EMAIL LIST SET UP FOR INSTANT
PROBLEM NOTIFICATION
If you would like to join the Glencairn Crime Watch email list,
please send your name, address and telephone number along
with the email, which you check frequently, to Patty Hill at glencairncrimewatch@live.com.
The meeting for the Glencairn Crime
Watch is the second Wednesday of the month.
You will receive information, which has been sent to me from
the Sheriff’s Office, from citizens who have observed events, etc.
In addition, if you want to volunteer as a Block Captain for your
street, you can do so by sending an email.
Sadly, in this era of commuting and busy schedules, few of us get
to know our neighbors. At one time in our history, neighbors knew
when there was a problem and immediately told their neighbors.
This effort will offer information as it comes to my attention.
Rumors will be checked out by the Sheriff’s Office before the information
is shared via email to the residents. Glencairn is doing
a great job watching out for each other and calling the Sheriff’s
Department to report suspicious activities, our criminal activity
has steadily gone down.
SLOW DOWN IN THE NEIGHBORHOODS
Almost everyone is aware that the Sheriff’s Office has adopted a
zero tolerance of speeding and other violations of the law with
a motor vehicle. That zero tolerance has resulted in an average
of 50 tickets per month issued in Glencairn. The speed limit in
residential areas, by Texas law, is 30 miles per hour. There are
cautionary signs regarding slower speeds on curves. There are
stop signs, which indicate the vehicle must come to a complete
stop. Residents of Glencairn want to see a slower pace of traffic
for the protection of all-especially the children. For some reason,
the people of Harris County seem to be perpetually late. A
suggestion for each of us is to leave five minutes early in order to
avoid the impulse to speed. Develop patience; we do not want
a fatality auto-pedestrian accident in our neighborhood or any
serious accident caused by thoughtless speed. Be mindful of
where you are driving.
BOARD MEETING (2 ND WED. OF EACH MONTH
IS USUAL MONTHLY MEETING)
STREETLIGHTS OUT?
Please report outages of streetlights to Centerpoint Energy. Get
the pole number, as well as, the nearest street address and call
713-207-2222. It is very important that non-working lights are
reported for the safety of each of us. Call it in, call it in!
CALL SHERIFF’S OFFICE TO REPORT
AFTER HOURS & ILLEGAL ACTIVITY
If your home backs up to the greenbelt, please call the Sheriff’s
Office at 713-221-6000 if you see or hear suspicious people,
underage drinking, graffiti artists or any activity after 10 PM,
etc. Graffiti has extended to some homeowner fences and to the
sidewalks. It is imperative that you call the Sheriff’s Office, give
your address and explain that this area is behind your home in
order to get this activity stopped.
We are looking at solutions to this problem of recalcitrant teens
and young people in their 20’s who have nothing better to do
with their time than disobey the law and terrorize the neighbors.
All common areas (the pool area, the parks, the civic center, tennis
courts, etc.) in Glencairn are closed at 10 PM. After 10 PM, people
at any of the common areas are in violation of the trespassing
laws of Texas
GLENCAIRN CRIME WATCH
TIPS FROM OUR DEPUTIES AND P.O.V. DEPUTIES
Statistics have proven that outdoor lighting of your home
is one of the easiest, least costly and obvious deterrents a
homeowner can utilize to help prevent becoming a victim of
the crime. So, why is it that so many Glencairn residents fail
to take advantage of lighting?
As observed by your Contract Deputies and P.O.V. Deputies
and as followed with a visual survey done, a staggering 60%
of homes had no form of outdoor security lighting whatsoever.
The actual information was gathered on a street by street
basis. However, to report each street’s statistics would have
been both lengthy in space as well as further adding to the
potential of criminal activity on those darkest of streets. It is
with the interest of residents that this report is given, in hopes
of shedding some light (pun intended) on what is an alarming
number of homes in our neighborhood without any form of
outdoor lighting. In addition to lighting your home’s exterior,
a clear and unobstructed view of the front and sides of your
homes would best serve you, the resident, as these deputies
patrol. The Deputies clearly are not suggesting residents cut
down every shrub blocking any portion of your home. Many
residents expend many hours of labor keeping their yards and
shrubs trimmed and looking attractive. It is only their intent to
remind those who need to do a little “bush-wacking” to pull
out the hedge clippers and for those who need to either add
to or utilize existing lighting do so. It should also be noted that
in these nights of observation, far too many garage doors were
left open, as well as bicycles and other valuables left outside
making you an easy target for crime.
One further note from your Deputies and P.O.V. Deputies, it
would greatly behoove you to check and repaint as needed
the street numbers marked on your curbs. This will assist any
and all emergency personnel in finding your home if and when
you ever needed it.
PATTY HILL - CRIME WATCH COORDINATOR
COMMUNITY VOLUNTEERS
Your Board of Directors are volunteers from your community
that give up their time in an effort to make Glencairn a better
place to live. More importantly, they strive to keep the property
values up since your home is probably your single largest investment.
We trust you will understand that Board members
do not mind discussing association issues with members. We
respectfully request that homeowners do not approach Board
members away from Board or member meetings to discuss
personal deed restriction or collection matters. The individual
Board members cannot make a decision on an individual basis.
It takes a majority vote of the Board to make a decision. That is
why the Board meets on Mondays before the member meeting
to discuss issues with members.
HARRIS COUNTY
ALARM DETAIL
If your home has an alarm system, you
need to obtain a permit to avoid the
issuance of a citation and excessive false
alarm fees. You can get a copy of the
permit application and review the regulations
regarding permit requirements at
the Harris County Sheriff’s Office website.
The form can be printed for mailing with
the applicable fee from the website. For
more info, call the Alarm Detail office at
713-755-4600 during normal business
hours.
LOOSE OR LOST PETS & DOG BITES
Contact Harris County Animal Control at 281-999-3191 or 3194.
PETS
Did you know that all pets that reside in Harris County must be registered?
You can register your pet on-line at www.countypets.com.
SCOOP YOUR PET’S POOP
Please remember to be respectful of your neighbors’ yards and the community
grounds. When you take your pet for a walk, come prepared with a scooper and a
recycled grocery bag or anything else. If your pet poops during your walk, please
scoop and trash. It may not be the most fabulous way to walk your pet, but it
does show that you respect your fellow neighbors’ and our beautiful community.
LEASH LAW
Animals that are not properly restrained pose a threat to all our residents.
While you may know your pet is friendly, an animal running at someone who
is walking by is very scary for that person. Many children are afraid of animals
and become frightened, which could result in the child getting hurt trying to
avoid the animal.
Harris County Animal Control advises, “All dogs and cats must be kept under
restraint while in the unincorporated areas of Harris County, Texas. The
custodian of a dog or cat is not authorized to have, harbor or keep any
unlicensed dog or cat nor to allow any dog or cat to become a stray.”
Restraint is defined as “the control of a dog or cat
under the following circumstances:
1. When it is controlled by a line or leash not more than six (6) feet in length,
if the line or leash is held by a human being, who is capable of controlling or
governing the dog or cat in question
2. When it is within a fully enclosed vehicle
3. When it is on the premise of the custodian and the animal does not have
access to sidewalk or street.”
While it may be nice to have your animal out in the yard while you work or play,
it is against the law, unless the animal is properly restrained.
Let’s all help keep our community a safe and comfortable place for all our residents
by being responsible pet owners. This will not only protect anyone who
may be walking or bicycling in the area, but also the pet owner who could be
held legally responsible or possibly sued for failing to properly restrain their pet.
Please remember that cats fall under the same laws as dogs and must be licensed
and kept restrained when not on the premises of the owner. We’ve been
told that spreading moth balls in flower beds might keep cats away.
To make a complaint or report an animal that
is not properly restrained please contact:
GARDENING TIPS FOR OCTOBER
• Dig and store caladiums before the foliage dies. Allow the bulbs to dry in the shade, shake off the dried
soil and dust with sulphur to control fungus. Store by hanging in open mesh bags or old panty hose.
• Flowers planted for spring can begin when the temperatures are going to stay cooler. Shrubs and
trees can be planted now. Woody plants concentrate on root growth through the winter and the
more headstart they can get before summer, the better.
• October 15 th is about the time for dividing and planting daylilies.
• Watch out for brown patch in St. Augustine grass. These circular brown patches are caused by a
fungus that is activated by moist cool weather. Control with Daconil.
• If you need to do any pruning, do it early in the month. The re-growth stimulated by pruning
needs to harden off before that odd-ball frost of Halloween. Prune fruit trees when leaves begin to
fall. Remove all dead, weak and over-crowded growth. Tip back main branches to control size and
shape. Spray w/dormant oil when temperature is between 30-60 degrees.
• Cut back tops of perennials after they have bloomed. Divide roots and transplant anytime from
now until March, the earlier the better.
Glencairn | October 2017 3

• Get the ant baits down. This will greatly reduce your
spring populations.
• Clover left over from last year may be growing. It’s best to hit it with
the post-emerge herbicides in October and November. At least two
applications are usually needed, even if done this early.
• For color throughout the winter, begin planting pansies.
HAPPY HALLOWEEN!
TRICK-OR-TREAT SAFETY TIPS
• Go During Safe Trick Or Treat Times: A good trick or treat time
is right after an early dinner.
• Steer Clear Of Masks: With face paint, it is easier for your
child to see where they are going.
• Be Visible: Choose costumes that are brightly colored
so that they are easier to see in the dark.
• Never Go Alone: It is important that your children have
an adult with them at all times.
• Walking Tips: Be sure that your children understand simple
traffic rules, such as stopping and looking both ways
before crossing the street and staying in a crosswalk.
• Knock On Doors That You Know: Encourage your children to only
trick-or-treat at homes where they know the inhabitants.
• Don’t Go Inside: Remind your little ones that they should never
go inside anybody’s home while trick-or-treating.
• Stay On Track: Stay on streets and in neighborhoods that are well
lit and where there are plenty of people around.
• Say No!: Stranger danger is important to remember no matter
how old your kids are, even while trick-or-treating.
• Taste-Testing Patience: Make sure kids know that trick or treating
is for gathering candy, not eating it as they receive it.
Boy Scouts of America -
Copperhead District
For 100 years, Scouting programs have instilled in youth the values found
in the Scout Oath and Scout Law. Today, these values are just as relevant
in helping youth grow to their full potential as they were in 1910. Scouting
helps youth develop academic skills, self-confidence, ethics, leadership
skills, outdoor skills and citizenship skills that influence their adult lives.
The Boy Scouts of America provides youth with programs
and activities that allow them to:
• Try new things.
• Provide service to others.
• Build self-confidence.
• Reinforce ethical standards.
Scouting provides youth with a sense that they are important as
individuals while promoting activities that lead to personal responsibility
and high self-esteem. As a result, when hard decisions have to be made,
COUNSELORS OFFER HELP IN DISASTER’S AFTERMATH
For most of us, when we are in the middle of a major life stressor,
we focus on the most important survival tasks. In the immediate
aftermath, we are shocked that we made it through and many of us
experience a heart full of gratitude. We are glad to be alive.
Over the next several weeks, the emotional reality of the trauma we
survived begins to affect us. Allie Scott, Clinical Coordinator at Shield
Bearer, shared her experience working with trauma survivors who
lived through rape, crime, fire, traffic accidents and suicides. “Our
adrenaline kicks in to help us get through the traumatic event. But
after we are safely out of harms way, our emotions tend to take over.
Sometimes you will just find yourself crying, sweating or angry with
no explanation for it.”
The team of trauma specialists at Shield Bearer who have experience
working with survivors of sex trafficking, war and other traumatic events
put together this advice for surviving the emotional aftermath of trauma.
Take a huge breath.
Breathing deeply helps your body deal with the chemicals in your
body that have been released from your emotional trauma. Studies
have shown that deep breathing, meditation and prayer support your
immune system and decrease the effects of stress.
Accept how you feel.
Whatever you are feeling is part of your natural response to the horrible
experience you have been through. Give yourself permission to feel
what you are feeling. Give yourself grace to be okay with your emotions.
Process your experience.
You need to express what you went through. You can talk to friends,
write a journal of your experience or meet with a professional
counselor or faith leader. Not expressing what you have been through
causes your thoughts about the event to increase.
Get back to your routine.
Your body and mind thrive on routine. Set your alarm and get back to
a normal wake - sleep cycle. Eat meals regularly. Go to work, school or
find an activity to do every day.
Discover what you are thankful for.
Gratitude opens up space in your heart to feel something other than
negative emotions. Look around to see what you can find to be
thankful for. Write the list down, post on social media or tell a friend
what you are happy to have in your life.
Get help if you need it.
You may need to see a professional counselor or physician if you are
sleeping or eating too little or too much. If you feel like you do not
want to do anything or are having thoughts of a suicidal nature, you
need to be assessed by a professional.
Scott added, “Trauma reactions usually include a period where you feel
like things are hopeless and will never change. The truth is that if you
get help, you will move through this period and hope will reappear.”
CYPRESS-FAIRBANKS I.S.D.
IMPORTANT DATE
October 9 th - Professional Day - ES Parent Conferences
Message From The Superintendent
Welcome back to school - again! I realize we started 2017-2018 a couple weeks later than we originally planned and I appreciate everyone’s
patience during this difficult time.
Certainly, Hurricane Harvey has proven to be a dynamic and unprecedented event for the CFISD community. So many of our neighbors have
been displaced from their homes due to flooding and damage and we want to remember those folks in our thoughts and prayers and continue
to provide support as they get back on their feet.
You may have heard that Texas Commissioner of Education Mike Morath has waived the nine student days we have missed due to the flooding.
I can assure you that our teachers and staff are going to provide each student with the same outstanding curriculum and instruction they
would have received had we started on August 28 th .
The outpouring of support for so many of our friends and neighbors impacted by this tragic event has been inspiring to see. People from
different backgrounds and zip codes have all come together to support this community. That makes me extremely proud, not only to be a
CFISD resident but also an American.
Without a municipal government that covers the entire district, CFISD stepped up to provide temporary shelter, support other shelters and
school districts with food and supplies and help operate our own point of distribution at the Berry Center that provided assistance to more
than 5,000 community members.
On a personal note, I want to thank you for your prayers, encouraging comments and emails during this difficult time. I have been a
superintendent for 27 years and this was the most challenging and dynamic event I have ever experienced in that role.
For most of us, this event will be in our rear-view mirror rather quickly. But for a significant group of people in our community, this was a lifechanging
event. The theme we live by in CFISD is Opportunity for All. Let’s make sure all of our community, with our continued support, has
the opportunity to rebuild their lives this year.
Sincerely,
Mark Henry, Ed.D.
Students exit buses Sept. 11 th at Bridgeland High School on the first day of classes.
The Bridgeland High School student body fills up the competition gym Sept. 11 th on the first day
of classes. CFISD’s 12 th high school opens with freshman and sophomores and is one of three
new schools to open its door in the 2017-2018 school year.
Jim and Pam Wells (Center) join Wells Elementary School Principal Cheryl Fisher (teal shirt) in
greeting students and families Sept. 11 th on the first day of classes. Jim and Pam Wells served a
combined 66 years in CFISD and are the namesakes of the new school.
Christina Getschmann (left), a primary instructional coach at Hoover Elementary School,
talks with students Sept. 11 th on the first day of classes.
CFISD Welcomes An Expected 116,000 Students On First Day Of School
Cheryl Fisher’s Fitbit says she slept four hours, but the principal at brand-new Wells Elementary School was pretty sure it was less. The first day of
school still has that effect on Fisher. Despite a start date pushed back two weeks due to the effects of Hurricane Harvey, CFISD classes began September
11 th , with approximately 116,000 students filling the halls of 91 campuses. That included three new schools: Wells and Hoover Elementary schools and
Bridgeland High School. For those teachers, staff members and administrators, reaching the first day of classes marked an accomplishment in itself.
“Seeing those kids come in the first day of school with their smiles - that would be the pot of gold at the end of this whole thing,” said Fisher, who spent
eight years as the principal at Keith Elementary School before she was named to her new post - and subsequently spent much of the spring and summer
alone or with little staff in preparing. “There is a building, there is a complete staff of super-excited teachers and staff members and these happy children
came in and they deserve the best.”
Said Michael Smith, Bridgeland’s principal after more than nine years at the same job at Cy-Fair High School: “Whenever you have a new school, you
have to be flexible. Not everything went perfect, but the staff and the students were great. A lot of energy and a lot of excitement.”
The first day also meant bridging CFISD’s history with its future as the namesakes of both new elementary schools were on hand, welcoming students
in the morning before walking the halls and returning to volunteer as Bus Buddies in the afternoon. “I went around to every classroom this morning and
gave all the teachers a hug,” said Janet Hoover, the namesake for Hoover Elementary School who retired in 2010 after 36 years in CFISD. “It’s the best
atmosphere I’ve seen in a long, long time. It’s a very special place.”
CFISD’s original start date was August 28 th , but was postponed due to Hurricane Harvey. The district and community rallied and did its part while
employees, families and students waited to start the 2017-2018 school year. The Berry Center transformed into a massive point of distribution
center with a workforce of CFISD volunteers, funneling donations to families in need. In addition, numerous school organizations and athletics teams
volunteered in the relief effort.
But the waiting finally ended. School buses and lines of cars rolled September 11 th . Students posed for photos. Smiling employees greeted everyone
at the front doors. “I’m a little nervous but I’m very excited,” said Paige Hintz, a third-grade language arts teacher at Jowell Elementary School. “I’ve
prepared all of this stuff and finally just getting to actually do it. I’m ready to meet my kids and get it started.”
Moore ES Donation And Supply Update
Dear CFISD community: The outpouring of support you have shown
through volunteerism and donations to the students and staff at Moore
Elementary School has been absolutely incredible! You have worked
so hard to ensure they have everything they need to have a successful
school year. At this time, we are completely stocked with supplies and
do not need anything else. Once school begins, we will be reaching out
to others in need to share the extra supplies. Please know how much
your generosity has meant to the entire Moore community and all those
impacted by the flood. Sincerely, Principal Patricia Myers.
CFISD Mentor
The CFISD Mentor Program is a cooperative effort of volunteers from
businesses, faith-based and/or non-profit organizations, the community
and the school district designed to encourage students (elementary
through high school) to finish school and focus on future education and
career goals. A mentor is a suitable role model committed to helping a
student with his/her academic and social development. Mentors meet
with students one-on-one for approximately 30 minutes each week.
Currently, over 700 mentors are matched with students. Mentors must
be 18 years or older. To become a mentor, you must attend a training
session, complete a global volunteer/mentor application and consent to
a criminal history record check.
Training Sessions - Registration is REQUIRED. Register for a training
session at www.cyfairisd.formstack.com/forms/training.
working hard to become operative as soon as possible and need the
expenses. The museum urgently needs support from the community
to help with this financial challenge. A special fund to help “Restore
the Pearl” has been established so gifts can easily be made from
anywhere. Donors can give by texting pearlart to 243725 and choosing
a donation amount or by visiting http://bidpal.net/pearlart. The Pearl
will be closed while repairs are made and the hope is to re-open as
soon as possible this fall. Donations will enable the museum to make
vital repairs so the Pearl can continue to serve the community with
art and educational programming for all to enjoy. For help with these
unanticipated costs, the museum must rely on the generosity of the
community, which ten years ago turned the dream of the Pearl into a
reality in northwest Houston.
OCTOBER IS BREAST CANCER AWARENESS MONTH
One in eight women are diagnosed with breast
cancer in her lifetime. However, with early
detection and treatment, you can greatly
improve your chance of survival.
3 STEPS TO EARLY DETECTION
Early detection means finding the cancer
before it spreads to other parts of the body.
Although breast cancer cannot be completely
prevented, early detection provides the
greatest possibility of successful treatment.
By following these three steps, you will
help increase your chance of detecting
cancer early.
1. BREAST SELF-AWARENESS
Breast self-awareness can help you become familiar with how your
breasts normally look and feel. Knowing this will help you identify
any changes in your breasts that should be reported to your health
care professional promptly. If you find a lump, schedule an appointment
with your doctor, but don’t panic - 8 out of 10 lumps are not
cancerous.
Changes to look for include:
• A lump or thickening in or near the breast or in the underarm area
• A change in the size or shape of the breast
• Dimpling or puckering in the skin of the breast
• A nipple turned inward into the breast
• Discharge (fluid) from the nipple
• Scaly, red or swollen skin on the breast, nipple or areola (the dark
area of skin at the center of the breast)
You should see your health care provider about any of these
symptoms. Often these symptoms are not due to cancer, but if
you notice any changes in your body, tell your health care provider
immediately so that the problems can be diagnosed and treated.
2. WELL-WOMAN EXAM
It is recommended that women visit their family physician or gynecologist
each year for an annual Well-Woman Exam. In addition
to a routine pelvic exam and pap smear, the doctor may perform
a brief breast exam to check for abnormalities. The Well-Woman
Exam is a great opportunity for you to discuss with your health care
provider any questions or concerns you have regarding your breast
health. For example, your doctor may help you to determine the
most appropriate frequency for your early detection steps.
3. MAMMOGRAM
In its early stages, breast cancer doesn’t usually cause symptoms.
NBCF recommends that women ages 40 and older get a mammogram
every year. A mammogram is an X-ray of the breast. It is a safe
way to detect cancerous tumors and other abnormal breast conditions
and women who have screening mammograms have a lower
chance of dying from breast cancer than women who do not have
screening mammograms. Mammograms can detect cancer or other
problems before a lump becomes large enough to be detectable
to the touch. They provide an effective way to find breast cancer
in its early stages when treatment is usually the most successful.
Mammograms are considered safe, quick and relatively painless.
Krenek Printing sends our thoughts and sympathies to everyone affected by Hurricane Harvey. As a resident of the communities
we serve, we are deeply saddened by the mass flooding and destruction brought to homes, businesses and property. We will
continue to provide personalized subdivision newsletters with information from neighborhood management, surrounding
community groups, and local relief information to support the cleaning, rebuilding, and recovery of the communities in the
wake of Hurricane Harvey. In the story below, a local resident shares what she believes makes our communities amazing…
people willing to help each other by showing one another generosity, community, kindness and humanity. Krenek Printing
agrees that YOU are what makes this city great and we are proud to be part of your local community each month.
Hurricane Harvey and Houstonians
On August 26th, as I ushered my students out of class with a cheerful “See you next week,” many remarked that school would
be closed due to flooding so they would not see me next week. I chuckled while advising them to stop wishing for the return
of summer vacation and not to forget their assignments due Monday. After 4 days of rain, flooding, and the constant reports of
more destruction on the news, I was feeling foolish at my lack of respect for the weather, guilty that my house was dry when
friends and family only miles down the road had lost everything, and generally disheartened at Houston’s situation. The more
I watched the news broadcast the devastation, viewed social media with awful stories of anger and hate, and began to take
inventory of what it would take to get my life back to normal, I felt bitter, annoyed and grumpy. Thankfully, an eventful trip to
the local pharmacy, helped me see a different view of the situation.
After 4 days of rain with a sick baby, I was out of baby fever reducer. With frazzled nerves, my fevered, fussy 1-year-old hanging
off my hip, and my 7-year-old complaining about the outing in general, a young man approached us and asked if I needed
help. It was clear he didn’t work for the store as he was not in uniform and didn’t have on a name tag, but he could see I was
having trouble locating what I needed on the bare shelves while juggling the kids, diaper bag, pacifier, etc. As he helped me
find the last bottle of off-brand infant pain reliever, I silently prayed my oldest daughter, who was quietly staring down the
young man with furrowed brow, would not ask any loud, inappropriate questions about his long hair, dark nail polish, or
pants that did not sit anywhere near his waist. As he helped me look for the medicine, we made small talk and he disclosed
that his family had been rescued a few hours before and he was thankful to be safely staying at a relative’s home until he
could get back to his house to assess the damage. This whole encounter took less than 3 minutes. I thanked him profusely
and we parted ways. As we drove home, my daughter began to ask her questions, and to my surprise, they had nothing to do
with the young man’s appearance. She wanted to know how he would get the water out of his house; how he would know
it was safe to go home and how he would get there; how he would get the money to buy more things if his stuff was ruined;
and so on. She was very concerned for this young man and his family. I told her about all the organizations that were already
providing for people like the man with things like shelter, food, clothes, and toiletries. When I looked back, my daughter was
crying. She said that she was so happy that everyone wanted to help each other and that she wanted to help too by going
through her clothes and toys when we got home. In that moment, all the negative feelings I was harboring disappeared. I was
reminded that doing things for others and being a decent neighbor is what makes Houston amazing.
I am thankful that young man helped me today. His helpful spirit, despite his desperate situation, helped remind me about
what is important – people. I know Houston has a long road to recovery ahead, but I also know that Houstonians will take on
the challenge with generosity, kindness, compassion and love.
How to Carve
A Pumpkin
When it comes to pumpkin carving, the idea is to have fun. We’ve
got tips on carving the best pumpkin, as well as how to pick a good
pumpkin for carving!
HOW TO PICK A GOOD PUMPKIN FOR CARVING
Look for one that is a little misshapen. Inspect it for soft spots (especially
the end opposite the stem). Reject a pumpkin that has soft spots, they
will cause it to deteriorate quickly. Remember, your pumpkin doesn’t
have to sit on its base, in fact, that’s often its weakest spot.
Let the pumpkin guide the shape of the face: An elongated pumpkin
should have an elongated face. A fat and happy pumpkin should have
a fat and happy face.
HOLLOW OR WHOLE?
There are two reasons for hollowing: (1) If the inside is going to be
exposed (through the mouth, etc.), it looks better if it is hollowed
neatly. (2) If you plan to light the pumpkin from the inside, it must be
hollow. You can hollow it out from a hole in the back instead of the top,
so that the look of the face isn’t affected. If you’re illuminating with a
candle, you need to hollow from the top to allow the heat and smoke
to escape.
THE TOOLS
Use a water-based marker to outline the face that you want to carve.
First, draw a line down the center to establish symmetry. Then sketch
the nose, the approximate center of the face. Once you’re satisfied with
the details, trace over the lines using a permanent marker. For carving,
basic kitchen implements, such as a paring knife or a steak knife with
a standard - not serrated - blade that’s not going to bend, work well.
You can also use a standard jigsaw blade. Otherwise, improvise: Use a
melon-ball cutter to make circles, for example.
32
MAKE A FACE
To achieve a three-dimensional appearance, carve the entire pumpkin.
Exaggerate the features. (If you aren’t sure what teeth really look like or
how the gum line works, smile and look in the mirror.) If the pumpkin is
frowning, carve wrinkles under the mouth. To add character, carve a lot
of “crow’s feet” lines around the eyes. Consider using the stem as the
nose and inserts such as radishes for the eyes or cut eyeballs from the
back of the pumpkin and hold them in place with toothpicks.
CARVE WITH CARE
Use two hands at all times: one to control the blade and the other to
control the pressure with which you cut (and thus the depth). Take care
not to jab the blade into the pumpkin; you don’t want to cut all the
way through the rind - except to determine its depth. The thickness of
the rind will vary, not only from pumpkin to pumpkin, but also within
one pumpkin. To determine your pumpkin’s average depth, cut a
core sample where you want an eye or a nostril to be. Keep that piece
nearby as a reminder of how deep you can safely cut.
ENJOY IT WHILE IT LASTS
Pumpkins, which are actually a fruit, not a vegetable, are 90 percent
water, so after carving they usually last only three days to a week. A
jack-o’-lantern with a surface carving will last longer than one that
is cut all the way through. Putting a candle or other light inside will
shorten its life span, as the heat that results can “cook” the pumpkin
and reduce its longevity to a matter of hours. For a bright, shiny finish,
spray Armor All on the pumpkin and rub it in. Paint will not preserve a
pumpkin. However, if you decide to paint your pumpkin for decoration,
use a water-based latex paint and wait at least an hour after carving
so that the cuts you have made in the pumpkin have a chance to dry.
Halloween
Jalapeno
Mummies
10 Jalapeno Peppers
8 oz Softened Cream Cheese
8 oz Pepper Jack Cheese
1/2 tsp Minced Garlic
Pinch Salt
Pinch Pepper
1 Scallion
Candied Eyeballs
Pillsbury Crescent Rolls
WITCH HAT CUPCAKES
CHOCOLATE CUPCAKES
1 cup all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
1/2 cup cocoa
1 cup sugar
3/4 cup vegetable oil
1 large egg
3/4 cup milk
1 tsp vanilla extract
VANILLA BUTTERCREAM FROSTING
1 cup unsalted butter softened
1/2 tsp vanilla extract
1 3/4 cup powdered sugar
1 tbsp heavy whipping cream
food coloring green and orange
HAT DECORATIONS
Oreo Thins 1 per cupcake
Hershey Kisses 1 per cupcake
Candy Corn cut along color lines
For the Chocolate Cupcakes: Preheat oven to 350 degrees F. Line a muffin tin
with cupcake liners, then set aside. In a large bowl, sift together flour, baking
powder, salt, and cocoa. Set aside. Using a stand mixer (or hand mixer + large
bowl), beat together vegetable oil and egg on low for 30 seconds. Add milk
and vanilla extract and mix until combined, about 1 minute. Keeping speed
on low, slowly add the dry ingredients to the wet ingredients, about 1/2 cup
at a time. Once all dry ingredients have been added, mix just until the dry
ingredients are no longer visible, about another 2-3 minutes. Be careful not
to overmix. Pour batter into prepared muffin tin, filling containers about 1/2
way full. Bake chocolate cupcakes in the oven for 20-25 minutes or until a
tester toothpick comes out clean. Let cupcakes cool in the tin for 5 minutes,
then transfer to a wire rack to cool completely.
Preheat your over to 400° in line a baking sheet with parchment paper.
Wash then Slice your jalapeño peppers in half lengthwise and scoop
out the inside. In a large mixing bowl, use a cheese grater to shred your
block of pepper jack cheese. Chop a scallion in tiny pieces. Mix in your
cream cheese, scallion pieces, garlic, pepper and salt to your shredded
cheese. Fill your jalapeño peppers with your cheese mixture. Now
unroll your crescent rolls into rectangles (leave two triangles together
and pinch the middle together). Use a pizza cutter to cut each crescent
rectangle lengthwise into four even pieces. Wrap one or two pieces
around each pepper, leaving a small opening for the eyes. Bake for 10-
12 minutes. Right when you take your mummies out of the oven, add
two candy eyes in each top opening.
Witch Hat
Cupcakes
For the Vanilla Buttercream Frosting:
Using a stand mixer (or hand mixer + large bowl), beat butter and vanilla
extract on high until fluffy. Drop speed to medium and slowly add sugar to
butter, mixing thoroughly in between. If mixture gets too dry, add the 1 tbsp
heavy whipping cream. If using food coloring, separate about 1/3 to 1/2 cup
frosting to a separate bowl. Add green food coloring to the larger portion of
frosting and orange food coloring to the smaller portion and mix thoroughly.
Putting it all together:
Decorate chocolate cupcakes with the green frosting (to create the “hair”
for the witch) using a decorating tip of your choice. Press an Oreo on to
the top of the green frosting (to create the brim of the hat). Using another
piping bag, add about 1/2 tablespoon of orange frosting on top of the
Oreo. Press an unwrapped Hershey Kiss into the frosting, using even
pressure so that a ring of orange frosting appears around the base of the
Kiss (this creates the top of the hat). Place a piece of cut candy corn into
the orange frosting (for the hat buckle). I used only yellow pieces for this.
