past, we set our clocks back, and the<br />
night comes early, we are reminded<br />
of what lies ahead in the Sandhills.<br />
The fall events, outdoor concerts,<br />
festivals and activities are behind us<br />
now, and we welcome the new season<br />
with excitement.<br />
Thanksgiving with all of the family<br />
activities is on the horizon as we celebrate<br />
the day with lots of turkey and<br />
football.<br />
The Christmas Season begins earlier<br />
and earlier every year and will be in<br />
full swing very shortly. We will be<br />
attending Christmas parties even<br />
before the turkey is all gone.<br />
Veterans Day will be celebrated beginning<br />
on the 29th of October with<br />
the “Stroke of Patriotism” and formally<br />
ending on the 12th this year.<br />

We celebrate Veterans Day on<br />
the day the guns fell silent in<br />
Europe following the armistice<br />
that ended World War I.<br />
For some, it’s a day off from<br />
school or work, but for the majority<br />
of Americans, it means so<br />
much more.<br />
On the 11th hour of the 11th<br />
day of the 11th month of 1918<br />
an armistice between Germany<br />
and the Allied nations came<br />
into effect. In 1919, there were<br />
plans for parades, public meetings<br />
and a brief suspension of<br />
business activities at 11am.<br />
Veterans Day is the chance to<br />
thank and honor those who<br />
have selfl essly served their<br />
country.<br />
In increasing numbers, veterans<br />
are returning that support<br />
by continuing their service to<br />
their communities and country.<br />
The term “veteran” is a person<br />
who has served honorably in<br />
the U.S. military. He or she can<br />
be a citizen who served for four<br />
years and leaves the service at<br />
the ripe old age of 24.<br />
In the Revolutionary War, many<br />
soldiers were promised cattle<br />
when their term of service<br />
ended. There was no system<br />
for pensions, death benefi ts, or<br />
disability payments.<br />
This national disinterest toward<br />
veterans continued with<br />
relatively minor reforms until<br />
the Civil War, when President<br />
Abraham Lincoln explicitly mentioned<br />
supporting them after<br />
the war.<br />
Fast forward to World War I.<br />
Large groups of veterans returned<br />
from overseas; some<br />
with major needs. But the largest<br />
change in America’s treatment<br />
of its veterans came after<br />
World War II, which was pivotal<br />
in improving the relationship<br />
between veterans and their<br />
government.<br />
The G.I. Bill of Rights, which<br />
included easy access to education,<br />
mortgages, and provisions<br />
for health care. The Servicemen’s<br />
Readjustment Act of<br />
1944 fundamentally changed<br />
the composition of the American<br />
workforce by enabling<br />
an unprecedented number of<br />
American veterans to attend<br />
college and trade schools.<br />
But there is another dynamic,<br />
and one that has a psychological<br />
impact on veterans and the<br />
country as a whole. This is the<br />
phenomenon we experienced<br />
with Vietnam and Korea—two<br />
unpopular wars with the American<br />
people.<br />
Veterans from the Korean and<br />
Vietnam wars were largely<br />
ignored or worse by average<br />
Americans and they struggled<br />
immensely upon their discharge.<br />
That was an unfortunate period<br />
in our nation’s history, because<br />
those men and women had<br />
served their country during a<br />
time of war and deserved to be<br />
treated with respect when they<br />
returned home.<br />
Fortunately, today things are<br />
markedly different. Over<br />
40,000 nonprofi t organizations<br />
now exist to support the<br />
military or veterans. Today’s<br />
veterans are among our most<br />
community-oriented citizens.<br />
Studies show that they volunteer<br />
an average of 160 hours<br />
annually, 25 percent more than<br />
nonveterans.<br />
Veterans belong to civic groups<br />
and attend neighborhood meetings,<br />
often assuming leadership<br />
roles.<br />
Veterans Day is a special day<br />
where we pause to celebrate<br />
those who have served, and in<br />
many cases continue to serve,<br />
our great country.<br />

Sandhills Veterans Festival 2017<br />
The Sandhills Veterans Festival<br />
is organized by separate groups<br />
of like-minded individuals, all<br />
working for the same goal - to<br />
support our troops and honor<br />
our veterans. Through various<br />
activities, we work together<br />
to help take care of our local<br />
veterans.<br />
The 2012 inaugural weekend<br />
was an very successful event.<br />
It has grown each year into this<br />
year’s week-long Sandhills Veterans<br />
Festival.<br />

The Turkey<br />
National statistics show that<br />
leaving stoves and burners<br />
unattended while cooking is<br />
the leading cause of holiday<br />
fi res, part of the reason why<br />
fi refi ghters respond to more<br />
incidents during Thanksgiving<br />
and Christmas than any other<br />
time of year, according to a<br />
news release from the Las<br />
Cruces Fire Department.<br />
The fi re department reminds<br />
holiday chefs to use caution<br />
when preparing their holiday<br />
feast and recommends<br />
following these and other safety<br />
tips:<br />
• Start with a clean cooking<br />
area and keep the area well<br />
maintained.<br />
• Keep the cooking area off<br />
limits to children and pets.<br />
• Limit the number of people<br />
cooking to avoid crowding<br />
and accidents.<br />
• Avoid wearing loose clothing<br />
and jewelry that could<br />
interfere with cooking.<br />
• Never leave stoves or<br />
ovens — indoor or outdoor<br />
— unattended. Turn off all<br />
burners and other devices<br />
when leaving the cooking<br />
area.<br />
• Deep-frying a turkey is<br />
popular but there are<br />
unique dangers that come<br />
along with this method<br />
of cooking and extra<br />
precautions should be<br />
taken:<br />
• Never use a turkey fryer<br />
indoors, in a garage, on<br />
a porch or on any other<br />
surface that can catch fi re.<br />
It is recommended you<br />
place the fryer a minimum<br />
of 10 feet from all surfaces<br />
and structures, including<br />
walls and fences.<br />
• Ensure the hose connecting<br />
the fryer to the propane<br />
tank is free from cracks,<br />
and long enough to keep<br />
the tank and fryer a safe<br />
distance away from each<br />
other.<br />
• Avoid fi lling the pot with too<br />
much cooking oil as the<br />
turkey will displace some oil.<br />
• Be sure that the turkey is<br />
completely thawed. Slowly<br />
place and remove turkey<br />
from fryer. Avoid dropping or<br />
quickly removing turkey and<br />
wear gloves while using a<br />
fryer.<br />
• Do not leave fryer<br />
unattended and monitor oil<br />
temperature regularly.<br />
• In the event of fi re, call<br />
911. Avoid using water to<br />
extinguish grease or oil fi res.<br />
• Follow all directions and<br />
safety measures included<br />
with the burner and fryer.<br />

Here’s the trick to ‘becoming<br />
wealthy,’ says author who<br />
studies millionaires<br />
Getting rich is about more than<br />
making a lot of money — it’s<br />
about managing the money you<br />
have.<br />
Tom Corley, author of “Rich<br />
Kids: How to Raise Our Children<br />
to Be Happy and Successful in<br />
Life,” has a formula for that.<br />
He goes by the 80:20 rule,<br />
which suggests that you live off<br />
of 80 percent of your paycheck<br />

Secure Passwords<br />
A strong password is your fi rst<br />
line of defense against intruders<br />
and imposters.<br />
Never give out your password to<br />
anyone. Never give it to friends,<br />
even if they’re really good<br />
friends.<br />
Don’t just use one password.<br />
It’s possible that someone<br />
working at a site where you use<br />
that password could pass it<br />
on or use it to break into your<br />
accounts at other sites.<br />
Create passwords that are easy<br />
to remember but hard for others<br />
to guess.<br />
When possible, use a phrase<br />
such as “I started 7th grade at<br />
Lincoln Middle School in 2010”<br />
and use the initial of each word<br />
like this: “Is7gaLMSi#2010.”<br />
On some sites you might even<br />
be able to type in the entire<br />
phrase.<br />
Make the password at least 8<br />
characters long. The longer the<br />
better. Longer passwords are<br />
harder for thieves to crack.<br />
Include numbers, capital letters<br />
and symbols. Consider using a<br />
$ instead of an S or a 1 instead<br />
of an L.<br />
Don’t use dictionary words.<br />
There’s even software that<br />
criminals use that can guess<br />
words used in dictionaries.<br />
Don’t post it in plain sight. This<br />
might seem obvious but studies<br />
have found that a lot of people<br />
post their password on their<br />
monitor with a sticky note. Very<br />
very bad idea.<br />
Programs or web services like<br />
Lastpass (Windows and Mac)<br />
let you create a different very<br />
strong password for each of<br />
your sites.<br />
But you only have to remember<br />
the one password to access the<br />
program.<br />
Don’t fall for “phishing” attacks.<br />
Be very careful before clicking<br />
on a link (even if it appears to<br />
be from a legitimate site) asking<br />
you to log in, change your<br />
password or provide any other<br />
personal information.<br />
Make sure your devices are<br />
secure. The best password in<br />
the world might not do you any<br />
good if someone is looking over<br />
your shoulder while you type<br />
or if you forget to log out on a<br />
cybercafe computer.<br />
Malicious software, including<br />
“keyboard loggers” that record<br />
all of your keystrokes, has been<br />
used to steal passwords and<br />
other information.<br />
To increase security, make<br />
sure you’re using up-to-date<br />
anti-malware software and that<br />
your operating system is up-todate.<br />
Use a “password” or fi ngerprints<br />
for your phone too. Most<br />
phones can be locked so that<br />
the only way to use them is to<br />
type in a code, typically a string<br />
of numbers or maybe a pattern<br />
you draw on the screen.<br />
Sometimes when people with<br />
bad intentions fi nd unlocked<br />
phones, they use them to steal<br />
the owners’ information, make<br />
a lot of calls, or send texts that<br />
look like they’re coming from<br />
the owner.<br />

Each Battleship puzzle represents an ocean with a hidden fleet of ships,<br />
which may be oriented horizontally or vertically within the grid such<br />
that no ship touches another, not even diagonally.<br />
The numbers on the right and on the bottom of the grid show how many<br />
squares in the corresponding row and column are occupied by ship<br />
segments. Occasionally some squares may contain given ship or water<br />
segments to help start the puzzle. The object is to discover where all<br />
ships are located.<br />
Classic Battleship puzzles come in various sizes, with different fleets<br />
for each size. For example, the fleet of a Classic Battleship 10x10 puzzle<br />
consists of one battleship, two cruisers, three destroyers and four<br />
submarines.<br />
Submarines consist of a single round segment, destroyers have two<br />
end segments, cruisers have two end segments and a middle segment,<br />
and the battleship is constructed of two end segments and two middle<br />
segments.<br />

and whip on high speed until it<br />

21. Add powdered sugar and<br />
cinnamon and whip until it you<br />
get stiff peaks.<br />
22. Pipe whipped cream<br />
around edges of cheesecake.<br />

3/4 cup butter<br />

1 egg<br />
1 egg white<br />
1 1/2 cup fl our<br />
1/2 tsp cinnamon<br />
3/4 tsp apple pie spice<br />
3/4 tsp baking powder<br />
1/4 tsp baking soda<br />
1/4 tsp salt<br />
1/2 apple, chopped<br />
Caramel Cheesecake<br />
16 oz cream cheese, room temperature<br />
1/2 cup sugar<br />
1/2 cup brown sugar<br />
3/4 cup caramel sauce*<br />
1/2 tsp apple pie spice<br />
4 oz cool whip<br />
Cinnamon Apples<br />
1 1/2 apples, thinly sliced<br />
2 tsp lemon juice<br />
pinch of nutmeg<br />
Cooking<br />
1. Line the bottom of a 9 inch<br />
springform pan with parchment<br />
paper and grease the sides.<br />
Preheat oven to 350 degrees.<br />
2. Melt the butter then transfer<br />
to a mixing bowl.<br />
3. Add brown sugar and whisk<br />
to combine.<br />
4. Add the vanilla, egg and egg<br />
white and whisk until incorporated<br />
5. In another bowl, combine dry<br />
ingredients.<br />
6. Slowly add dry ingredients to<br />
wet ingredients until combined.<br />
7. Fold in fi nely chopped apples.<br />
8. Pour batter into springform<br />
pan and bake for 30-33 minutes.<br />
9. Allow to cool for about 5<br />
minutes, then remove to fi nish<br />
cooling.<br />

14. Place blondie back into the<br />

• 2 pounds elbow<br />
macaroni<br />
• 10 ounces (2 1/2 sticks)<br />
unsalted butter<br />
• 1 1/2 cups all-purpose<br />
fl our2<br />
• 1/2 teaspoon mustard<br />
powder<br />
black pepper<br />
• 4 cups whole milk<br />
• 3 cups shredded yellow<br />
American cheese<br />
• 3 cups shredded gouda<br />
• 5 cups shredded<br />
extra-sharp Cheddar<br />
• 1/2 tablespoon smoked<br />
paprika<br />
Add the macaroni to the boiling<br />
water and cook until al dente, 8<br />
to 9 minutes. Drain well.<br />
Meanwhile, in a 4-quart pot,<br />
melt 2 sticks of the butter over<br />
low heat and then add the fl our,<br />
mustard powder, seasoned salt<br />
and pepper. Cook 2 minutes,<br />
stirring with a whisk. Add the<br />
milk a little at a time, whisking,<br />
cheeses along with 4 cups of<br />
the Cheddar until melted and<br />
thoroughly combined. Add the<br />
cooked macaroni and stir well.<br />
Pour the macaroni mixture into<br />
a 3-quart baking dish and dot<br />
with the remaining 1/2 stick<br />
butter. Sprinkle the remaining<br />
1 cup Cheddar on top, then<br />
sprinkle with the smoked pa-<br />

Preheat the oven to 350 degrees<br />

salted water on to boil.<br />

smooth, 6 to 8 minutes. Remove<br />
the pot from the heat and<br />
stir in the American and gouda<br />
prika. Bake until the cheese<br />
is browned on top, 25 to 30<br />
minutes. Serve hot.
