There is only so much space in one’s head so whatever you choose to fill it with<br />

should be taken seriously. One of the oldest holocaust survivors by the name<br />

of Alice Herz-Sommer was once asked what the secret to life is. Her answer<br />

was as simple as it was enlightening. Essentially her explanation was this; she<br />

only focused on the beauty in the world. Despite the horrors she experienced<br />

during her 110 years on earth, she made the decision not to allow the negative<br />

experiences affect her life going forward, instead choosing to surround herself<br />

with what she considered to be filled with beauty and positivity.<br />

There is much to be said about the power of thought and equally, our ability to<br />

appreciate what we have, because beauty is really all around us and yet we take<br />

it for granted. In this issue we focus on beauty in its various guises. When you<br />

take a moment to read the Travel feature on page 78 which covers Jiuzhaigou in<br />

the Sichuan province, you will discover a very special destination that remains<br />

unknown to a great deal of people. And of course the Audi R8 test drive on page 88<br />

reminds us that beauty is as thrilling and dangerous as it can be feminine.<br />

In the LOOK this month we have recreated the glamorous street life; in<br />

our fashion shoot on page 106. This particular shoot pays homage to the well<br />

composed outfits we see in daily life.<br />

<strong>Tropicana</strong> have always taken beauty very seriously. The aesthetics of<br />

architecture and the interior design of every property play a huge role in the<br />

heart of every potential buyer and owner. In this issue turn to page 60 to see the<br />

epitome of this ideal through <strong>Tropicana</strong>’s newest masterpiece, The Residences.<br />

This month you will also read about Lancel in the Game Changer and find out<br />

about the brands history from its early days in Paris to its rejuvenation in recent<br />

years. Whenever we think of Paris we think fashion and fine dining which brings<br />

us back to this issues theme. Just about everyone sees the beauty in cooking and<br />

this is probably why there is a plethora of online critics (essentially anyone with a<br />

smart phone). In the cook book on page 126 we explore the art of grilling at the<br />

Mandarin Oriental. Look out for the Pavlova recipe that follows, it’s a real treat.<br />

The annoying thing about clichés is they are usually very true. It is particularly<br />

sad when you discover a truism for the first time and want to share it with everyone<br />

but don’t, for fear of sounding pedestrian. Without fear of judgment, we leave you<br />

with this little chestnut of wisdom that you may save for the next years fortune<br />

cookie; ‘Beauty is in the eye of the beholder’. We hope you enjoy this issue.<br />

‘Kintsugi’ is the name of the eighth album from<br />

alternative rock legends, Death Cab For Cutie. The<br />

as 17 year member and guitarist Chris Walla decided to<br />

part ways. It has been reported that Walla finished his<br />

part in recording the new album before his departure,<br />

and Ben Gibbard has said that the album is much more<br />

connected to their earlier works. If the first single from<br />

the album, ‘Black Sun’ is anything to go by the album<br />

stands to be one of the best of the year.<br />

The world and especially Asia is familiar with the warm,<br />

nature-inspired beauty that comes from Balinese design.<br />

More than just the arrangement of a space, Balinese<br />

design plays close attention to accessories that are mostly<br />

derived from natural materials. Craftsmanship is also a<br />

vital part of the Balinese aesthetic as no one can deny that<br />

Indonesians are known for their crafting skills, evident in<br />

this popular design style, we interviewed Jakarta-based<br />

interior designer Iwan Sastrawiguna on his approach<br />

to Balinese design and to share one of his stunning<br />

residential projects.<br />

When asked about what makes Balinese design so<br />

attractive to home owners, Iwan revealed that it may be<br />

due to the growth of Bali’s tourism industry. “This attracts<br />

many people to apply this Asian tropical architecture to<br />

their homes,” he explained further.<br />

“Our architecture is developed from the Balinese way<br />

of life ‐ spatial organization and communal living. A<br />

Balinese house usually has more than two bale (pavilions),<br />

so that we can have a courtyard in the middle. In this<br />

courtyard, we have good air circulation, spacious openair<br />

entertainment, a lush tropical garden, fish pond or<br />

reflecting pond,” adds Iwan.<br />

Designing with a variety of accessories and materials,<br />

sourced from the seemingly endless supply at his family’s<br />

furniture business, Iwan understands the power of<br />

accessorizing without over doing it. His favourite pieces<br />

include fountain waterspout stone statues, terracotta brick<br />

and Balinese natural stones.<br />

Even though Balinese design focuses more on traditionally<br />

designed furniture, it does not mean modern elements<br />

cannot be incorporated. Iwan knows this well as he<br />

continues to design homes that combine both traditional<br />

and modern Balinese elements.<br />

The best example of this work is the modern Balinese house<br />

he designed located in North Jakarta. The client, as Iwan<br />

explained, already had a passion for Balinese design. He was<br />

a collector of antique plates, wooden cabinets from central<br />

and east Java as well as a stunning antique gebyok which is a<br />

traditional Javanese wooden partition or an entrance door<br />

that is ornately hand carved to look three dimensional.<br />

Initially, the client wanted to go the traditional route but after<br />

much discussion, a brighter and more modern direction was<br />

taken. From day one, the client was keen to bring the gebyok<br />

from the old house into the new one. “I was challenged with<br />

the task to wisely allocate the gebyok in the new house so<br />

that it would fit in with the new design direction without<br />

overshadowing the Javanese carvings,” said Iwan.<br />

Wanting to breathe new life into the antique piece, Iwan<br />

tweaked the gebyok to make it more modern by removing<br />

the middle doors and replacing them with a mirror. “By<br />

replacing the doors with mirrors, the gebyok looks lighter,<br />

giving space for the carved wooden details to shine.”<br />

A stunning section of the house is the staircase, which<br />

Iwan sprinkled some of his magic onto. “The first time<br />

I visited the project site, I came across a very small and<br />

mundane staircase. I knew I had to make this (part of the<br />

house) interesting and create a piece of art.” The stairwell<br />

was transformed by adding bamboo railings and carved<br />

wooden art on the walls that run all the way up, allowing<br />

people to trail their fingers and feel the wood as they<br />

walk up the stairs.<br />

From the many interior design shows, there is bound to<br />

be a feature wall in a room. Iwan used one of his favourite<br />

accessories, terracotta tiles, to decorate the feature wall<br />

of the family room. The textured tiles cover the entire<br />

wall, making the room seem bigger than it is. “I added<br />

a skylight above the wall, so that the sunlight beautifully<br />

illuminates and highlights the terracotta tiles.<br />

When it came to the master bathroom, a semi-outdoor<br />

concept was applied, featuring a white terrazzo bath tub<br />

as the centre piece. On the occasion that it rains, rain<br />

water flows down the side wall into the blue-tiled pond<br />

surrounding the bath tub. This kind of water feature and<br />

extravagant tub give the bathroom a spa-like feel.<br />

To balance out the wood and stone, Iwan commissioned<br />

Indonesian-based jewellery designer Rinaldy A. Yunardi to<br />

design the crystal chandeliers and wall lightings in different<br />

materials for the whole house. The lights follow an antique<br />

style with the exception of the dining room chandelier<br />

which took a modern turn. “I wanted the chandelier<br />

crystals to look like rain drops and Rinaldy outdid himself<br />

with the piece,” explained Iwan enthusiastically.<br />

By the end, the house had become a serene Balinese villa<br />

with a modern twist, achieved brilliantly thanks to Iwan’s<br />

talents. It goes to show that Balinese, is a versatile type<br />

of interior design that is easily accessible to any home,<br />

with the correct vision and accessories. Create a piece of<br />

financial year through their digital and online platforms.<br />

From 6 March to 16 April, six lucky winners were awarded<br />

- The first coronation ceremony in Johor in 55 years, the<br />

coronation of Sultan Ibrahim Sultan Iskandar served to<br />

A NIGHT OF EXCELLENCE AT THE PRESTIGIOUS<br />

DEVELOPERS AWARD - In an effort to recognise<br />

Malaysia’s best developers and properties, Property Insight<br />

Malaysia held its very first inaugural award ceremony<br />

called the ‘Prestigious Developer Awards’. A lavish gala<br />

dinner was hosted at The Westin Kuala Lumpur, where<br />

the organising committee lead by K.K. Chua presented 45<br />

awards including ‘Best Leisure Living Development’ and<br />

I had the good fortune of arriving early to my interview<br />

this time, allowing me to get settled before Charles Lim<br />

arrived, precisely on time, to begin our discussion. Striding<br />

confidently across the room, I was able to observe his<br />

acknowledgement of everyone else in the room, before<br />

he greeted me with all the manners of a professional<br />

businessman, but with a sincerity that is rarely seen<br />

nowadays. Unlike other businessmen that I have met before,<br />

the formalities that Charles showed me appeared to be born<br />

out of a genuine respect for all around him, and not out of<br />

the manual of what is ‘acceptable business practice’, making<br />

it very difficult not to immediately like him.<br />

So… to start off - you’re a managing director at United<br />

Technologies – Building & Industrial Systems, what<br />

exactly does that entail? More over what does it mean<br />

to you?<br />

We’re in the business of developing technologies. More<br />

specifically, the technologies that make high-rise buildings<br />

possible. With the continuing urbanization in Malaysia<br />

and the growing middle class, the demand for highrise<br />

properties, retail establishments and educational<br />

institutions are on the increase. This in turn increases<br />

the demand for elevators, air-conditioning and fire and<br />

security solutions. At UTC, we design, manufacture,<br />

install, maintain and modernize the elevators, escalators,<br />

air-conditioning systems as well as fire and security<br />

systems. In a nutshell, all of the things that you would<br />

take for granted, that serve to make life safer and more<br />

comfortable, are what we specialise in.<br />

I never thought of it like that… I live on the 12th floor<br />

so the lift is really important to me! Have there been<br />

many advances in those technologies then?<br />

Oh the industry is constantly growing, we don’t wait for<br />

a need to arise for us to respond – so UTC is constantly<br />

looking to improve on the existing models and make them<br />

more efficient and more sustainable. We focus on the<br />

values that are important, and will make a real difference to<br />

people’s lives – now and in the future. It’s really important<br />

especially if we are going to keep looking to high rise<br />

properties as a solution to an increasing population and<br />

demand for accommodation.<br />

Can you give me any examples that you think have<br />

made a difference to the construction processes today?<br />

Well a big advancement recently is our OTIS Gen2<br />

elevator. It uses a reinforced belt instead of ropes. This<br />

makes the lifts safer, and requires smaller machines to<br />

drive the system - therefore greatly reducing energy<br />

consumption. Our carrier business also has the world’s<br />

most energy efficient chillers. Building technologies to<br />

be more sustainable is a big focus in our industry at the<br />

moment. With a growing population, countries have<br />

to start looking at reducing their energy consumption<br />

drastically. A lot of people think that energy saving bulbs<br />

will make a difference, but the reality is that in a high rise<br />

development, only about 10% of the energy is consumed<br />

by lighting, whereas the air conditioning and elevators<br />

which are used communally are actually consuming about<br />

60% of the overall energy used within the property.<br />

That’s quite a staggering statistic – so your company<br />

focuses on the value of efficiency mainly? Or are there<br />

other bigger focuses?<br />

We cover a lot actually. What I love about our company is<br />

that we operate based on high standards in values and ethics.<br />

It is a beautiful way to work, and it really helps me make<br />

the best decisions for the business, our customers and our<br />

shareholders. I feel more passionate about what I am doing,<br />

as I get to maintain my own standards. Our main focus is<br />

primarily on safety. We demand a safe work environment<br />

for our employees; we set high standards on our products,<br />

to ensure users of our products are safe. Customers are<br />

engaging us for modernization sometimes solely based over<br />

safety concerns. Another core value is our ethics. We pride<br />

ourselves for our compliance to high standards in ethical<br />

codes of conduct.<br />

Our values are embedded in our products and the<br />

way we work. As previously mentioned, we aim<br />

to make life safer, smarter and more efficient. This<br />

guides our innovations. An example of this being<br />

elevators using camera identification technology; so<br />

we can spot where there is a build-up of traffic and<br />

send lifts directly to them, to reduce waiting times.<br />

I feel that the key to work is to look into your core<br />

values, and focus on reflecting them throughout your<br />

work, you will always find the beauty in your work<br />

Sichuan Province of China. A secluded paradise of natural<br />

beauty, Jiuzhaigou is such an exquisite natural wonder that<br />

some of the reserves most scenic spots are considered to be<br />

holy by the local Tibetan and Qiang people, leading to the<br />

Located in the north of Sichuan Province, Jiuzhaigou County<br />

lies across the highest tableland in the world, between<br />

the Sichuan Basin and the Qinghai-Tibetan Plateau. The<br />

Jiuzhaigou Valley itself covers impressive altitudes ranging<br />

from 2,000 meters (6,561 feet) to about 4,300 meters (14,107<br />

feet), and is so removed from civilization that it takes 40<br />

minutes to fly from Chengdu to the airport and is still a 30<br />

minute ride from the airport.<br />

Boasting a large number of lake groups, waterfalls and a<br />

rich variety of endangered plants and fauna, Jiuzhaigou<br />

Valley was awarded the status of UNESCO Man and<br />

Biosphere Reserve in 1997, having earlier been recognised<br />

received a string of other titles including National Geological<br />

Park, an AAAA Class Scenic Spot in China, and a Green<br />

In previous years it had been difficult for visitors to get to the<br />

valley due to its isolated location, however with more tourists<br />

visiting the park every year, the Jiuzhaigou Ring Way was<br />

constructed to link the reserve with Chengdu and the Jiuhuang<br />

Airport. The park is open all year round, so you can take that<br />

much needed trip to paradise whenever you want.<br />

Eighth Wonder Of The World<br />

Jiuzhaigou’s luscious landscape can be attributed to a number of<br />

unique conditions, not found anywhere else in the world. For a<br />

start covering the highest tableland in the world has given the<br />

made up of three valleys, arranged in a Y shape. The Rize and<br />

There are prolific brand names that we immediately associate<br />

with quality and style. We usually recognise these brands<br />

through their iconic designs, that are ubiquitous in their<br />

popularity as every man, woman and child endeavors to make<br />

their accessories a permanent feature of their daily uniform.<br />

But like with so many things that become popular in fashion,<br />

there is always the risk of it going too far.<br />

The tipping point then is when a brand becomes ‘common’.<br />

Burberry has just about managed to reinvent itself and<br />

distance itself from the classic beige check found on the<br />

football terraces in the UK. I personally cringe whenever I<br />

recall the time I almost bought a Burberry baseball cap (before<br />

they became famous). Thank God, I didn’t get one and join<br />

the legion of ‘chavs’ in tracksuits that populated every city<br />

in the UK, back in 2003. Luckily for Burberry, Christopher<br />

Bailey resisted any temptation to make negative comments<br />

about the cultural phenomenon, deciding instead to turn it<br />

into a positive by stating; “I’m proud we had such a democratic<br />

appeal.” The same cannot be said of the Louis Roederer MD,<br />

Frédéric Rouzaud who made disparaging comments about<br />

the Crystal Champagne brands popularity with hip hop artists<br />

which resulted in a boycott led by Jay Z.<br />

To some degree, many of the most beautiful brands in<br />

the world have suffered over saturation. It’s difficult to<br />

hit business targets and remain exclusive. The first aim<br />

contradicts the other. And whilst we may fall in love with<br />

the top brands, no one wants to simply become part of the<br />

herd, unless we are talking about teenagers who simply<br />

want to fit in. As adults we continually strive to indulge in<br />

our wants while remaining individuals.<br />

The point is that anyone, within reason, can buy the big name<br />

brands. Doing this requires no skill or understanding per se.<br />

On the other hand, wearing quality brands that are not as<br />

mainstream always earns points amongst the style devotees.<br />

Lancel is a good example of one such brand that carries a<br />

wealth of history. That is 140 years of history which many<br />

Parisians hold dear to their hearts. The company’s founder,<br />

Angèle Lancel, was a woman of bold vision. Her initial shop<br />

was essentially a concept store, established in 1876, that sold<br />

accessories for the cosmopolitan clientele who were looking<br />

for unusual and luxurious gifts, and personal items made by<br />

expert craftsmen and created using precious materials.<br />

In 1901 Angèle was succeeded by her son Albert, who<br />

maintained the brands quest for innovation and a love for<br />

everything modern. Imagine at the turn of the century when<br />

an invention as amazing as a portable radio was released in<br />

limited edition to the market. The Lancel boutique was<br />

considered the place to visit when one was in need of such<br />

creations. 28 years later Lancel relocated to their legendary<br />

home on Place de L’Opera boasting an impressive client list<br />

that included icons like Josephine Baker, Jean Renoir and<br />

Edith Piaf. The store was a revolutionary concept for the time.<br />

The House saw great success in the 80s and 90s with items like<br />

the Palmyre which were red travel bags that came in to the<br />

public sphere through a legendary campaign, that captivated<br />

everyone’s attention with beautiful visuals depicting models<br />

who were considered inspiration for the first career woman.<br />

Another iconic design that made the brand famous was the<br />

Bucket Bag, originally designed in the 1930s. This particular<br />

design came back into fashion with a successful relaunch in<br />

2012, proving that if you live long enough, you will see a<br />

revolution take place in most areas of life whether it’s the<br />

economy and politics or designs and styles that come in and<br />

out of fashion. You can see this cultural phenomenon today<br />

in the popular, if not extreme, ‘short back and sides’ hair<br />

cut that young men have adopted from London to Manila.<br />

Denim jeans that even David Hasselhoff would struggle to<br />

wear are now common place.<br />

audience hungry for timeless quality. The brands influence<br />

did not end here. There were numerous occasions when<br />

Lancel made a move that would soon become a historic<br />

moment in the fashion industry. There was the time when<br />

they paid homage surrealist painter Salvador Dali, by<br />

launching the Daligramme collection which emblazoned the<br />

artists eight character alphabet on their leather handbags.<br />

Bold moves such as these represent the often futuristic<br />

direction of the brand that has earned its place in the hearts<br />

of chic women all over the world.<br />

Unique designs like Charlie, which have since become iconic,<br />

and Envelope, a line of luxury bags and totes are becoming<br />

more popular with those in the know but not to the extent<br />

that they are at risk of becoming common, and it is perhaps<br />

this considered approach that is the secret to their success.<br />

Whilst this may be an unusual parallel to draw, there is a<br />

difference when it comes to the comeback of a brand like<br />

Lancel. What I am talking about is the difference between<br />

fashion and style, because the latter is eternal where as<br />

fashions like the current obsession with skinny jeans will<br />

come and go. The bucket bag was always going to be a<br />

timeless classic that would endure the ages. Lancel simply<br />

waited for the right time to reintroduce their brand to an<br />

Audi has always been known as a company with more reserved taste,<br />

opting to put function before form, priding themselves on their technology.<br />

quattro (note the lower case) is a clear example of this: it’s their proprietary<br />

all-wheel drive system that offers immense grip and stability in a variety of<br />

situations, from wet roads to snow and mud. That focus on engineering is<br />

what gives rise to their styling, with sharp lines and creases and a distinct<br />

fascia that is carbon copied across nearly all of their models. It’s a testament<br />

to efficiency and a lack of waste, with no room for frills or frivolity.<br />

The R8 was originally developed as a halo model for Audi,<br />

perhaps in the hopes of altering their “old luxury” image,<br />

being known more for their plush luxury sedans. In true<br />

Audi fashion, there was plenty of part sharing that was<br />

immediately obvious, from the chassis and running gear, to<br />

switchgear. In a sense the R8 never truly felt special, as it<br />

had an interior that was starkly similar to most Audi models<br />

available at the time.<br />

This generation sees a stronger effort to distinguish the<br />

R8 from its siblings, with a cockpit that is far more driver<br />

centric. In some cases it may be a little too driver centric: the<br />

centrally mounted Multi Media Interface screen is no longer<br />

present with the R8, offering passengers little to do but hang<br />

on for dear life. In its place are three toggle switches that<br />

seem somewhat fitting for a sharp, speed focused machine.<br />

Material choices tend towards the lighter side of sombre, in<br />

line with the pastel paintwork choices on offer from Audi.<br />

Some interior design choices are clearly inspired by other<br />

supercars on the market. Take the steering wheel, for<br />

example, which now sports a range of buttons and controls<br />

that were seemingly devoid in the R8 of old. Audi calls each<br />

cluster of buttons a “satellite”, each designed to control a<br />

specific function. If that seems oddly familiar, Ferrari has<br />

been relocating more and more controls to the wheel over<br />

the past few years - although the addition of turn signal<br />

buttons may have been a bit overboard.<br />

But perhaps the most impressive inclusion for the R8 is<br />

the new full digital display, which allows Audi a large range<br />

of flexibility when it comes to designing which information<br />

is more important to show. This is effectively Porsche’s<br />

small LCD cluster inserts taken to the only meaningful<br />

conclusion, the same route that Lexus took with their LF-<br />

A. The gorgeous display allows navigation to be shown on<br />

the cluster as well, among other kinds of information, along<br />

with the standard tachometer and speedometer.<br />

In terms of running gear, the V8 engines have been<br />

entirely omitted from this generation of R8. On offer is<br />

a V10 engine in two different states of tune- the 5.2 litre<br />

capacity produces 540 hp and 540 Nm in the regular V10,<br />

while it produces 610 hp and 560 Nm in the V10 plus. In<br />

both cases, there is only a 7-speed dual-clutch S tronic<br />

transmission - no manual option available, to the dismay<br />

of purists. quattro is present and always active, as expected<br />

of an Audi, although it will be interesting to see how Audi<br />

has tweaked the system for a more neutral handling balance.<br />

Let’s talk about the chassis. Beauty is not immediately<br />

thought of when it comes to the underpinnings of a car, but<br />

spare a thought for the engineers who work round the clock<br />

to produce something as stable and competent as the R8.<br />

Hitting a dry weight of just under 1500 kg is not easy for the<br />

modern supercar, packed with safety equipment designed to<br />

take care of you in a high speed crash. The space frame, or<br />

the backbone of the car, sports large amounts of aluminium<br />

and carbon fibre reinforced polymer, both of which are<br />

considered exotic materials in the automotive industry. The<br />

result is a 15% weight reduction from the outgoing model,<br />

while increasing torsional rigidity by a good 40%. That’s the<br />

beauty of Audi’s engineering.<br />

Opinions can be very split on the R8’s exterior design,<br />

which are based heavily on the styling cues from Audi’s<br />

quattro concept car a few years ago. The influence from<br />

this concept car has been applied to the TT as well, with a<br />

sharper and smaller front grill. There are fewer curves and<br />

gentle undulations, trading the muscular look for something<br />

sharper and well cut. Overall proportions are roughly<br />

the same, with a wide track and fenders to emphasise<br />

performance and stability, and a sleek roof with a long rear<br />

end for that classic mid-engine supercar look. The iconic<br />

side blades of the previous model make a return, although<br />

the design has been met with controversy as they are far<br />

more pronounced in this iteration of the R8. Trapezoidal<br />

exhaust pipes adorn the rear end, falling in line with the<br />

“all-edges” design of this new R8. The V10 plus receives<br />

a more aggressive spoiler on the rear, helping to increase<br />

downforce and stabilise airflow at higher speeds.<br />

These styling changes have lent a more sophisticated<br />

look to the standard R8, which has always suffered from<br />

being slightly too plain. With Ferrari’s transition to forced<br />

induction with their 488 GTB, expect these early secondgen<br />

R8s to be the last of the naturally aspirated supercars. It<br />

may have begun life as a budget-friendly supercar, but the<br />

R8 has proven it can go toe-to-toe with its rivals, and this<br />

second generation should definitely raise the bar.<br />

possibly want, it is almost difficult to know where to start.<br />

For golfers, playing golf at Pebble Beach should be the top<br />

Additionally you have to tour the 17-Mile Drive, an incredible<br />

day’s worth of sightseeing for the keen photographer,<br />

Beach. Each has their selling points. Both have pools and tennis<br />

clubs for guests to use and shops to peruse. Many rooms<br />

Lifestyle and nutrition have always been recognised as important<br />

factors associated with skin health although the<br />

degree of its impact remains to be investigated. For example,<br />

the causes of wrinkles, dryness and dehydrated skin are<br />

closely related to our lifestyle habits such as smoking, too<br />

much exposure to the sun, excessive alcohol intake, a poor<br />

diet, lack of sleep and stress.<br />

Perhaps one of the most well accepted theories of aging is<br />

the free radical theory, which states that organisms age, because<br />

cells accumulate free radical damage over time. Simply<br />

put, free radicals cause damage to our body cells, and<br />

that includes our skin. Amongst the sources of free radicals<br />

are UV light and tobacco. Under normal circumstances,<br />

the body can usually keep these free radicals under control.<br />

However, a diet that lacks antioxidant vitamins may deter<br />

the body’s ability to ‘neutralise’ free radicals. In this article,<br />

we explore some of the nutrients that are beneficial for<br />

skin health and anti-ageing.<br />

BETA CAROTENE<br />

Beta carotene is one of a group of red, orange and yellow<br />

pigments called carotenoids, which give the yellow and orange<br />

fruits and vegetables their colours. Beta carotene has<br />

een shown to offer protection against sunburn and skin aging.<br />

Vegetables contain the highest amount of beta carotene,<br />

but carotene can also be found in fruits as well.<br />

VITAMIN E<br />

Vitamin E is a powerful antioxidant that plays an essential<br />

role in protecting cell membranes from free-radical<br />

damage. Once Vitamin E ‘neutralises’ free radicals, they<br />

become deactivated and need the help of Vitamin C for it<br />

to be regenerated in order to become useful again. Therefore,<br />

vitamin E and C appear to have a synergistic effect.<br />

Plant foods high in fat, particularly polyunsaturated fat,<br />

are the best sources of Vitamin E. Wheat germ oil is the<br />

richest source. Other sources include sunflower oil, sunflower<br />

seeds and almonds.<br />

VITAMIN C<br />

Vitamin C supports the antioxidant function of Vitamin<br />

E by recycling it after use. Administration of Vitamin C<br />

and Vitamin E have been studied as a strategy to decrease<br />

UV-induced skin damage. Vitamin C may also keep your<br />

skin looking younger due to its role in the synthesis of collagen,<br />

a key structural protein that gives your skin firmness<br />

and elasticity. Another name for this nutrient is ascorbic<br />

acid, which gives rise to the citrus flavour of fruits that<br />

contain the vitamin.<br />

ESSENTIAL FATTY ACIDS<br />

Essential fatty acids can be found in the form of Omega 3 and<br />

Omega 6. They are poly-unsaturated fats which cannot be<br />

produced by your body and need to be obtained from your<br />

diet. The skin has 3 layers: epidermis, dermis and a subcutaneous<br />

fat layer. Linoleic acid, under the family of Omega 6, is<br />

found in the epidermis and correlates with the permeability<br />

barrier function of the skin. This will influence the skin’s<br />

ability to hold water, ultimately producing a soft and supple<br />

skin. For that reason, people who are on an extremely low<br />

fat diet will also exhibit skin problems such as dry, cracked<br />

and scaly skin due to high water loss from the skin. Sources<br />

of Omega 6 include; vegetable oils - corn, safflower, soybean,<br />

sesame, sunflower - nuts and seeds.<br />

However, consuming too much Omega 6 tends to promote<br />

inflammation, whereas Omega 3 counteracts the inflammatory<br />

effects of Omega 6. Therefore, a ‘good skin’ diet contains<br />

a balance of Omega 3 and Omega 6 fatty acids. Omega<br />

3’s anti-inflammatory effects may also help alleviate certain<br />

skin conditions such as eczema. Sources of Omega 3 include<br />

oily fishes - salmon, tuna, mackerel, trout and sardines -<br />

canola oil, flax seeds, chia seed and walnuts. A fish based diet<br />

keeps both your heart and skin healthy! The American Heart<br />

Association recommends eating fish (particularly those rich<br />

in Omega 3) at least two times a week. Each serving should<br />

be considered as 3.5 ounces (100g) of cooked fish.<br />

CONCLUSION<br />

Having a great complexion involves nurturing your skin<br />

from the inside out. Topical application of moisturizers and<br />

sunscreens minimizes the external UV damage on the skin<br />

while following healthy eating guidelines, especially one that<br />

is characterized by a variety of fruits and vegetables, should<br />

provide all the vital nutrients required to help protect and<br />

repair our skin from being damaged.<br />

There is something about the setting at<br />

Mandarin Grill that is rather soothing.<br />

The interior is spacious, elegant, and<br />

boasts high ceilings, large windows<br />

with rays of sunlight shining through.<br />

Admiring my surroundings, I walk<br />

in and am greeted by Chef Benjamin<br />

Halat himself, the Chef de Cuisine of<br />

Mandarin Grill at Mandarin Oriental<br />

Kuala Lumpur.<br />

The German chef first found himself<br />

in the kitchen by surprise at the young<br />

age of 16, when he was helping out his<br />

grandmother’s friends host a party at a<br />

beer garden in Munich.<br />

“I did everything from peeling<br />

potatoes, to making bread and to<br />

waiting tables”, said Chef Benjamin.<br />

Upon finding his experience in the<br />

kitchen rather enjoyable, he decided to<br />

spend a week of his school holidays at a<br />

one star Michelin restaurant. This was the<br />

beginning of Chef Benjamin’s journey.<br />

“This was when I really grew up, this<br />

experience really opened up my eyes.<br />

It was the first time I was dealing with<br />

foie gras and working with alcohol.<br />

I discovered the many wonders of<br />

cooking and I felt like it was the right<br />

thing for me to do”, explained Chef<br />

Benjamin.<br />

Prior to his move to Asia, Chef<br />

Benjamin was Sous Chef for Mandarin<br />

Oriental, Munich where he worked at<br />

Mark’s, a one star Michelin restaurant.<br />

Soon enough, I saw Chef Benjamin<br />

bringing out a rather interesting dish;<br />

it was the Spring Vegetable Garden. A<br />

platter of colourful delights was placed<br />

before me. I studied the dish carefully<br />

and it was indeed a very delicate one.<br />

I did not know where to start, the<br />

orange, pink and green elements were<br />

very pleasing to my eyes that I felt<br />

like it was almost too pretty to eat.<br />

After much admiration, I finally gave<br />

in and tasted the dish. The St. Maure<br />

cheese pralines were a delight, smooth,<br />

creamy and the little vegetables<br />

accompanied them perfectly.<br />

Shortly after, the main course was<br />

served. The Hay Smoked Wagyu<br />

Ribeye has always been a favourite<br />

at Mandarin Grill and I could not<br />

find a reason to disagree. I watched<br />

in awe as the steak was placed on a<br />

mini skillet and torched before me at<br />

my table. This process is definitely an<br />

entertaining one for guests as they get<br />

to see their meal cooked. Soon after the<br />

steak was cut up neatly and plated with<br />

vegetable parisienne, potato fondant,<br />

comte cheese soufflé, truffle jus and<br />

horseradish. The ribeye was divine, it<br />

had just the right amount of marbling<br />

and I felt like every bite melted in my<br />

mouth. The comte cheese soufflé was<br />

not far behind; it was light, fluffy with<br />

a hint of cheesy flavour to it.<br />

When it was finally time for dessert,<br />

I did not know if I could actually<br />

stomach anymore food after indulging<br />

on the previous dishes. However when<br />

Chef Benjamin presented the Duet of<br />

Valrhona Chocolate, I simply could<br />

not resist. It consisted of dark and milk<br />

chocolate mousse, hot chocolate sauce,<br />

feuilletine and seasonal berries. The<br />

hot chocolate sauce is served separately<br />

and poured over the cake to create a<br />

luxurious warm texture. The dessert is<br />

definitely worth trying, no matter how<br />

full you are.<br />

I noticed how intense and focused<br />

Chef Benjamin can be when it came to<br />

cooking. His eyes never left the dishes<br />

during preparation and his techniques<br />

and plating were beyond precise. I<br />

proceeded to ask him about his life<br />

outside the kitchen.<br />

“It’s not too often that I’m not<br />

cooking! But I enjoy travelling and<br />

photography. Especially now that<br />

I’m living in Malaysia, travelling to<br />

other parts of Asia is very accessible.<br />

I have been to Vietnam and Thailand<br />

and today I’m off to Bali!” said Chef<br />

Benjamin with a smile.<br />

I was more than impressed with<br />

my experience at Mandarin Grill; the<br />

restaurant combines high quality,<br />

delicious food with the most detailed<br />

and beautiful presentations. When it<br />

comes to cooking, Chef Benjamin is<br />

more than meticulous, ensuring every<br />

detail is in place and that you will only be<br />

served the best. At Mandarin Grill, not<br />

only will your taste buds be delighted,<br />

but your eyes are in for a feast too.<br />

The method<br />

A stunning centrepiece for any party, fill with your favourite<br />

fruit; raspberries, kiwi, mango or passion fruit to add colour<br />

and delicious healthy flavours.<br />

PAVLOVA<br />

RECIPE<br />

Ingredients<br />

• For the Base:<br />

• 6 Egg Whites (free range)<br />

• Pinch of Salt<br />

• 350g Caster Sugar<br />

• 2tsp Corn Flour<br />

• 1tsp White Wine Vinegar<br />

For the Filling:<br />

• 600ml Double Cream (whipped until soft peaks form<br />

when the whisk is removed)<br />

• 250g Strawberries<br />

• 250g Blueberries<br />

• Crystallised Flowers (see Top Tip at bottom)<br />

• Icing Sugar (for dusting)<br />

Preparation Method<br />

1. Preheat the oven to 180C/350F/Gas 4.<br />

2. Draw two 20cm/8in circles and a 15cm/6in circle<br />

on greaseproof paper and place onto three separate<br />

baking trays.<br />

3. Whisk the egg whites and salt in a large clean dry bowl<br />

until they form soft peaks when the whisk is removed.<br />

Slowly whisk in the sugar and continue to whisk until<br />

the egg whites are stiff and glossy. Whisk in the corn<br />

flour and vinegar.<br />

4. Spoon one-third of the mixture onto one of the<br />

20cm/8in circles. Spoon another third onto the other<br />

20cm/8in circle.<br />

5. Spoon half of the remaining mixture onto the<br />

15cm/6in circle. Pipe the remaining meringue around<br />

the edge of the 15cm/6in circle in a crown shape.<br />

6. Reduce the oven to 140C/275F/Gas 1 and bake the<br />

meringues for 1-1¼ hours, or until the meringue is<br />

crisp outside, but feels soft yet set inside. (If you notice<br />

that the different meringues are not cooking evenly,<br />

swap the shelves.) Switch off the oven and leave the<br />

meringue to cool down in the oven.<br />

7. To assemble the Pavlova, carefully peel the<br />

greaseproof paper off the bottom of the meringues.<br />

Place a 20cm/8in meringue onto a large, flat serving<br />

plate. Spread one-third of the double cream onto the<br />

meringue and top with some of the strawberries and<br />

blueberries. Top with the other 20cm/8in meringue.<br />

Spread another third of the cream onto the meringue<br />

and top with more strawberries and blueberries. Top<br />

with the 15cm/6in meringue and fill with the remaining<br />

cream, strawberries and blueberries. Decorate with the<br />

crystallised flowers and dust with icing.<br />

Top Tip<br />

To make your own crystallised flowers: arrange rose petals,<br />

primroses and violets on a cooling rack. Lightly whisk an<br />

egg white in a bowl and carefully brush it over the flower<br />

petals. Sprinkle over caster sugar, ensuring the sugar<br />

sticks to the egg white. Set aside to dry overnight, or until<br />

completely dry and firm.<br />

• 8 oz. Orange Juice<br />

• 4 oz. Water<br />

• ½ cup Banana & Strawberries<br />

• ½ inch Ginger Slice<br />

• 1 Garlic Clove (small)<br />

• 1 tbsp Flax Oil<br />

• 1 tbsp Lecithin Granules<br />

• 1 tbsp Lemon Juice<br />

(freshly squeezed)<br />

• 1 tbsp Spirulina Powder<br />

Method:<br />

1. Pour all ingredients into a blender<br />

and blend until smooth.<br />

2. Portion servings and serve in<br />

a glass with ice.<br />

THE GREEN DETOX<br />

This vegetable detox drink is<br />

made up primarily of green<br />

vegetables, providing an<br />

effective natural body cleanse<br />

of the digestive system.<br />

Ingredients:<br />

• 2 cups Hot Water<br />

• 2 cups Cold Water<br />

• ½ tsp Turmeric<br />

• ½ tsp Powdered Ginger<br />

• 1 tsp Raw Honey<br />

• Pinch of Cayenne<br />

• Pinch of Black Pepper<br />

(freshly cracked)<br />

• Juice of ½ a Organic Lemon<br />

(small)<br />

Method:<br />

1. Bring the two cups of hot water<br />

to the boil.<br />

2. Mix the remaining ingredients<br />

in a large mug.<br />

3. Add boiling water, stir<br />

thoroughly and enjoy.<br />

Pris Ng has a knack for<br />

seeing beauty in the most<br />

unconventional of places.<br />

company paul + pris, we<br />

talk to her about her<br />

approach on beautifying<br />

spaces and her way of<br />

relaxing on a weekend.<br />

Have you always<br />

dreamed of being an<br />

interior designer since<br />

you were young or was<br />

it something that you<br />

discovered later on in<br />

your life?<br />

I have always been in love<br />

with art and design, but<br />

it was a journey of self<br />

discovery from when I<br />

was in high school. I like<br />

to create beautiful things<br />

for space and environment<br />

and as for now, I would<br />

like to continue to discover<br />

how design could change<br />

a person’s behaviour and<br />

lifestyle through their<br />

surroundings.<br />

If you could travel<br />

anywhere in the world<br />

right now, where would<br />

you go?<br />

Iceland<br />

Do you prefer to design<br />

for residential or<br />

commercial projects?<br />

Both are very different in<br />

terms of project execution<br />

and durations. But I would<br />

go for commercials simply<br />

for the slight freedom<br />

of design exploration<br />

comparing to private<br />

residential whereby design<br />

is explored based on<br />

client’s preferences and<br />

characteristics.<br />

What shopping item do<br />

you currently have your<br />

eye on?<br />

I am currently in love with<br />

this London fashion brand<br />

called Self Potrait, a label<br />

founded by this designer<br />

called Han Chong. It’s a<br />

beautiful lace dress that I<br />

can’t take my eyes off.<br />

When designing the<br />

interior of a home, what<br />

is the first element that<br />

you tackle?<br />

Space; it’s important to know<br />

how scale and proportion<br />

work together with the<br />

environment. A good house<br />

design always exudes a good<br />

flow of spacing as well as<br />

creating the right mood and<br />

ambience.<br />

What is your ideal<br />

Sunday afternoon?<br />

I could be practising<br />

and composing floral<br />

arrangements while listening<br />

to Jessie Ware or simply<br />

spending quality time with<br />

people that matter to me<br />

(smiles).<br />

What reminds you of<br />

your childhood?<br />

Barbie dolls.<br />

What are the types of<br />

style that you see are<br />

making their way into<br />

Malaysian homes?<br />

Anything Scandinavian<br />

influenced; simple and rather<br />

softer in shapes and forms,<br />

hint of mute and pastel<br />

like colours with natural<br />

materials.<br />

What’s in store for the<br />

future of paul + pris?<br />

Once in a while, there are<br />

people who will drop us a<br />

line to ask about custom<br />

pieces that we designed for<br />

our clients and whether they<br />

can purchase it. Naturally,<br />

I would want paul+pris to<br />

explore product designs in<br />

the future and it would be<br />

great if we could have an<br />

extension of product lines,<br />

that we can share with<br />

everyone and they could<br />

have incorporated into their<br />

homes.<br />

If you could only use two<br />

colours to design a room,<br />

what would those two<br />

colours be?<br />

You can never go wrong<br />

with the classics; black<br />

and white.<br />
