NEW VEGAN SPOT OPENS UP<br />

Veganism is gaining more awareness as we head into <strong>2017</strong>, and with<br />

that we as vegans are always on the lookout for new vegan spots to<br />

check out. Vegan restaurants, pop up food trucks, and treat shops are<br />

on the rise and entrepreneurs are jumping on the vegan train that seems<br />

to only be headed towards success and a profitable destination.<br />

J. Selby’s is a new and highly anticipated plant-based restaurant<br />

spot that recently opened up in St. Paul, Minnesota, and they've gained<br />

a lot of excitement around it. From their street tacos to their chocolate<br />

chip cheeze cake, try them out and let them know what you think!<br />

As the first of its kind in the city, I hope for its continuous success.<br />

FEELING INSPIRED<br />

As a creative and not always inspired person, I have found that looking<br />

to others and their art pieces are great ways to find new outlooks and<br />

perceptions on the world and also within the vegan community. Every<br />

once in a while, I like to dig through the depths of the internet and find<br />

animal enthusiasts that are all for the cause or artists who are vegan<br />

who let that side show through their artwork.<br />

I recently found an artist, Dana Ellyn, who is not only an awesome<br />

painter, but really lets her self and love for animals shine in all of her<br />

work. Her work is bold, eye-catching, and most of all emotion striking.<br />

MINNESOTA HOT SPOTS<br />

When you travel to a new city, how do you know where all of the best<br />

vegan or vegan friendly spots are at? Google searches can only get<br />

you so far so here are some people choices in the state of Minnesota.<br />

SEWARD CAFE<br />

From vegan biscuits and gravy to vegan mac n' cheese, Seward Cafe will definitely<br />

leave you feeling comfortably<br />

full and ready for a nap.<br />

The cafe also hosts events<br />

and monthly art shows in the<br />

community that are a definite<br />

must see.<br />

THE HERBIVOROUS BUTCHER<br />

Highly rated in the vegan community, The Herbivorous Butcher is a must stop spot<br />

to check out in Minnesota. Owned by a<br />

sister and brother duo, their plant<br />

based deli offers meat-free meat and<br />

cheese options to create the perfect<br />

vegan sub or sandwich.<br />

On the menu, options include maple<br />

sage breakfast sausage, garlic pepper<br />

havarti, and salt n' peppa jerky. YUM.<br />

SPAGHETTI & CASHEWS<br />

As a college student, what's more delicious, easy, and as simple to make<br />

as spaghetti? And as a vegan college student, how do you spice up plain<br />

spaghetti? After a long day of studying, pasta was always my go to, but<br />

while also being vegan, just plain pasta and red sauce can get boring.<br />

But if you have yet to try a cashew based sauce, you will love this recipe.<br />

INGREDIENTS<br />

Your favorite pasta<br />

1 cup cashews<br />

1/2 cup almond Milk<br />

2 tbspns. vegetable stock<br />

1 tbspn. lemon juice<br />

2 tbspns. hot sauce<br />

1 tbspn. mustard<br />

1 clove garlic<br />

1 tspn. turmeric<br />

1/2 tspn. red pepper<br />

First, you want to put your cashews in<br />

some water so that they have time to<br />

soften. Cook your pasta according to<br />

the package.<br />

Then in a blender throw in your softened<br />

cashews, almond milk, vegetable stock,<br />

lemon juice, hot sauce, mustard, garlic,<br />

turmeric, and red pepper and blend until<br />

smooth.<br />

Drain your pasta, put it back in the pot,<br />

and then pour your cashew sauce in<br />

and mix together well. Add some extra<br />

hot sauce over top and enjoy!<br />

PLAYING WITH PLEATHER<br />

If you dig the whole leather jacket trend, why not switch it up with some<br />

pleather? Pleather jacket, pleather purse, pleather pants, pleather shoes,<br />

pleather everything. You'll still look cool but minus all of the animal torture<br />

behind closed doors vibe that comes with wearing real leather.<br />

WHERE TO SHOP?<br />

I stumbled upon this awesome jacket<br />

with faux leather sleeves at Forever21<br />

a few years ago and it still looks brand<br />

new. With the weather warming up,<br />

this is the perfect jacket as we<br />

transition into the warmer months.<br />

Check them out if you can, they also<br />

have faux leather shoes that you will<br />

be sure to fall in love with.<br />

When I need a new purse, the first place<br />

I head to is Target. They always have the<br />

cutest faux leather purses and in my<br />

opinion, look better than real leather. As<br />

a student, I also preferred chunky purses<br />

over a backpack and for the price and<br />

quality of these, they were able to<br />

withstand all of my textbooks and items<br />

that I hoarded in them.<br />
