Roxas V olume X IX Is sue 11 Page 9 Patola, MES best Veggie Patola has two species: Luffa aegyptiaca (smooth or spongy) and Luffa acutangula/ Luffa cynlindrica (ridged). Both species are planted now at MES Gulayan sa Paaralan. Both species are best eaten when they are bright green, glossy firm, and small. When prepared as raw salad, both have a mild cucumber-like flavor. The ridged patola, however, is tastier than the spongy variety. Both species are also great for stir fry dishes, soups, and sauces like curry because they have the capacity to absorb the flavor of the dish. Patola may be prepared with either crushed dried peanuts or with beans, grated into omelette, flittered, or steamed. If prepared patola is not going to be cooked right away, add a little lemon juice to preserve it. Patola is a good source of insoluble fiber which absorbs large amounts of water. As a natural laxative, it helps prevent constipation by increasing stool bulk. This allows the stool to pass more readily through the colon; even when problems in the colon are present like irritable bowel syndrome. Fiber rich diet also helps to lower blood pressure.
