did the 

extra courses I took in mycology (the study of 

fungi) in Bozen / Bolzano. 

You have received numerous culinary awards, 

and could thus work in all of the gourmet 

temples of the world. What motivated you to 

open up your own premium restaurant in the 

Val Sarentino/Sarntal Valley of all places, at 

an elevation of more than 1,600 meters above 

sea-level? 

Our greatest wish was for us to establish our 

own business. Our parents gave us almost 

complete freedom in managing the business 

and especially in developing it. Because we 

grew up and spent most of our childhoods 

here, we have a very close connection with the 

Auener Hof, its history, and its immediate natural 

surroundings. 

What is your closest connection with the Val 

Sarentino/Sarntal Valley as a chef and as a 

private person? 

The Val Sarentino/Sarntal Valley has had 

a pronounced influence upon my culinary 

identity. By that I mean that a chef must have 

roots. We rely heavily upon local products, 

e.g., cheese and other items that are essential 

for my cooking. 

As a private person, I especially love our 

wonderful, pristine nature with the stunning 

mountain summits. In the summer, I love 

undertaking long tours in the mountains here 

and enjoy the serenity I find in the undisturbed 

nature. 

On Nov. 15, 2016 in Parma, you were awarded 

two Michelin stars for the first time. Are 

you happy? 

Yes, of course. The entire family – we are, after 

all, a family business – is overjoyed. We worked 

hard for it. 

This kind of recognition is, of course, a great 

honor. But it must also put you under tremendous 

pressure to maintain that level of excellence, 

right? 

Right now, we aren‘t concerned with that. 

Instead, we‘re just enjoying the second star. 

The important thing is to constantly strive for 

improvement and to be open to innovation. 

That‘s what has gotten us to where we are 

now. Further, the second star motivates us to 

continue our course. 

What does your style of cooking stand for? 

I stand for a very special culinary direction. The 

biggest difference between me and others can 

be seen in the ingredients I use. For example, 

I use a lot of wild herbs and mushrooms, and 

exclusively regional products. That means that 

I avoid everything Mediterranean. I prefer working 

with less well-known products – e.g., the 

Shingled Hedgehog (a species of mushroom). It‘s 

important to me that our guests enjoy a unique 

dining experience with based on the products 

and the way I prepare them.parte.

for hikers. It offers a variety of hiking 

paths for all demands. Easy-going walkers 

will be satisfied, as well as demanding 

mountaineers. The valley offers leisurely 

and easy excursions whilst well marked 

hiking paths lead to higher locations with 

real alpine huts, traditional alpine pastures 

or to one of the more than 140 mountain 

peaks.

Sarentino Valley. 

The Val Sarentino/Sarntal Valley “Hufeisentour” 

is a real adventure for sure-footed 

hikers, but also immensely popular with 

families with children. This high-altitude 

hike in the heart of South Tyrol is available 

in both the „extreme“ class and the „familyfriendly“ 

variety. The six or seven stages go 

from hut to hut though the most beautiful 

spots of the Alpi Val Sarentino/Sarntal 

Valley Alps and offer stunning views of the 

ice-covered, 3.000 meter high peaks an jagged 

summits of the Dolomites. Further information

The sports-loving biker will be amazed at 

the unexpected possibilities. But before you 

get ready you should remember that steep 

ascents are normal in a mountainous region 

like the Sarentino Valley. You should get 

ready for 600 to 700 meters difference in 

altitude. The less experienced cyclists may 

obtain detailed information at the tourist 

information office.

Mike Felderer (Italian MTB-Pro up until 

2013) and Walter Perkmann (Manager 

of the Sarentino Valley Tourist Office) are 

good friends and both enthusiastic mountain 

bikers. The two conduct the weekly guided 

mountain bike tours. Mike operates Mike’s 

Bike Garage (Sarentino village), where you 

can get a lot of technical service and plenty of 

personal advice. Since the summer of 2013, 

Mike has been host to kids and technical 

freaks at the new Mike’s Bike Park.

On holidays and often also weekdays the people 

of the Sarentino Valley wear their especially 

beautiful costumes. Especially those of the men 

are very different from the other South Tyrol costumes. 

Over the tight loden trousers with wide 

leather belts (“Fatsch”) and braces (“Krax”) they 

also wear the hand-knitted “Jangger”, a piece of 

clothing which nowadays is also a very popular 

leisure jacket.

The Sarentino farmers follow the rules of 

nature. And they already knew in bygone 

days that the oil from the Sarentino dwarf 

pines gives energy and cures quite a few 

ailments. Today the „pinus sarentensis - the 

energy of the Alps“, is not only a cure-all 

for the mountain farmers, but also an ingredient

plants and animals. The quiz hike on the Legend

By car 

From Munich in approximately 3.5 hours via the motorway (Innsbruck– 

Brennero) until you come to the motorway exit ‘Bolzano Nord’. Take this 

exit, drive in the direction of Bolzano and towards the Renon mountain. 

From the motorway exit ‘Bolzano Sud’, you must follow the signs in the 

direction of Val Sarentino or in the direction of Trento/Trient in order to 

reach Laives, Bronzolo and Vadena. If you want to go to Appiano and 

Caldaro, you take the dual carriage way Merano-Bolzano for some kilometres 

in the direction of Merano and then take the first exit. To reach 

the villages Terlano, Meltina and Andriano, take the second exit, and for 

Vilpiano the third exit. From the motorway exit ‘Egna-Ora-Termeno‘, turn 

in a westerly direction (turn right) and you will come to Caldaro, Termeno, 

Cortaccia, Magrè and Cortina. In an easterly direction (turn left), you 

will come to Egna, Ora, Salorno, Montagna, Aldino, Trodena-San Lugano 

and Anterivo. 

Important notice for drivers: In Italy, you must have your headlights 

switched on at all times. In addition, you always need safety vests.

The bus station is very close to the train station. From here, buses go to 

all villages in the surrounding area of Bolzano.

• The Bolzano Bozen Card Plus is valid for seven days after you have used 

it for the first time. The card must be validated every time you use public 

transportation. 

• In museums, you can validate the card using the scanner at the entrance. 

• For participating in city tours, hikes, cultural trips in Bolzano/Bozen, you can 

validate the card at the Information Office in Bolzano, Via Alto Adige 60.

splendid white covering with its abundance, its softness, 

its unrestrained nature. Reinswald is an idyllic family skiing 

area, with 22 km of ski runs on the sunny southern slopes 

of the mountain. It is an easy yet exhilarating drive from 

Bolzano, just 30 minutes’ drive by car, now even safer
