Nothing gets people in the festive spirit more than the wonderful fragrant smell and taste of a
warming glass of Mulled Wine. This recipe is very simple and there is no need to splash out on an
expensive bottle of red wine. Any red wine will do due to the beautiful spices that are added.
This recipe can easily be doubled or trebled depending on the quantity you desire.
1 litre dry red wine
2 (5cm) cinnamon sticks
1 dessertspoon whole cloves
1 dessertspoon whole allspice
1 large piece orange rind (avoid the pith)
1 large piece lemon rind (avoid the pith)
4 tablespoons sugar, or to taste
1. In a heavy saucepan over medium heat, combine the red
wine, cinnamon, cloves, allspice, lemon rind and orange rind.
Heat gently, but don't bring to the boil.* Stir in 2 tablespoons
of the sugar, and once dissolved, taste to see if you'd like to

flavours infuse the wine. Serve your mulled wine hot in
glasses or mugs.
*If you allow the wine to boil you will burn off any alcohol, so be
sure to keep the heat low enough*

wine with cranberry juice. Children will love helping you make

Gnocchi, Mushroom & Gratin Lovers
Michel Roux Jr.’s - Gnocchi and wild mushroom gratin
This particular type of gnocchi is made with choux pastry and is called ‘à la Parisienne’.
I used to make a dish similar to this when I worked as an apprentice in Paris. It is now a
favourite in the Roux household as it’s easy and fun to make.
1 pinch salt
1 pinch white pepper, ground
1 teaspoon dry cep powder
125g plain flour, sifted
3 free-range eggs
30g plain flour
Salt, pepper, nutmeg
1 spring thyme
1 bay leaf
FILLING AND TOPPING
360g mixed wild mushrooms
2 cloves garlic, peeled and crushed
60g Cheddar, grated
40g Parmesan, grated
Start by making the choux pastry. Bring the water and butter
to the boil with the seasoning. As soon as it boils, take the
pan off the heat and stir in the sifted flour with a wooden
spatula. When this is well mixed and smooth, return the pan
to the heat. Cook the choux pastry over a medium flame, stirring
vigorously all the time. Continue to cook for 2-3 minutes;
the bottom should be starting to catch. Take the pan off the
heat and beat in the eggs one at a time. This takes a long
time and a lot of beating.
Preheat the oven to 200°C/Gas 6. Take an ovenproof dish,
measuring about 20 x 28cm and about 5cm deep, or some

as it comes out. Simmer the gnocchi for about 5 minutes,
then gently lift them out with a slotted spoon. Put them
straight into iced water to halt the cooking, then drain in a

Slowly whisk in the milk over high heat and add the seasoning
and herbs. Bring to the boil, then turn down the heat and
simmer the sauce for 10 minutes. Take off the heat, pour
through a fine sieve, cover and set aside.
Clean and trim the mushrooms. Pan fry in a little olive oil, allowing
them to colour a little. Add the garlic at the end, season
with salt and a little pepper.

Christmas - it’s the most wonderful time of the year. But for many, it also ends up feeling like the
most stressful time of the year, too. We’re material girls (and boys) living in a material world, and
the act of gift-giving has always been the focus of the festive period.
With lots to pay for - food and drink, presents and outings, it’s not uncommon for families to
feel a huge financial strain. But it doesn’t have to be that way. With just a touch of focus, a
pinch of imagination and a sprinkling of organisation, this one day of the year doesn’t need
to cause such a headache.
Contrary to popular belief, ‘minimalism’ is not the act of owning nothing - it’s a mindset
that allows you to spend sensibly, only on items that you really believe are bringing
value into your life. Taking a step back from mindless traditions and re-assessing what
works for you as an individual or family can transform how you see this precious time
of year, a time that is intended to bring people together.
By embracing a more minimalist festive period, the traditional act of racing around
the shops on Christmas Eve can be a thing of the past. You might even enter the
next year with a whole load of new memories to look back on, too (none of which
rely on wrapping paper and sellotape).
ONE GOOD THING
We all know that the ‘to-buy-for’ list can get pretty humongous, and seizing a
‘quality over quantity’ mindset can completely transform how you experience
Christmas. Why not consider a one-gift-each policy as a household? Especially for
children, the volume of stuff that passes hands during December is incredible
(and we all know that some of it is forgotten in seconds). Allowing kids to
concentrate on opening one or a small handful of toys (rather than a mountain)
lets them actually absorb the receiving of each item - they can cherish it and
learn about it, rather than throwing it down and moving onto the next best thing.
HAVE A SYSTEM
If your family (and extended family) is a large one, ‘Secret Santa’ is a fantastic
method. Allocating each person just one other to buy for, avoids everyone having
to buy for everyone. We do it with our colleagues to lighten the load so why not
with our loved ones? Setting a spending limit can be a useful tactic too.
Affordable experiences always make fantastic gifts, especially if you can enjoy

My Son Ethan took his GCSE’s earlier this year and I can proudly say he passed all 9 with flying
colours. Yes, a lot was down to him, but I have to say the Tutor Doctor played a big part with his maths

Screen time and the impact
on Health and Wellbeing
This edition will focus on
digital health and the issues
young people and their parents/carers
can face with screen time and finding the
balance to stay fit, active, healthy and
interactive. We are trying to manage very
busy lives these days, we work longer
hours and we have busy calendars. The
invention of the smart phone/tablet has
brought about an unprecedented level of
screen time into most people’s lives. Trying
to find the balance is something we all
strive to achieve – it is a new challenge to
parents and carers so have taken a look at
the current guidance and attempted to
make sense of it and highlight some of the

long we should allow children to stay
on their screens and how we make
sure screen time does not influence
family time or normal play,
development and physical movement
for our children and young people.
Many studies have been conducted in
this area, they have mostly been
observational studies that have
considered the views of parents and
children and young people. The World
Health Organisation laid out some
very strong recommendations
recently; you may have read the
headlines back in April of this year.

The recommendations were as follows;
• Children less than two years to avoid screen time if
• Children 2-5 to have no more than one hour of screen
time per day
• Children to be encouraged to be physically active rather
than sedentary to avoid issues with weight, cognitive
ability and fitness levels
However, the NHS recently published a report that argued
that some of the evidence to support this research and
guidance was not robust enough and the Royal college of
Paediatrics and Child Health have stated that due to a lack
of robust evidence they cannot totally support these
recommendations, suggest parents approach the issue with
a case by case basis, keeping in mind that every child is
different. Instead they suggest families start to negotiate
with children screen time limits, based on need, the way in
which it is used and the degree to which it is used.
The clear message is to maintain a balance with sleep and
other positive physical activities. The report that was written
by The Royal College of Paediatricians and Child Health in
January of this year asks this of parents and carers:
• Is Screen time in your household controlled?
• Does screen time use interfere with what your family want
• Does screen use interfere with sleep?
• Are you able to control snacking during screen time?
In occupational therapy we always favour a balance of
occupations (the things we do). To improve overall health
and wellbeing, we need to consider balance and routine
and how best we manage this in ever increasingly busy and
sedentary lives. So how can we all do this?
• Put limits on the time we spend on screens
• Have a screen free evening once a week
• Encourage getting out and walking/moving when it is
• Encourage standing up at work and stretching during
• Encourage children to close screens down and move
around the house
• Play! Children learn through play – so encourage ball
games / card games / board games / sports
What do children and young people say?
The RCPCH consulted with 109 children and young people
to gain more insight into how they felt screen time was
impacting their lives and these were the findings:
• 88% said screen time had a negative impact on sleep
• 41% said it had affected play / fun
• 18% said screen time had a negative impact on family

Floatation therapy is also known as Restricted
Environmental Stimulation Therapy, or REST, as it
creates an almost sensory-free environment in which
the effects of gravity, temperature, light and sound
sensations are removed. This frees your brain from
interpreting incoming messages so it can focus on
resetting the body’s physiology back to normal levels –
including a high blood pressure
Floatation therapy is the most
powerful stress relief technique
known. Floating has been shown
many times (and in controlled
studies) compared to bed rest is the
most relaxing experience on earth. It
has been said that just one hour of
floating can have the restorative
effect of four hours of deep sleep.
Floatation involves lying in a lightproof,
containing a shallow, ten-inch deep
pool of warm water in which around
700 lbs of Epsom Salts (magnesium
sulphate) are dissolved. This forms a

Do you need Lip Fillers?
Since turning 40 last year and starting to feel like my face is starting to
show signs of aging, I have debated the question – do I need lip fillers and
what if I end up with the dreaded ‘duck look’. With well proportioned and
a decent size to my lips already, I had decided against it, until I walked
into Park Street Clinic in Shifnal and met Helen.
Helen was brilliant at talking me through the procedure and advising if
I would benefit from having lip fillers, she also reassured me that she only
does a natural enhancement look and not the ‘duck look’. She was very
complimentary about my own lips and there was no pressure at all, so I
went for it.
Helen explained the procedure clearly to me, what to expect, the fact that
it was painful, and swelling / bruising can happen over the next 48 hours
and an aftercare sheet was given to me to read before I went ahead.
Starting to feel nervous, Helen was very good at reassuring me and
keeping me calm, she was always very professional and gave me complete
confidence. She applied numbing cream to my lips first and left that to
work for 15 or so minutes, then it was time! I’m not going to lie, yes it hurts
for a few seconds each time the filler is injected and it’s not a pleasant
experience, Helen again was very good at keeping me calm and reassured.
The whole procedure of the injections took just over 15 minutes and I had
just under a ml of filler, the instant results were amazing, my lips just
looked fuller I felt fantastic and didn’t feel like a duck at all, it just looked
very natural and younger too.
Over the next 48 hours my lips did swell quite a lot and the pain eased off overnight, this can be quite a
worrying time but thankfully Helen had explained everything to me so well I knew exactly what to expect
and wasn’t too concerned, I also had the back up of two friends that have also had lip fillers to ask, and they
also reassured me it was normal, to keep a cold compress on to ease swelling and just give it 24 hours and
things will calm down.
By day three my lips looked amazing, and the pain and discomfort was totally worth it, I had a whole new
level of confidence and kept looking at myself in the mirror all the time, something I never do. The best thing
was if I didn’t tell you I’d had my lips done, you really wouldn’t know as they look so natural, just fuller all
over and much more youthful.
From someone who said they would never have lip fillers I would now highly recommend to anyone needing
that boost of confidence, but I would also be very careful where you go to just achieve a natural look and
Park Street Clinic is highly recommended, this can be backed up with them recently winning The Midlands
Beauty Industry Awards for the Highly Commended status in their category.
Would I recommend lip fillers? Well I will definitely be returning for more once these have worn off in about
6 months. If you don’t like needles and pain, this procedure isn’t for you, but for a beauty and confidence

Waste Not - Want Not!
The Kitchen Table is a small home run business. It produces wonderful, fresh, home-made products in the form
of meals, cakes, party food, desserts, pastries and more. The Kitchen Table is run by a lovely lady called Becky.
Becky has such a bubbly, enthusiastic and up-beat personality that you can’t help but feel happy when you’re
around her. She puts the same energy and enthusiasm in to her cooking. You can really taste the love in her food.
Becky prides herself on using the finest ingredients and does her best to support local businesses. Wherever
possible she will buy local produce to create her meals. Becky is a very conscientious chef and ensures she
produces as little waste as possible. I had the opportunity to interview Becky and gain her thoughts on the
matter of waste. And she has provided us with the perfect recipe for your left over Christmas turkey as well as
another for any leftover cheese.
Here’s what she had to say...
“There is an ever growing concern for the environment and it is at the forefront of everyone’s minds at
present. Are we recycling enough? Are we doing our best to reduce energy usage? We all want to reduce
our carbon footprint but are people doing the same when it comes to food? To produce any kind of food, be
it meat or vegetables, the process creates a carbon footprint. Therefore if that food goes to waste that carbon
footprint will have been made in vain.
So this Christmas lets all be mindful of food waste. Do you really need a whole turkey if you only eat the
breast meat? Do you really need to buy another box of chocolates when Doreen from two doors down will
be gifting you all of her unwanted chocolates on Boxing Day anyway?!”
Here is my very own recipe for any left-over Turkey.
1 tbsp Cooking Oil
1 Cooking Onion diced
1 tbsp Garlic Paste
1 tsp Cumin
½ tsp Chilli Powder
1 tsp fennel Seeds
1 tsp Ground Fenugreek
1 tsp Ground Coriander
1 tsp Paprika
1 tsp Turmeric
1 Tin of Coconut Milk
1 tbsp Dark Soy Sauce
2 tbsp Light Brown Sugar
Salt and pepper to taste
400ml Hot Chicken Stock
1 Bunch Fresh Coriander
4 tbsp Crunchy Peanut Butter
(add more to taste)

she spent a large chunk of her working life
behind a Deli counter. This is where her
passion for cheese really took off. What
Becky doesn’t know about cheese isn’t
worth knowing. Her fondness of cheese
earned her the nickname “Cheesy Bex”
whilst working at the Deli - a nickname
she still carries with her today.
1. In a large frying pan heat the oil and
add the onion. Cook until soft.
2. Add the garlic and all the dry spices.
Cook on a low heat until aromas
released, around 4 minutes.
3. Stir in coconut milk, soy, sugar and
chicken stock. Bring to the boil then
leave to simmer for 5 minutes.

left-over turkey and add to the

Anyone who knows me, knows that cheese is my absolute
favourite food ever!! Here is what I will be having on my
cheese board this Christmas. It is a mix of local and continental
cheese. Although I like to buy local produce, when it
comes to cheese it’s best to have a mix as some things are
better sourced from their country of origin.

If you do find yourself with any left-over cheese, here is a very simple way to
use it up and create a real comforting meal for those cold winter evenings
350g Macaroni Pasta
Pinch of salt
2 tbsp Butter
3 tbsp Plain Flour
1. Add the salt to a pan of water,
bring to the boil and cook the
pasta until al dente.
2. Melt the butter in a heavy
bottom pan and add the flour.

Stir constantly and cook for

These very tasty biscuits make beautiful homemade Christmas gifts or keep them for yourself as an
alternative to Christmas tree chocolates. They look fantastic hanging on the Christmas tree with the

You will need:-
• Pastry cutter (Christmas tree or Star shape
work best for this festive themed biscuit)
• 150g butter, softened
• 100g muscovado sugar
• 1 large free-range egg
• 250g plain flour, plus extra for dusting

• 1 tbsp mixed spice
• 1 tsp vanilla extract
• 1 pack boiled coloured sweets
How to make:-
1. Preheat the oven to 180C/350F/Gas 4 and line a baking tray with greaseproof paper.
2. Whisk together the butter and sugar in a large bowl. Once light and creamy add the egg and mix
3. Sift in the flour, baking powder, salt, and mixed spice and then add the vanilla extract
and mix with a wooden spoon until you reach a biscuit dough consistency.
4. Turn the dough onto a floured work surface and roll out to about 1cm/½in thick.
Cut out biscuit shapes (such as stars or Christmas trees) and place
onto the lined baking tray
5. Using a smaller cutter or a knife cut out the centre of each biscuit.
Place a boiled sweet into the hole (use half a sweet if your hole is
smaller than 2.5cm) and place in the preheated oven to cook for
15 minutes, or until golden-brown and crisp.
The sweet should be fully melted.
6. As soon as the biscuits are baked and while they are still warm,
use a straw to poke a hole out of the top of each biscuit.
Be careful not to make this hole too near the edge of the biscuit.
Once the melted sweets have hardened, transfer to a wire
rack to cool then thread a length ribbon through the hole.

Winter warming recipe
Tom Kerridges’s Ultimate pigs in blankets
If you love pork, you’ll love these – black pudding, sausage meat and
bacon all rolled into one. If there’s a better posh breakfast or brunch
dish, I don’t know what it is. Serve the pigs in blankets with fried or
poached eggs and lots of thick, buttered toast.
250g good-quality black
pudding, any casing removed
2 tablespoons double cream
2 tablespoons finely chopped
16 rashers of smoked streaky
bacon, rind cut off
4 sausages, the best quality you
Vegetable oil, for cooking
FOR THE CUMBERLAND
2 banana shallots, finely diced
300ml ruby port
200g redcurrant jelly
2 teaspoons ground ginger
2 teaspoons English mustard
Juice and finely grated zest of
Juice and finely grated zest of
2 tablespoons green
peppercorns in brine, drained
Fried or poached eggs and hot, buttered toast
Whizz the black pudding in a food processor until smooth
then add the egg and cream, and blend to a rich paste.
Scrape into a bowl, stir in the sage, cover and refrigerate for
up to one day.
With a sharp knife, carefully stretch out the bacon rashers
as if you’re going to wrap sausages for pigs in blankets at
Lay a sheet of cling film on your worktop and line up about
four pieces of streaky bacon next to each other to form a

bacon at a short end and, with a palette knife, spread it out
to cover half the bacon.
Peel the sausage skin from the sausages but keep them in a
sausage shape. Place one on top of the black pudding then

you might use a sushi mat to wrap up pieces of sushi. Wrap
the whole thing in the stretched bacon and roll it up tightly
in the cling film. Secure the ends by twisting the cling film
and tying it into a knot. Repeat with the 3 remaining
Refrigerate for at least 2 hours, but preferably overnight.
To make the Cumberland sauce glaze, melt the butter in a
saucepan over a medium–low heat, add the shallots and
sweat gently for about 10 minutes until soft, stirring from
time to time.
Add the port and redcurrant jelly, raise the heat and bring to
the boil. Turn the heat down to a simmer and cook for 10–
15 minutes until the jelly has dissolved and the liquid has
reduced a little. Add the ginger and mustard. Pour in the
orange and lemon juices and add the zests. Stir, bring back
to the boil and simmer until reduced by half. Stir in the
green peppercorns and remove from the heat.
Preheat the oven to 170°C/Gas Mark 3. Warm a large, nonstick
ovenproof frying pan over a medium heat and pour in
a little oil.
Take the cling film off the black pudding rolls and cook them
gently until the bacon takes on an even colour all over. Put
the pan in the oven and roast for 8–10 minutes.
Remove the pan from the oven, gently pour away any
rendered fat and then put it back on the hob over a
medium–high heat. Pour in the Cumberland sauce. Bring to
the boil and reduce the sauce to a glaze, while basting the
sausages to give them a lovely, rich, glossy shine.
Serve as a very hearty breakfast or brunch with some eggs
and hot, buttered toast.

Citroen C4 Cactus Hatch

I pulled the office door shut, glad to be leaving the chaotic
day behind closed doors and sloshed through a heavy
downpour to the car park. It was easy to spot the Citroen
C4 Cactus Hatch I had on road test because there was
nothing else like it among the boring boxes waiting for their

But after a long day at work I just needed to get home.
Keyless entry meant I could walk up to the car and just
open it, without having to search in the bottom of my bag
for a key. I flopped into the gorgeous interior which Citroen
says is inspired by furniture design. But what I needed more
than anything was comfort. I researched the word in my
stack of press releases and came up with nothing. It’s an
alien word in the world of new cars where the sentence
usually includes sports suspension or run flat tyres.
Far from being a ‘prickly’ hatch, the C4 Cactus has
outstanding comfort and was very welcome after driving a
series of cars this year that were a threat to my fillings.
Making its debut is a pioneering Advanced ComfortR
Programme. The unique suspension system has
Progressive Hydraulic CushionsR and sumptuous
Advanced ComfortR seats.
As the top of the range ‘Flair’ trim has accounted for 80%
of orders, Citroen has dropped the entry level and has
introduced a new well specified ‘Origins’ Collector’s edition.
Customers can choose Polar white or optional Cumulus
Grey, Platinum Grey or Obsidian Black body colours. The
colour pack adds bronze fog lamps and AirbumpR panel
surrounds complemented by ‘Origins’ decals. The 17 inch

black ‘cross’ alloy wheels add to the striking look. The
Origins Collector’s edition was introduced earlier this year
as part of the brand’s centenary celebrations.
As standard, the ‘Origins’ trim includes MirrorScreen® with
Apple CarPlay and Android Auto; rear parking sensors;
automatic air-conditioning; automatic lights and
windscreen wipers; 7-inch colour touchscreen; and an
exclusive ‘Origins’ interior ambience and exterior colour
pack with bronze coloured design details. The huge rear
door pockets help to keep a family car clutter free and there
is a large boot. Quirky features include a glovebox which
looks like a mini suitcase and is very spacious and there
are wide leather pulls on the inside of the doors which are
also reminiscent of luggage straps.
The current best-selling ‘Flair’ trim continues with a wide
variety of engine choices, including the recently introduced
RDE2-compliant PureTech petrol engine, available with a
manual or EAT6 automatic gearbox. My road test car was
powered by the very quiet BlueHDi diesel engine
technology and there is a choice of manual or automatic
‘Comfort is cool’ says Citroen and at the end of a fraught
day, the C4 Cactus Hatchback is just the right welcome to
take you comfortably, securely and safely home.

Christmas time is often associated with joy
and happiness. A time of plenty, where we
eat and drink in abundance and we spend
time with family and friends. But did you
know that the suicide rate actually rises
around Christmas and the New Year.
There are many factors that lead to the rise
in suicide rates. STRESS is at an all-time
high as people feel the pressure to provide
for their families. They need to buy all the
extras that Christmas demands, not to
mention all those expensive gifts. This stress
can put pressure on relationships and even
cause them to break down which adds
another negative impact to people’s lives.
Christmas can be very lonely for some
people. Those that have lost loved ones or
fallen out of touch with family often mourn
their lost relationships. Christmas will
amplify their loss as they long for company
at a time that is supposed to be festive and
all about family. Christmas can be a
reminder of just how little you have and how
lonely you are.
So with those factors in mind and many
others, you can see how STRESS,
ANXIETY, LONELINESS AND
DEPRESSION can increase drastically.
It is so very important for us to look out for
each other through the year but especially
so around the festive season. If you know of
someone that may be struggling, make sure
you reach out to them. They may not be
able to reach out to you, so be sure to offer
that support that they need. If you know of
someone that is alone over the Christmas
period, be sure to pop in to them. Even if it
is just for a quick cup of tea, that could
make all the difference.

Home hunters keen on a move to Shifnal can visit a newbuild
location by a housebuilder that is focused on its
environmental impact and has released properties from its

the buyer's property to be valued, then make them an offer
based on the valuation.
Meanwhile, the Key Workers initiative offers great discounts
to employees of certain public sector bodies.
