Kentucky
Hot Brown
OTTO’S,
MAINSTRASSE VILLAGE,
COVINGTON
Otto’s chef and owner Paul Weckman, a Kentucky native, says putting a Hot
Brown on his menu was a no-brainer. Kentucky’s favorite sandwich, which traces
its backstory to Louisville’s Brown Hotel, isn’t fussy: a slice of white toast topped
with roast turkey, cheese sauce, and crispy bacon. But Weckman says it’s a dish
that many restaurants mess up. “When we put it on the menu, our objective was
to do it right,” he says. “So many people had gone to a nacho cheese–style sauce.
We didn’t feel good about that. We use a cream-based white cheese sauce that we
make in house, and we top it with a fried green tomato, another of our Southern
calling cards, instead of a red sliced tomato.”
