SELWYN TIMES Tuesday February 7 2017 23 asty Bites SWEET CORN FRITTERS WITH MAPLE BACON AND AVOCADO CREAM Ingredients oney 1¼ cups Self raising flour 1 Spring onion, finely sliced 1 bunch Coriander, small, finely chopped 1 cup Corn kernels, raw and sweet, or in winter use canned 2 Eggs 1 cup Milk, warmed 1 tsp Baking soda 40g Butter, melted 1 drizzle Rice bran oil, for cooking 8 rashers Streaky bacon 1 drizzle Maple syrup 1 Avocado 2 Tbsp Lemon juice 1 Tbsp Sour cream Directions In a large bowl, combine the flour, onion, coriander, corn and seasoning, and toss well to coat the ingredients in the flour. In a separate bowl, whisk the eggs. Mix milk with baking soda and butter, then add to eggs. Gently fold wet ingredients into dry to make a spoonable batter. Heat a little of the rice bran oil in a frying pan and add spoonfuls of the corn mixture. Cook for two to three minutes each side until golden and puffed. Set aside in a warm oven while cooking the remaining mixture. Meanwhile, spread the bacon on a lined tray. Brush with maple syrup and season with pepper. Grill for four to five minutes until crispy or done to your liking. Combine the avocado and lemon juice, and mash together until smooth, then mix in the sour cream and season to taste. Serve the fritters in a stack with crispy bacon on the side and a dollop of avocado cream. SUMMER CHICKEN AND PEACH SALAD Ingredients 1 cup Breadcrumbs 400g Chicken tenderloins 1 Tbsp Tarragon leaves 1 Orange 1 tsp Iodised salt 1 to taste Ground black pepper 2 Tbsp Oil 2 Peaches 100g Salad greens 50g Rocket Peach dressing 2 cloves Garlic 1 Peach 2 Tbsp Olive oil 1 tsp Ground cardamom 1 Tbsp Red wine vinegar ½ tsp Iodised salt 1 to taste Ground black pepper Directions Cut tenderloins in half. Combine breadcrumbs, tarragon, one tablespoon grated orange rind from orange, salt and pepper. Roll chicken pieces in breadcrumb mixture. Heat oil in a frying pan. Cook chicken in batches until cooked and golden. Drain on kitchen paper. Mix salad greens and rocket together. Toss peach dressing through salad with dressing. Scatter over chicken pieces. Prepare peach dressing Wash peaches and cut in half. Peel peach and remove stone. Chop flesh finely. Crush garlic, peel and chop finely. Heat one tablespoon oil. Add peach, garlic and cardamom and cook until peach and garlic are soft. Add remaining oil, wine vinegar, salt and pepper. Make us your No. 1 stop for fresh fruit and vegetables.
