Letter
What is your favourite thing about Christmas Day? As
well as the prezzies, the champagne (essential...) and
amazing food, I always love getting dressed up.
I know some families relish spending the whole day in festive
pyjamas, but in mine everyone gets a party look on, complete
with jewellery and high heels. For breakfast.
So I particularly relish our glorious fashion story this month
– and I can’t imagine anything more wonderful than spending
Christmas at beautiful Goodnestone Manor, where we shot it.

When might challenging a
Will be justified?
The decision to challenge a Will is
not taken lightly. Philip Youdan of law
firm Cripps, who has been advising on
disputes involving Wills for more than
15 years, explains when a challenge
might be justified.
To better understand public attitudes
towards bringing challenges to Wills,
we commissioned a survey. The results
were enlightening: 43% of people
believed it was justifiable to challenge a
Will where there were financial or moral
reasons for doing so. Against this, 36%
of respondents believed it was never
fair to challenge a Will, with the balance
of respondents unsure.
It is not surprising that this question
divided opinion – the ability to make a
Will and to leave your money to those
people you wish to benefit is considered
by many to be a fundamental right.
While there has been plenty of media
coverage of recent high profile
cases, the vast majority of Wills are
not challenged. This reflects public
attitudes but also, importantly, the
fact there are only very limited
circumstances where a Will can be
disturbed.
There are two principal grounds under
which a challenge might be brought.
Interestingly, these grounds reflect the
view expressed in our survey.
Firstly, a Will can be challenged on the
grounds that the way it was prepared or
the wider circumstances affecting the
preparation mean it is invalid. Secondly,
it is possible to claim that, despite
being valid, the Will does not make
sufficient provision for a dependant of
the deceased.
When is a Will invalid?
It is not uncommon to find Wills
executed in a manner that does not
meet the formal legal requirements.
In particular, the person making the
Will (the ‘testator’) must sign it in the
presence of two witnesses, who must
also sign the Will. A Will can also be
challenged if the testator did not have
the required mental capacity, did not
have knowledge of the contents, or was
pressurised or misled into making the
Will by somebody else.
These grounds can all be seen as
relying on a moral basis to overturn
a Will. If the testator does not fully
understand their actions, is it right that
their Will should stand? Similarly, if
someone has exerted pressure upon
them, is it right that they are entitled to
benefit from those actions? Many would
support the law protecting testators
and those who would otherwise have
inherited in these circumstances.
What if the Will doesn’t provide for
me?
It is not disputed that certain
relationships create duties and
responsibilities, for example as between
spouses and between parents and their
children. Should, however, a testator be
held to those responsibilities on their
death? The results of our survey would
suggest there is a mixed view on this.
Many European countries have so
called ‘forced heirship’ rules, which
create binding obligations. In England
and Wales the starting point is that
individuals are largely free to leave
their estates to whoever they choose.
A limit on this comes in the form of the
Inheritance (Provision for Family and
Dependants) Act 1975. Under this, if a
person thinks they should have been
left a share or a larger share of an
estate they can make a claim if they are
an eligible claimant. These include a
spouse or child of the deceased, certain
cohabitees and those being provided
for prior to death.
The court will consider a range of
factors when considering whether a
party is an eligible claimant, and what,
if anything, they should be awarded.
They will take particular note of the
financial circumstances of all involved.
The Act therefore works where there is
a financial need, mirroring a key view
expressed in our survey.
How do I challenge a Will?
Disputes over Wills are very emotive
cases and attitudes to them depend
upon beliefs and experiences. However,
it is likely that this type of case will
continue to arise as people live longer
and carry larger sums of money into
their advancing years.
For anyone affected, legal advice should
be sought. For example, having a Will
professionally prepared can make
the terms much harder to challenge.
Alternatively, if you have concerns over
a Will or the provision you receive,
early legal advice can either provide
reassurance or enable you to set the
terms aside.

As you head out across Romney Marsh towards the sea, Rye’s
medieval citadel is the most prominent view on the skyline.
Along the coast is Dungeness, where the nuclear power station
broods over the bleak shingle expanse. Spanning the middle section
is Camber Sands, with its acres of golden beach backed by tufted
dunes - and Camber itself, unremarkable, low-rise and quiet (save
for all the film crews), like a settlement at the edge of the world.
Loma Beach House sits at the end of a sandy lane, its smart,
but coastal, black-clad facade hinting, or rather, broadcasting, that
something has fundamentally changed inside this 1950s house.
Gigi and her partner Matt, having successfully renovated a flat - and
finding that they enjoyed the process - had been thinking about buying
a coastal holiday property, for themselves to use, but also to rent out,
somewhere in Devon or Cornwall. In the end it was (just as the film
crews have found) the proximity to London and to Tunbridge

Wells, where they work, that brought them to Camber.
“I grew up around here and came down to the beach in
summer and winter – all year,” says Gigi. “We were looking
in Devon and Cornwall when this house came up.”
A mid-century box of a house backing onto the iconic
sand dunes, the property hadn’t been touched in years,
something that might have put others off, but not Gigi
and Matt. With their design backgrounds – Gigi is a
fashion stylist and Matt has a creative digital agency
– they could see beyond the faded decor and clutter
to the basic rectangle of the building. They set about
clearing some space and paring it back to a shell.
“We completely knocked it through,” Gigi explains.
“What is now the bathroom was the kitchen and
it was all really cluttered with small rooms. There
was a garage in two parts, so we opened it all up
and put French doors in all the way along.”
They worked every weekend, barely stopping for the birth
of their daughter Luna, because, as in all the best DIY house
projects, the baby arrived just at the messiest part of it.
The process has taken two years of weekends,
travelling to and from Tunbridge Wells and has been
a complete (and almost literal) labour of love.

“And you have to work hard,” laughs Gigi. “But
I only remember the good times. We kept it calm.
I didn’t want to change the energy. It’s important
to give a place a soul and an emotion.”
Gigi believes strongly in bringing a distinct, but
warm and welcoming approach to the holiday home,
explaining: “I like the whole concept of hippie living, but
I try to do it with love.” She and Matt have a clear vision
about what they want and what the Loma experience
should be, when people rent the house from them.
“People want thoughtfulness,” she says simply. “We’re
both welcoming, good at it, it works for us. I get people.
They want to feel essentially secure and relaxed. We’ve
set up something a bit special that acknowledges that
they’ve paid for it - and the little touches count.”
One of these is a good night’s sleep.
“We spent quite a lot on the bedding. There are high thread
counts on every bed, the mattresses are all sprung, we’ve
put in good showers. I want everyone to have lovely sleep,
hot showers, everything crisp and white and super-soft.”
It certainly sounds like bliss. “Some things
look beautiful,” Gigi adds, “but are hard and
uncomfortable and don’t give you inner peace.”
The couple’s thoughtfulness even extends to making sure
there is an endless supply of wood for the burner and: “There
are blankets everywhere - and sun hats. And I always leave

outside and a wish lantern, to make their own holiday wish.”
Gigi explains how they are setting up Loma to be a brand
and how the interior styling is echoed by their website,
so that in the end, whatever you can see in the house
you’ll be able to buy online. “Like a concept store - where
you can try it for size first. And see things in situ.”
They would love to expand their idea and incorporate
a yoga studio and a shoot location. “With the dunes and
the light, it’s great for that. It’s always busy down here.
One day in the summer I walked out and all down the
road there was filming - Whistles, Net-a-Porter all in
a small space. The filming helps the local community
and helps village life - the cleaners and fishermen.”
Much of the filming is in the winter, when the
beach and the dunes are empty and Christmas
has an atmosphere all of its own:
“We’ll only be here for New Year this year,” says
Gigi, “but when we are here for Christmas, we have
the traditional thing with turkey etc, but we all
muck in. This is a nice place to cook in, you can see
everything and be part of it in an open plan space.
“Tradition changes down here a bit. The focus is towards
the outdoors and the beach, so that whatever the weather
we’re outside getting that energy and then we can come
back and have a fire and watch an old school movie.”

Loma Beach House is plenty big enough too, for the
whole family to stay in without a problem. There are five
bedrooms; four doubles and one ‘von Trapp’ style room
for the children, complete with three cabin-style bunk
beds, each with its own lamp and locker. The beds have
been constructed in a charming utilitarian style out of
OSB (like chipboard but with bigger flakes of wood).
The OSB is used throughout the building as a key
construction material and brings a rough woody warmth
to the open plan interior, contrasting perfectly with the
industrial look of the slate grey finish on the walls. For
this they used a material imported from America called
Ardex. It’s a moody looking undercoat finish - a bit like
Tadelakt, that brings a textured feel with added depth.
Darker walls bring intimacy and sense of enclosure
to the larger zones and spaces, but Gigi enjoys using
these ‘hiding’ colours in smaller areas too. One of
the downstairs bedrooms is clad with panels and

painted in a midnight blue, a mix atmospherically named
by Crown Paints as ‘Deep Space Echo’. By spooky chance
Gigi found some material for curtains that exactly matches
the panelled walls. Crisp white bedding perfects the scene.
By contrast, the ‘garage’ bedroom at the other
end of the ground floor has a completely different
vibe: simple and understated, save for the large
dream-like photograph positioned so that it can be
seen from the opposite end of the building.
“We used the OSB in here too; it’s a good
colour and texture. We wanted warmth, but to
keep it minimal. We didn’t want white.”
Upstairs on the landing, a shoal of golden fish appear
to float delightfully through the walls - from one side
of the house to the other. Follow the fish and there
are two more double bedrooms, one en suite, both
with views onto the dunes. They too are simply, but
luxuriously finished, with full-length soft velvet curtains
that pull across from one side in a seamless sweep.
The en suite bathroom has a monochrome sliding
door, so that left open, you can see out to the dunes
- the ultimate luxury - a bath with a view.
The downstairs bathroom is utilitarian and the shower
enclosure is clad in galvanised steel.
“I hate glass shower screens,” says Gigi.
Industrial finishes are softened by old French shutters
and wooden accessories. “The massive sink is from eBay,”
she explains, “but because it’s not bought from a

These are useful tips for a trigger
happy eBay-er. “Luckily we have a
great plumber to make it all work.”
Outside in the hall it is all faintly
‘school cloakroom’. A lengthy coat
rack, sourced in Rye, but originally
from a school changing room, exactly
fits along the wall opposite the
bathroom, affording plenty of space
for hanging coats, hats and, in the
summer, a long row of beach towels.
The floor at ground level is polished
concrete, liberally scattered with
cowhide rugs. This finish makes
cleaning fairly straightforward.
“It’s a beach house, we want to
keep the industrial Scandinavian
style,” she says, “but we get a lot
of sand. It gets in all the cracks, so
you need easy zones that are easy to
sweep. It suits a minimalist style.”
A kitchen is not an easy place to be
minimalist, but this one is of such a
generous size, with a chunky old work
bench, found in the original garage,
up-cycled into a kitchen counter, a
huge table made from scaffolding
planks and giant metal racking for all
the cooking and dining equipment.
It all looks purposeful and able to
generously cater. Much of the time,
however, the cooking is done out
on the deck in the pizza oven.
The couple firmly believe in
repurposing and renewing. “We
try to be eco-friendly,” Gigi says.
“It’s a respectful way to live.

To make the house we re-used everything - even the
sedum in the guttering was taken out and replanted!”
They are now planning to install an electric car charging
point and eventually solar panels. A befitting approach
when your house backs onto a nature reserve.
Like the village of Camber itself, Loma Beach House is
on the edge of several worlds. Scandi-inspired, pared down
and Post Industrial, with a touch of Californian laidback,
easy living thrown in. Gigi and Matt’s considerable skills
and thoughtfulness have combined to create a welcoming
seaside retreat with a unique character all of its own.

This year’s Wealden Times Midwinter Fair, the fairest of them all...
Months of planning by stall holders
and the WT events team came to
glorious fruition over three days at
this year’s Wealden Times Midwinter Fair.
A record number of visitors stocked up
for Christmas from the great range of gifts,
plus fabulous festive food and decorations,
which were on offer from the 260 hand-picked
exhibitors who joined us at the Hop Farm.
As always, the Midwinter Fair wasn’t
just about Christmas. Antique furnishings,
gorgeous clothes and accessories and
stunning homewares made it a great
place for some serious retail therapy.
Everyone agreed that this year’s mix of new
designers and producers with all our favourite
regulars made it one of the best fairs ever.
The best-dressed stand was chosen by
Tunbridge Wells-based stylist Victoria
Genevieve and it went to Little
Boutique Bakery, the first time a food
exhibitor has won the award.
The fair’s sponsor, Harpers &
Hurlingham, raised a whopping
£1,995 from raffle tickets in aid of Cancer
Research thanks to the generosity of visitors
and the giving didn’t stop there – our
charity partners Kent, Surrey and Sussex
Ambulance Trust raised vital funds too,
meeting up with existing supporters and
making friends with some new ones.
Wealden Times magazine’s emerald green
stand was a great success on social media –
check us out, we’re all over Instagram! A big
thanks to Huut for supplying the gorgeous
blue sofa and Jen from Blooming Green for
creating our lovely letters from dried and
fresh flowers. Thank you, too, to all the
lovely magazine readers who stopped by to
say hello. We love getting to meet you.

It was Valentine’s Day when fashion designer, Kim
Denman, then living in Los Angeles, received a call from
the owner of the house that she had fallen head over heels
in love with in St Leonards-on-Sea several years previously.
Her dream house, an early Gothic revival pile designed
by father and son Regency architects James and Decimus
Burton was back on the market and Kim and her husband
Paul, had been offered the first bite of the cherry.
‘It was an incredibly emotional and surreal
moment,’ says Kim. ‘I had become obsessed with
the house from the first moment I saw it.’
Some places have an inexplicable ‘pull’ and I can
vouch for the fact that Kim’s ideal home is such a
place. Having moved recently to St Leonards myself, I
spotted the house one evening, through the trees, while
walking through St Leonards Gardens. With its huge
Gothic-style arched windows illuminated by a crystal
chandelier, it stopped me in my tracks and left me curious
about its history – and wondering who lived there.
Kim’s own love affair with her ‘dream house’ began over
20 years ago, on a family trip to the seaside. ‘At the time, we
were living in Islington, North London, and our son, Joe,
who suffers from cystic fibrosis, was in need of fresh air.’
The family headed for Eastbourne, renowned for its
restorative sea breeze and while they were there Kim
spotted an advertisement for the property in a local
newspaper. Her curiosity was sparked. ‘For Sale - Victorian
folly in St Leonards-on-Sea.’ She still has that cutting.
‘I had no idea where St Leonards was,’ laughs
Kim. ‘But there was something about The Clock
House that called out to me. I was enchanted.’
On the way back to London, they drove east
along the coast to St Leonards with the intention
of seeing the property in the flesh.

‘I drove around St Leonards, which at the time
was the seaside town that time had forgotten not
what it is today, but I couldn’t find it, so I went
back to London feeling disappointed.’
Still she kept thinking about house. ‘I
couldn’t get it out of my head,’ she says.
The next trip to look for it was with husband
Paul and on this occasion, the hunt was successful.
‘We didn’t make an appointment! We just knocked
on the door and were welcomed in,’ says Kim.
Once inside, Kim’s love for the house wasn’t diminished.
‘Although the décor was seriously 1970s and the place
wasn’t in the best state of repair, I fell hopelessly in love.’
But as with most love affairs it didn’t immediately ‘run
smooth’ and their offer, made first thing the following day,
was rejected in favour of another. Deciding they had to
move on – literally – Kim and Paul, bassist for Sade, moved
their family from London to the arid, sunny climate of Los
Angeles, California, which they hoped would be beneficial
to Joe’s health. For the time being, sun, sea and surf replaced
the notion of romantic Gothic towers and Victorian charm
and Kim’s dream of a life in St Leonards-on-Sea was put on
hold… Until that auspicious phone call several years later.
After jumping several more hurdles, the couple finally took
possession of the house. It needed a complete decorative
overhaul, despite attempts by several owners, including the
actress Maria LeBrock, mother of actress Kelly, to update it.
‘It was a massive project,’ recalls Paul. ‘Myself
and a local builder refurbished the majority of
the interior, which took over two years.’
Most of the features in The Clock House are
sympathetic additions made by Paul and Kim. Sandstone

‘We scoured salvage yards and antique shops in St Leonards,
Hastings Old Town, Brighton, Bexhill and Lewes looking
for period appropriate fixtures and fittings,’ says Paul.
Partly built into a sandstone cliff with views across
picturesque St Leonards Gardens (also designed by the
Burtons), The Clock House is a stone’s throw from
the sea and the cool shopping hub of Norman Road,
where Kim has her boutique Siren, sellling Hollywood
vintage clothing and her own designs, although it
feels like it’s in the depths of the countryside.
The main entrance, situated on Maze Hill, sets the scene
and gives a taste of what’s to come in the rest of this fairytale
home. The jaw-droppingly beautiful hallway is complete
with two impressive painted religious statues, originally from
a Catholic convent in Ireland, draped theatrically with fake
fur stoles and adorned with antique crowns. Like patron
saints of The Clock House, they now welcome visitors.
‘It took four men to move the figures,’ says Paul. ‘They were
so heavy that once they arrived in the hall, they never left!’
Stripped and polished wooden floorboards and vintage
decorative wallpaper, offset an enviable collection of religious
iconography, including over-sized brass church candlesticks
and carved crucifixes and an organ, a Christmas present from
Kim to Paul.
‘At Halloween, we throw the front door wide open
for trick or treaters and I play the theme from The
Addams Family.’ A gilded nave-style ceiling and a
brass sanctuary lamp, complete with candles, cast a
golden glow that continues throughout this floor.
Unusually, the entrance hall leads directly into the master
bedroom, a gorgeously glittering boudoir of a room, which
Kim refers to as ‘my own mini-Versailles’. Imagine if Marie
Antoinette and cartoonist Charles Addams, creator of
The Addams Family, joined forces as interior designers...
The Denmans’ interior style is cinematic, Gothic and
palatial, all at the same time, with the surreal atmosphere
of Jean Cocteau’s 1946 film, La Belle et la Bête.
It’s difficult to know what to look at first when you
enter the ‘apartment’, which boasts a bedroom, sitting
room and an ensuite bathroom. It’s literally dripping
with delicious decorative and desirable objets,

from a variety of eras and sources that aren’t at all
true to the Gothic Revival style – but they work.
Take the French bed, acquired from La Maison in
Islington. Fit for royalty, Kim has dressed it with a faux
fur throw that she made, topped with a sumptuous blush
pink 1930s satin quilt from Eras of Style in Bexhill,
another of their haunts for vintage and antique finds.
Curly sheepskin cushions from TK Maxx, add texture and
cosiness to the overall feeling of luxury – and decadence.
A fringed pelmet above the bed has been pimped with
tassels and feathers, adding a theatrical flourish: very much
Kim’s signature. She has also attached mini antler plaques
to the bedhead, along with some chubby gilded cherubs.
Part of the original clock tower, the boudoir has a
beautiful sitting area, with huge arched windows that
overlook the garden and park. A generously proportioned
decorative French sofa from Fortress, has been re-covered
in leopard print fabric – the perfect place for perching, to
admire the view, both interior and exterior. At either side
of the sofa are two brass lamps from a Venetian gondola.
The seating area is flanked by two colossal plaster
caryatids found in a vintage shop in The Lanes, Brighton.
Other delights include a marble and metal table from a
vintage shop in LA, a pair of pale blue and gold upholstered
18th century French dining chairs and a bedside chest of
drawers from the French Depot in St Leonards, a mecca
for reclaimed French furniture and architectural salvage.
But the real knockout has to be a pair of crystal chandeliers,
which wouldn’t look out of place in any palazzo – probably
because they really do have a royal history. ‘These
chandeliers belonged to the Romanovs,’ reveals Paul. ‘The
Russian royal family. They were exported to England from
Russia when the remaining Romanovs were exiled. They
were still in their packing crates when we found them.’
From the boudoir, we move into the bathroom. Steeped
in luxury, it incorporates bookshelves laden with Kim’s
fine art and fashion book collection, decorative French
ceramics and heaps of faux flowers. A chandelier hangs over
the freestanding claw foot bath that has been installed in
front of a cast-iron fireplace with a tiled hearth, all of

A wall-mounted vintage wooden cupboard is the perfect
place to showcase Kim’s collection of fragrance bottles,
vintage fabric trimmings, treasures and collectibles from
her global travels and work as a fashion designer.
Adjacent to the master bedroom, a cosy sitting room that
feels more like a snug, is home to a luxurious chocolatecoloured
velvet chesterfield from La Marette Brocante in
Kings Road, St Leonards (a second-hand shop mecca),
bedecked with velvet cushions from TK Maxx.
Opposite, a high-backed leather chesterfield creates an
intimate seating area where Kim and Paul can kick-back
and relax. A glass-topped coffee table brought back from
Goddess, Kim’s LA boutique, plays host to a pair of ceramic
swans, along with sparkly crystal and brass candelabra, while
a grand-scale gilded chandelier brings a touch of theatre
to the room. The impressive fireplace is another recent
addition, along with the Pugin-inspired patterned wallpaper.
On the next floor, accessed by a spiral staircase, there is a
spacious drawing room, large enough to accommodate three
sofas, two upholstered in gilt and deep purple patterned
fabric, and a carved gilt settee in plush plum velvet. This is a
statement room, not for the decoratively faint-hearted or

those with a penchant for minimalism. Like the rest of the
house it’s uncompromising in every way. Paul upholstered
the patterned sofas, complete with tassels and fringes. ‘We
don’t do understated, we do stately,’ he says, with a smile.
Patterned wallpaper from Shand Kydd continues the
rich, dare I say it, Vatican style, that the couple have
created. Religious statues sit alongside scene-stealing
gilt candlesticks and a supersized coffee table – brought
back from LA – injecting a little Hollywood glamour
to the ecclesiastical backdrop. The icing on the cake?
Vermilion and gilt patterned curtains with swags, tails
and drapes, designed by Paul and made by a local curtain
maker, complete with ruched Schiaparelli pink blinds, a
vibrant backdrop to a Madonna crowned with stars.
‘Some of our inspiration comes from houses like
Chatsworth which I visited as a child with my parents,’ says
Paul. ‘And of course every Hammer Horror film ever made.’
The lower ground floor flows into the garden, with a tiled
entrance porch, part of the original clock tower, flooded with
natural light. The porch is home to a glass-topped metalwork
table and lamp made from a 1920s candlestick, both bought
in LA and likely to have come from a Hollywood film set.
The elegant dining room, papered in gilt-patterned
wallpaper and lit up by another supersized chandelier, is one
of the grandest and most enviable rooms. A sprawling 1920s
oak dining table (purchased at an auction) dominates, teamed
with 18th century Renaissance revival carved and upholstered
chairs found in an antique shop in Hastings Old Town.
Crystal candelabra lamps and a bust of Bacchus
add a theatrical flourish to the table setting.

An 1850s carved French dresser serves as a drinks’
cabinet, displaying the couple’s unusual collection
of Transylvanian wines (yes, seriously) sourced from
Vernacular, a Romanian vintners in St Leonards.
On the walls, Edwardian mounted deer trophies are
a contrast to the glittering gilt mirrors and sparkling
chandeliers and candelabra. Faded velvet armchairs,
complete with footstools, sit on either side of the stone
fireplace, perfect for some après-dinner lounging – or

a decorative feature – thanks to the addition of faux flowers
and vines – but is also a practical storage solution for pots and
pans. Velvet-covered bar stools are the perfect perches when
Kim and Paul fancy a casual round-the-island lunch or supper.

a place where he can play bass without disturbing the
tranquil ambience of the rest of the house. Paul covered
the walls with black and red vintage fabric from Wayward
in St Leonards – with the help of a staple gun.
An intricately carved bed and wardrobe attributed to
Pugin give the room a gentlemanly air, a direct contrast
with football posters and punk memorabilia that Paul
has collected over the years – and his collection of
Gothic dolls’ heads by local artist, Tom Barnett.
As if the interior isn’t magical enough, The Clock
House is surrounded by a beautiful garden with rambling
pathways, a mini-waterfall and ornamental pond -
and religious statues set into sandstone grottoes.
‘It’s incredibly tranquil here,’ says Kim. ‘And like
the house, it has an otherworldly quality that I haven’t
found anywhere else.’ After 21 years, it’s clear that
her love for this extraordinary house hasn’t faded.

It seems appropriate to be having the facial made famous
by the Duchess of Sussex, in Sussex – and indeed, The
Old Rectory in Hastings Old Town is the only place outside
London where you can have this amazing treatment.
Charlotte Connoley was trained in the technique by the
Duchess’s personal facialist, Nichola Joss, who calls it ‘the
Inner Facial’ - because for a crucial part of it, the therapist
massages your facial muscles from inside your mouth. Surgical
gloves on, open wide, in they go.
As that might hint, this is not one of those beauty
treatments where you lie down and zone out in a bliss of
relaxation. Not just the rubbing on and rubbing off of creams
(although various lovely Decleor oils and unguents do feature)
this is a serious facial workout. Boot camp for cheeks.
So while the beautifully decorated pale grey treatment room
(The Old Rectory is exquisite throughout) would be very
conducive to drifting off, I was wide awake and chatting for
the whole thing, possibly gabbling nervously at times when
things got particularly brisk, but mainly because Charlotte
is so lovely and so interesting to talk to. As well as being a
walking billboard for her own method.
She massages her own face every night and her skin
really does glow, while her cheeks have that peachy
plumpaliciousness we all craved after seeing Meghan Markle
(as she still was for a few more minutes) walk up the aisle of
St George’s Chapel on that special day last May.
The secret of the Sculpted Facial – and where said sculpting
happens - is a firm (at times, very firm) facial massage, which
promotes deep detoxification through lymphatic drainage
and stimulates blood flow, triggering production of collagen –
that girl’s-best-friend protein fibre which gives skin structure,
strength and elasticity.
Just as with a shoulder rub, this facial massage smooths
and stretches the muscles which keep our faces in place and
in which, Charlotte explained, working on the very tight area
around my left jaw where I had (medical) surgery twenty-five
years ago, we hold so much tension.
By the end my face certainly knew something new and
interesting had happened to it. It felt the way my body does
after a great yoga class – pushed and tested, but happier for it.
I rushed to the mirror the moment Charlotte left the room
and was really quite amazed by the perky face looking back
at me. My cheeks looked at least a centimetre higher on my
chops, my jaw line firmer. Noticeably tingling and rather
bright pink too - evidence of that increased blood flow.
The benefits have continued to develop post-treatment. Ten
days later, my skin is fresher looking than it’s been for years
and I swear the cheek and jaw lift are still visible. Even my
family – the most unforgiving critics – agree.
Charlotte’s regular clients go every four weeks, brides
once a week for six weeks up to the wedding. I’ve
already made my next appointment.

At the start of the session, my therapist Rebekah carefully
talks me through my skin regime, my lifestyle and how
the treatment will work. I admit to a rather haphazard beauty
routine involving wet wipes for makeup removal and to
spending a lot of time outside in the garden.
We decide that the areas of focus for the treatment
should be eyes, cheeks and upper chest, and an additional
complimentary hand and arm massage.
Champneys use Elemis products and Rebekah is specifically
using a selection from their Pro-Collagen range. These
contain special anti-ageing ingredients and marine oils to
hydrate and nourish the skin. The small amounts of pressure
that Rebekah applies to my skin are to stimulate the cells
and capillaries, help them get rid of toxins and take up skinplumping
water.
As Rebekah cleanses, exfoliates and applies a treatment,
I am free to drift into a zone all of my own. The room
lights are suitably dim, the decor pleasantly neutral and the
soothing sound of ocean waves (awash with marine oils, let’s
hope) accompany the pan-pipes. Drifting off, I am pleased to
report, is apparently a vital part of the therapy and will bring
me matching inner radiance.
Afterwards, feeling a little sleepy, my warmly tingling
(rather red) face and I are encouraged to sit in a relaxation
area and come gently back to reality. Rebekah gives me a
prescription and some skincare recommendations (no more
wet wipes, drink more water). I am also handed a useful little
brochure from Elemis, which explains their range and the
action I need to take to prevent the season’s weather, stress
and late nights showing up in my skin.
It has been a calming, nourishing and satisfying experience
and my skin is definitely feeling fresher and softer now. This
was a great facial and I would recommend it.

Beloved of Kate Moss and Mariah Carey, Aveda’s
plant-based treatments are fabulously famous, so I
was really looking forward to my visit to The Rye Retreat
to experience the signature Tulasara facial first hand.
First delight was to find a car park so close, you just
nip over the road and voila, you’re bang outside the
stylish hair salon and spa. Downstairs to the spa, and it
feels like you’ve entered an exotic Arabian parlour, lots of
rich red textiles, twinkly brass lamps and rattan couches
overlooking a cute little paved garden.
I was then asked to fill in Aveda’s Elemental Nature
Dosha Questionnaire. Nine questions about physical
things like hair, skin and digestion and emotional issues
like moods, sleep and mental activity. Rebecca, my
therapist was then able to design a customised treatment
using the best combination of products, aromas and
techniques to “move my skin towards balance and reveal
its natural beauty”. Good luck.
We then moved to the treatment room where, even
before I’d got on to the couch, I was given a wonderfully
soothing foot wash, perfect for getting in the mood.
From the deft application of the first cleanser it
was clear I was in good hands. What followed was a
combination of masks, massages and peels and as an
added bonus, I’d been asked at the start of the session
whether I’d like a foot or hand massage as an inclusive
part of the treatment. Having opted for the feet this
tipped me over from zoned out bliss into near oblivion.
Getting up and dressed at the end was hard.
But all good things must come to an end, so I did
manage to gather thoughts and belongings and make
it back to the lounge area where there was chilled water
and fragrant lemon sorbet awaiting. And Rebecca with
some great recommendations.
Having purchased the beautifying oil – brilliant for
use on hair, skin, nails or the bath I left feeling utterly
indulged and decidedly glowing. I shall certainly be back.

I was diagnosed with Breast Cancer in 2015. After
several surgeries, mastectomy and chemo, I am

styles to choose from. And it was from that moment,
that I decided, to do something about it.
So here I am, my website has just launched and I
am excited for the year ahead! About the Girl has

2) Post surgery beachwear. I am the only retailer
that has permission from Seafolly to alter their
bikinis and to sew pockets into them to fi t a
prosthetic breast. I am therefore in the unique
position of bringing their most amazing range of
post surgery swimwear to these ladies.
3) Post surgery lingerie. I want to provide
underwear, that my old knicker drawer would be
proud of! And so again i have searched the market
to put together a range of underwear that will make
post surgery ladies feel like a woman again, while
working with their prosthesis.

“Playing golf was no fun with agonising
sciatica… but I’m finally pain-free after
IDD Therapy”
After his IDD Therapy
programme, Bill is enjoying
golf with his friends again...
three times a week!
Keen golfer Bill Langan struggled with
back pain and sciatica for six years, all
the while refusing to give up his beloved
sport. But eventually the pain and
immobility began to affect his enjoyment
of the game and he worried that soon he
may not be able to play at all.
Bill explains: “My back pain and sciatica
developed over a period of six months back
in 2012. It started with some niggles in my
back, but after a few weeks I was waking up
in the night in agony with shooting pains
in my leg.”
Over the next few months Bill’s pain
worsened and the episodes became more
frequent. “I’ve always been a keen golfer
and as time went on, I began to feel worse
every time I ventured out for a game. The
mornings were the toughest; I could hardly
move when I woke up and I needed to take
painkillers regularly to manage the pain.”
After expressing concerns to his GP, Bill
was given an MRI scan which showed a
bulging disc in his lower back which was
compressing his sciatic nerve.
“I was half expecting my GP to suggest
surgery but instead I was told there was
nothing they could do for me. I felt deflated
and I didn’t really know what to do next.”
Bill struggled on until early last year when
he saw a local magazine article featuring
IDD Therapy, a targeted disc treatment for
persistent back pain, neck pain and sciatica.

The world of skincare moves on apace. Almost
every day news of an innovative ‘wonder
molecule’, or a jaw-firming gadget, or a weirdly
shaped sheet mask lands in my Beauty Bible
(beautybible.com – my beauty website) inbox.
Some of these rainbows are definitely worth chasing,
but I generally wait till the frenzy’s subsided a bit before
embracing a new ‘miracle peptide’ or face-vibrating gizmo.
The innovations detailed here, as far as this beauty editor is
concerned, will survive the test of time – rather than falling
from skincare fashion faster than you can say ‘ra-ra skirt’.
Vitamin C
Topical vitamin C is a weapon we all need in our skin arsenal:
it’s anti-inflammatory and can help to guard against several
different kinds of radiation (including UV), as well as the
ageing free-radical damage caused by pollution and blue light.
(Who knew that our computers were actually ageing us?) It
can also help to tackle the challenge of uneven pigmentation.
Vitamin C is actually very tricky to formulate in a
way that remains effective (it’s a fragile molecule) and

I’m incredibly impressed by a new gadget that enables you
to do ‘at-home cryotherapy’ treatments. 001 Eyecicles have
scooped a Beauty Bible Award in the past: two water-filled
globes that you keep in the fridge and use to massage away
under-eye puffiness. (Pretty darned miraculous they are, too.)
Now 001 have launched the CRYOpress beauty

improve blood circulation, tightens skin and helps
drain lymph. Just brilliant before a night out.
Facial massage brushes
I’m all for massaging the face. It’s incredibly effective for
brightening the complexion, banishing puffiness, generally
putting back a glow when you feel you’re looking (as
Charlie Brown might say) ‘bleeeaurgh’. You can use your
fingers, but sonic massage devices are even more effective.
The FOREO LUNA brushes were originally designed to
be used as part of your cleansing routine – and there’s no
doubt they work brilliantly with pretty much any cleanser
– but for me, it’s the vibrating action that’s so impressive
at restoring glow. The minis start at £85, but I like the
bigger ones, which are priced £129, if budget allows.
Retinoids
Retinol is an alternative name for vitamin A. Originally
designed to target acne, dermatologists rapidly realised that
retinoids were extremely effective at fighting signs of ageing.
They work by promoting rapid skin cell turnover,
revealing new skin beneath – a kind of invisible exfoliation

thin the skin in this way means it’s more vulnerable to sun
damage, so you’ll need to layer an SPF over the top.
Results from over-the-counter retinols – retinyl palmitate,
retinyl acetate and retinyl linoleate – may take some months
to show benefits. And just on a personal note, I’ve never
got on with them as they make my skin red and sore.

category but are actually an introduction via Korea.
Are they different to night creams? Well, what these
creams/masks also offer is a jolt of specifically facewaking

What I would say about sleeping masks is, if you have

completely kind to skin, ideal even for sensitive types.
Hyaluronic is very, very different to those acids like
glycolic and lactic acid and does not peel or irritate
skin in any way. I love, love, love, love, love it.

I always hope I’ll manage to persuade oily-skinned
women to use oils – I’m still hoping, but they would
do well to start here, because marula oil is actually good
for blemishes and scarring (as well as stretch marks).
Personally, I really like this oil for ‘locking in’ moisture,
applying a couple of drops or so over night cream (in
particular). It leaves it silky, but traps the dewiness
inside, too. Also good for smoothing through hair – add
just a drop or two to the palms, then rub these and
your fingers together and skim through hair, for instant
‘texture’ but also gleam and nourishment. (And no,
it won’t leave your hair looking greasy. Promise.)

We encourage people to join a group and can recommend those
in our local area. The benefits of motivation, fun, sociability and
safety are all-important. But equally, running for some is about
taking time out from the ‘everyday’ and we understand the health
benefits of getting out the door and being ‘at one’.
As Running Hub in Southborough approaches its tenth year,
owner Allan Cheek reflects on the running scene in Kent and
Sussex.
We’ve seen incredible growth in newcomers. New groups are
forming all over to encourage and assist individuals to take their
first steps. The NHS ‘Couch to 5K’ course has been adopted by
hundreds. The fabulous success of the free ParkRun is spreading
across the region with approximately 50 locations in Kent/Sussex/
Surrey alone, each attracting an average of 200 participants of all
ages and abilities.
Running Hub is small but very well stocked with most of what is
needed and we’ll do our best to source that specialist
product. Open from 10.00-5.30 weekdays and 9.00-5.00
Saturdays our convenient main A26 location between Tunbridge
Wells and Tonbridge is enhanced by the big public car park
opposite in Yew Tree Road, currently free for 2 hours with a ticket.
At Running Hub most of our customers these days come by
recommendation, which is very reassuring that we are doing the
right things. We ask for some background information; we look at
feet (in all their amazing variety); we watch people run; we assess
their needs and match them from our wide choice of models.
It helps us enormously if customers bring their current running
shoes which can offer telltale signs of individual wear. In the
majority of cases our runners leave the Hub in a bigger size,
sometimes two sizes than they expected. Too small shoes can
lead to big problems.

What does it mean to embrace the passage of time
– gently, holistically and positively? asks Eminé Rushton
Ageing – as natural as breathing. So, why do we strive
so very hard to stymie the passage of time? The
Western take on ageing is rooted in fear. We worry
that we’ll become less attractive, less relevant, less important.
A multi-billion pound industry feeds on this deeply ingrained
societal insecurity – promising ever-more innovative (and
sometimes ludicrous) ways to stop the clock.
73-year-old Helen Mirren put it brilliantly when she said,
“You only have two options in life: die young, or get old.
There is nothing else.” It would seem that Mirren’s candour
and common sense are steadily catching on.
“Traditional ways of marketing – specifically around age,
gender and ethnicity – are becoming less relevant,” says Alexia
Inge, co-founder of online beauty giant, Cult Beauty.
“There has been a slow move in focus away
from eternal, youthful perfection to a spirit of
positivity, confidence and psychological and
emotional health.” Whereas the impossibly
ironed-out face of a 50-something starlet might
once have propelled those anti-ageing product
sales, now we are savvier and increasingly cynical
and, crucially, fewer and fewer of us want to
look artificially ‘anti-aged’ in the first place.
As Inge explains, the beauty we most aspire to comes from
within – a glow of good health and happiness; a twinkle
in the eye. There is also a societal sea change happening
all around us too. After generations of insecurity-preying
advertising, women have savvied up and are ever more
vociferously rejecting archaic, limiting and perfectionpeddling
beauty ideals.
Big brands themselves are now embracing the pro-ageing
movement and across social media and glossy magazine
covers, the woman of the moment is increasingly real, wise,
strong and inspiring. So, if you’re feeling ready to embrace

kind ways to boost your inner and outer glow, and embrace
the skin that you are in.
Feed skin from within
We have all heard it before, but one of the biggest impacters
on our outward appearance and the vitality of our skin, is
nutrition. From getting a diet rich in essential fatty acids
(lovely, skin-restoring good fats, found readily in oily fish,
chia seeds, egg yolks, avocado and flaxseed oil), to those
naturally anti-ageing brightly coloured vegetables, red wine,
darkest chocolate and good olive oil (rich in antioxidant
polyphenols and phytonutrients, which, handily, help our
body mop up those prematurely ageing free radicals from UV
light, pollution and infrared-emitting devices),
it makes good skin sense to eat a varied,
delicious, natural diet.
Happy days for skin
I love Roald Dahl’s quote: “If you have good
thoughts they will shine out of your face like
sunbeams and you will always look lovely”
– because it’s true. Happiness is beautiful, and
there is a scientific reason for this, too.
When we are happy, when we smile, when we laugh, we
produce more serotonin. This happy hormone significantly
reduces our cortisol levels.

love is naturally good for your skin.
Glow and go gently
When we run (particularly on hard surfaces) it is not
only our joints that feel the impact – our faces, too,
experience a lot of impact-induced movement, with
the skin around our cheeks and jawline in particular,
being subjected to significant ‘bounce’ (much like our
breasts without a good sports bra), which, over time,
can cause the elastin in the lower face to weaken.
If you love nothing more than to run, by all means do, of
course, but if you’re keen to move in a more holistic way, you
may want to choose a low intensity activity instead. Yoga,
pilates and swimming are wonderful suppleness-supporting
choices, with yoga also having been studied with regards
skin health: specifically inversions (such as shoulder or head
stands) being shown to boost circulation and promote more
youthful, supple and radiant skin in the process.
Look to the East
In both Traditional Chinese Medicine (TCM) and Ayurveda
age is viewed rather differently. In Ayurveda one is said to be
in the prime of life until around 70 and in TCM, a woman’s
golden age is during menopause – when she comes into the
wholeness of her self and can embrace life to the absolute full
because she is no longer defined by her reproductive system
(from menstruation and pregnancy, through to child-bearing
and breastfeeding). Likewise, in the East, beauty is celebrated
all the more as you age; the wisdom behind the eyes, the
laughter lines of a life heartily enjoyed.
Beauty rituals, too, are more focused on relaxation and
enjoyment (a quick swipe over the face with a value cleansing
wipe won’t cut it). Taking the time to care for ourselves is
important. From salubrious baths with nourishing oils to
massage treatments and holistic facials, self-care rituals such as
these feed up the soul, and enhance our inner/outer glow, too.
Less is more beautiful

There’s plastic surgery – the scary kind with general anaesthetics and scalpels – and then
there is a whole other area of new developments in aesthetic therapies, strictly no stitches.
We asked two experts to tell us more about their most popular treatments
Dr Christine Medical Aesthetics
The 8 Point Lift
The 8 Point Lift is a ‘non-surgical facelift’ using the most
advanced hyaluronic acid dermal-filler injection techniques
to lift and rejuvenate the face, creating a more youthful
appearance. Hyaluronic acid is a natural sugar molecule that
attracts water to plump up the skin, so it’s great for restoring
volume to the face.
The typical users are women and men in their forties and
up. The treatment usually takes around 45 minutes. Results
can be seen immediately after treatment and will continue to
improve over the next few weeks. The results will last up to
18 months, but it is usually advisable to attend for smaller
top-up treatments every year or so to maintain the effects.
The dermal filler is mixed with local anaesthetic to make
the procedure comfortable. After the treatment you will have
some pinpoint marks on the skin and may develop some
small bruises over the next week or so. You should avoid
aspirin, alcohol and exercise for the next few days. Keep the
face clean and avoid touching the skin. You can apply makeup
the day after your treatment.

The cost of the 8 Point Lift will depend on how much
dermal filler is required to achieve the desired effects.
Typically it starts from around £650 up to £2000.
Our clients have come back to us and said they look like
they did five years ago, much less tired and saggy, much
fresher and more confident.
Skin boosters
Skin boosters such as Profhilo can be used to treat fine lines
and crêpey skin to improve skin quality. Profhilo contains a
unique hyaluronic acid that flows under the skin attracting
water to moisturize and plump up the top layers of the
skin and also stimulating collagen production in the skin to
revitalise it.
Typical clients are women and men in their forties and
up who have noticed fine lines around the eyes, cheeks and
around the mouth. Skin boosters can also be used to treat
crêpey skin on the neck, decolletage and backs of the hands.
Treatment with Profhilo takes around 15 minutes and
consists of only five injections on each side of the face. You
will feel a couple of small scratches, but the Profhilo is mixed
with local anaesthetic for comfort.
After treatment with Profhilo you will have a few raised
lumps at the injection sites which will take around 24hours
to disappear as the hyaluronic acid flows under the skin. We
advise our clients not to rub the face, to keep the skin clean
and to avoid alcohol, aspirin and exercise for a few days.
Two treatments are needed spaced four weeks apart.
Improvement can be seen within a few days with best results
achieved a month after the second treatment.
The results last up to six months, after which repeat
treatments will be required to maintain the benefits. The cost
is £300 per treatment.
Clients have said that their skin feels plumper and is
glowing, fine lines have softened and they have received many
compliments about their skin.

Anti-Wrinkle
Injections (Botulinum Toxin)
Anti-wrinkle injections reduce wrinkles and lines in the face
and neck by blocking the chemical mechanism between
a muscle and the nerve which it controls for three to four
months. The treatment reduces the appearance of wrinkles
around the eyes, lips and face in just a few days.
If you feel your brow is always furrowed or you are
concerned with ‘crow’s feet’ lines around your eyes you may
find that your appearance can be freshened with this simple,
convenient treatment.
Your face will be assessed to see which facial muscles cause
your wrinkles to show. Your specialist will then be able to
discuss and plan with you which muscles will be targeted.
The anti-wrinkle solution is then selectively and carefully
injected to the small muscles in the face which cause wrinkles.
This is done with a series of injections (typically 5-10), each
with a tiny quantity of the botulinum toxin solution.
The solution will start to take effect within five days and
wears off after approximately four months. It is helpful to
remember that anti-wrinkle injections do not provide a
permanent effect, but it allows ongoing treatment, which can
be tailored or discontinued as your face naturally ages.
It is a very popular treatment with minimal side effects
and causes no permanent changes. Once administered, the
treatment wears off after a few months; most people are pleased
with the results and choose to have repeat treatments.
You will feel a slight discomfort - something like when you
get a vaccination injection, but it’s over with way quicker. After
treatments we provide soothing ice packs to help minimise
the feel of the injections. You can immediately return to your
normal daily routine, although strenuous activity and alcohol
consumption should be avoided for 24 hours. Prices start from
£200 for one area.

Bioidentical Hormone

Wine+
These beautiful rich flavours
remind us of Alpine mountain food.
Gruyère is of course from Switzerland,
so we’ve headed to Savoie, in the French
foothills of the Alps, for a white wine to
match the wonderful weighty flavours
of Gruyère and Parma ham but have
enough acidity to cut through the fat
of the dish. The Wine Society do a
wonderful Savoie-Chignin 2017
for £10.95.
Food
Parma ham and
Gruyère gougères
Baked Camembert with
cobnuts and honey
Makes 20 canapés Prep time: 90 minutes.
Serves 6-8 Prep time: 5 minutes. Cooking time: 35 minutes.
Choux pastry
• 200ml/7fl oz cold water
• 85g/3oz unsalted butter,
plus extra for greasing
• 115g/4oz plain flour
• pinch salt
• 3 medium eggs, beaten
Cheese sauce
• 150ml whole milk
• 250ml double cream
• 50ml white wine
• 50ml hot vegetable stock
• 1 bay leaf
• 4 tbsp plain flour
• 50g salted butter
• 150g grated Gruyère
• 5 pieces of Parma ham
Preheat the oven to
1200C/400F/Gas 6. Place
the water and butter into a
large saucepan and heat gently
until the butter has melted.
Turn up the heat, then pour in
the flour and salt all in one go.
Remove from the heat and
2 beat the mixture vigorously
until a smooth paste is formed.
3Once the mixture comes
away from the side of the
pan, transfer to a large bowl.
Beat in the eggs, a little at a
time, until the mixture has a
soft dropping consistency.
Grease a large baking sheet.
4Using a piping bag and
plain 1cm/½in nozzle, pipe
the mixture into small balls
across the baking sheet.
To make a crispier top, gently
rub the top of each ball with a
wet finger.
5Bake for 12–15 minutes
until risen and golden.
Remove, cool and hollow out.
6Pour cream, stock, milk,
bay leaf, wine and grain
mustard into a large saucepan
and bring to the boil.
In a separate pan melt butter
over a medium heat then
add flour and cook until the
mixture has a sandy texture.
7Slowly pour the warm
cream and milk mix into
the flour mixture and whisk
until smooth. Remove from
heat, take out bay leaf and add
cheese. Leave to cool.
8Take 5 pieces of thinly
sliced Parma ham and grill
until crispy, then leave to cool.
9Fill the choux buns with
the cheese sauce, warm and
poke in the crispy Parma ham
to serve.
• 150g to 200g round
Camembert (we like the
local Chaucers Kentish
Camembert)
• 50g roughly chopped
Kentish cobnuts or
hazelnuts
• 2 tbsp (30ml) local honey
• 1 baguette or epi
Preheat oven to 180C. Take
1 the scored cheese out of
the wooden box. Score the top
of cheese crossways to make
an ‘X’ pattern. This helps
the heat penetrate to the
middle.
Wrap it in parchment

paper and place onto
a baking tray. Cook in
the pre-heated oven for 25
minutes until runny inside.
3Place the warm cheese
onto a wooden board
with either some sliced warm
baguette, or pain d’epi.
Drizzle the cheese with
4 the honey, scatter on the
cobnuts and serve while still
warm.
Wine+
The Camembert in this recipe, calls
for a lightly oaked white from
Burgundy. We really like Saint-Véran
2014 Les Vignerons des Grandes
Vignes from Majestic (£10.99) which is
wonderfully fragrant with great acidity
to cut through the fat of the cheese. It’s
a 2014 vintage so has developed slightly
nutty, honeyed notes on the nose.
A great example of well-made,
delicious Chardonnay.

with beetroot
Celeriac remoulade
on a new potato base
Makes 20 Prep time: 40 minutes - with some preparation the
day before.
• 200g fresh salmon
• 5g rock salt
• 35ml vodka
• 10g dill
• 50g cooked beetroot
For the oatcakes
• 225g oats
• 60g plain flour
• ½ tsp bicarbonate of soda
• 60g salted butter
• 1 tsp salt
• ½ tsp sugar
• 60-80ml hot water
Salmon preparation
1Finely chop the raw
salmon, put in a bowl, add
half of the chopped dill, the
vodka and the salt, cover and
leave in the fridge overnight.
Wine+
Salmon usually calls for a glass of
bubbles for the refreshing acidity. But
the beetroot gives this dish added
character so we’ve gone for a rosé fizz
from the Loire Valley in France. Made
from Pinot Noir, Langlois Crémant de
Loire from the Secret Cellar (£18.00),
is packed with berry and light spice
notes which gives it enough power
to match the beetroot
perfectly.
Method for oatcakes (or buy a
packet of mini oatcakes)
1Place the oats, flour,
bicarbonate of soda, butter
and sugar in a blender until
you have fine crumbs (you can
blend by hand if you prefer a
coarser mix).
Add the warm water slowly
until a dough-like consistency
is formed.
Sprinkle flour on a work
surface, then roll the dough to
about a £1-coin thickness and
cut out 1-inch circles (a shot
glass is good for this if you
don’t have a cutter).
2Bake at 180C for 10-15
minutes until cooked all
the way through. Allow to cool
before serving.

1Take the salmon mix out
of the fridge, add the finely
chopped beetroot and place
back in the fridge.
2Place a blob of crème
fraiche on each cooled
oatcake, then about ¾ of a
teaspoon of the salmon mix,
garnish with the remaining dill.

• 1 lemon juiced and zested
• 1 tsp grain mustard
• 2 tbsp good quality
mayonnaise
• 10 small new potatoes
• 50ml olive oil
• 200g Bramley apples
(approx. 1)
• ¼ tsp cinnamon
• ¼ tsp mixed spice
• 20g butter
1In a bowl grate the celeriac
and immediately add the
zest and juice of the lemon
to reduce the celeriac going
brown.
2Add the mayonnaise and
whole grain mustard and
mix. Cover and rest in the
fridge (this mix can be made in
advance).
Method (potato base)
1Preheat oven to 180C.
Slice the potatoes around
the equator so you get about
20 nice even rings, these will
be your bases for the canapés.
Brush the potato rings
in olive oil and roast for

sweet apple and a hint of warm heat
from the mustard – lots of flavours
to match wine with. We went for a
Riesling from Majestic Clos St-Jacques
Riesling (£11.99). It’s an off-dry wine
with gorgeous notes of ripe apple
and hints of honey.
10 – 15 minutes at 180C until
cooked then set to one side to
cool.
Method apples
1Peel and core the apple and
dice. Add the spices and
butter to the apple.
Cook until tender (it should
have an apple sauce consistency).
To serve
1When ready to serve, place
about 1 tsp of the apple mix
on top of the potato, and the
celeriac mix on top of the apple.
Finish with a grating of nutmeg,
or a sprig of parsley to garnish.

match. The Wine Society do a lovely

of summer, but the colour of this

• 1 garlic clove, crushed

• squeeze of lemon

Keeping it real
Ditch the plastic says Jo Arnell and decorate your home with boughs
of real holly (and other lovely things)
Our Christmas decoration box is full, we’re
wading through clutter and I really do want
to cut back on plastic and un-recyclable
trimmings. It will take nerves of steel, though, as the
shops are packed with gorgeousness, but there are some
surprisingly useful and beautiful things for decorating in
the garden too. And they come with added benefits.
Organic decorations won’t clog up your life or your
loft - they’ll just fade naturally and sweetly away after
Christmas. Making naturally festive decorations will
satisfy that creative urge (even if it is buried as deeply as
last year’s fairy lights). When it’s all over they’ll leave no
trace, no footprint, except perhaps a momentary one in
the snow as we trudge down to the compost heap.
Festive Foraging
Serotonin levels drop as the amount of daylight decreases.
We produce far less of this mood-enhancing chemical in the
low winter light. Seasonal Affective Disorder is a real thing
and can make us sluggish and out of sorts - even causing
severe depression. Outdoor exercise at this time of the year
will help to keep serotonin levels up. Added to this is the
dopamine effect of picking and gathering. Dopamine is
the ‘reward’ chemical released in the brain’s reward centre
(also triggered by gaming and shopping, but originally
meant for hunter-gathering). A winter walk, especially one
with a purpose, will definitely help to lift the mood.
The tree
Whether it’s a traditional Norway spruce, non-drop
Nordman or fancy blue job, nothing beats a real tree.
Admittedly they do need a bit of maintenance to stay
at their fulsome, fragrant best through the festivities
and even the non-drop varieties shed a bit, but they are
more environmentally friendly than fake versions.
No matter how many years an artificial tree is kept, it
will probably end up as more plastic in landfill, it was made
using the earth’s resources and quite possibly it had to
travel many miles across an ocean to reach your hearth.
Making your tree last
Keep it outside for as long as you can before
bringing into the dry indoor heat.
Chop a little off the bottom to freshen up the stump
and put it in water straightaway (many Christmas
tree stands have a built-in water reservoir).
Position it away from radiators and open fires.
Water every day. Like a cut flower it will carry on
taking water up through the trunk for a good while.
An alternative to a whole evergreen tree is to use an
artistically shaped branch, or bunch of twigs cut from
a tree or shrub with attractive stems, like Silver Birch,
Cornus (Dogwood), or Willow (as seen in our Christmas
house in this issue). These look best treated simply and
hung with just a few berries, baubles or fairy lights.
Berry and Bright
Use real berries and fruits to decorate both the tree and the
house, they will last a long time - admittedly not as long as
their plastic equivalents, but that is only to be celebrated.
Berries might traditionally come in red, but there are
many other colours to mix into your festive scheme.

Fresh Foliage and long-lasting leaves
Once you start looking in the garden it’s amazing to
discover how many ordinary plants, that we mostly
ignore, are naturally decorative in winter. Evergreen
leaves tend to be glossy, which also helps to stop
them losing moisture once they’re brought inside.
Some may need a splash of water, or hunk of soaking
oasis foam to keep them looking lively, but many
stay surprisingly fresh-looking all through the festive
season. Some of the best long-lasting foliage plants:
Holly - very traditional, but can be a bit
prickly and hard on the fingers - wear gloves.
Ivy - still one of the best Christmas evergreens,
with long pliable stems, attractive leaves,
flowers and fruits. The variegated forms add
a touch of white or gold for contrast.
Spotted Laurel (Aucuba japonica) - can
be used as a wreath base, or to line a plain
bowl piled with nuts or clementines).
Conifer foliage - effective as a wreath or
swag base and many varieties are scented.
Viburnum tinus - often overlooked in the garden
for much of the year: a dark green blob that blends
into the background, but it lasts very well inside and
often has the added bonus of winter flowers too.
Pittosporum - leaves on this delicate looking
evergreen last very well among cut flowers, but
go carefully as some varieties aren’t as robust
and frost-hardy as our native evergreens and
won’t appreciate a mid-winter hacking.
Herbs - are lovely fragrant additions and
the leaves of Bay and Rosemary dry well.
Other long-lasting leaves to try: Ruscus,
Osmanthus and Euonymus - these have
small leaves and are useful as fillers in table
decorations and on wreaths or swags.
Sorbus (Rowan/Moutain Ash) cultivars are available
with multi-coloured berries: Sorbus hupehensis ‘Pink
Pagoda’ (pink), ‘Joseph Rock’ - yellow and Sorbus
cashmiriana has white berries. Our native Spindle tree
(Euonymus europaeus) can be found in the hedgerows
and has bright orange berries in a pink casing, although
annoyingly, these are often over by Christmas.
The black clusters of ivy berries look great in wreaths
and swags, as do rosehips. For an unreal-looking, metallic
purple try the berries of Callicarpa bodinieri. Remember
to compensate wildlife if you take berries and fruits.
Seedheads and cones
Many dried seed pods can be made to look festive,
but you may need to think ahead with these. Skeletal
forms and the tracery of stems and umbellifers make
delicate and understated decorations. Collect them
once they’re dry, but before the weather gets to them,
as they can quickly rot away to un-festive sludge in wet
winter conditions. They can be picked weeks, if not

months in advance and stored as dried arrangements.
Mini cones of alder and beech are great for decorating
wreaths and table displays. Teasel heads can also be used
in wreaths, or as tree decorations, but they are prickly, so
handle with care. The orange seed cases of Physalis will
add drama to decorations in their complete state, but
occasionally the casing is eaten away to make a delicately
skeletal form that can look as lovely as any bauble. Allium
seed heads look like glamorous decorations whether left
in a natural state or sprayed silver for extra sparkle.
Faded flowers and bracts
Hydrangea heads dry and last well, as do the skeletal
forms of Fennel and Angelica, or hedgerow umbellifers
like wild carrot and Joe-Pye weed. The flowers of

Hark, the little angels sing
Hilary Wilce celebrates school Christmas traditions – and everything they teach our children
Christmas is coming, with all its midwinter sparkle
and cheer. It’s not unknown for parents to feel
a little frazzled right now as they contemplate
their present lists, family budget and the politics of
who will visit who on Christmas Day, but there is a
fabulous and foolproof antidote to festive overload
and that is any school’s Christmas celebration.
It doesn’t matter whether it’s a traditional nativity play,
a carol service, or a more multicultural smorgasbord. The
magic is in the sparkle in the children’s eyes, the home-made
costumes, the enthusiastic piano playing, the breathless
declamations and the hearty, if not always tuneful singing.
And while the festive season outside the school gates
seems to be increasingly about getting and spending,
most schools do a very good job of fostering a Christmas
atmosphere that celebrates the more important things of life.
Schools bring children together through songs and drama,
encourage them to think about those less fortunate than
themselves and introduce them to religious ideas that can help
them start to think about the big questions of being human.
And while ‘normal’ lessons often get hijacked, think
what those preparations are teaching pupils. Children are
learning that to decorate a classroom you have to plan
and prepare, make your decorations, and work together to
put them up – practical project management in action!
They are learning that to put on a successful Christmas
concert, everyone has to go on a journey that starts with being
introduced to an unknown piece of music, goes through all
kinds of dips and troughs when it seems as if no-one will ever
be able to master either the tune or the timing, but ends up
in a successful sing-out for an audience of family and friends.
Christmas is a perfect example of how schools are
always busy doing so much more than just teaching
maths, English and other basic subjects.
Through the annual rhythms of the school year they
help their pupils see the importance of structure and
effort. They encourage team work and partnerships
and show them how to find their place in a community
of people that is bigger and more complicated than
home - but still a safe place full of familiar adults where
mistakes can be made, successes applauded, festivals
celebrated, and where everyone gets to play a part.
Sometimes, of course, schools aren’t always such
constructive places, and as a parent you might be struggling
with a classroom situation that is making your child
unhappy. In which case, you might not be feeling much
Christmas love for your child’s school right now.
But even the difficult patches of school life can offer
important learning to children and most young people
will leave school with the kind of good memories that are
very likely to include Christmas jumper day, or singing
‘Little Donkey’ in the Christmas concert, or the picture
of Mr Edwards, the school caretaker, playing Santa with
such gusto that his ho, ho, hos blew his beard off.
So mark your diary, put your phone away, cram
your pockets with emergency tissues, and prepare
to wallow in the true joy and purity of Christmas
– as brought to you by children everywhere.

the Farm
From decorating the house to making her own
wine, Jane’s excited about Christmas
It’s coming. I’m one of those people who gets completely
over excited at the very thought of Christmas and the best
part is always the planning and preparation.
First job is to quite literally deck the house with boughs
of holly – tra la la la la, la la la la (I think you’ll find that’s
the right number). However if you’ve left the task of
collecting said holly till these December days, you’ll be sorely
disappointed because there isn’t a berry in sight.
Branches that were laden in October have now been
stripped by the thrushes, blackbirds, fieldfares and finches. So
next year be sure to cut branches early on and store them in a
shed in a bucket of water until it’s time to decorate.
At this time of year our very old and quite dark house full
of beams, nooks, and crannies comes into its own. By going
for quantity rather than quality and artfully shoving copious
amounts of greenery around the place, the effect, though I say
it myself, is rather enchanting. And not a cobweb in sight!
Then of course one’s thoughts turn to the Christmas feast
itself. Needless to say we always enjoy
a huge rib of Sussex beef with lots of
home grown veg but it’s always worth
testing people’s culinary nerve with a few
unusual extras.
The Meeches Prolific (a quince) has
been just that this year, we’ve baskets of them and, apart from
their lovely perfume, they add a certain something when
grated into the mince pie mix. They’re easy to deal with
compared with the medlar – a rock hard brown fruit that
looks like a big squashed rosehip.
I’m reliably informed they are quite a delicacy but first you
have to master the art of blatting – letting them rot gently

so they morph into a soft and fragrant pulp which you then
enjoy with cold cream. Mine however seem to wilfully bypass
that part of the process, turning instantly from bullets into a
mildewy rotten mush, so the jury is still out on the joy of a
good medlar.
Has anyone else noticed a squirrel
explosion this year? We planted a
walnut tree about twenty years ago and
in the past few years it has come into its
own producing at least 60 nuts a year,
enough to enjoy with the port and Stilton on the big day.
Problem is from September the squirrel – same one or
many, hard to tell, but only ever one – arrives every morning
and busies himself burying one or two in the lawn. It is quite
endearing but without a trip to Waitrose or adding roast
squirrel to the menu it will be yet another nut-free occasion.
And then of course there’s the alcohol. We’ll be having the
professionally made variety with our dinner, but last year I
came across an ancient Sussex recipe for birch (as in the tree)
wine and thought it sounded light and sweet and might make
a passable pudding wine, so decided to give it a try.
In March, when the sap was rising, I cut off a branch, hung
a bucket on the birch tree stump and amazingly it soon filled
with sap. I boiled it with sugar, then using a piece of toast as
the pontoon floated a lump of yeast on the top for a few days,
added some almonds and ignored it thereafter.
It says in the book it will be a pale silvery gold wine, with
little flavour but a curiously pungent aroma and passable by
Advent. I can hardly wait.
