Cooking outdoors
Barbecuing and eating outdoors is
particularly enjoyable whether a pizza
cooked on a wood fired oven, ham falling
off the bone of a rotisserie or black
charcoaled sausages straight off a charcoal
barbecue.
Outdoor cooking has progressed from
the homemade or small round charcoal
barbecues once common in New Zealand.
While still great with the true charcoal
flavour they add to steak and sausages,
there are bigger, shinier and some might
say better alternatives now available.
Gas fired barbecues have become very
affordable and fantastic when cooking
up a feed for the regular troops or a large
crowd. Those with a hot plate, side burner
and rotisserie, cover all the bases, taking
the mess out of the kitchen and into the
yard where a few fat splatters are less of a
concern.
Gas pizza ovens can also be purchased
as free standing models or for fitting into
a hand crafted fireplace. Complete gas
ovens range in price from as little as $200
up to the $10,000 mark. Powder coated
and stainless steel options are available,
some with ceramic stones for producing
a crisp based pizza. Many are like a gas
barbecue in that they can be wheeled to a
position so can be stored under shelter in
inclement weather.
Building pizza ovens in the backyard
has grown in popularity. These give a true
wood fired pizza taste and do a pretty
tasty roast, which takes around an hour
and a half while the fire burns at the back
of the oven. Initially, the fire is built in
the centre of the oven to heat the walls,
floor and roof, then pushed to the back
before placing the food in the centre. For
roasting, the fire needs turning from time
to time to maintain the heat while the
roasting pan should also be rotated.
Wood fired pizza oven kits, to fit into
a structure that is bricked or plastered
around, or complete portable ovens can be
purchased with some fire safe at any time
of the year – something that those living
in Canterbury need to be mindful of.
Another trend is towards fire pits that
are finding their way into backyards.
These are available readymade, some
coming with a safety mesh cover so safe
to use when there are fire restrictions.
They generally burn charcoal or gas and
some may be incorporated into a table as
a centrepiece offering the potential for the
Japanese Hibachi style of barbecuing (not
to be confused with Teppanyaki, which is
cooked on a flat solid griddle surface).
Fire pits are great for throwing out heat
and a good form of cooking as the fire dies
down. Try throwing some potatoes into
the embers (wrap them in foil if you want
to eat the skins). When cooked, scoop
out the warm potato with a spoon, to eat
around the fire for a different snack.
