JAMES PARSONS<br />

James Parsons from Langstone Quays Resort is a real force to be reckoned with!<br />

From royalty to rock stars, he has thrilled in the some of the finest kitchens in<br />

the world.<br />

He began cooking professionally at just 15 and a half. Starting a three year<br />

apprenticeship in the British Armed Forces, he studied foundational classic<br />

French Cuisine and Food Science and went on to be chef to The Chief of Defence<br />

and then Military Chef at Clarence House, for Her Majesty Queen Elizabeth,<br />

The Queen Mother.<br />

With such an exciting career, we had to find out more from the talented chef.<br />

James picks up the story:<br />

"After the Armed Forces, I continued to work<br />

in London, cooking in many Michelin starred<br />

establishments including A-Z Restaurants<br />

headed by Marco Pierre White. I also worked<br />

in France with the three time Michelin star<br />

Chef Roger Verge, at Moulin de Mougins, one of<br />

France's most prominent restaurants.<br />

"I really enjoyed my career path and I learnt so<br />

much. Cooking has taken me around the world<br />

and given me the chance to cook for some of the<br />

world’s most famous people, from rock stars like<br />

Ringo Star of the Beatles, to members of other<br />

Royal families, Prime Ministers, politicians and<br />

world leaders.<br />

"I have worked in Thailand, Tanzania, Canada,<br />

the Middle East, France, Switzerland and<br />

Germany. My passion for food remains as strong<br />

today as it did during my first days in a kitchen.<br />

I’ve learnt more about food from conversations<br />

with people, rather than working endless hours<br />

in a kitchen."<br />

James' passion is infectious and for the last 12<br />

years he's been sharing his skills in supporting<br />

The Rotary Organisations Young Chef of the<br />

Year and the Springboard Charity for developing<br />

young chefs. He explains:<br />

"My other passion is developing young chefs and<br />

giving them the chances, skills and practises that<br />

will lead to a career and a lasting love of food.<br />

"I also work with UNHCR (UN Refugee Agency)<br />

training and coaching displaced families that<br />

need career skill opportunities to help make<br />

them employable in the Middle East areas and<br />

East Africa. I've been doing this for the last ten<br />

years and it has taught me more about food than<br />

anything else."<br />

James' philosophy at Langstone Hotel is valuing<br />

the basics. He explains:<br />

strawberries or Asparagus on the menu in winter.<br />

He continues:<br />

"We don’t over manipulate ingredients and<br />

we try to keep dish integrity a core value.<br />

We do acknowledge modern techniques<br />

and food science, but only in the capacity to<br />

enhance flavour and presentation. Not as a<br />

trendy gimmick.<br />

"Make an amazing sandwich, make the<br />

perfect soup, and make the simple things<br />

effortlessly well!"<br />

With this in mind, his team subscribe to the<br />

same ethos; taste is the single most important<br />

thing, followed by seasonality. You won’t find<br />

derived from the team. They plan, draw, trial<br />

and experiment on a dish. Perhaps they<br />

will present it a few times before the whole<br />

team agrees that it is good enough to sit<br />

alongside the other dishes on the menu.<br />

them to be a truly memorable experience and<br />

that is the reason people eat out.<br />

"Collectively we have learnt to do lots of little<br />

things well. This is the philosophy of the kitchen<br />

team."<br />

James is the first to say the team are hugely<br />

influenced by what grows seasonally. When fruit<br />

and vegetables in the area are in abundance,<br />

they have the pick of ingredients on Hayling<br />

Island, including potatoes, carrots and brassicas.<br />

The hotel is next to a dairy, which along with<br />

milk, produces clotted cream and Northney Farm<br />

Ice Cream.<br />

Local ingredients don't end there for the two AA<br />

Rosette award-winning kitchen. He continues:<br />

"Our proximity to the sea and being on a small<br />

island gives us the chance to buy local line<br />

caught fish and crustaceans, including lobster<br />

from Langstone Harbour. When in season, we<br />

love to indulge in the soft fruits and berries<br />

available at various small holdings and farms.<br />

There is nothing better than sun ripened<br />

strawberries that only travel a walking distance<br />

to the kitchen!<br />

"We use an abundance of sea herbs and<br />

sea vegetables that we have learnt to forage<br />

for ourselves. These are often seen on the<br />

menus where fish is the main course and it’s<br />

an enjoyable walk around the estuary during<br />

breaks as well as being informative for the<br />

chefs to collect and learn about the seasons<br />

and real local foods."<br />

With great ingredients, superb team work and<br />

inspiring leadership from Chef James, we're<br />

In a ceremony hosted by Heart Radio’s Angela<br />

Jay and recently held in Chester, Cottons Hotel<br />

& Spa won Hotel of the Year.<br />

Waste not. Help more!<br />

As a busy venue hosting events on a daily<br />

basis, the team at H Suite pride themselves<br />

on working with outstanding caterers and<br />

focussing on the best food Birmingham has<br />

to offer.<br />

Never a fan of waste, the team at the H Suite<br />

have started an initiative to ensure that<br />

any leftover food from the venue is used by<br />

helping the most vulnerable people in their<br />

community. They have teamed up with Let's<br />

Feed Brum, a Birmingham based organisation<br />

who provide food, clothing and bedding for<br />

those in the city who either have no home or<br />

are in temporary accommodation.<br />

The organisation’s aim is to reach people<br />

who are in these situations and support<br />

them through conversations. The figures tell<br />

the story:<br />

• 80-100 people come to their soup kitchen<br />

every single night<br />

• 700 hot meals are served every single week<br />

• Over 50 sleeping bags are handed out<br />

every week<br />

• Roughly 40,000 hot drinks are served<br />

every year.<br />

Sanjay Datwani CEO of the H Suite said:<br />

“We’re so pleased to be able to help this<br />

important cause and the volunteers who give<br />

so much of their time to help people in need in<br />

our city.”<br />

The H Suite recently made their first donation<br />

and, alongside their catering partners, are<br />

looking forward to continuing their donations<br />

as the even more challenging winter<br />

Vine Hotels Launches<br />

Vegan Menus for Delegates<br />

As part of <strong>November</strong>’s National Vegan Month,<br />

Vine Hotels is launching vegan delegate<br />

menus across its portfolio of UK hotels and<br />

venues. The brand-new choice of dishes<br />

has been designed to specifically meet the<br />

growing demand of delegates who want to<br />

enjoy vegan foods as part of their meeting and<br />

event experience.<br />

A recent survey found that over three million<br />

people in the UK identify as vegans, and<br />

the new menus and dishes will ensure the<br />

venues can cater for this increasing dietary<br />

trend. Embracing the other big food trend for<br />

more relaxed corporate dining and proving<br />

that vegan food can be tasty and fun, delegates<br />

can enjoy a vegan ‘Street Food’ lunch at<br />

Whirlowbrook Hall.<br />

There is a tempting choice of Chickpea Falafel,<br />

Paprika Cream and Flatbread; Spiced Bean<br />

Burger; Mexican Fajita Kebabs, Soured Cream,<br />

Tortilla; Hand Cut Chips, Cheese, Spring<br />

Onion, Chives; ‘Hot Dogs’, Caramelised Onions,<br />

American Mustard, and a Thai Noodle Broth,<br />

With excellent rail and road networks, getting the team from the north in the same<br />

room as the team from the south is so much easier when everyone comes together in<br />

space to open is Canalside at The Cube.<br />

This spectacular venue opens on to its own<br />

private terrace and overlooks the city's famous<br />

canal network. Located within the Mailbox<br />

complex, Canalside caters for up to 340 guests<br />

in a spacious and modern space which can be<br />

arranged for theatre-style events, banqueting,<br />

networking and conferences. Think of The Cube<br />

Council House Banqueting Suite. It boasts an<br />

abundance of Victorian elegance, sophistication<br />

and charm. In fact, the Grade II listed building<br />

has welcomed world leaders, media and film<br />

about every type of business and organisation<br />

through its doors.<br />

The beautiful architecture may be from a<br />

bygone era but rest assured the facilities for<br />

League in 1888, West Bromwich Albion Football<br />

Club has much to offer event organisers. Five<br />

suites and numerous pitch-side executive boxes<br />
