Otto’s chef and owner Paul Weckman, a Kentucky native, says putting a Hot<br />

Brown on his menu was a no-brainer. Kentucky’s favorite sandwich, which traces<br />

its backstory to Louisville’s Brown Hotel, isn’t fussy: a slice of white toast topped<br />

with roast turkey, cheese sauce, and crispy bacon. But Weckman says it’s a dish<br />

that many restaurants mess up. “When we put it on the menu, our objective was<br />

to do it right,” he says. “So many people had gone to a nacho cheese–style sauce.<br />

We didn’t feel good about that. We use a cream-based white cheese sauce that we<br />

make in house, and we top it with a fried green tomato, another of our Southern<br />

calling cards, instead of a red sliced tomato.”<br />
