JAMES PARSONS

James Parsons from Langstone Quays Resort is a real force to be reckoned with!

From royalty to rock stars, he has thrilled in the some of the finest kitchens in

the world.

He began cooking professionally at just 15 and a half. Starting a three year

apprenticeship in the British Armed Forces, he studied foundational classic

French Cuisine and Food Science and went on to be chef to The Chief of Defence

and then Military Chef at Clarence House, for Her Majesty Queen Elizabeth,

The Queen Mother.

With such an exciting career, we had to find out more from the talented chef.

James picks up the story:

"After the Armed Forces, I continued to work

in London, cooking in many Michelin starred

establishments including A-Z Restaurants

headed by Marco Pierre White. I also worked

in France with the three time Michelin star

Chef Roger Verge, at Moulin de Mougins, one of

France's most prominent restaurants.

"I really enjoyed my career path and I learnt so

much. Cooking has taken me around the world

and given me the chance to cook for some of the

world’s most famous people, from rock stars like

Ringo Star of the Beatles, to members of other

Royal families, Prime Ministers, politicians and

world leaders.

"I have worked in Thailand, Tanzania, Canada,

the Middle East, France, Switzerland and

Germany. My passion for food remains as strong

today as it did during my first days in a kitchen.

I’ve learnt more about food from conversations

with people, rather than working endless hours

in a kitchen."

James' passion is infectious and for the last 12

years he's been sharing his skills in supporting

The Rotary Organisations Young Chef of the

Year and the Springboard Charity for developing

young chefs. He explains:

"My other passion is developing young chefs and

giving them the chances, skills and practises that

will lead to a career and a lasting love of food.

"I also work with UNHCR (UN Refugee Agency)

training and coaching displaced families that

need career skill opportunities to help make

them employable in the Middle East areas and

East Africa. I've been doing this for the last ten

years and it has taught me more about food than

anything else."

James' philosophy at Langstone Hotel is valuing

the basics. He explains:

strawberries or Asparagus on the menu in winter.

He continues:

"We don’t over manipulate ingredients and

we try to keep dish integrity a core value.

We do acknowledge modern techniques

and food science, but only in the capacity to

enhance flavour and presentation. Not as a

trendy gimmick.

"Make an amazing sandwich, make the

perfect soup, and make the simple things

effortlessly well!"

With this in mind, his team subscribe to the

same ethos; taste is the single most important

thing, followed by seasonality. You won’t find

them to be a truly memorable experience and

that is the reason people eat out.

"Collectively we have learnt to do lots of little

things well. This is the philosophy of the kitchen

team."

James is the first to say the team are hugely

influenced by what grows seasonally. When fruit

and vegetables in the area are in abundance,

they have the pick of ingredients on Hayling

Island, including potatoes, carrots and brassicas.

The hotel is next to a dairy, which along with

milk, produces clotted cream and Northney Farm

Ice Cream.

Local ingredients don't end there for the two AA

Rosette award-winning kitchen. He continues:

"Our proximity to the sea and being on a small

island gives us the chance to buy local line

caught fish and crustaceans, including lobster

from Langstone Harbour. When in season, we

love to indulge in the soft fruits and berries

available at various small holdings and farms.

There is nothing better than sun ripened

strawberries that only travel a walking distance

to the kitchen!

"We use an abundance of sea herbs and

sea vegetables that we have learnt to forage

for ourselves. These are often seen on the

menus where fish is the main course and it’s

an enjoyable walk around the estuary during

breaks as well as being informative for the

chefs to collect and learn about the seasons

and real local foods."

With great ingredients, superb team work and

In a ceremony hosted by Heart Radio’s Angela

Jay and recently held in Chester, Cottons Hotel

& Spa won Hotel of the Year.

General Manager Steve Ogden said:

Waste not. Help more!

As a busy venue hosting events on a daily

basis, the team at H Suite pride themselves

on working with outstanding caterers and

focussing on the best food Birmingham has

to offer.

Never a fan of waste, the team at the H Suite

have started an initiative to ensure that

any leftover food from the venue is used by

helping the most vulnerable people in their

community. They have teamed up with Let's

Feed Brum, a Birmingham based organisation

who provide food, clothing and bedding for

those in the city who either have no home or

are in temporary accommodation.

The organisation’s aim is to reach people

who are in these situations and support

them through conversations. The figures tell

the story:

• 80-100 people come to their soup kitchen

every single night

• 700 hot meals are served every single week

• Over 50 sleeping bags are handed out

every week

• Roughly 40,000 hot drinks are served

every year.

Sanjay Datwani CEO of the H Suite said:

“We’re so pleased to be able to help this

important cause and the volunteers who give

so much of their time to help people in need in

our city.”

The H Suite recently made their first donation

and, alongside their catering partners, are

looking forward to continuing their donations

as the even more challenging winter

months approach.

Vine Hotels Launches

Vegan Menus for Delegates

As part of November’s National Vegan Month,

Vine Hotels is launching vegan delegate

menus across its portfolio of UK hotels and

venues. The brand-new choice of dishes

has been designed to specifically meet the

growing demand of delegates who want to

enjoy vegan foods as part of their meeting and

event experience.

A recent survey found that over three million

people in the UK identify as vegans, and

the new menus and dishes will ensure the

venues can cater for this increasing dietary

trend. Embracing the other big food trend for

more relaxed corporate dining and proving

that vegan food can be tasty and fun, delegates

can enjoy a vegan ‘Street Food’ lunch at

Whirlowbrook Hall.

There is a tempting choice of Chickpea Falafel,

Paprika Cream and Flatbread; Spiced Bean

Burger; Mexican Fajita Kebabs, Soured Cream,

Tortilla; Hand Cut Chips, Cheese, Spring

Onion, Chives; ‘Hot Dogs’, Caramelised Onions,

American Mustard, and a Thai Noodle Broth,

Pak Choi and Flaked Coconut.

For corporate events or delegate dinners,

guests can also enjoy new vegan menus. These

feature dishes such as Charred Watermelon,

Mint & Chilli Gel, Coconut Sorbet or Tandoori

Kebabs, Rainbow Slaw, Paprika Yoghurt, Micro

Coriander to start. Followed by Red Pepper and

Spinach Lasagne, Saffron Roast Potatoes, Ruby

Chard or a Butternut Squash: Risotto, Pureed,

In the heart of Birmingham, the newest event

space to open is Canalside at The Cube.

This spectacular venue opens on to its own

private terrace and overlooks the city's famous

canal network. Located within the Mailbox

complex, Canalside caters for up to 340 guests

in a spacious and modern space which can be

arranged for theatre-style events, banqueting,

networking and conferences. Think of The Cube

as a blank canvas where you can style an event

to perfection.

Extensive leisure facilities, team-building

activities and private dining can be enjoyed

at Moor Hall Hotel and Spa in Sutton

Coldfield. The tree lined avenue sweeping up

to the entrance announces four star style and

sophistication. The gardens shout come and

explore and you may just stumble across Henry

VIII's bear pit!

There's a choice of six meeting rooms. The

Charter Suite is spacious and self contained,

with its own entrance and bar and welcomes

up to 180 guests while at the opposite end,

the Executive Boardroom strikes the right

note with oak panelled walls, a solid wood

boardroom table, leather swivel chairs and

built-in presentation equipment. Seating up to

eight people, the stylish room also offers views

over the surrounding parkland.

Meet in the Middle

One of the most talked about venues is the

Council House Banqueting Suite. It boasts an

abundance of Victorian elegance, sophistication

and charm. In fact, the Grade II listed building

has welcomed world leaders, media and film

stars, members of the Royal family and just

about every type of business and organisation

through its doors.

The beautiful architecture may be from a

bygone era but rest assured the facilities for

event organisers are definitely 21st century.

An eight foot projector, PA system, lectern and

podium are available free of charge with further

projectors and laptops available for hire. There

is a choice of five rooms, ranging from the

Chamberlain Room which welcomes up to 45

delegates or the Banqueting Suite which has a

maximum capacity of 450.

Add in the dedicated event coordinator to

help with planning, a duty manager for on the

day support and expert catering and you have

yourself an event fit for royalty!

As one of the founding members of the Football

League in 1888, West Bromwich Albion Football

Club has much to offer event organisers. Five

suites and numerous pitch-side executive boxes

provide a modern day meeting environment

with state-of-the-art equipment and excellent

hospitality.

The executive boxes can be hired for meetings,

interviews, break-out space and training sessions

as well as match-day hospitality. With panoramic

pitch views, privacy blinds and free WiFi, the

The Richardson Suite is ideal for conferences,

the Millichip Suite in the East Stand really

creates an inspiring backdrop with the club's
