A RECORD-breaking number<br />
of objections were submitted to<br />
the city council over a proposed<br />
liquor store on Memorial Ave.<br />
In the last three years, the most<br />
public objections the city council<br />
had received on an alcohol licence<br />
application was 121.<br />
But 207 people opposed the liquor<br />
store near the BP petrol station<br />
on Memorial Ave, which is within<br />
1km of four primary schools.<br />
Key concerns for residents are<br />
a lack of parking, an increase in<br />
alcohol consumption and alcoholrelated<br />
anti-social behaviour, and<br />
frustration around Memorial Ave<br />
being a memorial for fallen soldiers.<br />
The proposed liquor store would<br />
operate from 9am-10pm, seven<br />
days a week.<br />
Isobel Anderson lives in the<br />
property which shares a driveway<br />
with the proposed store, and she<br />
said the large number of objections<br />
was “absolutely wonderful.”<br />
Said Ms Anderson: “I think<br />
we’re passionate about our area<br />
here. There’s obviously been a<br />
problem with liquor in the area<br />
because we’ve had a liquor ban<br />
in place. So we’re pretty keen on<br />
trying to stop it [liquor store].”<br />

Quarry plan hearings get under way<br />

hearings are) happening but<br />
I’m also a little bit apprehensive<br />
about it because it seems that<br />
throughout the process when an<br />
issue has been pointed out, an<br />
expert has come in and worked<br />
it out and that’s someone who is<br />
being paid by Fulton Hogan.”<br />
However, Mr Moore said he<br />
thinks there is a reasonable<br />
chance the hearing will go his<br />
way.<br />
“The problem is, this is<br />
just the first part of it. If the<br />
commissioners say no, Fulton<br />
Hogan is just going to appeal it.<br />
This is just the start, because if<br />
they lose, they’re not going to<br />
give it up and they have<br />
a lot more money than<br />
any of us,” he said.<br />
His views have been<br />
backed by Templeton<br />
Residents’ Association<br />
treasurer Jolene Eagar,<br />
who has been waiting<br />
for more than two years<br />
for the hearings to start.<br />
“Not in our wildest<br />
dreams did we think it would<br />
take this long or the application<br />
would be as big and complicated<br />

Mrs Eagar said it is hard to<br />
say what the outcome will be,<br />
but she hopes the hearings<br />
panel will agree approving<br />
the application would be<br />
wrong.<br />
“None of us would have<br />
invested all the time and<br />
energy into this if we<br />
didn’t think that there<br />
was a really good chance<br />
for the application to be<br />
declined,” she said.<br />
The hearings are due to run<br />
until Friday, and then from<br />

and Show Week, Mrs Eagar said<br />
horse trainers due to submit at<br />
the hearings will be “seriously<br />
disadvantaged.”<br />
“We have full-time jobs and<br />
these people are at their busiest<br />
with the horses . . . they don’t<br />
have time to get ready for the<br />

“I think [the person in favour<br />
of the store] thinks it’s going to<br />

A series of reports will be completed<br />
by the police, the medical<br />
officer of health and an inspector<br />
in regards to the licence for the<br />
liquor store.<br />
The file will then be referred to<br />
the district licensing committee,<br />
and a hearing will be held, which<br />
members of the public will be<br />
able to attend and make verbal<br />
submissions.<br />

who has been hiring the hall<br />

aspiring pilot’s career off the ground<br />

EVER SINCE Anaru Jackson<br />
was a young boy he has been<br />
fascinated with planes.<br />
“It always amazes me when I<br />
see an aircraft fly past my house,<br />
that something so large can fly<br />
in the sky.”<br />
Living only 15 minutes away<br />
in Hornby, one of his favourite<br />
past times is cycling out to the<br />
Christchurch International Airport<br />
to go plane spotting.<br />
Now he has been taken under<br />
former Air New Zealand captain<br />
John Pauwels’ wing, winning a<br />
$10,000 scholarship to train to<br />
become a pilot.<br />
The 15-year-old was awarded<br />
the scholarship at Hornby High<br />
School’s senior prizegiving<br />
recently.<br />
Being involved in the Young<br />
Eagles programme and the<br />
No 18 (Avon) Squadron, Air<br />
Training Corps, earlier this year<br />
Anaru met Mr Pauwels at the<br />
Canterbury Aero Club.<br />
Mr Pauwels runs a scholarship<br />
programme at Hillmorton High<br />
School dedicated to helping<br />
young people to get into aviation.<br />
But because Anaru does not<br />

created a new scholarship called<br />
the Pauwels Flying Scholarship<br />
Special Award with funding<br />
from the Hugo Charitable Trust.<br />
Anaru described receiving the<br />
award as “pretty amazing” and<br />
he has been left overwhelmed.<br />
In order to receive the award,<br />
Anaru was required to go<br />
through a screening process,<br />
similar to the Air New Zealand<br />
selection process.<br />
It included an interview with<br />
two Air New Zealand A320 pilots,<br />
an online test and a half-day<br />
at the Canterbury Aero Club.<br />
At the aero club, Anaru took<br />
a test using a flight simulator<br />
and a second interview with the<br />
chief flying instructor and the<br />
academic manager.<br />

simple math questions along with<br />
memorising a series of instructions<br />

throughout the process Anaru<br />
was professional, very relaxed,<br />
polite and these were the qualities<br />
which make a great pilot.<br />
Following graduating from<br />
Hornby High School in two<br />
years time, he plans to use the<br />
scholarship to go to the International<br />
Aviation Academy of New<br />
Zealand.<br />
Upon completing his year-long<br />
commercial pilot course, Anaru<br />
will then be required to build his<br />
flying hours up to between 8000<br />
to 15,000.<br />
He said the best way to do this<br />
is through becoming a flight<br />
instructor with the academy.<br />
Growing up, Anaru said he<br />
has always been fascinated<br />
watching aircraft fly over his<br />
home in Hornby. His dream is<br />
to one day fly commercial flights<br />
for Air New Zealand.<br />
Winning the scholarship tops<br />
off an already successful year for<br />
Anaru, who has already passed<br />
NCEA level 1 with excellence in<br />
spite of not having completed his<br />
external exams yet.<br />

Achievements recognised<br />
On Monday <strong>November</strong> 4, Hornby High<br />
School celebrated a wonderful evening,<br />
acknowledging student achievement.<br />
Mrs Kaye Banks a former student<br />
herself, gave a wonderful speech on the<br />
achievements of Hornby High School in the<br />
last 12 months. Kaye is the current Board of<br />
Trustees Chairperson.<br />
The Head Girl and Boy – Shardey Harris and<br />
Lachlan Hickford – respectively, delivered<br />
speeches that would have inspired every<br />
student in the auditorium for the rest of<br />
their school years.<br />
The passion in the Principal’s address from<br />
Mr Robin Sutton was a clear indication<br />
of why Hornby High School is going from<br />
strength to strength.<br />

greetings to the Hornby High School community.<br />
I love term 4. It’s a time of celebration of so much<br />
that is great in any kura, and Hornby High School is<br />
no exception. Our senior prize giving showcases the<br />
extraordinary range of achievement that our students<br />
produce, whether it be in academic or cultural work,<br />
or the sporting, leadership, or community spheres. Our<br />
delight at the announcement of the Dux of the school,<br />
or the winner of the Hornby Rotary Creative Excellence<br />
Award, are particularly special moments. This year our<br />
joy was multiplied many fold with the announcement<br />
of a special flight scholarship for Year 11 student Anaru,<br />
and the standing ovation he received from students was<br />
enough to melt the heart.<br />
When I joined the school in 2016 I introduced what<br />
I hoped might become a long-lasting tradition to<br />
celebrate one particular type of achievement. We have<br />
those students who achieve their NCEA qualification,<br />
endorsed with Excellence, before they even enter<br />
the examination room for external examinations in<br />
<strong>November</strong>. This is not easy to achieve. The “tradition” is<br />
a special morning tea with the Principal. In 2016 there<br />
were two students who achieved this feat. This year,<br />
20<strong>19</strong>, I have taken 13 students out to morning tea. This<br />
is an outstanding improvement. I notice increasing<br />
achievement at the Merit and Excellence levels in NCEA<br />
across all three levels, and across all ethnic and gender<br />
groups that make up our school community. These<br />
things speak to me not only of improving achievement,<br />
but also higher, deeper, aspiration amongst our<br />
rangatahi. Ka mau te wehi!!<br />
Let’s also not forget the achievement of so many others<br />
that lay behind those results. We are all different, our<br />
capabilities, the things that allow us to be the magic<br />
that we are, may not fit neatly into award categories,<br />
and it is the capacity of Hornby High School to nurture<br />
these special talents that gives depth to our community.<br />
It builds and supports the manaaki that IS our kura.<br />
In this last column for the year, I’d like to pay special<br />
tribute to the wonderful colleagues it is my privilege<br />
to work with. Their dedication to and aroha for our<br />
tamariki is outstanding. It has been an extraordinary<br />
year, and in fact three years, with the planning and final<br />
completion of our full school rebuild, and I am grateful<br />
to our whole staff team for keeping the focus clearly on<br />
the wellbeing of our rangatahi and their achievement<br />
throughout these difficult and disruptive times.<br />

Every Wednesday, a small group of Year 7 and<br />
8 students visits the Hornby Elderly Daycare<br />
Centre. They take things to share and enjoy a<br />
morning tea together.<br />
The students comment that it is great being able<br />
to learn what life and school was like for the<br />
elderly when they were their age.<br />
The Community Impact Projects (CIP) are<br />
curriculum innovation projects run with Year 7<br />
and 8 students, designed to give their learning<br />
real-world contexts, and provide opportunities<br />
for students to make a real change in their<br />
communities.<br />
“The students’ engagement with their learning<br />
is amazing; so wonderful to see,” Principal Robin<br />
Sutton says, noting that developing an attitude<br />
of kindness has been one of his key messages to<br />
students over these past two years.<br />

Denton Park projects delayed<br />

Games will be delayed.<br />
The Greater Hornby Residents’<br />
Association was initially planning<br />
to unveil a mural and a memorial<br />
plaque honouring Stanley<br />
David Denton this summer.<br />
But the two projects planned<br />
to brighten up Denton Park will<br />
likely be delayed by a year due<br />
to further work needing to be<br />
completed on the artist design<br />
briefs.<br />
Chairman Marc Duff said it is<br />
expected for the projects will not<br />
be complete until next summer.<br />
“It is better off to do both projects<br />
once and to do them right<br />
as they are going to be there for a<br />
long time,” he said.<br />
A design brief is expected to go<br />
out early next year.<br />
Both projects are estimated to<br />
cost in total between $20,000-<br />
$25,000 and the association is<br />
looking at various ways to fundraise<br />
from applying for grants to<br />
running events.<br />
Since late last year, the association<br />
has been looking to paint a<br />
mural on the front of the Denton<br />
Park Velodrome.<br />
The <strong>19</strong>74 British Commonwealth<br />
Games logo is the main<br />
artistic design being considered<br />
for the mural.<br />
This is due to Denton Park<br />
being built in <strong>19</strong>70 for the games<br />
with the Denton Park Velodrome<br />
being one of the last Commonwealth<br />
buildings standing that<br />
was used.<br />
Mr Duff said different sports<br />
clubs lease and own parts of the<br />
Denton Park Velodrome and it<br />
was important the association<br />
worked with them to get the<br />
design of the mural right.<br />
The memorial plaque to honour<br />
Mr Denton, who donated to<br />
Denton Park in <strong>19</strong>52 is planned<br />
to be placed in front of the velodrome.<br />
Mr Duff said he hoped an<br />
artist will be working on the<br />
mural by the beginning of next<br />
summer.<br />
A COMPLETE revamp is<br />
planned for the Annandale Park<br />
playground in Ilam.<br />
The city council has also proposed<br />
moving the playground<br />
closer to the path to improve<br />
access and limit noise heard at<br />
nearby houses.<br />
All existing trees will remain<br />
in the park.<br />
A new sealed path is proposed,<br />
along with a picnic table,<br />
plants and more trees to make<br />
the area more inviting for families<br />
and picnics.<br />
Members of the public can<br />
submit on a series of proposed<br />
pieces for the playground, including<br />
swings, a mulberry bush<br />
carousel, which has multiple<br />

Park revamp views sought<br />
levels so children of all ages can<br />
play safely, a slide and rockers.<br />
Once the consultation closes<br />

February.<br />
Armitage Reserve playground<br />
in Bishopdale is also planned<br />
for improvements, and the new<br />
playground will be moved away<br />
from beneath the power pylons.<br />

HORNBY’S popular community<br />
fun day is gearing up to be even<br />
bigger and better than last year.<br />
The Greater Hornby Residents’<br />
Association has planned a wide<br />
range of activities for its annual<br />
family fun day to be held this<br />
Sunday at Denton Park.<br />
Event goers can take part in<br />
running, sack, egg-and-spoon<br />
races along with a gumboot<br />
throwing competition.<br />
There will also be funni bikes,<br />
lolly scramble, pony rides, hair<br />
platting, stilts, a bouncy castle,<br />
a guest appearance from Santa<br />
Claus and performances from<br />
Darkside Entertainment.<br />
Association treasurer Ross<br />
Houliston said it is planning the<br />
event will be even bigger and<br />
better than last year. Last year,<br />
between 500-800 people came to<br />
the event. This year, Mr Houliston<br />
is hoping for between 800-1200.<br />
“It should be a great day with<br />
lots of old-fashioned activities,”<br />
he said.<br />
Mr Houliston said it will be<br />
a low-cost day with any money<br />
made to go towards community<br />
assets.<br />
The event will be held from 1 to<br />
4pm.<br />
Eco-friendly transport use on the rise<br />
PEOPLE ARE using their cars less<br />
and walking, biking or scooting<br />
more, a survey has found.<br />
The life in Christchurch<br />
transport survey findings show<br />
while travel by car is still the<br />
most popular mode of transport<br />
in the city, there has been an<br />
increase in the use of alternative<br />
ways to get around.<br />
The survey questioned about<br />
3500 Christchurch residents<br />
about their travel habits and the<br />
city’s transport network.<br />
Said city council monitoring<br />
and research team leader Kath<br />
Jamieson: “The proportion of<br />
people who say they are using<br />
their car less now compared to<br />
12 months ago is 27 per cent –<br />
up from <strong>19</strong> per cent in 2018.”<br />
More than 40 per cent of<br />
respondents said they cycle more<br />
often now than they did a year<br />
ago while 21 per cent say they<br />
walk more often.<br />
Ms Jamieson said the arrival<br />
of electric scooters in Christchurch<br />
has also impacted the way<br />
people move around the city.<br />
“Nineteen per cent of<br />
survey participants reported<br />
that they have used a rental e-<br />
scooter more than once a month<br />
in the past 12 months, while<br />
two per cent of those surveyed<br />
said they own their own e-scooter<br />
so it has become a popular<br />
alternative form of transport,’’<br />
ECO-FRIENDLY: The life in Christchurch transport survey has found more people are opting to<br />
cycle, walk and scooter around the city. <br />
Ms Jamieson said.<br />
The number of people using<br />
public transport has risen from<br />
29 per cent in 2018, to 32 per<br />
cent this year.<br />
Ms Jamieson said the survey<br />
showed the condition of roads<br />
and footpaths are continuing to<br />
trouble people.<br />
“Fifty-one per cent of the people<br />
surveyed said they were dissatisfied<br />
or very dissatisfied with<br />
the condition of Christchurch’s<br />
roads. Ongoing patch repairs to<br />
road, potholes and uneven road<br />
surfaces are the main reasons<br />
people gave for their dissatisfaction,’’<br />
Ms Jamieson said.<br />
The city council recently<br />
revealed an investment case that<br />
seeks $25-30 million funding to<br />
improve the safety and condition<br />
on more than 100 roads in<br />
suburban areas of the city.<br />
The areas proposed for<br />
roading upgrades are New<br />
Brighton, Richmond, Linwood,<br />
Woolston, Spreydon, Somerfield,<br />
Waltham, Beckenham and<br />
Riccarton.<br />

The South Island secondary<br />
school champions will head to<br />
the tournament at Auckland’s<br />
Kings College on <strong>November</strong> 28,<br />
as one of the favourites having<br />
finished second in 2017 and third<br />
last year.<br />
The team won the Canterbury<br />
qualifiers a fortnight ago and will<br />
look to impress against strong<br />
North Island opposition.<br />
Coach Jamie Livingstone has<br />
been with the team for the past<br />
five years and they have not finished<br />
worse than sixth under his<br />
guidance. He said the team was<br />
motivated to maintain their high<br />
standards.<br />
“I feel we have a good mix of<br />
power and speed and we try to attack<br />
using both of those,” he said.<br />

“The girls are very driven and<br />
set their own goals and want to<br />
get out of their pool and then see<br />

Livingstone said traditionally<br />
the team has struggled on day<br />
one of the tournament and it<br />
was something he was eager to<br />
rectify.<br />
“We get up there and we always<br />
start very slow.<br />
“We don’t play a game in the<br />
three weeks leading into the<br />
tournament and that really affects<br />
us,” he said.<br />
Livingstone said he was lucky<br />
to have a squad which was committed<br />
to the sport.<br />
“We know the competition in<br />
Auckland will be much tougher<br />
than what we are used to seeing<br />
down here but we think we can<br />
match it with anyone on our<br />
day.”<br />
The tournament will be held<br />
from <strong>November</strong> 28 to December<br />

Riccarton, Burnside triumph<br />
at volleyball champs<br />

success at the Canterbury junior<br />
volleyball championships.<br />
The Riccarton High School<br />
junior boys volleyball team<br />
will look to defend their South<br />
Island title later this month after<br />
successfully defending their<br />
regional title at Christchurch.<br />
Burnside High School were<br />
dominant winners of the girls<br />
grade, winning the final two<br />
sets to zero over Cashmere<br />
High School and will be<br />
favourites to do same to their<br />
South Island rivals from <strong>November</strong><br />
26 to 28.<br />
Burnside coach Sam Ryburn<br />
said it was the first time in<br />
school history the junior girls<br />
team had won back-to-back<br />
Canterbury titles and they were<br />
eager to defend their South<br />
Island crown as well.<br />
“I thought we did the basics<br />
very well and showed composure<br />
when we were challenged,”<br />
he said.<br />
“This was our first goal so<br />
hopefully winning South Islands<br />
on our home court is next.<br />
Ryburn said he expected<br />
strong challenges from the<br />
Nelson teams but also believed<br />
his team was well prepared to<br />
defend the title in spite of having<br />
just three returning players from<br />

“I started in the hospitality industry in<br />
2000, and the plans I’ve had for the last<br />
10 years or so to own my own hospitality<br />
business have finally come to fruition,”<br />

A Hornby local, Damian lives just 100<br />
metres from Henry’s Hornby, and his aim<br />
is to provide good, old-fashioned service<br />
to his customers, which he believes has<br />
been missing from the hospitality industry<br />
in recent years.<br />
“Here at Henry’s Hornby we want to<br />
create a friendly, local atmosphere and<br />
make our customers feel special and walk<br />
out with a good product at a good price,”<br />
Damian says.<br />
With his extensive experience in the<br />
industry – four years at the Blenheim Road<br />
Tavern and Bottle Store and a further 15<br />
years with both Imperial Discount Liquor<br />
and Henry’s from its inception in 2007,<br />
Damian has the knowledge and expertise<br />
to give customers any help and advice they<br />
need.<br />
The four new staff members that have<br />
joined him have also been working in the<br />
industry for a number of years, he says.<br />

experience, so our customers will benefit<br />

trends in liquor and will be offering<br />

on craft beers, which Damian’s second in<br />
command is passionate about.<br />

Dux<br />
PETER BRYANT MEMORIAL SCHOLARSHIP is<br />
awarded to the Dux of the school Ethan Ng<br />
This is an annual award, established by<br />
the Board of Trustees, to acknowledge the<br />
outstanding contribution to Burnside High<br />
School of the late Dr Peter Bryant, in his role<br />
as the Chairperson of the Board of Trustees.<br />
When Ethan joined us in Year 12, his previous<br />
school provided a thorough record of all of<br />
his achievements while he was a student<br />
there. This was a star studded resume<br />
including massive academic accolades and<br />
top prizes in everything from Cantamath to<br />
Mathmatical Olympiad’s with first place and<br />
distinction awards aplenty.<br />
It also included medals and distinction<br />
awards for Australian Mathematics, Digital<br />
Technology, Science, English and Spelling.<br />
The school described Ethan as “highly<br />
articulate and with a hunger for learning that<br />
drives an insatiable quest for knowledge”.<br />
They also describe him as having an<br />
“infectious giggle” which is confirmed by<br />
our staff and students as they report to me<br />
that he is “just a nice guy to hang out with”<br />
“and that he has a warm sense of humour”.<br />
At all levels of his schooling he has worked<br />
far beyond the expected curriculum level,<br />
demonstrating astounding ability to absorb<br />
new information.<br />
Earlier this year, Ethan was named New<br />
Zealand’s Top School Mathematician -<br />
being described as a “once in a generation<br />
mathematician”, likely due to the fact that he<br />
will only turn 15 next week, and the school he<br />
came to us from two years ago was Merrin<br />
School.<br />
The 47 NCEA credits he has earned this year<br />
are exclusively at Excellence level and he is<br />
entered for no less than seven Scholarship<br />
exams on top of his other SIX subjects.<br />
At graduation Ethan collected awards<br />
including First Place in Chemistry, Accounting<br />
and Economics and Excellence Awards for<br />
Calculus, Physics and Statistics.<br />
We wish Ethan well for his examinations and<br />
future endeavours as he aims for selection<br />
in the New Zealand Olympiad Mathematics<br />
team before beginning a double degree in<br />
Mathematics and Mechatronics Engineering<br />
at the University of Canterbury.<br />
Proxime Accessit Award 20<strong>19</strong><br />
Felix Backhouse<br />
When Felix came to Burnside High School, the enrolment notes supplied,<br />
described him as a highly capable, quiet and studious person, and that an<br />
advanced Mathematics programme would be advised. He was very serious and<br />
focussed on his academic work from the outset and his love of learning was a<br />
common observation by all his teachers at both Westburn and his early years<br />
at Burnside High School. While Music has been a passion for him throughout<br />
his time at Burnside High School earning him countless awards, his academic<br />
dominance has seen him earn top placings in every subject he has studied since<br />
2015, including the General Excellence Award for West Division last year.<br />
He puts his success down to not much more than just doing the work and keeping up with<br />
things, however his teachers have described him as incredibly thoughtful and analytical – deep thinking and<br />
with a wry sense of humour – he is the one they need to watch when they make a mistake because he WILL<br />
pick up on it.<br />
His Cambridge and NCEA results earned make for impressive reading. In NCEA, he has amassed 257 credits at<br />
Excellence Level, with few lower grades and he enters his exams with a clean sweep of 34 Excellence credits<br />
at level three behind him. He also will tackle Scholarship examinations in FIVE subjects this year.<br />
Felix was offered a $20 000 Top Achievers Scholarship to Auckland University in 2020, however his intention<br />
is to study at University of Canterbury and he has secured Emerging Leaders and High Achievers Scholarships<br />
to go there.<br />
We wish Felix well as he embarks on his very impressive and exciting future.<br />
Musician of the year<br />
The winner of the Peter Rowe Cup for Musicianship is Felix Backhouse<br />
Felix is an outstanding all-round musician who has contributed at the highest<br />
level to every facet of the music department in his five years at Burnside High<br />
School.<br />
He came through the Specialist Music Programme at Westburn School and<br />
started Burnside as a very good violinist who also played trombone. He leaves<br />
as an outstanding trombonist who may still play a bit of violin!<br />
Felix has been a member of Malestrom for five years, experiencing every<br />
competition success they have achieved. He has been a member of the Symphonic<br />
Band and the lead trombonist for the Big Band for five years; during which time he has<br />
won countless awards, including Best Trombonist at the Manawatu and NZSM Jazz Festivals<br />
in 2018 and Best Overall Musician.<br />
He has been a member of the award winning Funk Band for five years and the Burnside Orchestra for five<br />
years, four as section leader. Felix has been selected for membership of the New Zealand Secondary Schools’<br />
Symphony Orchestra and the New Zealand Youth Jazz Orchestra and has experienced success in the NZCT<br />
Chamber Music Contest.<br />
Sportsman of the Year<br />
Sang-Yong Park<br />
Sang-Yong won his third NZSS Table Tennis Teams title at the NZ Secondary<br />
Schools Championships, and also placed 2nd in the U<strong>19</strong> Individual singles at this<br />
tournament. At the South Island Championships he placed 1st in U18 Boys singles,<br />
U18 Boys doubles and U18 Mixed doubles and 2nd in the Mens Open singles.<br />
Internationally he competed at the ITTF Oceania Junior Championships in Tonga,<br />
claiming Silver in the Boys Team and Bronze in Boys Doubles. In the recent ITTF-<br />
Oceania NZ Open Championships, he could only compete in two events due to a<br />
back injury, but gained a gold medal in the U18 mixed doubles and a silver in the<br />
U21 mixed doubles. He has recently been awarded the 20<strong>19</strong> Junior Player of the<br />
Year Cup, from Table Tennis NZ. He is also a Table Tennis Coach of junior players.<br />
Sportswoman of the Year<br />
Ellena Firth<br />
Ellena captained our Canterbury Secondary Schools’ Champion Burnside High<br />
School Girls Football 1st XI team this year. Ellena plays for Canterbury United<br />
Pride which were National League winners, and for Coastal Spirit Premier<br />
Womens - the team who were runners-up in the NZ Cup. Ellena was named in<br />
the U<strong>19</strong> NZ Secondary Schools team, and selected for their tour to America.<br />
She also plays Cricket for Burnside High and the St Albans Cricket Club and<br />
made the Canterbury U18 Girls Cricket team this year.<br />

How to make a cake taste as good as it looks<br />
There is not much better<br />
than a cup of tea or<br />
coffee and a slice of cake,<br />
especially when it almost<br />
looks too good to eat. Here’s<br />
one you can easily decorate<br />
yourself<br />
Morning Magpie’s carrot<br />
cake<br />
For the cake<br />
2 free-range eggs and 2 freerange<br />
egg yolks<br />
4 free range egg whites<br />
320g flour<br />
1 tsp baking powder<br />
1 tsp baking soda<br />
2 tsp cinnamon<br />
2 tsp ground cloves<br />
400g neutral-tasting oil such as<br />
sunflower or canola<br />
540g white sugar<br />
100g chopped walnuts<br />
100g desiccated coconut<br />
270g peeled and grated carrot<br />
(about two carrots)<br />
For the icing<br />
525g cream cheese<br />
210g softened (to room<br />
temperature) butter<br />
105g icing sugar<br />
75g honey<br />

Directions<br />
Cake<br />
Separate the eggs (six in total).<br />
Put the whole eggs and yolks<br />
in one bowl, and the whites in<br />
another large, clean and dry<br />
metal bowl.<br />
You will be left with two<br />
spare egg yolks (with a little<br />
imagination you can find a way<br />
to put them to good use in some<br />
other noble kitchen endeavour).<br />
Add a pinch of salt to the egg<br />
whites and, with an electric<br />
beater, whisk until they form<br />
stiff white peaks (the salt helps to<br />
stabilise them). Set aside.<br />
In a large bowl, beat the<br />
sugar and oil on high for 2min.<br />
Add the whole eggs and egg<br />
yolks, continuing to mix until<br />
incorporated.<br />
Use a rubber spatula to mix the<br />
walnuts, coconut, and carrot into<br />
the creamed oil and eggs.<br />
Sift the flour, baking powder<br />
and soda, and spices into the wet<br />
mix, and delicately fold through.<br />
Fold one-third of the whipped<br />
egg whites into the rest of the<br />
batter, followed by the rest of<br />
them. Don’t worry if there are a<br />
few streaks of white left – this is<br />
far preferable to over-mixing the<br />
cake batter.<br />
Divide the<br />
batter between<br />
two greased<br />
round silicon cake<br />
moulds. Make sure<br />
to weigh as you<br />
are filling them,<br />
so that the two<br />
rounds end up<br />
evenly sized.<br />
Bake in the<br />
centre of the oven<br />
for 40min at 160<br />
deg C.<br />
After baking,<br />
let the cake cool<br />
completely in the<br />
moulds (at least<br />
four hours).<br />
If you are<br />
leaving it<br />
overnight before<br />
icing – this is a<br />
good idea – wrap<br />
the rounds in cling<br />
film once cooled and removed<br />
from moulds.<br />
Assembly and decoration<br />
Make sure all ingredients are at<br />
room temperature, and also clear<br />
a shelf in your fridge that a large<br />
chopping board will fit on.<br />
In a large bowl, beat the<br />
cream cheese on high for about<br />
4min, until it takes on a silky<br />
consistency. Beat in the butter.<br />
Add the icing sugar and honey,<br />
and reduce the beater to a lower<br />
speed until they are fully mixed<br />
through. Then your icing is<br />
ready.<br />
If the cake rose into a dome<br />
shape while baking, remove the<br />
rounded top with a bread knife<br />
to make sure both rounds are<br />
level.<br />
Place one cake round on a<br />
large chopping board, and spread<br />
a 1cm thick layer of icing on top<br />
of it. Stack the other round on<br />
it, making sure the two are well<br />
aligned. Don’t worry if some of<br />
the filling comes out the sides.<br />
Use an offset spatula to spread<br />
a thin layer of icing over the top<br />
and sides of the assembled cake.<br />
It doesn’t matter if you can see<br />
the cake through this layer. Once<br />
it is covered, place the cake in the<br />
fridge for one hour. When this<br />
first layer of icing sets, it prevents<br />
any dark cake crumbs getting<br />
mixed up in the final layer of<br />
white icing.<br />
Once the first layer is set,<br />
remove the cake from the fridge<br />
and apply the rest of the icing as<br />
you see fit. You can put a thick<br />
layer on the top and a scant layer<br />
around the sides, but this is just<br />
a matter of taste – you should<br />
experiment and find a style you<br />
like. Chill the cake for another<br />
hour before cutting. Garnish<br />
with fresh thyme leaves and flaky<br />
sea salt. Use a hot bread knife to<br />
cut the cake, cleaning it between<br />
each slice.<br />
