In the past several years, these little gems have
grown in popularity and use. Cranberries are often
associated with our festive season and boast of
being near the top of that highly regarded list of
“super foods” due to their notable nutrient content
and antioxidant qualities.
Cranberry Party Dip
1 (250 g) package cream cheese, softened
2/3 cup whole berry cranberry sauce
1/3 cup orange marmalade
1/4 tsp. pepper
1/3 cup slivered almonds
In a bowl, thoroughly mix together marmalade, pepper and cranberry sauce. Using a
9-inch pie plate, spread cream cheese evenly along bottom. Add cranberry mixture,
smoothing around the middle (it’s sometimes attractive to leave a white edging around
outside). Sprinkle top with almonds. Enjoy with crackers, pretzels or breadsticks.
Oven Baked Cranberry Dressing
You’ll find this traditional holiday dressing so delicious, you’ll likely make it again and again
to serve throughout the year. In addition to turkey, it complements pork and chicken dishes.
8 cups whole wheat dried bread cubes
(store bought or homemade)
2 cups COOKED crumbled sausage meat
(breakfast or Italian)
2 cups chicken broth
2 stalks celery, with leaves, finely chopped
1 small onion, finely diced
2 eggs
3/4 cup dried cranberries
2/3 cup toasted pecans, chopped
3 Tbsps. olive oil
4 Tbsps. fresh chopped parsley (divided)
1 1/2 Tbsps. fresh sage, finely chopped
3/4 tsp. fresh ground black pepper
1 tsp. fresh thyme, chopped
Non-stick cooking spray
In large fry pan, over medium-high heat, heat oil and add onions and celery. Cook
for 5 to 8 minutes, stirring often until celery is soft and onions are beginning to
brown. Stir in cranberries, sausage, 3 tablespoons of the parsley, pepper and
sage. Remove from heat and stir in pecans. Preheat oven to 400 degrees F. Spray
a 9 x 13 inch baking dish. In a large bowl, whisk together broth/stock and eggs.
Stir in bread cubes and celery/cranberry mixture. Stir until thoroughly combined.
Transfer entire mixture to prepped baking dish. Cover with foil and bake for 40
minutes, or until dressing is steaming hot. Remove foil and continue to bake for
an additional 10 minutes, browning the top and ensuring all is very warm
throughout. Garnish with remaining parsley.
Cranberry-Banana Loaf
You are sure to enjoy this appealing and moist holiday loaf. This recipe makes 2 loaves.
One for you and one worth sharing with friends, neighbours and loved ones.
1 cup butter or margarine, softened
2 cups granulated sugar
4 eggs
2 cups mashed ripe bananas
2 tsp. vanilla
2 tsp. lemon juice
4 cups all-purpose flour
In a large bowl, beat butter with sugar until fluffy;
beat in eggs, 1 at a time, beating well after each. Beat
in bananas, vanilla and lemon juice. In a separate
bowl, whisk together flour, baking powder, baking
soda and salt. Stir into butter mixture alternately
with milk, making 3 additions of dry ingredients and
2 of milk. Fold in cranberries and pecans. Scrape
into 2 oil-sprayed loaf pans, smoothing top.
Bake in the centre of a preheated 350 degree F oven
until cake tester inserted in centre comes out clean,
about 1 1/4 hours. Let cool in pan on a rack for 5
minutes. Remove from pan, let cool completely.
Wrap in plastic wrap; store at room temperature
for 24 hours before slicing.
