CHICKEN N’ DUMPLINS<br />

This simply delicious soup is a<br />

part of every family celebration<br />

and Christmas Day wouldn’t be<br />

complete without a large pot of these<br />

amazing chicken and dumplins’. This<br />

is a generational family recipe has<br />

soothed the souls of many-a-folk.<br />

It’s the most “requested church dish”,<br />

winner of local cooking contests and<br />

sure to be a part of your family’s most<br />

requested dish.<br />

1 whole 4 to 5 pound chicken<br />

5 cups plain flour<br />

1 TBS salt<br />

1 tsp baking soda<br />

2 cups milk<br />

yellow food coloring<br />

Put the chicken into a large soup pot.<br />

Add enough water to cover completely.<br />

Cover the pot, set over high heat, and<br />

bring to a boil. Reduce heat to low,<br />

partially cover, and very gently simmer<br />

until the chicken is cooked through,<br />

about 1 hour.<br />

When the chicken is done, transfer it<br />

to a cutting board, leaving the broth in<br />

the pot. When chicken is cool enough<br />

to handle, pull the meat from the bone<br />

in small pieces and set aside (discard<br />

bones, skin, and other waste).<br />

In a bowl, combine the flour, baking<br />

soda and salt. Add about six drops of<br />

yellow food coloring to the milk. Stir in<br />

the milk to the dry ingredients, mixing<br />

with a fork until the dough forms a<br />

ball. You want the dough to pull away<br />

from the bowl, so adjust the water and<br />

flour accordingly.<br />

Heavily flour a work surface. You’ll<br />

need a rolling pin and something to<br />

cut the dumplings with. I like to use a<br />

pizza cutter. I also like to use a small<br />

spatula to lift the dumplings off the<br />

cutting surface.<br />

Roll the dough out thin with a heavily<br />

floured rolling pin. Dip your cutter<br />

in flour and cut the dumplings in<br />

rectangles. It’s okay for them not<br />

to be exact. Just eye ball it. Some<br />

will be bigger, some smaller, some<br />

shaped funny.<br />

To cook them, bring the broth to a boil.<br />

Drop the dumplings in one at a time,<br />

stirring while you add them. <strong>The</strong> extra<br />

flour on them will help thicken the<br />

broth. Cook them for about<br />

15-20 minutes or until they not doughy<br />

tasting. Add the cooked chicken to<br />

the pot and you’re done! Add salt and<br />

pepper to taste.

People think Christmas is only about presents. It’s not. <strong>The</strong><br />

child of Christmas is God. It is about our Savior being born. I come<br />

from an Italian-American family. For Christmas we have fish and<br />

practically a feast. Most of my family is Catholic except for my<br />

mom and grandma, who are Jewish. But just because they do<br />

not practice our religion, doesn’t mean they do not celebrate. Yes<br />

Christmas is about Mary giving birth to Jesus, the child of God, but<br />

it’s also about being thankful and generous.<br />

That is where the presents and stockings come in. <strong>The</strong><br />

stockings are originated from the shoes people would put by<br />

windows to dry when they got wet. St. Nicholas went to the poor<br />

people and when they were asleep he would put enough money in<br />

their shoes that is enough for them to live off of. That is why he is a<br />

saint. He used his kindness towards the poor. Kindness. That is the<br />

true meaning of Christmas.

2 cups flour<br />

½ cup salt<br />

¾ warm water<br />

Mix ingredients in a bowl. Knead<br />

on a floured surface for 10 minutes<br />

– don’t skimp because this helps<br />

the dough to become smooth and<br />

pliable. If the dough is too sticky, add<br />

more flour. Roll the dough to ½ inch<br />

thick. Press hand, thumb or paw into<br />

dough. Cut out as desired. Use a<br />

skewer or straw to make a hole for<br />

the ribbon. Place ornaments on a<br />

cookie sheet lined with parchment<br />

paper and cool at 200 degrees F<br />

for four hours. Once cool, paint<br />

with acrylic paint. After the paint as<br />

dried, spray with clear sealant after<br />

the paint has dried.<br />

Paint the inside of each bottle cap<br />

white. Glue three bottle caps to a<br />

piece of ribbon. You’ll also want<br />

to put a bit of glue in between<br />

each bottle cap to hold them<br />

together. Form a loop with the top<br />

of the ribbon and glue in place.<br />

Use a toothpick to paint eyes, a<br />

nose, mouth and buttons on your<br />

snowmen. Tie a ribbon or yarn<br />

between the first and second bottle<br />

caps to make a scarf and accent with<br />

a button if you like.
