Arbor Hill <strong>Gourmet</strong> Foods<br />
Arbor Hill Winery is located in South Bristol just north of<br />
Naples, New York, which is located at the southern end of<br />
Canandaigua Lake in the famous Finger Lakes Region. In<br />
1987 Arbor Hill opened in just one building. Now it sits in a<br />
complex of antique buildings (including the original), in a<br />
wonderful warm New England country setting. The Brahm<br />
family takes great pride in the fact that they produce their<br />
products on the premises. In their country complex they have<br />
several buildings; one is the retail shop, another is The Brown<br />
Hound Bistro (restaurant), and two barns serve as the wine<br />
cellar and the food production area
Borsari Food Company<br />
The Borsari Food Company was formed in 2002 after a market study<br />
showed that a seasoning salt based on Borsari founder Adolph G.<br />
Morando's family's recipe would be successful. Morando's maternal<br />
grandmother, Adelceesa Pirani Borsari, brought the recipe to America<br />
from the province of Emilia, Italy when she immigrated in 1914. She<br />
gave the recipe to her grandson, Adolph, as a gift and because he was<br />
the namesake of her beloved husband, Adolph. Mr. Morando produced<br />
the salts for friends and family for nearly 25 years before deciding to test<br />
their commercial marketability.<br />
Noni's salts are uniquely authentic from Northern Italy and she would<br />
be proud to been seen on the store shelves throughout our country!<br />

Cherry Knoll Farm<br />
Cherry Knoll Farm was settled in approximately 1850 by Lester Hall<br />
and has been family<br />
owned ever since. Originally a 141 acre dairy farm plus a 13 acre<br />
woodlot, the farm was named<br />
for the grove of black cherry trees that stood on the knoll near the edge<br />
of the property.<br />
In recent decades, the land has been used for fruits, vegetables and grain.<br />
The first blueberries were<br />
planted in 1985. Currently, Cherry Knoll Farm produces only blueberries.<br />
These blueberries are<br />
used for making four blueberry wines and blueberry wine vinegar.<br />
The blueberry field is also open to the public for U-Pick customers.

The Chocolate Pizza Company was founded by Bonnie Hanyak over 20<br />
years ago. Bonnie originally planned on having a small floral and gift<br />
basket store but her success quickly grew. In 1992, Bonnie created her<br />
unique Chocolate Pizzas, blending premium chocolate with a famous<br />
Marcellus Candy recipe from 1919 for English Toffee and topping it all<br />
with pecans, almonds and walnuts. It was a taste masterpiece. She later<br />
added Peanut Butter Wings - locally produced potato chips, covered in<br />
peanut butter and dipped in chocolate - to her line so that she could<br />
offer "Chocolate Pizza and Peanut Butter Wings." Today, the<br />

Maggie’s Famous Hot Sauce<br />
Maggie Checho’s family for years has owned and operated Lima Golf & Country Club, a golf<br />
course and restaurant just south of Rochester, NY. Years ago when her father-in-law, John<br />
Checho was still with them, the two used to bicker back and forth about the best way to cook<br />
and prepare food. This good natured bickering led to a $5 bet about who could make the best<br />

For over a century, the Merle family has produced maple products, eggs and raised dairy<br />

Lyle Merle received the “Producer of the Year Award” in 2007 from the New York Farm Viability<br />
Institute for his innovative thinking, roll-up-your-sleeves, hands-on development of new processes,<br />
practical application and a willingness to share his work with the rest of the agricultural<br />
industry. In 1988, Arthur E. Merle Jr. was inducted into the Maple Hall of Fame in the<br />
American Maple Mu-seem in Croghan, New York. Arthur also received the Hubbell Award<br />
in 1994. The Hubbell Award has been presented annually since 1991 by the NYS Department<br />
of Agriculture and Markets to a maple producer from New York State in recognition of the<br />
producer’s work in furthering education of maple sugaring. In 1998, Florence C. Merle was<br />
presented with the Hubbell Award. Lyle and Dottie Merle were awarded the Hubbell Award<br />
together in 2010.<br />
Merle Maple was awarded four of seven first place ribbons in the maple categories at the<br />
New York State Fair in 2007 - and Best of Show for on our maple syrup the fourth time in<br />
seven years!

Born in India, Chef A.J., his mother and his sister moved to America in the early 1980s with<br />
a little more than $60 to their name. But more valuable than money, A.J. brought with him his<br />

obtain the ingredients while growing up in upstate New York, A.J. embarked in making his<br />
own recipes based on his family traditions and teachings, but with new spices he could obtain<br />
in the States.<br />
When he moved with his own family to the foothills of the Heldeberg Mountains, he rediscovered<br />
an old recipe that needed a few adjustments. Over time, this recipe was served at family<br />
gatherings and other social functions. With his family’s encouragement and assistance, they<br />

had an overabundance of cull tomatoes in our greenhouses, we<br />

the help of the great folks at <strong>Nelson</strong> <strong>Farms</strong>, near Morrisville ,<br />
NY , the “Old Goat” food line was born.<br />
We do not use pesticides in our tomato, pepper and herb<br />

Olde Oxbow Smokehouse Company<br />
The Olde Oxbow Smokehouse Company was founded in 2007 by Gary E.<br />
Cunningham of Oxbow, NY. Having grown up working in his family’s meat packing<br />
business, he has often made his own meat sauces and marinades for friends and<br />
family. Following their advice, Gary decided to put his recipes on the market. Since<br />
local business is important to rural New York, Oxbow Smokehouse products are<br />
proudly made at <strong>Nelson</strong> <strong>Farms</strong> food production facility (a part of Morrisville State<br />
College) and are Pride of NY products.<br />
The business has since taken off; the sauce has been a hit at events such as<br />
pig roasts and chicken barbecues and the products are now sold in many<br />
grocery and specialty shops throughout Northern New York.

Our Farm<br />
For years I have made rhubarb sauce, freezing for use year round. I<br />
ate it plain as one would eat apple sauce. One day, it came to me to<br />
try it with yogurt. As soon as I tried it, I knew it was a special<br />
combination. So every year, I would scrounge off my friends and<br />
neighbors who had rhubarb plants, asking for contributions to my<br />
rhubarb habit. I believed in the product and in our ability to<br />
market the product. So I purchased 250 rhubarb root stocks and<br />
planted them the length of a field in the spring of 2010. This year<br />
the plants overwintered and came back with a vengeance. Next year<br />
they will be mature enough to harvest them completely. So we had<br />
enough rhubarb to make 3 batched of rhubarb sauce. Next year, we<br />
may plant more and we should have enough material to make more<br />
than double the product.<br />
We believe in this product. There are a lot of rhubarb lovers who<br />
cannot buy a ready to eat rhubarb product. Many others have not<br />
really tried rhubarb. So we believe there are a lot of folks who will<br />
enjoy consuming our rhubarb sauce. Enjoy it!

Rome Grown<br />
A snow plowing business that grew too large to store equipment in the city was the<br />
eventual catalyst for fresh garlic and related products. In 1973, Al and Dorothy<br />
Williams bought two barns in Rome, New York located on black, fertile soil known as<br />

Stop-n-Top is a small town company started by five guys involved in an<br />
Investment Club who wanted to do something other than sit around and talk<br />
about the stock market. None of us had any experience in manufacturing<br />
anything, so through trial and error (and a lot of ice cream); we believe we<br />

Sugar and Spice Sweet Sauce<br />
My product is a sweet and savory dipping sauce that is low in sodium and gluten free. I did<br />
not create the original recipe. A friend of mine was friends with pub owner James<br />
Hill in Rochester, NY, who served the sauce on the chicken wings he sold at his<br />
establishment. Via my friend, I suggested Mr. Hill should market his remarkable<br />
sauce. Although he was not interested in marketing the sauce beyond his pub, he did<br />
share the ingredients and measurements with my friend, who in turn shared the<br />
information with me. Even with the recipe, neither one of us was able to re-create<br />
the sauce. It seemed like there was some critical element missing, and I wondered if<br />
that was the pub owner’s way of keeping his recipe a secret.<br />
I had been buying the sauce via my friend for several years when, sadly, Mr. Hill died. I knew then I could<br />
not let the recipe die as well. Something this delicious and unique deserved to be brought to the public. I<br />
actually feel like I am performing a public service, bringing it to market.<br />
It took me four months and about $400 in wasted ingredients to figure out the recipe. There were many<br />
discouraging times when I thought I would never figure it out. But one of my mottos is, if you try hard and it<br />
still doesn’t work, it means you have to try differently. And that’s exactly what I did until the secret of the<br />
sauce revealed itself to me.<br />

It all started on a hot summer day in the Desert Southwest. During one of the many<br />
weekend barbecues whilst surrounded by billowing clouds of aromatic barbecue smoke,<br />
there began an earnest search for more flavor and zest. Ideas started to take shape.<br />
Searches were done for spiced up ideas, both fresh and new and also ages old. This was<br />
where the first seeds of a spice filled future were planted.<br />
Many a weekend nights was spent mixing spicy concoctions, searching for new taste<br />
sensations. Pinches of this, spoonfuls of that and dashes of all sorts of tasty things,<br />
each heaped one upon the other in picturesque disorder. Spices, herbs, salts and<br />
