The Outer Banks Wave Time For A Waffle Good Breakfast T o be honest, I’ve never been much of a breakfast person; however, I make an exception for these waffl es with fruit syrup. Breakfast becomes more like dessert. This is a most excellent way to kickstart your day. It's not just another wave, By Rosie Hawthorne it's an experience. Rosie’s Best Waffles Read More at: For more recipes, tours of my garden, and the occasional travelogue, please visit with Rosie at For any culinary questions, e-me at Rosie These waffl es are made with yeast, so start the batter the night before and let it rise overnight. It’ll be ready for you in the morning. 1 package yeast 1/2 cup warm water 1 stick unsalted butter 1 cup skim milk 1 cup heavy cream 1 tsp kosher salt 1 tsp sugar 2 cups fl our 2 eggs, beaten 1/4 tsp baking soda 1 tsp vanilla Sprinkle yeast over the water with a pinch of sugar. Stir to dissolve. While yeast is “proofi ng”(It’s “proving” it’s alive by eating the sugar and then emitting carbon dioxide and alcohol. In other words, it gets all foamy.), melt butter and heat milk and cream. (You could use whole milk, but I never have it on hand. I always have skim milk and cream, so I combine the two.) You want the milk and cream warm, not hot. Add melted butter and warmed milk and cream to the yeast mixture. Add fl our, sugar, and salt to liquid mixture and whisk until smooth. In the morning, whisk in beaten eggs, baking soda, and vanilla. Heat up the waffl e machine. For the fi rst waffle, I use a little butter in the waffl e maker. None for the rest. And I cook my waffles a little longer than the waffl e machine calls for. I like crisp. Crisp is good. Also, I like to put these in the toaster oven while fi nishing up the batter in the waffl e maker, to crisp them up even more and make ‘em even better. • FREE Standard Installation in up to 6 rooms Where available.
