Friends Of Buckshaw Village Chinese New Year is soon upon us so this month we thought we’d show you how to create some of our favourite Chinese dishes! Send us your favourite recipe and it could be in our next issue! Hoisin Chicken/Turkey Wraps/Rolls Ingredients 200g cooked strips of turkey or chicken, 4 tbsp hoisin sauce, 2 flour tortillas, ¼ cucumber cut into strips, 4 spring onions cut into fine strips. Method 1. Heat the grill to high. 2. Mix the turkey or chicken with half of the sauce so it’s coated, then lay it out in an ovenproof dish and grill until it’s sizzling. 3. Warm the tortillas under the grill, but not for too long or they’ll burn. 4. Spread the rest of the sauce onto the warmed tortillas, then place the turkey or chicken, cucumber and spring onions on top. Wrap it up, but it in half and enjoy while it’s still warm. Sweet & Sour Chicken Ingredients 2 chicken breasts cut into chunks, 1 finely chopped onion, 1 small deseeded and chopped red pepper, 1 crushed garlic clove, 1 tbsp vinegar, 5 tbsps tomato ketchup, 2 tbsps sugar, small tin pineapple pieces, 1 tsp oil. Method 1. Fry the chicken in the oil until cooked, then set aside 2. Wipe the pan with a sheet of kitchen roll then fry the onion, garlic and pepper on a medium heat for around one minue, then turn the heat down. 3. Stir in the pineapple pieces, ketchup, vinegar and sugar and bring to the boil, stirring continuously. 4. Add juice from the pineapple pieces if the sauce is too thick, until it reaches the right consistency. 5. Serve with boiled rice or noodles. Egg Fried Rice Ingredients 2 spring onions, 2 eggs, 4 tbsps oil, 4 cups cold boiled rice, 2 tbsps light soy sauce or oyster sauce. Method 1. Finely chop the spring onion. 2. Beat the eggs (adding salt and pepper if you wish). 3. Heat 2 tbsps oil in a frying pan and when hot, add the eggs, cooking until they are lightly scrambled. Set the egg aside and wipe out the pan. 4. Heat the remaining oil then add the rice, stir frying for a few minutes, then add in the soy or oyster sauce. 5. When heated through, add in the egg and mix thoroughly. Stir in the spring onions and serve.

Friends Of Buckshaw Village Lancashire County Council have advised of their intention to close Euxton Lane overnight at the railway bridge across a couple of weekends in February, to allow for the removal of vegetation and for the installation of new hazard warning signage. The closure will run from 10pm to 6am on both the 17th to 18th February and the 24th to 25th February. Follow us on
