A second big difference is that Ultherapy® is
FDA cleared and EU CE certified and has treated
over 1 million people globally, with over 4,600
systems sold worldwide. HiFu that you’ll find in
clinics here in the UK doesn’t have FDA approval.
If a product does not have FDA approval then its
potential risks outweigh the benefits of the planned
use. If it’s not an Ultherapy® machine, it may not
even be medical-grade equipment, so your safety
could be compromised. The only way to be sure
is to go to an aesthetics clinic which uses genuine
Ultherapy equipment, such as Health & Aesthetics’
Q: What enabled Ultherapy to get this FDA approval?
A: ‘A number of factors will have gone into getting
Ultherapy FDA cleared. Essentially, to get FDA
approval, the manufacturers will have had to undertake
extensive independent clinical testing, and demonstrate
that the device, when used correctly and with the right
protocols, is completely safe and delivers results.’
Ultherapy is fast becoming the talk
of the town as the non-surgical
option for a facelift. However,
lot’s of people are confused as to
the difference between HiFu and
Ultherapy, and wonder if it is the
same treatment. Here, our Medical
Director, Dr Rekha Tailor, discusses the differences,
and why she recommends Ultherapy over HiFu.
Q: Can you explain the difference in
how HiFu and Ultherapy work?
A: Firstly, there’s the science. There are two types
of ultrasound used in medicine: high-intensity
focused ultrasound (HIFU), which is used mainly for
medical applications, and micro focused ultrasound
(MFU), which uses focused energy to a specific
skin layer, allowing a well-tolerated placement
of targeted, precise and consistent treatment.
Ultherapy® uses MFU, which is sharply
focused, leaving surrounding areas unaffected.
Ultherapy® is designed to target and deliver
focused energy to a specific skin layer. One
of the biggest downsides of other HiFu
treatments is that, if they hit fat cells, they
can destroy them, leading to fat loss. This can
lead to hollow areas on the face, which
HiFu versus
ULTHERAPY
Health & Aesthetics compare HiFu
to Ultherapy as the new non - surgical
option for a facelift
actually cause more lines and wrinkles rather
than providing the desired lifting effect.
Q: Why is Ultherapy safer and
more effective than HiFu?
A: ‘Ultherapy® features DeepSEE technology – a
unique visual aid that allows the practitioner to see
the areas being treated – achieving a tailored optimal
result for the patient. This means they can reach the
relevant depths between 1.5 and 4.5mm beneath the
skin which helps stimulate new collagen and elastin,
and helps deliver ultrasound energy at specific depths
at each thermal coagulation point to stimulate natural
collagen and result in a facial lifting effect. This makes
Ultherapy® both much safer and much more effective.
HiFu, with no ultrasound screen, is a blind treatment.
So although manufacturers and clinics claim it can
target the 4.5mm depths like Ultherapy® does, this
cannot be done safely. In a blind treatment there is
no way of knowing whether the 4.5mm depth is the
tissue you want to hit, or bone, or something else.
This means you cannot safely treat as deeply and
are less likely to see the desired results. In addition,
since the results have not been tested and cleared
by the FDA, arguably, these blind HiFu treatments
cannot be proven to work at the moment, anyway.’
Q: Is Ultherapy safe?
A: Ultherapy® is the only micro-focused ultrasound
technology that has been reviewed and cleared by the
US Food and Drug Administration, (one of the world’s
most stringent regulatory bodies for healthcare). In
the European Union Ultherapy® is CE certified for
non-invasive sculpting and lifting of the dermis on the
upper and lower face, neck and décolletage (chest).
Q: I’ve heard Ultherapy can be painful. Is that true?
A: In order for Ultherapy® to work it has to heat
the deep layers of the skin. Everybody will have
different sensitivities to this heat and your aesthetic
practitioner will advise you on how best to manage
any discomfort. They may recommend, or prescribe
you, analgesics (pain killers) before your procedure.
Q: How do I know if my practitioner
is using genuine Ultherapy?
A: All practitioners who have purchased the
genuine Ultherapy® system have been provided
with a Certificate of Authenticity which they
should be able to show you in their clinic.

THE NEW COLLECTION
Editor’s
Letter
Writing the Editor’s Letter is always a fun point in the
process of putting the magazine together, because
I always wait to do it (slightly superstitiously) until
everything else is polished and ready to go.
This month, though, it’s a bit poignant because it’s the last one
I will do, as my colleague Lucy Fleming is returning from her
maternity leave ready to do the April issue.
I have absolutely loved editing the magazine and will really miss
it, but I’m not leaving the Priceless Magazines fold entirely. I will
be editing this year’s Education magazine – and I’m currently
working on a very exciting new project which will be released with
the July issue. More will be revealed nearer the time.
Meanwhile there’s lots to celebrate in this issue. Two gorgeous
and very different homes and really delicious shots from an
interiors book which has made me want to entirely re-think my
own home decor.
Our fashion supplement showcases the new utilitarian chic –
including what I think is the best shoe trend ever: sneakers for
everything. Hurrah!
Also on the practical chic theme are Anna Stanford’s dinner
ideas using pre-planned leftovers and Josephine Fairley’s brilliant
beauty ideas from the latest Beauty Bible Awards.
Enjoy your Surrey Homes!

Textile designer Molly Mahon’s woodsman’s cottage
is tucked along a wooded lane on the edge of
the Ashdown Forest. For many of us it would
be a dream to live here, but while the location is idyllic,
Molly explains, their lovely cottage was far from dreamy
when they relocated here from London eight years ago.
The first house they had found had fallen through,
so they decided to rent while they waited for
another property they loved enough to appear.
‘When we first looked at this one, we thought no,’ says
Molly. ‘There were no windows in the kitchen and the
downstairs was divided into lots of gloomy little rooms.
But time went on and we still hadn’t found anything. This
house was in such a good location and it was a project,
which was what we wanted, so we came back to it.’
The family lived in the cottage for a year to get the feel
of it, but some things they were sure of from the start: ‘We
knocked a hole in the kitchen immediately just to bring the
light in, changed the bathroom and then we did our plan.’
The main aim of which was to bring more light inside
– and also to lower the floors. Both Molly and husband
Rollo are tall and needed some headroom. The stairs were
also a problem: ‘You had to walk all the way through
the house to get to the staircase and the children hated
being upstairs as it was divided by a heavy door.’
‘We lowered and levelled the floors from the kitchen
onwards, and covered the passageway in to make the boot
room and laundry, which also houses our big fridge.’
The main part of the house is now accessed by a clever
little sliding glass door that opens directly into the

Left: Molly painted the fireplace in Bloomsbury style. The
painting on the left is by her friend Emma Black Below:
Molly and the children painted the stars on to the blue paint
on the staircase walls. The wallpaper is Molly’s Lani design
living area. ‘There was also no way out into the garden
from the kitchen, so we put in the French doors and we
painted the black beams white to bring the light in.’
It’s hard to imagine that this was once an uninviting
space. Now the whole of the downstairs feels spaciously
cosy and bright and even on the gloomy morning of our
visit, seems lit with internal sunshine, helped along by a
rich ochre cloth over the table in the middle of the room.
While the work was going on the family had to move out,
but they didn’t move far – in fact they took up residence in
their double garage, using the front half as a kitchen, the
back as storage and, because Rollo was running a camping
company, they slept in two big tents in the garden.
‘It was quite an adventure to live under canvas,’ Molly
laughs. ‘Great fun really and it meant that we were right
there during the building project, which is quite important.’
Completely remodelling your home is chaotic enough,
but as is the way with many a grand design, third child
Orlando arrived in the middle of it all – at the same
time as Molly’s business had begun to take off.
As with many successful start-ups, it had all began
51 surrey-homes.co.uk

as a hobby while they were living in London. ‘I was
always in a shop called Tobias and the Angel in Barnes
and I just loved the block printed fabrics in there.’
Although Molly wasn’t encouraged to study art at
school – ‘it wasn’t educational enough,’ she laughs –
her mother is the artist Celia Lewis so she grew up in
a creative environment, able to experiment artistically
at home. As an adult she still needed that outlet.
‘I was always trying out little workshops at various places,
but never seemed to get that satisfied feeling,’ she says. Then
Angel Hughes, who owns the Tobias and the Angel shop,
suggested that she tried fabric printing. ‘So I signed up for a
workshop and then saw that it was being held down here.’
Molly says of that first block printing workshop:
‘I thought I’d arrived in heaven. It was thrilling.’ It
turned out that she was also very good at it and she
ended up helping Angel for two years, learning about
paint, materials and the process of block printing.
‘I just never got bored of it. Lifting the block and
seeing if it was any good or not was always exciting.’
After a while Molly started to print her own designs

Above: Youngest child, Orlando’s bedroom. The wallpaper is Fern. The quilt is also by Molly Mahon
and when a friend asked her to print some wallpaper for
her shepherd’s huts, the business began to take off.
‘I couldn’t have asked for a better starting point
to turn a hobby into a business. People enjoyed
the colours and it started to sell. It got quite busy
once I could use the garage as a workroom.’
Molly remembers how once they’d moved back
into the house, they had to shift all the furniture
aside in the living room to lay out the fabric. It was
clear she needed more space and somewhere that
people could visit in order to see her work.
They had just found the ideal space in a nearby
unit when what could have been a terrible set back
arrived. Molly was diagnosed with breast cancer. It
was a very difficult time, but friends and family rallied
round and helped to keep everything running.
‘Rollo had been going up and down to London with
his business, but he put that to one side in order to
help. During the treatment and the chemo the one
saving grace to me was thinking about my business.’
Supporting Molly, Rollo started to take on a lot more.
‘He’s great at organising and he made it into a
business. He’s still here – he never went back.’
Working with their small team, the structural changes
are more or less finished in the house. The ground floor
is now all one space, but manages to retain its cottagey
feel. The ceilings are tall enough for Molly and Rollo to
be comfortable, but still low enough to keep things cosy,
light now floods in though the French windows and
Molly’s colourful designs sing out from every corner.
The kitchen has been ingeniously – and incredibly
economically – designed and built, using timber frames
as units and scaffolding planks for the worktops. ‘The
whole thing cost about £300 in the end,’ smiles Molly.
It has a rustic country look, with some shelves open to
display the contents – lovely bowls, plates and serving
55 surrey-homes.co.uk

dishes – while others are curtained off with Molly’s printed fabrics.
The lamp hanging over the kitchen table is in the ‘Pattee’
design that was inspired by fretwork and Persian gardens,
which Molly had seen at the Amber Fort in Jaipur, India, where
most of her production now takes place – although, until
recently she took most of her inspiration from Africa.
‘I did Anthropology at university and African art was always
there as an inspiration. I was writing my dissertation and
simultaneously looking at the colours and the patterns all
around me there. I hadn’t really thought about India.’
By chance Rollo’s brother James was doing horse safaris
in Jaipur and offered to do some research for her.
‘James would Facetime me from all these wonderful places,
but in the end I needed to go and explore for myself. I went
out there for a week and he was able to chaperone me.’
Molly remembers walking into one of the workshops to find a
homespun cacophony of colour that was almost overwhelming.
‘The printing, dying and sewing was all going on together in one
space and I was blown away by it. Everything seemed to be possible
over there and I came back so inspired. I must have been to India
six times since. I have amazing relationships in one specific area

Other influences spring from many sources. She
has painted the living area’s large woodsman’s fireplace
in true Bloomsbury fashion, keeping it as a feature
and making it less oppressive than the original.
‘I wanted it to be joyful, not the heavy
grey stone that it was. I don’t believe in these
rules about why you can’t do things.’
Draped over a sofa I notice a half-finished
tapestry that Molly has been working on, the
design based on one she saw at Charleston
that had been done by Vanessa Bell.
‘I was sure they didn’t use this particular shade
of pink, then was amazed to find out that she
used almost exactly the same shade,’ she says,
adding, ‘pink is my favourite colour.’

Above: Over the bed in the guest bedroom on the far left and far right are two block-printed fabric samples by Barron and Larcher,
early 20th century pioneers in fabric design who have been a big influence on Molly’s work
Most of the soft furnishings in the room have been designed
and made by Molly. The blue fabric, Luna, recently won ‘Best
Neat Print’ in the Homes & Gardens magazine fabrics awards.
She carefully closes the drawers that house a collection
of shells that belonged to Rollo’s grandmother. On a wall
in the kitchen, hangs another family collection, this one of
butterflies, gathered by Molly’s mother from the local area
and pinned in a frame for the family to use as a reference.
The cupboards at the end of the living room have been
hand decorated by Molly, each door with a different
flower. The red piano was given to them by a friend
when daughter Lani, 9, wanted to learn the piano. ‘I
wasn’t sure if we had room, but when the piano arrived
and I saw it was red I was delighted,’ she laughs.
Upstairs, Molly explains how they reconfigured
the staircase and bedrooms, moving a wall
to make a corridor in the process.
‘Then the builders found a void at the end here and
we worked out that we could put a shower room into it,
so this is the guest room when people come to stay.’
Above the bed in there are two precious block-printed
fabric samples made by Barron and Larcher, pioneers in
textile design from the first half of the twentieth century,
who have been a big influence on Molly’s work.
Hanging over the dressing table is a painting by Molly’s
friend Lottie Cole, who has done a series of paintings of the
interior in Charleston House, home to the Bloomsbury Set.
‘Lottie does the most amazing paintings,’ says
Molly. ‘I am very lucky. All the artworks in the
room are done by friends, or by my mother.’
Oddly, when they bought the house, the family
bathroom was in the main bedroom.
‘It was all one big room,’ Molly explains. ‘You
couldn’t get into the bathroom without going through
the bedroom, so we had to put up a wall and turn it
into a “Jack and Jill” bathroom with two doors.’
The walls here are splendid with Molly’s blue ‘Coral’
bathroom wallpaper. ‘We recently re-did the wallpaper
63 surrey-homes.co.uk
This page: Molly’s garden studio in what
was the garage Below: The children have
their own wall of paintings in the studio
in here,’ says Molly. ‘The walls
were plain white in between times
and we really didn’t like the look.
It just seemed so empty.’
The quilts on the beds in all the
bedrooms are all handmade – block
printed and hand stitched in Jaipur –
and the walls are decorated in ‘Lani’
paper. Molly also designed and made
most of the lamps in the bedrooms.
Heading back downstairs there is an
example of how effortlessly she is able to
bring touches of magic to the cottage’s
interior. The walls were originally plain
blue, until on a whim one rainy Sunday,
she and the children just painted
starry fireworks onto the blue paint.
‘It needed jazzing up,’ she says.
‘We’ll probably change it again soon.’

Above: Playing with blocks at her print table
workshop where Molly spends much of her time,
drawing her designs.
‘This is where I feel most happy,’ she says, as I
gaze in awe at the small heaps of intricately carved
printing blocks and examples from all stages of
her printing career that lie all around us. She
shows me some of her original wallpaper, simply
printed with emulsion paint onto lining paper.
Molly’s love of her work is inspiring. She
explains how this has spurred her to teach
courses of her own at several places around the
country, including her beloved Charleston.
‘I was spending more and more time running
a business and less time making. I felt sad about
the loss of the actual printing and wanted the
connection with the basic art again. It’s wonderful
to see people’s enjoyment. The last hour is always
spent in silence. It’s like meditation, or therapy – and
sharing the knowledge is inspiring for me too.’
This is a house and a business built on the love
of colour and design, infused with warmth and
joy, elements of which are expressed in charming
combinations all through the spacious interior.
Between them, and with considerable
courage and determination, Molly and
Rollo have turned both their cottage and
their business into a dream come true.

Above an antiques shop in the picture postcard village of
Alfriston sits a very special home indeed. The moment
the door opens to Will and Nick’s fabulous apartment,
revealing a table lamp dripping with fat bauble-shaped candles
on a green porphyry column and a 19th century German
cuckoo clock hung on Fornasetti wallpaper by Cole & Son,
it’s apparent these homeowners are not afraid to mix it up.
Nick and Will moved here from Buckinghamshire three
years ago. Prior to moving Nick worked in the pharmaceutical
industry and Will was a valuer at an auction house.
Will explains: ‘Nick’s mum lives in Bexhill and we used
to come here for lunch. We fell in love with the village
and when we saw this building for sale one day we just
went for it. It’s a proper community here. Popping across
the road to get a paper can take 15 minutes because
you know everyone and always end up chatting.’
Will, who is rocking a look of vintage denim dungarees
and a 1930s pillbox hat today, admits he was relieved to

discover that ‘there are plenty of eccentrics and artistic
types here so not only was I welcome, I fitted right in.’
The only drawback was that their house in
Buckinghamshire was much larger but the flat above
the shop, although well proportioned, was only
a one bed. The solution? Open an antiques shop
downstairs to sell what they didn’t want to keep.
‘It had got to the point where even in the old
house we couldn’t keep on collecting because we
just had so much stuff,’ says Nick. ‘Opening a shop
was a way we could carry on sourcing things.’
Will also opened a vintage dress shop next door. He says
vintage clothes ‘are a passion that has become an obsession’.
The shop is decked out like a fantasy Hollywood dressing
room and is a veritable treasure trove of old school glamour,
sequined sparkly dresses, feathery hats and evening bags.
Jewellery has been another of his great passions since
childhood when his glamorous grandmother used to
give him extra pocket money for cleaning hers. ‘I loved
seeing it all spread out on the dining room floor.’
So, with the two shops a sort of extended
version of their old home, Will and Nick made
their own nest in the apartment above. It is by
turns splendidly grand, imaginative and fun.

Above: The tapestry on the facing wall of the sitting room is dated to around 1580. Will found the early 20th century Fortuny
curtains in an auction. A painting hangs on the back of the door
array of paintings and prints including more Fornasetti,
which Nick collects, oil paintings bought at auction and
a wonderful piece by local artist David Apps which looks
like an antique old master but on closer inspection features
Mickey Mouse. It’s a fun burst of the contemporary amid
the old. Apps is a friend who has a gallery in the village.
The stairs lead to an ochre-painted hallway dramatically set
with cast-iron antique urns holding piles of antique coral and
shells; and a German Empire style Biedermeier chest on which
sits a pearl inlaid wooden crucifix and ornate candlesticks.
At one end of the hall is a pretty green-painted kitchen
with gorgeous views over the surrounding countryside.
The room is dominated by a William Speakman longcase
clock and an 18th century oak dough-bin table. Will
demonstrates the pull-out drawer (or bin) under the table
where traditionally dough would be left to rise overnight.
The 17th century oak chairs are mismatched auction
buys. The gorgeous silverware on the table is Old
Sheffield Plate, something Will collects because he
enjoys the fact it was designed ‘for ordinary people
to give a less expensive impression of grandeur. After
200 years of polishing the copper shows through
which gives it a lovely warm glittery effect.’
On the chimney breast hangs a 19th century French
mirror, flanked by a pair of pretty 18th century Venetian
mirror paintings. Tucked in a corner is a George II bureau
bookcase which Nick, who also works as a freelance
writer, uses as a writing desk. Another wall is flanked by
a 19th century bread rack which doubles as a TV unit.
‘It still has the original paintwork,’ says Nick. ‘That’s
why I fell for it.’ The bread rack is cleverly backed
with curtains which hide the television cables. Sitting
on top of it is a lovely vintage doll’s house which on
closer inspection is made from old fruit crates.
By the door sits a round Edwardian display
table housing a collection of pug-related antiques
(Nick and Will have three dogs of their own).
‘This table did have a glass top’, laughs Will. ‘But we
had a party recently which ended with a guest falling on
top of it. We laughed. Of course we don’t like it when
things get broken, but we’d rather enjoy using things
than hide them away. When people first visit, they

rare 18th century Turkish needlework
do tend to wander around like it is a museum but then
they see how relaxed we are and they relax too.’
And that laid-back attitude to their treasures is also on
display in the sumptuous red-painted sitting room at the
other end of the hall. The first thing Will points out is a
George II birdcage table, originally designed for afternoon
tea parties. Will demonstrates how it swivels round, ‘a bit
like a lazy Susan. Back in the day the hostess would pour,
then swivel to her guest, then pour another cup and so on.’
These days the table is used as Will’s cocktail mixing
bar. It is set with French crystal champagne coupes
and vintage cocktail shakers on a silver tray.
‘That set of glasses used to be much larger but we’ve
lost a few,’ says Will. ‘My cocktails are strong so that’s just
how it is. I try not to worry about how old or valuable
something is. It was all made to be used and not just looked
at. What’s the point of keeping things hidden in a drawer?’
The sofa in the room looks like it has seen a few good
parties over the years too. It is 1920s with naked ladies
carved on the legs in the medieval revival style. Will had
planned to reupholster it but has grown attached to the
tatty original yellow cushions, so has left it as it is.
The sofa is joined by mismatched cosy armchairs
with plenty of soft throws and cushions. But the look
is modernised by the juxtaposition of more of Nick’s
Fornasetti collection including a glass coffee table and
a stunning print which takes up an entire wall.
In the corner is a bookcase displaying some highly
unusual objects such as Chinese carved amber and a
piece of a Flemish door arch dating from around 1500,
together with a pair of striking Regency-era Derby tazzas
(originally used for displaying sweetmeats and fruit).
But it’s the textiles and art that really bring
this room to life, such as the tapestry behind the
sofa which Will has dated to around 1580.
‘My real pride and joy are the curtains’, explains Will.
‘They were miscatalogued in an auction, so I got them for a
bargain. They are in fact early 20th century metallic printed
on silk by Mariano Fortuny. He perfected a secret technique
of printing on silk and velvet with metal. They would have
originally been very bright, but I love how over time they have
faded to warm gold and red. They were too small for the

windows in our previous house and I had them tucked away
for ages so it’s wonderful they are the perfect fit for here.’
There is so much art lining every inch of wall it is
hard to know where to start. It’s a smorgasbord of old
masters, delicately framed miniatures, a Chinese silk
mid century panel, a Napoleonic war love token and
some 1770 coloured prints of the gardens of Versailles.
Lining the fireplace are some beautiful old visiting cards
Will found in a drawer in his grandparents’ home.
Also, on this level is a shower room made instantly
glamorous with the addition of a large fern and a piece
of 18th century Spitalfields printed cotton backed with
waterproof calico and used as a shower curtain.
Another staircase, painted grey, leads us upstairs into a
sunny terrazzo-yellow bedroom, dressing room and bathroom.
‘I wanted to go from dark colours downstairs and get a
sense of sunshine the higher up we went’, says Will. ‘The
paint is by the company Craig & Rose 1829 and is the
same yellow Queen Marie-Thérèse used in her chamber.’
The French style bed is, surprisingly, a modern buy by Laura
Ashley. Will bursts out laughing: ‘A bed is the only thing I like
to have new. I love old upholstered chairs and sofas but the
89 surrey-homes.co.uk
This page The Fornasetti lamp shades in the master bedroom are
topped with vintage hats. The tapestry over the bed is an antique
ceremonial Indian bullock blanket
thought of bugs where I sleep freaks me out. I’m proper Princess
and the pea. I have to have a bed piled high with two mattresses,
a mattress topper and lots of proper quilts and blankets.’
Atop the bed sits an Indian tapestry, once a bullock
blanket used for processions. Like Will’s other textiles, the
original colours have faded in a way he loves. The bed is
flanked by two Fornasetti table lamps, in a fun touch both
are topped with vintage hats. At the base sits a lovely 17th
century oak chest, useful for storing all those blankets.
At one end of the room is a beautiful Tudor table
dating from the period of King Henry VIII, the aged
patina of which could surely tell a few stories. Will says:
‘It would have been a centre table in a grand hall. It’s
really too big for in here but I could never sell it.’
But the real fun in this bedroom starts when we explore
the contents on top of the table. There are photos of
Will’s family, including the grandmother who was such
an influence on his style; 19th century vases; a Chinese
export punch bowl; an ornate Victorian hand mirror

Right: Will uses his grandmother’s desk as a dressing table.
The painted pottery ladies were made by a friend Below: A
stack of Hermès boxes on the upstairs landing
and bottles and bottles of antique perfume.
It seems perfume is Will’s biggest passion of all. He’s been
collecting antique bottles (and the scents still contained
in them) since his teens. ‘My grandmother used to give
me the perfumes she didn’t like. Memories through smells
are a big thing for me. And I’m totally in love with the
history behind perfumes and the people who wore them.
Changes in perfume trends were indicative of changes
in society. I do a lot of research into the ones I buy.’
Will’s perfume bottle collection is over 400 strong, all
discovered in auctions, car boot sales and junk shops. ‘My
eye is trained to spot them wherever they hide,’ he laughs.
Some of his bottles are small and ornate, others are large
‘factice’ bottles from shop displays. ‘It is amazing how they can
last. I have Edwardian perfumes which I wear today’, he says.
Elsewhere in the bedroom is a 1930s sofa which was the
first piece of furniture Will ever bought. ‘I was broke, so I
upholstered it myself using a dust sheet and a staple gun.’
There’s also a mid-century French armchair draped with
a paisley shawl, a ‘Grand Tour’ marble-topped table and a
beautiful early 19th century kneehole desk, which belonged
to Will’s grandmother and which he uses as a dressing
table. Standing in discreet attendance is a Deco walnut

their previous large house Left: Will’s vintage dress shop next door is a
veritable treasure trove of old school glamour
make-up stand by Maple and Co. The drawers inside are packed
with an array of vintage powder puffs and more perfume bottles.
It’s a super-eclectic mix but it works beautifully with
Nick and Will’s grand yet lived-in vibe. As Will describes
it: ‘I wanted to create the sense that everything had
already been here forever, with subsequent generations
coming along and each adding their own pieces.’
That couldn’t be more beautifully illustrated than at the bottom of
the stairs, where hangs a lovely tribute to Will’s greatest passion. Nick
commissioned artist David Apps to make a beautiful vintage mirror
frame set with miniature perfume bottles, the ultimate thoughtful
gift for a home full of love for both the personal and the historic.

Natalie Walton’s beautiful book This Is Home is a testament to a global trend
for houses that are calm, nurturing spaces, created through the owners’ very
personal choices – on four different continents
Australian interior
designer, stylist and
journalist Natalie
Walton is fascinated by the
concept of home, from its
historical origins to its most
contemporary expression.
For her book she went
to seven countries, on
four continents, to find
houses she feels express
the ideal of the modern
home, in which: ‘The space
feels authentic, a genuine
reflection of the person or
family who lives there.’
Walton’s philosophy is
based on the idea that, in
these times when we have
an almost limitless number
of possibilities available via
the internet, creating a home
will be a more enjoyable
experience – and have a
better outcome – if we can
tune into what she calls
our values and our story.
‘When we are surrounded
by limitless choice and a
constant stream of ideas,
our values create a roadmap
that is uniquely our own.’
While so diverse in
location, the houses share
common themes, with a
mostly monochrome palette,
set off by the warmth of
natural materials and a bit

MARRAKECH, MOROCCO
Cassandra Karinsky moved
to Marrakech from Sydney
14 years ago and opened her
business Kulchi, which sources
rugs – like the one pictured
here - from the famous souk
for interior designers and
clients around the world. She
painted her apartment white
because ‘the souk is so intense
that I needed something
soothing and calm.’ Most
of the furniture was custom
made using contacts she’s
made through the business.
‘You have to design and make
everything here.’ kulchi.com
BERGAMO, ITALY
Furniture designer Katrin Arens
found her 15th century monastery
as a deserted ruin and converted
it into a home now used for
weekends and holidays – and
considered its dilapidated state a
positive: ‘An imperfect house gives
the gift of freedom.’ She designed
most of the furniture herself,
mixing it in with heirloom pieces
and things she has brought back
from travels. ‘They have to be
authentic and they have to tell a
story, or mean something to me.’

LYON, FRANCE
Pierre Emmanuel Martin
and Stéphane Garotin design
beautiful interiors via their Lyonbased
business Maison Hand.
Their own sprawling apartment
– with panelled walls and classic
parquet floors throughout – is
a glorious advertisement for
their talents. They created the
eat-in the kitchen, left, out of
what was the dining room.
Pierre Emmanuel and Stéphane bring
a lot of their original items back
from trips and choose furniture for
comfort. ‘We like to mix old pieces
with contemporary ones and iconic
items, as well. When we don’t find
what we’re looking for we design
our own pieces.’ Their favourite
materials are all natural – wood,
stone, linen, wool and ceramic.

LOS ANGELES, USA
When Arabella and Sam McIntosh
moved to LA from Sydney, where
Sam edits surf magazine Stab,
all they took with them was two
suitcases and their son’s favourite
toys. Arabella is the designer for
sustainable homewares brand Palm
Beach Black and has acquired things
for their new home with great care.
‘We made a decision to only buy
pieces that we would be excited to
unpack out of a container down the
track. Each piece will remind me
of the new places I discovered and
people I met sourcing them.’

With age, the lips naturally become thinner
and lose their definition, and the v-shaped
area of the upper lip, known as Cupid’s
bow, is where you’re most likely to see this
happen.
Many people try to disguise the effects
of ageing in this area with make-up, but
it can bleed down the vertical wrinkles
and highlight the problem. If you’ve been
wondering how to look younger, lip fillers
are an easy answer because they’re quick,
affordable and non-invasive.
They can be the centrepiece of a makeover
that gives you youthful looking, plump lips
and a more defined smile. Because the lips
are sensitive, we apply local anaesthetic
cream about an hour before the procedure
to numb them. Dermal filler is injected,
usually into the upper rim of the lip to
define the Cupid’s bow, and immediately
afterwards you may experience small
pinpricks for a few hours.
There is often some mild redness of the
skin, but this settles by the next day and

Beauty
And the winner is…
Josephine Fairley reveals key winners in this year’s Beauty Bible
Awards – with products tested by over 1500 women
Where do you turn to find out
about beauty products that
really work? i’d like to think
you visit this page and i’m proud to
say that many of the product insights
i share here aren’t purely from my
own experience – they’ve come via real
women who’ve trialled products for the
Beauty Bible books and website that
i write and edit with my collaborator
Sarah Stacey.
Since we launched in 1996, Sarah
and i have had over 30,000 real
women trialling products for us –
making Beauty Bible’s the biggestever
independent beauty survey in
the world. in 2019, because we now
all want info at the click of a finger,
the results of the in-depth surveys are
online, at beautybible.com.
We now cover 102 categories of
product and for this year’s awards over
1500 women tested haircare, suncare,
bodycare, skincare and make-up for us,
all of it over a period of months. So i’m
happy to share some highlights of the
Beauty Bible Awards 2019, which have
just gone live. These products all won
the gold Award in their categories.
Cleansing balm
Emma Hardie Moringa Cleansing Balm,
£47 for 100ml and cleansing cloth. Not
the first Award for this superfacialist’s
make-up-melting balm, which is based
on ultra-nourishing moringa oil, wild
sea fennel, rose oil and vitamin E – and
definitely not its last. But the score here
was stellar: 9.10/10 averaged across 10
women.
Beauty Bible testers comments:
‘The most luxurious cleanser I have ever
used. A real treat for the face, feels as if
I’ve used a moisturising mask, as well as
working really well as a cleanser.’
‘What can I say except I’m a convert
to this perfect cleanser. The fragrance
is divine, perhaps from the bergamot,
jasmine and sweet almond oils.’
‘Used this a.m./p.m. for three weeks
and then on to the end of the pot. It has
made a noticeable difference in reducing
fine lines and wrinkles, enhancing glow,
radiance and softness and plumping my
very dry mature skin.’
Body oil
Aromatherapy Associates Renewing Rose
Body Oil, £47 for 100ml.
The divine rose fragrance – so
consistently popular with Beauty Bible
testers over the decades – helped nudge
this AA oil towards its high score. It’s
also blended with neroli and geranium
specifically to uplift spirits and ‘awaken
your soul’.
‘Top marks for this lovely fragranced oil,
which absorbed within a few minutes so
I didn’t have to wait long to get dressed.
Skin was immediately soft, more nourished
and beautifully fragranced.’
‘Scars, stretch marks and dry patches all
look 100 times better. I took it with me to
the South of France and my limbs looked
super glowing, with a sexy sheen.’
‘Lower legs looked 10 years younger,
I really mean that! They were perfectly
smooth and looked like I had leg make-up
on… It is that good.’
Miracle treatment
Charlotte Tilbury Charlotte’s Magic
Cream, £70 for 50ml. Charlotte Tilbury
may be better known for her makeup,
but this cream – which she used
to have privately mixed up to use on
her celebrity and supermodel clients –
won gold as ‘Best Miracle Treatment’,
delivering much more than cosmetic
results (tied with Clinique’s Fresh
Pressed Daily Booster with Pure Vitamin
C 10%).
‘I LOVE this – I’ve had compliments
on my younger-looking skin from friends
and my husband for the first time ever!
My skin was softer immediately; after
two weeks my wrinkles and lines are less
obvious, skin looked brighter and plumper,
and tone more even.’
‘Magic it certainly is. I fell in love with
this; my skin is clearer, brighter, softer and
smoother, appears less crêpe-y and fine lines
and wrinkles reduced.’
‘Absolutely makes my skin look younger!
It has instant effects on plumping skin and
giving a wonderful glow.’
Light-reflecting
concealer
Temple Spa Glint Shadow
Concealer, £20. Looking to
conceal shadows and make
furrows less visible? This was
one of an amazing dozen
winners in the Beauty Bible
Awards 2019 from Temple
Spa, available in two shades.
‘10/10. Blended easily into
115
my skin, even when not using foundation
or tinted moisturiser.’
‘Light formula that blended very easily
to conceal dark shadows at corners of eyes
and whole eye area, concealed and made
puffiness less noticeable, softened frown
lines making them less pronounced. I also
applied it to red patches at the sides of my
nose and it concealed the redness.’
‘Promised to battle the signs of daily
fatigue or too many late nights and did
make me look a lot less tired – fresh as a
daisy in fact.’
Gradual Tanner Face
Crystal Clear Beach Glow Tan Drops,
£27.99 for 30ml. Feel your skin looks a
little drab right now? For the first time
in our Awards, Beauty Bible covers
all the different tanning categories,
including gradual tanners. Gold winner
here is a product which you add dropby-drop
to your moisturiser.
‘So easy to use and unlike some tanning
products it really is fool proof as you just
add it to your regular moisturiser and
it works within about 45 minutes. The
colour is subtle and looks very natural.’
‘Made me look light golden and put a
smile on my face. It promises a healthy
glow and that’s exactly what it gives.
Perfect.’
Beauty Steal Award
SVR Physiopure Cleansing Micellar Water,
£11 for 200ml. One of our favourite
things at Beauty Bible is to direct readers
towards great affordable buys – and to
brands they may never have heard of –
like this cleansing water from a new-to-
the-UK French pharmacy brand, which
won a Silver and a ‘Beauty Steal’ Award.
‘Glides over the skin and even one swipe
picked up a lot of make-up.’
‘A nice quick product – cleansed makeup
and eye make-up efficiently and didn’t
irritate my eyes. My skin looked bright and
had a nice tone.’
‘A winner! I enjoyed using it and
results were fabulous; removed everything
perfectly, even waterproof mascaras.’
‘The sort of product you would want
your daughter to use on her skin as a
first cleanser, or take with you if you are
backpacking.’
Pillow mist:
REN & Now to Sleep Pillow Spray,
£16.20 for 75ml. As they’re such a
‘thing’ (and since beauty sleep isn’t
called ‘beauty sleep’ for nothing), for the
first time in these Awards we included
products to help you drift off.
‘I often have trouble sleeping, but this
did help me to feel more relaxed and fall
asleep more quickly.’
‘I love this natural sleep spray. I look
forward to using it, as it smells divine and
has a feelgood factor getting you ready for
some sweet dreams!!’
‘I’m so pleased with results especially
after having a hard day at work as mum
… this is my new life saver. Really good,
with massive improvement in actually
falling asleep. I have been able to sleep
deeply more and more often.’
Mascara:
Guerlain Maxi Lash So Volume £26.50.
I’m always quietly chuffed when a
favourite product of my own scoops a
Gold Award – as Guerlain’s Maxi Lash
did. It’s the brush which is the real key,
here: brilliantly ‘grippy’ to catch even
the teensiest eyelash and sweep on the
volumising formula.
‘10/10! The wand picked up just enough
mascara to coat lashes without being too
much. Very easy to apply and build up as
desired; no clumping even with a second
coat.’
‘Would I buy it? A million times “Yes”. I
will never use another mascara again.’
‘A great mascara for dramatically
lengthening and volumising; easy to apply
(not too wet), doesn’t smudge or smear.’
All Round Shampoo
Hairburst Shampoo, £12.50 for 350ml.
Confused by the supermarket haircare
fixture? Although we do award
categories for different colours of
hair (blonde, brunette, redhead), and
problems like frizz or lack of volume,
we know some women just want a great
product, plain and simple. And this is it.
‘Top marks for this coconut-smelling
shampoo, which did a good job of cleaning
my hair, was easy to wash out and didn’t
sting my eyes. Love the smell!’
‘Promised longer, stronger and more
radiant looking hair – and I do
feel it made it stronger and it
looked healthier.’
‘My hair was in quite bad
condition when I started
to use the product
– dry and damaged
after an 11-day beach
holiday – but this
transformed it.’

Wellbeing
A Year of Wellness
From plastic oceans to record air pollution, the headlines would have
us believe that we’re on course to leave this planet in a bit of a mess.
Eminé Rushton believes that there’s still hope – and that our homes are the
best places to begin implementing practical changes, for good
March: The home front
It began with our family move to
Kent, from a relentlessly noisy bit
of South East London (on, we later
discovered, one of the most polluted
roads in the UK) to a 200-year-old
cottage in a little village. The air quality
was so obviously better we couldn’t quite
believe how long we’d spent inhaling the
fumes of eternal traffics.
Without the air pollution around us,
we became that bit more sensitive to our
surroundings. We were able to throw
windows open, to let gusting breezes
race through our rooms, without fearing
for our lung capacity. It
also inspired me to start
asking bigger questions
about the environments
we choose to live in, and
the decisions we make
when we come to decorate,
clean, restore and care for
our homes.
I spent days researching the lowest
toxicity paints on the market, with
zero to low VOC ratings. This stands
for ‘Volatile Organic Compounds’
which have been shown to be skin,
eye and lung irritants, and have also
been linked to endocrine disruption
with its increased risk of cancer. Most
commercial paint is high in them. I
decided on Earthborn, a clay-based
paint that is 100% VOC-free.
For areas subjected to more rough and
tumble, we used Little Greene’s floor
paint, very low VOC and extremely
resistant to damage and marking.
I long ago switched from commercial
domestic cleaning products to natural
alternatives. Lemon, bicarbonate of soda
and vinegar will do most household jobs
very well indeed and I recommend the
brilliant book Natural Home Cleaning
“It’s worth paying
attention to
plastic when it’s
at its most healththreatening”
by Fern Green (Hardie Grant) for things
you can make with cheapest basics, to
do any household job imaginable.
I’ve also taken out an account with
Big Green Smile, who deliver costcutting
eco-friendlier bumper sizes
and refill packs of the best-known
green cleaning products (by Ecover,
Method, Ecozone etc) in boxes that are
themselves 100% biodegradable.
My favourite household cleaning
brands are Tincture London, Marcel’s
Green Soap and Dr Bronner’s Liquid
Castile Soap (which can be used for
laundry, dishes, floors and
even our own bodies).
For those who like to
disinfect their loos with
bleach, I would caution as
it has been shown to be
the single most corrosive
and toxic home cleaning
product of all, with fumes
inhaled by children linked to chronic
asthma and a much higher incidence of
allergies and skin conditions. Instead, I’d
recommend the super-thick and highly
effective Ecozone Toilet Cleaner, the best
I’ve tried out of a dozen eco brands.
Then there’s the plastic. While it’s
unlikely we’ll ever be plastic-free, it’s
worth paying attention to when plastic
is at its most health-threatening. While
many manufacturers now produce
what they deem to be ‘safe’ plastics
e.g. BPA-free, there are many different
chemicals involved in the manufacture
of this eternally problematic material,
many of which have been found to leach
into the foods or liquids within them,
particularly when subjected to heat.
So, microwaving your food in a plastic
container is a bad idea, as is regularly
eating or drinking hot things out of
plastic or polystyrene. If food or liquid
is to be stored, it’s certainly worth
switching to ceramics, glass, stainless
steel or earthenware instead.
Likewise, with bottled water – some
of which has been shown to be bottled
up to two years before it is finally sold.
Far better and cheaper is to simply carry
your own filtered tap water in a glass or
stainless steel bottle, every day.
To make sure that water is pure I
recommend the counter-top filtration
system The Big Berkey (save money
if you pick one up from the slightly
damaged sale).
Plastic-free online stores are booming
– and plastic-free retail shops are also
popping up all around us (Unboxed
Kent in Canterbury; Macknade Fine
Foods in Faversham; Bare Bazaar
in Ashford, to name a few) and are
fantastic value for money. You take your
own containers and fill up on daily
essentials such as pasta, washing liquid,
pulses and flours.
While we do still use our local
supermarket for certain things, we have
also switched our veg and fruit orders to
a local farm box scheme, which comes
in paper and card, and is returned the
following week. And our peelings go to
compost, or our happy rabbit Pip.
Nothing in our new systems has been
harder work or more expensive overall,
and it’s been a satisfying learning curve
for the whole family.
Eminé shares more of what she learns
on Instagram @thisconsciousbeing and
would love to hear of any
new eco, ethical, lowwaste
finds, schemes
and communities, in
and around your
home town too.

Natural Wisdom
Jessica Hurley is the creator of hand-made, small-batch luxury
organic skincare line Pennies and Feathers
Jessica Hurley called her skincare line
Pennies and Feathers in memory of her
mother. “She told me that if there was
any way that she could let me know that
she was still around after she died, then
she would do so through pennies and
feathers.”
Also in tribute to her late mother,
10% of all profits from the range goes
to independent charities that support
people who are living with a cancer
diagnosis.
What one piece of seasonal wisdom
helps you in winter? In winter I
definitely embrace everything hygge and
try to make my home environment as
cosy and comforting as possible. By the
time we get to March it’s easy to long
for the lighter, brighter evenings and
wish the rest of winter away, but we
are so lucky to live in a country where
we have seasons so I try to appreciate
each one. I fill my house with candles
and soft blankets and get excited for
what I could achieve by the next time
winter comes around. A whole year of
possibilities ahead.
Which one self-care ritual do you
never skimp on? Each evening I use
a facial oil after cleansing and I always
take a few moments to perform a
little facial massage routine on myself.
This really works the oil in, relaxes
my muscles, releases tension and helps
circulation. This ritual helps me to sleep
better, is a time to reflect on the day and
is amazing if I have a tension headache.
What’s cooking in your kitchen
this month? I have really been
enjoying warming soulful meals and
my favourite has been a simple spiced
lentil soup. It’s a delicious bowl filled
with so much goodness like sweet
potato, courgettes and chickpeas. Very
comforting and you can make it in large
batches too.
Share one book that taught you
something amazing about life – and
made you better at living it? When
I was first thinking of creating my
skincare brand and was looking for
some inspiration, I read Jo Malone’s
autobiography My Story. Not only
did this give me encouragement and
confidence to push forwards, but Jo’s
story was so moving. She had such a
difficult, humble start in life and also
went through breast cancer. She is
very resilient and it showed me that
you can be anyone you want to be,
you just need to live it.
What always brings a smile to
your face? There are little signs that
I notice in nature that always remind
me of my mum. If I see a robin or
if a white feather falls in my path,
then those things really make me
smile and make me feel peaceful too.
What is the best treatment you’ve
had locally? I treat myself to a fullbody
aromatherapy massage. With
my work as a hair and makeup
artist my back can sometimes suffer,
especially during the busy wedding
season, so I thoroughly appreciate
the time to relax, but my muscles
really do need the attention too. My
go-to salon is Beauty Secrets in
Horsham, all the therapists I have
seen there have been brilliant.

From one big pot of
bolognese sauce…
A simple bolognese sauce made
in a large batch – using 1.5kg of
beef mince – is so useful. You can
serve up a spag bol to a family of
four generously and will still have
half of the sauce left. From it you
can create:
Chilli Con Carne Just add fresh
chillis, chilli powder, kidney
beans and a chopped pepper and
cook through. Serve with rice
and salsa, or load into tacos, on
tortillas or into jacket potatoes.
Cottage Pie Top with mashed
potato – regular or sweet potatoes
– and cook in an oven for 30
minutes until crisp on top.
Lasagne Layer the sauce with
lasagne sheets and cheese sauce
and top with grated cheddar,
parmesan and torn mozzarella.
Bake for 40 minutes.
Cannelloni Fill cannelloni tubes,
top with cheese sauce and bake
for 40 minutes.
Moussaka Traditionally this is
made with lamb mince but it
works fine with beef. Layer the
sauce, pre-browned aubergine
and a cheese sauce, which has
had one egg and an extra egg
yolk whisked into it.
From a BATCH of
pancake batter...
Use the 1:1:1 ratio –1 egg to 1 cup
plain flour to 1 cup milk, scaling up
as required. Add a pinch of salt and
whisk. Make a batch for breakfast
pancakes and at least one other
quick meal during the week.
Toad in the Hole Colour your
sausages in a frying pan, then pour
over the batter and bake in a hot
oven for 30 minutes.
Blueberry and Banana American
Pancakes Add 1 tsp baking powder,
1 tsp melted butter, a handful of
blueberries and a mashed banana
and ladle the mixture into a hot
lightly oiled frying pan.
FROM Leftover ROAST
Tagine Use leftover lamb to make a tagine.
Soften 1 onion, 3 cloves garlic and 2 tsp
grated ginger in a pan before adding 1 tsp
each of ground cumin and coriander and
2 tsp ras-el-hanout. Add the lamb, 1 can
chickpeas, 200g can of tomatoes, 2 tbsp
balsamic vinegar and simmer for 30 minutes.
Curry Soften 1 chopped onion, add 3
crushed garlic cloves, 2 tsp fresh grated
ginger, 1 chopped chilli, 1 tsp ground
cumin, coriander and turmeric and 1
tbsp medium curry powder. Add 1 tin
chopped tomatoes and 400ml tin of
stock. Add chopped or shredded cooked
meat and lentils or a 400g chickpeas if
you wish. Simmer for 30 minutes.
From a roast chicken
Quesadillas Sandwich pieces of
shredded chicken, grated cheese,
cherry tomatoes or chilli between
two tortillas and dry fry in a large
pan for 2 minutes on each side
or until the cheese is melted.
Or combine chicken, peppers,
tomatoes and guacamole in a
tortilla and roll.
Soup Make a soup with chicken
stock, leftover vegetables and pieces
of chicken. Leave chunky or blitz.
For an Asian vibe add cooked
noodles, soy sauce, ginger, chilli,
stock and sugar snaps or green
beans. Or you could add a tbsp of
Thai curry paste, some fish sauce,
soy, chilli and lime juice for a hot
and sour style Thai soup.
Caesar Salad Combine the
leftover chicken with some Greek
yogurt, lemon juice and curry
powder. Mix with salad leaves or
load into lettuce cups for a quick
canapé. Top with some fresh finely
chopped chilli if you like spice.
Pasta Make a simple onion
and garlic base, then add
either tomatoes and basil (for a
Neapolitan vibe), or crème fraîche
and mushrooms (richer northern
Italian style) and chicken.
FROM Chicken bones...
Never throw away chicken bones. Stick
them in a bag and keep them in the freezer.
When you have time put all the bones in
a big stock pot with some onions, a leek,
2 carrots, bay leaves, a good tbsp of black
peppercorns, celery, parsley and top up
with water. Bring to the boil and simmer
for a good few hours then strain. Once
the stock is cooled it can be frozen in soup
bags, Tupperware or ice cube trays.
FROM Leftover veg
Curry Make a vegetable curry using
the recipe (left) and adding any
leftover vegetables in your fridge
instead of the meat. I often add
seared cubes of paneer cheese too.
Soups Soften an onion in a large
pan, add the vegetables and stock
and simmer before blitzing.

Chicken & bacon pie
Serves 4-6 Prep time: 10 minutes Cooking time: 30 minutes
There’s nothing more comforting than a good pie, and this one
is not only good but very easy. I think the secret to a good pie is
to have a generous filling. That’s why I’m always disappointed by
shop-bought pies! This recipe uses leftover chicken and whatever
bacon you have in your fridge – you could even use ham.
• 1 tbsp olive oil
• 600g cooked chicken
• 200g bacon lardons,
bacon rashers, or ham,
cut into 2.5cm pieces
• 1 onion chopped
• 2 garlic cloves crushed
• 1 tsp dried thyme
• 2 tbsp plain flour
• 100ml white wine
• 100ml milk
• 500g ready-rolled puff
pastry
• 1 egg beaten
• ½ tsp sea salt, 5 grinds
of pepper
1Set oven to 200°c. Soften
the onions and garlic for 5
minutes in a hot pan with the
olive oil.
2Add the bacon pieces to the
pan and colour them for
5 minutes (if using ham, just
warm through).
3Add the flour and stir to
form a roux, then add the
wine, stirring to remove any
lumps. Add the milk, thyme,
chicken and the seasoning then
simmer for 10 minutes.
4Pour the mixture into a pie
dish and let it cool before
adding the pastry top.
5Brush some egg around the
edge of the pie dish and lay
the pastry on top of the mixture.
Cut round the pastry to remove
excess, then press it down onto
the edge of the pie dish and
brush with the beaten egg.
6Using a small sharp knife,
score the top of the pastry
and pierce the middle to let
steam out.
7Put the pie in an oven at
200°c for 30 mins or until
the pastry is golden brown. Serve
with mash and green veg.

Food
Vegetarian frittata
Lamb ragu
Serves 4 Prep time: 5 minutes Cooking time: 12 minutes
This frittata can be made with any leftover cooked veggies, or
any that need using up from the fridge drawer. I used butternut
squash and kale but sweet potato, regular potatoes (roasted or
boiled), spinach, peas, broccoli… really, any vegetables will
work. If you have cheese, add that on top too. Frittatas are great
served warm or cold.
• 1 tbsp olive oil
• Roughly 400g cooked
root veg – squash, sweet
potatoes, regular potatoes,
carrots, swede…
• 1 onion chopped
• 6 eggs beaten
• 100g greens – spinach,
kale, cabbage – cooked
or raw
• 100g frozen peas
(optional)
• 50g grated cheese or
crumbled feta
• 50g sun dried tomatoes
from a jar, or halved fresh
tomatoes (optional)

This rich and hearty pasta dish was made using leftover lamb
shoulder, but any leftover lamb would work. Serve with pasta and
a simple salad.
• 500g cooked lamb
shredded or chopped
• 1 tbsp olive oil
• 3 garlic cloves crushed
• 2 carrots peeled and
chopped
• 1 onion chopped
• 100ml red wine
• 400g passata, or chopped
tomatoes
• 10g fresh rosemary, leaves
picked and finely chopped
1Soften the onions, garlic
and carrots in the oil for 10
minutes, then add the lamb.
2Poor in the red wine, turn
up the heat, then add
the tomatoes and rosemary.
Simmer for 30 minutes adding
some water if the sauce looks
dry.
3Season to taste and serve
with pasta. I like to use
thick ribbon pasta such as
pappardelle or tagliatelle as it
holds the sauce best. Sprinkle
with fresh basil and parmesan,
if you wish.

What about
leftover wine? (hard
to imagine, but it
does happen...)
Jeremy Blood of Surrey Wine
School offers expert advice
Within about 48 hours of
opening, wine will lose its fresh
and fruity aromas and will begin
to start oxidising and smelling
like vinegar – lovely for your
chips but not great as a drink!
Even sealed with its cork or screw
cap and left in the fridge, wine
will still only last a couple of days.
For longer-term preservation try
a vacuum system, such as Vacu
Vin where oxygen is removed
from the bottle as it is sealed.
The other way is to use a
blanket system, such as Coravin,
which uses a gas that is heavier
than oxygen and provides a layer
between the wine and air.
Neither of these methods work
for sparkling wine and neither,
sadly, does the old silver spoon
technique. If you do ever have
any left over, use a ‘super-seal’
stopper, which keep bubbly
fresh for up to three times as
long as conventional stoppers.
Ways to use spoiled leftover wine:
• Pour the wine into an ice cube
tray and freeze. Really handy
when you need a splash of wine
for a casserole, stew or sauce but
don’t have an open bottle to hand.
• Boil the wine up with sugar
(3 cups of wine to 1 of sugar)
to make a superb wine syrup
for dressings and sauces.
• If it has gone to vinegar – which is
what happens when the acetic acid
in the wine eats the alcohol – use
it as vinegar!
• 400g leftover roast beef
• 200g beansprouts
• 6-8 spring onions, topped, tailed &
shredded
• 300g green vegetables - asparagus
tips, mange tout, French beans, sugar
snaps, broccoli....
• 200g vermicelli or rice noodles
• 1 red chilli sliced
• Bunch coriander, leaves picked
• Limes to serve
For the dressing:
• Juice of 2 limes
• 1 tsp fish sauce
• 1 tbsp honey
• 3 tbsp soy sauce
• 1 tsp grated or chopped ginger
• ½ clove garlic crushed
Thai beef salad
Serves 4 Prep time: 10 minutes Cooking time: 5 minutes
This salad is perfect for using up leftover beef. The dressing is so versatile, make a
batch as it will work with chicken, fish, duck or drizzled over any green veg. Mix
and match the veggies in the salad depending on what you have in the fridge. You
can omit the beansprouts or noodles and serve with rice instead.
• 2 tbsp extra virgin olive oil
• 1 tbsp sesame oil
1Put all the dressing ingredients into a
clean jam jar and give it a good shake.
2Cut off any obvious fat from the beef
and slice it into 1cm strips. Place
the beef in a bowl and pour over half
of the dressing. Leave to marinade for 5
minutes whilst you cook the noodles and
vegetables.
3Cook the noodles according to packet
instructions. Add the green veg to
simmering salted water and cook for 2-3
minutes. Drain.
4Combine all the ingredients in a bowl
and toss with the remaining dressing.

Marching
forth
Get out and do some pruning, says Sue
Whigham – but don’t be tricked into
thinking the only way is up
the first day of March so beware with a
hint of sweet spring in the air you might be
‘It’s
tempted into thinking winter has ended
only to be caught by Jack Frost, unaware’.
Last year the first week of March brought a cold snap
with snow and freezing conditions. Most of us know
the folkloric saying about the month: ‘In like a lion,
out like a lamb – in like a lamb, out like a lion.’
It’s an unpredictable time with cold and often violent
winds and despite spring officially arriving on the twentieth
day of the month, the Vernal Equinox,
anything can happen weather wise.
That reminds me that every year for
the last twenty or so, I have watched
the buds developing on the magnolia
in the memorial garden of our parish
church and anxiously wondered if
they’ll be battered by a sharp wind
or frosted or whether they’ll have a chance to flower
in all their pristine beauty. I must get out more.
March can be quite a dry month too and as a
result is an ideal time to finish off tidying up borders,
continuing to add well-rotted compost or something
similar as well as a few handfuls of Growmore
to get everything growing away in April.
Top: Pulmonaria in flower Above: A riot of early spring flowers
Pulmonaria in flower
“It’s an unpredictable

Native primroses are in flower this month and look
wonderful growing amongst clouds of our native wood
anemones, A. nemorosa. Wood anemones grow from slim
little rhizomes which spread just under the leaf litter in
shady places and they really confirm that spring is here.
Well, almost anyway. They flower, pollinate and set seed
in no time at all and then disappear into their summer
dormancy as the leaf canopy above them unfurls.
The RHS Plant Finder lists about forty varieties; some
of them with almost imperceptible differences from one to
the other. However, a couple to look
out for are A. nemorosa ‘Robinsoniana’,
pure white A. nemorosa ‘Vestal’
and a strange little anemone called
‘Green Fingers’ which has green
petals inside its white flowers.
I always thought that A. nemorosa
‘Robinsoniana’ must have been named
after William Robinson but it seems not. He commends it
in his seminal work The English Flower Garden, published
in the late nineteenth century, but doesn’t lay claim to
it. This little plant is an absolute treasure. The relatively
large buds are a soft grey and open out into lilac flowers
adorned with particularly showy yellow stamens.
Early March is a good time to cut back your buddleias.
Traditionally this was usually done in February but
if you want to cut back the old wood to a couple of
buds to encourage new growth and to ensure flowering
at the same time of the year that the majority of
butterflies are flying, try leaving it a bit later.
The nectar of buddleias attracts about twenty species
of butterfly and not for nothing is the plant known as a
‘butterfly bush’. I particularly like Buddleja davidii ‘Dartmoor’
as its dark purple flowers are so sweetly scented. There is a
mature specimen in the Rose Garden at Sissinghurst which
deserves a special pilgrimage as it is right by the path, is at
sniffing height and every insect around is attracted to it.
It’s also a good time to cut back your golden philadelphus
if you have one, not just to tidy it up or rejuvenate it,
but doing this now prevents it being scorched in

Garden
sunlight and especially as it is a good bright shrub to fill a
shady spot. I have one tucked to the side of an ash and I
tend to leave it alone – not this year though; it’s going to
get the treatment. I have to say that the ash does take a lot
of goodness from the soil in that area and I think that the
only thing for it is to add an annual mulch in the area.
Another rather lovely garden shrub which appreciates attention
in March is cotinus. With ‘Royal Purple’ or ‘Grace’ you’ll find that
a hard prune will result in much larger leaves with better colour.
There’s one called C. coggygria ‘Old Fashioned’ which has
actually only been on the market for a few years, its rather
unique colouring with pink new growth turning to blue green
foliage. Gorgeous yellow/green flowers in the spring add to the
drama. What a lovely backdrop for a border. I have a vision of
growing a group of the hardy fuchsia, ‘Hawkshead’, with it.
Fuchsias are not everybody’s choice but they have got a lot
going for them as a late flowering addition to the border. In
this variety, masses of delicate tear drop shaped, white flowers
have tips delicately dipped in green. You can buy these as
plugs these days and get them into the border in the spring
once they’ve bulked up a bit and all threat of frost is past.
Willows will be flowering now. Cut them back once flowering
is over. A very interesting and ornamental shrubby willow is Salix
udensis ‘Sekka’ which is a male clone. The young stems seem
deformed as they are twisted and flattened but they are much
loved by flower arrangers. It is native to parts of northern China
and Japan where it is known as the Dragon Willow. If you prune
this particular willow too hard you may just kill it, so go easy.
Willows with coloured stems react well to pruning – their new
stems being richer in colour as a result. I would only pollard
these every other year. Unfortunately honey fungus has got to my
beautiful group of three, destroying two so far and has only been
stopped from marching on by the pond thwarting its efforts to
spread even further. But willows strike easily and another couple of
plants are establishing themselves well away from danger, I hope.
We spotted a yellow-leaved willow at Malverleys, the
garden run by Mat Reese (who used to work at Great Dixter)
on a visit last year. What a show it made at the back of a
huge yellow border. I see that last year Great Dixter were
experimenting with it or something very like it, as a fill-in
plant in the Long Border. I’m still to find out its name but
will let you know when I do – or when somebody tells me.
If we ever get a piece for this garden, it will have to be well
out of the way of the honey fungus. Short of spending a fortune
on industrial amounts of Armillatox outdoor cleaner I think we
have to live with it and grow plants that have immunity. I’m
so glad to hear that smoke trees, hornbeams, box and quince
are among those that can resist having their roots attacked by
this species of fungi as they are all next in the line of fire.

Garden
Borders with backbone
It’s all a matter of balancing the outrageous show-offs
with the quiet achievers, says Jo Arnell
Garden borders can be tricky to get right. ‘I’ve looked
at borders from both sides now,’ Joni Mitchell might
have sung, had she been keener on gardening. If
you’ve looked at yours in all weathers, in all seasons, from
all angles and still somehow, you really don’t know borders
at all, have one last look before chucking in the trowel.
When we go to the garden centre to buy plants, we tend
to fill our trollies with all the gorgeous flowering beauties
that have been put at the front of the display, because they
are looking their particular best at that particular moment.
We rush happily home with our beautiful haul, plant them
out and - and well, they either disappear
into the existing scheme (in some cases
never to be seen again), or they just don’t
seem to hang together. There are many
reasons why this could be happening, but
the most obvious, the topiary elephant in
the room if you like, is a lack of structure.
Borders need structure, focal points and boundaries
in order to show off their best attributes. There has been
a fashion in recent years to plant swathes of perennial
plants, which is lovely, but many of them are lax in habit,
tending to sprawl about lacking definition and impact.
A whole summer border full of delicate wispy plants
can easily look like a jumbled mess, but put a well-placed,
dense-leaved and formal-looking evergreen amongst them
and – like putting a teacher in a classroom – the whole space
“A whole summer border
full of delicate wispy
plants can easily look
like a jumbled mess”
comes together and magically appears to be more ordered.
Whole gardens and large borders need relatively large
structural elements – trees, big sculptures, garden buildings
etc – but even small spaces benefit from these. Large plants
work well in small spaces too, in fact small plants in small
gardens often have the effect of miniaturising the space, which
isn’t always a good look. It’s all about scale and proportion.
Boundaries
Hedges, paths and walls are the boundaries that keep the
plants corralled, providing a pleasing edge to the planting
and containing the plants with edges.
Hedges separate areas, bringing
definition and lots of structure.
A hedge provides a textured, but
uniform green backdrop, fulfilling
what hard landscaping does in
design terms, without being hard
in the slightest. The wind-break job they do is far more
effective than a fence or wall too, because the wind is
slowed down by a hedge, not stopped in its tracks – where
it’s left with no option but to go up and over and then
create turbulence in the borders on the other side.
Choose a hedge to suit your garden. The clipped
formality of a yew, beech or box hedge is used to good
effect in formal gardens, whereas a more relaxed, informal
line of shrubs or hedging plants such as a flowering
Above left: Melianthus major is a surprisingly hardy exotic architectural anchor plant
Above right: Phlomis russelliana is a herbaceous structural plant
135 surrey-homes.co.uk
Garden
Rosa rugosa, Choisya ternata, or Escallonia will give a
structural backdrop and some seasonal interest.
Hedges can take time to establish, it’s true, but
after a couple of years most hedging plants grow
away really well. Depending on the species, they will
need regular pruning to keep them looking tidy.
Focal points
Focal points act as anchors, pinning down the wavering
and the blousy, providing a resting point for the eye
and drawing you further into the garden or border.
Too many, or ill-placed focal points have a jarring
effect, detracting from one another. It’s the same with a
beautiful view. Use plants to lead the eye toward it and
then frame the view, not obstruct or compete with it.
There are some structural plants that just won’t stand
in a line, in fact they won’t be told what to do at all
and need to be the centre of attention all the time.
Putting a horticultural exclamation mark, like a Yucca
or a Phormium, into the shadows, or tucking it at the
back of the border will make you both uncomfortable,
they need the limelight, with the emphasis on light.
Use architectural plants sparingly too. Planting another
attention seeker too close will cause a fight. Focal points work
best either on their own, or among less defined shapes that
will provide a foil or a background for the showier plant.
Rhythm and punctuation
A focal point that attracts attention, but in a calmer way,
will bring useful contrast and punctuation within the
border. This works effectively in the winter, but also at
other times of the year too. A neatly clipped box ball or
other small-leaved dense evergreen (even a stone ball or an
ornament) will act like an anchor and bring order to the
space, and if you use more than one, will set up a rhythm.
If you haven’t the time or patience for clipping box
(I love it – do it in early summer when the birds are
singing and your freshly sharpened shears are gently clipclipping,
it’s a Zen activity), there are plenty of naturally
Above: Yew topiary focal points at Great Dixter
Above: Phormiums provide striking border structure
neat evergreens that will do the job almost as well.
Low-growing Hebes like H. ‘Red Edge’ or
H. ‘Sutherlandii’ will sit like dense little puddings in the
borders, unchanging all year. They hold their shape well,
quietly expanding over the years into large low domes.
Slightly taller, but slow growing, Viburnum davidii is
a wonderful plant - one of my absolute favourites. It has
large, deep green, slightly ribbed leaves that are glossy and
handsome. It is well mannered and slowly grows into a tidy
domed shape all by itself - no pruning needed. If the Hebes
are puddings, Viburnum davidii is the queen of puddings.
Many really useful structural plants get completely
overlooked in favour of glamorous show-offs because
they’re not spectacular in any way; their job is to provide
the wind beneath the wings of the divas and the spineless.
I’m always trying to champion these overlooked
and unsung stalwarts – they are often found in
supermarket plantings, where they are badly treated
and end up as amorphous lumps and weird cubes.
The reason they were chosen for such places is because
they are so good natured; putting up with poor soil, used
to being hacked at, driven into and swamped with exhaust
fumes. Allowed to show their natural beauty in the balmy
garden borders they come into their own and reward

I’m particularly fond of Cotoneaster horizontalis.
Its stiff herringbone stems will spread slowly up
walls, or into arching mounds if gently encouraged
and will reward you - and the birds and bees with
blossom, berries and brilliant autumn colour.
Then there’s Photinia ‘Red Robin’, which has become
ubiquitous and can be a bit boring if left to its own devices
or wrongly pruned. It is evergreen, but given a bit of care,
will warm the garden in early spring by putting forth
glamorously shiny, bright red leaves. Mahonia is another
handsome evergreen with leathery, mildly aggressive
foliage and spectacular, highly scented flowers that bloom
like spikes of sunshine in the darkest of winter days.
Plants need to pull their weight in the border and there
should be no space for slackers. Structural plants are strong
and reliable, lynch pins, carrying the border through the
seasons and linking one part of the garden to another. All the
other plants will be relying on them. Keep them well tended,
fed and healthy and they will reward you for many years.

Education
Kids behaving badly
Hilary Wilce considers the tricky subject of challenging bad behaviour
What should schools do with badly behaved pupils?
There is a lot of argument about this in education
circles at the moment after recent figures showed that
the number of pupils being permanently excluded from schools –
what we used to call ‘being expelled’ – is rising sharply.
In the school year 2016/17 about 1,000 more pupils were
excluded than the previous year, bringing the total to 7,700,
which is 40 a day.
But are schools right simply to boot troublesome students off
the premises? Or is it their duty to try and educate all their pupils
– perhaps especially those troubled
and angry students who need their
help most?
It’s a difficult question and getting
more so. Many teachers find children
harder to handle than in the past.
Today’s pupils aren’t meek and quiet.
They don’t have an automatic respect
for authority and expect teachers to earn their respect. They have
shorter attention spans than in the past and a lot are wound up,
anxious and on very short temper fuses.
When you add in additional stress factors, like dysfunctional
family backgrounds, or educational special needs you can have a
ticking time bomb of bad behaviour.
Parents might well think that excluding disruptive pupils is
right. Turf the little blighters out! But there’s more to it than
meets the eye. Schools compete with each other and their
popularity – and therefore funding – depends on having a good
reputation for behaviour and exam results. So it’s very tempting
to ‘off-roll’ pupils at the first sign of trouble. Moreover, austerity
has squeezed the resources for handling difficult pupils, which
means excluded kids may well end up getting no support or
“Children need what we all
need, to be cared for, seen,
heard and respected, but they
also need rules and boundaries”
education.
Even leaving aside the moral question of whether we want to be
the kind of society that simply gives up on children because they
don’t fit the mould, the consequences of that are likely to be bad
for us all. There’s a very close link, for example, between school
exclusions and knife crime.
Yet there are schools that have been able to bring exclusions
down by enforcing firm behaviour boundaries, bringing in carefully
targeted interventions and support, and always nipping trouble in
the bud.
And in this, there are lessons for
us all. Even if our children aren’t
violently disruptive in school, they
may well be part of the sizeable
minority of pupils whose shouty,
impulsive and disorganized way of
carrying on leaches away at classroom
time because it means teachers have
to try, try and try again before they can embark on a lesson.
That sort of behaviour can wear us down at home, too, leaving
families in an endless cycle of nagging, threats and sanctions. So
how do you manage a child’s behaviour effectively?
The principles are simple. Children need what we all need: to
be cared for, seen, heard and respected. They like to have things
explained to them. They like to contribute their views. But they
also need rules and boundaries – it’s what makes them feel safe and
secure – and they need to know that these rules are there for a good
reason, and there will be consequences if they flout them.
However, simple doesn’t mean easy. Parents, like teachers, have
to be the grown ups. They have to be kind, but consistent. And
if a behaviour issue has to be revisited dozens of times before it’s
resolved, then they somehow have to find the patience to do it.

camps
Out of term time, children can
learn different skills, make new
friends – and have loads of fun
at specialist school camps
Wellington Riding
Wellington Riding is one of the leading equestrian
centres in the UK, attracting riders from the UK
and internationally. In addition to the show centre,
professional training, riding school and livery yards
they also host residential and non-residential Junior
Holidays for children from age seven to 16.
The Junior Holidays give young riders
the experience of owning their own pony
for a week, or they can bring their pony
with them to a stable at the centre.
The children spend the days involved in every
aspect of horse care from catching the ponies in
the morning to feeding, grooming, tacking up
and having interactive learning sessions, as well
as three hours of tailored riding tuition daily.
On two of the evenings there are exciting trips
off site with a choice of activities. The highlight of
the week is Friday’s show day, when the ponies get
pampered, plaited and glittered up to show off all
their new skills with parents and families invited to
watch, followed by an awards ceremony recognising
each child’s special achievement throughout the week.

TASIS The American
School in England
Each year, the TASIS England Summer Programs welcome
young people from all over the world to its beautiful
Surrey campus. Whether pursuing an area of special
interest, rounding out their CV for university applications,
or simply participating in an exciting holiday they will
remember forever, students benefit from a truly international
experience as they study, share activities and form lifelong
friendships with other young people from many nations.
Both residential and day places are available. Students
(rising-13 to 17) choose from an exciting range of threeweek
enrichment courses, while those aged 10 to12 join the
Reading Adventures, Earth Discovery, and Leadership course.
The courses are taught in small groups with a maximum of
16 in each. The wide variety of enrichment classes includes:
Debate and Leadership Skills, Fashion and Textile Design,
International Business, Drawing and 3-D Design, STEM,
Television Production, London Through a Lens, and English
Literature as Movies. A written report
and attendance certificate is provided
at the end of each three-week course.
All students also take a second
elective course with options
including studio art, theatre
performance, graphic design,
introduction to robotics,
dance, and beginners French.
Finally, a wide variety of afternoon sports, both on our
46-acre campus and off-site, ensures everyone is active and
engaged throughout each day. Students can choose one
sport or get a “taster” by changing from week to week.
Two sessions are offered: 24 June to
13 July or 15 July to 3 August.

St Catherine’s, Bramley
The Summer Lacrosse Camp at St Catherine’s, Bramley
is designed to offer expert coaching to girls of all abilities,
benefiting both novices and experienced players. It offers
an opportunity to try new ideas, strategies and, for
many girls, a completely new sport. Girls appreciate the
chance to make new friends and often end up playing on
teams together on school teams or even at university.
Expert coaching improves skills in lacrosse, but also
translates into other sports where agility, resilience and
team-spirit are important. For some, lacrosse is a brand-new
sport, making the St Catherine’s lacrosse camp a perfect
introduction to the game. Some of our coaches are England
players, so girls will meet future role models. Above all,
they enjoy themselves and there is always lots of laughter.
The girls get lots of fresh air and exercise – and a
perfect opportunity to put away those mobile phones
and enjoy some real human to human interaction!
“Our daughter did the lacrosse camp just as she was moving
from prep to senior school. She loved the camaraderie and
experiencing being part of a team built from scratch. It was
very exciting for her – a new sport and a new environment
made for a really smooth start to senior school.”

Do your children have
questions about Brexit?
Brexit news is everywhere and children pick up on it,
often without being given the context or background to
fully understand. First News is an unbiased resource for
inquiring young minds, we believe that children should
be given enough information to understand the whole
picture and form their own opinions.
We asked our readers to send in any questions they may
have about Brexit and thought Surrey Homes readers
might like to know the sorts of things young people are
wondering about Brexit:
Will I still have to learn French if we leave the EU?
It takes a long time for school curriculums to be
changed, so yes, probably!
Can we still go on holiday to France this summer if
there’s no deal?
Yes, although there are some worries that flights could
be cancelled and that people driving to Europe will
need to apply for various permits to make their trip legal.
Do we need to be really careful about not upsetting
Ireland, because of all the IRA bombings in history.
Would they start bombing again?
Memories of violence in Ireland are still very strong,
so this is the reason why all MPs want solid guarantees
that there won’t be a hard border and that the
backstop is only temporary. That should mean bombings
won’t become a problem.”

because it’s simply the best for acting, dancing,

And crucially, this exciting school is equally successful
academically. In fact, it’s statistically one of the top
co-ed boarding schools in the UK.
So, if you’re looking for a really exciting and rewarding

Fables from

Spring is on its way, the hens are broody and the
rams are wearing a rather odd contraption…
I
know it can be cold and wet in March but whatever
the weather, spring is on its way and there are plenty of
reasons for spirits to rise.
Since the winter solstice in December (when the night time
hours were at their longest) daylight hours have been staging
a comeback to the point where on March 20th they will be
equal, which not surprisingly is termed the spring equinox.
But interestingly, if plotted on a graph the daily increase in
daylight is not a straight line. It starts with a few seconds each
day in early January but by the time we get to March it’s over
two minutes a day and really noticeable. And then of course
at the end of the month the clocks go forward and all we
outdoor lovers will be back in business.
We’ll start lambing in the middle of the month. When
the rams went in with the ewes in October they each wore a
harness, called a raddle, which holds a wax crayon between
their front legs. So when they jump on a ewe to mate they
leave a big waxy mark on her rump and by changing the
colour of the crayon every couple of weeks
we know the order in which they’ll lamb.
In January we had them all scanned to see
if they were having a single lamb, twins or
triplets. Marked accordingly we now know
when they’ll lamb and what they’ll produce
– vital information for all sorts of reasons.
Seventy per cent of foetal growth happens
in the last six weeks of pregnancy and
feeding them the right amount during this
time is important. So we split off anyone who is having twins,
triplets and feed them extra grub. The girls with singles don’t
get any treats as the last thing we need is huge single lambs
Chicks hatch after 21
days of egg sitting
“With spring on
its way a hen, for
reasons no one quite
understands, can
decide to go broody”
that are too big to deliver comfortably.
The hens are also contemplating motherhood. They stop
laying eggs when the weather turns in late autumn, but with
the days becoming longer we’re back in production. As long
as they have the services of a cockerel – and we have the everobliging
Phil – a fertilised egg can become
a chick at any time for up to a month. But
this will only start to happen if the egg is
kept constantly warm.
With spring on its way a hen, for reasons
no one quite understands, can decide to
go broody. Her hormones go haywire, her
temperature rises, she plucks the feathers
from her breast and sits tight on whatever
eggs she can find to start the incubation.
For three weeks the eggs are kept warm. The removal of
the feathers to expose skin keeps the temperature up and she
constantly revolves them under her to make sure they are
evenly warmed. 21 days later with a cheep cheep cheep, the
chicks emerge – a real harbinger of spring.
And then there’s the greenhouse, and as I start sowing in
earnest I have made a few resolutions for the year ahead.
1 I won’t try to plant out all the seeds I germinate. Do I
really need twenty Brussel sprout plants?
2 I won’t be buying any F1 hybrid seeds, the bees can’t
collect pollen from them and I can’t collect their seed for
future use.
And 3 It has never been successful so I won’t try and grow
aubergines from seed again. Last year I spent £10 on threegrafted
aubergine plants and it was like being in Greece, we
were overwhelmed with them. Moussaka anyone?
