Welcome <strong>May</strong><br />

In <strong>May</strong> we celebrate Mom! With so many things to do in Delray, it will<br />

be very easy to make Mom feel special on her day. There are so many<br />

wonderful restaurants to choose from, satisfying any food or craving<br />

she may have will be an easy task. There are also amazing salons and<br />

spas to pamper her. Inside this issue we have included special recipes that are<br />

sure to make Mom feel loved. Check out Delray Under $50, and our Mother’s<br />

Day pages for some suggestions on spoiling Mom!<br />

Matt Shipley is the co-founder of Community Greening and our City Person<br />

this month. He is a world traveled and educated environmentalist, as well<br />

as world class volunteer. His non-profit organization plants trees all around<br />

Palm Beach county including Delray Beach - and – also mentors and pays local<br />

minority teens to care for and plant trees. They are paid to travel around Palm<br />

Beach County, learn about green jobs and gain skills to enter the workforce!<br />

We end the month of <strong>May</strong> honoring our fallen Heroes. Monday, <strong>May</strong> 31st<br />

Program: Sandoway Discovery Series: Oceans<br />

Location: Sandoway Discovery Center<br />

Achievement Centers for Children & Families will hold its<br />

First Annual Round Robin Pickleball Tournament at the<br />

Delray Beach Tennis Center, 201 West <strong>Atlantic</strong> <strong>Ave</strong>nue, Delray<br />

Beach, from 5 to 9 pm, on Saturday, <strong>May</strong> 15th. The outdoor<br />

event will include light bites, beverages, and music. Players<br />

will compete for top three winner trophies. Participants can<br />

play with their friends or learn how to play with a pickleball<br />

for Children & Families, a community-based nonprofit that<br />

supports hundreds of local children and their families annually<br />

School Student Awarded<br />

Prestigious National Honor<br />

Society Scholarship<br />

The National Honor Society (NHS) announced that Darrel Creary<br />

and Charles Viola, high school seniors at <strong>Atlantic</strong> Community High<br />

School and members of NHS, have been selected as NHS Scholarship<br />

semifinalists. Creary and Viola were chosen from nearly 10,000 applicants<br />

and will receive a $3,200 scholarship toward higher education.<br />

Since 1946, more than $19 million in scholarships have been<br />

awarded to outstanding NHS senior members to support college<br />

access and student success. The scholarship program is supported<br />

by the parent organization of NHS, the National Association of Secondary<br />

School Principals (NASSP).<br />

“Darrel and Charlie are two of the most hardworking students<br />

I’ve ever met. I’m so grateful to have them both as NHS officers and<br />

extremely proud of all of their accomplishments. Their ability to<br />

oversee all of our service and tutoring events, as well as keep over<br />

At <strong>Atlantic</strong> Community High School, Viola has served as the Mu<br />

Alpha Theta (Math Honor Society) president, a Natioinal Honor Society<br />

officer, a Cross Country team captain, and a peer tutor, and has<br />

also volunteered at Bethesda Memorial Hospital. This fall, he will<br />

attend the University of Florida to study aerospace engineering.<br />

Creary has served as president of the Black Student Union, National<br />

Honor Society, and Debate Club and has also earned 200 hours at the<br />

Delray Beach Library as a member of the Teen Advisory Board. This fall,<br />

he will attend the University of Miami to study broadcast journalism.<br />

Most Fun Small Town, Most Crazy Small Town, Most Small Town that Feels<br />

Like a Big Town. Delray has it all. With a bustling downtown, Pineapple<br />

Grove area, and little nooks and crannies in between, there’s more<br />

to do in Delray now than ever, with events and happenings<br />

spanning from daytime to nighttime. While it can<br />

seem expensive at times, there’s a great<br />

opportunity to enjoy all the City has to offer<br />

without breaking the bank. Here’s what you can<br />

do in Delray Beach in <strong>May</strong> for $50 or less.<br />

Spring is here and it’s time to add some floral beauty to our lives!<br />

Since Florida is basically Spring 24/7, we are lucky to be able to<br />

grow almost whatever we’d like whenever we’d like. However, if<br />

your green thumb lacks the plant power, all hope is not yet lost. <strong>May</strong><br />

is Gifts from the Garden Month and is a perfect time to bring the garden<br />

indoors. So drop the shovel and dirt and pick up your smock and<br />

paintbrush because Sumi-e Floral is calling your name. The artists at<br />

the Morikami Museum and Japanese Gardens invite you to enjoy Sumie,<br />

which is a form of Japanese ink painting brought from China in the<br />

12th Century. Primarily done<br />

in black ink, the name literally<br />

means “charcoal<br />

drawing” in Japanese.<br />

Students grind their<br />

own ink using an ink stick and a grinding stone and learn to hold and<br />

utilize brushes to create the primary sumi-e brushstrokes. Floral and<br />

landscape classes will start with a review of the basic techniques before<br />

moving on to the main subject, and good news: beginners are welcome!<br />

Classes are held on Thursdays from 10:30 a.m. to 12:30 p.m.<br />

and the three-week sessions are $45 per person. The Morikami Museum<br />

and Japanese Gardens is located at 4000 Morikami Park Road.<br />

Arthritis and Chiropractic<br />

Arthritis, we have all heard of it, and it affects<br />

some if not most of us. Arthritis has many<br />

forms and conditions, but for the purpose of<br />

this article we will discuss osteoarthritis.<br />

Osteoarthritis or OA is defined as the degeneration of joint<br />

cartilage and the underlying bone, most common from middle<br />

age and onward in life. This can happen in any joint, but<br />

here we will specifically address OA of the spine.<br />

Quick anatomy lesson, humans have 7 cervical, 12 thoracic, and<br />

5 lumbar vertebrae, and in between each one of those vertebrae is<br />

a disc. That disc has two parts. The inside is a gelatinous material<br />

called the nucleus pulposus and the outside portion of the disc call<br />

the annulus fibrosis. The annular is a strong durable material that<br />

bonds to the top and bottom of the vertebrae. These discs act as<br />

the shock absorbers of the spine. Just like in your car, these wear<br />

out after lots of miles or improper use. Improper use can occur due<br />

to poor biomechanics, poor posture, overuse, or even injury. The<br />

discs are a very viscous material and need movement to get their<br />

nutrition and hydration. If the spine is injured, or biomechanics are<br />

altered, the discs are not getting their proper nutrients and hydration,<br />

so they dehydrate or degenerate. When this happens, you have<br />

degenerative disc disease. It’s not actually a disease, but rather a<br />

condition. However, when the disc is degenerated and dehydrated,<br />

the body views that as unstable and locks down the muscles around<br />

the joints, and protects the spine by laying down more bone, resulting<br />

in osteoarthritis.<br />

There are other concerns in this process as well. During the degeneration<br />

process, the likelihood of developing disc herniations<br />

are increased, as well as an increase in symptoms such as sciatica.<br />

How can this be treated? First and foremost, MOVEMENT is the key<br />

to life. Stretching, exercising, going on walks, getting out and experiencing<br />

this beautiful country of ours, is going to help keep those<br />

joints lubricated.<br />

For the spine, getting adjusted is going to introduce motion to the<br />

joints that are stuck in the protective mechanism we talked about<br />

earlier. It is also going to help rehydrate the discs over time. For<br />

disc herniations, non-surgical spinal decompression is the most<br />

aggressive conservative treatment that can be done to help with<br />

herniations and sciatica. Coupling spinal decompression with Class<br />

IV laser therapy to bring more healing properties into the joints has<br />

proven to have great results. In the end, if you are suspecting that<br />

you have arthritis do not just sit around, get up and MOVE!<br />

Lacking some motivation for your workout these days? A gym buddy<br />

just might be the solution to your workout blues! Here are 5 reasons<br />

why getting your sweat on with a friend will improve your health and<br />

give you that motivation you need to get your gym mojo back!<br />

1. Accountability<br />

It’s one thing to bail on your own workout, but it’s much harder to<br />

ditch a workout when you’re going to be letting your workout buddy<br />

down. In addition to this, having a workout partner means you have<br />

to plan your workouts in advance to meet each other’s schedules,<br />

and once it’s scheduled, it’s much more likely that you’re going to<br />

follow through with it. So when you’re feeling lazy and want to ditch<br />

your workout, having the accountability of a buddy will greatly increase<br />

your chances of making that workout happen!<br />

2. Try New Workouts<br />

Sometimes it can be intimidating walking into a new environment…new<br />

workout, new people etc. That’s where your workout<br />

buddy comes into play! Having a friend with you can make the experience<br />

much less intimidating and definitely a lot more fun!<br />

3. Good Ole Support<br />

Because we’re all human, at some point you’ll probably feel like<br />

throwing in the towel for various reasons. However, the support<br />

from your workout partner will most likely be just what you<br />

need to stay on track. A good workout buddy will be there<br />

to listen to your woes and then to tell you to get your<br />

butt back in the gym, just like any good friend would!<br />

The support you will both offer each other will be immeasurable.<br />

4. Buddy Assessments<br />

It’s difficult to view yourself objectively. When it comes<br />

to your fitness progress, you may not notice how your<br />

strength and endurance is improving or that you’ve lost<br />

weight or gained muscle over time. Your workout buddy can<br />

view you more objectively and remind you of your progress so<br />

far. Having that validation can help bolster your self-esteem and<br />

keep your motivation levels high.<br />

5. Step Up yOur Game<br />

Let’s be honest, we as human beings like to compete with one another.<br />

Having a workout buddy who is just a little fitter, just a little<br />

stronger than you are will keep you on your toes and striving for a<br />

little more in your workout. By trying to keep up with them, you’ll<br />

winner with a life-changing makeover.<br />

So, when Theresa O’Leary entered the Extreme Makeover campaign<br />

and Dr. Siperstein heard her story, Dr. Siperstein knew she<br />

would be able to provide the help that O’Leary desperately deserved.<br />

As a registered nurse who has worked in hospice care, O’Leary<br />

had a difficult past five years after moving to Florida. She suffered a<br />

domestic violence issue and had since divorced from her husband,<br />

finding herself alone and struggling.<br />

“The last five years have been soul wrenching. I have never really<br />

done anything for myself. So, when I came into the Boca office, I just<br />

got a good feeling in my heart and in my soul that these were good<br />

people,” said O’Leary, tearfully. “When I heard that I won, I was over<br />

the top. I never thought anything good like this would happen to<br />

me. I appreciate Dr. Siperstein and the office.”<br />

Dr. Siperstein and the team provided free dermatology services,<br />

including Sciton Laser Resurfacing and Forever Young BBL (Broad<br />

Band Light) also known as IPL (Intense Pulsed Light) or a photofacial,<br />

which reverses the signs of sun damage and eliminates wrinkles.<br />

In addition, she received both Restylane and Juvederm cosmetic fillers<br />

to revolumize depleted areas and Botox to keep her wrinkles<br />

from returning. Treatment began on December 23, 2020 and took<br />

two months to complete, providing an end aesthetic with smooth<br />

contours that O’Leary and the team were ecstatic about when they<br />

recently revealed her before and after photos. Without any surgical<br />

treatment, O’Leary now looks and feels 20 years younger.<br />

“It was the ultimate Christmas gift,” said O’Leary, who said her<br />

final treatment day and seeing her results was the ultimate experience<br />

for her. “I just owe everything to them all for helping me like<br />

this. I’m most grateful.”<br />

In an effort to continue to honor O’Leary and her domestic violence<br />

journey, the Group will also donate 10% of net skincare sale<br />

profits from both of their offices during the month of April to Aid<br />

for Victims of Domestic Abuse (AVDA).<br />

Chuck Halberg is a respected businessman,<br />

but when the lights are out in his Delray office,<br />

he rides the wave of earthly pleasures.<br />

Some of those are musical (you can see<br />

him at Old School Square and the Arts<br />

Garage), and others are more rugged<br />

and tied to the terrain.<br />

As some of his friends know, Halberg<br />

takes to the road with his Harley when the<br />

time is right. Sometimes he will take a Sunday<br />

ride to Naples or the Keys, but lately he<br />

is focused on his upcoming “Flat Stanley<br />

Rides a Harley for Kids and Cops” trip.<br />

The purpose of this cross-country motorcycle<br />

trip is to raise funds for 10 local charities.<br />

This June (11 to 26) he will ride with<br />

his friend John “Maddog” Looney. They will<br />

start in Delray Beach and will go up the East<br />

Coast to Maine and back.<br />

“The <strong>2021</strong> trip will be about 6,000 miles<br />

on my new 2020 Harley Tri Glide Ultra Classic<br />

bike and cover 14 states in 16 days. I am<br />

hoping to raise $50,000 for the 10 nonprofits<br />

we chose,” said Halberg, who’s had a lifetime<br />

love affair with motorcycles.<br />

Navy Seal) Jimmy Christe. Together<br />

they rode in all 48 US<br />

states and Canada.<br />

“It was Janet Meeks’ idea<br />

to take an educational tool to<br />

raise money. So, we took the<br />

cut-out of Flat Stanley and<br />

posed with it. A lawyer friend<br />

said he would donate $250 for<br />

every time we posed with a police<br />

officer and Flat Stanley (up<br />

to $5000).<br />

Christe and Halberg raised<br />

$17,000 for five Delray Beach<br />

non-profits on the first trip, and<br />

rode approximately 6000 miles<br />

in 16 days.<br />

In 2011 they covered 22<br />

states in 23 days (riding<br />

9,114 miles) and raised about<br />

$30,000 for six charities. “We<br />

went to Yellowstone Park, The<br />

Redwood Forest, the Grand<br />

Tetons, Washington State, San<br />

Francisco, and more.”<br />

Halberg and Christe’s last<br />

“Flat Stanley Rides a Harley for Kids and Cops” was<br />

in 2015. “We touched all 48 lower states and raised over $50,000<br />

for some great Delray non-profits.”<br />

That was the last Flat Stanley Ride. “Jimmy passed away from cancer<br />

in 2018 and I put the whole thing on hold for the last few years.<br />

This year he will be with me in spirit.”<br />

The upcoming trip by Halberg and Maddog will raise money<br />

for 10 non-profits. Halberg is asking them to help with the publicity<br />

of this ambitious road-wise adventure. “I used to do all of the<br />

promoting, but now the non-profits can set up websites and help<br />

promote our upcoming trip. People can pick one of 10 charities<br />

(listed below) and be a sponsor or donate money to the charity of<br />

their choice.”<br />

The cost of the trip is being covered by Halberg and Maddog and<br />

all the money raised is going to the ten charities chosen. “We already<br />

have reservations for all hotels and we hit the road around<br />

7am every morning. Due to the mountains, they will ride from 200<br />

to 500 miles per day.<br />

The sidekick of the trip - Flat Stanley - will be front center. “Flat<br />

Stanley will be doing everything with us and you’ll see nightly updates<br />

from Flat Stanley and us. It will be a lot of good eating and a<br />

good night’s sleep.”<br />

If you want to become a sponsor - your name or your company<br />

name – will be on their marketing material and on Flat Stanley T-<br />

shirts. The shirts will have the name of the charity, the places they<br />

are going, and a picture of Flat Stanley.<br />

“People can make a donation (or pledge) to a specific charity<br />

we’ve chosen, or give a dollar amount for every mile we drive. The<br />

Delray Beach library donors are giving money for every picture we<br />

take at a library on our 6000-mile trip with Flat Stanley.”<br />

People can choose where they want Halberg and Maddog to pose<br />

with Flat Stanley. The good news is that everyone has a chance to<br />

see the Harley and meet Flat Stanley, Halberg and Maddog at their<br />

Kickoff Party on <strong>May</strong> 26th at the Arts Garage from 6pm to 8pm.<br />

“Each non-profit we’re supporting on the Flat Stanley ride will<br />

have a table set up at the Arts Garage. There will be entertainment<br />

and light bites and no charge to attend. You can make donations<br />

and pledges or just support our ride in any way you can.”<br />

Halberg has made his philanthropic mark on Delray for years.<br />

He is the co-founder of Impact 100 for Men and the Delray Beach<br />

Initiative. He also raises funds to purchase Thanksgiving dinner for<br />

the Delray Beach Police and Fire Department. Last year he raised<br />

$5,600 for turkeys, stuffing, sweet potatoes and pies. “We donated<br />

the extra money to the Delray Beach Police Toy Drive.”<br />

Halberg is stoked to ride his Tri Glide® Ultra motorcycle with<br />

Flat Stanley aboard this June. When asked if this trip is a lot to do<br />

in only 16 days, Halberg had a pretty good retort - “You never see a<br />

Harley parked in front of a psychiatrist’s office, have you? My Harley<br />

is my psychiatrist.”<br />

Charities that will receive funds from the upcoming June <strong>2021</strong><br />

Flat Stanley Ride are: Eat Better Live Better, Delray Library, Bound<br />

for College, Delray Beach Citizens for Delray Police, Dezzy Second<br />

Chance Animal Rescue, Arts Garage, Spady Museum, Roots and<br />

Wings, EJS Project and Miracle League.<br />

“My hope and prayers are that we can be a vessel to help each<br />

organization raise at least $5,000 on this trip. Together that would<br />

be $50,000 raised for some great nonprofits.”<br />

Additionally, we have repainted all touchable painted surfaces<br />

with new Sherwin-Williams Paint Shield Microbicidal Paint technology.<br />

This technology kills virus and pathogens for up to 4 years<br />

once applied to a surface. Lastly, we have purchased OmniAir Hepa<br />

1000V medical grade air scrubbers that have been placed throughout<br />

the facilities. These units use UV and Peroxide to clean 100% of<br />

the air several times per hour.<br />

Shines as a Reminder of Delray’s Past<br />

Hidden behind a chain link fence and several boarded up windows,<br />

the 7,000-square-foot tire repair shop had lost its luster.<br />

“It was in pretty rough shape,” said Caster, a principal in<br />

Azure Development who was looking for a space for his wife’s aromatherapy<br />

business back in 2013.<br />

Still what others might have seen as a rundown eyesore that once<br />

was a thriving auto dealership, Caster saw as an iconic 1950s style<br />

throwback to the days when Delray Beach was a small town where<br />

everyone knew everyone.<br />

He also spotted glimpses of the building’s Miami Modernist architecture<br />

(MiMo) design, now hard to find locally.<br />

“I could tell this was a hidden gem and an opportunity to bring a<br />

modernist style building back to life,” Caster said.<br />

A couple of million dollars and nine months after starting construction,<br />

Caster was able to move his wife’s then business 21 Drops in the<br />

brand new, exquisite space.<br />

Today the east side of the building – facing SE 6th <strong>Ave</strong>nue – is the<br />

headquarters for Azure Development while the west side of the building<br />

is home for Slash Fitness, which Caster calls the “coolest gym in<br />

town” because of the creative owners, unique architecture, and hardto-find<br />

original building materials that remain.<br />

Rick Caster knew there was something special<br />

about the building on the corner of Southeast<br />

Third Street and northbound U.S. Highway 1.<br />

The abandoned, fenced in property in 2013 when Rick CaSTer purchased it<br />

Longtime residents of Delray might remember the choice location<br />

between northbound and southbound U.S. 1 as the home of Adams<br />

Chevrolet. Built in 1950, the dealership was designed by Samuel<br />

Ogren, Sr. – considered the father of Delray architecture – and constructed<br />

with some of the most popular materials of the time including<br />

Dade County pine and terrazzo for floors.<br />

In the early 80s, the Adams family sold the business to Fronrath<br />

Chevrolet, which moved from the site after becoming an AutoNation<br />

dealership.<br />

The building then became the home of S & S Services Center – a tire<br />

and auto repair business – and part of it actually became the home of<br />

the owners Scott and Frances Schley, who for a while lived in an apartment<br />

that had been constructed in the back of the shop.<br />

Scott Schley, Caster recalls, had worked in the building for the auto<br />

dealers over the years, moving up from mechanic to part owner, and<br />

eventually decided to buy the building and start his own business.<br />

Health issues led to the property being put on the market at the exact<br />

time Caster was searching for space.<br />

A lot had been done to the building by the time it finally caught<br />

Caster’s eye.<br />

“I could tell by looking at the shape off the building, the roof lines,<br />

and the canted windows that it was MiMo style architecture,” Caster<br />

said. “I could also tell that a lot of changes had been made.”<br />

Those changes – brick overlay, tar mansard roofs, reconstructed<br />

windows – initially left some doubt in Caster’s mind about whether<br />

it would be worth saving the structure, but once inside and seeing a<br />

Dade County pine dome over the former service bays, Caster was moving<br />

toward preservation.<br />

The deal was sealed when Caster went to the Delray Beach Historical<br />

Society and discovered the original architectural plans (all eight<br />

pages) donated by Ogren’s son that had just recently been archived.<br />

With the original plans in hand, Caster and local architect Richard<br />

Jones had a blueprint to work from in their restoration efforts.<br />

Once they came up with new plans, the developer and the architect<br />

shared them with members of the Schley family, who were overwhelmed<br />

and proud.<br />

“They appreciated that I had a lot of enthusiasm and wanted to<br />

bring the building back to life. They literally started crying,” he said.<br />

The decision to restore the building Caster said was one based on a<br />

desire to preserve the past and not necessarily one that made the most<br />

financial sense since it cost more to save the building than it would to<br />

tear it down and start over.<br />

“In this case, the building was worth preserving,” said Caster,<br />

whose development company, Azure, specializes in high end residential<br />

properties and commercial projects. “The size was right, it<br />

had this unique character that reminded me of the Miami architecture<br />

that I grew up around, and once we had the original detailed<br />

plans, it was a no brainer.”<br />

Thanks to his eye for historic architecture and his desire to keep<br />

some of area’s past alive, the building now is designated a historic<br />

property by the City of Delray Beach. The property also received an<br />

adaptive use award from the Florida Trust for Historic Preservation.<br />

The building with architecture that Caster says “screams modernism”<br />

is unique in that many of the buildings that receive historic designation<br />

in the city are residential homes in older neighborhoods.<br />

“It’s unusual to find a one-off commercial, modest sized building<br />

like ours that is making a contribution to the history of Delray Beach,”<br />

he said. “That’s what I’m most proud of.”<br />

In our April issue we gave you Wanderlust, visiting<br />

places starting ‘I’ - ‘P’. In the month of <strong>May</strong> we<br />

are hoping to ignite your inner ‘explorer’ with a<br />

fascinating itinerary across the globe - ‘Q’ - ‘W’.<br />

Ecuador’s capital sits high in the Andean valley at an altitude of<br />

9,350 ft surrounded by volcanic peaks whose greenery is concealed<br />

by afternoon mist. Founded on the ruins of an Incan City it is<br />

chock full of colorful streets, architecture, sculptures and churches,<br />

including Basílica del Voto Nacional, well worth a visit. Seen from<br />

the city’s center is El Panecillo (the bread roll) and the Virgen de<br />

Quito sculpture which alone stands 148 ft high. Also, worth a visit;<br />

Plaza de San Francisco, The Intiñan Solar Museum, the “real” equator.<br />

Here you can officially straddle the hemispheres. Take a day trip<br />

to Cotopaxi Volcano, the world’s highest active volcano.<br />

The second largest city in Brazil, Rio also known as Cidade Maravilhosa<br />

(Marvelous City), is one of the most beautiful and vibrant<br />

places to visit, with plenty to see and do. Dramatic mountains,<br />

famed beaches (Copacabana and Ipanema are but two). A<br />

visit to one of the New Seven Wonders of the World is a must, Christ<br />

the Redeemer, standing atop Corcovado mountain overlooking the<br />

city. It stands 125 ft tall and has an arm span of 92 ft. Visit Sugarloaf<br />

Mountain, a granite peak with cable cars to its summit offers stunning<br />

views. The city is also known for its annual 4-day Carnaval<br />

festival with great food, flamboyant costumes, parade floats and<br />

lots of samba dancers. Sport is big on the agenda in Rio. Visit the<br />

100,000-seater Maracana Stadium (home of the 2014 World Cup<br />

finals and the 2016 Olympic Games) to the volleyball courts of Flamengo<br />

Park. And if you have time, The Tijuca Forest is a tropical<br />

rainforest and national park in the mountains of the city.


Stockholm<br />

The Swedish capital city is nicknamed ‘Venice of the North’, because<br />

it encompasses 14 islands and 57 bridges on an extensive<br />

Baltic Sea archipelago. Water is all around! Travel by foot, public<br />

transport or on ferries and boats. Norrmalm, is a vibrant and busy<br />

place where you will find high-street Swedish design and fashion<br />

shops along Drottninggatan. Here you can also take in opera, ballet<br />

and exhibitions. Head south to the unique Old Town, Gamla Stan,<br />

founded in 1252, and one of the number one attractions in Stockholm.<br />

Here, and the island of Riddarholmen tempts you with an<br />

abundance of restaurants, bars, museums and character shops. Explore<br />

the narrow winding cobblestone street, Stockholm Cathedral,<br />

Nobel Prize Museum and of course the Royal Palace, with over 600<br />

rooms and official residence to the Swedish monarch.<br />

Tokyo<br />

Japan’s busy capital is a rush of pure adrenaline. A blend of ultramodern<br />

skyscrapers to historic Buddhist temples. The one<br />

thing you will soon realize as you tour Tokyo is just how clean it is,<br />

complemented by punctuality. Everything runs like clockwork and<br />

if there is any waiting, you will find a neat and orderly line. Take a<br />

tour of Meiji Jingū, Tokyo’s grandest Shinto shrine where you will<br />

be met by towering gates, it was dedicated to Emperor Meiji and<br />

Empress Shōken. In Ueno Park is The Tokyo National Museum. Also<br />

within the park you will find Ueno Zoo and the National Museum<br />

of Western Art. On the former site of Edo Castle is the residence<br />

of Japan’s Imperial Family, The Imperial Palace. Tokyo has a long<br />

history, where there is much to see. Vintage teahouses, peaceful<br />

gardens and Buddhist temples, great nightlife and an unrivaled culinary<br />

scene.<br />

Udaipur<br />

The capital of the district of Mewar in Rajasthan, India. It feels a<br />

little like Europe which is why it is has been dubbed the Venice<br />

of the East. Set on the idyllic Lake Pichola and surrounded by lush<br />

hills of Aravallis, Udaipur is set around a series of artificial lakes<br />

and has a wonderful mix of lavish royal residences, ornate palaces<br />

and temples. Lake Palace, located on the island of Jag Niwis, once a<br />

summer home for the royals of Mewar, it is now a beautiful five-star<br />

hotel. The beautiful City Palace and Sajjangarh (Monsoon Palace)<br />

are well worth taking a sightseeing tour, showing off the architectural<br />

grandeur of the city. Add to this havelis, which are traditional<br />

but ornate homes, timeless streets, bustling bazaars, a lively arts<br />

scene, hotels, shops and countryside, there is lots to see.<br />

of the North Island on the Cook Strait and recently named, “the<br />

coolest little capital in the world” by Lonely Planet. ‘Windy Wellington’<br />

(it’s famed nickname) is a cosmopolitan city that boasts a<br />

compact downtown area chock full of architecture, culture and a<br />

positive energetic vibe. Offering 19th century colorful wooden cottages,<br />

iconic Wellington cable cars, Botanical gardens, and Art Deco<br />

masterpieces. It also delivers sandy beaches, a waterfront promenade<br />

Looking back at important dates that<br />

took place in the month of <strong>May</strong> both<br />

here in America and across the globe.<br />

<strong>May</strong> 1, 1960<br />

Soviet Air Defense Forces shot down American U-2 spy plane flying<br />

at 60,000 feet over Sverdlovsk in central Russia. Francis Gary<br />

Powers, the pilot, parachuted to safety but was captured, convicted,<br />

and sentenced to 10 years in prison by a Russian court. The incident<br />

caused a cancellation of a meeting between President Dwight<br />

D. Eisenhower and Nikita Khrushchev and heightening the existing<br />

Cold War tensions. Two years later Powers was exchanged for Soviet<br />

spy Rudolf Abel.<br />

<strong>May</strong> 2, 2011<br />

U.S. Special Operations Forces raided an al-Qaeda compound<br />

in Abbottabad, Pakistan killing the world’s most wanted terrorist,<br />

Osama bin Laden. The entire operation, which lasted only 40<br />

minutes from start to finish, was the culmination of years of calculated<br />

planning and training and SEAL Team Six was credited with<br />

accomplishing the mission flawlessly. After the attack, President<br />

Obama addressed the nation. “For over two decades, bin Laden has<br />

been al Qaeda’s leader and symbol, and has continued to plot attacks<br />

against our country and our friends and allies. The death of<br />

bin Laden marks the most significant achievement to date in our<br />

nation’s effort to defeat al Qaeda. Yet his death does not mark the<br />

end of our effort. There’s no doubt that al Qaeda will continue to<br />

pursue attacks against us. We must - and we will - remain vigilant<br />

at home and abroad.”<br />

By the end of the year, 600 banks closed, and several big railroads<br />

were in receivership. Another 15,000 businesses went bankrupt<br />

amid 20 percent unemployment. It was the worst economic crisis<br />

in U.S. history up to that time.<br />

<strong>May</strong> 7, 1915<br />

The British ocean liner, Lusitania was torpedoed by a German<br />

U-Boat (submarine) during the First World War off the coast of<br />

Ireland, losing 1,198 of its 1,924 passengers, including 114 Americans.<br />

The attack hastened neutral America’s entry into the war.<br />

The 27th Amendment to the U.S. Constitution was ratified, prohibiting<br />

Congress from giving itself pay raises.


<strong>May</strong> 8, 1884<br />

Birthday - Harry S. Truman (<strong>May</strong> 8, 1884 – December 26, 1972)<br />

was the 33rd U.S. President was born in Lamar, Missouri. He became<br />

president upon the death of Franklin D. Roosevelt in April<br />

1945. Two weeks after becoming president he was informed of the<br />

top-secret Atomic bomb project. By August 1945, Japan had lost<br />

World War II. Japan and the United States both knew it. Japan was<br />

split between surrender or fighting to the end. They chose to fight.<br />

Truman authorized the dropping of the Atomic bomb. On August 6,<br />

1945, the first bomb exploded over Hiroshima,<br />

followed by a second bomb dropped on<br />

Nagasaki on August 9th. The next<br />

day, Japan sued for peace.<br />

<strong>May</strong> 10, 1994<br />

Former political prisoner<br />

Nelson Mandela<br />

became South Africa’s<br />

first black president<br />

after more than three<br />

centuries of white rule.<br />

The attempted assassination of Pope John Paul II took place in St.<br />

Peter’s Square in Vatican City. He was shot at close range while riding<br />

in an open automobile by an escaped terrorist, Mehmet Ali Ağca who<br />

was already under sentence of death for the murder of a Turkish<br />

journalist. The pope suffered severe blood loss but recovered.<br />

<strong>May</strong> 14, 1607<br />

The first permanent English settlement in North America was<br />

established at Jamestown, Virginia, under the authority of the Virginia<br />

Company of London, chartered by King James I.<br />

<strong>May</strong> 14, 1796<br />

Dr. Edward Jenner, an English country doctor from Gloucestershire<br />

developed and administered the world’s first vaccination for<br />

smallpox, a disease that had killed millions of people over the centuries.<br />

Within 18 months, 12,000 people in England had been vaccinated<br />

and the number of smallpox deaths dropped by two-thirds.<br />

<strong>May</strong> 17, 1792<br />

Two dozen merchants and brokers established the New York<br />

Stock Exchange. In good weather they operated under a buttonwood<br />

tree on Wall Street. In bad weather they moved<br />

inside to a coffeehouse to conduct business.<br />

George VI was crowned at Westminster<br />

Abbey in London, following the abdication of his brother, Edward<br />

VIII. King George reigned until his death in 1952. He was succeeded<br />

The first Kentucky Derby horse race took place at Churchill<br />

<strong>May</strong> 18, 1980<br />

An earthquake struck below the north face of Mount St. Helens,<br />

triggering the largest landslide in history which caused a cataclysmic<br />

eruption of Mount St. Helens. The volcano in southwestern<br />

Washington State spewed steam and ash over 11 miles into the sky.<br />

This was the first major eruption since 1857.<br />

<strong>May</strong> 20, 1927<br />

- Charles Lindbergh, a 25-yearold<br />

aviator, took off at 7:52<br />

The American Red Cross was founded by Clara Barton. The organization<br />

is dedicated to serving people in need. They are tasked<br />

by the federal government with providing services to members of<br />

the American armed forces and their families as well as providing<br />

disaster relief in the United States and around the world.<br />

<strong>May</strong> 22, 1972<br />

President Richard Nixon became the first American president<br />

to visit Moscow. Four days later, Nixon and Soviet<br />

Russia’s leader Leonid Brezhnev signed a pact pledging<br />

to freeze nuclear arsenals at current levels.<br />

<strong>May</strong> 24, 1844<br />

Telegraph inventor Samuel Morse sent the first official<br />

telegraph message from the Capitol Building in<br />

Washington D.C. to Baltimore, it read “What hath God<br />

wrought?” Taken from the Bible, Numbers 23:23, and<br />

recorded on a paper tape.<br />

<strong>May</strong> 26, 1940<br />

The Dunkirk evacuation (Operation Dynamo) began to save<br />

the British Expeditionary Force trapped by advancing German<br />

armies on the northern coast of France. Nearly 700 boats and vessels<br />

of all shapes and sizes ferried 200,000 British and 140,000<br />

French and Belgian soldiers across the English Channel by June 4th.<br />

Supplies to Over 10,000 Palm<br />

Beach County Students.<br />

Back to school time is often filled with joy and anticipation as<br />

children shop for new school supplies; excited to show off<br />

the latest fashions and a fresh new haircut for school pictures.<br />

But for so many in our community, the start of the school<br />

year is not new or exciting at all. The National Federation of Retailers<br />

reported that parents with children aged K-12 planned to spend<br />

an average of $789.49 to prepare for the <strong>2021</strong> school year, topping<br />

the previous record of $696.70. Thousands of low-income families<br />

in our community struggle to provide the basics, let alone prepare<br />

their children for the upcoming school year.<br />

Spirit of Giving understands the struggle and partnered with others<br />

to create Back to School PBC! to meet the need.<br />

Now in its 14th year of operation, Back to School PBC! helps prepare<br />

10,000+ at-risk Palm Beach County Students for the upcoming<br />

school year, providing the tools and confidence needed for academic<br />

success. Due to the risk of Covid-19, necessary adjustments have been<br />

made to minimize the risk of community spread while still providing<br />

needed access to school supplies and health resources.<br />

This year, Back to School PBC!<br />

will be a drive-through event.<br />

Children will still receive muchanticipated<br />

new backpacks<br />

pre-packed and brimming with<br />

grade appropriate school supplies,<br />

a new pair of shoes, socks<br />

and more! In addition, adolescent<br />

girls will receive necessary<br />

feminine hygiene kits. Because<br />

we cannot offer in-person basic<br />

health assessments, we will<br />

provide families with a package<br />

full of free and reduced<br />

priced healthcare resources for<br />

the whole family, to encourage<br />

healthy living.<br />

Back to School PBC! focuses on children from low-income households,<br />

homeless, at-risk of homelessness or in foster care in Palm<br />

Beach County. Approximately 75% of the children qualify for Medicaid,<br />

15% have private insurance and 10% have no insurance, and<br />

98% are on free or reduced school lunch program. Unfortunately, Covid-19<br />

has disproportionately impacted this already vulnerable population.<br />

Now, more than ever, it is critical that we continue to provide<br />

these families with the sense of stability, security, and support that<br />

Back to School PBC! offers.<br />

The event will take place on Saturday July 24th. Spirit of Giving is<br />

proud to be one of the collaborative partners for this multisite event<br />

with Palm Beach County, Office of Community Revitalization, Palm<br />

Beach Sheriff Office, and Children’s Service Council.<br />

Local Nonprofits participating in the program include Achievement<br />

Centers for Children and Families, Best Foot Forward, Boys and Girls<br />

Club of Delray Beach, CityHouse Delray Beach, Habitat for Humanity<br />

SPBC, Milagro Center, and more. Do you want to help? You can join us<br />

by donating, volunteering, hosting a collection, and/or spreading the<br />

word about this community wide event.<br />

ideas…and goals….and dreams. The Chamber team supports,<br />

encourages and cares about each member with the joint goal of<br />

seeing their dream take shape.<br />

Secondly, we promote our members. Once we hear their dreams<br />

we waste no time sharing them with our Ambassadors, our Board<br />

of Directors, the general membership and with our community.<br />

Doing Good for the Planet<br />

Matt Shipley has a lot to brag about. But he would never<br />

do that. The reason is simply that Shipley is modest,<br />

understated and a consummate environmentalist with<br />

a wanderlust for travel and the great outdoors.<br />

As a child he spent hours surfing, skateboarding, snowboarding,<br />

skimboarding, playing tennis and volunteering.<br />

To understand Matt, one has to know his family. His mother<br />

Kari is known around Delray Beach as a high-profile volunteer with<br />

an under the radar media meter. She doesn’t want accolades or applause;<br />

she just enjoys helping others.<br />

His father John moved to Delray as a teenager and was known as<br />

“Johnny Delray.” He met Matt’s mom at the beach in Delray and is well<br />

known for his sense of humor and strong work ethic.<br />

It is easy to see how Matt is the sum of the Shipley heritage. At the<br />

age of 17 he spent a summer in Costa Rica volunteering. He not only<br />

learned Spanish, but he was inspired by their lush surroundings. “I<br />

was located near the Arenal volcano and learned the language from<br />

the locals while working to re-establish park pathways,” said the<br />

co-founder of Community Greening, a non-profit organization that<br />

plants trees throughout South Palm Beach County.<br />

The outdoors always enchanted this soft-spoken bilingual adventurer.<br />

That is exactly the reason he left Florida to attend University of<br />

San Diego to study environmental issues. In his junior year he spent<br />

a semester living with a Spanish family in Toledo, Spain studying art<br />

and literature in Spanish.<br />

After receiving his B.A. in Spanish and Environmental Studies, Shipley<br />

worked in Mexico as a translator/liaison.<br />

Not one to sit idle Shipley was entranced by stories he heard about<br />

the Peace Corps. When asked if he was willing to live in a hut without<br />

running water Shipley’s answer was an unequivocal yes. “My one request<br />

was that I live near the water, but I was sent to Paraguay, which<br />

is hours from any water. I helped with reforestation and taught science,<br />

gardening, and crop rotation in their schools.”<br />

After 27 months in the Peace Corps, Shipley went to Rio De Janeiro<br />

to teach English. But it was the environment that spoke to him in a<br />

secret language that only he could decode. “I thrive in nature and<br />

around trees. This earth offers so much - whether it be good surf,<br />

food, shade or piece of mind.”<br />

It is for that reason that he moved to California to get an M.A. in<br />

International Environmental Policy at the Middlebury Institute of International<br />

Studies.<br />

Though Shipley doesn’t say he wants to change the world, The<br />

Middlebury Institute of International Studies is a place that helps<br />

people do just that. “We are a training ground for developing and<br />

implementing practical solutions for teaching you how to take your<br />

education…and make the difference you want in the world.”<br />

Mom Kari has seen this quality in her son since he was young. “The<br />

seed of giving was planted long ago in Matt’s heart. He has grown up<br />

hearing, seeing, and participating in giving back to the community.”<br />

To accomplish this goal and stay true to his love of the environment<br />

he graduated from the Municipal Forestry Institute and is an<br />

ISA Certified Arborist.<br />

In 2016 he co-founded Community Greening with Mark Cassini.<br />

They have planted over 6000 trees with the help of over 4000 volunteers,<br />

including high school students. “Delray Beach has a campaign<br />

to plant 10,000 trees. We won a bid to plant the first 2000.”<br />

Planting trees is not purely an aesthetic adventure for Community<br />

Greening, it is an important part of the bigger environmental picture.<br />

“Trees have an enormous long-term benefit for our environment.<br />

They clean our air and water, reduce energy costs, increase property<br />

value and improve the health and well being of those who live here.”<br />

One of their most fruitful ventures is the Youth Tree Team. It consists<br />

of local minority teenagers hired to plant and care for trees.<br />

They are paid to travel around Palm Beach County, learn about green<br />

jobs and gain skills to enter the workforce.<br />

Community Greening also has free tree giveaways at different<br />

Palm Beach locations and works with local residents to improve their<br />

environment by planting trees. “This transforms urban green spaces<br />

and it’s a great place for anyone to pick tropical fruit from our fruit<br />

trees when they’re ripe.”<br />

Because Community Greening is a non-profit, they rely on donations<br />

from businesses and foundations. They also have fundraisers<br />

that are posted on their website and Facebook page.<br />

Community Greening was named “Tree Advocacy Group of the<br />

Year” by the Florida Urban Forestry Council and “Non-Profit of the<br />

Year” by the Delray Chamber of Commerce.<br />

When asked to describe himself, Shipley goes mute. But others are<br />

effusive when talking about this green giant of Delray. “Matt is a special<br />

person. He’s a man of many talents, he’s hard working, charming,<br />

genuine, and dependable. I learn so much from him,” said Dupree<br />

Jackson Jr., founder of EJS Project.<br />

His business partner Mark Cassini describes Shipley as calm, hardworking<br />

and kind-hearted. “Matt wants what is best for people. I am<br />

lucky to have him as a partner; it makes Community Greening that<br />

much stronger.”<br />

When it comes to love Shipley is surrounded by that effusive human<br />

court advantage. He comes from a loving family and last month<br />

he married his soulmate Andrea.<br />

“My parents met on the beach and I got married on the beach to Andrea,<br />

who I met in Paraguay when visiting friends from the Peace Corps.”<br />

Shipley is blessed. And he knows it. “I always wanted to do something<br />

that helped the environment and people – this is my dream job.”<br />

Mom Kari couldn’t be happier. “I am so proud of the work Matt<br />

has done, and will continue to do, making a better world for us and<br />

generations to come.”<br />

Seafood Al Cartoccio<br />

‘Al cartoccio’ is the Italian way of saying ‘cooked in a bag.’ In this recipe<br />

we will cook the salmon and seafood in a foil pouch. This is one of the best<br />

ways to cook fish. Cooking “al cartoccio” is quick with an easy clean up.<br />

INGREDients (serves 4)<br />

4 - 4oz Salmon fillets<br />

1lb Shrimp<br />

12 Calms<br />

12 Mussels<br />

12 Cloves of garlic, sliced<br />

1tsp Salt<br />

1tsp Oregano<br />

1 Pinch red pepper flakes<br />

4 Tomatoes, diced<br />

1oz Extra virgin olive oil<br />

1cup White wine<br />

1cup Fish broth<br />

1cup Marinara sauce<br />

12 Basil leaves julienned<br />

Juice of 1/2 lemon<br />

directions<br />

Preheat oven to 450 degrees.<br />

Using a large sheet of aluminum foil, line a baking dish.<br />

Place all fish in the center and brush with olive oil.<br />

Combine remaining ingredients and pour over fish.<br />

Fold the foil to form a pocket and hold in all liquid.<br />

Bake in oven 7 minutes, or longer for a well done fish.<br />

Remove from oven and let rest for 5 minutes.<br />

Open pouch carefully to avoid steam.<br />

Serve with crusty bread and pasta al dente.<br />

brunch or bring her breakfast in bed! She will definitely<br />

appreciate taking the day off. Here are a few recipes to plan a<br />

great meal. And don’t forget to add a sweet treat or dessert.<br />

Raspberry Sunrise Mimosa<br />

This beautiful drink is the perfect fancy treat for Mother’s Day.<br />

Extra points for serving it to her in bed.<br />

ingredients<br />

10 ounces fresh raspberries<br />

1/2 cup grenadine, chilled<br />

2 cups pulp-free orange juice, chilled<br />

One 750-milliliter bottle sparkling dry white wine, chilled<br />

Special equipment: A 12-cube ice cube tray, preferably one that<br />

makes square cubes; a freezer-safe pitcher; a large serving spoon<br />

1. Make the ice: Fill each compartment of a 12-cube ice<br />

tray about a third of the way up with water and freeze<br />

until solid, about 1 hour. Puree half of the raspberries<br />

in a food processor until smooth. Add 1 to 2 teaspoons<br />

of puree to each cube compartment, coming about another<br />

third of the way up the side. Freeze solid, about 1<br />

hour. Top off each compartment with water and freeze<br />

until solid, another hour.<br />

2. Make the cocktail: Carefully pour the grenadine<br />

into a large freezer-safe pitcher so that the grenadine<br />

doesn’t splash sides. Freeze until the grenadine is very<br />

cold and thick, about 30 minutes. Place a large serving<br />

spoon in the pitcher, holding it so the tip of the bowl<br />

touches the side of the pitcher just above the grenadine<br />

line. Slowly pour the orange juice into the bowl<br />

of the spoon, filling it up and letting the orange juice<br />

overflow run on top of the grenadine without mixing.<br />

Slowly bring the spoon up as the orange juice level<br />

rises. Using the same technique, add the sparkling<br />

wine, stopping after you’ve poured about half of the<br />

bottle to let the fizz subside. Continue pouring, slowly<br />

bringing the spoon up as the wine level rises. Top with<br />

half of the remaining raspberries.<br />

3. To serve, stir to combine the cocktail in the pitcher.<br />

Add the prepared ice cubes to Champagne flutes.<br />

Fill with the cocktail and top off with the remaining<br />

raspberries.<br />

Lazy Sunday Mimosa<br />

Dress up the classic Champagne brunch drink! Add a pretty-inpink<br />

spin with a mix of blood orange and pineapple juices — and<br />

decorating the glasses with sanding sugar.<br />

ingredients<br />

1/2 cup pink sanding sugar<br />

1 (750-ml) bottle brut Champagne<br />

4 tablespoons pineapple juice<br />

4 tablespoons blood orange juice<br />

2 tablespoons orange liqueur<br />

(recommended: Grand Marnier)<br />

Dip the rims of the champagne flutes in<br />

water. Dip again in the sanding sugar.<br />

Divide Champagne between two<br />

glasses. Add half of both juices to each<br />

glass and top with orange liqueur.<br />

Strawberry<br />

Ricotta Bruschetta<br />

Diced strawberries, a drizzle of balsamic glaze and a sprinkle of<br />

sea salt will add beautiful flavor to this bruschetta-inspired dish.<br />

1 cup finely diced strawberries<br />

1 tablespoon chopped fresh mint<br />

2 teaspoons extra-virgin olive oil<br />

Flakey sea salt<br />

12 toasted baguette slices<br />

1 cup ricotta cheese<br />

Balsamic glaze for garnish<br />

directions<br />

In a small bowl, toss the strawberries<br />

with the mint, olive oil and a<br />

pinch of flakey sea salt. Spread each<br />

slice of baguette with ricotta cheese.<br />

Top with a spoonful of strawberries,<br />

drizzle with balsamic and sprinkle<br />

with more flakey sea salt.<br />

A pizza-style breakfast using<br />

pita bread topped with<br />

cheese, prosciutto, spinach,<br />

and a fried egg.<br />

6 6-inch pita breads<br />

Extra-virgin olive oil<br />

6 large eggs<br />

3/4 cup (6 oz) mascarpone cheese<br />

Grated zest of 1/2 large lemon<br />

Kosher salt and freshly ground black pepper<br />

3 tablespoons fresh lemon juice<br />

3 packed cups (3 oz) arugula or baby spinach<br />

8 ounces thinly sliced prosciutto<br />

Heat a grill pan over medium-high heat<br />

or preheat a gas or charcoal grill. Brush<br />

each side of the pita breads with 1/2 teaspoon<br />

olive oil and grill 2 to 3 minutes on<br />

each side, until crisp. Remove from the<br />

grill and cool slightly. In a large skillet,<br />

heat 1 tablespoon olive oil over mediumhigh<br />

heat. Crack the eggs directly into the<br />

pan and cook until the egg whites are set,<br />

2 to 3 minutes. Combine the mascarpone<br />

cheese, lemon zest, 1/2 teaspoon<br />

salt and 1/2 teaspoon pepper in a small<br />

bowl. In a medium bowl, whisk together<br />

3 tablespoons olive oil, the lemon juice, 1<br />

teaspoon salt and 1/2 teaspoon pepper<br />

until smooth. Add the arugula and toss<br />

until coated. Spread each pita with 2<br />

tablespoons of the mascarpone mixture.<br />

Divide the prosciutto on top. Divide the<br />

arugula and mound on top of the prosciutto.<br />

Carefully place a fried egg on top<br />

of each pita. Season the eggs with a pinch<br />

of salt and pepper and serve.<br />

1 large egg white, lightly beaten<br />

2 teaspoons vegetable oil<br />

3 ounces pancetta, cut into 1/4-inch pieces<br />

5 large eggs, at room temperature<br />

1/2 cup (4 ounces) mascarpone cheese, at room temperature<br />

2 cups (8 ounces) shredded gruyere cheese<br />

3 scallions, white and pale green parts, thinly sliced<br />

1/2 teaspoon kosher salt<br />

1/2 teaspoon freshly ground black pepper<br />

1. Place an oven rack in the center of the oven. Preheat the oven to 400<br />

degrees F. 2. Butter and flour the bottom and sides of a 9-inch tart pan<br />

with a removable bottom. Unroll the pie crust and gently press into the<br />

bottom and sides of the pan. Trim any excess from the top. 3. With the<br />

tines of a fork, prick the bottom of the pastry. Using a pastry brush, brush<br />

the crust with the beaten egg white. Put the pan on a baking sheet and<br />

bake for 10 minutes, until the egg white has set. Let cool 10 minutes.<br />

4. Meanwhile, in a medium skillet, heat the oil over medium-high heat.<br />

Add the pancetta and cook, stirring frequently, for 6 to 8 minutes, until<br />

browned and crispy. Drain on a paper towel-lined plate. 5. In a medium<br />

bowl, lightly beat the eggs. Whisk in the mascarpone, gruyere, scallions,<br />

salt, pepper and the pancetta. Pour into the cooled crust and bake for<br />

about 18 minutes, until the mixture has set and the top is golden. 6. Cool<br />

the tart for 10 to 15 minutes and then remove from the pan. Cut the tart<br />

into wedges and serve warm or at room temperature.<br />

Corn Cakes<br />

Give store-bought corn muffin mix a major<br />

upgrade by adding lemon zest and vanilla<br />

to the batter, and stuff the muffins with<br />

strawberries for an easy-to-make breakfast,<br />

brunch or dessert treat.<br />

ingredients<br />

Cooking spray, for the pan<br />

1 8.5-ounce package corn muffin mix<br />

1/4 cup all-purpose flour<br />

2 teaspoons finely grated lemon zest<br />

1 teaspoon vanilla extract<br />

1 cup chopped strawberries<br />

2 tablespoons strawberry preserves<br />

3/4 cup heavy cream<br />

2 tablespoons confectioners’ sugar<br />

directions<br />

Preheat the oven to 375 degrees. Lightly coat a 6-cup muffin<br />

pan with cooking spray. Prepare the corn muffin batter<br />

as the label directs, then stir in the flour, lemon zest and<br />

vanilla. Divide the batter evenly among the muffin cups.<br />

Bake until the edges are set and the centers are soft but<br />

not wet, 10 to 12 minutes. Meanwhile, toss the strawberries<br />

and strawberry preserves in a bowl and set aside.<br />

Remove the corn cakes from the oven. Gently press the<br />

back of a teaspoon into the center of each to make an indentation<br />

about one-third of the way into the cake. Spoon<br />

about 2 teaspoons of the strawberry mixture into each<br />

indentation, pressing to tightly fill. (Reserve the remaining<br />

berry mixture for topping.) Return the cakes to the<br />

oven and continue baking until just golden, about 5 more<br />

minutes. Let the cakes cool in the pan on a rack, 5 minutes,<br />

then remove from the pan and let cool 10 more minutes.<br />

Meanwhile, beat the cream and confectioners’ sugar with<br />

a mixer until soft peaks form. Top the cakes with the remaining<br />

berry mixture and serve with the whipped cream.<br />

celebrate mother’s day or any occasion! A champagne<br />

infused cake with a classic vanilla buttercream.<br />

2 1/4 cups all-purpose flour<br />

2 1/4 tsps baking powder<br />

3/4 tsp salt<br />

3/4 cup unsalted butter room temperature<br />

1 1/2 cup granulated sugar<br />

1 1/2 tsp vanilla<br />

1 cup pink champagne or sparkling wine<br />

Fuschia color gel<br />

Vanilla Buttercream:<br />

5 large egg whites<br />

1 1/2 cups granulated sugar<br />

1 1/2 cups unsalted butter room temperature, cubed<br />

1 tsp clear vanilla extract<br />

1. Preheat oven to 350F and grease and<br />

flour three 6” cake rounds, line with<br />

parchment. 2. In a medium bowl, whisk<br />

flour, baking powder, and salt. Set aside. 3.<br />

Using a stand mixer fitted with the paddle<br />

attachment, beat butter until smooth. Add<br />

sugar and beat on med-high until pale and<br />

fluffy (2-3mins). 4. Reduce speed and add<br />

egg whites one at a time, fully incorporating<br />

after each addition. Add vanilla. 5.<br />

Alternate adding flour mixture and champagne,<br />

beginning and ending with flour (3<br />

additions of flour and 2 of champagne).<br />

Fully incorporating after each addition. 6.<br />

Add a small amount of Fuschia color gel<br />

using a toothpick. Mix to incorporate but<br />

try not to overmix. 7. Spread batter evenly<br />

into prepared pans. Smooth the tops with<br />

a spatula. 8. Bake for approx. 35 mins or<br />

until a toothpick inserted into the center<br />

comes out mostly clean. 9. Place cakes on<br />

wire rack to cool for 10mins then turn out<br />

onto wire rack to cool completely.<br />

Vanilla Buttercream:<br />

1. Place egg whites and sugar into the<br />

bowl of a stand mixer, whisk until combined.*<br />

2. Place bowl over a hot water<br />

bath on the stove and whisk constantly<br />

until the mixture is hot and no longer<br />

grainy to the touch (approx. 3mins).<br />

3. Place bowl on your stand mixer and<br />

whisk on med-high until the meringue<br />

is stiff and cooled (the bowl is no longer<br />

warm to the touch (approx. 5-10mins)).<br />

4. Switch to paddle attachment. Slowly<br />

add cubed butter and mix until smooth.<br />

Add vanilla and continue to whip until<br />

smooth.**<br />

Assembly:<br />

1. Place one layer of cake on a cake stand<br />

or serving plate. Top with approximately<br />

2/3 cup of frosting and spread evenly.<br />

Repeat with remaining layers and apply a<br />

thin coat of frosting all over the cake. Chill<br />

for 20mins. 2. Frost and smooth the sides.<br />

Chill for 20mins. 3. Using a toothpick, add<br />

a small amount of Fuschia color gel to the<br />

remaining frosting. Stir with a spatula to<br />

incorporate, or place back on the stand<br />

mixer to mix in the color. 4. Gently press<br />

cake sparkles or sanding sugar into the<br />

sides and top of the cake.*** 5. Decorate<br />

with pink rosettes on top and beads along<br />

As pet parents, at some point in our pet’s life, we’re are faced<br />

with a health challenge that will cause stress to us and demand<br />

decisions that we must make. As our pets age, they<br />

They can become stressed from not only the trip, but the smell of<br />

other pets, being handled by strangers that poke, probe, and in<br />

many cases restrain them with muzzles and administer sedatives.<br />

The pet’s stress levels will actually affect the clinical testing. There<br />

are blood values that can be affected by this stress that can greatly<br />

alter the diagnosis and any treatment plan that we all must be<br />

aware of.<br />

The health provider’s approach along with your response will<br />

have a highly dynamic affect on your pet’s future. When you get a diagnosis<br />

that is very negative and a negative prognosis, your energy<br />

is projected to that pet and all your other pets as well.<br />

Energy, emotions and approach are as much a part of healing for<br />

people and pets as any drug or therapy that comes from conventional<br />

medicine. The body is dynamic and as such it is always changing.<br />

Therefore, the physical health can change from moment to moment.<br />

We must understand the variants before we can evaluate the treatment<br />

options.<br />

We have discovered that when we take a more natural approach to<br />

our challenges and approach them with a calm and positive attitude,<br />

our approach with these parameters will increase our success rate.<br />

Let’s look at the power of our energy to keeping our pets healthy.<br />

If we are worrying, our pet picks up our energy and expends negative<br />

energy that deprives the body of nutrient energy to heal. If we<br />

are positive, they experience this positive energy that provides<br />

strength and healing.<br />

We measure energy through frequency. We have learned that the<br />

body will react differently when presented with different frequencies.<br />

If we think of how we react to sound, which is only one form<br />

of energy, it will give us a better idea as to how the body reacts.<br />

Thunder has a vibration frequency that causes fear in many cases<br />

whereas the melodious song of a bird will bring the energy of joy.<br />

In the wild, animals can sense when a storm or a weather event is<br />

approaching and seek shelter well before we see it. That is the power<br />

of frequency and energy. Foods not only provide metabolic energy<br />

but also the frequency energy that provokes emotion and feelings.<br />

We have to realize that when our pets act differently, sleep in a different<br />

spot or don’t want to eat, it doesn’t always conclude that they<br />

are sick or don’t like the food. Perhaps they are seeking a change in<br />

the energy to optimize their being. If we show too much worry or<br />

concern, we could be hurting and not helping the energy that they<br />

need. If we keep our fears in check and support the positives, our<br />

life and that of our pets will be greatly improved. Healing and wellbeing<br />

can come from within.<br />
