Let me start by saying thank you, <strong>Ramsey</strong>. I am grateful<br />
beyond measure that our first issue of <strong>Ramsey</strong> <strong>Neighbors</strong><br />
was embraced by you. I am thrilled by the excitement it<br />
generated and invigorated by the forward momentum.<br />
The review I heard over and over that meant the most<br />
to me: you are happy about the positivity we are putting<br />
into the universe. Our goal is to bring people together and highlight what<br />
is good in the community and right in the world. Who doesn’t need more<br />
of that these days?<br />
Speaking of highlighting what is good in our community, meet the Behrmann<br />
family. You think you know all the ways they contribute to our<br />
town? Think again. And what is right in the world? I’d like to introduce<br />
you to Second Lieutenant Sophie-Leigh Baxter-Clark, a graduate of<br />
<strong>Ramsey</strong> High School, stationed in South Korea. In her own words, she<br />
shares with us why she chose a life of service. Throughout the issue, you’ll<br />
get to meet more of the amazing people who keep <strong>Ramsey</strong> moving forward<br />
every day. It is their stories that <strong>Ramsey</strong> <strong>Neighbors</strong> is eager to share.<br />

The Behrmann Family:<br />
Love in Motion<br />
joined the fire department five years ago. Laura is a past<br />
president of <strong>Ramsey</strong> Ambulance and honorary member.<br />
She retired from actively riding on the ambulance about<br />
three years ago. She is also an administrative member<br />
and treasurer of <strong>Ramsey</strong> Rescue.<br />
What do you like most about being part of these<br />
organizations?<br />
Brian: All three organizations are wonderful to be a<br />
part of, each for various reasons. They have a lot of well<br />
trained, caring individuals, who dedicate their time to<br />
training and responding. It’s very rewarding to be able<br />
to help our neighbors when they need it most. I also find<br />
it very rewarding to share my knowledge and experiences<br />
with the younger members as they grow and progress<br />
through the organizations. What started out for me as<br />
continuing a family tradition has grown into a real love<br />
for each organization. It’s been an incredible way for me<br />
to give back to the community that has been good to me<br />
in so many ways.<br />
Laura, you are the president of the Board of<br />
Education. Tell us all about that.<br />
I was elected to the Board of Education 11 years ago<br />
when I was pregnant with our son, Connor. Another<br />
Board trustee approached me a year prior and suggested<br />
that I would be a good fit for the Board. I attended meetings<br />
for nearly a year before running myself. Almost two<br />
years ago, my colleagues elected me Board President. I<br />
am humbled and honored to serve our community in this<br />
capacity. I have had the opportunity to work and collaborate<br />
with some wonderful Trustees as well as a dedicated<br />
and innovative School Administration and Staff.<br />
What is the most interesting project you have worked<br />
on for the BOE?<br />
Laura: The Bond Referendum is the most interesting<br />

It is said that any great town is a sum of its best parts. <strong>Ramsey</strong> is a great community because of the<br />
people in it. Meet the Behrmann family. Laura and Brian’s passion for volunteering brought them<br />
together and ignited the spark that keeps them committed to making a difference every day.<br />
Tell us your <strong>Ramsey</strong> story. What brought you here?<br />
Brian: Well, I was born and raised here and never left!<br />
My parents also grew up here. My maternal grandparents<br />
owned Dixon Dairy Farm and Dixon Street is named after<br />
them. Our children are the 4th generation on both<br />
sides of my family to live in <strong>Ramsey</strong>. My grandfather,<br />
David Dixon, was a Charter Member of the <strong>Ramsey</strong> Ambulance<br />
Corps and my great-grandfather, James Dixon<br />
and my great uncle Eugene Dixon were Charter Members<br />
of the <strong>Ramsey</strong> Fire Department – so you can see my<br />
roots run deep!<br />
Laura, did you grow up here too?<br />
No, I grew up in Franklin Lakes but moved here in 1999.<br />
My parents were relocating to Florida and I was in the<br />
midst of law school at Seton Hall. I was looking for a<br />
community close by with a nice downtown area and easy<br />
access to the train line.<br />
How did you meet?<br />
Brian: You could say <strong>Ramsey</strong> brought us together. We<br />
met volunteering here. I have been a member of <strong>Ramsey</strong><br />
Ambulance and <strong>Ramsey</strong> Rescue since I was at <strong>Ramsey</strong><br />
High school.<br />
Laura had been a volunteer EMT in Franklin Lakes since<br />
she was a student at Ramapo High School and joined<br />
<strong>Ramsey</strong> Ambulance a few years after she moved to town.<br />
We met on a call, went out on our first date a few weeks<br />
later, got engaged 8 ½ months later on New Year’s Eve<br />
and were married 8 ½ months after that! It was a quick<br />
courtship, but all because of our passion for giving back<br />
to the community!<br />
That’s a great story! Are you still both still involved<br />
with Rescue and the Ambulance Corps?<br />
Brian: I have been Chief of both <strong>Ramsey</strong> Rescue and<br />
<strong>Ramsey</strong> Ambulance. I’m currently a captain at Rescue. I<br />

project I have worked on to date. I served as a member<br />
of a more than twenty person committee who examined<br />
the infrastructure of our school district and the needs of<br />
our students. The committee represented a cross section<br />
of the <strong>Ramsey</strong> Community as well as our School Community.<br />
Balancing the needs of our students in the 21st<br />
Century, learning in schools built for a much different<br />
time, with the burden placed<br />
on our taxpayers was a difficult<br />
and challenging task. I’m proud<br />
of the outcome and thankful for<br />
the support of our community.<br />
What are you excited about in<br />
the future of <strong>Ramsey</strong> Schools?<br />
Laura: Definitely the recent roll<br />
out of Profile of a <strong>Ramsey</strong> Graduate<br />
and our emphasis on mental<br />
health awareness and being<br />
a Stigma-Free community. Our<br />
children are growing up in a<br />
much different time than we did<br />
and most certainly than our parents<br />
and grandparents. <strong>Ramsey</strong><br />
schools are focused on preparing<br />
our children for a future in<br />
which they can be successful no matter what they choose<br />
to do upon high school graduation (college, trade school,<br />
workforce, military). School is no longer just about<br />
memorizing facts and figures; it is about critical thinking,<br />
collaboration, creativity and communication. It is<br />
about developing our children to be independent thinkers<br />
with a skill set that sets them on the path to success<br />
in whatever walk of life they choose. I am very proud of<br />
our emphasis on mental health awareness. We are teaching<br />
our children and our community that mental illness<br />
is not shameful. Rather, we should reach out and help<br />
those around us who are suffering with a mental illness<br />

in the same way we would reach out to support someone<br />
in our community with cancer. There are resources available<br />
and we continue to work on getting that information<br />
to those who need it most.<br />
I know you are both involved with the L.E.A.D<br />
program. What is that?<br />
Brian: L.E.A.D. stands for Law Enforcement Against<br />
Drugs. It is a wonderful program<br />
lead by Officer Sean Beamon of<br />
the <strong>Ramsey</strong> Police Department<br />
which provides anti-drug education<br />
to <strong>Ramsey</strong> students. Officer<br />
Beamon meets with the fifth<br />
graders at Dater School and the<br />
Academy of St. Paul on a weekly<br />
basis in the second half of the<br />
school year. His lessons include<br />
developing skills such as goal<br />
setting, decision making, identifying<br />
and managing emotions,<br />
effective communication and<br />
bonds/relationships – the foundation<br />
for a healthy lifestyle.<br />
Then he introduces students to<br />
the dangers of drugs and alcohol.<br />
We are two of seven parent coordinators for the fifth<br />
grade L.E.A.D. program this year. Our goal is to support<br />
Officer Beamon and provide our fifth graders with social<br />
events designed to increase positive interactions with one<br />
another and with law enforcement.<br />
Your son, Connor, is a Boy Scout. What does he like<br />
about scouting?<br />
Brian: Connor recently bridged from Cub Scout Pack<br />
306 to Boy Scout Troop 31. He loves it! Connor enjoys<br />
camping, cooking, working on various badges and team<br />
competitions. He enjoys the camaraderie of the group.<br />
It’s a boy led troop so they are learning various leadership<br />
skills as well.<br />
What are you excited about in your daughter<br />
Madison’s future?<br />
Laura: Madison will really benefit from all the changes<br />
we are making in the <strong>Ramsey</strong> School District, so that is<br />
something we are really looking forward to!<br />
Do you guys ever sleep? Seriously, what is your secret<br />
to achieving a good home work life balance and still<br />
being so active in the community by volunteering so<br />
much of your time?<br />
Laura: Organization and communication! We have a color-coded<br />
electronic calendar to manage it all. We volunteer<br />
extensively in the community and Connor participates<br />
in several sports, scouts, church youth group, and<br />
takes trumpet lessons. Balancing all of that with both of<br />
our work schedules can sometimes be a challenge, but we<br />
make it work. We carve out time as a family and now that<br />
Madison is a little older, we are back to planning a date<br />
night once a month. We also try to volunteer together<br />
when we can! In addition to L.E.A.D, Rescue and Ambulance,<br />
we are both on the Board for the <strong>Ramsey</strong> Soccer<br />
Association and volunteer at our church, Lutheran<br />
Church of the Redeemer. As you can see, we truly believe<br />
that giving back to our community is important and we<br />
are instilling that in our children.<br />

Why I Chose to Serve<br />

My story starts in 2003, when my family emigrated to<br />
the United States from South Africa, via England. I<br />
moved around a lot as a child, so <strong>Ramsey</strong> was truly<br />
my first home. I started school at Tisdale Elementary, was the<br />
last 5th grade class of Hubbard, and finally moved up to the<br />
High School as a member of the Class of 2013.<br />
We were close family friends with the Reillys when Michael<br />
passed away in 2008. Thousands of people poured into the<br />
town for his funeral; he was a Marine. During my sophomore<br />
year of high school, CPL Mike Jankiewicz returned home<br />
from Afghanistan in a flag-laden casket. I couldn’t think of<br />
any way better to pay my respects than pursuing a career in<br />
the Service.<br />
While I attended <strong>Ramsey</strong> High School, I was a member of<br />
the Big Blue Marching Band and Wind Ensemble. As a sophomore<br />
I was shyly playing the Euphonium, but as a Senior I<br />
was a Section Leader of the Baritones in marching band, first<br />
chair Euphonium in the Wind Ensemble, and a Trombone<br />
player in the award-winning Jazz Band. The mentorship and<br />
leadership opportunities I received through the music program<br />
from older students, the staff, and Mr. Bialkin were instrumental<br />
in my development as a young leader.<br />
Being an immigrant shaped my decision in many ways. I<br />
knew in my heart that being in the military was what I wanted.<br />
I felt that it was a way to give back to a country that had<br />
given me and my family so much freedom and opportunity,<br />
as well as a way to protect that freedom for my mother,<br />
sister and the rest of our community. While my classmates<br />
struggled through choosing which colleges to apply to, I had<br />
only one in mind: The Citadel, The Military College of South<br />
Carolina. The most prestigious military school outside of the<br />
United States Military Academy at West Point, The Citadel is<br />
a small public military college in Charleston, the last of any<br />
public institution to lift their ban on female cadets in 1996.<br />
I graduated <strong>Ramsey</strong> High School and matriculated into the<br />
South Carolina Corps of Cadets as a member of the Class of<br />
2017 at just 17 years old. The Class of 2017 graduated just<br />
over 400 Cadets, only 5% of which was female.<br />
During my tenure at The Citadel, I climbed the ranks from<br />
Cadet Private to Major, holding the positions of Recruiting<br />
Corporal, Company Supply NCO, Instrumental Music Di-<br />
rector’s Assistant, and Battalion Academic Officer. I was<br />
a member of the Regimental Band and Pipes as a Baritone<br />
and First Trombone player, the National History<br />
Honors Society, and Criminal Justice Society. I majored<br />
in Non-Western History and minored in Criminal Justice<br />
and Intelligence & Homeland Security. I spent the<br />
summer between my Sophomore and Junior year in Edinburgh,<br />
Scotland, representing the United States at the<br />
Royal Edinburgh Military Tattoo. In January of 2017,<br />
I was afforded the opportunity to march in the Inaugural<br />
Parade for President Trump. After just 4 years, I<br />
graduated Magna Cum Laude with a 3.87 GPA and a<br />
Commission into the United States Army Military Police<br />
Corps as a Second Lieutenant. I was the first person,<br />
male or female, from <strong>Ramsey</strong> to be accepted to and<br />
graduate from The Citadel.<br />
After graduating college, I attended the United States<br />
Army Military Police Basic Officer Leaders Course. I’m<br />
currently deployed to South Korea with the 188th Military<br />
Police Company where I’m the 3rd Platoon Leader.<br />
As a Platoon Leader, I’m responsible for the Combat<br />
Support training, Law Enforcement duties, and welfare<br />
of over 50 Soldiers and Korean Augmentees to the US<br />
Army (KATUSAs) ranging in rank from Private to Staff<br />
Sergeant. It’s a privilege to work for these Soldiers day<br />
in and day out as they protect Area IV logistical nodes<br />
and keep our community safe halfway across the world.<br />
It’s an honor to represent <strong>Ramsey</strong> everywhere I go,<br />
knowing that it has shaped me tremendously into who I<br />
am today. Go Rams!<br />

Let Me Introduce<br />

Robotics, circuitry, gaming, trivia and concerts/openmics<br />
- these are all new things coming to the <strong>Ramsey</strong><br />
Free Public Library. Before we go into these unique and<br />
fun offerings, let me take this opportunity to introduce<br />
myself - my name is Matt Latham and I am the new Director<br />
of the <strong>Ramsey</strong> Free Public Library. I’m now in my<br />
third month as Director and I’m very excited to join the<br />
<strong>Ramsey</strong> community and to build on the good work already<br />
being done by the <strong>Ramsey</strong> Library staff. For a little<br />
about myself - I served as Director of the Leonia Public<br />
Library for four years and before that was a program/<br />
adult services librarian at the Hoboken Public Library. In<br />
my time as a professional librarian, I’ve worked to create<br />
libraries that offer function as a dynamic community<br />
organization, providing a range of services from STEM<br />
tools and classes to digital collections to fun events and<br />
training. I believe strongly that public libraries serve a vital<br />
and diverse function in local communities, providing<br />
services to all members of the community. In addition<br />
to our physical collections for borrowing, libraries now<br />
offer classes in technologies and STEM, encourage the<br />
arts and the development of personal skills, provide job<br />
seeking resources, ESL classes, homework resources and<br />
much more. My passion is to continually seek new and<br />
innovative services, collections and events to offer - and I<br />
intend to do just this at the <strong>Ramsey</strong> Public Library<br />
So what new things ARE happening at the <strong>Ramsey</strong><br />
Public Library? First - we just launched a new Tech Lending<br />
service, where library cardholders can borrow kits in<br />
robotics, circuitry, engineering and other STEM tools.<br />
You can also borrow gaming systems like the SNES and<br />
NES Classic, Sega Genesis and Atari. These tools will give<br />
students and people of all ages the chance to take home<br />
new tools to experiment and learn with - at no charge!<br />
We will also be pairing these with new classes and events<br />
for kids and teens we’ll be launching soon - so stay tuned<br />
with our email newsletter, website, or social media for<br />
details.<br />
We are also about to launch a brand new website, which<br />
will offer vastly improved useability, access to resources<br />
and improved design. Accessing information, signing up<br />
for programs or reserving a museum pass will all soon be<br />
easier with our new website.<br />
The library also now offers new services for downloadable<br />
and streaming content. Services like Hoopla and RB<br />
Digital offer access to eBooks, streaming movies and TV,<br />
streaming British TV shows, digital comics and magazines<br />
and much more. Use your library card to access via<br />
the Hoopla or RB Digital apps or via a home computer.<br />
Finally, we are starting to take some new directions<br />
in our events and classes. For adults we are offering a<br />
regular series of Trivia Nights with team trivia - we already<br />
offered 1980s Trivia, with 1970s and 1990s Trivia<br />
events coming soon. The library will also be offering a<br />
bi-monthly series of after hours concerts and open-mics<br />
for all ages. We will have a featured band followed by an<br />
open microphone for anyone to share their music, poetry<br />
or other performance art. There are many more programs<br />
we will be offering as well - a summer ComicCon,<br />
animal education programs, lectures, arts and crafts, etc.<br />

Club Pilates opened in<br />
<strong>Ramsey</strong> the day after<br />
Thanksgiving, 2016. We<br />
rapidly started learning about<br />
the <strong>Ramsey</strong> community and how<br />
strong the ties were. Everyone<br />
seemed to know everyone. We<br />
were fortunate that <strong>May</strong>or<br />
Deirdre Dillon was an early<br />
member. We were amazed that<br />
the <strong>Ramsey</strong> Cinema was financed<br />
by local <strong>Ramsey</strong> people, keeping<br />
a community theater (which<br />
has the best popcorn I’ve ever<br />
had!). We remain proud to be<br />
advertising there every time you<br />
go to the movies.<br />
Entering into this franchise<br />
(we were the second Club Pilates<br />
in New Jersey) was a new venture<br />
for me; my work experience had<br />
been with large corporations. I<br />
was proud to be someone closely<br />
involved in running the plants<br />
which made everything from<br />
grocery bags and sacks and<br />
bathroom tissue to computers and<br />
contact lenses. The tangibility of<br />
this kind of work really appealed<br />
to me. I liked working with people<br />
who were involved in creating<br />
something from something else.<br />

Do Pilates Do Life!<br />

every day. With Club Pilates, I found we’re offering an exercise regimen which is<br />
changing people’s bodies, day by day. That too counts as something tangible!<br />
Our members are involved in creating something new in themselves, using the<br />
Pilates Reformer. Pilates is called a mind/body practice and it truly is. When you<br />
lie down (lie down to exercise! Can you believe it?) you are perfectly aligned. You<br />
then proceed to do your exercises in that state. All parts of your body have to work<br />
together, without one side or the other covering for the various weaknesses we’ve all<br />
developed over time. Computer shoulder slump? Bad back? Pilates helps!<br />
Pilates started out as physical therapy for wounded WWI soldiers. Therapy<br />
is something I know about as I was diagnosed with multiple sclerosis in 1989. I<br />
am fortunate in how the disease has progressed in my body and mind, but it has<br />
definitely made it important that I pay attention to my body’s capabilities. The best<br />
advice for someone with MS was to make sure you were at optimal levels so when an<br />
exacerbation came, you were starting from a high point.<br />
Going back to my experience, before I was making ‘things’ that people used.<br />
Now I’m providing an opportunity for people to remake their bodies and minds.<br />
We warn every person who considers<br />
signing up that they could become<br />
addicted. A solid and frequent Pilates<br />
practice changes your body. It changed<br />
mine. Men and women, old and young,<br />
everyone benefits.<br />
My weight didn’t change but hips<br />
and thighs and tummy got smaller. Fat<br />
turned into muscle. I’ll take it!<br />

What is animal chiropractic and how can it help<br />
my pet?<br />
Animal Chiropractic care is the application of<br />
specific adjustments to the joints of the body<br />
that are not moving properly. These adjustments<br />
are intended to restore proper movement and<br />
function to the body. When joints are not moving<br />
correctly or are “stuck,” we refer to it as a “subluxation”. These<br />
subluxations can cause a number of issues such as: pain, stiffness,<br />
gait abnormalities, behavioral changes, trouble getting up and down<br />
stairs and/or jumping up and down, etc. A Chiropractic adjustment<br />
is ultimately a procedure in which a trained specialist (me!) uses<br />
either their hands or a special instrument to apply a controlled, sudden<br />
force to a spinal joint. The goal of this is to not only improve<br />
spinal motion and ease of moving in general but to also improve<br />
the body’s overall physical function. The adjustment is the perfect<br />

<strong>Ramsey</strong> Area Garden Club<br />
The <strong>Ramsey</strong> Garden Club was established in 1982 by five friends.<br />
Their objective was to pursue their interest in all phases of home<br />
gardening and promote better horticultural practices, civic<br />
beauty and the conservation of natural resources. Civic<br />
beautification projects that began with the original<br />
founders continue today and include the planters<br />
at the Main Street Train Station, Main Street<br />
Triangle and <strong>Ramsey</strong>’s Old Stone House. By<br />
1993, with a membership of over forty, including<br />
many “out of towners,” the name was changed to<br />
the <strong>Ramsey</strong> Area Garden Club. Past and current<br />
projects of The Club include but are not limited to:<br />
A Garden at Winter’s Park in Mahwah; Christmas<br />
decorating at Skylands; The Hermitage and The Fell House;<br />
Horticultural Therapy; Annual Scholarship Awards to students<br />
pursuing careers in environmental studies, horticulture and<br />
landscape design; centerpieces for annual luncheons to benefit<br />
breast cancer research; Annual Plant Sale in <strong>May</strong> at the <strong>Ramsey</strong><br />

Tuesday of each month at the Lutheran Church of the Redeemer,<br />
55 Wyckoff Avenue, <strong>Ramsey</strong>, NJ from September through<br />
<strong>May</strong>. Each meeting hosts a one hour lecture given by<br />
various professionals in the horticultural field.<br />
Residents of <strong>Ramsey</strong> and the surrounding<br />
towns are welcome to attend these free<br />
lectures. It is a wonderful way to learn<br />
new gardening information and exchange<br />
your experiences with fellow gardeners in<br />
the area. The lecture and question/answer<br />
session scheduled for our <strong>May</strong> meeting will<br />
be given by Don Torino is titled “Important<br />
Facts About Hummingbirds and How To Attract<br />
Them To Your Garden.”<br />
Our Annual Plant Sale is scheduled to take place on Saturday,<br />
<strong>May</strong> 11th from 9 am-2pm. For the past 20 years, the Plant Sale<br />
has been an important fundraiser for the Garden Club. It has<br />
always taken place the second Saturday in <strong>May</strong> (the Saturday<br />
before Mother’s Day) at the train station. All proceeds benefit<br />
Educational Scholarship Studies in – Botany, Environmental<br />
Science, Forestry, Horticultural Studies, charitable contributions<br />
to NJ Botanical Garden (Skylands) and The Garden Conservancy.<br />
The <strong>Ramsey</strong> Area Garden Club provides plantings in <strong>Ramsey</strong><br />
Main Street Triangle and Main Street Train Station.<br />
We offer a variety of selected plants from local vendors including<br />
flowering baskets, annuals, plants, perennials---all locally grown<br />
from member gardens. All are available for sale in the Railroad<br />
Station. The 10” Hanging Baskets will provide displays of Fuchsia,<br />
Ivy Geraniums, Begonia and other plants. The locally grown<br />
perennials are unusual plants and will be a wonderful addition<br />
to anyone’s garden. The plant labels will describe the nature and<br />
environment for the plants. We hope to see you at our events in<br />

a recipe that I use quite frequently. I haven’t bought jar sauce<br />
in years. This recipe is adapted from Rao’s original recipe. We keep it<br />
in the fridge for pizzas, chicken parm, meatballs, etc. I love getting all<br />
the ingredients from Steve’s- always fresh and high quality. I shop at<br />
Steve’s several times a week… deciding each day what to cook, what<br />
looks good that day for dinner. We lived in Hoboken for years, and<br />
loved stopping at the market or butcher on the way home from work.<br />
Steve’s provides that same feeling of community.<br />
Marinara Sauce<br />
1/2 cup Olive Oil<br />
1 medium sized onion, diced<br />
3 garlic cloves, minced<br />
3 (28 oz) cans of Italian plum tomatoes peeled, hand crushed with<br />
juice.<br />
1 teaspoon of dried oregano. (might need to add a bit more; taste)<br />
salt/pepper to taste (I use: a little less than a tablespoon of kosher<br />
salt- add half at a time to taste. About 15-20 turns of pepper grinder)<br />
6-8 fresh basil leaves<br />
Heat oil in large dutch oven. Saute onion until translucent, about 5<br />
minutes. Add garlic, saute until lightly golden, about 2-3 minutes. Add<br />
the crushed tomatoes and juice. Bring to a boil. Lower heat and simmer<br />
on low for about 30 minutes. Stir occasionally. Use stick blender<br />
to blend tomatoes/onions. Add salt, pepper, oregano to taste. Stir in<br />
basil leaves. Cook 1 minute. Ready to serve. Makes about 4-5 cups.<br />
Meatballs<br />
Makes about 14-18 meatballs<br />
2 lbs of Steve’s Market meatloaf mix<br />
2 eggs<br />
2 cups of freshly grated Pecorino Romano cheese<br />
2 cups cold water<br />
2 cups Steve’s Fresh plain breadcrumbs<br />
1 1/2 TBS fresh parsley, chopped<br />
Salt, pepper to taste<br />
Preheat oven 400 degrees. With hands, combine meat, 2 eggs, parsley,<br />
minced garlic and salt and pepper to taste until mixed. Add breadcrumbs<br />
and blend into meat mixture. Slowly add cold water, 1 cup at a<br />
time and mix until meat is moist. Do not overwork the meat mixture.<br />
Use ice cream scoop to make uniform meatballs and place on parchment<br />
paper lined baking sheet. Bake for 7 minutes, flip onto other side and bake<br />
another 7 minutes. Gently place in sauce. Shake large dutch oven to cover meatballs<br />
with sauce… do not stir or meatballs will break. Simmer on low for 15 minutes.<br />

** You can also saute the meatballs in 1 cup olive oil- about 5 minutes a side. Drain on paper towels.<br />
** Alternative: Pork Braciole from Steve’s Market. Sear 2 minutes both sides and cook in sauce<br />
on low simmer.<br />
