Don’t miss the National Center for Lesbian

Rights’ annual Palm Springs Garden Party

on March 31st during Dinah weekend.

Please join NCLR Executive Director Kate

Kendell along with our event co-chairs, Gary

D. Soto and DeeAnn McCoy, for a fabulous

party at the stunning Pond Estate in Palm

Springs, California!

For more than four decades, NCLR has

been at the forefront of the movement for

LGBTQ equality. It was the first organization

to launch projects advancing parent, youth,

immigrant, and transgender rights, and—for

the first time in 2017—NCLR sued a sitting

president to stop Trump’s transgender

military ban. And the fight continues.

We are thrilled to be returning to the

Desert again this spring and hope to

have the biggest crowd yet. NCLR will be

honoring two of our plaintiffs in Stockman

v. Trump, one of our lawsuits to stop

Trump’s transgender military ban. Kate

will give an update from the frontlines of

the resistance and describe NCLR’s ongoing

fight to defend the LGBTQ community

and protect the historic legal gains we

have achieved together in recent years.

From fighting for laws banning conversion

therapy for LGBTQ minors to winning lifesaving

asylum for LGBTQ people fleeing

violence and persecution across the

globe, Kate will share some of our most

compelling, life-changing stories—we know

you’ll want to hear it and we can’t wait to

be back with you!

NCLR remains fully engaged in a fight for

this nation’s most highly-prized ideals:

justice, equality, inclusiveness and fairness.

It is clear that the Trump Administration is

relentless to test our resolve by attempting

to rollback hard-fought protections for the

most vulnerable in the LGBTQ community.

The evening will give us a chance to update

you on how NCLR is responding to these

threats and how we are preparing for

the challenges ahead of us. Our entire

community is now called to even greater

strength and vigor to ensure that we stand

ready to defend our landmark victories

and critical progress during the last several

years.

The Garden Party will be held on March

31st, with a Sponsors Champagne

Reception beginning at 5 p.m. and the

party starting at 5:30 p.m.

Individual tickets are $75 in advance

and $100 at the event. VIP sponsorship

packages begin at $500. Learn more at

Richard Blais

Perhaps most recognizable

as the winner of Bravo’s Top

Chef All-Stars, Richard Blais

is a successful chef, restaurateur,

cookbook author and

television personality.

So Good is the title of one of Richard’s books

Fans know Richard Blais best as the

winner of Bravo’s Top Chef All-Stars, the first

competitor to be invited back as a permanent

judge on Top Chef, and now as a Food

Network regular as well. On television,

Blais is famous for his daring cooking, making

use of science (think liquid nitrogen) to

dazzle and impress. He has even authored

two books with elevated homestyle recipes

and personal stories which invite you behind

the scenes and into his own kitchen.

Richard will be one of the celebrity chefs

in the March 23-25, 2018, Pacific Sales

Kitchen & Home, Palm Desert Food & Wine.

It is a three-day event presenting some of

“the best people” in the food industry- chefs,

vintners, and craft beer brewers-from across

the country. Find the schedule of events and

other information here:

LIVE Magazine

www.palmdesertfoodandwine.com

Juli: Thank you for your time and interview,

Richard. With the many responsibilities

of being a famous TV personality, do

you find time to cook at home?

Richard: I do! I have two daughters, Riley

and Embry, and love to cook with them

at home. I think it’s important to make

time and have fun in the kitchen with my

family!

J: Your skills are so diverse. Where did you

get your education?

R: I started my education working as the

poissonier, also known as the fish cook, at

a little fast food place known as McDonald’s.

I eventually attended and graduated

from the Culinary Institute of America in

1998.

J: Wow! What a great story. The humble

beginnings of greatness! Where and what

were you doing the day you decided to

enter Top Chef?

R: I was actually working in my restaurant

in Atlanta when I got the phone call. I

never actually applied to be on Top Chef -

My restaurant happened to get reviewed

that day, and the casting team in Atlanta

saw the review in the local newspaper.

Someone found me and I immediately

accepted!

J: Another fun story! You were just fated

for fame! What was that like on the day

you arrived and meet the other cast?

a cloud of Fabio’s cologne.

J: Oh! That would be a challenge as well!

What was your most proud moment on

that show, and what was the dish?

R: Definitely when I won! It was a multicourse

menu - I don’t remember all of the

specifics, but I remember doing a “Oysters

and Pearls” dish that I definitely give some

credit to.

J: From that beginning you went on to

so many successes, including the role as

a recurring judge on the show. Which

position serves you best?

R: I definitely prefer judge to competitor -

and prefer being a host most of all.

J: What other shows are you involved in?

R: I’m still very involved in the Top Chef

series, as well as several shows on Food

Network including Guy’s Grocery Games,

Food Network Star, Chopped, and more.

J: I find your company, Trail Blais very

interesting. Can you tell us about it?

R: It was initially built as a creative consulting

firm to help build, design, open

and operate restaurants in cities across

the country.

J: That’s a busy schedule! How do you

juggle all of that with your personal and

family time?

press. Unfortunately, I haven’t had the

chance to make it to too many restaurants,

but taking any suggestions!

J: That is a tough one. There are too

many incredible venues and chefs in the

Coachella Valley to mention them all. One

of the hottest venues, and definitely one

of my personal favorites is the new AC3

Restaurant + Bar. at Hotel Paseo. It is a

collaboration of two of the valley’s best

restaurants, TRIO Restaurant and Copley’s

On Palm Canyon. Juliana Copley, Andrew

Copley & Tony Marchese make the “Perfect

Trio” to bring this hot new concept to

El Paseo in Palm Desert.

Award-winning Chef/Owner Andrew

Copley and Executive Chef Brandon Testi

have created a “New American” dining

experience there, highlighting familiar

dishes using local ingredients from The

Gardens on El Paseo, located just steps

away. Guests of AC3 also experience craft

cocktails, California craft beers and a

curated wine list.

Thank you, Richard! We are so happy to

have you visit us and share your talents. I

hope you have time to enjoy the Desert!

R: Between us, I’m pretty anti-social. Let’s

just say that arriving that day to share

bunk beds with 20 other chefs was pretty

intimidating.

J: Yes, that would be a challenge, no matter

how social one might be. Is there a top

comical moment from that show that you

can share?

R: I shared a room with Fabio Viviani,

which is a comedy in and of itself. He

would spray the room with cologne before

he entered and I spent most of my time in

R: It’s definitely busy, but we find ways to

make it work. I’m currently coaching my

daughter’s little league basketball team

to make sure that I see them as much as

possible!

J: Richard, congratulations on all your

numerous successes and welcome to

the Coachella Valley. Have you previously

been to the area? If so, any favorite

restaurants or venues?

R: Yes, I love it here and come with my

family a couple times a year to decom-

Celebrity-chef Richard Blais

and CEO Michael Rosen

have teamed to open three

restaurants called, The Crack

Shack where they say “We

serve Southern California

chicken and eggs in an open

air coop.”

The brand, located in Little

Italy of San Diego, Encinitas,

and Costa Mesa, California

has translated their bold

and brazen vision through a

culmination of a meticulously

prepared menu and their

“crack spice” – a proprietary

blend of spices that gives

their fare a certain je ne sais

‘squawk’ for sumptuous delight.

Upon the great tradition

of deliciously fried chicken,

they’ve infused their Southern

California spirit into the

entire experience—re-imagining

classic comfort food

with fine dining flair in an

Fabio Viviani

Chef, Culinary Personality,

Restaurateur, Cookbook Author

Chef Fabio Viviani has possessed a passion

for food since his childhood growing up in

Florence, Italy. At age 11, Viviani worked

nights at a local bakery (since he was

too young to officially join the staff), and

during his teenage years he held a variety

of positions, even serving under the

mentorship of Simone Mugnaini, an iconic

figure in the Italian restaurant industry.

Between his training in Italian and Mediterranean

cuisine at IPSSAR Saffi and

working with culinary luminaries such

as Mugnaini, Alessandro Panzani, and

Saverio Carmagini, Viviani owned and

operated five restaurants in Florence, a

farm house, and two nightclubs by the

time he was 27. Although a well-respected

businessman in Italy, he was ready for

a change and moved to Ventura County,

California, where he opened Café Firenze

in Moorpark.

Teaming up with one of Chicago’s most

innovative restaurant consulting groups,

Dine|Amic, Viviani went on to open

Siena Tavern in Chicago in 2013, which

received accolades from Michigan Avenue

and Chicago Tribune, to name a few.

2014 saw the debut of Mercato by Fabio

Viviani, a quick-service Italian concept in

Chicago and San Diego, and the launch

of Fabio Viviani Wine Collection. Viviani

also opened his new steak restaurant,

Prime and Provisions, as well as Bar Siena,

both in Chicago in 2015. In January 2016,

Fabio opened Osteria by Fabio Viviani at

the Los Angeles International Airport’s

Delta Terminal. Additionally, Mercato by

Fabio Viviani, a rustic, yet refined eatery,

is located in Chicago; San Diego; Detroit;

Tempe, Arizona; Phoenix; and Benton

Harbor, Michigan.

Perhaps best known for his television

debut on Bravo’s hit reality series Top

Chef — earning the Fan Favorite title —

his on-screen appearances have propelled

him to become one of the fastest growing

household names in the country. In

addition to competing on Bravo’s Top Chef

All Stars and starring in the spinoff, Life

After Top Chef, Viviani has appeared as a

recurring guest on such television shows

as Good Morning America, The Rachael

Ray Show, The Talk, Hallmark Home &

Family, The Chew, Good Day LA, and Access

Hollywood.

He has hosted regular spots on the QVC

channel with various kitchen appliances

and products and was also the host of

the Telly and Webby award–winning web

series Chow Ciao! on Yahoo!, one of the

top 10 lifestyle and food shows on the

internet. Off-screen, Viviani is a regular

headliner at global food events and festivals,

has his own line of ceramic cookware

(Co-Branded Signature Series Aeternum

Evolution), and is a proud endorser of

beloved brands such as Bialetti Cookware

and Bauli authentic Italian baked

goods. He has authored three successful

cookbooks: Café Firenze Cookbook, The

New York Times best-seller Fabio’s Italian

Kitchen, Fabio’s American Home Kitchen,

and the just-released 30-Minute Italian.

Recently, Viviani started the Know-How

Leadership Academy, where he shares tips

and advice with young entrepreneurs and

Aarti Sequeira

Author, Host of Aarti Party

and lead judge on

Guy’s Grocery Games

In August 2010 Aarti Sequeira competed

on and won Season 6 of Food Network’s

number-one series, Food Network Star,

landing the ultimate dream culinary job: her

very own Food Network show. A dedicated

foodie all her life and a journalist by education

and trade, Aarti successfully combines

these passions in her entertaining blog and

online cooking-variety show, Aarti Paarti.

Now she takes her food knowledge, love for

cooking, and enthusiasm for sharing information

to the masses in her Food Network

cooking series, Aarti Party. On this show she

surprises viewers with unexpected flavors

and techniques to expand their palates

and culinary repertoire by imparting her

knowledge of Indian cuisine and putting an

approachable spin on all-American classics.

Born in Bombay, India, and raised in Dubai,

UAE, Aarti’s lifelong appreciation for food

began at a young age and was inspired by

her faith, her mother, her cultural background

and her never-ending food experiments.

Growing up in a traditional Indian

Catholic family, Aarti spent Fridays dining

on fish and Sundays at church. Her fondest

food memories include her father’s weekly

trips to the market for fresh fish and produce,

her mother’s daily recipe creations, and

Aarti’s own pretending to host a cooking

show — an unexpected glimpse into her

future as a Food Network star.

After completing Dubai’s British system of

schooling, including many music-related

activities like piano and choir, Aarti moved

to Chicago in 1996 to attend Northwestern

University. In 2000, she earned a Bachelor

of Science in journalism at Northwestern’s

Medill School of Journalism with an adjunct

major in International Relations. While

pursuing her degree, Aarti gained valuable

media experience working at the school’s

student-run radio and television stations

and also spent a short time in Washington,

D.C., covering Capitol Hill for a local Fargo,

N.D., television station. Upon graduation

Aarti worked for about a year at CNN as

a production assistant in Chicago before

moving to New York in 2001 to work as a

CNN producer for two years. In 2003 she

married her college sweetheart, Brendan,

and moved from New York to Los Angeles to

start their life together.

In addition to working several freelance gigs

in the Los Angeles entertainment industry,

Aarti assisted a Peabody award-winning

director on Sand and Sorrow, a documentary

about Darfur in 2004. Feeling like

something was still missing, Aarti enrolled

in The New School of Cooking in Culver

City, Calif., where she earned her professional

cooking certificate in 2007. To further

explore her culinary calling, Aarti launched

her blog and online cooking-variety show,

Aarti Paarti in 2008.

In addition to cooking, Aarti enjoys improv

theater, music, Middle Eastern dance and

visiting art galleries. She currently resides

in Los Angeles with her husband, Brendan,

while her parents and youngest sister live in

Bangalore, India, and her middle sister lives

in Phoenix.

Laura Werlin

James Beard Award-winning

Author, and one of the country’s

foremost authorities on cheese

Juli: Hi Laura, I have to say right off that I

love cheese! When did you first find this

love?

Laura: Happy to hear you’re a cheese lover

too! For me, my love affair with cheese

began at the ripe old age of four, when

my mother would give me butter-crisped

triangles of grilled cheese. Tasting that

melty cheese, I was hooked.

J: What is the history of pairing cheese

with wines?

L: I don’t know if there’s a specific cheese

and wine pairing history, but I do know

that both have been on the table together

in France and Italy for centuries, and

likewise, the subject of numerous still life

paintings, also centuries old. It’s an ageold

romantic notion and one that suits me

just fine!

J: Me, too! Tell us about the term,

“Edu-tainer”?

L: I call myself that because that’s genuinely

how I see myself. I am very serious

about educating people about cheese, its

flavors, its textures, the people that make

it, and the wines that go with it, but I like

to do that by injecting humor along the

way. After all, we’re talking cheese and

wine here, not politics!

J: Being a spokesperson for consumer and

trade organizations must be interesting.

That must involve a lot of travel. What is

life like for you while you are on assignment?

L: I actually don’t do nearly as much of

that as I used to do, but yes – it definitely

involves travel. While it might get

tiring sometimes, the rewards are more

than worth any travel hassles. I get to

go to cities I’d never go to. I get to eat in

restaurants I otherwise probably wouldn’t

get the chance to try. I meet all kinds

of people, which I love to do. And I get

to work with different companies, each

of which has its own ethos and ways of

doing business. Fascinating.

J: You have done many television shows

including CNN, QVC, The Martha Stweart

Show, Fox & Friends, and CBS’s The Early

Show. What do you find most enjoyable

about production?

L: Growing up in LA (Santa Monica), I

loved everything about Hollywood and

about television. That’s why at age 12, I

decided I wanted to be in television news.

Sure enough, that’s what I did for my first

15 years out of college. I worked in LA and

San Francisco. But my TV news jobs were

mostly behind the scenes, so it wasn’t

until I started on the cheese path that I

began to go in front of the camera. Having

familiarity and ease in television studios

definitely helped me do shows like Martha

Stewart, even though I was a nervous

wreck doing that particular show!

J: Tell us about the James Beard Award and

with what book did you win the award?

L: My book, The All American Cheese and

Wine Book, was the recipient of the James

Beard award. I will never forget the night I

won. The Beards are considered the Oscars

of the book and restaurant world, so when

they called my name, I literally floated on

air down the aisle to accept my award.

When I walked the stairs to the Lincoln

Center, I had no idea that the bright lights

would render me practically blind as I

attempted to give my acceptance speech.

This felt like big time! But while the lights

may have shone on me, what I was most

proud of was that they were shining on the

subject of American cheese and wine. That

was my passion then just as now, and, I’d

venture to say, always will be.

J: Thank you, Laura! You demonstrate wine

pairing, cheese essentials, and cooking

classes across the country, including such

prestigious events as the Food & Wine

Classic at Aspen, Pebble Beach Food &

Wine, the South Beach Wine & Food Festival,

Los Angeles Food & Wine, and the Santa

Fe Wine & Chile Fiesta as well as Palm

Desert Food & Wine. We are lucky to have

you visit us here in the Coachella Valley!

DESERT DENTAL

ALTERNATIVES

Bruno Lemay, DMD

acid to decalcify the tooth. It is called dental

plaque and it forms very quick after eating.

The better hygiene a person has, the less

they will have decay. It takes both sugar and

plaque to decay a tooth. The more you brush

and floss, the more plaque removed and the

less risk of decay.

Additionally, elderly patients also tend to have

more decay. It is more obvious with elderly

patients who are loosing their dexterity, and

in general they tend to eat more sweets more

often, and not brush as often.

There is also another component that needs

to be explained here. In the mouth there are

several types of bacteria. Some are responsible

for gum disease and some are responsible

for decay. Some people may have the best

hygiene and still have gum disease and some

who have the worst hygiene may not suffer

from gum disease at all. This is because they

do not have the bacteria responsible for gum

disease. Same thing for decay. Some people

will be more susceptible to decay then others

even if they eat just a little sugar and have

decent dental hygiene. That is because they

have that kind of bacteria in their mouth in a

higher rate then another person. But that is

not a reasonable excuse. More brushing

and plaque control with a topical fluoride

application daily, preferably with a special

personal tray made at the dental office will

help.

Very rarely a person will suffer from gum

disease and a high rate of decay. It is

generally one or the other. If someone has

a high rate of decay, in general they will

not suffer from gum disease like bone loss,

periodontal pockets and tooth mobility.

It is a proven fact though, that the better

the dental hygiene you have and the better

your diet is in terms of limiting sugar intake,

the healthier your gums and teeth will be.

So, it is not true that decay affect only

kids. As long as you have one tooth in your

mouth you are subject to get decay if you

leave dental plaque on it and eat sugar!

The best way to prevent that is to have

good dental hygiene at home and brushing

after any sugar intake, and to visit your

dentist 2 to 3 times a year.

Dr. Bruno Lemay

Do you think that dental cavities are

problems only for children?

It is a general belief that cavities are for kids

only. But in fact, cavities affect all ages!

The reason why cavities are more prevalent

in children is mainly the fact that they tend

to eat more sugar and have poor hygiene

habits. However, when looking at the cause

of decay, which is basically plaque with the

presence of sugar, it is easy to understand

that cavities can happen at any age even if

your mouth is full of crowns.

Of course there are some people who have

teeth that are softer then others and are

easier to decay but that affects only 1% of

the population. Basically any diet rich in

sugar will increase your chance of decay.

Soft drinks, candies and anything sweet

will have a potency to create decay in the

presence of dental plaque. Of course in

order to create decay there has to be the

bacteria that will transfer the sugar into

ELTON JOHN - THE MILLION DOLLAR PIANO

World-renowned singer, songwriter and performer Elton John gives fans exactly

what they’re looking for in his Las Vegas show, “The Million Dollar Piano.”

Playing exclusively at The Colosseum inside Caesars Palace, the show’s centerpiece

is the namesake piano. This engineering marvel displays more than

68 LED Yamaha video screens. The visuals complement Elton’s performances

perfectly. It also weighs more than 3,000 pounds—the weight of an average

car. While the piano dominates the stage, the surrounding set design is also a

beauty, so expect lots of gold and stunning visual effects.

The dazzling superstar’s band includes Davey Johnstone on guitar, Matt Bissonette

on bass, John Mahon on percussion, Nigel Olsson on drums and Kim

Bullard on keyboards, with a special appearance by percussionist Ray Cooper.

Elton John gets audiences on their feet with a set list of the iconic favorites.

Beloved songs such as “Rocket Man,” “Benny and the Jets,” “Tiny Dancer” and

“Crocodile Rock” make the night especially memorable.

Throughout the past five decades, Elton built one of the most successful and

enduring music careers of all time. He is one of the top-selling solo artists, with

25 platinum and 35 gold albums, 29 consecutive Top 40 hits and more than

250 million records sold worldwide.

The five-time Grammy and Grammy Legend award winner has been inducted

into the Rock & Roll Hall of Fame and has received both Academy and Tony

Awards for his contributions in “The Lion King” and “Aida.” Additionally, Elton

composed the music for the smash-hit stage production of “Billy Elliot,” which

was nominated for a record-tying 15 Tony Awards and won 10, including Best

Musical. He brings his glitzy flair and signature style to The Colosseum in his

second residency there, after “The Red Piano.”

PHILLIP MOORE IN

“BARRY AND ME:

A TRIBUTE TO

BARRY MANILOW”

Palm Springs cabaret singer Phillip Moore will bring his

show, “Barry and Me: A Personal Tribute to Barry Manilow”

to the MA4 on April 4, 2018. The show is Phillip’s tribute to

this amazing singer/songwriter that has been a part of his

life since childhood.

In the show, based on a journey back in time to the beginnings

of Barry Manilow’s rise to fame, we follow a young

man’s aspirations of becoming a singer and actor that led

him to journey to California and start that new artistic

career just a few years ago.. The production is narrated

and sung by Phillip with keyboard accompaniment by

Jason Weber.

Joining Phillip for the April 4, 2018 show will be featured

guest artist Darci Daniels, a well-known singer and actress

who has performed extensively in San Diego as well as

Los Angeles and Palm Springs. Darci plays both Bette

Midler who he collaborated with in his early career, and

Judy Garland who he recorded a song with on his “Duets”

album.

In addition to the many well-known hits we have all come

to love (Weekend in New England, Mandy, One Voice,

Copa, etc.) several lesser-known but beautiful songs Barry

wrote will be featured.

The show traces the dreams of a young boy (Phillip) who

aspired to become a singer from his childhood to growing

up and, finally, moving to California to pursue an artistic

career. This young boy was heavily influenced by Manilow’s

songs which he learned at an early age. Manilow’s

early career is also highlighted, peppered with interesting

tidbits about his life.
