NEW VEGAN SPOT OPENS UP
Veganism is gaining more awareness as we head into 2017, and with
that we as vegans are always on the lookout for new vegan spots to
check out. Vegan restaurants, pop up food trucks, and treat shops are
on the rise and entrepreneurs are jumping on the vegan train that seems
to only be headed towards success and a profitable destination.

J. Selby’s is a new and highly anticipated plant-based restaurant
spot that recently opened up in St. Paul, Minnesota, and they've gained
a lot of excitement around it. From their street tacos to their chocolate
chip cheeze cake, try them out and let them know what you think!
As the first of its kind in the city, I hope for its continuous success.

FEELING INSPIRED
As a creative and not always inspired person, I have found that looking
to others and their art pieces are great ways to find new outlooks and
perceptions on the world and also within the vegan community. Every
once in a while, I like to dig through the depths of the internet and find
animal enthusiasts that are all for the cause or artists who are vegan
who let that side show through their artwork.
I recently found an artist, Dana Ellyn, who is not only an awesome
painter, but really lets her self and love for animals shine in all of her
work. Her work is bold, eye-catching, and most of all emotion striking.

MINNESOTA HOT SPOTS
When you travel to a new city, how do you know where all of the best
vegan or vegan friendly spots are at? Google searches can only get
you so far so here are some people choices in the state of Minnesota.
SEWARD CAFE
From vegan biscuits and gravy to vegan mac n' cheese, Seward Cafe will definitely
leave you feeling comfortably
full and ready for a nap.
The cafe also hosts events
and monthly art shows in the
community that are a definite
must see.

THE HERBIVOROUS BUTCHER
Highly rated in the vegan community, The Herbivorous Butcher is a must stop spot
to check out in Minnesota. Owned by a
sister and brother duo, their plant
based deli offers meat-free meat and
cheese options to create the perfect
vegan sub or sandwich.

On the menu, options include maple
sage breakfast sausage, garlic pepper
havarti, and salt n' peppa jerky. YUM.

SPAGHETTI & CASHEWS
As a college student, what's more delicious, easy, and as simple to make
as spaghetti? And as a vegan college student, how do you spice up plain
spaghetti? After a long day of studying, pasta was always my go to, but
while also being vegan, just plain pasta and red sauce can get boring.
But if you have yet to try a cashew based sauce, you will love this recipe.
INGREDIENTS
Your favorite pasta
1 cup cashews
1/2 cup almond Milk
2 tbspns. vegetable stock
1 tbspn. lemon juice
2 tbspns. hot sauce
1 tbspn. mustard
1 clove garlic
1 tspn. turmeric
1/2 tspn. red pepper
First, you want to put your cashews in
some water so that they have time to
soften. Cook your pasta according to
the package.
Then in a blender throw in your softened
cashews, almond milk, vegetable stock,
lemon juice, hot sauce, mustard, garlic,
turmeric, and red pepper and blend until
smooth.
Drain your pasta, put it back in the pot,
and then pour your cashew sauce in
and mix together well. Add some extra
hot sauce over top and enjoy!

PLAYING WITH PLEATHER
If you dig the whole leather jacket trend, why not switch it up with some
pleather? Pleather jacket, pleather purse, pleather pants, pleather shoes,
pleather everything. You'll still look cool but minus all of the animal torture
behind closed doors vibe that comes with wearing real leather.
WHERE TO SHOP?
I stumbled upon this awesome jacket
with faux leather sleeves at Forever21
a few years ago and it still looks brand
new. With the weather warming up,
this is the perfect jacket as we
transition into the warmer months.
Check them out if you can, they also
have faux leather shoes that you will
be sure to fall in love with.
When I need a new purse, the first place
I head to is Target. They always have the
cutest faux leather purses and in my
opinion, look better than real leather. As
a student, I also preferred chunky purses
over a backpack and for the price and
quality of these, they were able to
withstand all of my textbooks and items
that I hoarded in them.
