Food in New Smyrna Beach is definitely about passion, but it’s also about focusing on<br />
protecting our natural resources. That means sourcing ingredients locally when possible and<br />
ensuring that animals have been humanely raised or fished.<br />
This has also become a priority nationally. One example: the “Smart Catch” sustainable seafood<br />
program, run by the renowned James Beard Foundation, which trains chefs on how to serve<br />
seafood that’s been farmed or fished in environmentally responsible ways. With more than 90<br />
percent of the world’s fisheries either fully fished or overfished, a growing number of U.S. chefs<br />
are recognizing the importance of such practices.<br />
That importance is why Third Wave Cafe, under the direction of Executive Chef David Moscoso,<br />
has jumped the necessary hurdles to reel in its designation as an official James Beard<br />
Foundation Smart Catch Leader restaurant. Moscoso and others know that preserving the fish<br />

FLORIDA YELLOW SNAPPER<br />
Ingredients:<br />
• 1 oz olive oil blend<br />
• 6-7 oz Florida<br />
• Yellow Snapper<br />
Directions:<br />
Set stove to a medium-high<br />
flame. Add olive oil to an 8- to<br />
10-inch sauté pan. Once oil<br />
is hot, place fish in the pan.<br />
Cook until done—typically to<br />
3 to 4 minutes on each side,<br />
depending on thickness.<br />
HERBED ROCK SHRIMP WITH<br />
LEMON BUTTER SAUCE<br />
Ingredients:<br />
• 1 oz spring onion<br />
or scallions<br />
• 1 tbsp fresh<br />
chopped parsley<br />
• 1 oz olive oil<br />
• 1 pinch of pepper flakes<br />
• 1 oz honey<br />
• 2 oz small rock shrimp<br />
• 1 tbsp minced garlic<br />
• 1 tbsp butter<br />
Directions:<br />
Heat an 8- to 10-inch sauté<br />
pan on a medium to mediumhigh<br />
flame. Once the pan is<br />
heated, add olive oil. When<br />
the oil is hot, add garlic and<br />
pepper flakes and sauté both<br />
for about a minute. Add rock<br />
shrimp and sauté for about<br />
another minute. Shrimp<br />
cooks very fast, so be careful<br />
not to overcook.<br />
In the same pan, add the<br />
parsley and scallions. Finish<br />
sautéing them until well<br />
blended—about another<br />
minute—then turn off the<br />
flame. Remove pan from<br />
heat; immediately add butter<br />
and honey. Stir butter and<br />
honey into sauce using a fork<br />
or tongs.<br />
