The sanitary conditions in China and other overseas processors are often filthy enough to make one throw up. Imported chicken, ham, and pond raised fish are consumed at restaurants daily. Baby food, dog food, and salmonella infected products have been pulled off the shelf in the past. RECOMMENDATION: Buy locally grown foods and cook it at home. Check labels at the market to confirm if a product is “imported by”, “prepared for”, or “packed by” as these are warning signs of potential health risks associated with imported foods and multiple handlers. BUY AMERICAN. POLITICS – The State of our Union is not healthy. Many voters do not trust politicians or what government tells us. Requests by citizens under FOIA (Freedom of Information Act) are being denied and systematically stonewalled by the Obama Administration. Transparency is political deception, and the strategy of lie, deny, and the truth be damned has recently been successful at all levels of elections. RECOMMENDATION: Vote, defeat any candidate who has served two terms or more, and become better informed on issues. Do not trust what you hear, but rather what you discover. ISIS and the terrorist threat – There is not much to make me feel secure that our country is safe. ISIS is planning to smuggle a nuke through Mexico. The Mexican border is open to all. The Obama Administration has weakened our military and has made many decisions to betray our trust. ISIS, Iran and the Muslim jihadists are openly sworn to annihilate the infidel, the Great Satan (USA) and Satan (Israel). RECOMMENDATION: In 2016, elect a President committed to strengthening our military, guiding the USA toward energy independence, securing our borders, and reenergizing our economy where the quality of life is improved for all good folks. Just isolate the Muslim groups to areas where they kill each other on a daily basis. Their hatred for Christians may be second to their sectarian hatred where Shiite versus Sunni and other radicals butcher each other, car-bomb a market square, and enslave their women. C.L. If you have a garden, run out there and pick a zucchini, a squash, and a cucumber and you’ll have the fixin’s for a delicious, light, refreshing salad that I know once you make it, you’ll keep on making it. This would be an excellent fresh salad to take to a Fourth of July party. It’s a wonderfully delicate salad that pairs the best of summer vegetables with the nutty nuance of pearled barley, all dressed in a tangy mayo and fresh herb dressing. Barley, Zuke, Cuke, and Squash Salad 3/4 cup barley, cooked according to package directions and cooled 1 young zucchini, cut into ¼-inch dice 1 young squash, cut into ¼-inch dice 1 cucumber, peeled, seeded if needed, and cut into ¼-inch dice (If you’re using older squash and zucchini, you will need to peel them.) Bring a large pot of salted water to a boil and drop in diced zucchini and squash. Cook for 30 seconds. Pour into a colander and spray cold water over to stop the cooking. You want your vegetables al dente, not al mushe. When the squash and zucchini are cool, add to the barley along with the cucumber.
