Describe your typical day on the job.<br />

As soon as I walk through the classroom door, I am welcomed by all<br />

of the children giving me hugs and screaming, “Mr. Eric!” I can barely<br />

walk because the kids are climbing all over me before I can even get<br />

the day started. Throughout the day, I provide kids with a variety<br />

of learning activities. They love to socialize and tell me about their<br />

weekend/week with their family.<br />

Since joining FSS, what has been your most rewarding experience?<br />

Being able to make a difference in the lives of children. I love seeing<br />

the children grow and learn each and every day. It’s a wonderful feeling<br />

knowing that the children and parents appreciate all that I do. Even<br />

though there are times when the job can be stressful, seeing the kids<br />

smiling faces makes my day. They also say and do the most hilarious<br />

things, so you can’t be stressed out for too long.<br />

Autumn is here and with it comes a variety of delicious fall foods. From season favorites such as sweet<br />

potatoes and fresh fruits to newly harvested rice and in-season fish; there is something for everybody.<br />

Check out Chef Hannah’s top five fall foods below and learn where to buy them as well as how to use them.<br />

1. New Rice (Shinmai)<br />

That’s right, the harvest has happened in Japan and rice can not get<br />

any more fresh. Get it now until the end of the year for the fluffiest,<br />

tastiest rice you will ever have in your life. Look for Shinmai ( 新 米 )<br />

on the label or display in the grocery store. Fun Fact: First harvest<br />

rice is kept for sale in Japan only. Exported rice are the remaining<br />

year’s crops, making shinmai extra special.<br />

2. Yakiimo<br />

These hearty, roasted sweet potato treats can be found hot off<br />

the coals in some grocer’s produce departments as well as at<br />

street vendors. Look for the softest potatoes that have “burnt<br />

caramel” looking spots on them. You can also make these at<br />

home, but with the cost of sweet potatoes being the same as<br />

their roasted version, why not save yourself some time, right?<br />

3. Matsutake Mushrooms<br />

These will cost more than your average mushroom varieties in<br />

Japan, but they are worth it! With more umami (savory flavor) than<br />

any other Japanese mushroom, use sparingly as a topping for steak,<br />

soups, or that delicious new rice you bought. Look for Matsutake<br />

Mushrooms on the label and the higher price to distinguish them.<br />

4. Persimmons<br />

Possibly the sweetest fruit on the planet when they are at their<br />

ripest, Chef Hannah prefers the Fuyu variety. They are the squat<br />

version versus the acorn shaped Hachiya counterpart. Look for<br />

bright orange color and some give to pressure (like how a ripe<br />

avocado feels). You can eat the skin if you like or peel it with a<br />

vegetable peeler.<br />

5. Pacific Saury (Sanma)<br />

Sanma is the symbolic fish of autumn in Japan. Its pointy head even<br />

resembles a Japanese sword and literally translates as, “autumn<br />

knife fish.” As with purchasing any fish, look for bright, clear eyes<br />

and no funky smells. Purchase these buttery yet intensely flavored<br />

fish the day of cooking. They are also usually small, so plan on one<br />

per person for your meal. Here’s how to do it:<br />

Grilled Pacific Saury<br />

• 1 Whole Pacific Saury/Person<br />

• 1-3 Tablespoons Olive Oil<br />

• 1 Teaspoon Sea Salt/Fish<br />

• Lemon wedges, fresh herbs,<br />

or soy sauce (optional)<br />

Instructions: Preheat your grill to medium high heat.<br />

If using charcoal, keep a hot side of coals and cooler side<br />

with less coals since you cannot easily adjust the heat. This<br />

will allow you to “turn down the heat” by simply moving<br />

items over. You can also cook saury on your stovetop<br />

in a cast iron pan on medium heat. Place the fish on its<br />

side on your cutting board and insert a sharp knife into<br />

the stomach side from top to bottom. Remove the gut and<br />

wash under cold water. Saury is usually eaten with the<br />

intestine, but it’s a little bitter for me so I remove it. Blot the<br />

entire fish dry (inside and out) with paper towels. This will<br />

allow the salt to adhere. Line a grill pan with foil and wipe<br />

it with a little olive oil to prevent sticking. Place the fish<br />

onto the foil and sprinkle both sides as well as the interior<br />

generously with salt just before grilling. Don’t salt too far<br />

ahead. It will draw moisture out of the fish. Grill until the<br />

surface is blistered, brown and crispy, about five to eight<br />

minutes. Flip carefully, making sure the fish skin is intact,<br />

then grill the other side until the cavity of the fish is cooked<br />

through (it should be white), about three minutes. Serve<br />

with lemon wedges or your favorite Japanese soy sauce or<br />

dipping sauce and maybe that new rice you bought.<br />

*Optional: You may also stuff the cavity with lemon<br />

slices and fresh herbs before cooking for a less traditional,<br />

but delicious alternative.<br />

efficiently navigate their kitchen. These classes<br />

feature a wide variety of topics; from learning<br />

about different types of chocolate and how<br />

best to use a whole chicken to picking fresh<br />

Cultural Connection


Hiroshima is a historic site in southern Japan which highlights<br />

two UNESCO World Heritage sites. Every year, millions of<br />

people travel from all over the world to explore the famously<br />

reconstructed city. If you are a history enthusiast, then this is a<br />

city that you have to check off your bucket list while in Japan.<br />

Although Hiroshima boasts a rich history in the years<br />

since it was founded in 1589, the city is famously recognized<br />

internationally as one of the atomic bombing sites of World War<br />

II. The city was bombed on 6 August, 1945 toward the end of<br />

the war. In memoriam of the event, the A-Bomb Dome of the<br />

Hiroshima Peace Memorial Park was designated as a World<br />

Heritage Site in 1996. The Peace Memorial Park now stands as a<br />

physical representation of lasting peace.<br />

In addition to the A-Bomb Dome, Hiroshima holds a<br />

centuries-old shrine, Itsukushima, which lies on the coast of<br />

Miyajima island. Built during the end of the sixth century and<br />

modified in 1168, Itsukushima is one of the most significant<br />

shrines in Japan – being recognized by the UNESCO as a World<br />

Heritage site. Itsukushima shrine, along with its torii gate, is<br />

unique in that it floats elegantly above the sea as opposed to<br />

being posted on land. The beautiful scenery, combined with the<br />

vermillion-lacquered shrine, green forest as a background and<br />

the blue sea, symbolizes the Japanese sense of beauty.<br />

This history-filled trip includes roundtrip airfare and bus<br />

transportation, two nights’ accommodation with breakfast,<br />

sightseeing to Hiroshima Castle and Miyajima Island, Kintaikyo<br />

Risk management is the responsibility of everyone involved in<br />

aviation. It is understandable from an economic point of view<br />

that the mail, checks, boss, passengers, etc., must get through.<br />

It is important to assess whether the success of the task<br />

outweighs the overall risk.<br />

A good tool to use in making good aeronautical decisions<br />

is the Decide Model. This model, comprised of a six step<br />

process, is intended to provide the pilot with a logical way<br />

of approaching decision making. The six elements of the<br />

Decide Model represent a continuous loop decision process<br />

which can be used to assist a pilot in the decision making<br />

process when he/she is faced with a change in a situation that<br />

requires a judgment. This Decide Model is primarily focused<br />

on the intellectual component, but can have an impact on the<br />

motivational component of judgment as well. If a pilot practices<br />

the Decide Model in all decision making, its use can become<br />

very natural and could result in better decisions being made<br />

under all types of situations.<br />

1. Detect. The decision maker detects the fact that change has occurred.<br />

2. Estimate. The decision maker estimates the need to counter or react to the change.<br />

3. Choose. The decision maker chooses a desirable outcome (in terms of success) for the flight.<br />

4. Identify. The decision maker identifies actions which could successfully control the change.<br />

5. Do. The decision maker takes the necessary action.<br />

6. Evaluate. The decision maker evaluates the effect(s) of his/her action countering the change.<br />
