It’s normally
ridiculously hot in
Perth during summer,
so refreshment and drinkability are
still king when it comes to my choice
of beer. This year I’ll be serving up fruit
infused summer ales, such as Two Birds
Passion Victim or a new world take on
a sour German wheat beer like Colonial
Brewing South West Sour. Both beer
styles provide a huge amount of flavour,
a pleasant dry finish and have the the
ability to slot in beautifully beside any
Christmas day banter!

my go to, as they are delicate in
style with a lovely balance of acid.
Riesling is refreshing while being
the perfect companion to most
dishes and can also handle some
heat, so if chilli is your thing, then
a Riesling will do just nicely. Cold,
crisp, dry, Rieslings are perfect
for the Queensland summer. Think
lemon and lime zing with a clean
balanced finish on the palate.

As days get longer and the temperature
warms up, Tequila, Rum and Cognac
will be attending our festivities. I will
be returning to basics, serving up cocktails that
are ‘simple and seasonable’ by capitalising on the
blossoming orchards and tropical fruit that we have
access to in the great South East. I will be welcoming
the afternoon sun with Apricot & Nectarine Sidecars,
Watermelon Daiquiris and Mango Margaritas.

Christmas time in Australia for my
drinking tastes are always focused
around fresh Summer Flavours and light
spirits. On my priority list of drinks are refreshing Gin
and Tequila Drinks. The Australian Craft Gin Industry
is on fire and I love to marry some of the local gins
(who specialise in Australian botanicals) as a partner
in my drinks with locally sourced, seasonal fresh fruit.
I always love drinking Margaritas, as it’s my go to
cocktail for summer, and I always select a 100%
Agave Premium Tequila to mix with.

Christmas
With the health and wellbeing trend
here to stay, the move towards low and
no alcohol highballs are emerging as a
refreshing alternative to soft drinks.
Vermouth is also on the rise and is
the perfect alternative for wine based
cocktails. Offering a sophisticated
option that will keep you under the limit
whilst still celebrating the occasion.
Sweet Vermouth, squeeze lemon,
topped with tonic. Bianco Vermouth,
squeeze lime and topped with
Lemon Squash.
Racing Season
As the weather warms up and Spring
Carnival comes into sight, we start to dust
off the dressy outfits and get ready to race.
So what drink best matches the season?
The Aperol spritz has paved the way, and
Australians have truly adopted the Spritz as
their own. Wonderful refreshing drinks that
can be enjoyed all throughout the day.
Try substituting seasonal fruit liqueurs
such as peach or wild strawberry, or mixing
it up with an Elderflower tonic for a more
sophisticated option.
The Spritz category has gone way beyond
the flagship drink into a wonderful world

The biggest barrier to having canned wine in the past was packaging. Winemakers weren’t sure
how to stop the beverage from corroding the metal, and they couldn’t figure out how to maintain
a good shelf life. Wine cans now have a proprietary lining that was developed through extensive
