Borsari Food Company
The Borsari Food Company was formed in 2002 after a market study
showed that a seasoning salt based on Borsari founder Adolph G.
Morando's family's recipe would be successful. Morando's maternal
grandmother, Adelceesa Pirani Borsari, brought the recipe to America
from the province of Emilia, Italy when she immigrated in 1914. She
gave the recipe to her grandson, Adolph, as a gift and because he was
the namesake of her beloved husband, Adolph. Mr. Morando produced
the salts for friends and family for nearly 25 years before deciding to test
their commercial marketability.
Noni's salts are uniquely authentic from Northern Italy and she would
be proud to been seen on the store shelves throughout our country!
Borsari Food Company will continue to expand and bring great products
to you, family and friends. We hope you will make Borsari a family
tradition. Bon Appetito!
Blenheim Hill Sorghum Syrup
Sorghum Syrup is a natural sweetener made by processing
juice
Squeezed from the stalks of certain types of
sorghum(Sorghum Bi-color) called sweet sorghum or sorgo.
Sweet Sorghum is grown from syrup foliage, where as most
of the sorghams, commonly referred to as milos or kafirs, are
grown from grain.
This juice is boiled down, much like maple syrup,to produce
a dark sweet syrup similar in flavor to molasses without the
bitterness associated with molasses.
Sorghum does not need to be refrigerated and will not mold.
Sorghum contains iron , calcium and potassium.

Carmella’s Sauce
Spaghetti Sauce: Reach back into your memories for the one of the sauce pot simmering
slowly on the stove for Sunday dinner. The smell of it would drive you into the kitchen, your
grandma would let you give the sauce a stir; it’d be silky and rich - Sunday dinner on a wooden
spoon. We use the best stuff, cook it slowly and bring it to you because even you don’t remember we
do. Now wipe your chin!
Mari Sauce: Serve this to a man and he may want to “Mari” you! He taught his third daughter,
Toni, how to make his Mari sauce. Toni taught our cooks…so eat our sauce and be Mari!
Cali Sauce: Use this sauce for your Bruschetta, ladle it over grilled fish, or sauté your shrimp in it.
Hell, we’d bathe in it if we could. Carmella and Mike were inspired to create this sauce by the
fresh vibrant flavors they tasted on the west coast.
Carmella’s dressing is the very definition of what the “House Italian” ought to be - a proper
blend of vinegar and oil, with just the right herbs and spices in the right proportions. It’s the
perfect start to your memorable and satisfying Italian Dinner.

Cherry Knoll Farm
Cherry Knoll Farm was settled in approximately 1850 by Lester Hall
and has been family
owned ever since. Originally a 141 acre dairy farm plus a 13 acre
woodlot, the farm was named
for the grove of black cherry trees that stood on the knoll near the edge
of the property.
In recent decades, the land has been used for fruits, vegetables and grain.
The first blueberries were
planted in 1985. Currently, Cherry Knoll Farm produces only blueberries.
These blueberries are
used for making four blueberry wines and blueberry wine vinegar.
The blueberry field is also open to the public for U-Pick customers.

The Chocolate Pizza Company
I am Ryan Novak , the new owner of The Chocolate Pizza Company!
The Chocolate Pizza Company was founded by Bonnie Hanyak over 20
years ago. Bonnie originally planned on having a small floral and gift
basket store but her success quickly grew. In 1992, Bonnie created her
unique Chocolate Pizzas, blending premium chocolate with a famous
Marcellus Candy recipe from 1919 for English Toffee and topping it all
with pecans, almonds and walnuts. It was a taste masterpiece. She later
added Peanut Butter Wings - locally produced potato chips, covered in
peanut butter and dipped in chocolate - to her line so that she could
offer "Chocolate Pizza and Peanut Butter Wings." Today, the
Chocolate Pizza Company's primary focus is delivering our delicious
chocolate products to you!

Erie Canal Emporium
ERIE CANAL CHILI SAUCE was a created by my great-grandmother
around the time of the Civil War. Passed down for generations,
it’s one of many lasting family traditions. It is still made like she
did it, with farm fresh vegetables and just enough spice for the
perfect taste. Enjoy the old world flavor of simplicity from our
1860’s recipe.
ERIE CANAL JAMS carry a recipe as far back as the Civil War
that was used amongst the farm wives. My great-grandmother
used to sell a summers supply to the packet boat cooks and to the
canal side stores. This recipe is unchanged and is as good today as
it was those many years ago.

Foothill Hops
Founded in 2001 by Larry and Kathlyn Fisher, Foothill Hops provides quality NOFA-NY
certified organic hops as well as conventional hops and hop products for home brewing,
homeopathic health-care and decorative uses.
Our personal interest in growing hops began with a visit to Madison County Historical
Society’s Hop Fest where we learned about CNY hop history, Northeast hop growing
trials, herbal and ornamental uses of hops, and architectural preservation. We truly
enjoyed experiencing the remnants of a culture long gone and began to see the potential
for the return of hops to New York State. Foothill Farms is always experimenting in their
kitchen. They have developed several condiments and snacks that feature their delicious
hops.
Try our Bitter Sweet Hot and Spicy Beer and Hop Mustard and our Spiced Northern
Brown Malt and Hop Mustard.

Full Throttle
The excellent quality and unique flavor of Full Throttle BBQ Sauce is no
sauces…No Preservative…No Fructose Corn Syrup…and it is Gluten Free.
The flavor is rich and bold, but we have kept the sugar and sodium low.
Texas Style (Smokey and sweet with just the right heat). Either one will
make your barbeque a winner!
Juanita’s Soul Classics
In 1988 Juanita Bass purchased a historic Victorian-era Italianate home in
Bridgewater. She refurbished it and opened it as The White House Berries
Inn, the nationally known restaurant and bed and breakfast, famous for its
classic American Soul Food cuisine and authentic Victorian appointments.
Juanita created her Home-Style Barbecue Sauce while searching for
the perfect blend for her award-winning ribs.
She created her All-Spice Seasoning years ago as a shortcut way to measure
out and add all the right spices to her dishes when she was doing the cooking
at The White House Berries Inn. Her All-Spice Seasoning really kicks up the
flavor in whatever you’re cooking.

Landmark Tavern
In 1970, Andrew Hengst and his sons Andrew Jr. (Jock) and Steve opened the
Landmark Tavern in a unique historic building in Bouckville, New York,
fulfilling a longtime dream of Andy’s. Adolph, Andy’s father, had owned a
meat market and grocery store in Hamilton for 50 years. It was there and
later as a food service director at Colgate University, that Andy learned
many of the basic requirements of a good restaurateur.
From the historic Landmark Tavern comes a line of dressings created in
their kitchens and now bottled for home use. Their homemade House
Dressing, Raspberry Vinaigrette, Barbecue Sauce and Coleslaw Dressing,
follow the same recipes sampled in the dining room of the Landmark Tavern
itself.

Maggie’s Famous Hot Sauce
Maggie Checho’s family for years has owned and operated Lima Golf & Country Club, a golf
course and restaurant just south of Rochester, NY. Years ago when her father-in-law, John
Checho was still with them, the two used to bicker back and forth about the best way to cook
and prepare food. This good natured bickering led to a $5 bet about who could make the best
hot sauce - something that became Maggie’s 20 year occupation.
Over the years, Maggie’s recipe took off and became very popular. The golfers put it on
Everything! At the start of every season, they would say they were looking forward to the hot
sauce as much as the golf. They always wanted to know when Maggie was going to bottle and
sell it.
Now, with many thanks to her friends and family, Maggie’s Famous Hot Sauce is finally
available for sale. Maggie hopes you enjoy it as much as the golfers have over the years.

Miss Sydney’s
Born in India, Chef A.J., his mother and his sister moved to America in the early 1980s with
a little more than $60 to their name. But more valuable than money, A.J. brought with him his
passion for the unique combination of spices and flavors that he enjoyed in India. Unable to
obtain the ingredients while growing up in upstate New York, A.J. embarked in making his
own recipes based on his family traditions and teachings, but with new spices he could obtain
in the States.
When he moved with his own family to the foothills of the Heldeberg Mountains, he rediscovered
an old recipe that needed a few adjustments. Over time, this recipe was served at family
gatherings and other social functions. With his family’s encouragement and assistance, they
formed Miss Sydney’s Secret Family Recipes. They now make and sell Indu’s Chutney and Miss
Sydney’s Original Marinade.

peanut butter and chocolate sauce to the public...and you'll be
so glad they did! Cute jar includes tiny sampling spoon. Perfect
the help of the great folks at Nelson Farms, near Morrisville ,
Olde Oxbow Smokehouse Company
The Olde Oxbow Smokehouse Company was founded in 2007 by Gary E.
Cunningham of Oxbow, NY. Having grown up working in his family’s meat packing
business, he has often made his own meat sauces and marinades for friends and
family. Following their advice, Gary decided to put his recipes on the market. Since
local business is important to rural New York, Oxbow Smokehouse products are
proudly made at Nelson Farms food production facility (a part of Morrisville State
College) and are Pride of NY products.
The business has since taken off; the sauce has been a hit at events such as
We believe that the family is a circle of strength and love. The center of that circle
always seems to be the kitchen. Cooking is a family affair at Onion Creek Farms and
we hope to share this love with you. There are no happier times than when we are
preparing meals with family and friends, sharing stories, laughter and great food.
Onion Creek Farms is a company born from that love of cooking, from the kitchen to
the barbecue to starlit evenings along side the campfire. Sometimes those family
campfire conversations nurture ideas to share something wonderful. This is the case
with Onion Creek Farms.
The "Boys In The Boat", cousins Jake, Matt and Joe, are enjoying a peaceful morning
fishing on Great Grandpa Carl's boat. Look for them on every Onion Creek Product
and share their adventure.
We are looking forward to becoming part of your cooking experience and helping to
create new memories with you.
Thank you for visiting. Warm Regards!
Our Farm
For years I have made rhubarb sauce, freezing for use year round. I
ate it plain as one would eat apple sauce. One day, it came to me to
try it with yogurt. As soon as I tried it, I knew it was a special
combination. So every year, I would scrounge off my friends and
neighbors who had rhubarb plants, asking for contributions to my
rhubarb habit. I believed in the product and in our ability to
market the product. So I purchased 250 rhubarb root stocks and
planted them the length of a field in the spring of 2010. This year
the plants overwintered and came back with a vengeance. Next year
they will be mature enough to harvest them completely. So we had
enough rhubarb to make 3 batched of rhubarb sauce. Next year, we
may plant more and we should have enough material to make more
than double the product.
We believe in this product. There are a lot of rhubarb lovers who
cannot buy a ready to eat rhubarb product. Many others have not
really tried rhubarb. So we believe there are a lot of folks who will
enjoy consuming our rhubarb sauce. Enjoy it!

manufactures food products that use local produce and is striving to reduce our carbon
The company name and picture logo, Primo & Mary’s, comes from two of my family
members: Primo (my great grandfather) and Mary (my great aunt), pictured in front of The
Peoples Grocery Meat Market in Iowa 1912.
Wanting to incorporate all the things that are important to me, Primo & Mary’s Heritage
Products, Inc. was created. Family, food, local business, and local charity, I found a way to
make all of it come together as a fourth generation “foodie.”

Rome Grown
A snow plowing business that grew too large to store equipment in the city was the
eventual catalyst for fresh garlic and related products. In 1973, Al and Dorothy
Williams bought two barns in Rome, New York located on black, fertile soil known as
“muck.”
Five years later, this land was rejuvenated by the Williams family. Today, their
main product is garlic and why not? The “Stinking Rose” is not only a staple in
world cuisine, but has been long sought after for its health attributes.
Today, the snow plowing business still thrives, but from an edible point of view - a
snowplow is rather mundane. Instead, they offer garlic and garlic olives that will wake
up your taste buds and leave you happy.

Sugar and Spice Sweet Sauce
My product is a sweet and savory dipping sauce that is low in sodium and gluten free. I did
not create the original recipe. A friend of mine was friends with pub owner James
Hill in Rochester, NY, who served the sauce on the chicken wings he sold at his
establishment. Via my friend, I suggested Mr. Hill should market his remarkable
sauce. Although he was not interested in marketing the sauce beyond his pub, he did
share the ingredients and measurements with my friend, who in turn shared the
information with me. Even with the recipe, neither one of us was able to re-create
the sauce. It seemed like there was some critical element missing, and I wondered if
that was the pub owner’s way of keeping his recipe a secret.
I had been buying the sauce via my friend for several years when, sadly, Mr. Hill died. I knew then I could
not let the recipe die as well. Something this delicious and unique deserved to be brought to the public. I
actually feel like I am performing a public service, bringing it to market.
It took me four months and about $400 in wasted ingredients to figure out the recipe. There were many
discouraging times when I thought I would never figure it out. But one of my mottos is, if you try hard and it
still doesn’t work, it means you have to try differently. And that’s exactly what I did until the secret of the
sauce revealed itself to me.
Tango Spice Company
It all started on a hot summer day in the Desert Southwest. During one of the many
weekend barbecues whilst surrounded by billowing clouds of aromatic barbecue smoke,
there began an earnest search for more flavor and zest. Ideas started to take shape.
Searches were done for spiced up ideas, both fresh and new and also ages old. This was
where the first seeds of a spice filled future were planted.
Many a weekend nights was spent mixing spicy concoctions, searching for new taste
sensations. Pinches of this, spoonfuls of that and dashes of all sorts of tasty things,
each heaped one upon the other in picturesque disorder. Spices, herbs, salts and
various tasty flavorings tried once, twice, multiple times in many combinations -
looking for that wow factor!
Here at Tango Spice Company, we put our taste buds and appetites to work in order to put
together the tasty combinations which we know you will crave. Every spice blend we produce has
been extensively tested in our smokers, on our grills, in our ovens and on our stoves. Anywhere
fine foods are being prepared here at the Tango Test Kitchen you will find our blends. If it does
not thrill our taste buds, it will never be offered to you.

Tanna’s
Tanna’s Tuscan Sea Salt is the most flavorful salt you’ve ever had! It’s loaded
with fresh, organic garlic, lavender and sage. Freshness is key, that’s why it’s so
moist and why the flavors are so lively and vibrant. Sprinkle or rub on roasting
chicken, salmon filets for the grill, or a fresh garden salad. Steaks and chops
need nothing else!
Tanna’s Lemon Fig Chutney: Here’s to fig lovers everywhere! This chutney is loaded
with
sweet, chewy Turkish figs - one of nature’s loveliest gifts - and topped off with a
bright splash of lemon. The savory notes in the background are garlic and ginger -
of course. Tanna’s Lemon Fig Chutney is the perfect chutney to serve with fish,
especially salmon. It’s also wonderful with grilled or roasted chicken, pork or lamb.
If you have a passion for garlic and ginger, you will love Tanna’s Garlic & Ginger
Chutney! It has flavors that won’t quit, starting with a vibrant burst of garlic and ginger
Tom’s Bootleg BBQ Sauce
Tom’s Bootleg BBQ Sauce has a unique, worldly flavor. It is made with only quality
ingredients from across the globe: England, France, Italy, Puerto Rico, Jamaica and
of course, south of the Dixie border. You’ll never find any artificial flavors or
preservatives in Tom’s Bootleg BBQ Sauce. Its flavor hits your palate with a slight
bite and lingers for 30 seconds to a whole minute.
Tom created Bootleg’s one-of-a-kind flavor by mixing five types of alcohol with other ingredients,
then boiling the mixture to evaporate the alcohol content. At first, he sold his signature barbecue
sauce in wine bottles from the back of his trunk, which gave it a real “bootleg” feel. The name was
a no-brainer.
Now his sauce comes in a smaller bottle, but it still has the full flavor it always has. It’s really
much more than a barbecue sauce - it goes well on almost anything!

Yellow Dog Sauce Co.
Barry Raichlin tasted a lot of barbecue over the course of 30 years as a
truck driver.
Unfortunately, to his surprise, nothing really seemed to stand out from the
crowd. He and his wife JoEllen needed to find that ultimate barbecue
experience, so they created their own -Yellow Dog Sauce Company.
Their homemade barbecue and wing sauces are the result of hundreds of
hours of reading, cooking and the best part, tasting! The ingredients are so
simple it’s almost sublime. They simmer their homemade sauces to ensure
that the spices blend perfectly to create what they think is the best old
fashioned barbecue and wing sauce around.
Try it on beef, wild game, pork, lamb, chicken or fish!
