Into <strong>November</strong> we go, the dark evenings are now<br />

here and whispers of Christmas start to appear.<br />

Christmas is one of my favourite times of year, I<br />

won’t lie, so I have really enjoyed working on our<br />

pre-Christmas edition of <strong>Bounce</strong>. Look out for the<br />

special Christmas offers, local festive events and<br />

be sure to use our Christmas Gift Guide to draw<br />

inspiration for treating that special someone.<br />

This month, I had the pleasure of interviewing<br />

Rick Wakeman. He is no stranger to the area,<br />

in fact he lives nearby and is a <strong>Bounce</strong> reader<br />

himself. We spoke about his Christmas show<br />

stopping by us in Ipswich and discussed his<br />

career to date and time in ‘Yes’.<br />

Our review took place in the coastal Town<br />

of Southwold. We visited The Swan after its<br />

multimillion-pound refurbishment by local brewery<br />

A new initiative to give dogs a warm<br />

welcome in Bury St Edmunds...<br />

DOG FRIENDLY BURY<br />

Shops, eateries, places to stay,<br />

attractions, and other businesses<br />

will be able to display the<br />

#dogfriendlybse paw print logo<br />

sticker in their window and put<br />

out a dog water bowl to show<br />

they are dog friendly.<br />

The initiative, funded by Bury St<br />

Edmunds Town Council, aims to help<br />

visitors and residents easily identify<br />

businesses that are dog friendly in and<br />

around Bury St Edmunds.<br />

‘Dog-Friendly Bury St Edmunds’ was<br />

launched at Really Rather Good, a café<br />

in Abbeygate Street and just one of the<br />

many dog friendly businesses in the<br />

town.<br />

A Winter Wedding<br />

Winter weddings can<br />

be utterly magical and<br />

romantic, but there are<br />

a few inevitable issues<br />

that go hand in hand with<br />

weddings held during the<br />

darker months.<br />

If you’re having a winter<br />

wedding, don’t panic; all<br />

these problems are really<br />

small and totally avoidable<br />

with some preparations<br />

beforehand. Here are my<br />

tops tips:<br />

It will be cold so accessories will be important to keep<br />

warm. A faux fur stole, a veil, a cape or a chic cardie<br />

are all good options. Alternatively opt for a long sleeve<br />

wedding dress.<br />

2. VELVET CHIC FOR THE GUYS...<br />

For grooms and groomsmen a velvet blazer is ideal. It’s<br />

a nice thick fabric which will keep the guys warm, plus<br />

is perfectly on-trend.<br />

3. DON’T FORGET BEAUTY PREP...<br />

Chapped lips and dry skin are inevitable come winter.<br />

Keep your lips moisturised in the run up to the wedding<br />

(I highly recommend Elizabeth Arden’s 8 Hour Cream)<br />

use a good face moisturiser and have a chapstick in<br />

your clutch on the day.<br />

4. UNDER YOUR DRESS...<br />

If it’s very cold you can always wear thick tights under<br />

your wedding dress (as long as it’s long) - nobody will<br />

know! This goes for your bridesmaids too.<br />

7. EXTRA TRAVEL TIME...<br />

Bad weather means bad traffic, so<br />

give extra time for travel to your<br />

ceremony - no matter how near or<br />

far you are going.<br />

8. ADD ROMANCE WITH<br />

CANDLES...<br />

It will be dark quite early. Embrace it<br />

with lots of romantic candle light in<br />

both your ceremony and reception<br />

space.<br />

9. WINTER WEDDING COLOURS...<br />

Decorate in rich, warm tones of<br />

berry red, burgundy, black and gold.<br />

Add extra wintry romance with lots<br />

of natural greenery, or even a hint<br />

of tartan.<br />

10. KEEP GUESTS WARM...<br />

Consider making an effort to ensure<br />

your guests are kept warm and<br />

cheery once they arrive. A hot drink<br />

on arrival is a nice and simple idea.<br />

DON’T FORGET...<br />

Ice cold blue hands are not a good<br />

look in winter wedding pictures, this<br />

is where hand warmers come in.<br />

A series of articles which will feature boxing facts<br />

from both the past to the present...<br />

Howard Winstone was a<br />

remarkable fighter by any<br />

standards of the imagination.<br />

Even after losing the tips off of<br />

three of his fingers on his right<br />

hand in an accident at work the<br />

Welshman showed a fighting<br />

spirit to overcome this disability.<br />

Winstone became a wizard in<br />

the ring with his speed and<br />

clever movement. Winstone who<br />

was born on the 15 April 1939<br />

had before turning professional<br />

a successful amateur career<br />

winning the Amateur Boxing<br />

Association bantamweight<br />

title in 1958 and in the same<br />

year a gold medal at the<br />

Commonwealth games then<br />

called (Empire).<br />

In the professional ranks<br />

Winstone won not just<br />

the British, European and<br />

featherweight titles but also<br />

the world crown in said weight<br />

category. Winstone stopped<br />

Japan’s Mitsunori Seki at the<br />

Royal Albert Hall Kensington in<br />

London for the vacant World<br />

Boxing Council championship on<br />

the 23rd January 1968 in round<br />

nine of a slated fifteen. (This was<br />

the Welshman’s fourth attempt<br />

at a world featherweight title.<br />

Previous challenges took place<br />

against Mexico’s Vicente Saldivar<br />

on the 7th September 1965 for<br />

the undisputed championship.<br />

Saldivar was a man destined<br />

to be ranked with the greats<br />

in the division. Winstone gave<br />

the Mexican a difficult night’s<br />

work at the Earls Court Arena<br />

in Kensington London but lost a<br />

fifteen round point’s decision.<br />

On the 15th June 1967 Winstone<br />

challenged the Mexican for a<br />

second time the fight was close<br />

and a number in attendance felt<br />

that the Welshman may have<br />

shaded it. Once again Winstone<br />

came up short losing a fifteen<br />

round point’s decision at Ninian<br />

Park, Cardiff in Wales to the<br />

champion.<br />

The third attempt took place<br />

on the 14th October 1967 in<br />

a contest which saw the saw<br />

Welsh fighter travel to the<br />

Estadio Azteca in Mexico<br />

City, Mexico to battle Saldivar.<br />

Pundits did not feel Winstone<br />

would bring the title home,<br />

commonsense dictated that if<br />

he couldn’t defeat the Mexican<br />

on home turf how was he going<br />

to defeat the champion in his<br />

own backyard, plus he had to<br />

deal with the country’s high<br />

altitude. Winstone put in a brave<br />

performance yet once again<br />

suffered defeat when stopped<br />

by Saldivar in round twelve of<br />

fifteen.<br />

The surprise retirement of<br />

Saldivar after the Winstone<br />

victory opened the door for the<br />

Welshman’s winning attempt at<br />

the crown against Mitsunori Seki.<br />

Winstone sadly did not have a<br />

long reign as World champion<br />

since he lost the title in his first<br />

defence against Jose Legra a<br />

Cuban born fighter who was<br />

resident in Spain. The contest<br />

took place on the 24 July 1968.<br />

The venue was the Coney Beach<br />

Arena in Porthcawl Wales.<br />

(Winstone had previously<br />

defeated Legra by way of a ten<br />

round points decision at the<br />

Winter Gardens in Blackpool on<br />

the 22 June 1965.)<br />

Winstone was now clearly<br />

passed his best, time and hard<br />

fights had caught up with<br />

him. Prior to the fight Legra<br />

RICK WAKEMAN<br />

We speak to Rick Wakeman about his upcoming tour..<br />

Following the hugely successful Piano<br />

Portraits tour last year, in support of the<br />

album of the same name, Rick Wakeman<br />

will return in Autumn <strong>2018</strong> with a new show<br />

based on the follow up release, entitled Piano<br />

Odyssey, which will be released September<br />

14th.<br />

journey, all accompanied by his hilarious<br />

memories and anecdotes about the tunes,<br />

plus a few musical surprises.<br />

In December, an additional special Christmas<br />

tour will follow, in which the setlist will be<br />

given a distinctly seasonal twist.<br />

The now twenty-six date tour will feature even<br />

more classic tracks given Rick’s unique piano<br />

treatment, and will travel to towns and cities<br />

not previously visited in 2017.<br />

in January 2017, the YES keyboardist made<br />

chart history, becoming the first solo piano<br />

album to enter the UK’s Top 10, eventually<br />

arrangements, interspersed with Wakeman’s<br />

renowned comedy interludes.<br />

Rachel Ducker catches up with Rick to hear all<br />

about it...<br />

R: Hello Rick how are you? I’ve been looking<br />

forward to speaking with you!<br />

Oh, you’re very brave [laughs]<br />

R: So first I wondered how you<br />

got into music?<br />

It was all I ever did, really.<br />

My parents had a concert party<br />

before the Second World War and<br />

just after the Second World War.<br />

I was born in 1949, and by then<br />

all the concert parties had folded<br />

up. My dad was a great piano player, we had<br />

a little semi house, and there was a piano in<br />

the room downstairs. On Sundays all of my<br />

relations used to come round to sing and play<br />

in the evening.<br />

Nobody really had a telly in those days. I was<br />

three or four years old and I would climb out<br />

of bed and sit at the bottom of the stairs<br />

to listen to all of this music coming out<br />

and I thought it was wonderful. So all I<br />

ever wanted to do was to play music.<br />

My dad sent me to piano lessons when<br />

I was five and that was all I did. I went<br />

through all the grades; I did a scholarship<br />

and my dad encouraged me to listen to<br />

many types of music, jazz bands, rock<br />

bands, dance bands, pop bands and apart<br />

football that was my life.<br />

R: So what would you say to someone<br />

who has just started to learn how to play<br />

piano?<br />

Always be true to yourself.<br />

The first most important thing is to enjoy<br />

it, if you don’t enjoy it, stop. I would say<br />

that about anything because if you don’t<br />

enjoy it, don’t do it, find something you<br />

enjoy and then you will get much more<br />

satisfaction out of it.<br />

When you’re playing, you will get to know<br />

quickly what sort of standard you can<br />

reach. You don’t have to reach grade As,<br />

or doctors standards, just standard you<br />

know you’re comfortable with - and enjoy<br />

yourself, if you can do that then other<br />

people can enjoy listening. I always think<br />

it’s good to set yourself targets, that<br />

doesn’t do any harm.<br />

Someone at a show last year asked me<br />

“if you weren’t doing this right now what<br />

would you be doing,” and I said “well, I will<br />

be home playing.”<br />

R: Well, that was actually one of my<br />

questions! It’s nice to hear you have such<br />

passion for music and that you would be<br />

doing it, anyway?<br />

Yeah, on my last school report<br />

occasionally the headmaster would write<br />

comments, I wish I still had it - I think my<br />

mother destroyed it out of disgust. It said,<br />

“Wakeman will either end up in one of<br />

three places, Westminster, on stage at the<br />

London Palladium, or Wormwood Scrubs<br />

prison”.<br />

I have done two out of three, [laughs] I<br />

have been an advisor at Westminster, on<br />

intellectual property rights, I’ve done the<br />

London Palladium a few times, but not<br />

made Wormwood Scrubs prison.<br />

R: I think those two would be my<br />

preference!<br />

Yes, I have probably done the right two<br />

out of the three!<br />

R: People will know you from being<br />

in the band ‘Yes’, I wondered how you<br />

ended up being in the band?<br />

Well, it’s still going, there’s two ‘Yes’s’ out<br />

which is ridiculous, it’s a rather stupid<br />

thing when bands get on, and there are<br />

lots of different members you suddenly<br />

have two bands the same name, it is<br />

preposterous but there you go.<br />

Jon Anderson, who was the original<br />

founder and the singer, Jon and I worked<br />

together with Trevor Rabin, who wrote<br />

‘Owner Of A Lonely Heart’ and that kind<br />

of thing. We’ve just come back from a big<br />

tour of America and Japan, so we’re still<br />

out going.<br />

I joined them in 1971, three years after<br />

they had formed, and have been in the<br />

band, off and on, for about 18 years. ‘Yes’<br />

has always been a tempestuous band, we<br />

would always argue like crazy, but there’s<br />

nothing wrong with that as it’s what<br />

I do, I live just outside Diss.<br />

There are not many jobs where you‘re on tour,<br />

you wake up in the morning, you come down<br />

to the hotel, you have breakfast together, then<br />

you travel together, then you work together,<br />

the only time you don’t see people is when<br />

you go to bed! I don’t care how much you like<br />

the people you work with if you had to do that<br />

with them every day there would be certain<br />

things that would niggle you!<br />

I realised early on that it’s not music that<br />

breaks people up it’s that you are living in each<br />

other’s pockets. So now in the band we give<br />

each other a lot of space, and that’s why it<br />

works so well.<br />

R: I guess you’ve got the balance right then?<br />

Yeah, it’s all down to getting the balance right<br />

and if you do that, then that’s fine.<br />

R: So <strong>Bounce</strong> is an East Anglian publication<br />

so all of our…<br />

Yeah, we know your mag!<br />

R: Ah that’s nice, so I wondered what’s your<br />

favourite place to visit locally?<br />

My favourite place? Oh gosh, there’s a load,<br />

we are fond of the sea, so we do travel to the<br />

coast quite a bit, Walberswick, Southwold,<br />

Aldeburgh, and we love Covehithe!<br />

R: It’s such a secret little haven!<br />

Yeah, we love walking down to that lagoon; we<br />

love going to the fens; we love RSPB Minsmere,<br />

and we are members. I suppose that’s the joy<br />

about this East coast - there are lots and lots<br />

of options.<br />

R: You’ve had the chance to work with the<br />

likes of Elton John, David Bowie, Cilla Black,<br />

Lou Reed, and Black Sabbath…<br />

R: Someone once asked me “what is it about<br />

this area you love?” and you’ve just described<br />

it.<br />

It was great! It doesn’t happen now, that<br />

whole thing probably lasted about four or five<br />

years, but it was what I call the proper days of<br />

sessions. I was doing two a day or sometimes<br />

three; I did over 2000 tracks with different<br />

people, some were poor, some were fantastic!<br />

I learnt from every one, it was a great<br />

apprenticeship course; I was working with<br />

some fantastic artists and also some fantastic<br />

producers and engineers. After doing so<br />

many sessions over those years, I knew all the<br />

engineers, all the studios, all the producers<br />

it was like a natural continuation, which was<br />

great.<br />

R: Now I believe you live somewhere on the<br />

Norfolk/Suffolk boarder?<br />

It was bound to happen with some of the new<br />

road structures coming in, but there are lots of<br />

houses going up, in some places they are doing<br />

it really well and others bewilder me!<br />

R: Yes!<br />

As I am sure they do you! It’s a game that<br />

my wife and I play when we drive along! I<br />

understand that villages and towns have to<br />

expand, but be careful how you do it! You’ve<br />

got to think of how it will look like in the future.<br />

When I was a kid, every place they built in<br />

the 30s had to have a parade of shops, with<br />

the essential shops. That’s what made it a<br />

community. There is none of that now, so how<br />

the hell can you have a community?<br />

In the places it does exist, it’s getting eroded.<br />

We lost our local post office, I mean, I was<br />

furious; I was one of those with a placard on<br />

the street!<br />

The post office we had, we know, made a profit<br />

and served the community.<br />

Sometimes decisions are made that don’t look<br />

to the future and that annoys me. But that’s<br />

happening all over the country.<br />

R: I know what you mean; we don’t even have<br />

any banks around here anymore!<br />

No, we don’t – the bank that I bank with has<br />

gone.<br />

The people, who sit in their offices in front<br />

of computers and make these decisions,<br />

have forgotten how important contact with<br />

human people is, it’s nice to see somebody. Its<br />

really important.<br />

I am a big advocator of keeping village shops<br />

open and when I find one goes, I get really<br />

upset..<br />

R: Now, onto your new show stopping by us<br />

in Ipswich at Christmas, how does this differ<br />

from the previous one?<br />

It’s great because it’s just down the road from<br />

me, it’s a fun concert – it’s a mixture of music,<br />

some of mine, some with other people.<br />

I’ve worked with such as David Bowie and Cat<br />

Stephens, plus some music people wouldn’t<br />

expect, and in-between all the pieces there are<br />

ludicrous stories, which all have elements of<br />

truth. Some as little as 1% and some have 99%<br />

so it’s up to people to determine what they<br />

think is truth or not. It’s a hilarious evening.<br />

I haven’t played Ipswich for a little while now,<br />

so it’s nice to have a show somewhere local.<br />

R: I always like to ask a few readers to submit<br />

questions… So the first is from our previous<br />

cover stars Jesse Quin from Keane, he asked<br />

- Sequential Circuits or Moog?<br />

Moog.<br />

R: Finally, from my good friend Brian Bush, “If<br />

you were at the start now which band would<br />

you be in and why”?<br />

Blimey! [pauses] wow, gosh, that is a really<br />

good question!<br />

Gosh… I love doing piano things an<br />

accompanying people, so I would have loved to<br />

have worked with Amy Winehouse, it<br />

would be great to strip everything back<br />

and do something with just the piano.<br />

With somebody like Adele would be great!<br />

The piano is the most amazing framework for<br />

a voice.<br />

R: Well, thank you so much for your time.<br />

Dress Happy, Be Happy…Who Knew?<br />

Have you noticed, when you are<br />

feeling a bit low you reach for the<br />

same old comfy clothing?<br />

our mood too. So if you are feeling a bit low,<br />

don’t reach for the baggy jumper and jeans, dig<br />

out your favourite dress or outfit and notice the<br />

difference you feel by doing so.<br />

A study carried out by Professor Karen Pine<br />

at the University of Herefordshire found what<br />

a woman chooses to wear can be heavily<br />

dependent on her emotional state. The study of<br />

100 women revealed 50% would wear jeans when<br />

feeling depressed, only one third said they would<br />

wear jeans when feeling happy! 57% said they<br />

would wear a baggy top when feeling depressed<br />

and only 2% would wear one if feeling happy.<br />

The study also revealed how we are more likely<br />

to wear a favourite dress when happy compared<br />

to when depressed, a huge 62% wore a favourite<br />

dress when happy compared to only 6% when<br />

depressed. Interestingly, the woman in the study<br />

also felt they could alter their mood by changing<br />

what they wore.<br />

So What Does This Tell Us?<br />

This study not only shows the influence clothing<br />

can have on our mood, but also how it can alter<br />

The same principal can be applied to all sorts<br />

of scenarios, if you have an important meeting<br />

coming up, or interview, wear something you<br />

know will make you feel confident, because not<br />

only will it boost your mood it will radiate how<br />

good you feel to those around you.<br />

Try it and see...<br />

So in the mornings, especially now as summer<br />

seems like a lifetime ago, dress how you want<br />

to feel, rather than how you feel. Dig out that<br />

favourite outfit when you are feeling a little low,<br />

and remember we are all different, so if to you<br />

jeans mean ‘happy’, go for it.<br />

tailbone toward the pubis and lift the pubis<br />

toward the navel. Narrow the hip points. Firm but<br />

don’t harden the buttocks.<br />

4. Firm the shoulder blades against the back,<br />

puffing the side ribs forward. Lift through the<br />

top of the sternum but avoid pushing the front<br />

ribs forward, which only hardens the lower back.<br />

Distribute the backbend evenly throughout the<br />

entire spine.<br />

5. Hold the pose anywhere from 15 to 30 seconds,<br />

breathing easily. Release back to the floor with an<br />

exhalation.<br />

Beginner’s Tip:<br />

Don’t overdo the backbend. To find the height<br />

at which you can work comfortably and avoid<br />

straining your back, take your hands off the floor<br />

for a moment, so that the height you find will be<br />

through extension.<br />

Partnering:<br />

Once in the pose, have your partner straddle your<br />

legs. He/she should bend over and grip the sides<br />

of your pelvis, thumbs toward the sacrum, then<br />

spread the back of your pelvis.<br />

More than 700 people visited<br />

the MENTA Business Show at<br />

The Apex, Bury St Edmunds on<br />

Tuesday October 2. The event<br />

launched the ten-day West Suffolk<br />

Business Festival.<br />

Around 70 local businesses exhibited and<br />

promoted a wide range of services and<br />

products.<br />

Tokay Wine from<br />

Hungary<br />

Tokay is situated in the north eastern area of Hungary.<br />

It lies on volcanic slopes north of the Bodrog River close to the<br />

border of Slovenia and 60 km from Russia.<br />

The town name is very long and complex so<br />

the people label it as Tokaj or Tokay.<br />

The Country is divided into 4 regions, the<br />

Danube, The Small Plain, Transdanubia and<br />

the Great Plain. Tokay lies in the foothills of<br />

the Carpathian Mountains.<br />

Climate and Soils...<br />

The climate generally follows a continental<br />

type with cold winters and hot summers.<br />

There are some benefits where the vineyards<br />

are close to rivers and in the autumn rains<br />

are early sometimes leading to an extended<br />

summer, allowing for a longer ripening period.<br />

The soils in this north eastern most part of<br />

the country are a mixture of clay and Volcanic<br />

soils. There are additions of iron and lime in<br />

parts.<br />

The Wines...<br />

A wine call Tokay Szamorodni, meaning<br />

‘As it comes’ or no selection of the grapes,<br />

the bunches can contain some grapes that<br />

have suffered from Botrytis Cinerea and are<br />

shrivelled up.<br />

The main grape used is the Furmint, but can<br />

also use the Harslevelu.<br />

A further category called Aszu Eszencia is 6<br />

Puttonyi or more.<br />

The most famous wine is the sweet wine<br />

called ASZU with several grades.<br />

Tokay ASZUs...<br />

The alcohol content of these wines is typically<br />

over 14%..<br />

Tokay Eszencia...<br />

The wine starts with grapes that have been<br />

affected by Botrytis Cinerea, a fungus which<br />

penetrates the skin of the grape allowing<br />

water to escape but retaining the juice and<br />

flavourings.<br />

The grape shrivels up to resemble raisins.<br />

They used to be crushed by their own<br />

weight and put into containers<br />

called Puttonyi being about 25<br />

kilograms weight.<br />

Nowadays they are simply<br />

crushed into a sort of paste<br />

like dough.<br />

Wine is then poured onto the<br />

paste and left for 24 to 48 hours,<br />

with occasional stirring.<br />

The wine is then racked off into wooden casks<br />

and a slow fermentation allowed. Originally<br />

the Aszu number was based on how many<br />

Puttonyi were added to a Gonc cask (136<br />

litres) of must.<br />

Most common Aszu wines are labelled 3 to 6<br />

Puttonyi.<br />

One of the most exclusive wines in the world<br />

but borders on being called wine as its sugar<br />

content is typically between 500 to 700<br />

grams of sugar per litre.<br />

This is typically added to Aszu wines but can<br />

be allowed to continue fermentation as at that<br />

sugar level the yeast struggles to produce<br />

alcohol. It is so sweet that it can be only<br />

drunk in small quantities.<br />

It maintains its quality and<br />

drinkability for 200 years or so.<br />

It is also said to have remarkable<br />

curative properties assisting<br />

longevity for men and women.<br />

Some of the finest was said to have<br />

been reserved for the Hapsburg Monarchy<br />

and called Imperial Tokay. A bottle of this sold<br />

in 2008 for £1,955.<br />

Some believe that the best value Tokay Aszu<br />

would be the Tokay Aszu 5 Puttonyos, which<br />

would be shown on the label. It is an affordable<br />

price and can give you extreme pleasure<br />

experiencing one of the most famous and<br />

outstanding sweet wines produced.<br />

Conclusions...<br />

Try it. It is wonderful or you can wait until another Tokay Imperial Tokay comes<br />

along and bid for it.<br />

Sausage<br />

Casserole<br />

Sure to be a family favourite,<br />

this warming winter one-pot<br />

has gently simmered sausages,<br />

hearty cannellini beans and a<br />

crunchy breadcrumb topping.<br />

1. Put the oil in a large, heatproof casserole<br />

dish over a medium heat and add the<br />

onion, cooking for 5 mins until starting<br />

to soften. Tip in the garlic, celery and<br />

peppers, and give everything a good stir.<br />

Cook for 5 mins more.<br />

2. Turn the heat to high and add the<br />

sausages. Cook for a few mins until<br />

browned all over, then reduce the heat to<br />

medium, sprinkle in the spices and season<br />

well.<br />

3. Pour over the tomatoes and bring to<br />

a simmer. Cover and continue simmering<br />

gently for 40 mins, stirring every now and<br />

then.<br />

Ingredients<br />

• 1 tbsp olive oil<br />

• 1 onion, finely chopped<br />

• 1 garlic clove, crushed<br />

• 1 large celery stick, finely chopped<br />

• 2 peppers (any colour), cut into chunks<br />

• pack 6 pork sausage (about 400g/14oz)<br />

(or replace with vegetarian sausages)<br />

• 1 tsp sweet smoked paprika<br />

• ½ tsp ground cumin<br />

• ½ tsp chilli flakes<br />

• 2 x 400g cans chopped tomatoes<br />

• 400g can cannellini beans<br />

4. Heat the grill to high and uncover the<br />

casserole.<br />

5. Add the beans and spinach, and<br />

stir to warm through. Scatter over the<br />

breadcrumbs and grill for 2-3 mins until<br />

golden and crisp.<br />

Ingredients<br />

• 400g thin stalks rhubarb, trimmed and<br />

chopped into 4cm pieces<br />

• 3 Granny Smith apples, peeled, cored<br />

and chopped into 4cm pieces<br />

• 1 lemon, zested and 1/2 juiced<br />

• 50g caster sugar<br />

• 2 tsp cinnamon<br />

• 2 tbsp cornflour<br />

• Preheat the oven to gas 6, 200°C, fan<br />

180°C. Put the chopped rhubarb and<br />

apples in a large bowl with the lemon<br />

juice, sugar, cinnamon and cornflour.<br />

• Toss to coat, then divide between 4<br />

large ovenproof ramekins.<br />

• In a medium-sized bowl, use your<br />

fingertips to work the butter into the<br />

flour to a coarse consistency.<br />

• Add the lemon zest, brown sugar, oats<br />

and nuts. Stir together and tip over the<br />

fruit.<br />

• Bake for 30 mins until crisp and<br />

bubbling around the edges. Serve with<br />

vanilla ice cream.<br />

Southwold is one of the Suffolk<br />

coast’s much-loved seaside<br />

getaways.<br />

Perched on the east coast of England, this<br />

charming town welcomes visitors with its<br />

own working lighthouse, a sandy beach and<br />

not forgetting the ever so ‘modest’ beach<br />

huts, including one that’s up for grabs for an<br />

impressive £150,000.<br />

highlight of the<br />

town. Lovingly restored by the owners of the<br />

Suffolk Brewery, Adnams, the hotel presides<br />

over Southwold’s marketplace and is now<br />

one of the most exciting places to stay in the<br />

studio, Project Orange, the hotel has pitched<br />

Who needs to eat out for lunch when you can<br />

waiting for you? The traditional hamper is full<br />

of fresh sandwiches, healthy salads, blueberry<br />

tarts, sweet and savoury scones and chocolate<br />

brownies… not forgetting the Adnams G&T’s in<br />

a can, just to wash everything down with.<br />

Admittedly, the weather isn’t good, but<br />

regardless, we stroll on down to the<br />

promenade under a large umbrella and take<br />

shelter in one of the lollipop-coloured beach<br />

huts. It’s quintessentially Suffolk.<br />

Back at the hotel, my ‘outstanding’ bedroom<br />

for the night is room number 15, as mentioned<br />

it’s a dreary day but frankly, who cares when<br />

you have a room like this. Views overlook the<br />

hustle and bustle of the market; you can even<br />

glimpse the North Sea.<br />

The walls are stylishly painted in ‘Down Pipe’<br />

from Farrow & Ball, with accents of lime<br />

green, fuchsia pink and baby blue thrown in to<br />

lift the mood.<br />

My husband and I sit by the window watching<br />

the world go by, playing a game of chequers<br />

and sipping on a complimentary bottle of the<br />

multi-award winning Adnams Copperhouse<br />

Gin, kindly left for us to enjoy by the team.<br />

It’s getting darker and the rain now hammers<br />

against the tall sash windows adorned<br />

in neutral linen fabrics. Despite the dark<br />

coloured walls it’s still warm and cosy – my<br />

eyes fixate to the glow from the demijohn<br />

glass lamps either side of the four-poster bed.<br />

We prepare for dinner at The<br />

Still Room. The restaurant is<br />

another world away from the<br />

crisp white tablecloths and<br />

dark red walls it once wore.<br />

It takes its name from<br />

the small-batch distillery<br />

situated just a few meters<br />

away from the hotel which<br />

has influenced the design<br />

with features such as the<br />

stunning copper-topped cocktail bar<br />

showcasing their award-winning spirits.<br />

The menu is a little nod to its coastal<br />

surroundings, from scallop starters to fresh<br />

fish dishes including seared Yellowfin Tuna<br />

or Scorched Mackerel. More informal dishes,<br />

like the Battered Monkfish and Triple Cooked<br />

Chips, are available from the Tap Room menu<br />

along with Adnams’ own beers and gin.<br />

After dinner we retire to the<br />

drawing room, a great area to<br />

sit and contemplate. We sit by<br />

the fireplace on impressive<br />

emerald green velvet sofas;<br />

surrounded by bold blue and<br />

white wallpaper.<br />

We head back up to room 15,<br />

for what I could only class as ‘the<br />

best night’s sleep I’d had in ages’, it<br />

could have been the sound of the rain on the<br />

window, too much sea air, or the fact I was<br />

being hugged all night by a gigantic feather<br />

filled duvet.<br />

The Swan has always been beloved by<br />

residents and summer visitors alike.<br />

of those locals. So surely that makes me the<br />

perfect critic?<br />

I spent most weekends of my childhood<br />

waltzing around the amusement arcade,<br />

still found at the pier, armed with a Mr Whippy,<br />

gambling away 2p coins my grandparents had<br />

been collecting for me to spend during the<br />

week.<br />

But whether you are a local or visitor, there is<br />

always something nostalgic about a return to<br />

Southwold.<br />

Perhaps it’s the wafts of the early morning hops<br />

or the freshness of the sea air, or maybe it’s just<br />

a timeless little town that somehow steals a<br />

Cocktail •<br />

Sloe it down…<br />

This autumnal hedgerow cocktail has<br />

a blend of botanical notes from the<br />

gin, infused with a juniper syrup,<br />

which makes for a sweet-sharp<br />

tipple.<br />

Method<br />

1. Start by making the juniper syrup. Put<br />

the sugar in a small saucepan, then add<br />

100ml water and the juniper berries.<br />

Bring to the boil, then take off the heat<br />

and gently squash the berries in the<br />

liquid using a potato masher. Leave to<br />

steep until completely cold, then strain<br />

into a sterilised bottle or jar. Will keep<br />

in the fridge for up to 2 weeks.<br />

Keeping it Real!<br />

BECCLES BEER FESTIVAL RETURNS TO PUBLIC HALL<br />

Now in its 7 th year, the Beccles Beer<br />

Festival has become one of the most<br />

popular events in Beccles calendar and a<br />

celebration of local real ales, ciders and<br />

craft lager...<br />

Last year more than 1500 people visited<br />

the 3 day beer festival, drinking over<br />

5,000 pints from 26 different breweries<br />

and 4 cider makers, all in Norfolk and<br />

Suffolk. This year there will be 30<br />

different ales including a good selection<br />

of gluten-free and vegan.<br />

Organisers Graham Elliott and Beccles<br />

Lido Director, Shaun Crowley, told <strong>Bounce</strong><br />

<strong>Magazine</strong> “This is the biggest beer festival<br />

in the region and real ale enthusiasts<br />

travel from all over East Anglia. It’s not<br />

just a celebration of local ales - it’s held<br />

in Beccles Public Hall to raise funds for<br />

Beccles Lido, and run by volunteers –<br />

so it also celebrates these 2 fantastic<br />

community run Beccles attractions!”<br />

From Friday-Sunday 16-18 <strong>November</strong>, the 7 th Beccles Beer<br />

Festival will feature some very special new ales not widely<br />

available on draft anywhere else, as well as festival stalwart Green<br />

Jack Ripper!<br />

As in previous years there will be live music on Friday and Saturday<br />

night, with local festival favorites Owl & Wolves (to be confirmed)<br />

on Friday with their old school blues and skiffle; and Baku & Beyond<br />

playing popular classic covers on Saturday night. Sunday is a more<br />

relaxed day and families with well behaved children are welcome.<br />

As usual, the Public Hall will also have a fully licensed bar selling<br />

wines, spirits and soft drinks for the non-ale drinkers; and there will<br />

be a good selection of hot and cold snacks to complement the beer,<br />

served by Lido volunteers.<br />

So make this a weekend to get over to Beccles – and why not use<br />

the bus or train so that you can really enjoy a selection of the tipples<br />

on offer?<br />

JOINS UNESCO’S INTANGIBLE CULTURAL HERITAGE...<br />

A Suffolk-based eatery has<br />

become only the third restaurant<br />

in the UK to have achieved a<br />

prestigious international quality<br />

standard and officially become<br />

part of what UNESCO has deemed<br />

“intangible cultural heritage”.<br />

Oakfired at The Royal Oak<br />

in Beccles, owned by Paul<br />

Williams and Paul Jackson,<br />

has just been awarded hardto-attain<br />

accreditation from<br />

the Associazione Vera Pizza<br />

Napoletana (AVPN), based in the<br />

southern Italian city of Naples,<br />

which allows it to legally claim<br />

to be able to offer its diners ‘real<br />

Neapolitan pizza.’<br />

Its pizza maker, Paul Jackson, is<br />

not just now a ‘pizzaiolo’ (pizza<br />

chef), recognised as being able<br />

to prepare and cook pizza in the<br />

authentic manner required by<br />

the stringent AVPN, but has also<br />

become part of the patrimony<br />

of Neapolitan pizza and a<br />

community of pizzaioli who pass<br />

on the tradition of Neapolitan<br />

pizza-making from generation to<br />

generation.<br />

Oakfired at The Royal Oak now<br />

joins the two other UK restaurants<br />

with the AVPN accreditation –<br />

Casa Mia in Herne Bay, Kent and<br />

Cal’s Own in Newcastle-upon-Tyne.<br />

It becomes the only restaurant in<br />

its region of East Anglia that can<br />

allow food lovers to experience<br />

the type of pizza they would be<br />

treated to in the Italian city that<br />

gave birth to the dish.<br />

A Little Effort<br />

GOES A LONG WAY<br />

Well we’ve all heard that one<br />

before haven’t we? But do we use<br />

it to our full advantage?<br />

I think its safe to say<br />

we probably don’t<br />

exercise this daily,<br />

or think about the<br />

potential difference<br />

to be made...<br />

remembering details about someone. For example, a<br />

conversation you have with them.<br />

We all chat away but how often does it go in one ear<br />

and out the other. I can be very guilty of this. But,<br />

when I have made a conscious effort to retain a few<br />

points of interest- and I remember to ask how the<br />

trip to the vets went, it’s well received.<br />

Because I’ve actually<br />

discovered it’s a pretty good<br />

rule to live by.<br />

I have a few life hacks I like<br />

to stick to at the best of<br />

times and this one is certainly<br />

proving its weight.<br />

A simple one for this is<br />

Showing genuine interest in someone will<br />

significantly develop relationships that will aid in<br />

everyday life.<br />

That extra moment spent caring could turn out to be<br />

well worth your time.<br />

Think about it the other way around. Somebody<br />

asks what you did at the weekend, even though you<br />

spoke previously about what you were going to be<br />

up to. Someone else asks<br />

how the birthday party<br />

you planned to go to at<br />

Who do you feel more<br />

valued by?<br />

It’s nice when someone<br />

remembers things about<br />

you and shows an interest,<br />

it makes us want to return<br />

the favour.<br />

Talking of which - Favours<br />

are actually really easy.<br />

Painfully so. One of my<br />

other life rules to live by<br />

(or at least try to most of<br />

the time) happens to be<br />

‘It’s the little things’.<br />

Seriously, why not stay five more minutes<br />

to help out a colleague with something<br />

they are struggling with? Don’t be<br />

surprised when they return the favour.<br />

And hey what about bringing two<br />

muffins back from the shop?<br />

The bottom line here is that something<br />

very small can make an impact. Making<br />

someone’s day isn’t hard and then we get<br />

to feel happy about it too. It’s a win, win.<br />

A World Market can be found on Angel Hill, the<br />

centre of Bury St Edmund’s historic medieval<br />

core, with over 100 stalls and a traditional funfair<br />

and the Greene King stage with live music and<br />

entertainment throughout the day.<br />

The town’s market, one of the most<br />

successful traditional street markets<br />

in the country today will be open from<br />

Friday to Sunday. The market, which<br />

dates back to before the days of<br />

William the Conqueror, is where<br />

you can find everything from fresh<br />

local produce to authentic Italian<br />

shirts, from Portuguese pottery<br />

and colourful plants and flowers.<br />

There’s also a wonderful farmer’s<br />

market with more local produce<br />

on the Sunday.<br />

There is so much to do in Bury<br />

St Edmunds four days just isnt<br />

enough. Don’t worry though you can<br />

always return and sample that warm Suffolk<br />

welcome during summer too!<br />

Thetford<br />

Warren Lodge...<br />

The Prior of Our Lady’s<br />

Priory through Royal<br />

approval had the lodge<br />

built in the 1400s by<br />

the monks from the<br />

nearby Cluniac priory<br />

who looked after the<br />

Westwick rabbit warren<br />

to hunt small game and<br />

to protect his livelihood<br />

to stop poachers.<br />

The Prior had the area built<br />

big enough so that he could<br />

have hunting parties and he<br />

also employed the services<br />

of a warrener to protect the<br />

rabbit who would be sold for<br />

their meat and fur. Rabbits<br />

were introduced to the area by<br />

the Normans and became very<br />

valuable. In those days’ rabbits<br />

were farmed in the way that<br />

sheep are today.<br />

This rectangular building was<br />

built from mortared flint rubble<br />

and stones that were reddened<br />

were removed after a fire. The<br />

walls were over a metre thick<br />

and included reused fragments<br />

from the 12th century. At the<br />

time, a parapet was built for<br />

which the gamekeeper would<br />

have looked out at what would<br />

have been an open country.<br />

The porch had a single hole<br />

for which the warrener would<br />

lower a board from the floor<br />

above to keep the door closed<br />

from those not welcome.<br />

The warrener would have<br />

resided on the second floor of<br />

the lodge and the first floor<br />

would have had a storeroom<br />

which would have housed<br />

traps and nets along with racks<br />

to dry the skins and to hang<br />

salted meats.<br />

With many medieval buildings<br />

come ghost stories which<br />

is perfect for the Halloween<br />

period. Even today sightings<br />

of a very large ghostly white<br />

rabbit eyes so red it would<br />

blind those looking guards the<br />

doorway to Warren Lodge.<br />

A neighbouring building which<br />

was the Leper Hospital of St<br />

Margaret saw its sufferers<br />

kept within was in 1304<br />

ransacked and had silver and<br />

other valuables stolen before<br />

being set on fire. To this day a<br />

figure so horrific can be seen<br />

terrifying those it encounters<br />

close to Warren Lodge and<br />

from the first floor of the<br />

building. It was reported in 2011<br />

that a man was seen looking<br />

out from the second-floor<br />

window with horrific black<br />

holes in his face where his eyes<br />

and mouth would have been.<br />

After the dissolution of<br />

Thetford Priory, the lands<br />

were given to the Duke of<br />

Norfolk and it became a<br />

successful productive warren<br />

in the Breckland area. It’s most<br />

famous owner in the 19th<br />

century on a 99-year lease was<br />

the Maharajah Duleep Sing who<br />

was an Indian price exiled to<br />

Norfolk.<br />

As rabbits started to escape<br />

from the lodges and multiplied<br />

in the wilderness, their value<br />

went down, and this saw many<br />

warren lodges left completely<br />

abandoned by the 18th century.<br />

Today Warren Lodge has many<br />

of its original features including<br />

part of an internal staircase<br />

along with two fireplaces, part<br />

of a lower floor with sluices<br />

built into the wall and a game<br />

larder.<br />

Breckland still has warreners<br />

working in trapping rabbits and<br />

having them moved to help<br />

control the population.<br />

The key to flawless skin...<br />

Are you suffering with unusual breakouts in your<br />

skin? A sudden eruption of acne or eczema out of<br />

the blue?<br />

This may not be a coincidence. Our skin is the<br />

largest organ in the body and it’s actually pretty<br />

vocal. It changes colour when we’re too hot or<br />

cold, it can stretch and change with us and in<br />

some cases we may experience rashes, spots or<br />

skin conditions such as Rosacea, Eczema and<br />

Psoriasis. There are many things that influence<br />

the way our skin reacts, here are a few to consider<br />

when you next experience an unwanted breakout.<br />

1. Hydrate Hydrate Hydrate<br />

Many think it is a myth but drinking the correct<br />

amount of water will improve your skin tone. Being<br />

hydrated is a major factor in the way our bodies<br />

function. The body is made of around 60% water<br />

and keeping our levels up is incredibly important<br />

for both brain and organ function as well as skin<br />

condition. Water helps to clear the toxins from<br />

your body which in turn will help reduce breakouts.<br />

2. Sleep<br />

On average adults require 7-9 hours sleep per<br />

night, not getting enough sleep can negatively<br />

affect your body. It reduces the moisture levels<br />

in your skin and can lower your pH levels, making<br />

your skin’s complexion look tired and less youthful.<br />

Your body works hard while you sleep to boosts<br />

blood flow to the skin, so that you wake up with a<br />

healthy glow.<br />

3. Allergies<br />

Many people assume that allergies are mainly associated<br />

with food however intolerances should also be considered<br />

in the things you put on your skin as the ingredients<br />

may still have an effect on your body. Remember that<br />

everything you put on your skin is absorbed, although it’s<br />

at a much lower level than ingesting these ingredients they<br />

should not be overlooked. For example, if you’re allergic to<br />

nuts it’s recommended you avoid skincare which includes<br />

nuts or nut oils.<br />

4. Pregnancy<br />

It’s important to remember that your body may be<br />

hypersensitive throughout your pregnancy and there are<br />

certain things to avoid such as essential oils as these are<br />

highly concentrated. Your body is experiencing many<br />

changes and your skin may change dramatically, don’t be<br />

alarmed this is normal. Even when you’re not pregnant<br />

women experience hormonal changes on a regular basis<br />

which can influence your skin’s condition, especially on<br />

your face. You may find that you need to adjust your<br />

skincare routine to suit these changes.<br />

I know this may seem an unusual one but<br />

be sure to change your bed sheets regularly<br />

as the sheets can harbour bacteria from<br />

dead skin cells and perspiration especially<br />

as you’re in bed for a number of hours<br />

everyday.<br />

Tips<br />

A great way to detox your skin for a fresh<br />

look is with a mask, for face or body it will<br />

cleanse your pores and draw out any toxins<br />

built up while it nourishes your skin, filling<br />

it with much needed nutrients. Every mask<br />

is different so choose one that’s right for<br />

your skin.<br />

5. Diet<br />

I don’t mean go on a diet but assess what you eat, as it<br />

may be that you have an intolerance to certain ingredients<br />

which your body struggles to process and therefore may<br />

cause you to experience breakouts. Begin to cut out certain<br />

foods and see if you notice a difference. Even eating too<br />

much processed foods can have an effect on your skin, get<br />

back to basics with a good healthy diet and your skin will<br />

thank you for it. Be sure not to forget alcohol too as this<br />

will tend to dry out your skin, the last thing you need the<br />

morning after!<br />

6. Skincare Routine<br />

A good skincare routine will help to keep your skin looking<br />

flawless. It doesn’t need to be complicated, make your<br />

routine suit your lifestyle. If there were two essentials I<br />

would recommend a cleanser or face wash and a good<br />

moisturiser.<br />

If your skin is cleansed and moisturised regularly this will<br />

significantly reduce breakouts, this includes removing your<br />

make-up every night as your skin needs to breathe.<br />

WINTER IS ON IT’S WAY<br />

Kate’s Top Tip : Rake fallen leaves - Fallen<br />

leaves prevent light and air getting to plants -<br />

clean them up!<br />

Leaves are falling rapidly, and<br />

wind and rain are on the increase.<br />

Tender plants (such as bananas)<br />

will need protecting from frost,<br />

gales and freezing rains.<br />

Tidy up borders<br />

Cut down herbaceous stems and clear the tatty<br />

remains of annuals, but do leave a little cover<br />

of the perennials that fade relatively elegantly<br />

(sedum, astilbes and grasses for example). Continue<br />

collecting and storing seed from perennials still<br />

forming seed heads. Bring inside any tender<br />

perennials, such as Fuchsia, Gazania, Lantana and<br />

Abutilon, before frosts cause damage.<br />

The Greenhouse<br />

Clear out the greenhouse, wash pots and trays, clean,<br />

mend and oil your tools and throw away anything<br />

that is beyond hope or reasonable repair!<br />

Drain and lag...<br />

Save yourself untold irritation and expense by<br />

draining and lagging standpipes, outdoor taps,<br />

irrigation lines and water pumps in advance of<br />

sudden hard frosts.<br />

Always wanted to give paintball<br />

a go but you’re worried that it<br />

might hurt nor do you want to<br />

get covered in paint? Well I have<br />

the perfect answer for you…<br />

BATTLEFIELD LIVE!<br />

Battlefield Live is an exhilarating, team-oriented<br />

combat game that perfectly bridges the gap<br />

between the sometimes intimidating paintball and<br />

the somewhat tame laser tag.<br />

Battlefield Live East Anglia have three locations:<br />

Ipswich (Jimmy’s Farm), Thetford (High Lodge<br />

Forest Centre) and Thorney near Peterborough<br />

each with their own unique and ideal theatre<br />

for warfare. You can play all year round, in all<br />

conditions (even snow) and all of the equipment<br />

(gun, overalls, face paint) is provided on site.<br />

Your two hour gaming session will comprise of<br />

approximately seven games lasting for an average<br />

of 10 minutes each, the fun factor ensures those two<br />

hours fly by in no time at all!<br />

You’ll also get great value for money, which is already<br />

a snip at just £17.50 per person, in paintball it can be<br />

quite frustrating to be shot early and forced to watch<br />

the action from the casualty bench.<br />

At Battlefield Live, with thanks to the Medic Box, your<br />

multiple headshots are mere flesh wounds, which are<br />

easily healed allowing to you promptly return to the<br />

frontline.<br />

The other significant difference is the gun, your<br />

scorpion sub machine gun has a red dot sight and it’s<br />

invisible infra-red light can accurately hit a target 100<br />

metres away.<br />

The 30 round clip will automatically reload within<br />

a few seconds once empty, therefore no fumbling<br />

around in a ditch with a pot a paint balls which are<br />

also expensive for the trigger happy amongst you.<br />

The gun will also let you know when you’ve<br />

The games will differ in terms of their rules and goals<br />

from the simple shoot the other team as many times<br />

as possible “Team Deathmatch” to the intense “VIP<br />

rescue” where you must escort a member of your<br />

team to a designated safe zone or the fun “Aliens vs<br />

Zombies”.<br />

The variation ensures it’s not at all monotonous<br />

and specific objectives really add to the battlefield<br />

scenario and atmosphere, it’s impossible not to get<br />

completely taken in.<br />

and Action Father-in-Law (retired) we all enjoyed it<br />

equally.<br />

Our session also had a birthday party of 10 year olds<br />

and a party of 30 year olds but on the field of battle<br />

age was just a number and the entire group had great<br />

fun in the wooded surroundings, ideal for warfare.<br />

WHILE MUM’S AWAY...<br />

I haven’t been too happy this month;<br />

my mum has been going away a lot<br />

on business.<br />

As I have been her shadow since I was 10 weeks<br />

old, I can’t help but to sulk with her when she<br />

leaves me. She is silly too right? – uff!<br />

The upside is I get to spend some quality lad’s<br />

time with my dad. So for those ‘doggie dads’ out<br />

there who may need a few tips on keeping us<br />

entertained, here’s a few to help you along<br />

the way!<br />

Go on a walking tour of your town…<br />

Keep your four-legged friend in familiar<br />

territories; you might even enjoy the walk<br />

yourself.<br />

Go shopping together in a pet-friendly store…<br />

We love treats, especially ones we can rip apart!<br />

Take our minds of missing mum by spoiling us!<br />

Make a doggie playdate with a friend’s dog...<br />

If I am missing mum, guaranteed you will be too,<br />

the company will be good for us both.<br />

Teach your dog a new trick...<br />

What a great challenge for us both, plus, it will<br />

really impress mum when she comes home.<br />

Eat at a dog-friendly restaurant...<br />

We make great friends, this way you can eat out<br />

and have company too.<br />

Me and dad both survived, and gave mum a<br />

welcome home party when she returned. I can<br />

say with confidence we both made it into the<br />

good books, so take a leaf out of ours!<br />
