CLUB CUISINE TURC MAIN DISH: SHEPHERD’S SALAD Ingredients - large tomatoes (preferably vine-ripened) - cucumbers (firm) - 1 large onion, finely diced - 1 bell pepper (hot peppers]) - 1 tablespoon parsley (chopped) - 1/4 cup oil - 1 tablespoon fresh lemon juice - Salt and pepper to taste Instructions: 1. Wash and pat dry the vegetables. With a sharp paring knife, skin the tomatoes then dice them into cubes, being careful not to crush the flesh. 2. Remove the stems and seeds from the pepper and peel the cucumbers and onion. Dice them all into cubes about the same size as the tomatoes. 3. Put all the diced vegetables into your serving bowl, add the parsley and toss gently with your fingers. 4. In an other bowl combine the oil, lemon juice, salt and pepper and shake well. 5. CLUB CUISINE TURC DESSERT: SEMOLINA DESSERT Ingredients - 4 cups semolina - 10 tablespoons unsalted butter - 4 cups milk - 4 cups sugar - 3 cups water - 6-8 tablespoon almond Instructions: 1. For sweet syrup; leave the mix of water, sugar and milk in a small sauce pot on low heat to boil. 2. In a big pot melt the butter with almonds. Start frying almonds. 3. Put the semolina into this pot and combine it with a wooden spoon constantly, roast it for about 20 minutes, until the semolina and the almonds lightly change color. 4. After the semolina has roasted well, put the hot sweet syrup into the semolina pot. Continue mixing semolina mixture with the help of a wooden spoon. 5. Continue to cook it for about 8-10 minutes on a low heat 6. Serve the Semolina Dessert Club Cuisine Turc – ESN Nancy 09/04/2018
