Slow Cooker Taco Soup
You could make this on National Homemade Soup Day February 4th!
Ingredients:
1 pound ground beef
1 onion, chopped
1 (16 ounce) can chili beans, with liquid
1 (15 ounce) can kidney beans with liquid
1 (15 ounce) can whole kernel corn, with liquid
1 (8 ounce) can tomato sauce
2 cups water
2 (14.5 ounce) cans peeled and diced tomatoes
1 (4 ounce) can diced green chile peppers
1 (1.25 ounce) package taco seasoning mix
A few Optional Toppings:
Corn Chips
Tortillas
Shredded Cheese
Sour Cream
Directions: In a medium skillet, cook the ground beef until browned over medium
heat. Drain, and set aside. Place the ground beef, onion, chili beans, kidney beans,
corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning
mix in a slow cooker. Mix to blend and cook on low setting for 8 hours.

Lighter Chicken Fettuccine Alfredo
Ingredients:
2 large boneless skinless chicken breasts
2 cups low-sodium chicken broth
4 cloves garlic, minced
ground black pepper to taste
2 cups heavy cream
2 egg yolks
salt to taste
1 pound fettuccine
1 sprig chopped fresh parsley
2 cups freshly grated Parmigiano-Reggiano cheese, divided
Directions: Combine chicken breasts and chicken broth in a saucepan
over medium-high heat. Bring to a boil, cover and reduce heat to low;
simmer for 5 minutes. Turn breasts, cover and simmer another 5 minutes.
Remove from heat and let sit with the cover on for 15 minutes.
Remove chicken breasts from the broth and set aside to cool, reserving
the broth in the saucepan. Once the chicken is cool enough to handle,
cut into bite-size slices. Return the chicken broth to medium heat and
cook until reduced to 1 cup. Stir garlic, black pepper and heavy cream
into the reduced broth; bring to a simmer and remove from heat.
Whisk egg yolks in a bowl until smooth. Beat 1 tablespoon of the warm
cream mixture into the eggs until thoroughly incorporated; repeat until
about 1/2 cup of the warm cream mixture is used. Whisk the warm cream
and egg mixture back into the saucepan with the remaining cream
mixture. Cook over medium-low heat, whisking constantly, until the
mixture almost comes to a simmer and thickens, about 5 minutes. Season
with salt and black pepper to taste.
Bring a large pot of lightly salted water to a boil. Cook fettuccine in
boiling water, stirring occasionally, until nearly cooked through, about
7 minutes. Drain.
Stir parsley, 1 cup of Parmigiano-Reggiano and cream mixture into the
pasta. Remove from heat, cover and let sit for a few minutes until thick.
Fold chicken and 1 cup Parmigiano-Reggiano into the pasta mixture to
serve.

BOARD APPROVES BOUNDARY
CHANGES FOR 2020-2021
The CFISD Board of Trustees approved the administration’s
recommendation for the establishment of attendance boundaries for
Rowe Middle School and rezoning modifications of multiple campus
attendance boundaries effective for the 2020-2021 school year during
the regularly scheduled meeting on December 16 th .
The approved boundary plan provides enrollment relief for Thornton and
Anthony middle schools for the 2020-2021 school year. Other impacted
campuses are Hopper and Kahla middle schools, Cypress Park and Cypress
Springs high schools and Hemmenway, Walker, Wilson and Tipps elementary
schools. The boundary proposal allows Rowe Middle School, which will open
in August 2020, to open with sixth, seventh and eighth grades. The proposal
aligns feeder patterns while amending boundary lines for new developments.
Per CFISD boundary transfer policies: Any middle school student affected
by this boundary change who will be in eighth grade for the 2020-2021
school year may remain at their current middle school on a student
transfer if their parents provide transportation. This opportunity will not
be available for younger siblings; • Students who are affected by a high
school boundary change who will have an older sibling in 10 th , 11 th or
12 th grades attending the affected high school may choose to transfer to
their original high school rather than attend the high school designated
by the rezoning. The sibling transfer will remain eligible for UIL varsity
participation and they will be allowed to remain until graduation and
• Any elementary school student affected by this boundary change who
will be in fifth grade for the 2020-2021 school year may remain at their
current elementary school on a student transfer if their parents provide
transportation. This opportunity will not be available for younger siblings.

Saturday, February 22 nd at the West Houston Airport (Hanger B-5). Dinner
and dancing are on tap for the night.
Doors open at 5 PM and a swing dance lesson will take place from 5:30-
6:30 PM. Dinner will be served at 6:15 PM. The band “Third Coast Swing”
will keep the mood festive no doubt.
The CAF is an organization worthy of support, as it is dedicated to
preserving and honoring our military history by keeping historical
airplanes in flying condition. Tickets are only $45 for the dinner and

The Spring Branch African Violet Club will hold their Annual Plant Show
and Sale at the Judson Robinson Jr. Community Center, 2020 Hermann
Drive, Houston, TX 77004.
Violets of all types such as standards, miniatures, semi-miniatures and
trailers will be available. Other Gesneriads such as Episcias and Streps
and supplies such as potting soil, pots and fertilizers will also be featured.
Club members will be available to answer general questions on growing
African Violets.
