Warm and fragrant

Mulled Wine

Nothing gets people in the festive spirit more than the wonderful fragrant smell and taste of a

warming glass of Mulled Wine. This recipe is very simple and there is no need to splash out on an

expensive bottle of red wine. Any red wine will do due to the beautiful spices that are added.

This recipe can easily be doubled or trebled depending on the quantity you desire.

INGREDIENTS

Serves: 4

1 litre dry red wine

2 (5cm) cinnamon sticks

1 dessertspoon whole cloves

1 dessertspoon whole allspice

1 large piece orange rind (avoid the pith)

1 large piece lemon rind (avoid the pith)

4 tablespoons sugar, or to taste

METHOD

1. In a heavy saucepan over medium heat, combine the red

wine, cinnamon, cloves, allspice, lemon rind and orange rind.

Heat gently, but don't bring to the boil.* Stir in 2 tablespoons

of the sugar, and once dissolved, taste to see if you'd like to

add more.

2. Keep hot on medium to low heat for 20 minutes to let the

flavours infuse the wine. Serve your mulled wine hot in

glasses or mugs.

*If you allow the wine to boil you will burn off any alcohol, so be

sure to keep the heat low enough*

If you don’t drink alcohol or would like to make a virgin mulled

wine for your children you can use the same recipe but swap the

wine with cranberry juice. Children will love helping you make

this festive drink and are sure to enjoy tasting the finished

product.

Gnocchi, Mushroom & Gratin Lovers

Michel Roux Jr.’s - Gnocchi and wild mushroom gratin

This particular type of gnocchi is made with choux pastry and is called ‘à la Parisienne’.

I used to make a dish similar to this when I worked as an apprentice in Paris. It is now a

favourite in the Roux household as it’s easy and fun to make.

Serves 4-6

CHOUX PASTRY

250ml water

100g butter

1 pinch salt

1 pinch white pepper, ground

1 teaspoon dry cep powder

(optional)

125g plain flour, sifted

3 free-range eggs

BÉCHAMEL SAUCE

30g butter

30g plain flour

350ml milk

Salt, pepper, nutmeg

1 spring thyme

1 bay leaf

FILLING AND TOPPING

360g mixed wild mushrooms

Olive oil

2 cloves garlic, peeled and crushed

60g Cheddar, grated

40g Parmesan, grated

Start by making the choux pastry. Bring the water and butter

to the boil with the seasoning. As soon as it boils, take the

pan off the heat and stir in the sifted flour with a wooden

spatula. When this is well mixed and smooth, return the pan

to the heat. Cook the choux pastry over a medium flame, stirring

vigorously all the time. Continue to cook for 2-3 minutes;

the bottom should be starting to catch. Take the pan off the

heat and beat in the eggs one at a time. This takes a long

time and a lot of beating.

Preheat the oven to 200°C/Gas 6. Take an ovenproof dish,

measuring about 20 x 28cm and about 5cm deep, or some

individual dishes.

Scatter in the gnocchi and wild mushrooms, pour over the

béchamel sauce and sprinkle with the cheese. Bake in the

hot oven for 20 minutes until golden brown.

Put the choux paste in a piping bag with an 8mm hole. Gently

squeeze the bag over a pan of salted, boiling water, using a

small, sharp knife to cut the paste into roughly 1cm lengths

as it comes out. Simmer the gnocchi for about 5 minutes,

then gently lift them out with a slotted spoon. Put them

straight into iced water to halt the cooking, then drain in a

colander.

Next make the béchamel. Melt the butter in a saucepan, add

the flour and cook until foaming, but do not allow to colour.

Slowly whisk in the milk over high heat and add the seasoning

and herbs. Bring to the boil, then turn down the heat and

simmer the sauce for 10 minutes. Take off the heat, pour

through a fine sieve, cover and set aside.

Clean and trim the mushrooms. Pan fry in a little olive oil, allowing

them to colour a little. Add the garlic at the end, season

with salt and a little pepper.

Michel is cooking live at the BBC Good Food Show Winter at

NEC Birmingham, November 28th – December 1st.

GET RELIEF

OF BACK PAIN, NECK PAIN, SHOULDER PAIN,

KNEE PAIN AND MUCH MORE....

Natural and effective

OSTEOPATHIC TREATMENT

for the whole family at all stages of life.

WHAT CONDITIONS DO WE TREAT?

Osteopathy treats a wide variety of musculoskeletal

problems, the main complaint being back pain, but it also

has a role to play in the management of a number of

other conditions. The most common complaints for

which patients consult are:

GENERALISED ACHES AND PAINS

Joint pains including hip pain and knee pain from

osteoarthritis as an adjunct to core OA treatments and

exercise.

Arthritic pain - Treatment is individual, gently moving

and stretching an arthritic joint and massaging

surrounding muscles and tissues can help ease some of

the discomfort. Sometimes we may work on general

mobility of the other joints and muscles in the body to

help the mechanics of the body work better. We may

also give advice on exercises, diet, posture and changes

to lifestyle. X-rays, scans or other tests may be required

and you may referred to your GP for any additional

investigations and treatment.

TREATMENTS & TECHNIQUES

General, acute & chronic backache, back pain

Up to 80% of the UK population suffer back pain at

some point in their life. as holistic practitioners we

consider the many factors that can contribute to your

back pain.

Pregnancy related back pain, neck pain,

shoulder pain and Post Natal Care – general aches

and pains associated with the adaptation of the

musculoskeletal system during pregnancy and recovery

afterwards.

Uncomplicated mechanical neck pain (as opposed

to neck pain following injury, i.e. whiplash)

Headache - The most common type of headaches

originate from muscle stiffness or joint strain in the neck

and/or upper thoracic region/migraine prevention.

Frozen shoulder / shoulder and elbow pain /

tennis elbow (lateral epicondylitis) arising from

associated musculoskeletal conditions of the back and

neck, but not isolated occurrences.

Amanda, Clinic director

and Osteopath, takes pride

in helping patients reduce

their pain, helping them

get back to activities and

enjoying life.

Tattoos & Piercings with Some’Ink Different

Some’ink Different is the longest running tattoo and piercing studio in Oakengates

which has the longest serving and experienced tattooist locally....

With almost 40 years combined experience between our three dedicated artists - Garth, Rob and Jayde - there is nothing we

cannot help with and cater for. Pop in and see us for a chat with any enquiries you may have, we promise to offer you our

honest opinion and advice.

Open 6 days a week, Monday to Saturday. We are fully health registered with Telford and Wrekin council, working very

closely with Environmental Health, Tattoo & Piercing Industry Union and are fully insured etc.

There is no pressure to just get a quote from us or to book in, we can only apologise that our diaries may be full but we will

bend over backwards to get you a suitable booking. Good things are worth waiting for!

(All bookings require a £20 cash deposit)

EVERYONE LOCAL KNOWS WHO ROB AND GARTH ARE SO WE’LL TELL YOU ALL ABOUT THE

GIRL POWER IN OUR TEAM!

Jayde is a fully qualified female tattooist of 7 years, who started a traditional apprenticeship back in 2010.

She has been with the Some'ink Different gang for over 4 years, and both her enthusiastic

and professional nature have ensured a busy diary with ongoing sleeve work and custom designs of all styles.

Nothing but 5* reviews and recommendations from loyal customers, old and new, can be

found on her Facebook business page: Jayde-QueenOfArts. CHECK HER OUT!

We also offer professional body piercing performed by Char, which is a walk-in service

Monday to Friday so no appointment necessary!

Check out the Facebook page for 5* ratings and reviews from previous happy clients on “Piercings Some’ink Different”.

Char has been a part of the Some’ink Different team for just over 2 years now, running the reception, taking bookings and

preparing tattoo designs as well as the body piercing which she is always very busy with. Sharing regular special offers and

showcasing new piercing ideas, jewellery and products on social media. She shadowed for 6 months and was one-to-one

mentored by Garth on every aspect of body piercing, gaining much hands-on experience with a little on-the-job assistance

from Jayde too, not just a 5-day course and a certificate. So, between the three of them if there is something about piercings

they do not know, it’s not worth knowing! From ear lobes to micro dermals Char can do it all with confidence and always

gives you quality aftercare advice verbally and in writing, with all contact details so she's always at the end of the phone or

on Facebook if you have any queries.

WHAT TO AVOID:

• Splinters of poultry bones are

dangerous to dogs and cats, as they

can become stuck in their throats or

even pierce their intestinal tract.

• Grapes, raisins and sultanas contain

a toxin which can cause kidney

failure – So no mince pies!

• Chocolate, the darker the more

dangerous as it contains

theobromine which can cause

seizures, coma and heart failure.

• Stuffing contains onions and garlic

which can destroy red blood cells

causing life-threatening anaemia

• Seeds and stones from apples,

apricots, cherries, peaches and

plums contain a cyanide compound

which can be poisonous

• Broccoli, cauliflower, cabbage and

peppers – contains toxins which

could be deadly for horses

Less is MORE...

Christmas - it’s the most wonderful time of the year. But for many, it also ends up feeling like the

most stressful time of the year, too. We’re material girls (and boys) living in a material world, and

the act of gift-giving has always been the focus of the festive period.

With lots to pay for - food and drink, presents and outings, it’s not uncommon for families to

feel a huge financial strain. But it doesn’t have to be that way. With just a touch of focus, a

pinch of imagination and a sprinkling of organisation, this one day of the year doesn’t need

to cause such a headache.

Contrary to popular belief, ‘minimalism’ is not the act of owning nothing - it’s a mindset

that allows you to spend sensibly, only on items that you really believe are bringing

value into your life. Taking a step back from mindless traditions and re-assessing what

works for you as an individual or family can transform how you see this precious time

of year, a time that is intended to bring people together.

By embracing a more minimalist festive period, the traditional act of racing around

the shops on Christmas Eve can be a thing of the past. You might even enter the

next year with a whole load of new memories to look back on, too (none of which

rely on wrapping paper and sellotape).

ONE GOOD THING

We all know that the ‘to-buy-for’ list can get pretty humongous, and seizing a

‘quality over quantity’ mindset can completely transform how you experience

Christmas. Why not consider a one-gift-each policy as a household? Especially for

children, the volume of stuff that passes hands during December is incredible

(and we all know that some of it is forgotten in seconds). Allowing kids to

concentrate on opening one or a small handful of toys (rather than a mountain)

lets them actually absorb the receiving of each item - they can cherish it and

learn about it, rather than throwing it down and moving onto the next best thing.

HAVE A SYSTEM

If your family (and extended family) is a large one, ‘Secret Santa’ is a fantastic

method. Allocating each person just one other to buy for, avoids everyone having

to buy for everyone. We do it with our colleagues to lighten the load so why not

with our loved ones? Setting a spending limit can be a useful tactic too.

INVISIBLE ITEMS

Affordable experiences always make fantastic gifts, especially if you can enjoy

them together. Why opt for things when you can opt for memories? One lasts

longer than the other. Also, if there’s nothing you really need for Christmas you

can always be honest with those around you - let them know that you’d like them

to spend their money mindfully on something else, maybe go and see a film

together or make a small donation to a charity that’s close to both of your hearts.

DESIGN YOUR LIFE

Create new traditions, write your own rules. If you’re not sure how to break the

morning mindless wrapping-paper wrestle, then pencil in some new things that can

become part of the Christmas routine. Enjoy fresh family walks, try free activities

like baking and crafts, watch favourite movies, catch a carol service, take time out to

be together to make new memories in interesting places

(places other than shopping centres).

GET OTHERS ON BOARD

If this has inspired you to change up the way you do Christmas, good for you!

Your bank balance feels better already, right?

It might feel like the hardest part is to come, communicating these ideas to the rest of your

family and friends. Just be confident, suggest ideas and don’t be afraid to be honest,

especially if the pennies are tight. Those close to you will understand and when they’re also

on board, you can all clear the clutter and focus on the right things.

Minimalism isn’t throwing everything out of your house, it’s just a different way of thinking

before you shop, a lifestyle that encourages you to talk intimately with the people you love about

what brings you the most joy. You’ll be surprised to see how many around you agree, how many are

keen to cherish the important thing in life - each other.

Education

Considering having a tutor

for your child?...

My Son Ethan took his GCSE’s earlier this year and I can proudly say he passed all 9 with flying

colours. Yes, a lot was down to him, but I have to say the Tutor Doctor played a big part with his maths

and his confidence. About 12 weeks before exams Ethan came to me very stressed and concerned

about his maths, and wanting to join the forces as a medic, getting a pass in maths was essential.

It was at this point I decided to get Ethan a private tutor to help him, which thankfully he welcomed the

idea of. The Tutor Doctor appointed a lady called Rebecca to us and she was absolutely fantastic and

certainly played a big part in Ethan passing maths. Ethan said it was great to be able to ask her oneto-one

about things he was struggling with in class, as he would never be confident enough to ask or

get the direct one-to-one attention to help him understand things.

Rebecca never rushed Ethan and would never watch the clock, she was fantastic, passionate and

filled Ethan with so much confidence, we had 12 lessons, once a week up to the exams, I was so

grateful to The Tutor Doctor getting us in at such late notice.

If your child is struggling at school, whatever age, I would highly recommend the Tutor Doctor to help,

give your child the confidence boost and knowledge they deserve, 12 hours made a massive

difference in Ethan’s results and he thanked me after every session for investing in his future and

helping him achieve his goals!

Wellbeing & Parenting

Screen time and the impact

on Health and Wellbeing

This edition will focus on

digital health and the issues

young people and their parents/carers

can face with screen time and finding the

balance to stay fit, active, healthy and

interactive. We are trying to manage very

busy lives these days, we work longer

hours and we have busy calendars. The

invention of the smart phone/tablet has

brought about an unprecedented level of

screen time into most people’s lives. Trying

to find the balance is something we all

strive to achieve – it is a new challenge to

parents and carers so have taken a look at

the current guidance and attempted to

make sense of it and highlight some of the

main recommendations.

Parents and carers are becoming

increasingly concerned about how

long we should allow children to stay

on their screens and how we make

sure screen time does not influence

family time or normal play,

development and physical movement

for our children and young people.

Many studies have been conducted in

this area, they have mostly been

observational studies that have

considered the views of parents and

children and young people. The World

Health Organisation laid out some

very strong recommendations

recently; you may have read the

headlines back in April of this year.

The World Health Organisation

recommendations

The recommendations were as follows;

• Children less than two years to avoid screen time if

possible

• Children 2-5 to have no more than one hour of screen

time per day

• Children to be encouraged to be physically active rather

than sedentary to avoid issues with weight, cognitive

ability and fitness levels

However, the NHS recently published a report that argued

that some of the evidence to support this research and

guidance was not robust enough and the Royal college of

Paediatrics and Child Health have stated that due to a lack

of robust evidence they cannot totally support these

recommendations, suggest parents approach the issue with

a case by case basis, keeping in mind that every child is

different. Instead they suggest families start to negotiate

with children screen time limits, based on need, the way in

which it is used and the degree to which it is used.

The clear message is to maintain a balance with sleep and

other positive physical activities. The report that was written

by The Royal College of Paediatricians and Child Health in

January of this year asks this of parents and carers:

• Is Screen time in your household controlled?

• Does screen time use interfere with what your family want

to do?

• Does screen use interfere with sleep?

• Are you able to control snacking during screen time?

Balance:

In occupational therapy we always favour a balance of

occupations (the things we do). To improve overall health

and wellbeing, we need to consider balance and routine

and how best we manage this in ever increasingly busy and

sedentary lives. So how can we all do this?

• Put limits on the time we spend on screens

• Have a screen free evening once a week

• Encourage getting out and walking/moving when it is

possible

• Encourage standing up at work and stretching during

screen time

• Encourage children to close screens down and move

around the house

• Play! Children learn through play – so encourage ball

games / card games / board games / sports

What do children and young people say?

The RCPCH consulted with 109 children and young people

to gain more insight into how they felt screen time was

impacting their lives and these were the findings:

• 88% said screen time had a negative impact on sleep

• 41% said it had affected play / fun

• 18% said screen time had a negative impact on family

time

Education:

Charlotte Tranter

Therapist

Member of The Royal College of

Occupational Therapy

(HCPC registered)

email: saboya30@talktalk.net.

• Children and young people are capable of negotiating with

you what they feel would help them keep the balance

however, they do need some boundaries put in place by

their parents and carers too

• Sleep and screen free time before bedtime is very

important in supporting rest and a good night’s sleep

(recommendation to switch screens off an hour before

bedtime)

• Ensure screen time does not impact too

greatly on family time

• Physical movement is important for

normal healthy child and adolescent

development – so do your best to

encourage this

Floatation therapy is also known as Restricted

Environmental Stimulation Therapy, or REST, as it

creates an almost sensory-free environment in which

the effects of gravity, temperature, light and sound

sensations are removed. This frees your brain from

interpreting incoming messages so it can focus on

resetting the body’s physiology back to normal levels –

including a high blood pressure

Physical

Floatation therapy is the most

powerful stress relief technique

known. Floating has been shown

many times (and in controlled

studies) compared to bed rest is the

most relaxing experience on earth. It

has been said that just one hour of

floating can have the restorative

effect of four hours of deep sleep.

Floatation involves lying in a lightproof,

sound-insulated tank

containing a shallow, ten-inch deep

pool of warm water in which around

700 lbs of Epsom Salts (magnesium

sulphate) are dissolved. This forms a

super-saturated solution of saline

which is kept at a constant skin

temperature of 93.5 oF (34.5 oC).

The float solution is more buoyant

than the Dead Sea and you remain

suspended on top rather like a

Champagne cork bobbing on the

ocean, to neutralise many of the

effects of gravity.

It’s estimated that 90% of all brain

activity is concerned with the effects

of gravitational pull on the body, such

as correcting posture, maintaining

balance and constricting arteries to

prevent blood pressure from

dropping when you are standing.

The floatation water is kept at a

constant skin temperature and the

tank screens out all light and sound.

This frees your brain from most of its

usual sensory distractions and allows

it to more easily generate theTheta

waves associated with profound

relaxation, meditation, creative

thought and feelings of serenity.

Still unsure?

Here are four of the most commonly asked questions and answers:

What if I am Claustrophobic?

You have complete control of your

environment. You can leave the light

on or get out anytime. You can start

by leaving the float tank door slightly

open until you feel settled and

relaxed. Being in the tanks is more

like floating in outer space than being

shut in a box. You’re always in

control of your environment, and

even people with extreme

claustrophobia have reported having

no problems with their time in the

tank.

What do I wear and is the room

private?

Your room is completely private, so

most people choose to float in the

nude. Our float rooms are equipped

with its own shower and is for your

exclusive use.

What is Epsom Salt?

Epsom Salts are naturally occurring

pure mineral compounds of

magnesium and sulphate.

Magnesium plays an important role in

regulating over 325 enzymes,

reducing inflammation and muscle

tension. Sulphates enhance the

absorption of nutrients, flush toxins

and ease migraine headaches.

How do you clean the tanks?

The water is fully filtered 4 times

between each float. A powerful pump

and the very latest in filtration

technology are incorporated in the

design. Existing floatation tanks filter

at around 30 microns whereas the

i-sopod filters are fully effective to

one micron which is an incredible

100 times smaller than a human hair!

Also the Epsom Salts are a natural

disinfectant and are in abundance in

the water – please do not worry you

will not smell like you just came out

of a public swimming pool or a hot

tub.

Decreases the production of

cortisol, ACTH, lactic acid and

adrenaline

Increases production of

endorphins, speeds up

rehabilitation and recovery.

Relieves pain (arthritis, migraines,

injuries and so on)

Boosts immune function. Improves

circulation and distribution of

oxygen and nutrients. Reduces

blood pressure, pulse, heart rate

and oxygen consumption.

Improves athletic performance,

helps prevent sports injuries,

speeds healing process.

Mental

Stimulates left/right brain

synchronization, shifts brain waves

from beta to lower frequency alpha,

theta and delta. Creates mental

clarity, alertness, increases

creativity, problem solving,

heightens visualisation

Deepens meditation, expands

awareness, intensifies acuteness of

all the senses, accelerates learning,

enhances hypnotherapy and selfhypnosis.

General Well-being

Promotes total calm and peaceful

relaxation, eliminates fatigue and

jet lag, Improves sleep. Alleviates

stress (mental and physical),

energizes, rejuvenates and

revitalizes, increases motivation,

diminishes depression, anxiety and

fear, facilitates freedom from

habits, phobias and addictions.

Allows total 'me time', helps during

pregnancy, most effective way to

absorb magnesium.

Do you need Lip Fillers?

Absolutely yes!

Since turning 40 last year and starting to feel like my face is starting to

show signs of aging, I have debated the question – do I need lip fillers and

what if I end up with the dreaded ‘duck look’. With well proportioned and

a decent size to my lips already, I had decided against it, until I walked

into Park Street Clinic in Shifnal and met Helen.

Helen was brilliant at talking me through the procedure and advising if

I would benefit from having lip fillers, she also reassured me that she only

does a natural enhancement look and not the ‘duck look’. She was very

complimentary about my own lips and there was no pressure at all, so I

went for it.

Helen explained the procedure clearly to me, what to expect, the fact that

it was painful, and swelling / bruising can happen over the next 48 hours

and an aftercare sheet was given to me to read before I went ahead.

Before

After

PARKSTCLINIC

Helen Bagnell

(RGN, INP)

Clinical Director

Starting to feel nervous, Helen was very good at reassuring me and

keeping me calm, she was always very professional and gave me complete

confidence. She applied numbing cream to my lips first and left that to

work for 15 or so minutes, then it was time! I’m not going to lie, yes it hurts

for a few seconds each time the filler is injected and it’s not a pleasant

experience, Helen again was very good at keeping me calm and reassured.

The whole procedure of the injections took just over 15 minutes and I had

just under a ml of filler, the instant results were amazing, my lips just

looked fuller I felt fantastic and didn’t feel like a duck at all, it just looked

very natural and younger too.

Over the next 48 hours my lips did swell quite a lot and the pain eased off overnight, this can be quite a

worrying time but thankfully Helen had explained everything to me so well I knew exactly what to expect

and wasn’t too concerned, I also had the back up of two friends that have also had lip fillers to ask, and they

also reassured me it was normal, to keep a cold compress on to ease swelling and just give it 24 hours and

things will calm down.

By day three my lips looked amazing, and the pain and discomfort was totally worth it, I had a whole new

level of confidence and kept looking at myself in the mirror all the time, something I never do. The best thing

was if I didn’t tell you I’d had my lips done, you really wouldn’t know as they look so natural, just fuller all

over and much more youthful.

From someone who said they would never have lip fillers I would now highly recommend to anyone needing

that boost of confidence, but I would also be very careful where you go to just achieve a natural look and

Park Street Clinic is highly recommended, this can be backed up with them recently winning The Midlands

Beauty Industry Awards for the Highly Commended status in their category.

Would I recommend lip fillers? Well I will definitely be returning for more once these have worn off in about

6 months. If you don’t like needles and pain, this procedure isn’t for you, but for a beauty and confidence

lift, 100% recommend!

Park St. Clinic would advise you only see a registered nurse, doctor or dentist for these treatments due to

the associated risks.

Waste Not - Want Not!

The Kitchen Table is a small home run business. It produces wonderful, fresh, home-made products in the form

of meals, cakes, party food, desserts, pastries and more. The Kitchen Table is run by a lovely lady called Becky.

Becky has such a bubbly, enthusiastic and up-beat personality that you can’t help but feel happy when you’re

around her. She puts the same energy and enthusiasm in to her cooking. You can really taste the love in her food.

Becky prides herself on using the finest ingredients and does her best to support local businesses. Wherever

possible she will buy local produce to create her meals. Becky is a very conscientious chef and ensures she

produces as little waste as possible. I had the opportunity to interview Becky and gain her thoughts on the

matter of waste. And she has provided us with the perfect recipe for your left over Christmas turkey as well as

another for any leftover cheese.

Here’s what she had to say...

“There is an ever growing concern for the environment and it is at the forefront of everyone’s minds at

present. Are we recycling enough? Are we doing our best to reduce energy usage? We all want to reduce

our carbon footprint but are people doing the same when it comes to food? To produce any kind of food, be

it meat or vegetables, the process creates a carbon footprint. Therefore if that food goes to waste that carbon

footprint will have been made in vain.

So this Christmas lets all be mindful of food waste. Do you really need a whole turkey if you only eat the

breast meat? Do you really need to buy another box of chocolates when Doreen from two doors down will

be gifting you all of her unwanted chocolates on Boxing Day anyway?!”

Here is my very own recipe for any left-over Turkey.

Ingredients

1 tbsp Cooking Oil

1 Cooking Onion diced

1 tbsp Garlic Paste

1 tsp Cumin

½ tsp Chilli Powder

1 tsp fennel Seeds

1 tsp Ground Fenugreek

1 tsp Ground Coriander

1 tsp Paprika

1 tsp Turmeric

1 Tin of Coconut Milk

1 tbsp Dark Soy Sauce

2 tbsp Light Brown Sugar

Salt and pepper to taste

400ml Hot Chicken Stock

1 Bunch Fresh Coriander

4 tbsp Crunchy Peanut Butter

(add more to taste)

Left-over Turkey

Before Becky set up The Kitchen Table

she spent a large chunk of her working life

behind a Deli counter. This is where her

passion for cheese really took off. What

Becky doesn’t know about cheese isn’t

worth knowing. Her fondness of cheese

earned her the nickname “Cheesy Bex”

whilst working at the Deli - a nickname

she still carries with her today.

Turkey Satay

Method

1. In a large frying pan heat the oil and

add the onion. Cook until soft.

2. Add the garlic and all the dry spices.

Cook on a low heat until aromas

released, around 4 minutes.

3. Stir in coconut milk, soy, sugar and

chicken stock. Bring to the boil then

leave to simmer for 5 minutes.

4. Add the peanut butter mixing well.

5. Chop up or shred your cooked

left-over turkey and add to the

mixture.

6. Season to taste with salt and

pepper.

7. Add the chopped fresh coriander

and bring the heat up to just boiling

again.

8. Serve over rice or with Naan bread.

Talking

Cheese with

Becky…

Anyone who knows me, knows that cheese is my absolute

favourite food ever!! Here is what I will be having on my

cheese board this Christmas. It is a mix of local and continental

cheese. Although I like to buy local produce, when it

comes to cheese it’s best to have a mix as some things are

better sourced from their country of origin.

The Perfect Cheeseboard

• Isle of Mull Cheddar

• Délice de Bourgogne

• Croome Cuisine Black Truffle

• Montagnolo

• Époisses

• Moyden’s Smoked Newport

“Left-over cheese? Is that even possible?”

If you do find yourself with any left-over cheese, here is a very simple way to

use it up and create a real comforting meal for those cold winter evenings

Ingredients

350g Macaroni Pasta

Pinch of salt

2 tbsp Butter

3 tbsp Plain Flour

500ml Milk

Left-over Cheese

Method

1. Add the salt to a pan of water,

bring to the boil and cook the

pasta until al dente.

2. Melt the butter in a heavy

bottom pan and add the flour.

Cheesy Pasta Bake

Stir constantly and cook for

3 minutes.

3. Gradually add the milk while

continuously stirring. Bring to

the boil. Reduce heat and when

thickened remove from the heat.

4. Stir in the cheese and allow to

melt, return to heat if necessary.

5. Place the cooked pasta in a

baking dish and stir in the

cheese sauce.

6. Bake in a pre-heated oven on

200°C until golden brown.

Festive Stained Glass Biscuits

These very tasty biscuits make beautiful homemade Christmas gifts or keep them for yourself as an

alternative to Christmas tree chocolates. They look fantastic hanging on the Christmas tree with the

lights twinkling through the stained glass windows.

You will need:-

• Pastry cutter (Christmas tree or Star shape

work best for this festive themed biscuit)

• 150g butter, softened

• 100g muscovado sugar

• 1 large free-range egg

• 250g plain flour, plus extra for dusting

• 1 tsp baking powder

• Pinch salt

• 1 tbsp mixed spice

• 1 tsp vanilla extract

• 1 pack boiled coloured sweets

How to make:-

1. Preheat the oven to 180C/350F/Gas 4 and line a baking tray with greaseproof paper.

2. Whisk together the butter and sugar in a large bowl. Once light and creamy add the egg and mix

thoroughly.

3. Sift in the flour, baking powder, salt, and mixed spice and then add the vanilla extract

and mix with a wooden spoon until you reach a biscuit dough consistency.

4. Turn the dough onto a floured work surface and roll out to about 1cm/½in thick.

Cut out biscuit shapes (such as stars or Christmas trees) and place

onto the lined baking tray

5. Using a smaller cutter or a knife cut out the centre of each biscuit.

Place a boiled sweet into the hole (use half a sweet if your hole is

smaller than 2.5cm) and place in the preheated oven to cook for

15 minutes, or until golden-brown and crisp.

The sweet should be fully melted.

6. As soon as the biscuits are baked and while they are still warm,

use a straw to poke a hole out of the top of each biscuit.

Be careful not to make this hole too near the edge of the biscuit.

Once the melted sweets have hardened, transfer to a wire

rack to cool then thread a length ribbon through the hole.

Winter warming recipe

Tom Kerridges’s Ultimate pigs in blankets

If you love pork, you’ll love these – black pudding, sausage meat and

bacon all rolled into one. If there’s a better posh breakfast or brunch

dish, I don’t know what it is. Serve the pigs in blankets with fried or

poached eggs and lots of thick, buttered toast.

250g good-quality black

pudding, any casing removed

1 egg

2 tablespoons double cream

2 tablespoons finely chopped

sage leaves

16 rashers of smoked streaky

bacon, rind cut off

4 sausages, the best quality you

can find

Vegetable oil, for cooking

FOR THE CUMBERLAND

SAUCE GLAZE

25g butter

2 banana shallots, finely diced

300ml ruby port

200g redcurrant jelly

2 teaspoons ground ginger

2 teaspoons English mustard

powder

Juice and finely grated zest of

1 orange

Juice and finely grated zest of

1 lemon

2 tablespoons green

peppercorns in brine, drained

and rinsed

TO SERVE

Fried or poached eggs and hot, buttered toast

Whizz the black pudding in a food processor until smooth

then add the egg and cream, and blend to a rich paste.

Scrape into a bowl, stir in the sage, cover and refrigerate for

up to one day.

With a sharp knife, carefully stretch out the bacon rashers

as if you’re going to wrap sausages for pigs in blankets at

Christmas.

Lay a sheet of cling film on your worktop and line up about

four pieces of streaky bacon next to each other to form a

rectangle.

Spoon a quarter of the blended black pudding on to the

bacon at a short end and, with a palette knife, spread it out

to cover half the bacon.

Peel the sausage skin from the sausages but keep them in a

sausage shape. Place one on top of the black pudding then

carefully roll the black pudding and bacon over the top of

the sausage, using the cling film as a guide – a bit like how

you might use a sushi mat to wrap up pieces of sushi. Wrap

the whole thing in the stretched bacon and roll it up tightly

in the cling film. Secure the ends by twisting the cling film

and tying it into a knot. Repeat with the 3 remaining

sausages.

Refrigerate for at least 2 hours, but preferably overnight.

To make the Cumberland sauce glaze, melt the butter in a

saucepan over a medium–low heat, add the shallots and

sweat gently for about 10 minutes until soft, stirring from

time to time.

Add the port and redcurrant jelly, raise the heat and bring to

the boil. Turn the heat down to a simmer and cook for 10–

15 minutes until the jelly has dissolved and the liquid has

reduced a little. Add the ginger and mustard. Pour in the

orange and lemon juices and add the zests. Stir, bring back

to the boil and simmer until reduced by half. Stir in the

green peppercorns and remove from the heat.

Preheat the oven to 170°C/Gas Mark 3. Warm a large, nonstick

ovenproof frying pan over a medium heat and pour in

a little oil.

Take the cling film off the black pudding rolls and cook them

gently until the bacon takes on an even colour all over. Put

the pan in the oven and roast for 8–10 minutes.

Remove the pan from the oven, gently pour away any

rendered fat and then put it back on the hob over a

medium–high heat. Pour in the Cumberland sauce. Bring to

the boil and reduce the sauce to a glaze, while basting the

sausages to give them a lovely, rich, glossy shine.

Serve as a very hearty breakfast or brunch with some eggs

and hot, buttered toast.

Tom is cooking live at the BBC Good Food Show Winter at

NEC Birmingham, November 28th – December 1st.

Car Review

Citroen C4 Cactus Hatch

By Sue Cooke

I pulled the office door shut, glad to be leaving the chaotic

day behind closed doors and sloshed through a heavy

downpour to the car park. It was easy to spot the Citroen

C4 Cactus Hatch I had on road test because there was

nothing else like it among the boring boxes waiting for their

owners return.

Owners have a choice of four Colour Packs and can add

individual touches to front fog light trims and Airbump®

panels. There are 31 exterior combinations for this highly

distinctive car which received a series of updates in

October this year.

But after a long day at work I just needed to get home.

Keyless entry meant I could walk up to the car and just

open it, without having to search in the bottom of my bag

for a key. I flopped into the gorgeous interior which Citroen

says is inspired by furniture design. But what I needed more

than anything was comfort. I researched the word in my

stack of press releases and came up with nothing. It’s an

alien word in the world of new cars where the sentence

usually includes sports suspension or run flat tyres.

Far from being a ‘prickly’ hatch, the C4 Cactus has

outstanding comfort and was very welcome after driving a

series of cars this year that were a threat to my fillings.

Making its debut is a pioneering Advanced ComfortR

Programme. The unique suspension system has

Progressive Hydraulic CushionsR and sumptuous

Advanced ComfortR seats.

As the top of the range ‘Flair’ trim has accounted for 80%

of orders, Citroen has dropped the entry level and has

introduced a new well specified ‘Origins’ Collector’s edition.

Customers can choose Polar white or optional Cumulus

Grey, Platinum Grey or Obsidian Black body colours. The

colour pack adds bronze fog lamps and AirbumpR panel

surrounds complemented by ‘Origins’ decals. The 17 inch

Scene Local Media 01952 780058

black ‘cross’ alloy wheels add to the striking look. The

Origins Collector’s edition was introduced earlier this year

as part of the brand’s centenary celebrations.

As standard, the ‘Origins’ trim includes MirrorScreen® with

Apple CarPlay and Android Auto; rear parking sensors;

automatic air-conditioning; automatic lights and

windscreen wipers; 7-inch colour touchscreen; and an

exclusive ‘Origins’ interior ambience and exterior colour

pack with bronze coloured design details. The huge rear

door pockets help to keep a family car clutter free and there

is a large boot. Quirky features include a glovebox which

looks like a mini suitcase and is very spacious and there

are wide leather pulls on the inside of the doors which are

also reminiscent of luggage straps.

The current best-selling ‘Flair’ trim continues with a wide

variety of engine choices, including the recently introduced

RDE2-compliant PureTech petrol engine, available with a

manual or EAT6 automatic gearbox. My road test car was

powered by the very quiet BlueHDi diesel engine

technology and there is a choice of manual or automatic

transmission.

‘Comfort is cool’ says Citroen and at the end of a fraught

day, the C4 Cactus Hatchback is just the right welcome to

take you comfortably, securely and safely home.

THE GHOSTS OF CHRISTMAS

STRESS, ANXIETY

AND DEPRESSION

Christmas time is often associated with joy

and happiness. A time of plenty, where we

eat and drink in abundance and we spend

time with family and friends. But did you

know that the suicide rate actually rises

around Christmas and the New Year.

There are many factors that lead to the rise

in suicide rates. STRESS is at an all-time

high as people feel the pressure to provide

for their families. They need to buy all the

extras that Christmas demands, not to

mention all those expensive gifts. This stress

can put pressure on relationships and even

cause them to break down which adds

another negative impact to people’s lives.

Christmas can be very lonely for some

people. Those that have lost loved ones or

fallen out of touch with family often mourn

their lost relationships. Christmas will

amplify their loss as they long for company

at a time that is supposed to be festive and

all about family. Christmas can be a

reminder of just how little you have and how

lonely you are.

So with those factors in mind and many

others, you can see how STRESS,

ANXIETY, LONELINESS AND

DEPRESSION can increase drastically.

It is so very important for us to look out for

each other through the year but especially

so around the festive season. If you know of

someone that may be struggling, make sure

you reach out to them. They may not be

able to reach out to you, so be sure to offer

that support that they need. If you know of

someone that is alone over the Christmas

period, be sure to pop in to them. Even if it

is just for a quick cup of tea, that could

make all the difference.

If you battle with any of the issues

mentioned in this article there are helplines

available to offer you support and people

willing to be there and to listen. There is

even a text or email service if you find

talking difficult. REMEMBER YOU ARE

for? Good Luck!

Gemini - (22nd May - 21st June)

Gemini it’s been a funny old year in many ways, and

November 13th's Waning Moon sees 'dissolution'... Please

look for the positive and beware of playing the victim! it’s

about living in the present! so forget regret! Luckily January

sees opportunity and escape on its way, bringing extreme

good fortune! Hold in there!

Cancer - (22nd June - 22nd July)

been hidden? On the positive side September 2020 may

seem far off but make plans for that month as it will prove

fruitful, especially for commitment or travel!

Leo - (23rd July - 23rd August)

It’s all about the home as this year ends Leo, making

the home you have great! or a planned house move

becoming a focus for yourself or people close to your

concerns. 'Keywords' this yule tide are extravagance luxury

and overindulgence. Have fun!

Virgo - (24th August - 22nd September)

Watch your temper this December Virgo, but still be

ruthless, and why should you compromise? In fact, escape is

calling, somewhere 'far out' or 'far away' are desired, slot in

December 9th Mercury joins to see you being able to charm

any birds out the trees! Plans for February are well starred, if

innovative thinking and stability around you to make things

happen!

Capricorn - (22nd Dec - 20th January)

November 26th Venus brings focus onto love and family matters,

there is a fantasy in mind to, and a need to gamble and

throw oneself recklessly into a period of rest, feet up,

recharge, just do it, forget the timing and planning, the time

is now, especially if exotic beaches are calling....

Aquarius - (21st January - 18th February)

The Waxing Crescent Moon on December 1st sees investment

opportunities and money-spinning ideas coming to the fore, life

it seems is going in just the right direction! Expect visitors this

Christmas, in fact expect the most unlikely choices of partners

and friendships or relationships to pop up! and most of all be

'malliable', bend and flow, none of this rigidness Aquarius!

Pisces - (19th February - 20th March)

The Waxing Gibbious Moon stage starting November 6th sees

you wanting to be an individual and do your own thing! your own

way!, Yet it seems that what is expected of you this yuletide is the

traditional and expected ways of being so get your expressive

gregarious self out during November as you need to conform to

the norm December, but by then you won’t mind so much!

Care in the community

Could a WATCH alarm give you

peace of mind this Christmas?

For people caring for a friend or family member the gift of peace of mind is

priceless. WATCH can offer an assistive technology solution for carers,

family or friends looking for peace of mind when they need to leave those

they care for at home independently, whether to go to an appointment, to

work, or simply to pick up the shopping.

WATCH is a lifeline pendant alarm service that supports individuals looking to technology to help them remain

independent in their own homes. A WATCH alarm provides reassurance that help is available at the touch of a

button - 24 hours a day, 365 days a year.

The lifeline pendant alarm simply connects to a phone line and is operated by the touch of a button, via a

pendant worn around the neck or wrist. A powerful microphone on the alarm unit means that help can be called

from anywhere in and around the property.

The alarm can also be adapted to each person’s needs with a range of add-on equipment such as falls detectors,

door contact sensors and pill dispensers.

Customer, Miss Egan, explains: “I’m epileptic and with my WATCH alarm I know that if I have a fit my mum will be

called or a paramedic can get in if necessary.”

WATCH also offers a Mobile Response Officer service which is available to people living in the TF postcode area.

The first aid trained officers act as an emergency response to alarm activations, attending the property if

necessary. This is useful for people that may not have friends and family nearby or

as a backup response if an alarm user’s named contacts are on holiday or

unavailable to respond to an alarm activation.

WATCH is certified under the Quality Standards Framework by TEC Quality which

provides assurance to its users that they deliver quality in what is otherwise a

largely unregulated industry.

Give the gift of independence this Christmas season and phone

Home hunters in Shifnal visit new-build location

by housebuilder with environmental focus

Home hunters keen on a move to Shifnal can visit a newbuild

location by a housebuilder that is focused on its

environmental impact and has released properties from its

new collection.

Bovis Homes, which has homes available at Iddeshale

Gardens, on Haughton Road, has matched the space and

countryside feel that surrounds it and many of the properties

offer beautiful open-space views.

Iddeshale Gardens also features a large balancing pond, that

has been created to act as a temporary water storage facility

but will also become a permanent environmental feature to

encourage wildlife in the future.

Elaine Cartwright, regional sales and marketing director, said:

“Iddeshale Gardens is a stunning location with a new range

of homes now available with fresh designs. We’ve considered

the local area and our homes mimic the space and

countryside.

“We are proud of the energy-efficient homes we have here

and support home buyers and families as best we can, with

great open spaces, facilities and also purchasing schemes

to help people move into their own brand-new property.”

Bovis Homes properties at Iddeshale Gardens are around 65

per cent more energy-efficient, use 30 per cent less water

and are 50 per cent cheaper to run than an equivalent

Victorian house, according to Home Builders Federation

figures, keeping home owners warm in the winter and saving

them money on utility bills.

The housebuilder, which is reducing the size of its carbon

footprint on locations, also offers double-glazed windows

and doors, lower CO2 emissions, water saving systems,

efficient boilers and quality insulation.

Bovis Homes has special offers on selected plots including

a five per cent deposit match or stamp duty paid; an interior

design package, worth up to £5,000; flooring; and £1,000

worth of legal fees.

"We have a great range of purchasing assistance options at

Iddeshale Gardens,” Elaine added.

“Our interior designer will help you style your new home the

way you want and we’ll give you up to £5,000 to spend plus

one-to-one consultations.

House types at Iddeshale Gardens include the threebedroom

Spruce, four-bedroom Aspen and Chestnut and

five-bedroom Birch.

All have a 10-year NHBC Buildmark warranty and prices at

the location start from £299,995.

Purchasing schemes include the Government’s Help to Buy

Equity Loan initiative, Smooth Move, Home Exchange, plus

the housebuilder’s Key Workers scheme.

Using the Help to Buy – Equity Loan scheme, home buyers

need just a five per cent cash deposit, with the Government

providing an equity loan of up to 20 per cent of the value of

the property being bought. Purchasers then need to secure

up to a 75 per cent mortgage.

Buyers looking to sell their home can take advantage of Bovis

Homes' Smooth Move scheme, which can save time and

thousands of pounds, with the home builder dealing with the

estate agent on the customer's behalf, as well as paying the

fees.

Bovis Homes’ Home Exchange initiative means the

housebuilder will purchase the customer's current property,

which means they can avoid all those estate agent fees and

time-consuming, stress-building house chains. It also means

that purchasers can stay in their current house until their new

home is ready.

To part-exchange their home, a customer’s current property

must be valued at no more than 75 per cent of the new Bovis

Home they wish to purchase. Bovis Homes will arrange for

the buyer's property to be valued, then make them an offer

based on the valuation.

Meanwhile, the Key Workers initiative offers great discounts

to employees of certain public sector bodies.

Bovis Homes’ new housing collection, which includes two to

five-bedroom homes that have been designed and

developed by the company over the last 12 months, are

named after British trees and focus on well-proportioned

exteriors with a real sense of light and flow on the inside.

To find out more about the house types and

purchasing options available at Iddeshale Gardens,
