Two Years Before the Mast
by Richard Henry Dana Jr.
Two Years Before the Mast is a memoir
by the American author Richard Henry
Dana Jr., published in 1840, having been
written after a two-year sea voyage from
Boston to California on a merchant ship
starting in 1834. A film adaptation under the
same name was released in 1946.
While an undergraduate at Harvard College,
Dana had an attack of the measles which
affected his vision. Thinking it might help
his sight, Dana left Harvard to enlist as a
common sailor on a voyage around Cape
Horn on the brig Pilgrim. He returned to
Massachusetts two years later, aboard the
Alert (which left California sooner than the
Pilgrim).
He kept a diary throughout the voyage,
and, after returning, he wrote a recognized
American classic, Two Years Before the
Mast, published in 1840. The term “before
the mast” refers to the quarters of the common
sailors, in the forecastle, in the front of
the ship. His writing evidences his later sympathy with the lower classes. He later
became a prominent anti-slavery activist and helped found the Free Soil Party.
HEARING AID
TECHNOLOGY
“I was amazed!
Sounds I hadn’t
heard in years
came back to me!”
— Don W., Sherman, TX
How can a hearing aid that costs less than $ 200
be every bit as good as one that sells for $2,250 or more?
The answer: Although tremendous strides have been made in
Advanced Hearing Aid Technology, those cost reductions have
not been passed on to you. Until now...
MDHearingAid ® uses the same kind of Advanced Hearing Aid Technology incorporated into
hearing aids that cost thousands more at a small fraction of the price.
Over 300,000 satisfied MDHearingAid customers agree: High-quality, FDA-registered hearing
aids don’t have to cost a fortune. The fact is, you don’t need to spend thousands for a
hearing aid. MDHearingAid is a medical-grade hearing aid offering sophistication and high
performance, and works right out of the box with no time-consuming “adjustment”
appointments. You can contact a licensed hearing specialist conveniently online or by phone
— even after your purchase at no cost. No other company provides such extensive support.
Now that you know...why pay more?
Can a Hearing Aid Delay or Prevent Alzheimer’s and Dementia?
A study by the National Institute on Aging suggests older individuals with
hearing loss are significantly more likely to develop Alzheimer’s and
dementia over time than those who retain their hearing. They suggest that
an intervention — such as a hearing aid — could delay or prevent this by
improving hearing!
TAKE ADVANTAGE OF OUR 45-DAY RISK-FREE TRIAL!
Hearing is believing and we invite you to try this nearly invisible hearing aid with no annoying whistling
or background noise for yourself. If you are not completely satisfi ed with your MDHearingAid, return it
within 45 days for a FULL REFUND.
Chowanoke Indian History
By Duvonya Chavis
March 2019
LOCAL HISTORY 5
In previous articles, I began to shift focus towards
dispelling the notion that at the time of European
contact, American Indians were primarily nomadic
hunter- gatherers, having no concept of what property
rights or civilized economic societies were. This
concept has consistently been applied to Indians for
a couple of hundred years either verbally or written in
various history books and legal texts and yet, nothing
could be farther from the truth. Prior to colonial
contact, Indians were primarily reliant on agriculture
where 65 percent of their diet was derived from corn,
beans, squash, grains and other agricultural products.
Even “nomadic” Indians, as they were later called by
colonists, observed property boundaries and rights as
they would move to the same identical location year
after year to take advantage of seasonal harvests
such as salmon runs, buffalo migrations and harvesting
of various crops. They would then return back to
their home once finished. Consequently, Indians did
not just frolic in the woods trying to find sources of
food in order to sustain their existence. This would
have been an impossible achievement for survival
anyway when one considers the overall population of
Indians living in this country and in various communities
during that time. Many tribal communities were
much larger and required far more social structure
and order than many European countries of the time.
Thus, Indians managed their lands by burning forests
for specific purposes, clearing land for deer and buffalo,
building irrigation systems, and domesticating
wild plants. From the east coast to the west coast,
there were several Indian communities where social
order was displayed through examples such as the
building of irrigation canals over 2000 years ago in the
mid to southwestern part of what is now the United
States, the building of hundreds of miles of roads
that were 30 feet wide used to connect Indian communities,
the building of large earth mounds for burial
or ceremonial purposes, assigning private plots of
land by tribes to individual Indian families for housing
and for maintaining private gardens as evidenced
by European observations of various tribes living in
Northeast North Carolina, and the farming of individual
plots by the Creek and the Cherokee who harvested
and stored their crops in privately owned storehouses.
I will note here that the largest earthwork in the world
and even larger than the Great Pyramid in Egypt is
located in the eastern part of the United States where
the Cahokia community constructed a mound that was
30 meters tall and 316 by 240 meters at its base covering
14 acres. While tribal lands were owned by the
tribes themselves, there are many examples where
individual land property rights were observed and
were not communally shared. In addition, many other
assets were privately owned by the Indians and were
not considered communal property at all.
Indians also engaged in entrepreneurship and Indian
communities acquired and accumulated material
goods and respected and understood property boundaries.
Trade routes were established that allowed
individuals or tribes to engage in a free market to
sell or barter their goods and many Indians traveled
great distances to participate in these. It is also a little
known fact that today the dollar bill is often referred
to as a “buck” because Indians in the Mississippi
Valley used deerskin as currency in the 1700’s. Later
articles will expound more on the social and economic
practices of various Indian communities precolonial
contact.
Duvonya, a Chowanoke Indian descendant, is
President of Roanoke-Chowan Native American Association,
a non-profit organization whose mission
is to help American Indians in Northeastern NC and
Southeastern VA. She currently sits on the council
of the Chowanoke Tribe. In partnership with another
Chowanoke descendant, she is currently developing
Chowanoke Reservation for tribal descendants
to gather and hold cultural events.
FOOD
Chipped Beef on Toast
Some of the best meals are the easiest to
prepare. Grandma Swain would fix this for
the boys and they always loved it. Sometimes
instead of toast, she would substitute her
homemade biscuits.
Grandma Swains
Recipes
Ingredients:
4 tablespoons (½ stick) butter, lard or
bacon grease
4 tablespoons flour
2 cups milk
2 packages (2.5 ounces each) dried
beef
Toast
Preparation:
Make a cream sauce by melting the butter and adding
the flour. Cook until slightly browned. Add milk
slowly, stirring so that no lumps are formed. Chop
beef fine and add to sauce. Serve over toast.
UNLIMITED REINVENTED
OPINION 7
It is fairly common to see messages on social
media asking who teaches concealed
carry classes, or when the “next” one is. Such
a question implies that the questioner already
has some familiarity with firearms, and just
wants to get the paperwork out of the way. To
often, the questioner is overlooking major aspects
of concealed carry that a good instructor
can address. The real question should be,
“Who is the BEST instructor?”
Carrying concealed does not eliminate a possible
threat. It simply gives you another option
to deal with it. Unfortunately, that option can
have deadly consequences. You should not
change your behavior just because you are
carrying. If your common sense tells you not
to go down a dark alley unarmed, why would
you do so armed? If you pull into a gas station
where a bunch of unsavory troublemakers
are hanging out, your normal reaction would
be to go elsewhere. That should not change
just because you are armed. In the eyes of a
jury, you may very well have to prove that you
actively tried to avoid trouble, but it was forced
upon you, and use of deadly force was the
only way out. Speaking of options, you should
have defensive skills other than pulling a
trigger. A self-defense class, pepper spray or
other non-lethal methods of defense can give
you more options to avoid using the firearm,
and options should you be separated from it.
Carrying concealed involves entirely different
circumstances than does the controlled
setting of hunting or target shooting where
the weapon is often not even loaded until you
are in position and ready to fire. Carrying
concealed means carrying, transporting and
storing a loaded weapon capable of discharging
and killing someone just by mishandling.
Consideration must be given to accessibility,
mode of transport, and security of storage. Is
the weapon to be stored loaded? If so, what
safeguards are in place to prevent unauthorized
access by children and others?
Carrying concealed involves knowing when
to unholster the weapon, often in a public
place, where even the presence of a weapon
can cause a panic. The “when” is a product of
applying the law to the particular facts of the
Joe Forbes is a lawyer based in Elizabeth City, NC.
He is passionate about our second amendment
rights and writes articles on gun law.
situation. If you are not absolutely sure of the
law, how can you apply it correctly, especially
given the potentially deadly consequences of
your actions?
Carrying concealed involves being very
conscious of what lies beyond your attacker,
even more so than in a hunting situation,
because use of the weapon may very well
be in a densely populated setting, with lots of
potential victims down range should you miss.
And the potential line of fire is 360 degrees,
not down a confined shooting lane. You
must know who is nearby and where they are
before you can take steps to avoid injuring
them. Remembering to constantly be aware
of who is around you and what they are doing
is a good first step to painting the scene in
your mind.
Carrying concealed involves not just familiarity
with the weapon but proficiency with it.
Proficiency requires lots of training and practice.
That’s the reason police and military train
all the time. A hyper-stressful situation on the
street where your life is being threatened is
not the time or place to try to recall how to get
the safety off, or what the sight picture should
look like, or how to clear a jam.
With these things in mind, you should demand
a ccw instructor who teaches above and
beyond the statutory requirements to get the
permit. Does he offer/endorse other methods
of self-defense, including the concept of using
force only to the level necessary to meet the
threat? Does he offer training/advice on carrying,
transporting and storing the weapon?
Does he make the law absolutely clear so
that you fully understand it? Does he instruct
you on shooting positions to minimize risk to
bystanders? Does he offer and encourage
recurrent training? If not, you should consider
another instructor.
Comments or suggestions?
How AI is making our lives easier
(BPT) - From the earliest stone tools to today’s super
computers, technology has always promised to make
our lives easier. Even as it adds complexity to our world,
it offers new, simpler ways of accomplishing our daily
activities. Now, advances in artificial intelligence (AI) look
to take things one step further by using machine learning
to drive innovation.
With AI dominating much of the news cycle coming out
of the 2019 Consumer Electronics Show (CES) in Las
Vegas, these are the best AI-powered devices available
today that are already making our daily lives easier and
opening up new possibilities in the quest to make life
good.
Higher quality photos
Whether you’re snapping a selfie to share with friends
or capturing one of life’s big moments, photo quality is
crucial. It used to be the only way to make photos better
was to use a better lens. But now AI can also play a role
in producing amazing photos.
The LG V40 ThinQ features five individual cameras,
allowing you to capture more unique images of the moments
that matter most. But what sets the V40 ThinQ
further apart is the AI-powered camera that recognizes
what you’re shooting and suggests the best filter. For
content creators and anyone else who loves high-quality
images, AI is poised to reshape the way we see the
world.
Better voice recognition
It seems like voice recognition is everywhere these days.
From your smartphone to your coffee pot, you can take
control of many of these devices you use every day with
just one word. Up to this point, voice recognition has
been limited to simple commands with little room for
variation. But AI is now making voice recognition technology
more intuitive to bring better functionality to our
favorite devices.
For example, LG’s OLED 4K TVs are now equipped
with powerful voice recognition features that allow you
to speak naturally when controlling your smart TV for
the ultimate viewing experience. With built-in Google Assistant,
Amazon Alexa capabilities and LG’s ThinQ deep
learning AI technology, the voice agent is more intelligent,
simpler and easier to use. Whether you’re ordering
food, searching YouTube or checking the weather, AI is
making it easier to access the tools and media we love.
Advanced AI customer service
Nobody likes calling customer support. But if you have
to, you want answers and you want them quickly. Unfortunately,
many of us are all too familiar with those robotic
messaging services that never seem to understand what
you’re saying. It can feel like you’re talking to a brick
wall. But what choice do you have when the only other
option is waiting indefinitely for a live representative?
Thankfully, those days are now a thing of the past. LG’s
ProActive Customer Care uses AI technology to immediately
alert LG smart appliance owners to potential
problems before they even occur, expedite repairs when
needed and offer useful maintenance tips to keep appliances
performing their best. The first-of-its-kind customer
support initiative is designed to improve product
performance, extend product longevity, solve issues
faster and ultimately save LG product owners time and
money.
In addition to the convenience of
immediately receiving product alerts
about performance issues, or reminders
to order more of your favorite
detergent, you can remotely control
LG smart appliances via the LG
SmartThinQ(R) mobile app or voice
commands, using Amazon Alexa and
the Google Assistant. Remote access
makes it easier and more efficient to
handle tasks like starting and stopping
LG washers and dryers and telling LG refrigerators
to make more ice when you’re on the go.
We are only at the cusp of harnessing the true power of
AI technology. But if current developments are any indication,
AI looks to be a revolutionary force making our
lives easier for years to come.
smart devices, please visit LG.com.
On Friday, March 22, the Roanoke River Maritime
Museum with host their annual “Fishy Tales,”
an evening celebrated stories of to the region’s vast
waterways. Of course, Fried herring or trout with all the
fixens served the old way to highlight the delicacy.
Local story tellers will reveal the culture and laughter
of those traveled along the creeks and rivers during
the run. For folks who are new to events like this, some
stories may be true, many though will follow the water
induced imagination of the story teller and may have a
few untruths.
The North Carolina Wildlife will have a special presentation:
“The history/future of stripped bass on the
Roanoke.”
Perhaps no other sporting event locally is remembered
as fondly as the Herring Run each spring. As the
waterways warned and fed into the Atlantic, millions of
the fish would migrate into the wetlands and tributaries
to spawn.
Fisheries lined the banks of the Albemarle Sound,
Roanoke River and regional waterways creating a
bustling industry tied to the natural gifts of nature. Along
with the commercial fisheries, locals took advantage of
the “Run” using dip or drop nets to catch a mess.
The evening promises to be a time of shared stories
that will entertain while remembering the days-gone-by,
with laughter and sincere appreciation of nature.
Tickets are $20.00 and available by calling the Roanoke
The evening will start at 6:00 PM. The museum is
located in downtown Plymouth, 206 West Water Street
across from The Roanoke River Lighthouse. The will be
special displays and music for the evening.
Running of the Shad
By: Coy Domecq
We in this area are incredibly fortunate to have close proximity
to one of the region’s biological wonders, the shad spawning
migration. The spawning movement, also known more locally as a
“run”, is one of the first animal indicators of spring.
NATURE 11
Baked Shad glazed with Dijon
Mustard, Capers and Dill
Ingredients:
1 shad fillet
1 tbsp butter
½ fresh lemon
1 tbsp Dijon mustard
¼ cup fish stock, white wine or water
1 tsp capers
pinch of fresh dill
Directions:
Lightly season shad fillet.
Place in moderately hot non-reactive skillet
with touch of butter.
Transfer to 375°F oven. Bake about 3
minutes until shad is halfway done.
Glaze lightly with Dijon mustard.
Squeeze lemon over the shad. Add
splash of white wine, fish stock or
water(about 1 fl. oz).
Continue to bake 2 – 3 minutes until shad
is almost cooked.
Carefully remove the shad to the plate.
Swirl 1 tsp butter into pan juices, then add
capers and fresh dill.
Spoon butter sauce over the shad.
Serve with your favorite green vegetable,
such as broccoli or green beans and
mashed potatoes.
The shad, both American and hickory varieties, spawn in our
rivers and migrate as fry to the Atlantic Ocean where they attain
reproductive age. In early spring, typically around the middle of
February in this area, the mature shad return to their home waters
to lay their eggs. This mass movement of fish brings out all ilk of
fishers. Birds, predatory fish and humans stock up on this oily,
nutrient-dense fish. Local areas known to draw human anglers are
the Cashie River in Windsor, NC and up and down the Roanoke
River. The spring shad run is well documented as a Revolutionary
War-era major dietary spring event that even made troop movements
possible, or impossible, as an army travels on its stomach.
Barrels of the salted fish were staged along marching routes to
sustain the soldiers.
An added bonus to the tasty fish flesh is the roe, or egg sacs, of
the pre-spawn females. The roe is regarded as the poor man’s
caviar and is a tasty as any treat you have ever eaten.
If you have an interest in the ways of the shad, I strongly recommend
the comprehensive account of this fish’s natural history and
close association with human diet and survival in the book, The
Founding Fish, by author John McPhee.
HOME
Home and Garden Improvements That Will Benefit Local Wildlife
(StatePoint) When it comes to changing the
world, your own backyard is a great place to start.
As you make home improvements, consider their
potential to benefit local wildlife that travel in and
around your property.
Here are a few important steps you can take.
Plant Native Species
By planning native species exclusively in your
garden and yard, you will be promoting a healthy
local ecosystem while providing proper nourishment
and a natural habitat for visiting wildlife,
whether that be insects, birds or furry creatures.
Because native plant species are meant to thrive
in your local climate, they will require less maintenance,
which means a beautiful yard with less
stress.
Prevent Bird Strikes
You may not realize it, but your home poses a
risk to birds. Window strikes are common among
many species of migrating birds, and millions of
wild birds are killed annually flying into windows.
However, a simple home improvement project
can make your home safer for birds. Birds can
see certain light frequencies that humans can’t,
so by applying UV decals and UV liquid to your
home’s windows and sliding glass doors, you can
make windows visible to birds in a way that won’t
obstruct your own view.
“Protecting birds adds beauty to your garden, is
good for the environment and most importantly,
saves lives,” says Spencer Schock, founder of
WindowAlert, a company that offers UV decals
and UV Liquid.
The UV decals and liquid from WindowAlert have
been proven to effectively alter the flight path of
birds to prevent window strikes. The coating will
look like etched glass to the human eye, but be
very visible to a bird. As UV reflectivity may fade
over time, it’s important to replace the decals and
liquid every four months. Application techniques
can be found by visiting WindowAlert.com.
Build a Bird house
Add beauty to your yard with a wooden bird
house. Find a design you love or get creative and
craft your own, using your own home’s architecture
for inspiration. A strategically placed bird
house -- either within three feet of a window or
over 30 feet away -- will help avoid bird strikes.
Be a good neighbor -- not just to the other humans.
Make improvements to your home that will
help protect both local and migratory wildlife.
Jean Baptiste Say on Why Property Rights
Are the Key to Prosperity By: Gary M. Galles
March 2019
ECONOMICS 13
Regulation and taxation have imposed constant
government assaults on Americans’ property rights,
eroding their ability to make their own choices. As James
Fenimore Cooper once put it, “There is getting to be so
much public right, that private right is overshadowed and
lost…danger exists that the ends of liberty will be forgotten.”
Given how much private property rights have been pared
away, we should return to first principles about those essential
underpinnings of voluntary relationships.
One of the very best sources is Jean Baptiste Say, the
foremost French political economist in the early 1800s. An
elaborator on Adam Smith’s The Wealth of Nations and
a vigorous defender of economic freedom, which arises
from the defense of private property rights, his Treatise on
Political Economy was highly influential and widely used as
a textbook.
Say’s Treatise chapter, “Of the right of property,” remains
among the wisest, though widely violated, insights into
property rights available today. And it is easily accessible.
In fact, the English translation of the 1819 fourth edition is
available as part of Liberty Fund’s “The Best of the Online
Library of Liberty” series. Especially for the bicentennial of
that seminal work, it merits renewed attention.
“The right of property…[is] the most powerful of all encouragements
to the multiplication of wealth.”
“The legal inviolability of property is obviously a mere
mockery…where possession is rendered perpetually
insecure, by the intricacy of legislative enactments, and
the subtleties of technical nicety. Nor can property be said
to exist, where it is not matter of reality as well as of right.
Then, and then only, can the sources of production…attain
their utmost degree of fecundity.”
“Who will…deny, that the certainty of enjoying the fruits of
one’s land, capital and labor, is the most powerful inducement
to render them productive? Or who is dull enough to
doubt, that no one knows so well as the proprietor how to
make the best use of his property? Yet how often in practice
is that inviolability of property disregarded…upon the
most flimsy pretexts?”
“The property a man has in his own industry is violated,
whenever he is forbidden the free exercise of his faculties
and talents, except insomuch as they would interfere with
the rights of third parties.”
“Sacred as the property in the faculties of industry is, it is
constantly infringed upon…What robber or despoiler could
commit a more atrocious act of invasion upon the public
security?”
“Nothing short of the necessity of defending [social] order
from manifest danger can authorize these or similar violations
of individual right.”
“Taxation…must be proved indispensable to the existence
of social order; every step it takes beyond these limits is
an actual spoliation; for taxation, even where levied by
national consent, is a violation of property.”
“The right of property implies the free disposition of one’s
own.”
“When public authority is not itself a spoliator, it procures
to the nation the greatest of all blessings, protection
from spoliation by others. Without this protection of each
individual by the united force of the whole community, it is
impossible to conceive any considerable development of
the productive powers of man, of land, and of capital.”
“The poor man…is equally interested with the rich in upholding
the inviolability of property. His personal services
would not be available, without the aid of accumulations
previously made and protected. Every obstruction to, or
dissipation of these accumulations, is a material injury to
his means of gaining a livelihood.”
“Civilized communities pursue and punish every invasion
of property as a crime …the happy effects, resulting from
the right of property, are more striking in proportion as that
right is well guarded by political institutions.”
As Larry Sechrest noted, J.B. Say was “precise and yet
as simple as possible, so that any literate, reasonably
intelligent person can comprehend his meaning.” However,
Americans have been governed by violators of those principles
because “agents of public authority…can enforce
error and absurdity at the point of the bayonet.” And the
results have been far worse than if we had followed his
understanding. As Say wrote:
Of all the means by which a government can stimulate
production, there is none so powerful as the perfect security
of person and property, especially from the aggressions
of arbitrary power. This security is itself a source of public
prosperity.
DOCTOR CRIME
Dr. Crime is a pseudonym for a social scientist holding a Ph.D. degree in sociology and in criminology.
He has worked in all major parts of the criminal justice system. Drop him a note at the
website www.keepkidshome.net if you or your child is in trouble, or you have custody issues, he
may be able to help, give him a call (252-339-0000).
Dear Dr. Crime: Is the recent widespread attention to
assaults on women an indication we should be concerned
about our daughters’ mental health. Both girls have times
they are so sad it makes me fearful? Lucy
Dear Lucy. If assault happens at all you should take
precautions. Research suggests there is reason to worry.
In January I wrote a response to a young girl about how
to respond to assault. I encourage you to read that just
in case. Your concerns are more about the depressed
feelings of girls, and you have touched an important area.
The Carolina Journal and the Psychological Bulletin reported
frightening statistics. Broad and scientifically strong
research has found that approaching half of teen age girls
are depressed. Boys have less than half of that number.
Social images of perfection expected of girls is evident in
many forms of media. Let your girls know you love them,
and that no one is perfect. For information on the disproportionate
rapes by gender, and how most sexual assaults
are unreported, see the National Sexual Violence Resource
Center. For ways to respond see the Fear 2 Freedom
project in Virginia.
Dear Dr. Crime: Are we seeing more hate in the world that
was previously true? Alarmed.
Dear Alarmed. YES ! The Southern Poverty Law Center
has reported research showing that hate groups have hit a
20 year high. The media was all over that and you can find
many references to it. We now have over a thousand different
hate groups, involving not just the KKK but Neo-Nazi
groups, Black Nationalist groups and others. The FBI reports
they found 7,775 hate related criminal events in 2017
and 6,121 in 2016. Hate must be better understood. Seen
the USA Today article of 2/20/2019 on this topic.
Dear Dr. Crime: My son is a student at __________ University.
His girlfriend tells him if she reports his “sexual behavior”
to the Dean they will have a formal trial on campus.
He will be publically questioned by the Dean for all to hear.
What is going on? That sounds like a criminal trial, not an
education process. Broke Parent
Dear Parent. I get your point, and yes, you pay a lot for
college. What the girlfriend described is covered by the
U.S. Department regulation Title IX, the gender equality
law. Under President Obama handling of sex allegations
was believed to be biased in favor of the accused. The
current Secretary of Education has proposed new rules so
it will be some time before we know the final rules. The
proposed rules would involve a live hearing with cross
examinations and a reduction in the types of cases school
would have to investigate.
SWAMPROOTS ~ A Timeless Gift
Who else is tired of WINTER with temperatures dipping
in the 20’s and a month and a half to go before spring
is officially here? When thinking about spring most folks
tend to look forward to warmer temps, green grass, early
blooms, starting the garden, and such. I like these things
as well, but to really know that winter is over there is one
thing I can count on and that is the arrival of the first Purple
Martins. It seems that the first martins show up in my area
about mid march or so to look for suitable nesting sites. My
wife and I have maintained a Martin house for almost 30
years (Purple Martins are the only bird in North America
east of the Rockies that totally depend on man-made housing).
Each year we take the house down and clean out the
old nesting material in preparation for the new and returning
arrivals. Once the birds arrive and take over the house,
the colony begins to build new nests to raise their chicks.
When the colony moves in and you hear the unmistakable
nonstop chirping that’s when you know spring is here. Usually
they have established themselves in the house by late
March to early April and you can enjoy them until late summer
(about early August) until they leave again, signaling
the coming of fall. It is such a joy to walk out in the yard and
watch the martin colony darting about as they feed and care
for their chicks. Martins are predators of the open sky and
eat any and all types of flying insects (not just mosquitoes
as some used to think). I would highly recommend putting a
great bird visitors to the eastern Carolina area. There is a
Give The Gift Of Delicious Coffee
March 2019
HOME
15
(NAPS)—Have you ever wondered what to buy a
friend and wished you could get them something
that they would enjoy every day? Everyone has at
least one friend who simply cannot live without their
coffee. If that friend uses a pod brewing system, they
are choosing convenience and speed but sacrificing
flavor and value. When they buy coffee pods, they
are paying about $40 per pound of coffee. A drip
coffee maker brews somewhat better-tasting coffee
but people probably waste half the coffee that they
brew. That is like doubling what you pay per pound of
coffee.
Better Taste, Less Waste
There are some great inexpensive devices for brewing
a wonderful single cup of coffee. Manual brewers,
many say, brew the best cup of coffee you can
make at home. With these brewers you can use your
favorite freshly roasted local coffee, and furthermore,
you don’t waste any. You brew only the number of
cups you want. With a brewer like the AeroPress
coffee maker you can brew a rich, delicious cup of
coffee with no bitterness in just a minute or two. The
process is simple, clean up is fast and easy, and the
grounds including the filter are compostable. Every
ounce of coffee you buy ends up in a cup you drink,
so none of your money goes down the drain.
It’s possible to brew café-quality coffee at home
without spending hundreds of dollars on a machine or
wasting half the coffee you brewed. Give the gift of a
manual brewing device to help your friends brew one
or two cups at a time using freshly roasted coffee,
and they’ll thank you for helping them get the most
out of every bag of coffee they buy. To learn more,
Health and Nutrition Strategies for
Cancer Survivors and Everybody Else
What’s in your diet?
As my readers are aware, my mission is to upgrade
food choices to mitigate the cancer disparity in this
region. In order for food to work as medicine, it has to
be clean, and supply the essential nutrients for optimum
health. I’ve focused on food to address the disparity, because
cancer researchers are looking at food, and food is
the most obvious environmental culprit in this region that
can be controlled. The problem is, the United State’s current
food policy is risk-based and not zero tolerant, and
that includes imports. There are numerous additives and
manufacturing practices that are permitted in commerce,
that are based on decades old regulations such as the
“Generally Regarded As Safe” (GRAS) list, and policies
that permit sub-therapeutic antibiotics and hormones in
meat and poultry products without identification. However,
government labeling policy permits a manufacturer to
identify what isn’t in a meat or poultry food product, such
as“no antibiotics or no added hormones”.
So, let’s go a little deeper into processed foods, particularly
cured products such as ham, cold cuts and sausage.
Most cured products are processed with sodium
nitrite, an additive that is required to be identified on the
labeling. Meats naturally contain amines, and readily
combines with nitrite to form carcinogenic nitrosamines.
Government regulations require that meats manufactured
in the U.S. must contain erythorbic acid or ascorbic acid
( antioxidants that mitigate the formation of nitrosamines).
As a cancer survivor, I’d be reluctant about imported,
because “Country of Origin” laws were rescinded.
Further, livestock, including poultry are exposed to
many of the maladies that humans are subject to, and
some. Their living conditions include unsanitary mutual
water sources, feed made from GM O’s, overcrowding,
parasites, poor sanitation, and exposure to the elements.
Consequently, livestock probably receive as many medications
as the average human. Those medications don’t
stop at slaughter and many can withstand heat treatment.
Human consumers may receive unnecessary arthritis
medication, sub-therapeutic antibiotics, hormones, arsenic,
and many more unlisted substances.
I think we need to take long hard look at organic meat
and poultry enterprises, as our major meat producers are
going to foreign interest.
Remember, let food be your medicine and support “The
Organic Capital Of The World”.
5 Foods for Gut Health
Keep Your Heart Healthy With These
5 Keto-Friendly Foods
March 2019
HEALTH 19
Kefir
Mangoes
Sauerkraut
(StatePoint) The low-carb, high-fat diet known as keto has
Americans looking at healthy food consumption in a whole
new light. Keto programs have proven effective for weight
loss, but how heart-healthy are they? As with all things,
moderation is key.
To get you started, the experts at South Beach Diet -- a
more accessible version of the keto diet – recommend
these five keto-friendly, heart-healthy foods:
1. Full-fat dairy: “Full-fat dairy is healthy,” says Dr. Arthur
Agatston, creator of the South Beach Diet. “For example,
you should be eating full-fat yogurt, not low-fat yogurt.”
With zero net carbs, items such as butter and cream are
rich in healthy fats. While large amounts are associated
with obesity and may cause heart disease, according to
many experts, the opposite is true when consumed in
moderation, as shown in studies published by the “European
Journal of Clinical Nutrition.” Stick to recommended
serving sizes of rich keto foods such as sour cream, cream
cheese and yogurt.
2. Eggs: Despite receiving a bad rap for high cholesterol
content, eggs are low in carbs and high in protein and
amino acids. And according to the Mayo Clinic, the effect
of egg consumption on blood cholesterol is minimal when
compared with the effect of trans fats and saturated fats,
and their high protein content helps stabilize blood sugar
levels. Egg whites contain no cholesterol and are high in
protein; while the yolk provides the majority of the egg’s
nutritional content. Eaten sensibly, eggs are both keto- and
heart-friendly.
3. Shrimp: Shrimp is a versatile superfood, high in protein
and contains more than 20 vitamins and minerals, including
selenium, which reduces inflammation and promotes
heart health. Seek out wild-caught shrimp to avoid antibiotics.
Frozen just after they’re caught, frozen shrimp is
usually a good bet, however, if you buy fresh, be sure the
shells don’t feel slimy or soft or have a fishy, ammonia-like
smell.
4. Flaxseeds: Flaxseeds are high in omega-3 fatty acids
and have been proven to lower the risk of heart attack and
heart disease. Flaxseed also contains 800 times more of a
cancer-fighting phytochemical called lignan than any other
food. For maximum nutritional benefits, choose ground
flaxseed and refrigerate for longevity. Try mixing it into olive
oil-based mayo or blending it into your favorite protein
shake.
5. Olive-oil or avocado-oil based mayonnaise: This oftenmaligned
condiment is high in heart-healthy, monounsaturated
fats, and is a keto staple with its zero grams of net
carbs.
“Look for varieties without added sugar, which just contributes
additional calories without any other nutritional
benefits,” says Courtney McCormick, manager, clinical
research and Nutrition at South Beach Diet.
“Phase one of the South Beach Diet has always been
keto-friendly. Get rid of all the white stuff -- white flour,
breads and pasta,” says Dr. Agatston. “Once you eliminate
them from your diet, your body starts burning fat, and you
will feel so much better.”
For more information on the South Beach Diet and its
keto-friendly options, visit www.southbeachdiet.com.
When adopting a keto-style diet, think beyond weight loss.
Be sure to include a range of foods that are great for heart
health.
