GRAFFITI<br />

Graffiti is a problem in our neighborhoods. Just in the first 3 1/2 months<br />

of 2020, over $5,500 has been spent removing and/or applying a surface<br />

that makes removal easier. It has appeared under bridges, on retainer<br />

walls and on the trails themselves. Some are symbols, some are offensive.<br />

According, to state law regarding vandalism and intentionally painting<br />

on property:<br />

Class “C” - misdemeanor if the pecuniary loss is less than $100.<br />

Class “B” - $100 or more but less than $750.<br />

Class “A” - $750 or more but less that $2,500.<br />

Anything above this amount is considered a felony. The graffiti removed<br />

from the trails in early April fell into the Class “A” category. The police are<br />

notified and/or a police report is filed with each incident.<br />

Please remind everyone, if caught, there will be ramifications and fines.<br />

Your tax dollars could be put to better use than rectifying the willful acts of<br />

a few individuals. The trails throughout <strong>Copperfield</strong> are for the enjoyment<br />

of all. Everyone should be able to utilize them without encountering<br />

offensive material. Each year the traffic on the trails increases. We would<br />

like it to be a pleasant experience. Thank you.<br />

“See Something - Say Something”<br />

(CCA) EGRETS AND NIGHT HERONS<br />

Egrets and Night Herons have created nesting sites in <strong>Copperfield</strong> for<br />

the last 5 years shutting down pools, mailboxes & creating havoc in<br />

our neighborhood. The Egrets and Night Herons WILL be returning<br />

now!! Prevention is Crucial - Egrets, herons and other migratory birds<br />

are protected by Federal International Treaty, it’s illegal for residents to<br />

harass or harm the birds once they lay eggs. Residents will need to band<br />

together and drive them out of our neighborhood for the next several<br />

years. Preventing the birds from building nests on residential property or<br />

in our parks is key.<br />

1. Trim your tree and remove dead wood, these birds favor oak trees and<br />

other hardwoods. But will nest in other mature trees as well. Trim your<br />

tree canopy to allow sunlight between limbs and other nearby trees.<br />

Experts say this is the MOST effective step.<br />

2. Remove any old inactive nest in your trees. Egret Prevention Tools! This<br />

is the only opportunity homeowners have to scare the birds away and to<br />

disrupt the cycle. Any home with mature trees is a potential nesting site.<br />

• Visual deterrents - Hang aluminum pie plates, Mylar balloons, beach<br />

balls with shiny streamers or other moving objects in large trees.<br />

• Noisemakers - Pump-style air horns, whistles, clappers and even<br />

children’s toys are effective. Make as much noise as possible aimed at the<br />

bird.<br />

• Bright lights - High-intensity flashlights, strobe lights, flashing holiday<br />

lights can be effective.<br />

• Water sprayers - Power sprayers and pump-style toy water shooters can<br />

help. Homemade PVC pipe sprayers can help reach tall tree limbs.<br />

• Pool poles - Telescoping pool safety poles can be used to reach and<br />

remove early nesting material.<br />

• Any Non-lethal devices.<br />

• Check trees daily and remove the start of any nest quickly. Once birds<br />

begin sitting on the nest, eggs are probably present and birds cannot<br />

be harassed. If you have not yet taken action to prevent nesting on your<br />

property, please do so now!<br />

assist in addressing the low hanging trees within the <strong>Copperfield</strong><br />

hampering the response to emergency calls. Most of the fire departments<br />

equipment is 13 feet tall and therefore need a 14 foot clearance from<br />

trees that hang over the streets. Routes to locations have to be altered<br />

to avoid these areas and some areas have no alternate route; leaving no<br />

recourse but to park and walk to the locations.<br />

SEE STRAYS IN YOUR STREET?<br />

Do adult cats traipse through your landscape? Have you discovered<br />

newborn kittens in your yard? If you choose to care for these cats, keep in<br />

mind your responsibility. As custodian of the cats, you must keep the cats<br />

licensed, vaccinated and restrained. In unincorporated Harris County, the<br />

custodian of every cat is responsible for any behavior of that cat. For laws<br />

pertaining to pets in unincorporated Harris County, review regulations<br />

http://publichealth.harriscountytx.gov/Resources/Animals-and-Pets/<br />

AnimalLaws/AnimalRegulations#section4. Call 281-999-3191 to reach<br />

Animal Control for unincorporated Harris County.<br />

All Residents must have an account with WCA for trash pickup. If you<br />

do not have an account with WCA, your trash will not be picked up.<br />

Residents may purchase a trash receptacle from any hardware store.<br />

Recycling cans may be requested from WCA, additional cans may be<br />

purchased from them as well. WCA observed Holidays are New Year’s<br />

Day, Memorial Day, Independence Day, Labor Day, Thanksgiving Day and<br />

Christmas Day. Trash pickup will resume on the following trash collection<br />

day. In order to keep the neighborhood appealing to potential buyers,<br />

increase curb appeal and deter vandalism we ask that trash be placed at<br />

the curb no earlier than the evening before scheduled pick up and trash<br />

cans be removed the same day. If you have lawn service, please request<br />

the lawn clippings to be hauled away or have them placed at the curb<br />

not on the sidewalk.<br />

• Refuse must be in bags or cans, weighing no more than 40 pounds.<br />

• Tree branches, brush, shrubs and fencing must be tied in bundles,<br />

weighing no more than 40 pounds and being no longer than 4 feet<br />

in length. • Branches may be no wider than 3 inches in diameter to<br />

avoid damaging equipment. • Per Federal law, refrigerators, freezers<br />

and air conditioning units must be drained of all Freon and have an<br />

accompanying bill verifying Freon has been drained. • ITEMS NOT<br />

ACCEPTED: dirt, rocks, bricks, concrete, tires, batteries, motor oil, cooking<br />

oil, waste generated by a private contractor, hazardous/toxic chemicals<br />

or material, construction material, no more than 1 room of carpeting,<br />

bundled and less than 40 pounds. Items not collected will be tagged<br />

explaining reason for non-collection.<br />

COYOTES IN COPPERFIELD<br />

Coyotes have been sighted in many of the subdivisions in the <strong>Copperfield</strong><br />

area at night and before dawn. Please protect your pets. They should not<br />

be left unattended after dark, even in their own enclosed yard as coyotes<br />

can jump or scale a 6-7 ft fence.<br />

CY-FAIR WOMEN’S CLUB<br />

WOMEN SERVING THE COMMUNITY<br />

CWC is a non-profit service organization that gives back to the Cy-Fair<br />

community. All the funds raised by the club are given to the community<br />

by way of scholarships for graduating high school seniors, grants at Lone<br />

Star College-CyFair and funds to other non-profits in our community<br />

as well. Membership for the Cy-Fair Women’s Club is open to all ladies<br />

in Northwest Houston/Cypress neighborhoods. We always meet the<br />

first Thursday of the month at The Berry Center, 8877 Barker Cypress<br />

Rd. You can park at Entrance 2 and look for the directional signs to the<br />

meeting room. Our meetings begin with social time and refreshments<br />

at 6:15 PM, immediately followed by a program at 6:45 PM. Our monthly<br />

meetings are not only educational and enjoyable, but they can also<br />

develop lasting friendships too. In addition, we have a social event and<br />

volunteer opportunities throughout the month as well. Please check<br />

suspicious activity you observe at any time, to the Sheriff’s Office nonemergency<br />

number at 713-221-6000. For life threatening emergencies<br />

call 911. Nextdoor is the best way to stay in the know about what’s going<br />

on in your neighborhood -whether it’s finding a last-minute babysitter,<br />

learning about an upcoming block party or hearing about a rash of car<br />

break-ins. There are so many ways our neighbors can help us, we just<br />

need an easier way to connect with them. Please invite all residents to<br />

sign up for the Nextdoor.com APP for their respective neighborhood.<br />

(CPV) A WORD FROM THE BOARD<br />

We hope everyone had a wonderful Christmas and New Years with family<br />

and friends! We hope that the new year will bring us peace, unity and<br />

hope for our nation and we overcome the pandemic of Covid. Many of<br />

us have lost family and friends to this dreadful disease. We wish everyone<br />

peace, comfort, good health and joy.<br />

ANNUAL MEETING!!!!<br />

We attempted to have our Annual Meeting which was scheduled<br />

Wednesday December 9 th . We sent out information and proxies in<br />

the event that you couldn’t attend the virtual meeting. We were not<br />

able to conduct the Annual meeting because we did not have enough<br />

homeowners or proxies to establish our quorum according to our By-<br />

Laws. We had to close the meeting and reopen a regular bi-monthly<br />

meeting instead. No open election of officers or yearly financials could<br />

be discussed or made. This is why it is so important to send in proxies or<br />

attend in order to conduct our Annual Meeting.<br />

NOTE: THERE WILL BE A SCS LETTER AND A FORTHCOMING<br />

ANNOUNCEMENT WHICH WILL NEED YOUR IMMEDIATE ATTENTION AND<br />

WILL REQUIRE A SIGNATURE FROM THE HOMEOWNER REGARDING SOME<br />

OTHER ISSUES AND NEWS<br />

ASSESSMENTS:<br />

As you know, our yearly assessments were due by <strong>January</strong> 1 st and<br />

delinquent after February 1 st . SCS mailed out your statement in November.<br />

If you did not receive it, you can obtain it from the portal website and<br />

pay it on line. Again, contact SCS if you have any questions regarding<br />

this matter. We know Covid 19 has burdened many of our homeowners;<br />

however, assessments must be paid or arrangements for payment made.<br />

The Board has again voted to not raise our assessments for the new<br />

coming year. We have not had an increase since 2017. Keep in mind that<br />

all services keep going up every year, but we have had a great collection<br />

percentage from our homeowners that we have sustained our yearly<br />

budget.<br />

POOL AND PARKS:<br />

Due to the continuing concern and safety of the matter at hand with the<br />

COVID 19, the Board has decided that the PARK and PLAYGROUND will<br />

remain CLOSED until further notice! You can still walk on the sidewalks<br />

and the esplanades. We will continue supplying doggie bags for you to<br />

walk your pets. Again we must remind everyone that cameras will pick up<br />

any illegal activity at all times in the pool/park area.<br />

SCS’S NEW COMMUNICATION:<br />

SCSGo is now officially discontinued. Now we have the new portal that<br />

contains all our information, news, account status, financial history,<br />

violations (with pictures), events and much more.<br />

You can submit electronic payments, Architectural Requests and view<br />

your personal account.<br />

We highly recommend you sign up and register by going to portal.<br />

scsmgmt.com (no proceeding www) and click the “sign up” section in the<br />

top right corner of the page. This is the best way to get registered and<br />

get your login.<br />

Report any suspicious behavior. Report it to the Harris County Sheriff’s<br />

AVOID thieves or break ins by making sure you lock your cars, doors and<br />

back yard gate entries at all times. Do not give them a reason to break in<br />

to steal! Most incidents are brought on upon ourselves!<br />

Letters were sent out from Crest to homeowners the first week of<br />

December with the above introductory information. The Middlegate<br />

Board announced the new management company in December’s issue<br />

(MG) HOA BOARD MEETING<br />

The next HOA Board meeting is scheduled for <strong>January</strong> 13, <strong>2021</strong>. The<br />

announcement will go out to all homeowners registered on the Crest<br />

website. Details of time and place, either in person or virtual, will be<br />

included in email.<br />

MIDDLEGATE COMMITTEES ARE YOUR BOOTS ON THE GROUND:<br />

Committees are advisory in their function and allow HOA directors to<br />

complete tasks more efficiently. Committees provide the additional<br />

da-ta necessary for decision making by the homeowner association.<br />

Committee efforts benefit the need of the entire homeowner association.<br />

In their advisory capacity, committees present their findings in the form<br />

of a report to the directors of the HOA who have the final responsibility<br />

for decisions. The benefit of committees to the homeowner association<br />

is that volunteers from the community bring life lessons, professional<br />

experience, education and common sense approaches to their duties.<br />

The Park and Pool Committee is active year round. The committee<br />

members study pool and park maintenance needs, gather competitive<br />

bids from contractors and present reports to HOA directors at the<br />

Board meetings. The Neighbor Events Committee works closely with<br />

the Board directors to assure approval and support for special events.<br />

The committee members work behind the scenes to schedule the<br />

elements. On the day of each event, the committee members and the<br />

Board directors are present to coordinate the many working parts. Like<br />

the Board members, committee members are volunteers. Unlike Board<br />

members, committee members are not voted into place by homeowners.<br />

If you have life lessons, professional experience, education and common<br />

sense to share; come to an HOA meeting or contact Crest Management<br />

(MG) MIDDLEGATE AND CCA<br />

Middlegate homeowners belong to the Middlegate Village Community<br />

Association. The Association assumes responsibilities for such services as<br />

street lighting, mosquito control, common area maintenance (Middlegate<br />

parks and cul-de-sacs), pool upkeep and deed restriction enforcement.<br />

The <strong>Copperfield</strong> Community Association provides services common to<br />

each of the villages of <strong>Copperfield</strong>. Among these are the law enforcement<br />

patrol contract, garbage collection contract and upkeep of the CCA park<br />

and center on Willow River.<br />

Each Middlegate homeowner is billed an annual assessment for the<br />

purpose of providing the revenue to cover operating costs of the<br />

Middlegate Village Community Association and Middlegate’s portion of<br />

CCA’s operating costs.<br />

(MG) SEWER REPAIRS AND MUD BILL<br />

Did you know that your MUD bill payment funds inspection and repair of<br />

wastewater sewers that run underground Middlegate?<br />

Middlegate is served by two Municipal Utility Districts, MUD 162<br />

and MUD 163. Your home is served by one or the other. Each District<br />

maintains water and sewer needs via coordination of state agency TCEQ,<br />

local operators and contractors and an elected Board of Directors.<br />

(MG) HOA DUTIES<br />

Middlegate’s homeowner’s association (HOA) is structured to help maintain a<br />

cohesive atmosphere in the neighborhood. Membership uniformly binds all<br />

791 homeowners to the association’s covenants, conditions and restrictions<br />

(CC&R). HOA membership is mandatory, not voluntary and each homeowner<br />

is assessed fees to help cover HOA expenses. The HOA assessments cover<br />

many expenses such as pool up-keep, street light electricity, mosquito<br />

fogging, mowing and irrigation of the parks and cul-de-sacs. Each<br />

homeowner is required to maintain their own property. Guidelines are found<br />

in the deed restrictions. See governing documents on Crest website.<br />

Hi neighbors. Since we are all spending lots more time at home, we<br />

have more time to walk through the two Middlegate parks and enjoy<br />

the mature trees and listen to the nesting birds and chattering squirrels.<br />

Just like your house and yard, Middlegate parks need TLC. When you see<br />

residents checking off a punch list of maintenance items, know that they<br />

are taking positive steps in keeping Middlegate in good shape. Contact<br />

the sweat equity for an unpaid reward. There is great satisfaction in<br />

ability to maintain common area upkeep. Your HOA Board members<br />

make budgetary decisions at every meeting. Not unlike your household<br />

expenses, many expenses are recurring while others are occasional or<br />

one-time costs. For those residents who’d like to join in this effort, stop<br />

into an HOA meeting or contact Crest. The required skill is the genuine<br />

desire to keep Middlegate the home we want for our families.<br />

(MG) ARCHITECTURAL REVIEW / EXTERIOR MODIFICATION REQUEST<br />

Please submit an Exterior Modification Request via the Crest website<br />

before beginning any project that would modify the outside of your<br />

home. You will need approval from the ACC/EMR committee to ensure the<br />

modification complies with the Middlegate Village Architectural Guidelines.<br />

account. From there, you can submit an EMR via the Homeowner Portal.<br />

If you wish to change the color of your home, the Crest Management<br />

Meetings of the Northmead Village Board of Directors are held the fourth<br />

Wednesday every other month and we encourage all residents to attend<br />

the meetings, either to address the Board or just to listen and know what<br />

is going on. The executive session begins at 6-6:30 PM with the open<br />

session starting at 6:30 PM. The meetings are held at the <strong>Copperfield</strong><br />

Community Center located at 15409 Willow River Drive or on Zoom. All<br />

residents are welcome and encouraged to attend the meetings. If you<br />

It’s that time again! <strong>2021</strong> annual assessment bill has gone out so if you<br />

didn’t receive it, give Graham Management a call.<br />

• The easiest and fastest way to pay is online. Go to: Nabr Network or<br />

www.grahammanagementhouston.com. You can pay online using either<br />

a credit card or an eCheck.<br />

• The bill you receive will also include a return envelope for those paying<br />

by mail and the address is: Payment Lockbox, P.O. Box 879, Richmond, TX,<br />

77406-0022.<br />

• If you use your own online bill payment system please be sure to update<br />

the remittance address as this is a new address.<br />

• Please be sure to include your account number on your check.<br />

(NM) CRIME WATCH<br />

The <strong>Copperfield</strong> Villages monthly Crime Watch meeting has been<br />

converted to a ‘virtual’ delivery of the crime watch statistics monthly due<br />

to the low turnout at meetings and lack of an interest from the public to<br />

attend. Sergeant Lightfoot (HCSO) is posting monthly data via Nextdoor.<br />

com along with notable arrest info and tips monthly.<br />

(SC) DEED RESTRICTION LETTERS<br />

Please do not ignore deed restriction letters sent to your residence about<br />

deed restriction violations. Doing so can subject the property owner to<br />

a $35 charge per CERTIFIED letter if not settled by the homeowner in the<br />

time noted in the letter. Associa (PMG) manages this process and should<br />

be contacted if you require assistance in complying. Associa (PMG) will<br />

work with you to get the violation resolved, IN ACCORDANCE WITH THE<br />

COVENANTS, CONDITIONS AND RESTRICITONS EVERY HOMEOWNER<br />

AGREED TO ABIDE BY, SOME VIOLATIONS CAN BE CURED VIA THE<br />

ASSOCIATIONS SELF HELP RESTRICTION. The Association can hire a<br />

contractor to repair THESE VIOLATIONS and charge THE COST OF THIS<br />

SERVICE charged back to the Home Owner.<br />

The South Creek Village Community Association takes these violations<br />

very seriously and strives to keep up the Southcreek standards for<br />

attractive, well-maintained homes. If you should receive a violation,<br />

please take this seriously and CORRECT the violation. If the violation is<br />

not CORRECTED, the Southcreek Village Community Association will BE<br />

FORCED to turn it over to its legal representatives. Once that happens<br />

all future expenses are born by the homeowner. There is a charge of<br />

$125 AND UP FOR EACH LETTER. Please note that The Southcreek Village<br />

Community Association does not want to make the violations public. We<br />

are here to protect everybody’s property values. Please don’t disregard<br />

(SC) SPEEDING IN COMMUNITY<br />

You would expect your Homeowners Association (HOA) residents to drive<br />

safer the closer they get to home and you would hope that non-resident<br />

drivers-that benefit from your neighborhood’s ability to shorten their<br />

commute-would respect the speed limits as they cut-through each day.<br />

However, unique conditions make speeding prevalent in neighborhoods.<br />

Since residents travel their home streets daily, commutes can become<br />

“autopilot journeys.” When on “autopilot,” drivers are unaware that they<br />

go over the speed limit, don’t stop at crosswalks, roll through stop signs<br />

or brake too late-sometimes they don’t even remember driving home.<br />

Since neighborhood streets are transition points from higher-speed<br />

roads, drivers also may not readily realize how fast they are still going.<br />

Non-residents, who shortcut through residential streets to avoid traffic or<br />

to shave off a few seconds compared to another route, compound local<br />

speeding issues. You can bet that someone who is in such a hurry isn’t<br />

paying attention to your local speed limits.<br />

Compounding the issue, distracted driving has now surpassed speeding<br />

and drunk driving as the top cause of motor vehicle accidents. It is a growing<br />

epidemic, impacting the safety of residential streets. As drivers leave and<br />

return home on streets with slower speed limits, they may feel “safe enough”<br />

to check a text, look up Google Map directions or select a music playlist.<br />

Unfortunately, it only takes a second or two with eyes off the road to miss<br />

stopping at a crosswalk or not see a dog running into the street.<br />

The Westcreek Landscape Committee generally meets on the 2 nd Monday<br />

every month. If you are interested in helping make a difference in our<br />

neighborhood and would like to become part of the group, we welcome<br />

and encourage your attendance and hope to see you there - there is<br />

always room for you! Contrary to popular opinions we do not do the<br />

manual labor! We are a friendly group of decision makers!<br />

Comments, suggestions or questions regarding common areas or other<br />

landscape topics are always welcome. The Landscape Committee at<br />

LandscapeWestcreek@gmail.com. A member will then get back with you<br />

to answer your questions or concerns.<br />

A YEAR END REPORT:<br />

Despite the committee having to meet remotely or every other month,<br />

there has been much progress from the Landscape Committee. The<br />

following is a list of accomplishments for the year 2020 and we feel a<br />

good use of our HOA funds:<br />

• Installation of bench on Forest Heights.<br />

• Completion of improvements on 27 cul de sacs & 4 setbacks along<br />

greenbelt which was a 2 yr. project; this included adding more lioripe<br />

and sod and removing dead hawthorns.<br />

• Improvements to beds at Western Pass.<br />

• Expansion of bed at Royal Gardens to reduce mud on sidewalks.<br />

• Flowers planted at both pools<br />

• Mulhy grass planted in front of drainage ditch on Hudson Oaks to<br />

improve appearance of the ditch.<br />

• Continuation of planting of seasonal color twice a year.<br />

• Maintenance of both the Prairie & Monarch beds; seed packet giveaways<br />

w/seeds harvested from these beds.<br />

• Identification of sidewalks that need repair along Forest Heights, Royal<br />

Gardens and Hudson Oaks.<br />

• Recipient of another grant which has been awarded to a Boy Scout to<br />

help w/his Eagle project; this project will be another native Texas bed at<br />

end of greenbelt in the triangle.<br />

• Two-thirds of trees along Forest Heights have been trimmed. Completion<br />

in <strong>2021</strong>.<br />

• Judging for yard of the month awards & Christmas decoration awards.<br />

• Last but not least we petitioned the CCA to resume the planting of our<br />

monument signs.<br />

Thanks to all who volunteered to judge our decorations. We had a grand<br />

32ND ANNUAL B.F. ADAM GOLF CLASSIC<br />

RAISES $130,000 FOR CFEF<br />

The CFISD community raised approximately $130,000 for student<br />

scholarships through the Cy-Fair Educational Foundation’s (CFEF) 32nd<br />

annual B.F. Adam Golf Classic, held Nov. 16 th at BlackHorse Golf Club.<br />

The annual event, named after longtime CFISD school Board member<br />

and elementary school namesake Bernard Fred (B.F.) Adam, contributes<br />

to the CFEF mission of increasing college access for CFISD graduates by<br />

awarding scholarships.<br />

“We were so thankful to be able to have our tournament this year,<br />

COVID-19 has impacted our community and we are blessed to have<br />

events that benefit students and staff of CFISD,” said Marie Holmes, CFEF<br />

executive director. “Many thanks to our incredible sponsors for their<br />

support.”<br />

The tournament was underwritten by Allegiance Bank for the second<br />

SUPERINTENDENT HOLIDAY CARD CONTEST<br />

Students from Fiest Elementary School, Spillane Middle School and<br />

Cypress Lakes High School placed first in the annual Superintendent<br />

Holiday Card Contest, as their designs were selected from more than 265<br />

entries across 78 CFISD campuses.<br />

CFISD Superintendent Dr. Mark Henry and associate superintendents<br />

served as jurors for the contest, designating a winner for each grade level<br />

and choosing the top three honorees at the elementary, middle and high<br />

school level from the “Best in Grade” winners.<br />

The American Red Cross urges people to share their good health and<br />

resolve to give blood regularly, beginning in <strong>January</strong> with National<br />

Blood Donor Month. Below are key messages that can be relayed to<br />

COMMON VITAMIN DEFICIENCIES<br />

As we embark on the journey each day to eat and live better, take note of<br />

the common vitamin nutrient deficiencies that are easily treated:<br />

1. Calcium: Calcium is important for maintaining strong bones and<br />

controlling muscle and nerve function. Signs of severely low calcium<br />

include fatigue, muscle cramps, abnormal heart rhythms and a poor<br />

appetite. Make sure you’re getting enough with at least three servings of<br />

milk or yogurt a day. Other good sources of calcium are cheese, calciumfortified<br />

orange juice and dark, leafy greens.<br />

2. Vitamin D: This vitamin is also critical for bone health. Symptoms<br />

of a vitamin D deficiency can be vague - fatigue and muscle aches or<br />

weakness. If it goes on long term, a vitamin D deficiency can lead to<br />

softening of the bones. To get enough vitamin D, have three servings<br />

of fortified milk or yogurt daily eating fatty fish, such as salmon or tuna,<br />

twice a week; and spend some time outside in the sunshine every day.<br />

3. Potassium: Potassium helps the kidneys, heart and other organs<br />

work properly. You could become low in potassium in the short term<br />

because of diarrhea or vomiting, excessive sweating or antibiotics or<br />

because of chronic conditions such as eating disorders and kidney<br />

disease, according to the U.S. National Library of Medicine. Symptoms of<br />

a deficiency include weight loss, muscle weakness, constipation and in<br />

severe cases, an abnormal heart rhythm. For natural potassium sources,<br />

consume bananas, whole grains, milk, vegetables, beans and peas.<br />

4. Iron: Iron helps your body make red blood cells. When iron levels get<br />

too low, your body can’t effectively carry oxygen. The resulting anemia<br />

can cause fatigue. You might also notice pale skin and dull, thin, sparse<br />

hair. To boost iron levels, eat iron-fortified cereal, beef, oysters, beans<br />

(especially white beans, chickpeas and kidney beans), lentils and spinach.<br />

5. Vitamin B12: Vitamin B12 aids the production of DNA and helps make<br />

neurotransmitters in the brain. With an increasing number of vegans<br />

and people who’ve had weight loss surgery, vitamin B12 deficiency is<br />

becoming more common. Symptoms of severe B12 deficiency include<br />

numbness in the legs, hands or feet; problems with walking and balance;<br />

anemia; fatigue; weakness; a swollen, inflamed tongue; memory loss;<br />

paranoia; and hallucinations. You can get vitamin B12 from animal<br />

sources: eat more fish, chicken, milk and yogurt. If you’re vegan, opt for<br />

vegan foods fortified with B12, such as non-dairy milk, meat substitutes<br />

and breakfast cereals.<br />

6. Folate: Folate or folic acid, is a particularly important vitamin for<br />

women of childbearing age, which is why prenatal vitamins contain such<br />

a hefty dose. A folate deficiency can cause a decrease in the total number<br />

of cells and large red blood cells as well as neural tube defects in an<br />

unborn child. Symptoms of a folate deficiency include fatigue, gray hair,<br />

mouth ulcers, poor growth and a swollen tongue. To get folate from food,<br />

go for fortified cereals, beans, lentils, leafy greens and oranges.<br />

7. Magnesium: Magnesium helps support bone health and assists in<br />

energy production. Magnesium deficiency can cause loss of appetite,<br />

nausea and vomiting, fatigue and weakness. In more severe cases, it can<br />

lead to numbness, muscle cramps, seizures, abnormal heart rhythms,<br />

personality changes or low potassium or calcium levels. To help your<br />

levels return to normal, eat more magnesium-rich foods, such as almonds,<br />

cashews, peanuts, spinach, black beans and edamame.<br />

The new food plate unveiled by the Department of Agriculture sends a<br />

clear message: eat more fruits and vegetables. Here are easy ways to get<br />

more of these important foods into your diet:<br />

Start early: Get in the recommended five servings of fruits and vegetables<br />

a day by eating them early with your morning meal. Add a banana to<br />

your cereal, berries to your yogurt, veggies to your omelet.<br />

Make them visible: Set out a fruit bowl in the kitchen or have carrot<br />

sticks available for snacking. Take some time to prepare the fruits or<br />

vegetables, so they are ready to eat.<br />

Frozen is good: Frozen vegetables, such as peas and carrots, are a great<br />

way to make sure you always have vegetables in the house.<br />

At mealtime, think of the veggies first, not the protein: Half of your<br />

plate needs to be filled with fruits and vegetables. Base your meals on<br />

what vegetables you’ll have and then think of the grains and protein to<br />

go with it.<br />

Have fruit with your sweets: Fruits are nature’s natural candy. Puree<br />

MARTIN LUTHER KING, JR.<br />

Martin Luther King, Jr., an American clergyman and Nobel Prize<br />

winner was one of the principal leaders of the American civil rights<br />

movement and a prominent advocate of nonviolent protest. King’s<br />

challenges to segregation and racial discrimination in the 1950s and<br />

1960s helped convince many white Americans to support the cause<br />

of civil rights in the United States. After his assassination in 1968, King<br />

became a symbol of protest in the struggle for racial justice. In 1957,<br />

King helped found the Southern Christian Leadership Conference<br />

(SCLC), an organization of black churches and ministers that aimed<br />

to challenge racial segregation. As SCLC’s president, King became<br />

the organization’s dominate personality and its primary intellectual<br />

influence. He was responsible for much of the organization’s<br />

fundraising, which he frequently conducted in conjunction with<br />

preaching engagements in Northern churches. SCLC sought to<br />

complement the NAACP’s legal efforts to dismantle segregation<br />

through the courts, with King and other SCLC leaders encouraging<br />

the use of nonviolent direct action to protest discrimination. These<br />

activities included marches, demonstrations and boycotts.<br />

“I Have a Dream” - King and other black leaders organized the 1963<br />

March on Washington, a massive protest in Washington, D.C. for<br />

jobs and civil rights. On August 28, 1963, King delivered the keynote<br />

address to an audience of more than 200,000 civil rights supporters.<br />

His “I Have a Dream” speech expressed the hopes of the civil rights<br />

movement in oratory as moving as any in American history. After<br />

his death, King came to represent black courage and achievement,<br />

high moral leadership and the ability of Americans to address and<br />

overcome racial divisions. Perhaps the most important memorial<br />

is the national holiday in King’s honor, designated by the Congress<br />

of the United States in 1983 and observed on the third Monday in<br />

<strong>January</strong>, a day that falls on or near King’s birthday of <strong>January</strong> 15 th .<br />

Spaghetti Pizza<br />

You could make this on National Spaghetti Day <strong>January</strong> 4th!<br />

Ingredients:<br />

1 (8 ounce) package spaghetti, broken into 2-inch pieces<br />

1 egg, beaten<br />

1/4 cup milk<br />

2 cups shredded mozzarella cheese, divided<br />

1/4 teaspoon salt<br />

1/4 teaspoon garlic salt<br />

1 (16 ounce) jar spaghetti sauce<br />

1 teaspoon dried oregano<br />

1/4 teaspoon dried basil<br />

4 ounces pepperoni sausage, sliced (or other toppings if preferred)<br />

Directions: Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13-inch<br />

baking dish. Bring a large pot of lightly salted water to a boil. Add spaghetti<br />

and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.<br />

Combine egg, milk, 1/2 cup of the mozzarella cheese, salt and garlic salt in a<br />

large bowl. Stir in cooked spaghetti; mix well. Spread mixture into prepared<br />

baking dish. Bake in preheated oven for 15 minutes. Remove from oven and<br />

reduce temperature to 350 degrees F (175 degrees C).<br />

Spread sauce over spaghetti. Sprinkle with oregano, basil and the remaining<br />

1 1/2 cups mozzarella. Top with pepperoni, return to oven and bake until<br />

cheese is bubbly and beginning to brown, about 30 minutes more. Let stand<br />

5 minutes before cutting.<br />

Chocolate Peanut Butter Pie<br />

You could make this on National Peanut Butter Day <strong>January</strong> 24th!<br />

Ingredients:<br />

1 (9 inch) prepared chocolate cookie crumb crust<br />

4 eggs<br />

1 cup butter, softened<br />

8 (1 ounce) squares semisweet chocolate<br />

2 cups confectioners’ sugar<br />

1 cup smooth peanut butter<br />

1/3 cup heavy whipping cream<br />

DIRECTIONS:<br />

Melt 6 ounces semi sweet chocolate and cool to room temperature. Beat<br />

the eggs with 3/4 cup butter or margarine, chocolate and confectioners’<br />

sugar for a FULL 5 minutes. Mixture will be thick and smooth.<br />

In a separate bowl, beat the peanut butter, 1/4 cup butter, and cream.<br />

Spoon chocolate filling into crust. Swirl peanut butter filling into<br />

chocolate filling. Drizzle remaining 2 oz of melted chocolate on top of<br />

pie. Refrigerate for at least 1 hour and serve.<br />

Gardening Tips For <strong>January</strong><br />

• Birds: Provide food and fresh water. More birds die from lack of water<br />

than from lack of food.<br />

• Cacti: Semi-dormant now. Reduce watering.<br />

• Camellias: Plants may be moved. Pick up and discard fallen blooms.<br />

• Cultivation: Changes in design may now be made, new beds dug and<br />

old ones rebuilt. Correct defects in drainage. Incorporate gypsum into<br />

heavy soils: repeat in three weeks. Dig granite dust, rock phosphate<br />

and quantities of organic matter into soil. Allow time for settling before<br />

planting.<br />

• Fertilize: Daylilies, spuria, Louisiana and bearded irises with complete<br />

fertilizer. Give strawberries 1 teaspoon ammonium sulfate, keeping six<br />

inches away from plant. Fertilize pansies with manure tea or blood meal.<br />

Water in.<br />

• Fruits: Plant fruit trees. Mulch figs with grass or straw to prevent freeze<br />

damage to crown.<br />

• House Plants: Water, when surface soil is crumbly dry. Wash dust off<br />

leaves to open pores. Mist often. Inspect for diseases and insects. Reduce<br />

water for poinsettias.<br />

• Lawns: Remove thatch aerate, and feed with low nitrogen mixture.<br />

• Pests: For petal blight prevention, spray azaleas and camellias as<br />

flowers open. Spray for scale with dormant oil solution if temperature<br />

will be above 35˚ and below 85˚ for next 48 hours. Always read and heed<br />

manufacturer’s directions before spraying.<br />

• Propagation: Ivy cuttings root easily this month and next. Root cuttings<br />

of shrubs in mixture of loam and coarse sand; keep damp and semishaded<br />

until rooted.<br />

• Prune: Fruit trees in advance of new growth. Prune to groom and shape.<br />

Do not remove too much. Remove dead wood from trees and shrubs<br />

before spring buds swell, but do not prune spring bloomers. Prune crape<br />

myrtles. Prune nandina and others of similar growth habit by cutting<br />

unwanted canes out at base of plant.<br />

• Roses: Annual pruning about the middle of February, just before the<br />

spring buds break. To prevent later appearance of disease in the old beds,<br />

keep garden clean of debris and weeds. Complete preparation of new<br />

beds for roses.<br />

• Transplanting: <strong>January</strong> is one of the best months to transplant woody<br />

plants, both evergreen and deciduous, especially trees. Energy will be<br />

expended on roots instead of foliage. Learn ultimate size and cultural<br />

needs of tree or plant before buying. Consider dwarf varieties to avoid<br />

crowding later. Group plants of similar cultural needs. Do not work wet<br />

soil. Assure good drainage. Keep plants moist.<br />

• Vegetables: Prepare beds, preferably raised for drainage, with about<br />

50% humus, including rotted manure.<br />

• Winter Protection: Expect freeze any time; plan for protection of tender<br />

plants. Water. Remove coverings, particularly plastic, when temperature<br />

rises. Protect low plants with dry leaves, pine needles or soil mulch, but<br />

remove when weather warms.<br />
