1 tablespoon fresh ginger root<br />

LUNCH<br />
ARUGULA & SNOW PEAS<br />
SERVES 1<br />
2 handfuls of arugula or mixed greens<br />
1 cup snow peas<br />
¼ cup celery, chopped<br />
1 cup cabbage, shredded<br />
Juice from one lemon<br />
1 tablespoon extra virgin olive oil<br />
Sunflower seeds<br />
Place arugula, snow peas, celery and cabbage in a large bowl. Add lemon<br />
juice and oil to the bowl and toss. Top salad with sunflower seeds and serve.<br />
Top with choice of protein.<br />
SNACK<br />
1 apple and 1 tablespoon almond butter<br />
DINNER<br />
SAUTÉED COLLARD GREENS WITH CREAMY AVOCADO<br />
Serves 2<br />
1 bunch collard greens, stems removed and leaves sliced into strips<br />
1 garlic clove, thinly sliced<br />
2 tablespoons Olive Oil<br />
1 lemon, juiced<br />
1 avocado, mashed<br />
Salt and pepper<br />
Heat the olive oil in a large pan over medium heat. Add the thinly sliced garlic;<br />
sauté for 1 minute. Add the collard greens to the pan along with 2 tablespoons<br />
of water. Cook, and stir often for 2-3 minutes. Remove from heat and place in a<br />
serving dish, add avocado and lemon juice and mix until evenly coated. Season<br />
with salt and pepper and serve.<br />
Top with choice of protein.<br />
BEFORE BED<br />
Drink chamomile tea with 1 teaspoon raw honey<br />
