Most of you will know of the Icehotel but <str<strong>on</strong>g>where</str<strong>on</strong>g> is<br />

it and what exactly does the experience entail?<br />

A popular misc<strong>on</strong>cepti<strong>on</strong> is that the Icehotel is a<br />

permanent structure found in Iceland. On the c<strong>on</strong>trary,<br />

Heathrow airport provides the closest direct route from<br />

the UK. Fly <strong>with</strong> SAS to Kiruna. Flight time is a mere<br />

3½ hours so in no time you'll have arrived.<br />

Make sure you pack for the cold as the average<br />

temperature during the winter m<strong>on</strong>ths is a staggering<br />

-10c but can drop as low as -30c. The Icehotel will<br />

provide you <strong>with</strong> all the necessary clothing during your<br />

stay however remember to bring winter clothes for<br />

travelling and transfers.<br />

Arrive at the Icehotel in style and traditi<strong>on</strong> <strong>with</strong> a huskysled<br />

airport transfer. This short ride through the snowcovered<br />

forest and ice plains gives a certain majesty to<br />

your first glimpse of the Icehotel. Winter is the darkest<br />

The House of Burberry was founded in 1856 by<br />

a 21 year old draper's assistant called Thomas<br />

Burberry. His shop in Basingstoke Hampshire was<br />

a Gentleman's Outfitters specialising in outdoor<br />

wear, and because of the commitment to quality,<br />

fabric and design Burberry earned a loyal following<br />

and the business grew. In 1880 Thomas Burberry<br />

invented Gabardine, which was a tightly woven<br />

wool fabric tough, breathable and water resistant.<br />

By now the company had grown and moved it's<br />

premises to Haymarket, L<strong>on</strong>d<strong>on</strong> <str<strong>on</strong>g>where</str<strong>on</strong>g> it traded as<br />

Thomas Burberry & S<strong>on</strong>s.<br />

Burberry's first affiliati<strong>on</strong> <strong>with</strong> the British Army<br />

was in 1895, when the Tielocken coat was<br />

developed and was worn by Officers in the Boer<br />

War. Then, in 1914, Burberry was commissi<strong>on</strong>ed<br />

by the War Office to adapt the standard Officer's<br />

coat to make it suitable for all weather c<strong>on</strong>diti<strong>on</strong>s<br />

in the trenches during WW1. This he achieved by<br />

the additi<strong>on</strong> of a thick, wool, detachable lining for<br />

winter warmth (and impromptu sleeping bag!), a<br />

gun flap to prevent rain seeping inside, shoulder<br />

straps for the attachment of rank insignia and<br />

D rings <strong>on</strong> the belt which enable map cases and<br />

swords to be carried securely. These "trench coats"<br />

were an opti<strong>on</strong>al item of dress for British Army<br />

Officers <strong>on</strong>ly. They were not supplied as standard<br />

kit, but had to be purchased privately. Other ranks<br />

were not permitted to wear the trench coat. As a<br />

result it quickly became a coveted item of clothing.<br />

The distinctive Burberry Check lining was added<br />

in 1920.<br />

During WW11, British Officers c<strong>on</strong>tinued to wear<br />

their Trench Coats in bad weather. Civilians began<br />

to notice this useful and stylish coat and it became a<br />

popular choice for many people including film stars.<br />

which brought the brand further into the public<br />

eye. Humphrey Bogart wore <strong>on</strong>e in 'Casablanca',<br />

and Audrey Hepburn in 'Breakfast At Tiffany's' to<br />

name but two. Furthermore, two Royal Warrants<br />

were awarded to the company in 1955 and 1989 by<br />

HM The Queen Mother and HRH The Prince of<br />

Anticipated release late 2012<br />

Over the last year there has<br />

been a gathering media <strong>storm</strong><br />

regarding the potential release<br />

of the Samsung Galaxy Skin.<br />

Although the c<strong>on</strong>cept design is<br />

c<strong>on</strong>firmed to have been created<br />

by students using the Samsung<br />

trade mark for a greater<br />

commercial feel, some still<br />

project the release in the<br />

sec<strong>on</strong>d quarter of this year.<br />

To date Samsung have made no<br />

official statement regarding<br />

the product's existence.<br />

The reas<strong>on</strong> why the Galaxy Skin<br />

is such a hot topic is the<br />

speculati<strong>on</strong> as to what this new<br />

technology might introduce.<br />

In early 2010 Samsung<br />

dem<strong>on</strong>strated flexible AMOLED<br />

screens which were not <strong>on</strong>ly<br />

0.3mm thick but also bendable,<br />

two notable articles in the<br />

Telegraph newspaper and the<br />

Internati<strong>on</strong>al Business Times<br />

suggesting Samsung had the<br />

manufacturing capabilities<br />

and hinted at an early 2012<br />

release.<br />

CONCEPT<br />

There is no doubt the existence<br />

of AMOLED technology is very<br />

real, however the integrati<strong>on</strong><br />

of it <strong>with</strong> smartph<strong>on</strong>e<br />

functi<strong>on</strong>ality is generally<br />

c<strong>on</strong>sidered to still be some<br />

time away. Due to this, any<br />

release prior to the end of<br />

2012 is extremely unlikely.<br />

is finally produced it will<br />

revoluti<strong>on</strong>ise the mobile ph<strong>on</strong>e<br />

Method<br />

Seas<strong>on</strong> the chicken pieces and dust in flour. Pan<br />

fry until golden <strong>on</strong> each side. Remove from the<br />

pan.<br />

Add the vegetables to the pan and colour. Deglaze<br />

the pan <strong>with</strong> the red wine and stock. Add the<br />

herbs and the chicken.<br />

Add the water and cook in the oven at 180°c for<br />

30 minutes.<br />

Remove the chicken, pass the sauce through a<br />

sieve and reduce by a third. Sweat off pancetta<br />

lard<strong>on</strong>s in a pan, then the mushrooms and silver<br />

skins. Add the chicken pieces to the pan, then<br />

the sauce and reheat, finish <strong>with</strong> chopped<br />

tarrag<strong>on</strong>, parsley and serve <strong>with</strong> spätzle fried<br />

in a little oil and butter till it puffs up like<br />

popcr<strong>on</strong>.<br />

Coq au Vin is a real winter warmer, slowly braised<br />

chicken in a rich red wine sauce, it's perfect for those<br />

cold winter evenings. I source my chickens from a<br />

small farm in Strathaven called St Brides located in<br />

the heart of the Lanarkshire countryside. I have known<br />

the farmer there for years and I know that I always<br />

get the best quality as he <strong>on</strong>ly breeds slow growing<br />

full flavoured breeds which means they live happier<br />

lives resulting in a far superior product. I believe it<br />

is important to ensure you get a full flavoured dish,<br />

whether roasting or braising. I would recommend a<br />

nice glass of Château Les T<strong>on</strong>nelles to compliment<br />

this dish.<br />

Spätzle<br />

250 g Flour<br />

5-6 ea Eggs<br />

method<br />

· Sieve the flour <strong>with</strong> the seas<strong>on</strong>ing.<br />

· Mix the eggs <strong>with</strong> the crème fraîche and add<br />

to the flour. Combine together.<br />

· Pass through a colander into a pan of<br />

boiling salted water(rolling boil)<br />

· Remove <strong>with</strong> a spider or pass and drain.<br />

· Pan fry in a little oil and butter for<br />

service. Seas<strong>on</strong>.<br />

Burgundy: the taste of the land<br />

The heart of Burgundy, the Côte d’Or, is a broadly<br />

east facing escarpment <str<strong>on</strong>g>where</str<strong>on</strong>g> some of the<br />

world’s greatest wines are made from Pinot Noir and<br />

Chard<strong>on</strong>nay grape varieties.<br />

This is a regi<strong>on</strong> dominated by small, family owned<br />

domaines, <strong>with</strong> the winery and cellars comm<strong>on</strong>ly a<br />

part of the house. Total vineyard holdings are typically<br />

5-20 hectares in size. This c<strong>on</strong>trasts <strong>with</strong> Bordeaux<br />

<str<strong>on</strong>g>where</str<strong>on</strong>g> the great châteaux have estates 80-100ha in size.<br />

In Burgundy, it is the land itself which have a quality<br />

classificati<strong>on</strong> and hierarchy (Bourgogne, Village,<br />

Premier Cru, Grand Cru). A wine map reveals a mosaic<br />

of hundreds of small plots, all named and assigned a<br />

quality designati<strong>on</strong>.<br />

Although there are <strong>on</strong>ly two grape varieties, a vigner<strong>on</strong><br />

may make many different wines, all from different<br />

named vineyards, and all vinified, bottled and sold<br />

separately. Domaine Michel Gros has a total of 6.48<br />

hectares divided am<strong>on</strong>gst eight vineyards: 0.20ha<br />

in Clos de Vougeot Grand Cru, 0.63ha in Vosne-<br />

Romanée 1er Cru ‘Aux Brûlées’ and so <strong>on</strong>. Vineyard<br />

holdings are so fragmented that the decimal places are<br />

quite significant!<br />

The Lay & Wheeler buying & sales team travelled<br />

to Burgundy in November to taste the 2010 vintage<br />

from the barrel. The days are filled <strong>with</strong> individual<br />

appointments <strong>with</strong> growers and domaines. A pipette<br />

is used to draw each wine directly from barrel before a<br />

small amount is released into each glass for tasting and<br />

assessment. We move around the cellar from barrel to<br />

barrel, tasting a different wine from each tiny plot of<br />

vineyard. The wines are subtle and nuanced in their<br />

differences, yet certainly discernable; the influence and<br />

taste of the land. Tasting eighty to <strong>on</strong>e-hundred wines<br />

per day dictates that the wines are spat out, although it’s<br />

just wr<strong>on</strong>g not to enjoy the very finest wines.<br />

Domaine Humbert Frères produced just 600 bottles<br />

(two 225 litre barrels) of his 2010 vintage Estournelles<br />

St-Jacques 1er Cru in Gevrey-Chambertin, a small<br />

volume to divide am<strong>on</strong>gst his customers – wine<br />

merchants and restaurants both in France and for<br />

export. Allocati<strong>on</strong>s of Burgundy’s finest wines are<br />

precious, highly sought-after and jealously guarded.<br />

This is about relati<strong>on</strong>ships as much as about the wine<br />

itself.<br />

C<strong>on</strong>versati<strong>on</strong> naturally turns to the quality of the<br />

vintage. 2010 is an excellent year. The reds have a<br />

c<strong>on</strong>centrati<strong>on</strong>, precisi<strong>on</strong>, silky texture and tremendous<br />

clarity of fruit. The whites combine weight and richness<br />

al<strong>on</strong>gside bright, fresh and pure fruit. When we’re asked<br />

about the state of the UK fine wine market our resp<strong>on</strong>se<br />

is always “so-so” in order not to encourage them to raise<br />

their prices!<br />

L&W, al<strong>on</strong>g <strong>with</strong> the British wine trade, traditi<strong>on</strong>ally<br />

offers Burgundy for sale in January each year, enprimeur.<br />

The wines are sold by the case whilst the wine<br />

is still in the barrel in Burgundy, before being shipped<br />

the following autumn. This is the <strong>on</strong>e opportunity<br />

to buy these vinous gems, for the finest wines from<br />

Burgundy are rarely seen again.<br />

The best thing after a l<strong>on</strong>g day’s tasting? A crisp<br />

refreshing lager! Followed by a four-course dinner and<br />

wine for drinking, not tasting.<br />

New Zealand. I absolutely adore New Zealand.<br />

First and foremost my wife’s a Kiwi, which may<br />

explain some of my enthusiasm for the place but what<br />

else draws to this strange land, tucked away <strong>on</strong> the far<br />

side of the world?<br />

Well, it’s <strong>on</strong>e of the most spectacular, diverse places <strong>on</strong><br />

<strong>earth</strong>, boasting majestic mountain ranges, l<strong>on</strong>g sandy<br />

beaches and ancient forests, positively crammed full<br />

of gnarly old trees. New Zealand has this and more<br />

(including, I should add, many fine towns & cities).<br />

Even flying to the South Island from Australia is a treat,<br />

especially as you cross the snowy peaks of the Southern<br />

Alps (and I challenge any<strong>on</strong>e who sees this not to adopt<br />

their deepest, Christopher Lee-style voice, and utter the<br />

dreaded name “Mordor...”).<br />

So as a landscape photographer, the occasi<strong>on</strong>al<br />

extended visit to the Land of the L<strong>on</strong>g White Cloud<br />

isn’t a particular hardship. As a c<strong>on</strong>tributor to<br />

iStockphoto, <strong>on</strong>e of the world’s largest photographic<br />

libraries, these trips present me <strong>with</strong> that most valuable<br />

thing, the opportunity to shoot something spectacular!<br />

On the most recent trip, after a few days <strong>on</strong> the family<br />

farm outside Christchurch, I’m a man <strong>on</strong> a missi<strong>on</strong>. I<br />

have four or five days to myself in this ast<strong>on</strong>ishing land,<br />

I have two fine cameras (a Can<strong>on</strong> EOS 5D MkII and<br />

a Fujifilm X100) and good lenses (including my two<br />

favourites, a Zeiss Distag<strong>on</strong> 21mm wide-angle and a<br />

Can<strong>on</strong> 28-70mm f/2.8 L). I have sufficient memory<br />

cards and a solid, though somewhat unexciting,<br />

twenty year old Nissan Bluebird at my disposal. I have<br />

christened her 'The Wheels of Steel' and over the next<br />

few days (and thousand-plus kilometers) she performs<br />

faultlessly. All I need now is a destinati<strong>on</strong>, something to<br />

focus <strong>on</strong>.<br />

On this occasi<strong>on</strong> I’ve chosen Milford Sound, a<br />

spectacular fjord <strong>on</strong> the south-western side of the South<br />

Island. My first visit was over ten years ago and I was<br />

captivated by its towering peaks (including the famous<br />

Mitre Peak) and cascading waterfalls, all bathed, as they<br />

were at the time, in glorious sunshine. From the farm,<br />

it’s a l<strong>on</strong>g drive to the Fiordland Nati<strong>on</strong>al Park. Taking<br />

into account my rather sedate driving style and the car's<br />

equally sedate performance it's a good day and a half.<br />

Despite all this, golden memories of my previous visit<br />

spur me <strong>on</strong> and, more importantly, the weather forecast<br />

is quite encouraging.<br />

However, as I approach the Nati<strong>on</strong>al Park, the peaks<br />

are shrouded in dark, leaden clouds. I sweep al<strong>on</strong>g wide<br />

glacial valleys and ancient memories of past geography<br />

less<strong>on</strong>s flood back (is that a fine example of Roche<br />

mout<strong>on</strong>nee perchance?). So<strong>on</strong> enough the road starts to<br />

climb up into the clouds, up into the peaks and the rain.<br />

Peering through the rain-streaked windscreen I realise<br />

that the weatherman was lying and I’m unlikely to get<br />

the shot I’d imagined. Time to adapt.<br />

Eventually I make it down to the Sound itself and<br />

through swirling cloud I catch glimpses of the scenery<br />

bey<strong>on</strong>d. Both elated and frustrated, I leave the warmth<br />

of the car and follow a trail to the water’s edge, eager<br />

to find the perfect vantage point for my shot. After<br />

an hour or two I decide up<strong>on</strong> a spot that ticks many<br />

compositi<strong>on</strong>al boxes, the waiting game commences! Is<br />

the weather going to play nice? Is the rain ever going to<br />

stop and will the sand flies ever tire of biting me?<br />

No would be the answer to all that.<br />

The next day, I'm up before dawn for more of the same.<br />

Blithely ignoring recent inaccuracies, the weather<br />

forecast suggests it’s going to c<strong>on</strong>tinue <strong>with</strong> the cloud/<br />

rain combo for the next few days and today I believe<br />

them. However, I’m here to take photos so I press <strong>on</strong>.<br />

If anything, today’s weather is worse, though<br />

perversely that may be to my benefit. For a landscape<br />

photographer there is nothing worse than flat grey<br />

skies. All you’re going to get, in my mind at least, are<br />

the equivalent of bad holiday snaps and that’s not what<br />

I’m here for. Today there are some dramatic clouds<br />

overhead, some light, some dark and the hint of a<br />

sunbeam breaking through... we might be in business!<br />

So, m<strong>on</strong>ths later, am I happy <strong>with</strong> the shot we have<br />

here? The shot I wanted had blues skies, green<br />

mountains and a sense of serenity. I realised pretty<br />

quickly this wasn't going to happen, so you have to<br />

adapt and shoot <strong>with</strong> what you’ve got. So, am I happy?<br />

Yes. Will I go back for the image I wanted? Of that you<br />

can be certain.<br />

The Divisi<strong>on</strong> Bell - Pink Floyd<br />

" Divisi<strong>on</strong> Bell is a pair of large head sculptures like Easter Island heads loosely based <strong>on</strong> an illusi<strong>on</strong> more<br />

normally rendered in black and white line and called the candlestick illusi<strong>on</strong>, but in our case brought<br />

more vividly to life by 22 ft high profile heads standing like sentinels in a field in Streatham near Ely. It<br />

was suggested by the band to incorporate Ely Cathedral, an imposing landmark in the fens of East Anglia<br />

near Cambridge <str<strong>on</strong>g>where</str<strong>on</strong>g> the band are from. The photograph is taken in winter when c<strong>on</strong>diti<strong>on</strong>s are very<br />

variable so we took loads of pictures most of which looked pretty good to us. Do you see <strong>on</strong>e face fr<strong>on</strong>t <strong>on</strong><br />

or two in profile? The subject was communicati<strong>on</strong> or the lack of it....according to the Floyd.<br />
