EDITOR’S NOTE
A FRESH
START
The New Year is upon us, and one of our favourite things about January is
the sense of a fresh start, and that with the arrival of the new calendar, comes
an entirely new set of goals to strive towards. It is the perfect time to find the
inspiration and motivation for the year ahead and aim to build upon our previous
year’s efforts, while reflecting upon them. To reflect this we have once again
restyled our magazine, in light of the fact that Tropicana have had an incredible
year in 2014, posting a record profit and receiving a number of awards for their
outstanding contributions to the industry, and you can read about the recognition
they have received as a company in the Property News segment on (p53).
While there aren’t so many decorations associated with the start of the year as
there are at the end of a year, there is certainly a romantic appeal towards the end
of winter, as Valentine’s Day waits just around the corner. In light of this over
our Jan-Feb ‘Love Issue’, we invite you to find your motivation for the year ahead,
while firing up your love life. In our Health article where we’ve found 8 Tips To
Kick Start A Healthier Lifestyle on (p98), so you can shed those festive pounds,
while giving yourself the energy you need to drive your year in to new heights.
With an improved figure and driven focus, discover how our Game Changer this
issue Oscar De La Renta, used elegant designs throughout his career to not only
shape the face of women’s fashion, but also to empower women in the workplace
through their attire.
And as January turns to February shift your attention to some of our other features,
geared towards enhancing your love life. Rekindle your joint love of adventure
in our Travel feature, with a cruise that takes you and your loved one through
the heart of Europe to uncover its cultural gems. And staying in Europe, you can
also read about The Bolshoi Theatre’s romantic charms and fascinating history,
and wow your partner, with images of the Theatre’s breathtaking architecture in
our Home Feature on (p48). Staying closer to home though, learn how you can
impress your loved one by treating them to a sumptuous feast of lamb coated in
a rich chocolate based sauce in our Cookbook Recipe, which you will find on
(p138). As ever we close with Our Last Goodbye and to start the year we talk to
the charming Sarimah Ibrahim from Mix.FM.
SPIRIT OF ECSTACY
International Jeweller, Mouawad
showcased yet another
incomparable masterpiece this
November, which was created in
collaboration with Rolls-Royce.
With an estimated value of
USD250,000, this one-of-a-kind
work of art is known as the Spirit
of Ecstasy. The legendary flying
lady, the world’s most recognisable
motoring mascot, which famously
graces the front of all ‘Phantom’ and
‘Ghost’ Rolls Royce models, was
recreated with full pave diamonds.
Three Mouawad master-craftsmen
spent over 350 hours laying 38.53
carats of diamonds in pavé, creating
a timeless homage for this icon of
elegance and glamour.
MONUMENTS TO AN ELEGY
SMASHING PUMPKINS
One of alternative rock’s most prolific bands has
yet again emerged from the studio, with another
masterpiece. An album packed with blazing riffs
and beautifully reflective lyrics, Monuments To
An Elegy is Smashing Pumpkins at their best. The
album’s first single ‘Being Beige’ was a hauntingly
poetic track, while their second release ‘One And
1.heavy distorted melodies.
TAKE THAT
The seventh studio album by British pop band Take
That; III is the band’s first studio album in four years
and is the first to feature the band as a trio, following
the departure of Jason Orange and Robbie Williams.
With the dynamics of the band significantly altered,
Take That are experimenting with their sound and the
first single ‘These Days’ shows a shift towards more
dance like beats and funk guitar led riffs. Promising to
be their most upbeat album yet III is one of the most
eagerly anticipated pop albums of the year.
ACDC
The first album from the legendary rock group
and proof positive that they’ve still got it. Gutsy
rock with punchy riffs, and impressive guitar solos
run throughout the album; with Brian Johnson’s
powerful vocals interjecting catchy melodies. This
album packs a powerful dose of all things rock and
roll and is a must have for rock fans.
TAYLOR SWIFT
Country’s princess came back in a big way with
her album titled 1989, signifying her year of birth
as well as the music of that era. Taylor swayed
away from her country roots to experiment with
the eclectic beats of the 80s. She channeled her
serial dater reputation for her song ‘Blank Space’
while highlighting the feudal world of celebrity
in ‘Bad Blood.’ Composition wise, songs like ‘Style’
and ‘Out of the Woods’ remind us of the 80s sounds
of Duran Duran and Madonna.
ROMANCE
WORDS AUDREY TEOH
PHOTOGRAPHS DAMIR YUSUPOV
LOOKING FOR A LOCATION TO IMPRESS YOUR BETTER HALF? THE BOLSHOI THEATRE OFFERS
UNMATCHED GRANDEUR AND ELEGANCE GUARANTEED TO SWEEP THEM OFF THEIR FEET.
The city of Moscow is filled with historic landmarks that
speak of an era long past, yet remain tenacious in the face
of modern development. At its best, they give us a taste of
a different pace of life, one that most people only encounter
in period movies and classic novels.
The Bolshoi Theatre, now over 238 years old, is a perfect
example of Russian magnificence, representing the
golden age of Russian ballet, and remains the biggest ballet
company in the world with over 200 dancers.
But before you say, “I don’t even like ballet!” consider
this: the theatre is worth marvelling at for its cultural, historical
and architectural richness. If you had to imagine a
destination that can take your breath away, it’s hard to find
anywhere else to surpass the Bolshoi Theatre.
While the Bolshoi Ballet was founded in 1776 by Prince
Peter Urosov at Catherine II’s decree, the history of the
theatre itself has been eventful, to say the least, surviving
economic as well as political upheavals which each threatened
to close its doors for good.
Since its founding, the theatre has undergone many
changes in fortune, from being destroyed in a fire in 1805
to being rebuilt in Russian classical style in 1824 and consumed
by fire again in 1853. However, like the legendary
phoenix rising from the ashes, the current edifice was reopened
to coincide with the coronation of Tsar Alexander
II’s, on 20 October 1856.
As you stand within its walls, which have seen wars and
ruling parties come and go, it could be argued that the Bolshoi
Theatre draws many parallels with love; just as relationships
which have weathered challenge through the
years grow ever stronger, the Bolshoi Theatre has gone
through many changes yet retains its original glory and
— The intricate detailing in the interior of the theatre; one of the many halls with a curved ceiling
prestige, borne with impeccable good grace and no small
amount of charm.
Today, after much-needed reconstruction and refurbishment
that lasted from July 2005 to October 2011, the
Bolshoi Theatre has had much of its features restored –
thanks to its status as a protected monument – and its
technical equipment upgraded to modern standards, as
well as added working areas and underground space, all
designed to ensure that the classical design and acoustic
quality of the theatre remained unaffected.
The whole world took notice when this grand dame was
once more revealed. The result of a special interdepartmental
working group and approximately 3,500 specialist workmen
– of which over a thousand were expert restorers – the successful
refurbishment of the Bolshoi Theatre was a matter of
national pride, and it has certainly lived up to expectations. ➢
simply don’t do justice to the atmosphere contained within
its walls, with its 3, 000-square-feet of gold leaf, gleaming
marble, glittering six-tier auditorium, scarlet-draped
boxes, and sheer overwhelming presence that strikes visitors
from the moment they are greeted by the sculpture of
Apollo which adorns the main portico.
As the bastion for Russian ballet and opera, the experience
of attending a performance at the Bolshoi Theatre
with your loved one won’t be easily forgotten. What’s
more, the theatre ensures that 70% of its performances are
made up of Russian masterpieces, and in recent years it
has tried to bring recognition to lesser-known, 20th century
Russian composers as well, which assures spectators
authentic Russian talent that simply cannot be found anywhere
else.
Tropicana Launches
CYPERUS SERVICED
RESIDENCES
AT TROPICANA
GARDENS
Launching phase 3 in Tropicana Gardens -
Tropicana Corporation Berhad has unveiled
their highly anticipated residential phase of
Tropicana Gardens – Cyperus Serviced Residences.
The highly integrated residences
are situated in the rapidly developing neighbourhood
of Kota Damansara and are currently
the only planned self-contained integrated
development to be situated in Kota
Damansara and its surrounding areas.
Continuing on from the successful sales
uptake of Arnica and Bayberry Serviced
Residences, Cyperus Serviced Residences
aims to persevere with repeated success.
Tropicana Gardens has enjoyed a positive
sales take-up rate, hitting as high as 98%
when their Phase 2 residences, Bayberry
was launched. 330 units out of the total
413 were quickly sold out, attesting to the
rising demand for an integrated residential
and commercial development in the Kota
Damansara area.
Commenting on the previous accomplishments
of the sales take-up rate, Dato’ Dickson
Tan, Deputy Group CEO of Tropicana said,
“Although we’ve enjoyed an overwhelming
response from the launch of our previous two
residential phases, we’re also very aware of the
constant-changing market conditions today.
People are more careful with what they purchase
hence it is imperative that Tropicana
strives its best to deliver to what our customers
want. We want to always ensure that they are
given a good product that will not only last, but
is also strategic and ideal for their needs”.
Dato’ Dickson Tan further added “With the
launch of the phase 3 residential block, Cyperus
Serviced Residences, we are optimistic
that the development will continue to garner
keen interest based on our previous record”.
As proven in the Group’s past developments,
Tropicana Gardens aims to deliver a strategic
and aesthetically pleasing integrated development
favoured by homeowners, and those
seeking to purchase a home with modern facilities
in a key area of the Klang Valley.
Moreover, an elevated Mass Rapid Transit
Tropicana Corporation Berhad recently announced
its financial results for the third
quarter ended 30 September 2014. For the
quarter under review, the Group reported
a 3.2% increase in profit before tax (“PBT”)
to RM50.9 million over the same period last
year, on the back of revenue of RM353.1 million.
The Group’s net profit after tax and minority
interests for the quarter rose 24.5% to
RM29.5 million, against RM23.7 million in
the same period last year.
For the nine months to 30 September 2014,
Group revenue totaled RM1.01 billion, whilst
Group PBT is 18.3% higher at RM196.8 million
in the same period last year. Cumulative
net profit was up 19.8% to RM126.8 million
from RM105.8 million a year before.
The better financial performance was attributed
to higher revenue recognition
across key within the Greater Kuala Lumpur
such as Tropicana Gardens in Kota Damansara,
Tropicana Heights in Kajang and
Tropicana Metropark in Subang Jaya, as well
as Tropicana Danga Bay in the Iskandar region
in Johor.
Tropicana delivered commendable sales performance
in the first 9 month of its current financial
year, chalking up new sales of RM1.2
billion in an environment where the overall
property market remains soft amidst cooling
measures and more stringent bank lending
policies. This has sustained the Group’s unbilled
sales at a high of RM2.7 billion as at
end-September 2014
The Group’s ongoing projects continue to
achieve good sales, with its initial launch of
landed terrace houses in Tropicana Heights,
Kajang enjoying strong response from buyers.
Tropicana also launched Cyperus Serviced
Residences, its third block of serviced
apartments in Tropicana Gardens, Kota Damansara.
This follows the successful launch
62 TA | JAN/FEB 2015
of the first two blocks of serviced apartments,
namely Arnica Serviced Residences which is
fully sold, and Bayberry Serviced Residences,
which only has a few units remaining.
The Group launched a series of landed property
products in the new year, including
second phase of terrace and cluster houses
in Parkfield Residences, Tropicana Heights,
Kajang. Also in the plans is the maiden
launch of its link houses in Tropicana Aman
– a 863-acre self-contained mixed township
development project in Kota Kemuning.
AN INTERVIEW WITH ANNE WONG
HEARTS,
HATS & HOME
JACK NEWBERRY TALKS TO FASHIONISTA, TRAVELLER AND MOTHER ANNE WONG, ABOUT LIFE IN
SCOTLAND, THE IMPORTANCE OF TRAVEL, HER FAMILY AND HATS.
Arriving slightly early to afford time to set up for the interview,
I didn’t have long to wait before my interview arrived
in style. Elegantly dressed from head to toe, Anne Wong
makes quite an entrance, there is an air of confidence in
her stride, and recognising me she smiles and welcomes me
with a firm handshake. We exchange pleasantries, and as
she settles into her seat, I get the feeling that this is going to
be an interesting interview from the very start.
Thank you for letting us interview you, I suppose we
should dive straight into it, my first question - What
does your family mean to you?
They mean everything to me. Especially my children, they
mean the world to me, and are always the top priority in my
life. I take them everywhere, and I want to be as big a part of
their lives as I possibly can. It has been incredibly rewarding
so far, as they are all growing into such unique and fascinating
people and watching that process, I think is what being
a mother is all about.
And what was it like moving to Scotland for the first
time? That must have caused some cultural shock?
Well actually no. I had been to Scotland quite a few times
with my family when I was younger on my holidays, so I
sort of knew what to expect. But during our move to Edinburgh,
there were actually quite a few pleasant surprises.
It wasn’t as cold as I had anticipated, I mean it’s freezing
comparatively to living in Malaysia, but from my memories
of previous trips – it seems the weather in Scotland has
improved over the years. The culture is also very different,
it’s not as multicultural and vibrant, but the countryside is
stunning. The lakes are beautifully clear and I find that the
greens of the highlands have a very calming effect on me.
Were there any things that you missed about Malaysia?
Absolutely, the weather wasn’t as cold, but I did occasion-
ally miss the assurance you have in Malaysia of always waking
up to sunshine. Food was also a big thing for me. Food
in Scotland isn’t as openly available as it is in Malaysia, so
there’s nowhere you can find a hot cooked breakfast at six in
the morning, certainly no roadside stalls selling nasi lemak
packets! Don’t get me wrong, I do love Scottish food; I particularly
love haggis as it has such a distinctive flavour, but I
did find myself missing a good bowl of char kuey teow from
time to time. Certainly there were things I knew I would
miss, but I actually feel that I’m a very adaptable person, and
that travelling has taught me to be that way, so it was never
really challenging.
So do you think it is important for your children to
travel?
Yes, it is so important that they travel as much as they can.
I’ve tried to take them with me everywhere I go, so they
have been to America, Australia and a number of other
countries; I feel that it is very important for them to interact
and experience different cultures so that they learn more
about themselves, and the world around them. It has really
paid off for them in the classroom. Travel really does seem
to broaden the mind. I’ve had teachers compliment me on
my son’s curiosity and want to learn more, and all of my
children seem to have a good base general knowledge, as
they have experienced so much already.
What made you want to return to Malaysia?
I think despite my love of travelling, and my want for my
children to experience as much of the world as they can, I
still have a love for my country. I used to complain about
Malaysia a lot when I was younger, but I’ve come to realise
that the things I didn’t like about Malaysia, exist in other
countries too. I think we have it pretty good in Malaysia; the
weather is a blessing because it allows me to go swimming
whenever I want, and the services here are more straight ➢
forwards to deal with than in other countries. In Scotland
there were a lot of things to do, but most of them were
weather depending, and of course they don’t really have our
lepak traditions over there, which I feel make Malaysians
some of the friendliest people on Earth.
I notice you’re very stylishly dressed and you brought
a number of hats with you, you’re even wearing one
now. What inspired you to wear hats? It’s quite a
unique fashion choice.
I’ve loved hats ever since I was very young. I think what
made me love hats so much was watching Audrey Hepburn.
I was obsessed with her when I was young, and always
wanted to be just like her. Her presence on screen, she’s always
so eloquently dressed and she steals the attention of
everyone in the room. I wanted to be able to do that. The
reason I have so many hats now is that because I travel a lot,
whenever I see a hat I really love, I get it because I can’t pass
up the opportunity.
So what was it that attracted you to Tropicana?
This is a good question actually. I think I already know the
answer though, and it is has to be the landscaping. Tropicana
has fantastic landscaping, it’s well maintained, it’s always
lush and the fauna are beautiful and that immediately
attracted me. Like I mentioned before I feel very calm being
close to nature and the greenery here is incredible. The
other factor was the security, I feel incredibly safe here while
being surrounded by breathtaking scenery and that combination
is ideal to my lifestyle.
And your love of fashion, which country suited that
more?
Well actually this one of the things that drew me back to
Malaysia even more. Although in the UK there are a lot of
high end brands and fashion outlets, the scene doesn’t have
as many launches as it does in Malaysia. People in Malaysia
follow fashion with a lot more dedication, so there are
a lot more parties, a lot more social events and I really prefer
that aspect of the scene. I felt that living in Edinburgh,
we lacked a social rhythm. In Malaysia everything is socially
based, people are a lot less solitary and will make the effort
to go out together to eat rather than staying at home. I really
like this and I actually felt that while it was important for
my children to experience lots of different ways of life, that
I wanted them to have this Malaysian social culture at the
heart of everything they do. It really si the best thing about
my country.
THE GAME CHANGER
EMPOWERING WOMEN THROUGH FASHION
WORDS AISHAH AZALI PHOTOGRAPH GETTY
JAN/FEB 2015 | TA 83
THE LATE OSCAR DE LA RENTA, WAS A DESIGNER LIKE NO OTHER, HERE WE REMEMBER HIS LEGACY
AND LOOK AT HOW HE SHAPED WOMEN’S FASHION, PUTTING THE EMPHASIS ON EMPOWERING THEM.
In an era where highlighting ones sexuality through clothes
dominates the runways, there is one man that stuck to his
classic silhouette without being labelled obsolete. Oscar De
La Renta maintained classic glamour in his clothes throughout
his career, teaching a whole generation of fashionistas
that simplistic elegance is empowering and is something
that will never go out of style if done tastefully.
How Oscar influenced the woman of today with that
mindset; began with his background in couture and his early
clientele of powerful women. One notable thing about Oscar’s
designs was that even though they emulated elegance,
they never screamed ostentatious. This is an ideal for the
wardrobe of someone who wants to look beautiful and yet
be taken seriously as well.
The incredible aspect of his designs came through the
striking features in all of his details. Whether it was the
layers of soft tulle on the hem, or the intricate floral embroidery
on the bodice, those little elements came from his
background in couture.
c o u t u r i e r t o t h e p o w e r f u l - To understand Oscar’s
flair for couture and fine detailing, a little background on his
working life is essential. Oscar trained under the best couturiers
of his time, namely Cristόbal Balenciaga for Balenciaga
and Antonio Del Castillo for Lanvin. He also worked a
stint at Elizabeth Arden and later in the 1990s at Balmain for
Pierre Balmain. All these experiences became the platform
for the formation of the Oscar De La Renta DNA of couture
elegance that women have loved till this day.
His emergence as the designer for the powerful; started
with his first important client, Francesca Lodge who was
the wife of the then United States ambassador to Spain, John
Davis Lodge. A lover of the arts, Francesca enlisted Oscar
to design her daughter Beatrice’s debutante dress. The gorgeous
white double tiered gown made of tulle could rival
any wedding dress at that time and even made it on the cover
of LIFE magazine.
His move to styling ladies of the White House began with
Jacqueline Kennedy who was the first lady that associated
fashion with the White House. Jackie was not the only one
though, Oscar moved on to dress first ladies Nancy Reagan,
Hillary Clinton, Laura Bush and recently before his death,
Michelle Obama. We can safely say that he sort of cultivated
the ‘First Lady’ style, which are clothes that are pretty, tasteful
and impeccably made.
t h e m o s t i m p o r t a n t g o w n o f y o u r l i f e - Continuing
to empower women by the way they dress, Oscar
forayed into the bridal arena in 2006 to create a ready-towear
bridal collection with his signature designs in a more
romantic taste. His aim was to create dresses that brides
would fall in love with as intensely as how they fell in love
with their husbands-to-be. His connection to the ladies of
the White House spilled onto a new batch of clients as he
designed one-of-a-kind wedding dresses for brides Jenna
Bush Hager (daughter of Laura Bush) and Huma Abedin
(aide-de-camp to Hillary Clinton).
Not just a staple in the White House, Hollywood came
calling and actresses like Kate Bosworth, Amanda Peet and
Katherine Heigl also loved and adorned Oscar’s wedding
gowns. His last wedding (not to mention most high-profile)
was when he designed the Chantilly lace off-the-shoulder
wedding dress for Amal Alamuddin, more generally known
as Mrs George Clooney.
h e l l o h o l l y w o o d - No one can write about Oscar as a
designer and not mention the stunning pieces he designed
for his Hollywood patrons. A staple during award season and
film premiers, Oscar’s regal elegance jives with the opulence
of some award shows like the Academy Awards. Many stars
end up on the best dress list thanks to Oscar’s creations. Oscar’s
early patrons include Liza Minelli and long time friend
Audrey Hepburn. A-List actresses like Jennifer Garner, Penelope
Cruz and Amy Adams go to Oscar’s ensembles when
they want to dazzle the red carpet, because they have the ability
to make them look stunning yet undeniably compelling.
“His aim was to create
Hollywood in the new millennium continued to pour
love and praise on Oscar as he continued to dress singers
and actresses alike. So much so that TV series Sex and the
City dedicated a whole episode to Oscar De La Renta, where
the titular character Carrie Bradshaw was gifted and later
slipped into a cerise pink full-skirted dress with a black bow
belt. It is fitting due to the fact that actress Sarah Jessica
Parker (who portrayed Carrie Bradshaw) and Oscar were
close friends and she frequently wore his creations on various
red carpet events.
Whether it was in the early 1960s or the early 2000s, Oscar
De La Renta understood how to dress women in his trademark
elegant lady-like designs. From the first ladies to the
sirens of the silver screen to the everyday woman, Oscar has
dressed them all and made a stamp in fashion history as the
man who stayed true to his roots of classic glamour where his
ensembles and collections emulated power as well as style.
That is ultimately the message in his clothes, that women
are able look beautiful and yet powerful at the same time.
DISCOVER THE MCLAREN 650S
UPPING THE ANTE
SUPERCARS DON’T GET FACELIFTS. BUT THE 650S IS THE NEWEST ITERATION OF THE MP4-12C,
WITH SOME SIGNIFICANT CHANGES TO DISTINGUISH IT FROM ITS PREDECESSOR.
WORDS ASWAN YAP PHOTOGRAPHS MCLAREN
Just a few years ago McLaren launched the MP4-12C: it
was their first attempt at a “high-volume” supercar, and
it instantly became the subject of controversy and debate.
On one hand, it fulfilled all the necessary requirements of
power and handling ability- an example of McLaren’s engineering
prowess. But on the other, it was regarded as lacking
many of the traditional definitive supercar traits- both
good, and bad.
Take for example, the ride quality. McLaren developed
a highly sophisticated suspension system with cross-linked
active damping; it was such an effective system that many
critics equated it to the kind of suspension one would find
on a Rolls Royce. While this is usually regarded as praise,
the traditional supercar camp felt that this made the MP4-
12C a machine unworthy of its ‘supercar’ title, as most supercars
had a surprisingly rough ride at the time.
On a more appreciable note, while the MP4-12C was fantastically
quick in the real world, it lacked some of the flair
and drama associated with a supercar. The gearbox shifted
with quick, smooth precision. Power delivery was linear
"On a more
appreciable note,
while the MP4-12C
was fantastically
quick in the real
world, it lacked some
of the flair and drama
associated with
a supercar"
and the torque band was wide enough to make it easily useable
around town. It could be regarded as a very powerful,
very competent Golf GTI- a great all-rounder, but somewhat
devoid of theatrics.
But despite the critics and the naysayers, the MP4-12C
became hugely successful. It was a weapon on track and just
as useable off track, garnering a sufficiently large following
to put McLaren back in the spotlight. It set the stage for
McLaren’s second offering, a hyper-car: the McLaren P1.
Developed with an engine based on the unit in the MP4-
12C, the P1 sported an additional hybrid system that delivered
extra torque on demand through an additional electric
motor. Production of the P1 was highly limited and it was
therefore highly exclusive, will nearly all the unit snapped
up within months of announcement.
With the P1 fully developed McLaren turned their attention
back to the MP4-12C, which had been in production for
roughly 3 years now. Ferrari had engineered and launched
the 458 Speciale, which was designed to be that little bit edgier
than a regular 458. McLaren felt they needed to match itbut
unlike mass market cars, supercars don’t quite undergo
the ‘facelift’ process as many passenger cars do.
Hence came the 650S, which is positioned as an entirely
new product. While the MP4-12C owes its name to McLaren’s
F1 naming scheme, the 650S has far simpler reasoning
for its name. The number ‘650’ represents the power output
in Pferdestärke, or PS (the German equivalent of horsepower).
The engine is the same as the twin-turbo 3.8-litre
V8 mill in the MP4-12C for the most part, but some
tuning and refinement has been applied in order to extract
that extra power. Torque increases by roughly 80 Nm, and
the torque band has been extended to provide more useable
power at lower engine speeds. The gearbox also benefits
from some revised software and tuning to get sharper,
snappier shifting- perhaps to add some character that was ➢
← seemingly missing in the MP4-12C. Dual clutch gearboxes
are ruthlessly efficient and effective, but rarely do they
convey the drama of a gearbox switching cogs.
Underpinnings are effectively the same, as the 650S
shares its chassis with the outgoing MP4-12C. That lovely
active-aero rear wing also makes a return, popping up to increase
downforce and improve stability under hard braking.
But much like the how Ferrari developed the 458 Specialethrough
minor improvements in various areas- so too has
McLaren for the 650S. The result of the additional power
and gearbox tweaking has reduced 0-100 km/h times to a
staggering 3.0 seconds dead. Carbon-ceramic brakes, once
available as an option for the MP4-12C, are now standard
equipment for the 650S.
"That being said, the supercar game is beginning to change; Lamborghini and Ferrari
won’t be able to hang on to their naturally-aspirated war horses for much longer, with EU
legislation cracking down on engine emissions and fuel efficiency"
— The stylish curved racer seats; the sleek interior from the side view;
the 3.8-litre twin-turbo V8 engine that gives the car power
McLaren has also made some changes to the steering and
suspension system, tweaking it based on feedback from MP4-
12C owners and critics. The systems are better distinguished
between the car’s 3 Driving modes: Normal, Sport, and
Track. Steering weighting has increased in order to provide
better driver feedback, making it slightly more precise when
aiming for the apex on a track. Meanwhile the suspension
becomes noticeably stiffer ad edgier when in Track mode,
providing more predictability and better body control.
This minor-change mindset applies to the aesthetics as
well. The MP4-12C had long been accused of looking a little
too plain, with none of the sharp carbon-fibre canards or
radical lines found in other supercars. In developing the 650S,
this issue was solved by borrowing some of the McLaren P1’s
design elements- more specifically the front end. While the
650S may be easily distinguishable from a MP4-12C from the
front, it also bears a strikingly similar front bumper to its hyper-car
cousin. The 650S is just that little bit more muscular,
more aggressive, than the outgoing MP4-12C.
Despite all these improvements, and the fact that the 650S
is far more impressive than its predecessor, it still doesn’t
quite have the raw appeal of its high-strung naturally-aspirated
rivals. There are many superlative characteristics that
make it highly competent but ultimately it is designed to
be more clinical and methodical, rather than unleashed and
unhinged. That being said, the supercar game is beginning
to change; Lamborghini and Ferrari won’t be able to hang
on to their naturally-aspirated war horses for much longer,
with EU legislation cracking down on engine emissions and
fuel efficiency. Perhaps McLaren’s early start on forced-induction
supercar development may pay off in the long runand
the 650S will rise to the top of its game in no time.
“Tricky but thoroughly enjoyable” That’s the verdict of casual
and seasoned golfers who have teed off at the world-famous,
by legendary golf champion and Australia’s Great White
Shark Greg Norman, the dramatic 18-hole golf course features
first-class playing conditions that allow avid golfers to
test their skills like a PGA Professional against a breath-taking
backdrop of panoramic ocean views and verdant Balinese
landscapes.
Having topped Forbes Travel 2012 Guide as Asia’s 10 Most
Elite Golf Course, the golf course is ranked 52 in the World’s
Top 100 Greatest Golf Courses by Golf Digest in February
2014 and was named Indonesia’s Best Signature Golf Resort
by Hospitality Asia Platinum Awards 2012-2014.
Golfing enthusiasts often rave about Nirwana Bali Golf
Club’s awe-inspiring course layout that boast five ocean-side
holes, three cliff-to-cliff tee shots and eight holes sculpted
into terraced rice fields. Augmented by meticulously maintained
landscapes by Tong Clarke and McCelvey from
Hawaii, the diverse range provides an unparalleled golfing
experience to resort golfers and seasoned professionals.
Considered one of the most distinctive opening holes
in the Asia-Pacific region, the mid-length par-4 is flanked
by rice paddies on the left, and drives must negotiate an
attractive pod of deep bunkers at the elbow. From there
the fairway turns left and falls steeply downhill to a green
closely guarded by hazards back and left.
The most photographed hole on the course is the signature
par-3 7th hole overlooking the famous Tanah Lot
temple. Golfers are challenged to hit a middle iron from
the cliff side tee across a piece of the ocean to a scenic and
well-guarded green. Also don’t be fooled by the imposing
giant cross-bunker at Hole 3, Par-4. Aim right over it to
find the wide fairway beyond. Beware that the green is
guarded by a creek in front and on its left, wetland and
more rice paddies.
Hole 13 will require skill and concentration to tackle as
the Indian Ocean lies on the right side of this deceptively
difficult, short par-4. Be mindful of the ever-present wind
that can wreak havoc. The safe tee shot is played to the valley
some 220 yards away, between the bunkers, leaving a
low punch shot into the elevated green. Big hitters can drive
it close to this putting surface, but the shorter the pitch, the
more awkward it becomes.
With the ocean thundering below, Hole 14 is another
dramatic par 3. From the Shark tee, the hole plays across
180 yards of open-ocean and rocky beach to another clifftop
putting surface.
Located by Hole 16 and about 5-10 minutes away from
the sprawling 2,500sqm Balinese-style clubhouse of the
Nirwana Bali Golf Club is a 12-bay driving range. Facilities
available at the clubhouse includes a restaurant as well as
LOVE THE FEELING
LOOK GOOD, FEEL GREAT.
Even if you’ve hit the
jackpot with genetically
blessed looks and a clear
sharp mind, holding on
to those God-given gifts
for the long run definitely
requires effort. Getting fit
and healthy definitely helps
maintain and preserve what
you have. Studies show that
working up a good ol’ sweat
regularly lowers a woman’s
risk of breast cancer by 37%,
osteoporosis by 45%, and
heart disease by 14%.
The bottom line? Whether
you’re fresh out of college,
climbing the corporate ladder,
or married with kids, the
moment to kick off a lifetime
health regime is NOW.
Jatomi Fitness breaks it down
into 4 easy steps.
DIET
You are what you eat. So don’t be cheap,
fast, easy, or fake. Drive-thru meals,
snack packs and instant cup noodles may
save you time and tasks, but cost dearly
your waistline and wardrobe. Other flaws
include skipping meals or eating late,
which makes you more susceptible to
weight gain and takes a toll on your health.
Cut the crap! Start cleaning up your
diet and eating right by consuming real,
wholesome foods. Colourful fruits and
vegetables should feature prominently
and take center stage in your diet.
Commendable protein sources include
salmon, eggs, turkey, chicken breast,
beef, tuna, and so on.
DE-STRESS
Relax, rejuvenate, recharge. Making it
a priority to get some regular ‘me-time’
leads to a better state of mind, increased
energy, and boosts productivity. Not sure
how? Here are a few simple options.
Indulge in a bubble bath, read a good
book, or simply go for a walk to get some
fresh air.
Yoga and Pilates are wonderful ways to
soothe your soul, improve your body’s
flexibility and strengthen your joints.
Jatomi Fitness offers a range of Yoga
and Pilates sessions suitable for all levels
including beginners. Our experienced
instructors carefully demonstrate and
guide each person through every class to
ensure the right posture and movements.
Dance it off! Move to the latest music
tracks at Jatomi Fitness with exciting
choreography by our instructors at one of
our classes; Zumba, Sh’bam, Step, and
more. A fun way to release your emotions,
express yourself, and encourage social
interaction.
SLEEP
If there’s one guy you need to stay faithful
to, it’s none other than Mr. Sandman.
Insufficient rest is associated with a shorter
lifespan and lower quality of life. Notable
side effects include accelerated aging,
sluggish metabolism, overall tiredness,
higher blood pressure, the list goes on.
On the upside, getting adequate shuteye
comes bundled with several delightful
rewards - of which include longer lifespan,
higher quality of life, better memory and
clearer focus on daily tasks.
STRENGTH TRAINING
After the big 4-0, most women start losing
a significant amount of muscle mass,
which leads to decreased metabolism,
which translates into weight gain.
Strength training can prevent this, but
if you imagine looking like the hulk, rest
assured, females lack the amount of
testosterone required to build huge bulky
muscles. The benefits of strength training:
a lean toned physique, strong dense
bones, and more than enough energy to
power you through the day.
Jatomi Fitness provides a variety of
strength-based classes which are
conducted in a safe environment by
qualified instructors. These include TRX
suspension training (which utilizes body
weight and gravity), as well as Lesmills Grit
and BodyPump sessions. Along with these,
there are a wide variety of classes which
are available free of charge upon signing up
as a member at any of our clubs.
Good health and fitness are
a lifetime journey, not a onetime
pit stop.
Improvements come in the
form of small, gradual, and
continuous changes. Rather
than attempt a drastic
180-degree shift, which
is akin to making a sharp
turn at high speed (and is
likely to see you crash and
burn), start off slow with
slight adjustments and stay
consistent. This way, you’re
more likely to stay on track.
Jatomi Fitness is a chain
of health and fitness clubs
which originated from and
has a dominant presence in
Europe. Recently making
the decision to venture
into Asia, they have clubs
located throughout Malaysia,
Indonesia, and will soon be
The National Weight Control Registry
reported that eating breakfast regularly is
one of the many characteristics to achieve
and maintain long-term weight loss. Although
any breakfast is better than none,
the foods that you choose can affect how
satisfied you feel. Having a high sugar
breakfast which comprises of a doughnut
with a coffee or hot chocolate will only
give you short-lived energy. The key to
making your breakfast last you until lunch
is to build a morning meal that contains
both protein and carbohydrates. For
that reason, egg whites on toast, a grilled
chicken sandwich or a tuna sandwich
makes a better option than roti canai, nasi
lemak kosong or fried bihun.
TWO
AVOID OVERLOADING
ON THE CARBS
After eating carbohydrates, our blood
sugar goes up and sometime after it
comes down again. Whether it goes up
rapidly or gradually is usually determined
by the type and quantity of food that we
eat. Having a high carbohydrate meal
will cause a sudden surge in your blood
sugar levels. A sudden surge of blood
sugar level will cause a large release of
the hormone insulin, whose function is
to bring the blood sugar level down. This
large release of insulin will cause a dip in
your blood sugar level, causing symptoms
like fatigue, moodiness and mental
fogginess. Meals that contain mainly carbohydrate
(e.g. fried rice, fried noodles)
are likely to cause this post-lunch energy
dip. On the other hand, meals that have a
moderate amount of carbohydrates, coupled
with proteins and fiber (e.g. chicken
rice with bean sprouts, steam fish with
rice and vegetables) will reduce blood
sugar fluctuation. Blood sugar rises and
drops gradually, providing a steady supply
of energy to power you throughout
the whole day.
THREE
INCLUDE PROTEIN
IN MAIN MEALS
Protein is important to repair the wear
and tear of your body cells. Consuming
protein foods triggers the release of anorexigenic
gut hormones (hormones
which reduce appetite) to promote satiety
and facilitate weight loss through an
overall reduction in food intake. Studies
have shown that the consumption of
protein boosts levels of the anorexigenic
hormone; peptide YY, so some benefits
were observed in experimental subjects
in reducing hunger and promoting
weight loss. Optimal sources of protein
are those that are lower in saturated fat,
such as low-fat dairy products (yogurt,
cottage cheese, and low-fat cheese),
chicken, fish, turkey, tofu and egg
whites. Examples of combining carbohydrate
with protein in main meals: egg
sandwich, grilled salmon with boiled
potatoes, chicken breast fillet with pasta.
FOUR
EAT THE GOOD FAT,
DITCH THE BAD FAT
Not all fats are created equal. Saturated
fats are the bad fats found in meat, fullfat
dairy products, palm oil and santan.
Equally dangerous and should be avoided
are the trans- and hydrogenated fat
found in deep fried food, margarine and
processed meats. Essential fatty acids are
the good fats that cannot be synthesized
in the body and must be supplied in
the diet to avoid deficiency symptoms.
They include members of the omega 6
and the heart healthy omega 3 families
of fatty acids. Symptoms of deficiency
include dry, cracked, scaly and bleeding
skin, and excessive thirst due to high
water loss from the skin. Food sourc-
98 TA | JAN/FEB 2015
es of omega 6 includes vegetables oils
(corn, safflower, soybean, sunflower),
nuts and seeds. Food sources of omega
3 includes oily fish (salmon, tuna,
mackerel, trout, sardine), canola oil, flax
seeds, chia seeds and walnuts.
FIVE
5-A-DAY
Religiously making sure of a daily intake
of fruits and vegetables is a great
way to guarantee good health. Fruits
and vegetables are full of vitamins,
minerals and phytochemicals that can
help to boost your immune system, improve
your skin health and reduce your
risk of chronic diseases and cancer. For
the weight-watchers, a high fiber diet
tend to be less ‘energy dense’ which
means they have fewer calories for the
same volume of food. Fibrous food also
generally require more chewing time,
which gives your body time to register
that you are full and preventing you
from overeating. Select fruits and vegetables
from different colour groups to
cover a broader spectrum of nutrients!
Ideally, one should be consuming at
least five portions of fruits and vegetables
a day. Here are some ways to boost
your fruits and vegetables intake :
Breakfast: Mix a cup of sliced fruits into
your cereal. Your morning juice (100%
fruit juice) counts too.
Mid-morning snack: Pour half a cup of
berries into a cup of plain low-fat yogurt.
Lunch: Try a sandwich loaded with vegetables
(eg. Subway), or select stalls that
offer variety of vegetables (e.g. mixed
rice), or request for more vegetables in
the noodles that you are having.
Dinner: Stir-fry a simple dish of vegetables,
or heat canned or frozen veggies
in the microwave for a quick side dish.
Add extra vegetables such as spinach
into soups.
“Religiously making
sure of a daily intake
of fruits and vegetables
is a great way to
guarantee good health.
Regular exercise is an
excellent way to boost
your mood and stay fit”
Dessert: Savour a frozen treat made
from 100% juice or put ½ cup of peaches
or banana on toasted whole-grain bread.
SIX
REHYDRATE AND CLEANSE
YOUR SYSTEM WITH WATER
Every system in your body depends on
water as water flushes toxins out of vital
organs, carries nutrients to your cells
and provides a moist environment for
ear, nose and throat tissues. Water is lost
from your body through breathing, perspiration,
urine and bowel movements
and this water must be replenished by
consuming beverages and foods that
contain water. Lack of water can lead
to dehydration, a condition that occurs
when you don’t have enough water in
your body to carry out normal functions.
If you are producing 1.5L or more of colourless
or slightly yellow urine a day,
your fluid intake is probably adequate.
SEVEN
GET SUFFICIENT REST
While we are asleep, our bodies undergo
certain important processes such as
repair, renewal and energy restoration.
The Centers for Disease Control and
Prevention recommends for adults including
the elderly to sleep 7 – 8 hours
a day. Sleep is absolutely crucial to promoting
health and bodily function. Sleep
loss may have harmful consequences
for our immune and endocrine systems,
as well as contributing to illnesses such
as obesity, diabetes and hypertension.
Therefore, choosing to put aside late
night television watching and turning in
earlier to ensure a minimum of 7 hours
of rest may just be the way to go in 2015
EIGHT
STAY ACTIVE
Regular exercise is an excellent way
to boost your mood and stay fit. The
World Health Organization (WHO)
recommended levels of physical activity
for adults aged 18 – 64 years should be
at least 150 minutes of moderate intensity
aerobic physical activity throughout
the week. This can also be achieved by
exercising 30 minutes, 5 days per week.
Regular exercise helps to improve or
maintain stamina, strengthen muscles
and to improve or maintain the range of
joint movement. Exercise also releases
the hormone endorphins which trigger
positive feelings in the body.
A Variety of Relaxing Treatments to
SOOTHE AWAY YOUR PAINS
With an array of treatments available at Thai Odyssey, we took the
traditional route and tried massages that emulate the hospitality
as well as history of Thailand. With their friendly staff and
alluring interior, let’s just say that our visit was a truly wonderful
experience, making us feel like we were in enchanting Thailand.
TRADITIONAL THAI MASSAGE
No massage has more history and benefit like a Traditional Thai
Massage. For people that want a massage but feel uncomfortable
with taking their clothes off, then this massage is the one to do.
A Thai massage at Thai Odyssey is a relaxing one with staff
and therapists that are warm and welcoming. Upon arrival,
a refreshing foot scrub is given followed by an escort to the
massage room. After changing into a loose pyjama-like outfit
provided by the therapist, you lie down to begin the treatment.
Though kneading is present, the Thai massage mostly consists of
flowing exercise movements where your body will be stretched
and loosed, sometimes in yoga-like positions. The therapist not
only uses her hands but her feet and knees to release tension in the
body. At the end of the 90 minutes massage, the tensions on your
muscles will be lifted and you will feel energised and relaxed.
HALF BODY MASSAGE
Little do we know that sitting all day in the office at our desks and
staring at our computer screens actually inflicts harm on us. Without
knowing, there is a high possibility that if not severely, we have created
a neck strain. For those who have a stiff and sore neck, the Half Body
Massage is highly recommended to loosen the tension. The Half
Body Massage is 30 minutes long and focuses on the head, neck and
shoulder area which are the areas that are prone to getting tight and
uncomfortable. After a refreshing feet wash, you will be seated on a
reclining chair and a cold eye mask will be placed on your eyes to
allow you to relax. The massage techniques are soothing, and at the
end your stress will have melted away and your muscles will no longer
feel tight.
TRADITIONAL FOOT MASSAGE
Walking, running, exercising and simply wearing uncomfortable shoes
can create discomfort and even pain to our feet. This can cause a lot of
problems in the long run and remedy is strongly advised; the Traditional
Foot Massage is a good way to heal your pained feet. It starts off with
a foot scrub, leaving you squeaky clean and ready for the massage. The
masseuse applies gentle pressure to your foot on different reflex points
to allow relaxation. The muscles at your calves tend to be strained as
well and the masseuse will work her way up there after she is done with
the foot. Prices for the foot massage vary depending on the duration
you opt for; the shortest one is 30 minutes and goes up to an hour.
THAI AROMATHERAPY MASSAGE
Most people tend to associate pain with Thai massages due to the
techniques and amount of strength and pressure the masseuses are
known to apply. For those who are afraid of intense massages, the
Thai Aromatherapy Massage is the perfect option. The massage
utilises essential oils and guests can choose one depending on what
concern they want to target. The most popular one is the ‘relax’ oil
which contains lavender and complements the techniques of the
massage. The full body massage consists of fanning, feathering
and gentle strokes with nothing overpowering. As for the result,
your entire body will be soothed and your mind at peace.
You can relax now… and take that journey of ‘self-discovery’. Just drop by any Thai Odyssey outlet
near you and let us awaken your spirit, renew your body, mind and soul!

THE Dedicated CHEF
“My grandma, my
They cooked all sorts,
CHEF SOMKUHAN WANDEE SAW THE BEGINNING OF SAMADHI RETREATS
AND HAS COME A LONG WAY SINCE THEN. WE SIT DOWN AT TAMARIND
SPRINGS FOR AN IMPRESSIVE MEAL AND A TALK WITH HER ABOUT HER
COOKING ASPIRATIONS.
WORDS VIVIAN TAN
PHOTOGRAPHS SOO PHYE
I walked along a long red-stoned walkway
lined with little flickering flames before I
reached the grand entrance to Tamarind
Springs. I could hear everything – and by
that I mean the sound of nature. I could hear
the relaxing sound of water from the fountain,
the crickets chirping and the light rustling
of leaves.
Situated on a hill, Tamarind Springs is
tucked away in the quieter area of Ampang
and is very much in touch with nature. The
intimate restaurant boasts the concept of
Jungle-Luxe Dining, giving guests the fine
dining experience while being close to
Mother Nature.
The brain behind the exquisite, traditional
Indochinese cuisine is Executive Chef Somkuhan
Wandee from Chiang Mai, Northern
Thailand. Initially, Chef Somkuhan aspired to
be in the beauty industry; she enjoyed playing
with make-up and hair styles. However, she
found that beauty also lay in cooking and her
interest in it escalated because of her family.
“My grandma, my mum, they all cook. My
whole family cooks so I grew an interest as
I was always helping out. They cooked all
sorts, whatever customers requested for.
We would prepare main dishes, drinks and
desserts and I picked up on this skill rather
quickly,” explained Chef Somkuhan.
Chef Somkuhan was working in Sungai Buloh
before she was approached to join Samadhi
Retreats. She began cooking first for Tamarind
Hill and has been with the company for
a grand total of 17 years and counting. Today,
you can find her busy at work in the kitchen
of Tamarind Springs, putting together exquisite
dishes. Traditional Indochinese cuisine
consists of recipes originating from three locations;
Khmer, Laos and Vietnam and these are
all present in the menu at Tamarind Springs.
While waiting for the dishes to be prepared,
I was given a delicious, thirst-quenching
lemongrass drink. I was told that this is
a signature drink that is presented to guests
across all Samadhi Retreats locations. Soon
enough, the first dish, Laotian Seafood and
Watermelon Soup was placed before me. It
immediately piqued my interest as I have
never had a dish with these two ingredients
combined. The result was certainly unique.
The soup was slightly spicy, and had a touch
of creaminess but yet managed to remain
light and appetising. There was a generous
portion of seafood sitting in my bowl and
the watermelon cubes were refreshing. I
sauce; the pineapples are
was more than ready for the main course.
Chef Somkuhan was very generous, urging
me to taste two different main courses.
The dishes looked and smelled amazing, it
was honestly hard to resist. I sampled one
of the signature dishes first; the Grilled
Lamb Tenderloin topped with Sun-Dried
Pineapple Sauce. The lamb was juicy and
Chef Somkuhan explained that it was
marinated beforehand to provide a fuller
flavour. The pan fried pineapple added a
sweet, tangy flavour and the sauce, comprising
of coconut juice and red chili, made
a great finishing touch.
The second main course I tasted was
Steamed Perch in Coconut Milk with Ginger,
Cashew Nuts and Basil Sauce. The fish
was exceptionally smooth and I could taste
the freshness because it was naturally sweet.
At first glance, you would think that this was
a Chinese dish, however upon tasting, there
was a noticeable difference to the dish, as
the coconut milk and basil sauce really stood
out. The flavours and nutrients are present
as the fish and all ingredients are cleverly
steamed together for three to five minutes.
As for dessert, I was presented with
Steamed Pumpkin Pudding in Banana Leaf
Pocket and it was as heavenly as it sounds.
The pumpkin pudding was extremely soft,
rather like a puree and it was accompanied
with bits of sliced fresh coconut which complemented
the sweet taste of the pumpkin.
The pudding had been steamed in banana
leaf, enhancing the steaming process and
adding a lovely aroma to the dish.
I realised that Khmer, Laos and Vietnam
cuisine all have some similarities; they have a
slight Thai vibe to them. I could not put my
finger on it, so I proceeded to ask Chef Somkuhan
what her most used and favourite ingredient
is. “Chili lah!” she replied with a laugh.
Although similar, the dishes were all still
unique; perhaps that was why I could not
figure it out. I could feel that Chef Somkuhan
put in a lot of effort and hard work into
her cooking, so I asked her what her aspirations
and dreams were.
“I want to have my own shop in Chiang Mai
one day. Perhaps a little café, but I want to serve
everything, all sorts of meals,” she answered.
When Chef Somkuhan is not at work she
is often creating new recipes and menus.
You do not see dedication like that every
day. Apart from the enticing meal, I had
fallen in love with the setting of Tamarind
Springs. It was like a mini getaway from the
hustle and bustle of the city. The ambience
is cosy, homely and emanates a warm glow.
For those who need ideas for Valentine’s
Day, this could perhaps be the perfect location
for a romantic night out.
• 2 potatoes, peeled, each cut into a rectangle
• sprig fresh thyme
• 1 garlic clove, crushed
• Sea salt
• white pepper
• 150ml/5fl oz chicken stock
Lamb:
• 500g/1lb 2oz canon of lamb
• salt and freshly ground black pepper
• 2 sprigs fresh rosemary
• 1 tbsp olive oil
• 2 garlic cloves, crushed
Creamy Leeks:
• 2 tbsp olive oil
• ½ onion, chopped into rings and then cut in half
(to make half-rings)
• ½ leek, cut into rings
• 1 garlic clove, finely chopped
• 85ml/3fl oz double cream
• 25g/1oz blue cheese, such as Stilton
• 50ml/1¾fl oz dry white wine
Port and Chocolate Sauce:
• 4 tbsp ruby port
• 150ml/5fl oz beef stock
• 50g/2oz unsalted butter
• 2 tsp grated chocolate (minimum 70% cocoa solids)
3. Pour in the chicken stock until it reaches halfway
up the side of the potatoes, then transfer the pan
to the oven and bake for 10-15 minutes, or until the
potatoes are tender.
4. For the lamb, season the lamb with salt and freshly
ground black pepper and insert the rosemary sprigs
into the folds of the meat.
5. Heat the oil in an ovenproof frying pan over a medium
heat and add the garlic and lamb. Fry the lamb on all
sides, until golden-brown all over, then transfer to the
oven to roast for 5-8 minutes (for medium), or until
cooked to your liking.
6. Remove the lamb from the oven, place onto a warm
plate and set aside to rest. Set the pan and its
remaining contents aside.
7. Meanwhile, for the creamy leeks, heat the oil in a
frying pan over a medium heat, add the onion, leek
and garlic and fry for 2-3 minutes, or until softened.
8. Add the cream, blue cheese and white wine bring the
mixture to a simmer and cook until the cheese has
melted and the sauce has thickened.
9. For the port and chocolate sauce, return the frying
pan used to cook the lamb to the heat, then de-glaze
the pan with the port, using a wooden spoon to
scrape up any browned bits from the bottom of the
pan. Add the beef stock and bring the mixture to the
boil, then continue to cook until the volume of the
liquid has reduced by one-third. Stir in the butter and
chocolate until melted.
10. To serve, carve the lamb into thick slices. Spoon some
creamed leeks into the centre of each serving plate
and top with the slices of lamb and pommes fondant.
Drizzle the port and chocolate sauce around the edge
of the plates.
THE DRINK
The perfect
CUP OF TEA
CREATING WITHOUT ABANDONING, SHARING WITHOUT COMPELLING.
BETJEMAN & BARTON IS MORE THAN JUST A CENTURY-OLD NAME;
IT IS A BRAND OF EXCELLENCE TINGED WITH ORIGINALITY.
WORDS JUSTIN HEYES
& BARTON
Tea is one of the most popular drinks in the
world, coming second only to water as the
most consumed beverage worldwide. To
most a cup of tea holds a sentimental value;
providing comfort on a rainy day, or a sense
of calm after a stressful day at the office.
Betjeman and Barton is a French Teahouse,
which has been in the business of providing
exceptional quality tea since 1919. Famed for
the high standard of their teas and their expertise
in flavours and brewing, they are one
of the most trusted Teahouses in the world.
b e c o m i n g betjeman & barton
The story behind this fine tea company
began in 1919, with Arthur Betjeman and
Percy Barton, two gentlemen with a vision;
driven by their desire to bring the concept of
the English art of tea to the Parisians. These
two tea experts decided to embark on a new
adventure by opening the first shop in the
French capital, entirely dedicated to tea. Inevitably
influenced by French taste, Arthur
Betjeman and Percy Barton proposed a perfectly
balanced blend of cultures, creating a
unique universe, a meeting place of Parisian
chic and British fantasy. Their success was
immediate and unprecedented. Today, Betjeman
& Barton has become a veritable institution
and the company has boutiques all
around the world, well-known by tea lovers.
To the staff working at Betjeman & Barton,
tea is sacred; which is why it has lasted for
over 90 years. Over this time, the family firm
has acquired know-how and expertise which
allows it today, to propose exceptional teas elevated
to the standing of real treasures, which
are offered in many 4 and 5-star hotels in the
world, some of their clientele being: Hôtel de
Crillon, George V and other Four Seasons
Hotels, Shangri-La, Park Hyatt, Sofitel, hotels
from the Société des Bains de Mer, etc.
t h e finest flavours
At Betjeman & Barton, buyers travel the tea
gardens of the world to select the teas from
the best plantations. Each tea undergoes a
stringent selection process based exclusively
on its ability to meet the expectations of
the brand and the demands of its customers.
Betjeman & Barton is the only company
that proposes, among its loose teas, exceptional
and fleeting tea varieties from small
producers, which are often shunned by other
tea companies.
Each batch, regardless of its size, carries a
story which the company passes on with the
utmost pride. Among the countless flavours
on offer, some of the most treasured teas
produced by Betjeman & Barton are:
- The Great Garden Teas - The gems of
teas from exceptional plantations: Grand
Sichuan Black Tea from China, Gyokuro
Green Tea from Japan and Assam Mokalbari
East Black Tea. Like great wines,
these "grand cru" teas have a strong colour,
aroma and taste, and are a full-bodied
and characteristic experience.
- First Flush Teas - Are another of the
company's specialities: taken from the
first pickings from March to the end of
the cold spell, these green teas are lighter
and highly aromatic. They consist of all
of the company's Darjeeling Teas and a
few Chinese and Japanese Green Teas.
They always take the name of the garden
in which they flourished, and are
delightfully refreshing.
h o w to make the perfect cup of tea
Betjeman & Barton take pride in every aspect
of delivering the finest tea leaves to their customers,
and want you to enjoy every cup. In
light of this they also educate customers on
how to improve their tea drinking experience
with a clear five step guide to making the perfect
cup of tea; ensuring that the tea not only
brews properly, but the flavour is released in
the best way possible; these steps are:
1. Warm the teapot with boiling water before
you begin. This will allow the tea to
release its scent more freely.
2. Put a teaspoonful of tea for each cup,
as well as an additional plus one for the
pot. This will ensure the tea is neither
too strong nor too weak.
3. Pour the water on to the tea when it is
just starting to simmer, adjusting the
temperature for the type of tea. Darker
teas need high temperatures to brew.
4. Leave the tea to brew, the length of time
will depend on the tea and the way you
like it, however there are guidelines for
the different types of tea:
- For semi-fermented teas,
leave for about 7 minutes.
- For whole leaf teas,
wait for about 4 minutes.
- For chopped leaf teas,
brew for about 3 minutes.
- For green teas, lightly brew
for about 2 minutes.
5. Finally pour the tea and gently stir before
serving.
The Sassy Wisecracker
AN INTERVIEW BY AISHAH AZALI
Never containing
herself to one role in
the entertainment
industry, Sarimah
Ibrahim has pursued
everything from acting
to singing to cracking
jokes on the MIX.FM
breakfast show. Busy as a
bee with her new single,
‘You On My Mind’ out
and a wedding to plan,
she took the time off to
tell us about her views
on love at first sight and
her ideal girls night out.
You work with MIX.
FM as a radio presenter,
what genre of music do
you most resonate with?
I have been with Mix.
FM two years now,
making it 18 years as an
entertainer, actress, singer
and announcer and I have
been lucky enough to be
exposed to every single
type of music possible! I
absolutely wholeheartedly
love R&B, hip hop and
dancing to 80’s and 90’s
music. I love to sing along
to musicals and Celine
Dion, Mariah Carey... but
my favourite songs of all
time are Ordinary World
and Bittersweet Symphony.
Do you believe in love
at first sight?
Yes I do, but I am a bigger
believer in love at first fight
[laughs]. After you really
get to know each other’s
good and bad points, and
still want to be together,
that’s love.
What is your ideal
girls’ night out?
Great Japanese food (with)
friends who share their lives
and secrets and who don’t
stick to their phones all
night [laughs]. Dancing or
a movie and laughter... a lot
of laughter.
If you could live
anywhere outside of
Malaysia, where would
you want to stay?
Where my mother is from,
and where I was born,
Ireland.
What is the sweetest
thing a partner has ever
done for you?
So many, but the most
important thing is what
my partner Jamie told me –
“Please be yourself, Sayang.
I love you for you, not your
public image. With all that
you believe are your flaws,
I love you no matter what.”
You’ve been in the
entertainment industry
all your life, what would
you be doing if you
weren’t on air?
I am returning to TV and
stage and following up with
another single release after
‘You On My Mind’. I think
it’s time for a Malay track!
If I wasn’t an entertainer
I would have continued
studying Psychology and
become a psychologist.
What are the little
things you like to do for
your loved ones when
you have the time?
Hugs. Kisses. Feed them.
Find out how they feel. See
how they are doing and what
they need. Listen to them
and ask lots of questions.
What colour signifies
your personality and why?
Yellow and black.
Optimistic but realistic,
excitable and hyper but also
dry sometimes [laughs].
Name a quality that
your significant other
has, that you wish you
had more of.
Patience. I want everything
faster, here and now already
[laughs].
If you could, what
advice would you give
your 21-year-old self
about love and life?
You cannot change
anyone. They will change
themselves. Don’t keep
giving to those who take
more than they give and
believe in yourself and the
idea that every day and
every year you will change
and become someone
different... and that is
actually a great thing. I
would also tell myself to not
let fear rule me and to know
that taking chances is what
makes life... life!
