Fun for Kids<br />

Children love any excuse to celebrate,<br />

so why not have an Earth Day dinner party<br />

or prepare a special after-school snack<br />

together? Set up a do-it-yourself salad bar<br />

with mixed greens and let children top<br />

off their creations with cubes of cheese,<br />

sliced meat, sugar snap peas, baby carrots<br />

and corn, dried cranberries and nuts,<br />

sprouts, mandarin oranges and crunchy<br />

roasted edamame or granola. Assemble<br />

some “trees” using broccoli florets and<br />

pretzel tree trunks, or create veggie “flowers”<br />

with sliced cucumbers, carrots or radish<br />

“petals” and celery “stems.” Making<br />

ants on a log (celery sticks topped with<br />

peanut butter and raisins) or simple trail<br />

mix are easy ways to celebrate, too.<br />

Go Green!<br />

Filled with fiber, vitamins and other nutrients,<br />

adding greens like Swiss chard, collard<br />

and mustard greens, and other leafy<br />

greens to your diet is an easy way to celebrate<br />

the bounty of the season and add a<br />

boost to your health. “Green” can easily be<br />

added to pasta dishes and salads, quickly<br />

stir-fried with olive oil and garlic, or added<br />

to smoothies. Use Earth Day as an excuse<br />

to try a new vegetable. Who knows? You<br />

1/2 teaspoon vanilla extract<br />

Melt coconut oil in medium sauce pan<br />

over low heat. Remove from heat and<br />

whisk in cocoa powder, maple syrup and<br />

vanilla extract. Stir in coconut flakes and<br />

oats until well-combined. Place mixture in<br />

medium bowl and place in freezer for 10<br />

1 quarter-sized piece of ginger,<br />

peeled and finely<br />

chopped<br />

2 cups baby spinach leaves<br />

1 ripe banana<br />

1/2 cup orange juice<br />

1/4 cup frozen blueberries<br />

2-4 ice cubes<br />

Directions:<br />

Blend all ingredients in blender until<br />

smooth. Add water if mixture is<br />

too thick. Add 2-4 ice cubes, and<br />

blend again if desired. ª

also reflected on the many changes<br />

and events that occurred during Molly’s<br />

Christina Burns as a special<br />

guest at a recent meeting. Christina<br />

is an advocate and keynote speaker<br />

who promotes the full inclusion of<br />

her, are born with developmental disabilities,<br />

exemplifying the true meaning<br />

of not being disabled but being<br />

“differently-able” instead. During her<br />

presentation, she shared her academic<br />

journey to gaining her dream job at<br />

SeaWorld Orlando. Christina is now<br />

a full-time employee at the Voyager<br />

Smokehouse Restaurant. She loves<br />

and values her position and has become<br />

an invaluable employee. She<br />

also was a keynote speaker at the<br />

National Down Syndrome Congress<br />

convention in Orlando, where she<br />

Planning For The Unexpected<br />

Do Your Estate Planning Now<br />

On June 12, 2016 when the Orlando nightclub,<br />

Pulse, was assaulted and 49 people were killed, we were all<br />

once again forced to face our own mortality as loved ones<br />

and friend’s lives were lost due to this unexpected terrorist<br />

attack. We are reminded of another catastrophic day on<br />

September 11, 2001 when terrorists attacked the World<br />

Trade Center and the Pentagon. The aftermath left 2,996<br />

people dead and more than 6,000 others injured. The death<br />

toll was 2,606 in the World Trade Center and surrounding<br />

areas, 125 at the Pentagon, and 265 on the four planes<br />

involved in the attack of which there were no survivors.<br />

Whether you are watching the television news,<br />

listening to radio, chatting on Facebook with friends, or<br />

performing a Google search, it seems that Americans<br />

are inundated with what seems like alerts about one<br />

catastrophic disaster or tragedy after another. No doubt<br />

that we live in a time of constant worry and threat to our<br />

families. And if it isn’t terrorism we are concerned about, it’s the loss of life caused by disease and<br />

other medical complications, or by frequent airline, railroad and traffic accidents, or by natural<br />

disasters such as hurricanes, tornados and floods.<br />

Following the tragedy at the Pulse nightclub, many family members of the victims were<br />

forced to hire estate lawyers to assist them in acquiring the possessions and assets of those who<br />

died. Many Pulse nightclub victims were young and had no will or other forms of estate planning.<br />

All too often it takes a tragedy before we recognize the importance of preparing estate planning<br />

in our own lives.<br />

People in general are spending more time thinking about what would happen to their<br />

families if disaster strikes. Once predominantly the concern of the elder generation, Wills and<br />

It happens to many of us at one time or<br />

another in our careers. Our employer lets<br />

us go without any warning or the company<br />

needs to downsize, and we find<br />

ourselves without income or self-esteem.<br />

Because it happened to one particular<br />

executive from the Orlando area, a new<br />

company was formed and an award-winning<br />

book was written.<br />

Matt Durfee, president of<br />

Navigator Executive Advisors, was<br />

vice president of human resources for<br />

Centex Homes when the housing bubble<br />

burst in 2006. In a very short amount of<br />

time, he went from recruiting and training<br />

employees to being unemployed and<br />

searching for a job.<br />

With 71 percent of the earth’s surface<br />

covered by water, it is no surprise<br />

that humans have an endless<br />

curiosity for life under the waves. Sea<br />

Life Orlando Aquarium brings<br />

children and adults eye to eye with<br />

creatures of the sea. Opened in May<br />

2015, Sea Life Orlando is the 50th<br />

Sea Life aquarium to open globally<br />

under Merlin Entertainments.<br />

After purchasing an entry ticket,<br />

guests are welcome to explore the<br />

aquarium on a self-guided tour.<br />

Informational guides are posted<br />

throughout the area, as well as interactive<br />

exhibits and activities to engage<br />

visitors. Sea Life Orlando officials are<br />

proud to cater to their youngest guests<br />

through interactive child-first engagement.<br />

Even the way the exhibits are designed<br />

are geared toward youth, with<br />

child-height viewing portals, so youngsters<br />

can get the full experience. The<br />

aquarium will also be offering Toddler<br />

Tuesdays, during which families can<br />

access the aquarium before it opens.<br />

“An adult’s experience at an aquarium<br />

is much different from a child’s experience,”<br />

said Jennifer Edwards,<br />

marketing manager of Sea Life Orlando.<br />

The Habitats<br />

Each habitat at the aquarium is<br />

as unique as the area it represents.<br />

There are three ocean habitats:<br />

Atlantic, Pacific and Indian. Each provides<br />

a look at that region’s marine<br />

life. Those who are interested in local<br />

wildlife will not be disappointed with<br />

the Florida habitat, which showcases<br />

a variety of fish and anything else<br />

someone would find in the waters of<br />

Florida and the Shingle Creek area.<br />

One of the main attractions at the<br />

aquarium is its 360-degree ocean<br />

tunnel, the only one in Florida, where<br />

guests take a one-of-a-kind stroll under<br />

the waters to truly see how the<br />

animals live.<br />

PROMOTIONAL FEATURE<br />

“It is a completely unique experience<br />

to be able to walk and be<br />

completely surrounded by water,”<br />

Edwards said.<br />

Creatures of the Sea<br />

Sea Life Orlando is home to seven<br />

varieties of sharks and more than<br />

1,000 types of creatures, including<br />

fish, stingrays, a giant Pacific octopus,<br />

and two male rescue turtles. The<br />

turtles came to the aquarium after<br />

finding that they are not able to be<br />

released into the wild. Chely, named<br />

for his type of turtle, Chelonia mydas,<br />

lives in the Atlantic Ocean habitat<br />

and was injured by a boat.<br />

“After their shells are damaged, it’s<br />

really difficult to release them back into<br />

the wild,” Edwards said.<br />

Ted, a loggerhead sea turtle, resides in<br />

the Indian Ocean habitat. He is named<br />

after being one of the first sea turtles used<br />

to test at-sea certification trials for turtle<br />

excluder devices (TED), which are escape<br />

hatches in fishing nets that allow turtles to<br />

escape if they are accidentally trapped<br />

in a net. Ted was injured when caught<br />

in a net and treated at St. Joseph Bay in<br />

Florida’s panhandle. The treatment center<br />

tried to rehabilitate him, but he showed<br />

signs that he would not be able to survive<br />

in a natural habitat. Both of the sea turtles<br />

are on an emergency blood donor list,<br />

able to have blood drawn in the event a<br />

local turtle is in need.<br />

For a more up-close and interactive<br />

experience, visitors can schedule a<br />

behind-the-scenes tour and learn about<br />

how the creatures are cared for, including<br />

preparation for feedings and a<br />

look at the quarantine area, where the<br />

animals learn how to adapt to aquarium<br />

life. The Discovery Experience goes<br />

even further, allowing guests to interact<br />

with one of the divers as well as see a<br />

feeding from the top of a tank. With<br />

several engaging exhibits, the opportunities<br />

for learning about sea life and<br />

the creatures that live there are endless.<br />
