Sumit Arora is the Executive Chef at DoubleTree by Hilton Bristol North. He's been at the popular hotel for

almost two years and has over 15 years of experience under his chef's hat. He took time out to tell us more…


In the Kitchen with...

Q: What made you want to be a chef and when

did your love of food first start?

I have always had a passion for cooking from a

young age when growing up in India. My family were

all working within the Indian catering industry, so

I was brought up with a love of food, eating and

cooking with an interest in food innovation.

Q: Who or what inspires your cooking?

Most importantly, my mother was the key person

that inspired me both to start a career as a chef

as well as an ongoing inspiration in my day-to-day

cooking. As well as my mother, many of my family

members have all inspired me in different ways with

their knowledge and understanding of the catering

industry.

Q: What are your go-to ingredients?

I wouldn’t say that I have a key go-to ingredient,

however my focus is always which ingredients

would be best suited to make the dish flavourful

and colourful.

Q: What's proving to be the most popular dish

this month and why do you think that is?

Butter Chicken Curry. The feedback we are receiving

is that it is great to be served an authentic curry with

a subtle taste, texture and appearance; which is

not usually the norm within a hotel which is part of

a chain.

Q: Do you have any stand out dishes or packages

which are popular with corporate guests? What

can they expect to eat when attending an event

at your venue?

Our popular themed nights would be Curry Night on

Tuesdays and Grill Night on Thursdays. These nights

give our regular corporate midweek guests a bit of

variety and are also very popular with external hotel

guests. Our Sunday lunch carvery is also proving

very popular within the local community and in

particular with children since the launch of the

Sunday sweet cart.

If attending a Gala Dinner or Charity Event, the most

popular dish is the Blade of Beef followed by our

signature DoubleTree Cookie Cheesecake.

Q: What options are available for bigger events

such as celebrations, parties and conferences?

And how much prep is required for these types

of events?

We cater for all food requirements; from afternoon

tea, to finger buffet birthday parties, to hot fork

buffet wedding anniversaries, black tie gala dinners,

charity events and weddings. We really are here

to meet the exact requirements for each guest’s

individual event and can work alongside them to

create the dishes that they want served.

Q: Do you use locally sourced ingredients and

produce, and does this change seasonally? What

would you recommend for a small scale meeting

in the summer compared to the winter? Would it

vary?

Yes, we use locally sourced ingredients and our

menus change seasonally. We are launching our

new Pergoda and that will allow us to provide

guests with al fresco dining and a focus on our BBQ

offerings for the summer months. In the winter, the

aim is to provide home cooked comfort food, with

soups and stews the popular choices. We focus

on healthy, nutritional working lunches for our

conference guests to ensure that they are revitalised

and ready for their afternoon meeting requirements.

Q: What three reasons would you give event

organisers to choose your hotel for their next

event?

Food, service and hospitality.

Q: Are there any interesting facts about the

history of your hotel which would interest our

readers?

Our restaurant is named Brunel’s Hat Restaurant

and pays homage to Britain's most famous engineer,

Isambard Kingdom Brunel.

The hotel recently rebranded to the DoubleTree by

Hilton Bristol North (formerly Hilton Bristol) as part

of a £2.5million renovation programme.
