APPLE CINNAMON MUFFINS WITH OAT CRUMBLE inspiration By RehabRecipes Leigh Bayo and Martin Verheij Both of us enjoy sweet things – chocolate, cake, biscuits etc. One day we were both craving something sweet so I had a look at what was available in the fridge and apples were the sweetest thing that I could find. I decided to look up some apple cinnamon muffins as they would at least be slightly healthier than other muffins or cake or chocolate. I was able to find 2 recipes which seemed quite easy. Since I am very bad at making decisions I decided to combine them and use the parts of each recipe that I prep time cook time 5-10 minutes 25-30 minutes things you need 1 1/2 Cup Flour (all-purpose) 1/2 tsp Salt 1 tsp Ground Cinnamon 1 Egg 2 Apples (peeled, cored, chopped small) 1/4 Cup Brown Sugar 1 1/2 tsp Ground Cinnamon 57 serves 4 people (1 really hungry person) 3/4 Cup White Sugar 2 tsps Baking Powder 1/3 Cup Oil 1/3 Cup Milk (low fat) 2 Tbsp Butter (unsalted, softened) 1/2 Cup Quick Oats 2 Tbsp Flour (all-purpose)

O Vegetarian O Gluten Free O Spicy O Contains Nuts directions Muffins 1 Preheat oven to 200 C. Grease muffin tray 2 Mix together the flour, sugar, salt, baking powder and cinnamon. 3 In a separate dish mix the oil, egg and milk together and add it to the other ingredients. 4 Mix in the chopped apple pieces. Spoon the mixture into the prepared muffing tray and set aside. Oat Crumble 1 Mix together the butter and brown sugar. 2 Add the oats, cinnamon and flour until combined evenly into a crumbly mixture. 3 Sprinkle about 1 heaped tsps. of the mixture on top of each muffin (unbaked). 4 Bake the muffins in the oven for approximately 20 to 25 minutes. notes 58
