Icannot recall in my (relatively short) lifetime ever being more hopeful<br />

for a New Year. Many of us are craving a sense of normalcy; gathering<br />

with family and friends, hugging, and kissing each other when we<br />

greet – I really miss those little things.<br />

Our Village by the Sea is chock full of places to get in shape, shed some of<br />

that Quarantine 15, and get a jump on everyone’s favorite resolution – lose<br />

Bikes for Tikes<br />

Children’s Foundation<br />

of Palm Beach County<br />

Provides Bikes to Local Kids<br />

The Children’s Foundation of Palm Beach County delivered<br />

approximately 1,000 bikes to local kids by Christmas<br />

through its new initiative, Bikes for Tikes. The bikes were given<br />

to kids supported by the Foundation’s children’s charity nonprofit<br />

partners, including Place of Hope, YMCA of The Palm<br />

Beaches, SOS Children’s Villages of Florida, and JAFCO.<br />

The lead Bikes for Tikes contributors are the members of<br />

Palm Beach Country Club. The initiative was spearheaded<br />

by Foundation Board Members and Town of Palm Beach residents<br />

Sharyn Frankel, Michelle Gluckow, Linda Schaps, Barbara<br />

Stoller Wittenstein, and Yvonne Ackerman.<br />

The Children’s Foundation of Palm Beach County was established<br />

earlier this year and is an affiliate of the Boca West Children’s<br />

Foundation, which has granted more than $10 million in<br />

the past 10 years to its 31 non-profit partners.<br />

Contributions of $80 provide a tricycle and helmet and contributions<br />

of $150 provide a bicycle and helmet. The Foundation<br />

also has sponsorship packages available. Contributions<br />

can be made to Children’s Foundation of Palm Beach County at<br />

Members of the Rotary Club of Delray Beach and<br />

Kiwanis Club of Delray Beach teamed up TO STaff<br />

a local precinct during the AuguST primary and<br />

November general election<br />

The two service clubs responded to a<br />

call from Supervisor of Elections Wendy<br />

Sartory Link seeking to fill a poll worker<br />

shortage due the COVID-19 pandemic. Together<br />

the organizations volunteered to<br />

staff the polling location at Veteran’s Park,<br />

which serves two precincts.<br />

“Rotary and Kiwanis have always had<br />

a friendly rivalry,” said long-time Kiwanis<br />

member Ezra Krieg, who help coordinate<br />

the project for the two clubs. “This was<br />

an opportunity for our two clubs to join<br />

forces in our efforts to fill a need and better<br />

serve our community.” “It was great to<br />

work closely with Roger Caine and Judy<br />

Molica of Rotary to make sure everything<br />

went smoothly and without a hitch.”<br />

In addition to ensuring the polling place<br />

was staffed for more than 12 hours each<br />

election day, members of the two clubs<br />

also went through a rigorous six-hour<br />

training session.<br />

For their efforts each club received close<br />

to $3,000 from the Supervisor of Elections<br />

Office for the two days. The funds will<br />

be used to support non-profit organizations<br />

serving Delray Beach residents and<br />

to support community projects. The two<br />

clubs hope to work together again at the<br />

March municipal elections or other upcoming<br />

elections.<br />

walk that occurred November 21st was a<br />

huge success. Put on by The Hamlet Residents<br />

Association & The Seagate Hotel &<br />

Spa at the outdoor Tennis Center West<br />

Yard, the event drew a masked crowd safe<br />

enough to enjoy the day for a good cause.<br />

Proceeds from the Go Pink Challenge<br />

went to The Boca Raton Regional Hospital<br />

Foundation to provide the most advanced<br />

care for their patients, and raised money for<br />

needed technological advancements such as<br />

a fully digital, accessible Mammovan to provide<br />

mammograms mobily.<br />

In collaboration with The Seagate’s<br />

‘Seagate Safe’ initiative, pink masks were<br />

also provided. Among the local attendees<br />

were the Palm Beach County Fire and Sheriff<br />

Dept and Ginny Clark, Executive Director<br />

of the Sands Family Foundation who oversees<br />

its philanthropic activities to support<br />

the Delray Beach community and beyond.<br />

Children’s Charities<br />

Boca West Children’s Foundation (BWCF)<br />

held its 8th Annual $100,000 Golf Challenge,<br />

on November 22 at Boca West Country<br />

Club, raising more than $400,000 for its<br />

local children’s charity partners.<br />

The golf challenge served as fundraisers<br />

for each of the Foundation’s 31 participating<br />

charity partners. Earlier this year, the<br />

Foundation celebrated its 10th anniversary<br />

and the granting of more than $10 million<br />

for projects that serve at-risk youth.<br />

The event highlight was the annual<br />

Duck Drop in which 600 (fake) ducks were<br />

dropped from a crane with the “owner” of<br />

the duck landing closest to the hole winning<br />

$2,500. The event also featured boxed<br />

breakfast, gifts for each golfer and boxed<br />

lunch stops featuring lobster rolls, sirloin<br />

slider, sandwiches and more.<br />

Participants were able to purchase raffle<br />

tickets with prizes including a $7,000 shopping<br />

spree from Saks Fifth Avenue Boca Raton,<br />

a weekend at the Boca Raton Resort &<br />

Club with a round of golf, and a “Celebrity<br />

cruise on the fly,” in which the winner can<br />

choose from a variety of cruises on dates<br />

that work for them, courtesy of Scott Grody<br />

Travel. Raffle tickets are on sale through<br />

the end of the year with proceeds directly<br />

benefiting the partner charities.<br />

Golfers had the opportunity to golf on<br />

courses that have been ranked among the<br />

best in the world, alongside St. Andrews,<br />

Pine Valley, Pebble Beach and Pinehurst.<br />

The event was socially distanced, with a<br />

limited number of participants, stringent<br />

Like everyone else, Mary Csar, Executive<br />

Director of the Boca Raton Historical Society<br />

& Museum (BRHS&M) is ready for this<br />

challenging year to be over and for a 2021<br />

to arrive. The BRHS&M has become a bigger<br />

and brighter brand-new museum over the<br />

last few months during a total, top-to-bottom,<br />

$3.9-million reimagination, redesign<br />

and renovation. The official reopening date<br />

will be announced in early 2021.<br />

The new permanent galleries include:<br />

+ Historic Timeline starting with the earliest<br />

Pre-Columbian inhabitants up to the<br />

21st Century.<br />

+ Pioneer Days focused on the local heritage<br />

By February, the majority of resolution-setters have abandoned<br />

their new goals and fallen back into their old ways.<br />

Why does this happen? There are a number of common reasons<br />

why most people don’t stick to their New Year’s resolutions. If you<br />

make one of these mistakes, you’ll probably find yourself giving up<br />

on your resolutions, too.<br />

1. Not being realistic<br />

Shooting for the moon isn’t always the best strategy. In fact,<br />

sometimes it can prevent you from even getting off the ground. Realistically,<br />

almost no one can learn a new language in six months<br />

or become a runner overnight, but many people make overly-optimistic<br />

resolutions like these every year. If you’re too ambitious<br />

with your New Year’s resolutions, you’ll end up getting burned out<br />

before January is over.<br />

2. Making too many resolutions<br />

Even small resolutions can be hard to keep if you make too<br />

many of them. It’s easy to get overwhelmed if you try to change<br />

more than one or two habits at a time. Besides that, making a<br />

lot of different resolutions is a sign that you haven’t put much<br />

thought into each one, and it’s easy to give up on resolutions that<br />

aren’t meaningful to you.<br />

3. Not setting specific goals<br />

If your resolution is something like “lose weight” or “get better<br />

grades,” you aren’t likely to succeed. Why? Because these goals are<br />

vague and hard to track. Useful goals are specific and measurable<br />

- for instance, “lose 10 pounds by March” or “get an A in calculus.”<br />

4. Not making a plan<br />

Along with a specific goal, you need a plan. How are you going<br />

to turn your resolutions into reality? Many people fail at keeping<br />

their resolutions because they don’t turn their goals into specific<br />

action steps.<br />

5. Giving up too soon<br />

Perseverance is important for forming any new habit in your life,<br />

but many people throw in the towel on their resolutions as soon as<br />

something goes wrong. It’s important to stay flexible and to avoid<br />

getting discouraged too quickly, even if your resolutions are tougher<br />

to keep than you thought they’d be. Adjusting a goal to be more<br />

realistic is better than giving up on it completely.<br />

choose goals that you’re deeply invested in.<br />

2. Plan for the long haul.<br />

Many people think of New Year’s resolutions as a quick fix<br />

for the previous year’s problems and bad habits. In reality,<br />

though, it takes time to create lasting changes in your life.<br />

Make your resolutions with the knowledge that you’ll need<br />

to work on them consistently, and adopt the mindset that if<br />

you fall off the wagon, you’ll climb right back on.<br />

3. Take baby STEPS.<br />

Every big achievement is made up of a series of small<br />

action steps. Break your goals down ahead of time, so you<br />

won’t get overwhelmed when the new year rolls around.<br />

When you transform a big resolution into a lot of small, doable<br />

steps, you’ll always know what to do next.<br />

4. Track and celebrate your progress.<br />

One of the best ways to stay on track is to look back at<br />

how far you’ve come. It might be hard to see how your small<br />

victories matter from moment to moment, but over time,<br />

those little wins really add up. Keep a log of all your progress,<br />

Delray Beach Market To Launch As Florida’s Largest<br />

Food Hall Experience Spring 2021<br />

Poised to be America’s premier model food<br />

hall with heavy emphasis on artistic eye<br />

to open this Spring just half-a-block south of<br />

film explores the US government’s surveillance and harassment of<br />

Martin Luther King, Jr. Despite his heroic status in history nowadays,<br />

MLK/FBI examines how the US government (and specifically the FBI)<br />

viewed him as an “enemy of the state”. Not only did they surveil him<br />

and follow him, they often went after him in vicious ways to<br />

undermine his progress and destabilize his attempts at<br />

unity and peace. The film is very timely examination<br />

of how this occurred and that even though MLK<br />

may not have been perfect, he’s still not the “bad<br />

guy” that the FBI tried to portray him as. IFC Films<br />

will debut Pollard’s MLK/FBI in select theaters +<br />

Non-Surgical Approach<br />

To A Herniated Disc<br />

The medical phrase “herniated disc” is widely used to describe injury to<br />

the spine. It refers to the incidence of derangement within the spinal<br />

column in which there is injury to the spongy cushions (discs) between<br />

the individual bones (vertebrae). Herniated discs are most common<br />

when a person is in their thirties of forties however it can affect any age<br />

group especially when the aging population is active.<br />

It is most notably associated with the lumbar region (lower<br />

back) but can also affect the cervical region (neck) and<br />

thoracic (mid back) region with less prevalence.<br />

Quite often herniated discs in the lumbar region will<br />

produce sciatica (leg pain) and in the cervical region<br />

will produce arm pain. Dysesthesias (numbness<br />

and tingling) in the arms and legs are also<br />

associated with lesions involving the spinal discs.<br />

The disc itself lies between two adjacent vertebrae<br />

and is composed of a hard outer shell called<br />

the annulus and a gelatinous substance on<br />

the inside called the nucleus. The nucleus<br />

provides key structural support elements<br />

for the spine as it acts as a “shock<br />

absorber” for the spine so that the vertebrae<br />

do not touch each other. The<br />

cushion also creates a space between<br />

the vertebrae so that the spinal nerves<br />

can exit unharmed. However, the nucleus<br />

also contains certain chemical irritants such<br />

as tumor necrosis factor-alpha which can be<br />

toxic for nerves. Therefore it is of paramount<br />

importance that it remains within its shell. The<br />

annulus acts as the outer shell or barrier and is a<br />

resilient tissue made up of fibrocartilage.<br />

A herniated disc occurs when fissures (tears)<br />

form in the annulus or outer shell which allows<br />

for the nucleus to escape and get into dangerously<br />

close contact with the spinal nerves. The most offensive<br />

posture for the lumbar disc is sitting. This<br />

provides the greatest load on the disc and increases<br />

probability of herniation. Therefore sedentary<br />

lifestyles and jobs requiring prolonged<br />

sitting are deleterious for the discs. Other activities<br />

such as bending and twisting are also very<br />

damaging to the discs especially if repetitive. Lastly, acute events<br />

such as lifting something very heavy without proper support can<br />

injure the spinal discs.<br />

The “gold standard” for conservative, non-invasive treatment<br />

of disc herniations is non-surgical spinal decompression<br />

therapy. This treatment acts to create a negative pressure<br />

or vacuum within the spinal canal essentially retracting<br />

some of the disc material back into the annulus and away<br />

from the sensitive spinal nerves. In fact the pressure within<br />

the disc can get to minus 150 mm/HG. The most recent<br />

clinical study of 219 patients has showed<br />

that spinal decompression therapy<br />

provided an immediate resolution<br />

of symptoms for 86% of<br />

the participants while 84%<br />

remained pain free 90<br />

days post-treatment. In<br />

The holidays are over and you’re ready to de-fluff and jump back on the<br />

fitness wagon. Like most, you have most likely set some fitness related<br />

New Year Resolution. Here are some tips to make sure these resolutions<br />

are attainable and will work for you. It is all about having goals and plan!<br />

A healthier version of you is just a couple steps away!<br />

1. Make Realistic Resolutions<br />

Don’t set yourself up for failure before you begin!<br />

Set goals that are attainable and realistic. The<br />

more accomplished you feel the more likely you<br />

are to stay motivated and pushing toward your<br />

goals. A resolution shouldn’t be a fantasy. If<br />

you’ve never lifted weights, attempting to do<br />

so 7 days per week is probably setting yourself<br />

up for disappointment. For most people,<br />

breaking or setting new habits doesn’t happen<br />

overnight. The key to sustainable resolutions<br />

is to make small changes gradually. If your<br />

goal is to go from never running to finishing<br />

a half-marathon, start training gradually.<br />

Begin by walking a few miles twice a week,<br />

and steadily increase the workload to jogging,<br />

Writing down your goals is not only a great way<br />

to accomplish them, but your list can also help you<br />

figure out the exact steps needed to get where you<br />

want to go. “I want to lose weight” is a pretty common<br />

New Year resolution, but how exactly do you<br />

go from point A to point B? Instead, try setting a<br />

more specific goal. For instance: “I want to lose 10<br />

pounds over the next 6 weeks by eliminating fast<br />

food meals and going to the gym 3 to 4 times per<br />

week. I’ll then maintain my goal weight for 6 months<br />

before setting any other new goals.” The more specific<br />

your goal the better your results will be. The vaguer your<br />

goals are the harder it will be to attain them.<br />

3. Set Non-Superficial Goals<br />

Looking good in a swimsuit is always a good goal but superficial<br />

goals usually lose their appeal after endless weeks<br />

of diet and exercise. Instead, try picking a goal related to<br />

health and happiness. For example, regular exercise has<br />

awesome benefits such as lowering cholesterol, boosting overall<br />

energy, and even increasing happiness and decreasing<br />

depression. Bringing some deeper intentions to<br />

your workout can make all the difference in sticking<br />

to your goals. Looking good in a swimsuit should<br />

come secondary to your main goal.<br />

4. Buddy Up<br />

Find a friend or someone with likeminded<br />

goals to keep and hold you accountable. Accountability<br />

is huge! You are much more likely<br />

to stay on track when you have someone<br />

to answer to besides yourself. A buddy<br />

should also serve to help motivate and<br />

keep things real. They should have no<br />

problem telling you to put that French<br />

fry down and get your booty to the<br />

gym when you’re lacking your own<br />

motivation. If your buddy isn’t doing<br />

their job, fire them and find a new one!<br />

There is always someone looking to become<br />

healthy and fit.<br />

5. Reevaluate<br />

Resolutions Often<br />

How many people resolve to finish a<br />

marathon, only to realize they dislike distance<br />

running? Or decide to take up yoga<br />

and realize they want something fasterpaced?<br />

A lot of things seem fun from a<br />

distance but might not be a good fit. If this<br />

happens to you, switch gears and pick a different<br />

resolution. Don’t be afraid to switch it<br />

up if it isn’t working. You’re much more likely<br />

to stick with something that you truly enjoy.<br />

good thing. It is also a good thing that Dr. John Pasqual is calmly<br />

The Board-Certified surgeon does everything from facial surgery<br />

to dental implants, extractions, and advanced facial reconstruction.<br />

His operating room has a 42-inch monitor that allows him to<br />

see a digital view of patients’ facial structure and teeth. “With<br />

Beam Imaging machine. The i-Cat 3D Imaging machine is a great<br />

diagnostic tool for pathology, trauma, facial fractures, tumors and<br />

cysts. With the i-Cat, surgery is more accurate, and I am able to<br />

Dr. Pasqual does not have to tout his accomplishments, his resume<br />

speaks for him. He went to the University of Pittsburgh School<br />

of Dental Medicine, graduated President of his class, he completed<br />

a four-year surgery residency at Case Western Reserve University<br />

MetroHealth Medical Center, a level I trauma center, and spent<br />

two years there as an Anesthesia Fellow. He is a Diplomate of the<br />

American Board of Oral and Maxillofacial Surgery, Diplomate of the<br />

International Congress of Oral Implantologists, and Diplomate of<br />

the National Dental Board of Anesthesiology. He is a Fellow of the<br />

American Association as well as International Association of Oral<br />

Coast District Dental Association and is past President of the<br />

South Palm Beach County Dental Association.<br />

Because of his expertise and experience Dr. Pasqual is a Clinical<br />

Associate Professor at University of Florida School of Dental Medicine<br />

and in the Department of Oral Implantology at Temple University.<br />

He also is a prior committee member for Dental Education and<br />

Needlepoint To The Rescue<br />

If you ask Karen Helfman from<br />

Stitches by the Sea, she will tell<br />

you that needlepoint is a life saver.<br />

Since when did a hand painted canvas with vibrant colorful<br />

threads save people from dire circumstances?<br />

The answer is – NOW.<br />

With Covid hanging over our heads like a jail sentence, people<br />

are turning to activities that take their minds off the current health<br />

crisis. Some people are cooking a lot, others are reading books and<br />

some are finding the art and craft of needlepoint to be the perfect<br />

solution to the slower pace of life.<br />

If you ask Helfman, she’ll tell you needlepoint is “Yoga for the Mind.”<br />

And what better time to have yoga for the mind? “We are putting<br />

our products into the hands of people all over the country that are<br />

craving something to do while staying at home.<br />

Stitches by the Sea was closed to the public after the initial Covid<br />

scare, but Karen and Judi took orders behind the scenes. People<br />

found the perfect items from Instagram, Facebook, and their online<br />

store. Eventually customers came curbside to pick up beautiful canvases<br />

destined to be handbags, pillows, artwork and totes.<br />

The good news is that more people than ever are turning to<br />

needlepoint to satisfy the human need to socialize and create<br />

meaning in their lives.<br />

“Needlepoint has saved people from going crazy during Covid,”<br />

said Karen. “Needlepoint is Yoga for the Mind. We are getting so<br />

many new customers because people are stranded at home looking<br />

for something to do. This gives them something constructive and<br />

creative without going insane.”<br />

She’s right. If you talk to stitches by the Sea customers they will<br />

tell you needlepoint – and Judi and Karen – have been the safest<br />

port in the new Covid reality storm. “I had not picked up a needlepoint<br />

project in 26 years until Covid hit. Needlepoint is so soothing,<br />

it’s therapy without pain,” said Faith Diamond. The real estate developer<br />

picked out canvases online when Covid started, and picked<br />

them up curbside.<br />

Things have changed a bit – you have to make an appointment to<br />

come inside. “You’ll be asked to wear a mask and you will be greeted<br />

by me or one of our talented staff. You can also drop off a project<br />

that needs finishing,” said Karen.<br />

Some things never change – especially their excellent customer<br />

service and passion for the art of needlepoint. “Judi and Karen get<br />

so excited when you finish a project. They are passionate about<br />

needlepoint and it’s contagious. They want you to enjoy the peacefulness<br />

and joy of needlepoint,” adds Diamond.<br />

For Karen and her mother (Judi Alweil) needlepoint is a family<br />

affair. Judi owned a needlepoint and yarn shop in Long Island for<br />

over 40 years before moving to Delray. Judi’s needlepoint business<br />

started in her mother in law’s house in Hewlett, New York years ago.<br />

They design original custom canvases and also sell trendy and<br />

sophisticated needlepoint designs from artist all over the country.<br />

Collectively, the choice of canvases is the talk of the town. “People<br />

are talking about our canvases all over the country. At a Virginia re-<br />

treat everyone was talking about Stitches by the Sea. We have<br />

great canvases in modern, contemporary, colorful and whimsical<br />

designs that make people happy,” adds Karen.<br />

It’s true, their canvases cut through generations and highlight<br />

Telling Our Story Like Never Before:<br />

One Delray Chamber Nonprofit at a Time<br />

“Achievement Center for Children & Families Keeps Meeting Local Needs -- No Matter What!”<br />

“In early 2020, as the COVID-19 crisis continued, the demand for our services has been more<br />

significant than ever and has prompted us to launch new initiatives to keep up with these<br />

needs. The crisis led to unprecedented unemployment, and many of the already vulnerable<br />

families served by ACCF in Delray Beach have critical needs. These families have been facing<br />

the unknown of how to sustain their basic needs and manage employment loss.”<br />

Founded in 1969 as the Community Child Care Center of Delray Beach,<br />

the Achievement Centers for Children & Families (ACCF) began as a<br />

pilot program in response to the overwhelming need for affordable,<br />

quality childcare available to working mothers. As the community needs became<br />

increasingly evident, the program quickly grew to support these families<br />

and help prepare their children for success in the public school system.<br />

ACCF programs offer children and families resources to overcome<br />

barriers to social, academic, and cultural success. Programs include<br />

early learning for children 1 years of age – 5 years of age, three after<br />

school programs, a pre-teen and teen program and summer camp, all in<br />

an environment in which children can enjoy a wide variety of activities<br />

with access to nutritious snacks and meals. ACCF also has onsite family<br />

strengthening programs that offer parents and guardians the resources<br />

they need to support their child’s success.<br />

ACCF pivoted during this COVID crisis to provide aid, including<br />

emergency funding for basic needs, meals through ACCF’s food<br />

distribution program, managing schoolwork, and assisting families in<br />

navigating unemployment claims and securing food stamps. During this<br />

process, the Family Strengthening team discovered that three of their<br />

member families were close to being homeless.<br />

ACCF utilized community resources, and the program’s Achievement<br />

and Financial Navigators were able to help secure and fund a deposit<br />

for affordable housing for two of the families. The funding was available<br />

through private donations raised through ACCF’s COVID-19 Emergency<br />

Relief Funds. The third family has received temporary shelter while the<br />

ACCF team members work with partners in the community to secure<br />

affordable housing.<br />

Due to the current crisis, a Delray Beach mother with young children,<br />

including an infant and two toddlers, lived “place to place” without a<br />

stable home for her family. She contacted one of our ACCF Achievement<br />

Navigators to ask for assistance. They found and secured an affordable<br />

rental home for her family and provided her with diapers and food each<br />

Friday as part of the organization’s weekly food distribution.<br />

The COVID pandemic has created new needs on the part of the people<br />

we serve -- but our existing program and services also continue. We<br />

sincerely thank the community for helping us meet the challenges of<br />

this moment to continue to provide the highest quality child care and<br />

programming with the integrity, compassion, and excellence that our<br />

children, families, and community have come to rely on.<br />

Fire Chief Of Delray Beach Fire Rescue<br />

Fire Chief Keith Tomey adapts<br />

to change rather quickly.<br />

He was hired by Delray Beach Fire Rescue to be the Assistant<br />

Fire Chief in December 2016. Within weeks he became<br />

the Acting Fire Chief when Chief Neal DeJesus was<br />

called to be the interim city manager.<br />

In 2018 Chief Tomey was back as the Assistant Fire Chief and<br />

in 2019 he was once again acting Fire Chief. All that is behind<br />

him now as Chief Tomey is firmly and finally ensconced as the<br />

Fire Chief of Delray Beach.<br />

But all that shape shifting doesn’t bother him.<br />

“My father was a Fire Chief and I wanted to follow in his footsteps.<br />

After my first day as a volunteer firefighter (at the age of<br />

18) putting out a fire I was hooked. It’s a very demanding job, but<br />

I can’t imagine doing anything else.”<br />

And he hasn’t.<br />

Chief Tomey’s bio expands to include almost every rank possible<br />

in fire rescue hierarchy. He started 33 years ago at Miramar<br />

Fire Rescue and eventually served as Fire Chief from 2014 to December<br />

2016. His history is all encompassing and includes: Fire<br />

Fighter-Paramedic, Driver Engineer, Lieutenant, Captain, Battalion<br />

Chief, Division Chief, Deputy Chief and Fire Chief.<br />

It’s one thing to rise through the ranks, but another to become<br />

a legend that others admire. “Chief Tomey is a great guy to work<br />

with. He was a good role model and let us grow in our careers. He<br />

contributed a lot to the fire department and kept us motivated<br />

and proud of our departments. He encouraged new ideas and<br />

raised the level of service to the community,” said Scott Rector,<br />

retired Miramar Fire Rescue Division Chief.<br />

In Miramar Tomey raised the ISO levels, created new divisions<br />

(and programs) and inspired rapid growth of the department.<br />

They were leaders of EMS in their region, and improved departments<br />

from inventory to medical supplies and training.<br />

That drive for excellence has made Chief Tomey a great leader<br />

and a role model for others. You could say he was born with a<br />

rescue mission. His father was a lieutenant in the fire department<br />

in Sunrise, and spent 25 years in the Okeechobee Fire Department<br />

becoming their fire Chief.<br />

Currently there are 220 employees in the Delray Beach Fire<br />

Department, which includes 167 firefighters. This responsibility<br />

is far reaching and according to Chief Tomey, Delray has a lot of<br />

moving parts.<br />

“This is a very rewarding job, but it’s not easy. Being Fire Chief<br />

is the hardest job I have ever done. You have to hire and fire people<br />

and it’s 24/7. You’re always answering calls from someone,<br />

whether the City Manager or the Mayor. It’s a passion, but it’s not<br />

for everyone,” said the avid fisherman.<br />

The Chief speaks about his desire to help people and the courage<br />

to risk your life for someone you don’t know. But recently he<br />

found out that this creed would extend into other communities<br />

and save his life.<br />

Chief Tomey felt pressure in his chest a few times in the past<br />

few months, but ignored it. He was busy and figured it was nothing<br />

to worry about.<br />

But he was wrong.<br />

The morning after moving into his new home in Coral Springs<br />

he couldn’t ignore the intense pressure in his chest. The Chief<br />

became sweaty and short of breath and his wife Nancy (a former<br />

cardiac nurse) called 911.<br />

It turned out that the Chief was having a massive myocardial<br />

infarction. The Coral Springs Firefighter-Paramedics administered<br />

oxygen, pain medication and baby aspirin. He was taken<br />

to Northwest Medical Center, where coincidentally the Delray<br />

Beach Fire Rescue medical director (Dr. Craig Kushnir) just happened<br />

to be on duty.<br />

Chief Tomey arrived in the emergency room to see paramedics,<br />

nurses and doctors racing against a cardiac clock to prepare<br />

him to have a stent put in his heart. The actions were swift and<br />

precise enough to save the Chief (his coronary artery was 100<br />

percent blocked).<br />

“All the time I’m thinking I may not make it. I may not pull out<br />

of this,” Chief Tomey said. “I remember I didn’t want to go to the<br />

cath lab until I saw my wife. I didn’t know if it would be the last<br />

time I’d see her.”<br />

Luckily the Chief went home after a few days and lived to tell<br />

the story. But not without some lessons learned. “I don’t let little<br />

things bother me anymore, and no one should ignore the symptoms<br />

of a heart attack. I truly believe God had a hand in this for<br />

everything to go so perfectly.”<br />

This perfection allowed Chief Tomey to return to his job and<br />

be a guiding force for Delray Beach Fire Rescue. “Chief Tomey<br />

genuinely cares about the fire department and the people who<br />

work there. He always looks to improve what we’re doing and<br />

encourages us to grow personally and professionally. He is a<br />

good leader, is collaborative and understands all facets of the department,”<br />

said Kevin Green, Assistant Fire Chief of DBFR.<br />

All work and no play makes an unfulfilled life. Chief Tomey<br />

knows this all too well. That’s why he is an exemplary father to<br />

Austin, Allison and Kelsey. He also spends time with other families<br />

in the neighborhood enjoying his passion – fishing, scuba<br />

diving, boating and creating Halloween magic.<br />

“Chief Tomey is a great father - he’s easy going, reliable and trustworthy.<br />

Our kids grew up together and we go to the Bahamas every<br />

year to fish,” said friend and retired Police Officer Jerry Balester.<br />

He’s been married to Nancy for 28 years and has caught a<br />

100-pound swordfish twice.<br />

Chief Tomey is also grateful to the Coral Springs Fire Rescue<br />

and Fire Department for saving his life.<br />

And so is everyone else. “You can always count on him when<br />

you need help. Chief Tomey is a great guy and a great father,”<br />

adds Balester.<br />

Ingredients<br />

1 1/2 pounds Brussels sprouts<br />

3 tablespoons good olive oil<br />

3/4 teaspoon kosher salt<br />

1/2 teaspoon freshly ground black pepper<br />

Directions<br />

1. Preheat oven to 400 degrees F.<br />

2. Cut off the brown ends of the Brussels sprouts and pull off<br />

any yellow outer leaves, then cut them in half. Mix sprouts in a<br />

bowl with the olive oil, salt and pepper. Pour them on a sheet<br />

pan and roast for 35 to 40 minutes, until crisp on the outside<br />

and tender on the inside. Shake the pan from time to time<br />

to brown the sprouts evenly. Sprinkle with more kosher salt<br />

(optional), and serve immediately.<br />

1 1/2 pounds baby spinach leaves<br />

2 tablespoons good olive oil<br />

2 tablespoons chopped garlic (6 cloves)<br />

2 teaspoons kosher salt<br />

3/4 teaspoon freshly ground black pepper<br />

1 tablespoon unsalted butter<br />

Lemon<br />

Sea or kosher salt, optional<br />

Directions<br />

1. Rinse the spinach well in cold water to make sure it’s very<br />

clean. Spin it dry in a salad spinner, leaving just a little water<br />

clinging to the leaves.<br />

2. In a very large pot or Dutch oven, heat the olive oil and sauté<br />

the garlic over medium heat for about 1 minute, but not until<br />

it’s browned. Add all the spinach, the salt, and pepper to the<br />

pot, toss it with the garlic and oil, cover the pot, and cook it for<br />

2 minutes. Uncover the pot, turn the heat on high, and cook the<br />

spinach for another minute, stirring with a wooden spoon, until<br />

all the spinach is wilted. Using a slotted spoon, lift the spinach<br />

to a serving bowl and top with the butter, a squeeze of lemon,<br />

and a sprinkling of sea or kosher salt. Serve hot.

4 (5 ounces each) salmon fillets<br />

2 teaspoons olive oil plus 2 tablespoons<br />

Salt and freshly ground black pepper<br />

3 tomatoes, chopped, or 1 (14-ounce)<br />

can chopped tomatoes, drained<br />

2 chopped shallots<br />

2 tablespoons fresh lemon juice<br />

1 teaspoon dried oregano<br />

1 teaspoon dried thyme<br />

Directions<br />

1. Preheat the oven to 400 degrees F.<br />

2. Sprinkle salmon with 2 teaspoons olive oil, salt, and pepper. Stir the tomatoes, shallots, 2<br />

tablespoons of oil, lemon juice, oregano, thyme, salt and pepper in a medium bowl to blend.<br />

3. Place a salmon fillet, oiled side down, atop a sheet of foil. Wrap the ends of the foil to form a<br />

spiral shape. Spoon the tomato mixture over the salmon. Fold the sides of the foil over the fish<br />

and tomato mixture, covering completely; seal the packets closed. Place the foil packet on a<br />

heavy large baking sheet. Repeat until all of the salmon have been individually wrapped in foil<br />

and placed on the baking sheet. Bake until the salmon is just cooked through, about 25 minutes.<br />

Using a large metal spatula, transfer the foil packets to plates and serve.<br />

Green Beans<br />

with Lemon<br />

and Garlic<br />

Ingredients<br />

2 pounds green beans, ends trimmed<br />

1 tablespoon extra-virgin olive oil<br />

3 tablespoons butter<br />

2 large garlic cloves, minced<br />

1 teaspoon red pepper flakes<br />

1 tablespoon lemon zest<br />

Salt and freshly ground black pepper<br />

1. Blanch green beans in a large stock pot of well salted<br />

boiling water until bright green in color and tender crisp,<br />

roughly 2 minutes. Drain and shock in a bowl of ice water<br />

to stop from cooking.<br />

2. Heat a large heavy skillet over medium heat. Add the oil<br />

and the butter. Add the garlic and red pepper flakes and<br />

sauté until fragrant, about 30 seconds. Add the beans and<br />

continue to sauté until coated in the butter and heated<br />

through, about 5 minutes. Add lemon zest and season with<br />

salt and pepper.

1 banana<br />

1/4 c. marshmallow Fluff<br />

1/4 c. graham crackers,<br />

crushed into crumbs<br />

1/2 c. bittersweet chocolate<br />

chips, melted<br />

Directions<br />

1. Slice banana into 12, ½ inch pieces.<br />

2. Line a small baking sheet with<br />

parchment paper.<br />

3. Assemble bites: Place 6 banana slices on<br />

baking sheet and top with a large dollop<br />

of Marshmallow Fluff and a sprinkle<br />

of graham cracker crumbs. Top with<br />

remaining bananas to make a sandwich.<br />

Stabilize with a toothpick if desired. Freeze<br />

until firm, 1 hour.<br />

4. Once sandwiches are frozen solid, dunk<br />

half in melted chocolate, and then into<br />

remaining graham cracker crumbs. Place<br />

back in freezer until fully set, 30 minutes<br />

more (or until ready to serve).<br />

1 large head cauliflower, separated into 1-inch florets<br />

3 tablespoons olive oil<br />

1 medium onion, finely diced<br />

Kosher salt<br />

2 tablespoons fresh parsley leaves, finely chopped<br />

Juice of 1/2 lemon<br />

Directions<br />

1. Trim the cauliflower florets, cutting away as much stem as possible. In<br />

3 batches, break up the florets into a food processor and pulse until the<br />

mixture resembles couscous.<br />

2. Heat the oil in a large skillet over medium-high heat. At the first wisp<br />

of smoke from the oil, add the onions, and stir to coat. Continue cooking,<br />

stirring frequently, until the onions are golden brown at the edges and have<br />

softened, about 8 minutes. Add the cauliflower, and stir to combine. Add 1<br />

teaspoon salt, and continue to cook, stirring frequently, until the cauliflower<br />

has softened, 3 to 5 minutes. Remove from the heat.<br />

3. Spoon the cauliflower into a large serving bowl, garnish with the parsley,<br />

sprinkle with the lemon juice and season to taste with salt. Serve warm.<br />

Home Prepared Foods (Part 2)<br />

Happy New Year! As a follow up on last month’s article,<br />

“Is It OK to Feed My Pets Home Prepared Food, we are<br />

going to expand on what you can feed your pets. As we<br />

discussed, dogs and cats being carnivores, the bulk of their diet<br />

must come from animal-based foods. While we advocate raw diets,<br />

we also demonstrated that cooked foods are also beneficial,<br />

especially when compared to ultra-processed commercial and<br />

veterinary diets.<br />

A major factor in the invention of dry kibble was the convenience<br />

of feeding. In the beginning, dry kibble was not a suitable<br />

food for several reasons. First, the palatability was very low,<br />

and they required mixing with canned or fresh meat products in<br />

order to get pets to eat it. When artificial flavors became introduced<br />

to the kibble, we were sold on the idea of “no more mixing.”<br />

The pet food companies then sought out palatants (synthetic<br />

flavors) that our pets would accept without reflecting on the<br />

possible health issues that would develop in the future, such as<br />

most dental issues, to name one. They also learned that canines,<br />

being opportunistic carnivores (scavengers) would accept low<br />

quality food items with the right flavors.<br />

For me, as a child and even as an adult, our pets always ate<br />

what we did. Our pets used to “lick our plates clean” prior to us<br />

washing our dishes. It was the pet food companies that told us<br />

that our real foods were potentially harmful to our pets as their<br />

manufacturers started to market the so-called “veterinary” diets<br />

for veterinarians to sell. If you check the ingredient label of those<br />

foods, many contain the same poor quality ingredients as the<br />

lower priced commercial foods.<br />

We were encouraged to discontinue feeding our foods by hearing<br />

that the seasoning in human foods could cause problems. So technically,<br />

they were saying that the natural herbs we may use could<br />

be problematic, but it is ok for commercial pet foods to contain<br />

hundreds of chemicals that are never disclosed on the label. Recent<br />

studies at Cornell University show that issues with gastrointestinal<br />

distress are caused by conditions such as IBD, leaky gut and colitis<br />

which have their roots in toxic chemicals within the pet. Everything<br />

from vaccines, antibiotics, flavor enhancers, food colors and additives<br />

are part of the challenge. In many cases, natural herbs are generally<br />

a benefit and not a health issue.<br />

Our pets, specifically our canine companions, have demonstrated<br />

their innate ability to adapt and survive. Let’s not assume<br />

that because they have adapted to eating everything from garbage<br />

to commercial foods that they are living optimally healthy<br />

lives. Just like us, anybody can live on fast junk foods, but without<br />

chemical intervention of drugs and synthetic supplements, your<br />

quality of a healthy life is at great risk.<br />

Our conclusion, based on the long history of our pets being a<br />

part of our life, is that feeding clean real foods based on a species<br />

appropriate fresh food model is the optimal path to take. Sharing<br />

our foods in the form of our leftovers is a close step to ideal.<br />

When you consider that commercial foods are utilizing compromised<br />

food that is lower in quality and highly processed, just<br />

those factors alone are far removed from being optimal.<br />

Simple, I suggest that you feed your pets what is good enough<br />

for you to maintain your own natural health.<br />
