thing I’ve crossed off so far is ‘buy cards’ (I haven’t

actually written any yet), but I know things will move

on apace after 15 November, when I will have made my, now

traditional – and much-anticipated – visit to the Wealden Times

Midwinter Fair.

Husband, daughter, mum, sister’s dogs... tick tick tick tick.

If you are looking for present inspiration you will find it in our

blockbuster 36-page gift guide, which features fabulous things

helpfully organised into genres to suit foodies, gardeners, teens,

little ones, chaps, girlfriends and more.

Annemarie St Vincent Farr likes to make

things. Whether it’s from her life as a painter/

decorator, as a set and prop designer, or as an

events stylist, Annemarie’s style and joie de vivre is

written all over her rather astonishing Hastings home.

The first thing that strikes you as you

approach the terraced house is its bright pink

front door. It immediately makes you smile

and you get the sense that guests are warmly

welcomed into this house on a regular basis.

“It’s a party house,” confirms Annemarie as we

stand in her blue and pink kitchen, a space that

immediately reminds me of Mexico. “I love having

people round, and my home reflects that.”

There is a wonderful sense of not-giving-a-damn that

runs across every square inch of this four-storey house

– which is very much in the riotous free spirit of the

seaside town she moved to from Lewes four years ago.

“It’s a place full of people like me - arty, creative and a

bit wild, many people here have a similar history to me

as well. I’m never go to leave this place, it suits me.”

Annemarie’s home is above all about colour.

Pinks, greys, reds, purples, greens, blues, browns, silver

and gold…oh and pattern and embellishment and kitsch

and flowers and birds and butterflies and a whole heap

of fun and laughter. This is not a house that takes itself

too seriously and every room within it is packed with life,

almost like a tangible autobiography of its owner.

Annemarie and I are sitting in her top floor attic conversion

that she has recently made into a bedroom for her granddaughter.

“Any colour can work as long as it’s beautiful,”

she says, “and I don’t care about rules…I put it

together and it just seems to make sense.”

Could this room be more of a fantasy room for a small girl?

There are baby lambs and cartoon mushrooms across the floor.

There’s glitter and fake flowers, Designers Guild fabrics, tapestry

cushions and an entire wall covered in a trompe l’oeil wallpaper

of red upholstered leather. Seriously, what’s not to like?

“This is my homage to Versailles,” says Annemarie

casually as we walk down to the first-floor landing.

Decorated in cerise pink, dark grey with gold detailing, it’s a

look she copied from the original Sun King’s palace in France.

Transported to a Victorian terrace in Hastings it somehow works.

A series of gold-framed looking glasses staggered across the

walls, completes the look - Hastings’ very own Hall of Mirrors.

fair. She made the cushions on the sofa herself

wallpaper runs the length of the stairwell,

from the top of the house to bottom, the grey

background upstairs, matched with hot pink

painted walls above the dado, transforming

to turquoise on the lower ground floor.

In the two first-floor bedrooms Annemarie

has created spaces in which every corner tells

a story. “I’ve just had a big change in my life,

so my bedroom has been painted pale grey,

like a new canvas. However, I could never

cover up my Vivienne Westwood wallpaper,

no matter what happens in my life.”

Annemarie gestures over to a wall covered

in the designer’s signature punk tartan fabric.

Indeed the whole house feels like somewhere that

Dame Vivienne would feel right at home, with its

blend of 50s nostalgia, flea shop mementoes and

found objects, discovered all over the world.

In both bedrooms there are cabinets of curiosities

– memories for Annemarie of her life. Glittery

platform shoes that she bought in Brighton and

little Russian dolls, tiny iconic statues of the Virgin

Mary and Frieda Kahlo style floral headpieces.

In the main bedroom is a series of pop art pieces

by Tiff McGinnis (grandedame.co.uk), a friend with

whom Annemarie co-owns her nearby beach hut.

Keeping the collaborative spirit alive, in her guest

room, decorated in wallpaper by Pip, a fabulously

kitsch Dutch brand, are two bed side tables and a

cabinet decorated with third eyes, made by her friend

Loulou Cousin another of the beach hut co-owners.

What is emerging as we walk around is a home

of collaborations and of sisterhood. A large

Warholesque print of Jackie O sits proudly above the

fireplace in the guest room. I ask Annemarie if there

was any connection with the former First Lady?

“Oh yes, my mum was nanny to the children of

Jackie O’s daughter, Caroline Kennedy. That’s how

my mum always had her hair, just like Jackie O.”

In a house that seems to be so full of life, spirit and

memories, it is Annemarie’s skill as a decorator and a

decoupage artist that truly sets it apart. On walls, doors

and cupboards, motifs and off-cuts of wallpaper have

been artfully designed and manipulated into place.

From her bathroom, which is the antithesis to bland

hotel bathrooms - a dreamscape of azure blue and florals

- to the lower ground floor kitchen, Annemarie reveals

her abhorrence of anything white or functional. The

fridge freezer, camouflaged in eau de nil, is decorated

with motifs reappropriated from vintage posters.

How do you paint a fridge? According to Annemarie

it’s a layer of undercoat, any paint you like on top and

then several coats of varnish on top of that. The effect is

amazing and the large hulking white fridge has vanished.

The kitchen cupboards have also been painted

and wallpaper has been cleverly inserted into door

frames wherever possible. “I love wallpaper, if my

granddaughter stood still, I’d wallpaper her!”

Large classical busts from May’s Antiques in Lewes sit

side by side with vases and jugs of both fresh and fake

Ardingly Antiques Fair, on the walls are prints by local artist

Claire Fletcher. Bowls of fruit and vegetables and a series

of mosaic panels, designed and made by Annemarie, also

jostle for attention. It’s not really a kitchen, more of a party

preparation area, although Annemarie is a devoted cook.

“I’m a vegan,” says Annemarie, “so I have to be

a good cook. I spend a lot of time in this room, so

I wanted it to be at the heart of the house.”

Next to the kitchen is a snug, resplendent in gold and pink

Designers Guild wallpaper. Annemarie’s Liverpudlian nana’s

1950s bar has been given a makeover with wallpaper and

trimming and is filled with silver sequin mirror balls. On the

walls are felt flamingos from Shop House on the High Street.

A large and inviting raspberry velvet sofa, bought from

Raft in Brighton, makes this room a place where you would

want to put your feet up with pina colada in your hand and a

double bill of Gone With the Wind and Hairspray on the TV.

Back on the ground floor Annemarie takes a seat

in her living room, a stylistic departure in tone,

if not in impact, from the rest of the house.

“This is the very first decorating that I did when we moved

in,” she says pointing to a wall covered in a forest scene

populated by deer. “I found it in a Mexican shop in

Amsterdam called Kitsch Kitchen, it’s fabulous isn’t it?”

As I peer at tiny Babycham deer sculptures

scattered across the mantelpiece, my

camp-o-meter goes off the scale.

The room is covered in a trompe l’oeil wood panelling

wallpaper, designed by an art student that Annemarie

discovered. “I thought I had bought five rolls,” laughs

Annemarie, “it was in fact five drops. I needed eighteen

for the room. That was an expensive mistake and I

had to save up and get some more, but luckily I’ve

made the pattern work all the way around the room.”

And work it does. The matt finish of the paper mimics

the library or drawing room of a grand house. “It’s my

Downton Abbey room, and it’s where me and all my

girlfriends come and gossip with a glass of red wine.”

On the table are a series of clocks and against the

wall are a stack of vintage suitcases that Annemarie

used for the set dressing for her stand at Goodwood

Revival (every September). Where does she buy her antiques?

“Oh all over the place, in Hastings I love Up the Garden

Path, I go to the big boot sale in Icklesham and all over

in Bexhill-on-Sea. In Lewes I go to May’s Antiques.”

Annemarie tells me with delight about the beach hut

that she has just started renting with a friend. We drive

down to the nearby beach and despite it being the first

day of heavy rain in weeks, a bolt of sunshine leaps out

as soon as Annemarie opens the hut’s wooden door.

Pink, blue and red walls and floors are decorated

with bunting, trimmings, rugs and throws, all of which

shout of a good time to be had by the seaside.

Loulou Cousin, the maker of the furniture both at the

hut and at the house, arrives. I ask her about the little

animals that line the hut’s ceiling joists and shelves. Are

they voodoo dolls? No, they are psychedelic acid bunny

rabbits she says, offering me a chocolate Hob Nob as the

kettle gently bubbles away on the gas camping stove.

The beach house has been a fun new project and now, for

personal reasons, it is time for Annemarie to move on

again with her home, as she is putting the house that she has

lovingly crafted over the past three years, on the market.

“So much of the furniture has been decorated to match the

walls and vice versa that it would seem a shame to split them

all up, so I am more than happy to offer some of the pieces

However, as the cheerful colours of her house attest,

Annemarie is most definitely a glass half-full person and

she is already conjuring up ideas for her next home.

Destiny, chance, karma or plain old coincidence…

it’s interesting how some things in life just happen

to fall mysteriously into place at just the right

time. Seven years ago, when Rachel Ford and her family

came down from their home in Earlsfield for a family

wedding, one of those happenstances was about to begin.

They had been invited to stay over for the event

in a beautiful converted barn: “The house belonged

to family friends,” says Rachel. “When we stayed

here, I just thought, what an amazing place, but

I didn’t think too much more about it.”

Fast forward two years and they heard the owners were

planning to sell and after visiting them immediately

sold their own house to buy it, even though it meant

moving right in the middle of Rachel’s teaching degree.

“We remembered how lovely it was and came for a look

around one Friday - and by the Saturday we’d bought it.

It wasn’t in the location we’d originally planned to move to,

but it had four big bedrooms, a playroom, study, two sitting

rooms and a huge garden. It had everything you could want.”

Everything and more, because the unique design of this

former malthouse has given the building some enviable

attributes. Warmth, light and, it would seem, a lot of space

is needed for malting (the process that starts grains, usually

barley, into germination so that they release more sugars,

namely maltose – as in Maltesers…).

The result is that the house has an appealingly original

layout, plenty of barn-style charm and, as an added extra,

some of the rooms have enormous windows and amazingly

high ceilings.

The feeling of light and space hits immediately on entering

through the front door. From the soaring, double-height

hall there are views up to the first floor and on ground

level, a straight sightline down to the huge lounge at the

opposite end. It’s no wonder they found it hard to resist.

Although needing no structural work, Rachel wanted to

alter the kitchen and dining space. “This part of the house

was very different when we first moved in,” she explains. “The

dining room and kitchen were two separate rooms and that

isn’t really how we live. It’s important to have one big space for

day to day living and eating. This is how everyone lives now.”

So they took down the dividing wall, moved the dining

room door and enlarged the opening from the hall

into the kitchen: “The plan was to have a sliding stable

door, as the space is quite wide, but it seems to work

well with just an opening and feels quite spacious, so

we’ve changed our minds and may not do that now.”

The problem with moving doors and walls

adjacent to a large hallway is that once the

work is done, it all needs redecorating.

“Where does that stop?” muses Rachel, as we survey

the vast, now beautifully painted expanse. “We just kept

going, from one end all the way down to the playroom at

the front of the house. Then we did the playroom and next

we moved all the way upstairs. It took a lot of paint.”

The whole area has been painted in a welcoming warm

heather-grey colour. At first this looks like a single shade,

but Rachel has cleverly used two very similar tints (Chalk

Blush - no.1 and no.2). This subtly alters the appearance

of light and shade as you pass along the corridor towards

the front door. “We also had a picture rail put in where

the ceilings get really high out here and that has helped to

break it up and bring in more definition,” she explains.

One of the first things they did on moving in was

to take the curtains down from nearly every window in

the house: “I’m not so keen on curtains,” says Rachel,

“and although some of the rooms are big and bright,

others have smaller windows and can be a bit dark.”

They are not really overlooked, especially at the back of the

house where the large rectangular kitchen window is, and the

French doors in the dining area open out to a large garden

and paddock, so there’s no rush to replace the curtains.

“It might make it warmer in the winter,” she says, “but some

of the windows are quite hard to dress without blocking out

light and I like looking out from the kitchen, so won’t have

curtains in here. I have what I call a golden moment in the day

in here, looking out across the garden in the mornings. I have

to hang on to that moment when I can, before the boys come

downstairs and the chaos of getting ready for the day starts.”

The spaciously streamlined kitchen and dining area has a

modern country feel. The crisp, clear white of the kitchen

units and walls is offset by the deep earthy brown of leather

dining chairs and granite worktops. This rich brown colour

is reflected in the darker bricks of the end feature wall.

Natural materials and antique furniture mingle comfortably

with the sleeker modern elements. Except that all is not

quite what it seems. The wooden floor is made from

porcelain wood-effect tiles and the end wall is not brick.

“No,” laughs Rachel. “They’re brick slips that

are adhered to the wall. It comes in sheets.”

The wall features extensively in Rachel’s online life too, as

a backdrop for numerous photoshoots and Instagram posts.

Her blog grapesandcloth.com features slogan T-shirts from Bon

Vintage, a clothing company featuring wine-inspired slogan

sweatshirts and t-shirts, set up by her friend Rae Adam.

“The T-shirts and sweatshirts are printed with winebased

slogans, saying things like ‘Premier Cru’ and

‘Sparkling’, with ‘Grand Cuir’ for men and ‘Bon Vintage’

for kids. A new one saying ‘Bubbly’ is being released

for Christmas, which we think will sell well.”

Between all this online activity, furnishing the house is

an ongoing and occasionally challenging process. Several

pieces of furniture were left by the previous owners and have

been gratefully received: “We bought the kitchen dresser

and the corner cupboard from the previous owners. The

kitchen table and chairs came from London with us. We’ve

bought quite a few things since we’ve been here, because

there’s so much more space to fill. The funny thing is that

we had to buy several coffee tables. In London you don’t

have to reach far for your cup, here the gaps are bigger.”

For the same reason, they found the smallest of the sitting

rooms the easiest to decorate and so did it the first.

“It was on a scale we were used to,” Rachel

explains. “Two of the sofas came with us from

London. We’ve added the other one and the chair.”

The different shapes and styles of the seating

are unified with some clever upholstery; using

harmonising shades of green and blue creates a

subtle and relaxed mix and match look. There’s

a sea-breezy serenity to this room; calm blue

walls highlight the music themed prints on

the walls and soften the imposing presence of

a huge and very dark old American sideboard,

which they bought from the original owners.

“We weren’t sure about keeping it,” says Rachel

of this monster, “but it is just the right height

for the TV, so it’s staying.” She laughs. “I often

look around this room and do a Through the

music, drink - and weird antique furniture’…”

Tackling the larger end lounge was more of a

challenge. Apart from the amount of time and

paint needed, it has been hard to furnish.

The couple are still thinking about the collection

of pictures they want to hang in the room.

“We kept the original curtains in here, just because

it’s such a big window and finding replacements is

quite a job. We put the picture rail in to help break

it up, but lighting in here is tricky - you have to

go with wall lights really, because the ceiling is so

high. We do have our glitter ball though,” she adds,

pointing up to the large mirrored ball hanging from

the ceiling. “It was much too high when it was first

hung. It’s lower now, but even that is still quite high.”

There are advantages to having such high ceilings

though: “At Christmas we have a 12 foot tree and

everyone helps with the decorating, although the

finishing touches are left to me.”

Upstairs is just as spacious, but the windows are

smaller, so Rachel uses mirrors to bounce the light

around. “We’ve built up a large collection ranging

from the 1800s to the 1950s and they add so

much light to the house. They’re also so pretty,

they stand as works of art in their own right. The large one

in my bedroom came from somewhere I used to work.”

Big enough to dwarf even such a huge mirror, the master

bedroom also gives a good sense of the old barn. The bed is

centred under the high apex of the roof, beneath the structural

metal bracing that has become a feature of the room.

The children’s personalities and tastes are reflected in their

choices of bedroom decor. One is painted in blues and neutrals.

Taking the Through the Keyhole line myself, I’d say this brother

is more of a bookworm and by nature fairly tidy. And, glancing

through the next door into a predominantly red and white

scheme, complete with memorabilia it seems someone is a huge

Liverpool fan.

“We all support Liverpool,” laughs Rachel.

In the guest bedroom, pale apple green walls are

complemented by a pretty sprigged floral bed cover and

harmonising cushions. “There are some very old family

pictures in here that I’ve revamped using frames from

reclaimed African wood.” The overall styling is simple and

serene: an interiors take on a breath of restful country air.

Fresh air is all around them at the moment, not least

outside in the large rear garden and paddock area - a great

asset with two energetic boys about. In fact, there is only

one fly in this practically perfect place: the travelling

time to school and back for Rachel and the boys.

“We are thinking of selling and moving nearer

to Oxted,” she sighs, “but we haven’t been able to

find anything that compares to this house yet.”

Finding another property as individual and with as

many appealing features could be a tall order - perhaps

as tall as some of the ceilings. I suspect that Rachel

and her family will have plenty of time for many

more golden moments in this magical malthouse.

Josephine Fairley shares her beauty Christmas wish list

Back in July, when you were almost certainly sunning

yourself in the back garden, or on the beach, those of

us who toil in the world of beauty were being forcefed

mince pies and turkey vol au vents, while listening to

Christmas carols, having this year’s seasonal gifts revealed to

us at swanky (and this year, sweaty) locations across London.

It’s actually officially known in the beauty biz as ‘Christmas

in July’ (although one year, I did get my first mince pie in

June, which felt a bit previous even by my standards). But

despite the incongruity of encountering

elves, reindeer and Santas in summertime,

it really is a great way to compile a

list of the best festive gifts. And the

question I always ask myself, when

making that edit, is simply: ‘Would

I want to be given this myself?’

After 25 years as a beauty editor I set

the bar pretty high, but I’d be happy

to be on the receiving end of any of the gifts here – ergo, I

reckon that if they meet my exacting standards, you/your

daughter/mother/best friend should be pretty thrilled to

find them under the tree too. And if any of my friends are

reading this, I really, really wouldn’t mind any of this lot.

Nobody ever buys me beauty treats for coals-to-Newcastle

reasons, but I’d truly love anything on this list myself.

Dior Soap, £35. What, I hear you chorus? (And not like a

choir of angels, from where I’m sitting.) Thirty-five smackers,

for a bar of soap? Ah, but there’s no soap more chic on the

planet – an exquisite bar, engraved with the legend ‘Christian

Dior’, wafting forth glorious scent. (I’ve got the bar I was

given in my lingerie drawer to fragrance my underwear.

File under ‘too special to use’, but nonetheless one to

quicken the heart of the receiver – a new bar soap delivering

pleasure completely out of proportion to its size. Many

smells available but I love the uplifting Néroli Impérial.)

A Year of Wellness

Don’t let continual coughs, colds, splutters and sniffles derail your

child’s health (and the family’s equilibrium) this winter - it’s time to

introduce some naturally bolstering remedies

November: Combatting colds

We rarely feel prepared for

it – one moment we are

caught in late summer’s

generous warmth, the next, the mercury

plummets, and autumn has begun. The

segue between warmth and cold is rarely

managed well in the West. In the East,

there is a more nuanced understanding

of how to prepare the body for what

may lie ahead, and to prevent,

rather than cure.

So, with two primary school-

aged children, as autumn begins

to shift into winter, I try to equip

myself and my family with

the most natural foundation

of good health. Of course,

the children still get ill

– they need to, or they’ll

never develop strong adult

immune systems – but it’s

how ill they get, and how

quickly they recover, that is a

good sign of their flourishing immunity.

It is not about counting vegetables or

force-feeding fruit. Bolstering a child’s

health involves modern research-backed

additions to the family diet and, more

importantly, an understanding of how

and why we should eat differently as the

seasons change.

We often hear that our immune

system is situated in our gut. What

this means is that 70 per cent of the

antibacterial and antiviral cells within

our body are situated in the walls

of the stomach and intestines. Our

stomach also produces acid, which

kills off most pathogens

and our small intestine

produces mucus,

which blocks further

potential pathogens

from entering our bloodstreams. So,

when your gut lining is weakened, your

immunity will also be compromised.

I really cannot overstate the

importance of a healthy gut in the

pursuit of good overall health. Biokult

which can be rubbed onto the nipples

to boost the baby’s immunity in line

with your breast milk, or added to

bottle milk. Probiotic powder is also a

great way to boost the system of a child

great for sprinkling into

milk, water, juice and

onto cereal.

Also try brewing up cinnamon,

cardamom pods, ginger and turmeric

root, let it cool a touch and then add

honey (don’t heat honey, it kills off any

goodness). My kids take this diluted tea

in their water flasks and sip during the

school day, in lieu of water.

If they are not already, try to get your

children used to nourishing spices.

Spices are the most effective immunity

boosters in the world. If they’re fans

of porridge, sprinkle sweet-smelling

things into the pot too – cinnamon

and nutmeg go down well – and both

are high in antioxidants and boost

immunity. Drizzle raw honey over the

top – it contains anti-bacterial properties

and studies have shown that it helps

soothe sickly coughs and irritated

throats too.

Likewise, if making pancakes, use

them as a vehicle for immune-boosting

spice, and sweeten after cooking with

raw honey. I’d add here, that though

I am in no way maligning dairy for

children, when a child has a tendency

towards mucus-y coughs and colds, it’s

helpful to go easy on the white stuff.

Dairy has been unequivocally shown

to increase mucous production – you

may want to try organic rice, oat or nut

alternatives instead.

We forage for local elderberries in late

summer and boil them up into a thick,

concentrated syrup; if there’s a shortfall,

we love Pukka Elderberry Syrup, £12.46

(pukkaherbs.com). With Manuka honey,

it is also chock-full of thyme, ginger,

aniseed and black pepper – all goldstandard

immune-boosters.

Let common sense prevail too. While

it may be cold outside, keeping poorly

young ones inside with central heating

ablaze and bug-filled air recirculating,

isn’t helpful either. If children are too

poorly to run around, encourage them

outside, well wrapped up, for a gentle

walk. Or, if on bed-rest, keep windows

open while the child is well wrapped up

and warm, to ensure that fresh air comes

in while they sleep and recover.

And while I am loath to recommend

hand-sanitising sprays or washes (given

that we are made up of myriad colonies

of bacteria, it seems anathema to kill off

99.99% of it with a scattergun spray),

regular hand-washing, particularly after

school and before eating, can help keep

those easily transferable bugs away – and

natural soap (I like Dr Bronner’s Pure

Castile Bar Soap with Tea Tree, £3.99

biggreensmile.com) ) and water does that

job best of all.

What one piece of seasonal wisdom

helps you in autumn?

Autumn feels very much a turning

point in the year for me and a time

that balances harvesting the bounty of

summer and preparing for the darker

days of winter. So it’s about making

the most of any and all light and

bright days, but also slowing down and

acknowledging that we need the down

time to recharge and rest. I love the

colours of nature during autumn and

they remind me that each season has its

beauty and is as essential a part of the

cycle as spring and summer which we

enjoy so much. Autumn also has that

‘new school year’ feeling – even as an

adult! I love to start new projects that I

can work on over the next few months,

especially if they involve learning

something new.

Which one self-care ritual do you

never skimp on?

I like to bookend my day with some

quiet time to myself. In the mornings

that means yoga and stretching to wake

up my body - I either follow videos

online or go freestyle depending on

what my body needs - and meditation to

tune up mind and spirit. I particularly

like guided visualisations, but sometimes

five minutes of focusing on my breath

is enough. In the evenings I write in

my journal to savour the important

moments from the day. I like to label

memories and experiences with key

words that align with my values and

what I’m intending to manifest. That

way I’m compiling evidence of the way I

want my life to feel and can go to sleep

feeling grateful for what I already have.

What’s cooking in your kitchen this

month?

I just love those warm, filling family

meals like shepherd’s pie on a cosy

evening. This year I really want to

experiment more in the kitchen with

new ingredients and flavours, nothing

too complicated, just delicious and

nourishing food done well.

What always brings a smile to your

face?

Watching the birds in the garden is

a constant joy. Where I live, despite

being on a large housing estate, we’re

lucky enough to be visited by a wide

range of species and I love to put

food out to encourage them in and

keep them healthy throughout the

year. We have a number of ‘regulars’

who are great characters and seeing

their different behaviours is always

entertaining. I could quite happily

spend hours at our kitchen window

watching all the comings and goings.

What is the best treatment you’ve

had locally?

I love a good deep tissue back

massage, and the treatments

To raise awareness of youth homelessness as the weather starts to get colder, the

charity Centrepoint is holding a Soupathon this month. Their aim is to bring

together people from all over the country to serve up 30,000 bowls of soup. You can

The secret to good soup lies

in stock; a simple soup will

be transformed if it has good

bones - literally. Making proper stock

from scratch is a process that can take a

while. Use a slow cooker, large saucepan,

or dig out that crock pot from the back

of the cupboard, turn the heat down

low and prepare to simmer.

Lemon, Chicken

and Kale soup

Serves 4 Prep time: 15 minutes.

Cooking time: 40 minutes.

Use either leftover chicken from a roast, or

boned chicken thighs. Like a casserole, this soup

has a mellower flavour if made the day before.

• 200g boneless chicken pieces (thighs

or leftover roast chicken)

• 2 tbsp olive oil

• 1 onion, finely diced

• 1 medium sized waxy potato, diced

• 2 crushed garlic cloves

• 1 litre chicken stock

• 3 sprigs of fresh thyme, any woody

stalks removed

• Zest and juice of 2 lemons

• 150g orzo pasta (or miniature soup pasta)

• 150g kale, shredded

• Salt and pepper to taste

1If using raw chicken, transfer to saucepan,

cover with stock and bring to the boil, turn

the heat to medium and cook for 15 minutes.

Rmove with a slotted spoon, cut into thin slivers

and return to the pan and simmer.

2Gently sauté the onion and potato in the

oil for 5-10 minutes until the onion is

soft. Transfer to the pan with chicken (if using

leftover chicken, add here). Add pasta, thyme,

garlic, lemon zest and simmer for a further 10

minutes before adding the chopped kale.

3Cook for another 5-10 minutes, until the

kale is soft, add lemon juice, salt and pepper

to taste. Serve with crusty bread.

Wine+

The key ingredients are lemon

and spices so the wines needs a

backbone of acid and fruit flavours.

Saint Mont AOC Marks and Spencer,

£10, is a lovely dry white is a blend

of three local grape varieties; Gros

Manseng, Petit Courbu and Arufiac.

It has lovely aromas of grapefruit and

pear and has a fuller body than

most whites.

Vegetable stock

Makes approximately 1 litre* Prep time: 10 minutes. Cooking time: 40 minutes.

A flavoursome vegan broth can easily be made using a selection of seasonal

vegetables. It is created in a similar way, but requires far less time to draw out

the flavours.

• 3 medium-sized carrots, washed

but not peeled, chunked

• 3 celery stalks, washed and

roughly chopped

• 2 onions, chunked with skins on

• 2 leeks, washed (split the leek

longways, nearly to the base and

rinse under the tap fanning out

the layers), roughly chopped

• 6 medium-sized mushrooms,

rinsed and halved

• 2 bay leaves

• 3-4 sprigs parsley

• 2 sprigs fresh thyme

• 1½ litres water

Wine+

With this soup I suggest you pair

a wine that has aromatics and flavour

to hold its own against the flavoursome

vegetables so Sauvignon Blanc is just

perfect. Try Russian Jack Sauvignon

Blanc Marlborough New Zealand 2017

The wine has intense aromas and

lots of fresh fruit flavours to

match.

1Place all the ingredients in a large

saucepan or stock pot and place

on the hob. Bring to the boil and

then remove any scum that rises to

the surface.

Turn the heat down to the lowest

2 setting and simmer for 40 minutes.

Strain and use, or refrigerate until

needed. Keeps in the fridge for 4 days,

or can be frozen*

*If freezing, strain stock and return to

the hob, cook on a medium heat, until

the amount of liquid is reduced by a

half. It will be more concentrated and

take up less room in the freezer.

Food

Bone broth

Makes approximately 1 litre* Prep time: 15 minutes.

Cooking time: 5-8 hours (depending on type of bones).

Use bones left over from a Sunday roast, or ask the butcher

for some. If using a chicken carcass, make up the weight with

added chicken wings. If you are using raw bones, roast them

first for more flavour. Purists make it with bones from organic,

grass-fed cattle, which you can buy frozen online.

• 1½ kg bones, chopped

into chunks if possible

and preferably raw.

(Chicken or beef work

well).

• A glug of light olive oil

• 2 medium-sized carrots,

washed and roughly

chopped, but not peeled

• 2 celery sticks, washed

and roughly chopped

• 2 onions, cut into rough

chunks with skins on

• 2 bay leaves

• 2 sprigs parsley

• 2 sprigs thyme

• 1½ litres water

• 2 tsps of whole black

peppercorns

• 1 tsp salt

1Spread the bones evenly

across a shallow roasting

tray, toss in the oil and roast

in a medium oven for 40

minutes, until golden brown.

2Transfer to large saucepan

or stock pot, add the

vegetables, herbs and other

ingredients, pour water over,

place on the hob and bring to

the boil.

3A scum will rise to the

surface at this point. Skim

off with a spoon and then turn

the heat down to a simmer or

transfer to a slow cooker (or a

deep casserole pot and place in

a low oven - gas 2/140c).

4Simmer slowly for 5 hours

(chicken) or 8 hours

(beef). Long, slow cooking

is important, as this will

soften the bones, drawing out

collagen and other nutrients.

Check water levels and top up

if needed.

5Once cooked, allow to

cool, remove any fat that

collects on the surface, strain

through a sieve and either use,

or refrigerate.

6Keeps in the fridge for 3-4

days. Can be frozen*


Wine+

This dish has a savoury character

with some lovely acid keeping the

broth fresh. A red with some earthiness

and savoury character would be ideal,

and ripe fruit the wine has a lovely

savoury character that will shine

with this broth.

Wine+

Reach for the reds with this hearty

soup. It has aromatic herbs and tasty

vegetables so a wine with soft and supple

fruit and some herb notes would be perfect.

Made from Syrah and Grenache aged in

French oak barriques for nine months,

the fruit is juicy and soft with lovely

texture. A real winter

warming red.

Autumn Butter Bean and Vegetable soup

Serves 4 Prep time: 10 minutes. Cooking time: 30 minutes (excludes

dried bean prep time).

If you are using dried beans, refer to the instructions on the packet

- they may need to be soaked overnight prior to cooking in order

to draw out any toxins and then cooked thoroughly. Tinned butter

beans can be used straight away. This is a vegan soup.

• 400g tin butter beans (or

150g dried, see above)

• 2 sticks celery, washed and

finely chopped

• 2 leeks, washed (see above)

and chopped

• 2 medium sized carrots,

peeled and thinly sliced

• 250g large fresh tomatoes

(and 1 tbsp tomato puree),

or a 400g tin of chopped

tomatoes

• 2 tbsp olive oil

• 2 crushed garlic cloves

• 1 litre vegetable stock

• 2 tsp oregano

• 3 sprigs parsley (either

kind), finely chopped

• Salt and pepper to taste

(for a variation if you

like it spicier, add 1

tsp chilli flakes when

you are sautéing the

vegetables)

1Heat the oil in a heavy

based pan and gently

sauté the celery and leek for

5-10 minutes until soft.

2Add in all the other

ingredients, bring to the

boil and then turn down

the heat and simmer for 30

minutes.

3Sprinkle with finely

chopped parsley* and

serve with crusty bread.

*optional grated Parmesan for

non-vegans.

Warming winter wine is lovely – but try these spicy

alternatives, from some of our local producers

NIGHTINGALE CIDER

Tenterden mulled cider

Mulled cranberry gin

Makes 1

• 1 tbsp lemon juice

• A pinch of nutmeg

• 1 tsp (or less according

to taste) honey

• 1 cinnamon stick

• 2 cloves

• 1 orange, sliced

• 1 or 2 star anise

• 25ml Silent Pool gin

• 150ml cranberry juice

1Add the lemon juice, nutmeg, cinnamon stick, cloves

and star anise to a saucepan and bring to the boil.

Gently

boil for 2-3 minutes.

Reduce to a simmer, add the gin, cranberry juice and

3orange slices. Simmer for 5 minutes.

Remove from heat and strain into a Copa de Balon

gin glass.

• 2 bottles of Nightingale Tenterden

Cider (1L)

• 10 cloves

• 2 tbsp brown sugar

• ¼ tsp grated nutmeg

• Zest and juice of small orange

• 3 cinnamon sticks

• ½ vanilla pod

1Add the cider to the pan, followed by

the other ingredients and warm slowly,

until almost boiling. Turn the heat down

and allow the ingredients to a low simmer

for about ten minutes to infuse before

serving. Serve in a glass mug, or stemmed

wine glass.

2If you fancy a little extra fortification,

add a shot of English apple brandy to

each cup.

3 For a non-alcoholic and child friendly

version, use 1 bottle of Nightingale

apple juice instead of the cider and

remove the sugar (and brandy!) from

the recipe.

It’s not the end of the gardening year, says Jo Arnell, but time to look

Dreaming about next spring and summer and

visualising flowers in the future also helps to lessen the

blow of the coming dark, cold days. Any gaps left by

the ravages of the freezing spring and scorching summer

from earlier this year can be filled with good hardy plants

that might fare better in our unpredictable weather.

Some plants, on the other hand, have positively

thrived during the recent heatwave and reports of rare

and exotic specimens bearing fruit or flowering after

many barren years have been appearing. Mediterranean

plants have certainly enjoyed the summer, as have tender

meadow plants like Verbena bonariensis, Gaura, and the

diminutive Mexican daisy Erigeron karvinskianus.

Sadly, some less fruitful plants are only just clinging on and

will head into this winter in a weakened state, others have

already chucked in the trowel and lie buried in brown bins

or funeral pyre awaiting bonfire night. It is sad, but every

plant death brings a new beginning, a space to try again with

and an opportunity to grow something more rewarding.

Gap fillers

We can focus critically and more clearly on the borders now,

without the distraction of the flowers. If it’s all looking dismal

and bare, think about adding some plants for winter interest.

These can be evergreen, or have interesting bark, an elegant

form, an anchoring, focal point feature of some kind.

Try to make sure that plants that come into their

own during the winter either fade into the background

to make way for summer plants, preferably becoming

a foil for them, or best of all, will bring another

point of seasonal interest later in the year.

Structure

Herbaceous plants have been to the fore in gardening

recently and they are gorgeous, but sadly disappear

under the ground to wait out the winter, leaving the

borders looking a little sad (or at best poetic and full

of wildlife if you have left the dead top growth on).

If this is the case and there’s a lack of structure, think

carefully about the size and shape of the plants you intend

to use. Evergreens will give you the same look all through

the year, but deciduous shrubs can be very useful too if

they have an interesting shape or other structural feature.

November is a great month for planting trees and

shrubs. The soil is still fairly warm and roots will have

a good long time to settle in and start growing before

the pressure to support leaves begins again in spring.

Evergreens

I love the quiet handsomeness of evergreens like Viburnum

davidii or Hebe ‘Red Edge’ - they sit stalwart and demure,

waiting out the warmer months in the shadow of showier

plants, like unsung heroes in the borders. They are often

overlooked, especially among the dazzle of summer flowering

plants, but they really come into their own in the winter.

Many have big glossy leaves which reflect light, helping

the plant make the most of the low light levels, and

looking pleasingly sleek and shiny to us. Contrastingly,

if their leaves are tiny, they will form dense, punctuating

shapes that help to anchor a planting scheme. Winter

frost will positively enhance the look of many evergreens,

gilding the foliage and the bare bones of the border.

Winter shapes

Shrubs with hips and berries are lovely to look at and are of

vital importance as a food source for wildlife. It’s hard to beat

the fiery glow of Pyracantha - commonly called Firethorn,

because of its bright berries, or reliable old Cotoneaster

horizontalis for its sculptural, herringbone-shaped stems,

bee-friendly blossom, red autumn foliage and berries.

Red is not the only colour for berries either; the

Sorbus (Mountain Ash, or Rowan) family of trees have

been cultivated with yellow (S. ‘Joseph Rock), pink

(S. ‘Pink Pagoda), or white berries (S. Cashmiriana),

as well as the more usual orange or red.

Box Excellent for adding formality and

evergreen interest. Create low hedges, topiary

shapes and focal points - beware, however of

box blight and box tree caterpillar, which is

now rife in London and surrounding areas.

Euphorbia wulfenii An architectural plant

with handsome grey/green foliage in winter

and long lasting lime green bracts in spring.

Miscanthus sinensis A tall grass with attractive

seedheads that will persist all through the

winter. Grasses are a good alternative to ‘blobby’

shrubs and bring movement to a border.

Osmanthus A small-leaved evergreen with tiny

scented flowers in spring. It can be trimmed to a neat

shape to make a dark backdrop for other plants.

Cornus alba ‘Elegantissima’ This dogwood has

pretty, variegated foliage, good autumn colour

and dark red stems on the young growth.

The beautiful dead

No description on a plant label will say ‘dies

gracefully,’ but there are definitely some plants

that look just as good as faded skeletons as they

did in their prime. Sculptural seedheads, dead and

dying stems make poignant silhouettes in the low

slanting light at this time of the year. Plant them

where they can be silhouetted among grasses, or

will bring contrasts next to sturdier evergreens.

Hollow stems make wonderful winter homes

for insects too, so don’t cut down all the thick

perennial stalks, or the ladybirds will have

nowhere to spend the winter (except perhaps

within the window frames of the house).

If you like things neat and really do have to tidy

up, you could make or buy a stylish bug hotel, or

leave a pile of sticks and logs somewhere out of

sight, so that the beneficial creatures, that could

be helping you with pest control in the summer,

have a sheltering place for the colder months.

Dahlias,

darling!

Sue Whigham celebrates and investigates

the most joyous of late bloomers

Whether the name ‘dahlia’ was bestowed by the great

Carl Linnaeus himself – the Swedish botanist,

physician, and zoologist who formalised ‘binomial

nomenclature’, the modern system of naming organisms

- after one of his students, Swedish botanist, Anders

Dahl, is in question as the great man died in 1778, eleven

years before the plant was introduced into Europe.

It seems most likely that the first attempt to define the

genus was made by Abbe Cavanilles, Director of the Royal

Gardens of Madrid, who received the first specimens from

Mexico in the early 1790’s. However, what is certainly

known is that the species originates in Central and South

America and in particular, Mexico,

where dahlias are the National Flower.

Their natural habit is rather unlike the

conditions we give them in that they come

from cool, damp mountain slopes. Imagine

seeing the lavender flowered species, Dahlia

imperialis, growing to its full height of up to

ten metres on the hillsides of Guatemala…

The chance of that particular plant

flowering in this country is limited so we

have to content ourselves with growing that one for its

dramatic height and foliage, but with 42 species of dahlias

and innumerable hybrids – up to 50,000 and still countingwe

have a wonderful array of choice of this jolliest of flower.

What other bloom is so varied and so much fun as a late

season border plant? I was reading the Frustrated Gardener

blog this morning which is worth subscribing to and the

author Dan Cooper (whose Broadstairs garden is small, hence

the title of his blog) and I particularly like his description

of a ‘drama of dahlias’ for that is what they bring to a

garden with their fantastically rich colours and forms.

We’ve got two of the species varieties growing in a

large pot here, one of which is D. coccinea var. palmeri,

and I can’t tell you how often we’re drawn to go out and

admire the intensity of its burnt orange petals in the early

evening sun combined with delicately filigree leaves. I

like the single flowered varieties such as this particularly

as they are, of course, bee friendly. And whilst the ball

varieties, also firm favourites, with their intense spiral

arrangement of incurved petals are lovely, any pollinating

insect would be pushed to make any headway with them.

I wanted to know a little more about the secrets of success

with growing dahlias with an eye to improving on this year’s

limited success. Mind you, it hasn’t been the ideal year. Even

Monty Don admitted that his dahlias haven’t been as usual

and he put it down to lack of water in

June. All the more reason to look ahead

to next season, so I popped into see Dave

Izzard whose front garden in Wittersham

is always a picture in dahlia season and

causes many a dahlia loving driver to lose

concentration for a moment or two!

He was so accommodating and not

only showed me his plants but talked me

through what he does to produce such

fantastic blooms and how he got started. It seems that thirty

years ago he joined the Parish Council and was given the

job of looking after the planting around the War Memorial.

Luckily for him somebody in the village offered him dahlia

plants which did well and that was it. He was hooked!

He tends to get his tubers from Halls of Heddon who have

a very comprehensive list. They offer 10 to 13 centimetres

pots containing a tuber grown for a full season before it is

sold. This ensures that it is healthy and compact. They are

available from December through to February and arrive in

little polystyrene sleeves in vermiculite for you to start off.

Dave cuts back his dahlias when the frost gets to them or

when they “start looking embarrassing”. I know it is a good

There are 50,000 different dahlia hybrids

idea to lift the tubers once the foliage has been blackened

by frost and hopefully before the stems are badly frosted.

He has a small but compact greenhouse and puts his tubers

in large pots of his own gritty mix (which would have had

daffodils growing in it earlier in the year), after cutting the

stems down to about ten centimetres and drying the tubers

out upside down. This is because the stems of dahlias are

hollow and you don’t want to leave moisture in them for the

winter because it’s likely that they would rot if you did.

In February he will start watering them and once they begin

to sprout he will take any cuttings he wants for his garden.

When he plants out he uses a mycorrhizal fungus product

around their roots to get them off to a good start and will

stake them at this stage, tying them in as they grow on.

This is a good tip as it is so easy to pop them in and

then think that you’ll do it later. They move fast and

sometimes a bit too swiftly and it is so much easier to

start with the stakes in place whilst they are relatively

small. Dahlias are hungry plants and incorporating

well rotted manure will ensure that they flourish.

Once they get going, Dave is generous with his feeding

and will do this weekly. He uses a rotation of products to

encourage both plant growth and flowering. It certainly

works. It seems that if you are showing dahlias the thing

to remember is that a dahlia bud the size of a pea takes

thirty days to mature and for those that know, once

you have selected the best looking bud or young flower

you then take off any side shoots so that the plant’s

energy is concentrated on that particular bloom.

I really liked his selection of dahlias for this year especially

a vibrant red medium semi cactus, D. ‘Andrew Mitchell’

which is definitely on our wish list, D. ‘Avoca Comanche’,

a small semi cactus with peachy orange flowers and a lovely

creamy yellow small decorative, D.‘Winholme Diane’.

The Salutation Garden down in Sandwich has an

annual Dahlia Festival in September and this year they

have had 284 cultivars growing in the garden. These are

currently being photographed and put on their website.

Log on to this as you can order tubers for next year having

had a good look at the myriad varieties they grow.

Steve Edney, The Salutation’s head gardener is mad about

dahlias and is on the RHS Dahlia Committee. They hold

the National Collection of Dark Leaved Dahlias in Sandwich

and have their own dahlia breeding programme there.

Talking of which I saw a beautiful dahlia/aster combination

up in the High Garden at Great Dixter last week. The dahlia

was D. ‘Twyning’s After Eight’ AGM, with its elegant single

white flowers and the darkest of foliage. This was developed

by Mark Twyning in 2004 down at the National Dahlia

Collection now at Varfell Farm, near Penzance in Cornwall.

The Collection was originally based on a private collection

made over many years by David Brown who, when the

dahlia was out of fashion in the eighties and nineties,

‘kept the faith’ and conserved hundreds of varieties.

They were hugely fashionable in the fifties and sixties and

Dan Pearson describes so evocatively taking his little ‘garden in

a seed tray’ to local flower shows as a child where the dahlias

were the domain of men in string vests growing the biggest

and best of everything on their allotments including dahlias

rather than growing them as border plants. And how, despite

their ‘glamour’, dahlias were as much vegetable as flowers.

Interesting that, as the Aztecs used the hollow stems

of Dahlia imperialis as a source of water; some South

American peoples use the leaves medicinally and the

tubers too were harvested as a food product.

The art of learning

Forget teaching to the test, the arts are more important

in education than ever, says Hilary Wilce

Have you noticed that many private schools are starting

to advertise themselves differently these days? Out have

gone pictures of pupils in white coats and lab goggles

peering earnestly at flasks of unknown liquids. In have come

pictures of happy, larking children splashing paint around in

the art room, doing ballet, or dressing up for the school play.

And the message is clear. These are schools that nurture

the whole child. They give everyone a chance to shine.

They look after their pupils’ health and wellbeing and

foster their growth as well-rounded human beings.

Why the change? Because private schools always keep their

marketing ear to the ground and know what parents want. Yes,

parents still expect great exam results. But

increasingly they also want their children to

grow into happy, creative, well-adjusted people.

Private schools also know that the pips

are being squeezed out of arts education in

state schools and understand they can offer

something not necessarily available elsewhere.

Hard-strapped state schools are feeling great

pressure to concentrate on core subjects, so

when they – yet again – have to take a knife to

their budgets they see that art, music, dance, design, photography

and drama are areas where they can make more cuts.

Yet the arts offer so many benefits to children, it’s impossible

to make a full list. To name just a few: They help students

express themselves and get to know their thoughts and emotions

better. They teach them to look closely at the world around

them and respond imaginatively to its beauty and complexity.

They train them to communicate well and work creatively

together. They foster many important core skills, including

motor functions, language development, decision-making,

inventiveness, self-discipline and visual learning. They offer

‘safe places’ in school where it’s fine to experiment and try

things out, without too much pressure to get it right.

In short, the arts help children to grow and

learn in ways that all human beings need.

The more children know themselves and how to manage

their emotions, the less likely they are to run into mental

health problems. One head of drama at a London private

school says that dealing with ‘life, death, joy and grief’

in the drama studio often prompts students to open up

to him about what’s going on in their own lives.

And when it comes to adult life, the better young people

are at communication, cooperation, empathy, self-discipline

and independent thinking, the better they

are likely to perform in any job they do,

and the better they’ll be able to navigate

the shifting and unsettled job market that

they will have to make their way in.

Added to which, the UK has a vibrant and

fast-growing creative industry sector worth an

estimated £92bn a year, which means there

are any number of direct opportunities for

people to build a career on their creative skills.

So for parents the message is clear: value your child’s artwork

as much as their high marks in science and maths. Encourage an

interest in doing and making. And support them if they want

to sing, dance, drum, act, write, paint or play the double bass.

Meanwhile, let’s pay tribute to all the many people

who are desperately trying to keep the flame of arts

education alive in British schools. Prince Charles has long

been a vocal champion. And the global prize-winning

teacher Andria Zafirakou has just announced that she is

putting her million dollar winnings into a foundation to

get more artists and arts organisations into schools.

Fables from

the Farm

Ever seen a tantony running in a platt?

Jane digs deep into agri-history

Sitting having my morning cup of coffee, I picked up the

paper and on the Games pages came across Wordwatch,

where you get shown different words with three possible

meanings for each and you have to choose the correct one

One of the words was ‘tantony’. Turns out t’s another word

for ‘runt’ as in the little one in a litter of pigs. Not one I’d

ever heard, but then neither was a ‘shut’ which my friend Bill

informs me is another name for a weaned pig. So you could

have a pen of shuts with hopefully no tantonies.

I just love all the agri-history stuff. How about

walking down a traid (rutted path), to a platt (grass field

between woods) to find your missing swingletree (part

of a horse harness)? The history of Sussex cattle is every

bit as fascinating. Sussex are one of several red-coloured

breeds found as far back as Roman times roaming across

southern England. The others include the Red Poll, the

Lincoln Red and the North Devon.

The South Devons were evidently rather more promiscuous

as they now sport a rather fetching

Caramac (that dates me) coloured coat. But

back to the Sussex. Across the Weald and

into Kent these cattle, called oxen – a word

I’m sure you recognise – were primarily

a draught breed used for ploughing and

hauling timber.

In his work A Tour of Great Britain

published in 1724, Daniel Defoe talks about seeing a tree

drawn on a timber ‘trug’, four wheels upon which the trunk

was laid, pulled by twenty-two oxen – quite some tree and

just imagine what would happen if that lot had decided to

take off!

Gradually horses replaced draught cattle in most parts of

the country, but because of the thick clay, horses struggled

in the Weald so oxen were used for far longer here. They

were also a common form of transport, and not just for the

peasants. Not far from Lewes, Defoe spied an ancient lady of

good quality going to church in a coach drawn by six oxen.

But by far the most inspiring snippet is an article by Lord

Sheffield written at the end of the 18th

century. By all accounts, a young Sussex

ox broke all previous records when it ran

the four-mile race-course at Lewes, sadly

closed in 1964, in just under 16 minutes.

Ok, so the fastest racehorse recorded in

history was galloping along at just under

44mph and this cow was clocking only 15

but even so that has to be impressive. A new opportunity for

Channel 4 racing?

So in many ways these cattle have always been dual

purpose, the original multi-taskers, only fattened for eating

once they were no longer strong enough for the yoke. Fast

forward now and many of our native cattle are still doing two

jobs. Livestock grazing plays a key role in maintaining speciesrich

habitats in many environmentally important parts of the

South East like the Pevensey Levels, Surrey Heathland and

South Downs.

In these areas they eat many of the aggressive species like

coarse grasses to allow others to flourish, their trampling

creates gaps which allow seedlings to grow and by removing

plant material much more gradually than topping or cutting

for hay, it gives mobile species like mice and beetles a chance

to move to other areas within the habitat.

So they’re doing a really good job in maintaining the

landscape…and then we eat them. Plus ça change.
