Your fresh food people CHARGRILLED CHICKEN TENDERLOINS WITH AVOCADO CORIANDER DIPPING SAUCE Ingredients 2 tsp Garlic, grated 3 Tbsp Olive oil 1 Lemon, zest 1 Tbsp Lemon juice 2 tsp Flaky sea salt ½ tsp White pepper, freshly ground 18 Chicken tenderloins, or 2 large chicken breasts sliced into 18 strips 18 Bamboo skewers, soaked in cold water Dipping sauce ½ cup Greek yoghurt 2 Avocados, peeled and seeded 1 tsp Garlic, grated 3 Tbsp Chopped fresh coriander 1 Tbsp Red chilli, fresh, finely chopped and seeded 2 Tbsp Fresh lime juice ½ tsp Ground cumin 1 tsp Flaky sea salt ¼ tsp Freshly ground black pepper DIRECTIONS Mix all the ingredients together well and massage the marinade into the chicken tenderloins. Place in the fridge for one hour then thread one piece of tenderloin on to each skewer. You can keep the skewers covered in the fridge until ready to barbecue. To cook, heat the grill until very hot, place the chicken tenderloins on and cook on each side for 3-4 minutes or until cooked through. Serve with avocado coriander dipping sauce. To make the sauce, place the yoghurt, avocados, garlic, coriander, chilli, lime juice and cumin in a blender or food processor. Mix until smooth. Season with salt and pepper. BANANA GINGER PUDDING Ingredients ⅔ cup Dates, chopped 2 Bananas, ripe and sliced 2 Tbsp Maple syrup 4 Bananas, very ripe ¼ cup Honey, soft 1 knob Ginger, about 4cm, finely grated 1 Lemon, zested ½ cup Oil, light, grapeseed or rice bran 1 cup Rice flour ½ tsp Baking soda ¾ tsp Salt Banana cream 1 cup Coconut cream 1 Banana, ripe, frozen in slices 1 tsp Vanilla essence Directions Line the base of a 15 x 25cm baking dish with baking paper. Sprinkle with chopped dates then add the two sliced bananas and press down firmly. Drizzle with maple syrup. Mash the four very ripe bananas thoroughly and allow to sit for 30 minutes to go a bit brown. Mash in honey, ginger and lemon zest and stir in oil. Add sifted rice flour, baking soda and salt and mix in thoroughly (there’s no need to worry about over-mixing with rice flour). Pour over the banana date layer in the baking dish and bake at 170deg C for 50-60 minutes or until a skewer inserted in to the middle comes out clean. For the banana cream, place all ingredients in a food processor or blender and run until perfectly smooth. Serve in a bowl alongside the hot pudding. VANILLA POACHED GOLDEN KIWIFRUIT WITH CREAM Ingredients 8 Golden kiwifruit 250 g Sugar 1 Vanilla pod 1 Cinnamon stick 2 Bay leaves 4 White peppercorns 200 ml Cream, softly whipped, to serve Directions Peel the kiwifruit, halve and put aside. Put the sugar into a saucepan. Scrape the seeds from the vanilla and add with the pod. Add the cinnamon, bay leaves and peppercorns. Add 1 cup of water and bring to a boil while stirring to dissolve the sugar. When the sugar has dissolved, add the fruit and simmer for 5 minutes.
