Cooking outdoors<br />

Barbecuing and eating outdoors is<br />

particularly enjoyable whether a pizza<br />

cooked on a wood fired oven, ham falling<br />

off the bone of a rotisserie or black<br />

charcoaled sausages straight off a charcoal<br />

barbecue.<br />

Outdoor cooking has progressed from<br />

the homemade or small round charcoal<br />

barbecues once common in New Zealand.<br />

While still great with the true charcoal<br />

flavour they add to steak and sausages,<br />

there are bigger, shinier and some might<br />

say better alternatives now available.<br />

Gas fired barbecues have become very<br />

affordable and fantastic when cooking<br />

up a feed for the regular troops or a large<br />

crowd. Those with a hot plate, side burner<br />

and rotisserie, cover all the bases, taking<br />

the mess out of the kitchen and into the<br />

yard where a few fat splatters are less of a<br />

concern.<br />

Gas pizza ovens can also be purchased<br />

as free standing models or for fitting into<br />

a hand crafted fireplace. Complete gas<br />

ovens range in price from as little as $200<br />

up to the $10,000 mark. Powder coated<br />

and stainless steel options are available,<br />

some with ceramic stones for producing<br />

a crisp based pizza. Many are like a gas<br />

barbecue in that they can be wheeled to a<br />

position so can be stored under shelter in<br />

inclement weather.<br />

Building pizza ovens in the backyard<br />

has grown in popularity. These give a true<br />

wood fired pizza taste and do a pretty<br />

tasty roast, which takes around an hour<br />

and a half while the fire burns at the back<br />

of the oven. Initially, the fire is built in<br />

the centre of the oven to heat the walls,<br />

floor and roof, then pushed to the back<br />

before placing the food in the centre. For<br />

roasting, the fire needs turning from time<br />

to time to maintain the heat while the<br />

roasting pan should also be rotated.<br />

purchased with some fire safe at any time<br />

of the year – something that those living<br />

in Canterbury need to be mindful of.<br />

Another trend is towards fire pits that<br />

are finding their way into backyards.<br />

These are available readymade, some<br />

coming with a safety mesh cover so safe<br />

to use when there are fire restrictions.<br />

They generally burn charcoal or gas and<br />

some may be incorporated into a table as<br />

a centrepiece offering the potential for the<br />

Japanese Hibachi style of barbecuing (not<br />

to be confused with Teppanyaki, which is<br />

cooked on a flat solid griddle surface).<br />

Fire pits are great for throwing out heat<br />

and a good form of cooking as the fire dies<br />

down. Try throwing some potatoes into<br />

the embers (wrap them in foil if you want<br />

to eat the skins). When cooked, scoop<br />

out the warm potato with a spoon, to eat<br />

around the fire for a different snack.<br />
