The Star continues its series this week with The Cornershop Bistro chef – Rod Cross TASTY: Rod Cross uses seasonal produce in his food at the Cornershop Bistro. The menu at the Dolphin Café and Bar in Akaroa, which he opened in 1996, featured plenty of seafood and “good, honest, simple fare”, he said. Because of the seasonal ups and downs in the community, business was not always easy, but it had been his long-time goal. “Running my own business was always my goal from when first got into cheffing, from the beginning. I wanted the independence, and being a business person appealed to me.” But it came with it’s own challenges. Having become his own boss so young, he said it was important to stay humble and open to learning. “Because I have been self-employed most of my career, I learn a lot from chefs I employ. We’re all learning together,” he said. He said it was his passion for food and “love of good ingredients” that inspired him to become a chef, and it also shaped his menus. At The Cornershop Bistro, in Sumner, which he opened with his wife, Kath, in 2004, he said he tried to keep dishes simple. His goal was to use the best of seasonal produce to make the dishes something special. “I like to showcase ingredients for their quality. The goal is not to overwork ingredients, but to let their flavours do the talking,” he said. He said the community he was part of in Sumner was also something very important to him. “I’m not sure we planned being here 12 years, but we very much feel part of the community now, and being more established in the community feels it comes with it’s responsibilities.” But that was no bad thing, as Sumner was the best of all worlds, he said. “Although it is part of the city, in some ways it is a destination suburb, with all the benefits of being in the city but with that sense of community,” he said. It also meant he could surf in the summer, while being close enough to the mountains to be able to hit the slopes with his family in the winter, he said.
