Target Market / Opportunity On the whole the Hawk serves its target market in most aspects. However I feel with several adjustments; some overnight and some long term, we can build the popularity of the business and increase yearly turnover. Opportunity Smarter objective Sales Growth Military / Business meeting breakfasts - Offer the army reservations a full breakfast buffet with a set price per head inclusive off coffee and tea. Delivering food in chafing trays to the table. - By doing this I would hope to see an increase in customer satisfaction as currently I know a number of regular guests feel the breakfasts are not good value for money. I feel offering this would help increase the amount of breakfast bookings we have between 8am and 10.30am. - I would hope to achieve this plan by contacting all of the regular army HQ & Corporate customers making them aware of this new offering. On average we currently have around 1 - 2 breakfast bookings. Most of which is army HQ and usually for around 10 people. This usually averages £12.50 per person. If we were to offer this ‘help yourself’ freshly cooked buffet with unlimited tea and coffee at £15 PP I think within a matter of months we could see our breakfast trade increase averaging around £600 - £1000 a month additional revenue. Local shoot & fishing parties - As a business surrounded by shoot parties and local fishing grounds, I feel this is definitely an avenue we have not yet capitalised. - I would look at contacting all of the local businesses offering them either a set 3 course menu for larger parties or even a regular discount offer on food & drink. - This could even extend as far as room rates, pushing the hotel for anyone on a shooting break. As this is seasonal growth it is difficult to currently measure. But from previous experience, I feel we could obtain at least one large shooting group a week throughout the season. Averaging £25.00 - £30.00 per person on food alone. Take away - This is something we would look to offer for collection only. As there are only a couple of restaurants that deliver to Amport and Monxton, I feel this could offer would be well received. - To achieve this we could look at purchasing a pizza oven, another counter-top fryer and other kitchen equipment to help relieve pressure on the kitchen during busy periods. - To ensure all of the neighbouring villages are aware of this offering we can push all aspects of social media and look to include this and a copy menu in our monthly newsletter. Given the number of residents within Monxton and Amport with families and also elderly residents I feel we could be averaging 50 – 70 covers extra a week with the right pricing point and offering. On average most families will spend £30 - £40 on takeaways. Working off this basis and the average spend being £10.00 pp it would be another £500 - £700 a week. Wakes, Baby showers & Birthdays - Currently we offer, on request, a buffet menu which has seen food takings reach £1500 - £2000. - With this being such a high revenue for very little work we would look to push this frequently on all social media platforms & local advertising portals. - If we were able to secure at least one large function a month this could see a further £24,000 annual revenue.
Private dining room/ extra restaurant capacity / Meeting room upgrade - Currently the PDR is being used on occasion for corporate meetings which currently we do not charge a usage fee for. When this is booked we gain revenue from breakfast and lunch orders and use of tea and coffee facilities. We would like to push this to all local business for a package day hire. - Located behind the private dining room there is storage space which measures around 12ft x 6ft. The condition of this is very poor and not really used for anything other than a dumping ground. - We could propose extending the private dining room into this space to maximise the size of the room as well as upgrading the tech to a higher standard. - In turn this would help attract local businesses to use the space. As well as this, the space could be used for private events or even increase restaurant capacity for evening diners. - With brief research, meeting rooms in the local area hire for around £200 - £300 a day. With food on top this could be a great way of increasing the daily breakfast and lunch turnover. - As well as this the additional space will give us room to increase covers. Patio and garden area - We would like to develop the garden area to attract more summer trade from Andover and the surrounding areas. We feel adding the following would help with keeping custom for a longer period of time, allow us to use our own fresh produce and most importantly increase turnover. - Build an outside bar / kitchen area & Pizza oven. - Build a communal herb and veg garden & poly tunnel. Inviting the local to community to pick and put back and also allow us to boast our own fresh seasonal produce. - Raising and keeping pigs and chickens could be a huge draw for families in the summer months. As well as usage of fresh eggs and reared pigs which could then be sent to slaughter and used on the menu. - Exact increases in turnover are difficult to predict. But by allowing space for all of this I guarantee it would increase the popularity of the pub with locals and guests. - As we know, the local council would be the hardest to win around. However I do believe with the positive relationship I have with locals it is something we could definitely gain their approval for. Monthly Newsletter - We feel by organising a monthly newsletter to be posted to all of the residents of Amport, Monxton and local businesses will help increase the presence of the business. - This could be a massive contributor to reminding people we are here and also obtaining new custom. - Would be a great way to help build awareness of events such as pub quiz’s, special nights, beer festivals etc. As well as this it would give a great opportunity to offer fun and precise information, new menu changes, take away. In turn helping with the overall push on social media, events and revenue.
