Record
number of
objections
to proposed
liquor store
• By Claire Booker
A RECORD-breaking number
of objections were submitted to
the city council over a proposed
liquor store on Memorial Ave.
In the last three years, the most
public objections the city council
had received on an alcohol licence
application was 121.
But 207 people opposed the liquor
store near the BP petrol station
on Memorial Ave, which is within
1km of four primary schools.
Key concerns for residents are
a lack of parking, an increase in
alcohol consumption and alcoholrelated
anti-social behaviour, and
frustration around Memorial Ave
being a memorial for fallen soldiers.
The proposed liquor store would
operate from 9am-10pm, seven
days a week.
Isobel Anderson lives in the
property which shares a driveway
with the proposed store, and she
said the large number of objections
was “absolutely wonderful.”
Said Ms Anderson: “I think
we’re passionate about our area
here. There’s obviously been a
problem with liquor in the area
because we’ve had a liquor ban
in place. So we’re pretty keen on
trying to stop it [liquor store].”
Quarry plan hearings get under way
• By Devon Bolger and Georgia
O’Connor-Harding
THE LONG-awaited
hearings on the plan to open
a contentious quarry near
Templeton were due to start
yesterday.
Residents and groups opposed
to the proposed quarry felt
“apprehensive” before the
hearings.
Fulton
Hogan’s
proposal to
open a quarry
between
Dawsons, Jones,
Maddisons and
Simon Moore
Curraghs Rds
has received
major backlash
from residents in the area.
Said quarry opponent
Simon Moore: “I am glad (the
hearings are) happening but
I’m also a little bit apprehensive
about it because it seems that
throughout the process when an
issue has been pointed out, an
expert has come in and worked
it out and that’s someone who is
being paid by Fulton Hogan.”
However, Mr Moore said he
thinks there is a reasonable
chance the hearing will go his
way.
“The problem is, this is
just the first part of it. If the
commissioners say no, Fulton
Hogan is just going to appeal it.
This is just the start, because if
they lose, they’re not going to
give it up and they have
a lot more money than
any of us,” he said.
His views have been
backed by Templeton
Residents’ Association
treasurer Jolene Eagar,
who has been waiting
for more than two years
for the hearings to start.
“Not in our wildest
dreams did we think it would
take this long or the application
would be as big and complicated
Jolene Eagar
as it turned out to be,” she said.
Mrs Eagar said it is hard to
say what the outcome will be,
but she hopes the hearings
panel will agree approving
the application would be
wrong.
“None of us would have
invested all the time and
energy into this if we
didn’t think that there
was a really good chance
for the application to be
declined,” she said.
The hearings are due to run
until Friday, and then from
December 2-13. Environment
DECISION: The
long-awaited
hearings over
Fulton Hogan’s
plan to open
a quarry near
Templeton
were due to
start yesterday.
HUNTER
Canterbury has published
27 reports from some of the
individuals, businesses and
community groups set to
present evidence for and against
the quarry.
Due to the hearings starting
straight after New Zealand Cup
and Show Week, Mrs Eagar said
horse trainers due to submit at
the hearings will be “seriously
disadvantaged.”
“We have full-time jobs and
these people are at their busiest
with the horses . . . they don’t
have time to get ready for the
hearings,” she said.
Ms Anderson and Fendalton
resident Ashley Seaford were set
to meet with the Fendalton-Waimairi-Harewood
Community
Board at its meeting which was
scheduled yesterday in a bid to
get the board’s backing and
support in attending the public
hearing.
No date has been set for the
public hearing yet, but it is likely
it will be held early next year.
Ms Anderson, who has lived in
Fendalton for 27 years, did not
believe the community would be
interested in compromising with
the applicants.
“We don’t want or need it in the
community,” she said.
Ms Anderson believed about
Throughout the course of
her flyer drops, Ms Anderson
said there was only one person
who was in favour of the liquor
store.
“I think [the person in favour
of the store] thinks it’s going to
be a fancy wine bar area,” Ms
Anderson said.
A series of reports will be completed
by the police, the medical
officer of health and an inspector
in regards to the licence for the
liquor store.
The file will then be referred to
the district licensing committee,
and a hearing will be held, which
members of the public will be
able to attend and make verbal
submissions.
Sections from $191,000
$10,000 boost to get
aspiring pilot’s career off the ground
• By Georgia O’Connor-Harding
EVER SINCE Anaru Jackson
was a young boy he has been
fascinated with planes.
“It always amazes me when I
see an aircraft fly past my house,
that something so large can fly
in the sky.”
Living only 15 minutes away
in Hornby, one of his favourite
past times is cycling out to the
Christchurch International Airport
to go plane spotting.
Now he has been taken under
former Air New Zealand captain
John Pauwels’ wing, winning a
$10,000 scholarship to train to
become a pilot.
The 15-year-old was awarded
the scholarship at Hornby High
School’s senior prizegiving
recently.
Being involved in the Young
Eagles programme and the
No 18 (Avon) Squadron, Air
Training Corps, earlier this year
Anaru met Mr Pauwels at the
Canterbury Aero Club.
Mr Pauwels runs a scholarship
programme at Hillmorton High
School dedicated to helping
young people to get into aviation.
But because Anaru does not
to study to become a pilot.
attend Hillmorton, Mr Pauwel
created a new scholarship called
the Pauwels Flying Scholarship
Special Award with funding
from the Hugo Charitable Trust.
Anaru described receiving the
award as “pretty amazing” and
he has been left overwhelmed.
In order to receive the award,
Anaru was required to go
through a screening process,
similar to the Air New Zealand
selection process.
It included an interview with
two Air New Zealand A320 pilots,
an online test and a half-day
at the Canterbury Aero Club.
At the aero club, Anaru took
a test using a flight simulator
and a second interview with the
chief flying instructor and the
academic manager.
As part of the flight simulator
test, he was required to answer
A neighbourhood for
the lucky few in the
heart of Halswell
cloverden.nz | 08004AVANDA
simple math questions along with
memorising a series of instructions
on controlling the plane.
Mr Pauwels told Western News
throughout the process Anaru
was professional, very relaxed,
polite and these were the qualities
which make a great pilot.
Following graduating from
Hornby High School in two
years time, he plans to use the
scholarship to go to the International
Aviation Academy of New
Zealand.
Upon completing his year-long
commercial pilot course, Anaru
will then be required to build his
flying hours up to between 8000
to 15,000.
He said the best way to do this
is through becoming a flight
instructor with the academy.
Growing up, Anaru said he
has always been fascinated
watching aircraft fly over his
home in Hornby. His dream is
to one day fly commercial flights
for Air New Zealand.
Winning the scholarship tops
off an already successful year for
Anaru, who has already passed
NCEA level 1 with excellence in
spite of not having completed his
external exams yet.
WIGRAM BASIN
The Wigram East Basin project
to reduce flood risk to properties
completed. The fences between
the new tracks which connect Ngā
NO STOPPING
The Halswell-Hornby-Riccarton
Community Board is due to make
its decision today on placing no
stopping or time restrictions
outside Summerset retirement
village on Platinum Drive, Wigram.
In July the board delayed
its decision over the restrictions
due to residents opposition to the
proposal. Residents views were
considered and a new proposal was
put forward to the board by the
city council.
Achievements recognised
On Monday November 4, Hornby High
School celebrated a wonderful evening,
acknowledging student achievement.
Mrs Kaye Banks a former student
herself, gave a wonderful speech on the
achievements of Hornby High School in the
last 12 months. Kaye is the current Board of
Trustees Chairperson.
The Head Girl and Boy – Shardey Harris and
Lachlan Hickford – respectively, delivered
speeches that would have inspired every
student in the auditorium for the rest of
their school years.
The passion in the Principal’s address from
Mr Robin Sutton was a clear indication
of why Hornby High School is going from
strength to strength.
Well done all award winners.
Kia ora koutou. Talofa. Kia Orana. Malo e lelei. Bula.
Fakaalofa atu. Namaste. Kumusta. Haere mai haere
mai ki Te Kura Huruhuru Ao o Horomaka. Warm
greetings to the Hornby High School community.
I love term 4. It’s a time of celebration of so much
that is great in any kura, and Hornby High School is
no exception. Our senior prize giving showcases the
extraordinary range of achievement that our students
produce, whether it be in academic or cultural work,
or the sporting, leadership, or community spheres. Our
delight at the announcement of the Dux of the school,
or the winner of the Hornby Rotary Creative Excellence
Award, are particularly special moments. This year our
joy was multiplied many fold with the announcement
of a special flight scholarship for Year 11 student Anaru,
and the standing ovation he received from students was
enough to melt the heart.
When I joined the school in 2016 I introduced what
I hoped might become a long-lasting tradition to
celebrate one particular type of achievement. We have
those students who achieve their NCEA qualification,
endorsed with Excellence, before they even enter
the examination room for external examinations in
November. This is not easy to achieve. The “tradition” is
a special morning tea with the Principal. In 2016 there
were two students who achieved this feat. This year,
2019, I have taken 13 students out to morning tea. This
is an outstanding improvement. I notice increasing
achievement at the Merit and Excellence levels in NCEA
across all three levels, and across all ethnic and gender
groups that make up our school community. These
things speak to me not only of improving achievement,
but also higher, deeper, aspiration amongst our
rangatahi. Ka mau te wehi!!
Let’s also not forget the achievement of so many others
that lay behind those results. We are all different, our
capabilities, the things that allow us to be the magic
that we are, may not fit neatly into award categories,
and it is the capacity of Hornby High School to nurture
these special talents that gives depth to our community.
It builds and supports the manaaki that IS our kura.
In this last column for the year, I’d like to pay special
tribute to the wonderful colleagues it is my privilege
to work with. Their dedication to and aroha for our
tamariki is outstanding. It has been an extraordinary
year, and in fact three years, with the planning and final
completion of our full school rebuild, and I am grateful
to our whole staff team for keeping the focus clearly on
the wellbeing of our rangatahi and their achievement
throughout these difficult and disruptive times.
Ngā mihi nui
Every Wednesday, a small group of Year 7 and
8 students visits the Hornby Elderly Daycare
Centre. They take things to share and enjoy a
morning tea together.
The students comment that it is great being able
to learn what life and school was like for the
elderly when they were their age.
The Community Impact Projects (CIP) are
curriculum innovation projects run with Year 7
and 8 students, designed to give their learning
real-world contexts, and provide opportunities
for students to make a real change in their
communities.
“The students’ engagement with their learning
is amazing; so wonderful to see,” Principal Robin
Sutton says, noting that developing an attitude
students over these past two years.
Denton Park projects delayed
the 1974 British Commonwealth Games and a memorial plaque
PLANS TO open a mural
dedicated to remembering the
significant role Hornby played in
the 1974 British Commonwealth
Games will be delayed.
The Greater Hornby Residents’
Association was initially planning
to unveil a mural and a memorial
plaque honouring Stanley
David Denton this summer.
But the two projects planned
to brighten up Denton Park will
likely be delayed by a year due
to further work needing to be
completed on the artist design
briefs.
Chairman Marc Duff said it is
expected for the projects will not
be complete until next summer.
“It is better off to do both projects
once and to do them right
as they are going to be there for a
long time,” he said.
A design brief is expected to go
out early next year.
Both projects are estimated to
cost in total between $20,000-
$25,000 and the association is
looking at various ways to fundraise
from applying for grants to
running events.
Since late last year, the association
has been looking to paint a
mural on the front of the Denton
Park Velodrome.
The 1974 British Commonwealth
Games logo is the main
artistic design being considered
for the mural.
This is due to Denton Park
being built in 1970 for the games
with the Denton Park Velodrome
being one of the last Commonwealth
buildings standing that
was used.
Mr Duff said different sports
clubs lease and own parts of the
Denton Park Velodrome and it
was important the association
worked with them to get the
design of the mural right.
The memorial plaque to honour
Mr Denton, who donated to
Denton Park in 1952 is planned
to be placed in front of the velodrome.
Mr Duff said he hoped an
artist will be working on the
mural by the beginning of next
summer.
A COMPLETE revamp is
planned for the Annandale Park
playground in Ilam.
The city council has also proposed
moving the playground
closer to the path to improve
access and limit noise heard at
nearby houses.
All existing trees will remain
in the park.
A new sealed path is proposed,
along with a picnic table,
plants and more trees to make
the area more inviting for families
and picnics.
Members of the public can
submit on a series of proposed
pieces for the playground, including
swings, a mulberry bush
carousel, which has multiple
playground.
Park revamp views sought
levels so children of all ages can
play safely, a slide and rockers.
Once the consultation closes
on the playground, the Fendalton-Waimairi-Harewood
Community
Board will make a final
decision of the improvements in
February.
Armitage Reserve playground
in Bishopdale is also planned
for improvements, and the new
playground will be moved away
from beneath the power pylons.
Fun to be
had at
Denton Park
• By Georgia O’Connor-Harding
HORNBY’S popular community
fun day is gearing up to be even
bigger and better than last year.
The Greater Hornby Residents’
Association has planned a wide
range of activities for its annual
family fun day to be held this
Sunday at Denton Park.
Event goers can take part in
running, sack, egg-and-spoon
races along with a gumboot
throwing competition.
There will also be funni bikes,
lolly scramble, pony rides, hair
platting, stilts, a bouncy castle,
a guest appearance from Santa
Claus and performances from
Darkside Entertainment.
Association treasurer Ross
Houliston said it is planning the
event will be even bigger and
better than last year. Last year,
between 500-800 people came to
the event. This year, Mr Houliston
is hoping for between 800-1200.
“It should be a great day with
lots of old-fashioned activities,”
he said.
Mr Houliston said it will be
a low-cost day with any money
made to go towards community
assets.
The event will be held from 1 to
4pm.
Eco-friendly transport use on the rise
PEOPLE ARE using their cars less
and walking, biking or scooting
more, a survey has found.
The life in Christchurch
transport survey findings show
while travel by car is still the
most popular mode of transport
in the city, there has been an
increase in the use of alternative
ways to get around.
The survey questioned about
3500 Christchurch residents
about their travel habits and the
city’s transport network.
Said city council monitoring
and research team leader Kath
Jamieson: “The proportion of
people who say they are using
their car less now compared to
12 months ago is 27 per cent –
up from 19 per cent in 2018.”
More than 40 per cent of
respondents said they cycle more
often now than they did a year
ago while 21 per cent say they
walk more often.
Ms Jamieson said the arrival
of electric scooters in Christchurch
has also impacted the way
people move around the city.
“Nineteen per cent of
survey participants reported
that they have used a rental e-
scooter more than once a month
in the past 12 months, while
two per cent of those surveyed
said they own their own e-scooter
so it has become a popular
alternative form of transport,’’
ECO-FRIENDLY: The life in Christchurch transport survey has found more people are opting to
cycle, walk and scooter around the city.
Ms Jamieson said.
The number of people using
public transport has risen from
29 per cent in 2018, to 32 per
cent this year.
Ms Jamieson said the survey
showed the condition of roads
and footpaths are continuing to
trouble people.
“Fifty-one per cent of the people
surveyed said they were dissatisfied
or very dissatisfied with
the condition of Christchurch’s
roads. Ongoing patch repairs to
road, potholes and uneven road
surfaces are the main reasons
people gave for their dissatisfaction,’’
Ms Jamieson said.
The city council recently
revealed an investment case that
seeks $25-30 million funding to
improve the safety and condition
on more than 100 roads in
suburban areas of the city.
The areas proposed for
roading upgrades are New
Brighton, Richmond, Linwood,
Woolston, Spreydon, Somerfield,
Waltham, Beckenham and
Riccarton.
THE CHRISTCHURCH Girls’
High School sevens team will
look to earn a medal at the
at Auckland,
The South Island secondary
school champions will head to
the tournament at Auckland’s
Kings College on November 28,
as one of the favourites having
finished second in 2017 and third
last year.
The team won the Canterbury
qualifiers a fortnight ago and will
look to impress against strong
North Island opposition.
Coach Jamie Livingstone has
been with the team for the past
five years and they have not finished
worse than sixth under his
guidance. He said the team was
motivated to maintain their high
standards.
“I feel we have a good mix of
power and speed and we try to attack
using both of those,” he said.
“The girls are very driven and
set their own goals and want to
get out of their pool and then see
what happens once they make
top eight.”
Livingstone said traditionally
the team has struggled on day
one of the tournament and it
was something he was eager to
rectify.
“We get up there and we always
start very slow.
“We don’t play a game in the
three weeks leading into the
tournament and that really affects
us,” he said.
Livingstone said he was lucky
to have a squad which was committed
to the sport.
“We know the competition in
Auckland will be much tougher
than what we are used to seeing
down here but we think we can
Riccarton, Burnside triumph
at volleyball champs
• By Jacob Page
BOTH RICCARTON and
Burnside High School found
success at the Canterbury junior
volleyball championships.
The Riccarton High School
junior boys volleyball team
will look to defend their South
Island title later this month after
successfully defending their
regional title at Christchurch.
Burnside High School were
dominant winners of the girls
grade, winning the final two
sets to zero over Cashmere
High School and will be
favourites to do same to their
South Island rivals from November
26 to 28.
Burnside coach Sam Ryburn
said it was the first time in
school history the junior girls
team had won back-to-back
Canterbury titles and they were
eager to defend their South
Island crown as well.
“I thought we did the basics
very well and showed composure
when we were challenged,”
he said.
“This was our first goal so
hopefully winning South Islands
on our home court is next.
Ryburn said he expected
strong challenges from the
Nelson teams but also believed
his team was well prepared to
defend the title in spite of having
just three returning players from
WINNERS: Riccarton High School defended their Canterbury
junior volleyball title.
the victorious 2018 team.
Riccarton dropped just one
game all tournament which
was held at Cowles and Pioneer
Stadiums.
Riccarton came back from
a set down in the final to beat
Cashmere High School two sets
to one,
Coach Angus Gourlay said
the team gained confidence after
also downing Cashmere in their
round-robin encounter and
were able to feed off that when
they dropped the first set in the
decider.
“We play a lot together and
while we may not have the pure
athletes some other teams have,
we do have experience and that
paid off in the final.
and Arron Malonzo made the
tournament team with Malonzo
being named the tournament’s
highlights
Dux
PETER BRYANT MEMORIAL SCHOLARSHIP is
awarded to the Dux of the school Ethan Ng
This is an annual award, established by
the Board of Trustees, to acknowledge the
outstanding contribution to Burnside High
School of the late Dr Peter Bryant, in his role
as the Chairperson of the Board of Trustees.
When Ethan joined us in Year 12, his previous
school provided a thorough record of all of
his achievements while he was a student
there. This was a star studded resume
including massive academic accolades and
top prizes in everything from Cantamath to
Mathmatical Olympiad’s with first place and
distinction awards aplenty.
It also included medals and distinction
awards for Australian Mathematics, Digital
Technology, Science, English and Spelling.
The school described Ethan as “highly
articulate and with a hunger for learning that
drives an insatiable quest for knowledge”.
They also describe him as having an
“infectious giggle” which is confirmed by
our staff and students as they report to me
that he is “just a nice guy to hang out with”
“and that he has a warm sense of humour”.
At all levels of his schooling he has worked
far beyond the expected curriculum level,
demonstrating astounding ability to absorb
new information.
Earlier this year, Ethan was named New
Zealand’s Top School Mathematician -
being described as a “once in a generation
mathematician”, likely due to the fact that he
will only turn 15 next week, and the school he
came to us from two years ago was Merrin
School.
The 47 NCEA credits he has earned this year
are exclusively at Excellence level and he is
entered for no less than seven Scholarship
exams on top of his other SIX subjects.
At graduation Ethan collected awards
including First Place in Chemistry, Accounting
and Economics and Excellence Awards for
Calculus, Physics and Statistics.
We wish Ethan well for his examinations and
future endeavours as he aims for selection
in the New Zealand Olympiad Mathematics
team before beginning a double degree in
Mathematics and Mechatronics Engineering
at the University of Canterbury.
Proxime Accessit Award 2019
Felix Backhouse
When Felix came to Burnside High School, the enrolment notes supplied,
described him as a highly capable, quiet and studious person, and that an
advanced Mathematics programme would be advised. He was very serious and
focussed on his academic work from the outset and his love of learning was a
common observation by all his teachers at both Westburn and his early years
at Burnside High School. While Music has been a passion for him throughout
his time at Burnside High School earning him countless awards, his academic
dominance has seen him earn top placings in every subject he has studied since
2015, including the General Excellence Award for West Division last year.
He puts his success down to not much more than just doing the work and keeping up with
things, however his teachers have described him as incredibly thoughtful and analytical – deep thinking and
with a wry sense of humour – he is the one they need to watch when they make a mistake because he WILL
pick up on it.
His Cambridge and NCEA results earned make for impressive reading. In NCEA, he has amassed 257 credits at
Excellence Level, with few lower grades and he enters his exams with a clean sweep of 34 Excellence credits
at level three behind him. He also will tackle Scholarship examinations in FIVE subjects this year.
Felix was offered a $20 000 Top Achievers Scholarship to Auckland University in 2020, however his intention
is to study at University of Canterbury and he has secured Emerging Leaders and High Achievers Scholarships
to go there.
We wish Felix well as he embarks on his very impressive and exciting future.
Musician of the year
The winner of the Peter Rowe Cup for Musicianship is Felix Backhouse
Felix is an outstanding all-round musician who has contributed at the highest
level to every facet of the music department in his five years at Burnside High
School.
He came through the Specialist Music Programme at Westburn School and
started Burnside as a very good violinist who also played trombone. He leaves
as an outstanding trombonist who may still play a bit of violin!
Felix has been a member of Malestrom for five years, experiencing every
competition success they have achieved. He has been a member of the Symphonic
Band and the lead trombonist for the Big Band for five years; during which time he has
won countless awards, including Best Trombonist at the Manawatu and NZSM Jazz Festivals
in 2018 and Best Overall Musician.
He has been a member of the award winning Funk Band for five years and the Burnside Orchestra for five
years, four as section leader. Felix has been selected for membership of the New Zealand Secondary Schools’
Symphony Orchestra and the New Zealand Youth Jazz Orchestra and has experienced success in the NZCT
Chamber Music Contest.
Sportsman of the Year
Sang-Yong Park
Sang-Yong won his third NZSS Table Tennis Teams title at the NZ Secondary
Schools Championships, and also placed 2nd in the U19 Individual singles at this
tournament. At the South Island Championships he placed 1st in U18 Boys singles,
U18 Boys doubles and U18 Mixed doubles and 2nd in the Mens Open singles.
Internationally he competed at the ITTF Oceania Junior Championships in Tonga,
claiming Silver in the Boys Team and Bronze in Boys Doubles. In the recent ITTF-
Oceania NZ Open Championships, he could only compete in two events due to a
back injury, but gained a gold medal in the U18 mixed doubles and a silver in the
U21 mixed doubles. He has recently been awarded the 2019 Junior Player of the
Year Cup, from Table Tennis NZ. He is also a Table Tennis Coach of junior players.
Sportswoman of the Year
Ellena Firth
Ellena captained our Canterbury Secondary Schools’ Champion Burnside High
School Girls Football 1st XI team this year. Ellena plays for Canterbury United
Pride which were National League winners, and for Coastal Spirit Premier
Womens - the team who were runners-up in the NZ Cup. Ellena was named in
the U19 NZ Secondary Schools team, and selected for their tour to America.
She also plays Cricket for Burnside High and the St Albans Cricket Club and
made the Canterbury U18 Girls Cricket team this year.
Tasty Bites
How to make a cake taste as good as it looks
There is not much better
than a cup of tea or
coffee and a slice of cake,
especially when it almost
looks too good to eat. Here’s
one you can easily decorate
yourself
Morning Magpie’s carrot
cake
For the cake
2 free-range eggs and 2 freerange
egg yolks
4 free range egg whites
320g flour
1 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
2 tsp ground cloves
400g neutral-tasting oil such as
sunflower or canola
540g white sugar
100g chopped walnuts
100g desiccated coconut
270g peeled and grated carrot
(about two carrots)
For the icing
525g cream cheese
210g softened (to room
temperature) butter
105g icing sugar
75g honey
fresh thyme
Directions
Cake
Separate the eggs (six in total).
Put the whole eggs and yolks
in one bowl, and the whites in
another large, clean and dry
metal bowl.
You will be left with two
spare egg yolks (with a little
imagination you can find a way
to put them to good use in some
other noble kitchen endeavour).
Add a pinch of salt to the egg
whites and, with an electric
beater, whisk until they form
stiff white peaks (the salt helps to
stabilise them). Set aside.
In a large bowl, beat the
sugar and oil on high for 2min.
Add the whole eggs and egg
yolks, continuing to mix until
incorporated.
Use a rubber spatula to mix the
walnuts, coconut, and carrot into
the creamed oil and eggs.
Sift the flour, baking powder
and soda, and spices into the wet
mix, and delicately fold through.
Fold one-third of the whipped
egg whites into the rest of the
batter, followed by the rest of
them. Don’t worry if there are a
few streaks of white left – this is
far preferable to over-mixing the
cake batter.
Divide the
batter between
two greased
round silicon cake
moulds. Make sure
to weigh as you
are filling them,
so that the two
rounds end up
evenly sized.
Bake in the
centre of the oven
for 40min at 160
deg C.
After baking,
let the cake cool
completely in the
moulds (at least
four hours).
If you are
leaving it
overnight before
icing – this is a
good idea – wrap
the rounds in cling
film once cooled and removed
from moulds.
Assembly and decoration
Make sure all ingredients are at
room temperature, and also clear
a shelf in your fridge that a large
chopping board will fit on.
In a large bowl, beat the
cream cheese on high for about
4min, until it takes on a silky
consistency. Beat in the butter.
Add the icing sugar and honey,
and reduce the beater to a lower
speed until they are fully mixed
through. Then your icing is
ready.
If the cake rose into a dome
shape while baking, remove the
rounded top with a bread knife
to make sure both rounds are
level.
Place one cake round on a
large chopping board, and spread
a 1cm thick layer of icing on top
of it. Stack the other round on
it, making sure the two are well
aligned. Don’t worry if some of
the filling comes out the sides.
Use an offset spatula to spread
a thin layer of icing over the top
and sides of the assembled cake.
It doesn’t matter if you can see
the cake through this layer. Once
it is covered, place the cake in the
fridge for one hour. When this
first layer of icing sets, it prevents
any dark cake crumbs getting
mixed up in the final layer of
white icing.
Once the first layer is set,
remove the cake from the fridge
and apply the rest of the icing as
you see fit. You can put a thick
layer on the top and a scant layer
around the sides, but this is just
a matter of taste – you should
experiment and find a style you
like. Chill the cake for another
hour before cutting. Garnish
with fresh thyme leaves and flaky
sea salt. Use a hot bread knife to
cut the cake, cleaning it between
each slice.
REAL ESTATE
Anything but ordinary - As is, where is
84 Glenstrae Road, Redcliffs
Auction: 5 Dec. unless sold prior
3 bedrooms | 2 bathrooms | 4 toilets
3 living rooms | study | gym
4 car-garage | Listing SM0277
Brimming with personality and enjoying
extensive views out over the ocean,
this exceptionally spacious residence
was designed by Wayne Seebeck and
is uniquely appealing. This property is
currently insured, deemed repairable but
is being sold on an ‘as-is, where-is’ basis,
with highly motivated sellers.
Lashings of colour give the home
an endearing edge, and the selection
of sizeable windows maximise the
magnificent ocean views which are offered
in this hillside setting.
The vast 447m2 floor plan is ideally
proportioned for families and includes
3 bedrooms, a study, 2 bathrooms, 4
toilets, 3 separate living zones, a gym/
wine cellar/storeroom on the ground floor
and oversized 4 car garaging. There’s easy
drive-on access with plenty of off-street
parking and turning space.
A modern kitchen has granite benchtops
and is centrally positioned within the open
plan area which accommodates dining and
unwinding, while adjoining a media room.
Both rooms feature bi-fold doors that flow
outdoors for ease of entertaining.
An expansive formal dining room
provides further living options as it
incorporates a sitting area that boasts
commanding views over the water.
Of the bedrooms, the upstairs master
is generous in size and has the luxury of
a walk-in wardrobe, ensuite and balcony
access while the main bathroom services
the other 2 bedrooms and a total of four
toilets caters brilliantly to busy households.
Electric ceiling heating, underfloor
heating and a gas fire assist with delivering
a comfortable climate while technological
convenience is provided by an intercom,
extensive speaker system and a vacuum
system.
Superbly equipped for summertime,
the property comes complete with an
in-ground pool which is complemented
by a spa and surrounding patio to ensure
it’s an area where the whole family will
congregate for BBQ’s, relaxing and
lapping up the last of the sun. Bask in
the professionally landscaped grounds
with an auto irrigation system for added
convenience.
Situated a short drive from the
Ferrymead and Redcliffs shops, while
a little over five-minutes from Sumner
Beach, this property ensures you can
embrace a coastal lifestyle while remaining
within a 20-minute drive of the central
city.
This distinctive and generously
proportioned property will inspire
those looking for an “as-is” to repair for
themselves. Totally liveable or rentable
now with excellent resale value in the
street. A full information pack and concept
drawings for re-development are available
