Rather than bash this rather strange run of weather 

we’ve all been experiencing (I wonder when I will stop 

being surprised by this!), we’ve chosen to embrace 

the changing seasons with a supplement that focuses on 

the cosier things in life and gives us something warm and 

indulgent to look forward to. Rebecca Cuffe has compiled 

an edit of the most inviting winter interiors with a host of 

ideas to prep your home for the final months of 2021. 

Photographer David Merewether and the shoot team have 

been out and about photographing two gorgeous interiors – the 

first, a Beverly Hills-esque Georgian home has been given a 

new lease of life by Ciel Interior Design’s Clare Langham; the 

second, a sizeable period property surrounded by a pictureperfect 

garden of striped lawns and beautiful topiary.

JP: Hi Ben, thanks for talking to us today. Tell us about your business… 

BD: I founded the record shop in 1993! We’ve got 1000s of records, CDs, 

and books. We’re the second oldest shop on the street, after the camera 

shop where my dad used to work! We’re the place to go in Guildford if 

you’ve got a blossoming record collection or want to start one. 

Over the last few years, we’ve seen a real retro revival with lots of young 

people coming into the shop to buy records – people still love a 12”. 

The redevelopment of the Tunsgate Quarter has been great for us. With all 

the new high-end restaurants opening, the area has become a real hub for 

small businesses and developed a great community feel – It’s Guildford’s 

market square! 

JP: As the founder of Guildford Past and Present Facebook Page can you tell us 

a local history fact about Guildford? 

BD: There are so many! But here is a good ‘did you know…’ 

The town’s name comes from the Saxon for ‘Golden Ford’ and describes 

the river that flows through the town. It remains a massive draw to people 

even now. 

JP: The Home Club is a lettings agency that specialises in letting quality 

properties in Guildford - What makes Guildford such a great place to live? 

BD: It’s the perfect mix of town and country. We’re sandwiched in the 

middle of the North Downs and the Surrey Hills so getting out into 

the countryside is easy but we’re still only a short train ride into central 

London, and the town itself has plenty going on. 

The town has retained its old buildings, like the castle and the intricate 

town clock you can see from the High Street. Alongside the newer 

developments it makes for a modern thriving town that’s kept its authentic 

character. It’s really evident here in the Tunsgate Quarter – one side you 

have new buildings like The Ivy and on the other are more historic sites 

like the Tunsgate Arch. 

And all the great independent businesses like mine help to give Guildford 

its unique character and sense of community. 

JP: Finally, if you had to describe Guildford as a record, what would it be? 

BD: It’s too hard to pick just one! I think it’s got to be between “If I Were 

a Rich Man” by Topei and “Rent” by the Pet Shop Boys…there’s a theme, 

can you tell?! Basically, Guildford is for everyone from the more affluent 

properties to student digs but everyone’s welcome.

to add a new social kitchen, with dining and sitting areas. A 

velvet banquette and dining table back onto a marble-clad 

peninsula unit which houses the prep and cooking area 

It was the pool that did it. Out there on the pristine white 

non-slip flagstones, with the groovy all-weather sofa and 

armchairs, the dining area and the pool house, within 

the context of a large, beautifully landscaped garden, I could 

finally place the context where I had last been in a house with 

this very specific atmosphere: Beverly Hills, Los Angeles. 

It’s a very discreet kind of luxury, with everything of the best quality, 

that quietly tells you that the owners of the residence know how to live 

– in this case, with expert help from interior designer Claire Langham. 

But while it was the pool that made the penny 

finally drop for me, the special nature of the house 

hits you the moment you cross the threshold. 

From the outside, off a leafy lane, it is a classic red brick 

Georgian house, with bay windows added to the frontage by 

the Victorian gentleman farmer who owned it in that era. 

The elegant original porched front door is still in place, but you 

enter via a large contemporary wood and glass door, round the 

side, where it can’t be seen to clash with the period frontage. 

This door opens directly onto a bold modern artwork and your eye 

is then drawn along a corridor floored with oversized smoked, oiled 

and lime-washed herringbone oak parquet, subtly-lit by subdued

was once a stable block via a stunning glass 

corridor of black slimline frame windows 

wall lights. To the far left and to the right are two rows 

of exquisite full-length pale grey cupboard doors. 

The ones to the left are finished with a geometric 

brass trim and in front of the four doors to the 

right – which enclose cupboards to house the 

outdoor wear and other daily bits and bobs of 

the homeowners and their two daughters – is a 

glorious midnight blue velvet banquette. A very 

classy spot to sit and take your trainers off. 

Then you go into the downstairs loo… although 

‘guest cloakroom’ does seem a more appropriate term 

for this chicest of lavvies. The glamorous Art Deco feel 

of the hall intensifies here, with a black marble, brass 

and fluted glass sink unit of astonishing loveliness – by 

Oasis from West One Bathrooms – fitted against a 

black marble wall, with a matching fluted glass mirror. 

Even the towels in here are perfect, in black 

and gold geometric patterns by the Biba label 

(currently marketed by House of Fraser), which 

is appropriate because this is definitely the most 

luxe Art Deco interior I’ve been in since visiting 

that famous shop as a child in the 1970s.

“I love Art Deco,” says Claire, leading 

me back to the corridor, where there 

is an enticing curtain – in the same 

midnight blue velvet as the banquette 

– tied back with a satin cord loop, 

creating a very Gaumont feeling. Which 

is appropriate, as it does indeed lead 

to the lower ground cinema room. 

But rather than heading down there, we 

take a left turn into the vaulted extension, 

which was added to the house as part of 

the makeover, to create a lofty space for a 

new social kitchen, with dining and sitting 

areas – although ‘kitchen’ really seems far 

too mundane for such a glamorous space. 

We pause at the marble-topped table – 

from Lime Modern Living in Tunbridge 

Wells – with another blue velvet banquette 

to one side, which is a relief, because there 

is so much fabulousness to take in, starting 

with Claire’s business Ciel Interior Design, 

which has been going for eight years. 

“I’ve always been interested in houses,” 

says Claire, “and I got quite a lot of

experience from doing up and selling on our own places, with 

my husband, then I studied online to do an official course 

to learn the technical stuff. After I’d finished the course, a 

friend of a friend was looking for a designer and I grabbed 

the opportunity. It was a great client, and from that I went 

on to do a house in Yorkshire, one in Spain and then a 

whole wedding. From there it has spread by word of mouth 

from client to client, I’m not a big Instagram person.” 

Claire’s starting points with new projects are always the 

client and respecting the era of the house, but with this 

one there were basics to fix first. It was in a poor state of 

repair and the electrics and plumbing needed to be sorted 

before anything as fun as paint colours could be got to. 

There was also the serious structural work of adding 

the extension, which now links on to what was a 

stable block – converted to house a gym, a state-ofthe-art 

bike store and a spacious first-floor office – via 

a glass corridor of black slimline frame windows, 

with views both ways out to the glorious garden. 

But even with the practical stuff, it is always a

combined effort for Claire. “A home is a reflection of 

your personality, not imposing what I want,’” she says. 

“It’s a journey the client and I take together and I involve 

them all the way. I use Pinterest, asking them to show 

me what they like, then I have to understand what it 

is they like about the pictures that they choose.” 

It’s a process, and they have to learn to trust their own 

taste. As we go along, they get more confidence, which 

is lovely to see. I always say, start with one thing that 

you love and the rest of the scheme will follow.” 

In this house, once the structural work was done, a 

mutual appreciation of Art Deco was the starting point 

for the décor, creating a kitchen which makes the thought 

of rustling up supper seem like a whole lot of fun.

The prep and cooking area, with an induction hob 

and the sink, is on a marble-clad peninsula unit (a 

kitchen island connected to the wall on one side), that 

the velvet banquette by the dining table backs onto. 

Behind the cooking peninsula is a wall of cupboard doors 

matching the ones in the hall, with the elegant deco brass 

trim. When closed, these doors hide all the kitchen gear, apart 

from the oven. When the two on the right are open, it reveals 

glass shelves for glasses, cups and coffee machine, creating a 

bar/coffee area, that would not look out of place in the Savoy. 

The shelves sit against an antiqued mirror – which 

reflects the glorious garden view from the far side of the 

space, which is a glass wall looking onto the outdoor 

sitting area. “The idea was to be able to close the whole 

kitchen away,” says Claire, “but it looks so nice with those 

doors open, the client tends to leave them like that.” 

Behind the closed door at the other end of this wall is 

a very nifty set up – a back kitchen, with a pantry, two 

more ovens and loads of storage for all the stuff you only 

use sometimes. This is an ingenious solution to keeping 

the main ‘social’ kitchen looking so sleek and elegant, 

with just enough storage for what you need day to day. 

All this beautiful cabinetry was made to Claire’s 

specifications by Chamber Furniture. “They are real 

craftsmen. It took five weeks to make it all and then a 

week for them to put it in. This is the client’s forever 

house, so it was well worth doing it to this level.”

furniture and the sleekest fittings 

The same company made the wall of 

cupboards in the amazing master bathroom, on 

the first floor, one of the details – no shampoo 

bottle and other beauty product detritus – which 

makes this the most fabulous bathroom I have 

ever been in. “This room was a bedroom,” 

says Claire, “but the client is a dedicated bath 

person, so we decided to sacrifice the bedroom 

so she could have her dream bathroom – 

calm and serene, looking out onto the front 

garden with its original stone fountain.” 

With the large Georgian window and the 

original fireplace and mantelpiece still in place, 

the room retains an airy bedroom feeling, so 

different from a cramped, extractor fan bathroom. 

The standout feature is the oversized, 

stand-alone, squared-off matt bath (from 

West One Bathrooms, as are all the 

fittings) which sits in the centre of the large 

space looking towards the window. 

Finished with a separate brass standpipe tap, 

with an elegant pedestal table for necessary 

items to the side (and this is definitely a bath 

to take a glass of wine, or a cup of tea to…), 

it is both ultra classic and contemporary, 

with the latter emphasised by the shiny 

marble-effect oversized porcelain floor tiles, 

also used on the walls of the large shower. 

Across the landing is the master bedroom 

– with the same calm and cocooning 

atmosphere as the bathroom, with the 

same view over the tinkling fountain

This page: Wrapping around the house, the layout 

of the garden allows for multiple areas for relaxation, 

screened by foliage and careful planting schemes 

– and at the back of the house two more bedrooms, 

with another refreshingly different bathroom. 

This one, between the bedroom of one of the client’s 

daughters and a guest room, has an egg-shaped matt bath, 

its pleasing curve reflected in the shape of the sink unit. 

As elsewhere in the house, all the water fittings – and a 

lovely arabesque mirror over the basin – are brass, adding 

a warm richness to the white and grey colour scheme. 

Back down the elegant staircase to the original hall – 

papered with Farrow & Ball – and front door, we head 

right into the sitting room. This is an unusually deep room, 

made gloriously light by a generous spread of windows at 

the end and to the side, the space anchored by cupboards 

and bookshelves along the back wall. “Those were already 

there,” said Claire, who made them part of the scheme 

by painting them the same Farrow & Ball Skimming 

Stone and changing the knobs on the cupboard doors. 

This room is a good example of one thing being the 

starting point for the scheme. “The client bought the 

painting over the fireplace when they lived in Abu Dhabi 

and has kept it ever since. It’s a favourite piece, so I used 

that to set the colours for the room, echoing the rich blues 

in the rug and the two armchairs and the gold in the brass 

of the coffee tables, side tables and wall light sconces.”

recent lockdown times. “It’s a grand 

room, but the family use it every day. It 

started in lockdown when they would 

gather there to do jigsaws and watch 

TV together and that has become their 

daily routine, with everyone coming 

to this room at the end of the day.” 

So, while under Claire’s expert 

eye this classic Kent house has 

had a makeover worthy of Beverly 

Hills, for all its glamour, at heart 

it is still that greatest domestic 

achievement: a happy family home.

through a custom Cinema Room created specially 

for a family home in Wandsworth 

First, can you tell us a little 

about the background of 

this project? “The cinema 

space was a key focus for the 

client. As a young family, they 

wanted somewhere they could 

all hang out together, enjoying 

films and TV. It also had to 

work for sport, with friends 

being invited round to watch 

the rugby on a regular basis.” 

Did you encounter any 

challenges? “The main 

challenge in the project was the 

requirement to maximise the 

available floor space, a principle 

applied throughout the whole 

house. The tanked concrete walls 

of the basement room meant 

that, to maximise the floor 

space, it was necessary to specify 

equipment which didn’t require 

lots of depth in the walls.” 

The finished job: “We 

selected slim and efficient 

speakers which helped us keep 

wall build up to a minimum, 

maximising the floor space. 

The client’s interior designer 

specified a fabric for the walls which 

was not acoustically transparent. As 

a result, the speakers we specified for 

the surround sound channels had to 

be visible, fitted in the fabric rather 

than behind. We chose speakers 

with a soft fabric grille to blend with 

the wall treatment (pictured right). 

Finally, we coupled the amazing 

speaker system with a 4k capable 

Sony projector, coupled with a 

Screen Research projection screen. 

This combination produces a 

stunningly detailed, bright and 

colourful image completing 

what is a phenomenal family 

entertainment room.”

Can you run us through 

the project brief? “We were 

approached by this customer 

with the idea of converting 

an underutilised garage into 

a luxurious dedicated home 

cinema. During the design 

meetings at our experience 

centre and reviewing our 

catalogue of previous home 

cinema rooms, we come up 

with the floating wall concept 

with side shelving. Instead of 

boarding over the whole ceiling 

to hide the steels, we suggested 

leaving two large areas as 

high as possible and installing 

starlight ceiling panels.” 

What type of technology 

was used? “This room was 

based around two reclining 

home cinema seat and two 

matching loungers, with 

Dolby Atmos 7.1.4 processing 

via Anthem audio and video 

electronics and Artcoustic 

loudspeakers coloured match 

to blend into the room decor. 

Sources include a Kaleidescape 

4K movie server, Sky Q and 

UHD Blu-ray. Completing the 

picture is a 120” Screen Research 

acoustically transparent screen, 

and 4K Sony VPL projector.” 

What are the special 

features? “There’s more 

to this room than just the 

audio-visual equipment used, 

of course. Details such as the 

starlight ceiling, ‘floating’ front 

wall design and inlaid accent 

LED lighting give it an air of 

luxury, as does the Control4 

smart system that oversees 

every element of the cinema, 

including illumination and 

window blind. The client was 

impressed how a single button 

press can activate and shutdown 

the entire system and lighting.” 

How long did it take to 

complete? “As this was a 

complete room build from a 

garage to a habitable space the 

overall build element was 6 to 7 

weeks. Once the room was in a 

clean condition ready to accept 

the electronics, it was fitted and 

operational within a week and we 

could then complete the audio 

calibration specifically to the space. 

The handover of these systems 

is so much as fun, we love the 

moment our clients see and hear 

their system in full action.”

Eight years ago when Michelle and Ian were looking to 

relocate from Otham, near Maidstone, they had decided 

that they wanted a period property house and, as they 

were partly moving to get away from a noisy environment, to 

find some peace and quiet in the countryside. A property off a 

main road was something that was definitely not on Michelle’s 

list of ‘musts’ when they started their search for a dream home. 

It’s funny how once you fall in love with a place, the 

checklist is easily modified. “Every house has a compromise,” 

she says. “You never get everything you want. We did get 

rustic and original features, but I was worried about the road, 

although it is a long way off.” The house is actually a hundred 

metres from the road, with a wooded area flanking the drive, 

so any traffic noise is muffled and almost undetectable. 

It’s easy to see why they fell for this property, but there’s no 

hint from the first impression at what lies behind. Michelle 

leads us through the attractive brick and tiled porch. Inside, 

the ceilings are low, in keeping with many vernacular houses in 

the area, but the windows are of a good size and the rooms are 

flooded with natural light. There is also an orangery attached to 

the back of the house to maximise views of the garden. And, oh 

my, what a garden it is. Striped lawns and topiary flank the long 

path that runs down the centre of the garden to a yew hedge, 

its dark horizontal form broken gently by a well-spaced row of 

perfectly shaped hornbeam trees, merging the formal lines of the 

garden into the far reaching view of the countryside beyond. 

“Originally the garden drew my husband more than me,” says 

Michelle. Her views on the garden were a little different and she 

admits – understandably – to feeling slightly overwhelmed by it. 

Accompanied by Herbie the Cockerpoo, we walk down 

among the carefully clipped topiary, and divert to the left to view 

a Japanese garden. “The area was just grass, but we needed space 

for Ian’s bonsai’s,” explains Michelle. The grass was replaced 

with low maintenance grey gravel and the bonsai trees now sit 

resplendent on plinths near to eye level, where their miniature 

beauty can be fully appreciated. Impressively large koi carp 

swim nonchalantly in the raised pool and complete the look. 

Down through a wooden walkway framed by climbing 

roses and billowing Hydrangea ‘Annabelle’, we eventually 

reach the closely cut hedge – at what I assume is the end of

the garden. “There is a lot more,” Michelle smiles, leading us 

beyond the hedge into a new sports area so huge that it’s almost 

municipal, containing a tennis court, skate park and professional 

looking cricket nets, used by the couple’s teenage son. 

“This was once an enormous vegetable garden,” Michelle 

explains, pointing to a huge greenhouse and attached potting 

shed flanking the tennis court. “The allotment was a step 

too far. If I want vegetables, I just go to the farm shop,” she

laughs. The greenhouse is now the overwintering quarters 

for Ian’s impressive collection of bonsai trees and the potting 

shed has become a changing room and equipment store. 

Off to the side of the sports zone and hidden by 

trees, a small lake appears, complete with mini jetty 

and rowing boat. Adjacent to this on the other side of a 

gentle, shrub-shaded path, is a lawned area containing 

a giant chess set. It’s feeling a bit Alice in Wonderland 

now, as Michelle takes us into a woodland garden, past an 

adorable tree house built high into a tree trunk and then 

back up towards the drive and the front of the house. 

Back inside, Michelle explains the changes they have 

made and how she set about streamlining and simplifying 

the garden to make it more manageable. “There were huge 

herbaceous borders and lavender sprawling everywhere.” 

While this may be some people’s idea of heaven, it is not 

always the tidiest of looks. “I have to have plants that are 

very neat,” she continues. “That’s my personality.” The giant 

plant-filled borders were replaced with a calm and well 

behaved parterre and the lavender flanking the central path 

was swapped for an avenue of tightly clipped bay trees. 

This enormous garden takes a lot of upkeep and Michelle 

and Ian are assisted for half the week by father and son 

gardening team Nigel and Cameron Cheesman from Iden 

Green. “Nigel is a perfectionist, so that works with my head 

and makes my life easier.” Their efforts in the garden are

The eighteenth century house is actually

The previous owners also built onto the side 

of the house, usefully adding a cloakroom that 

can be accessed directly from the garden.

having to do any structural work. The kitchen was already in 

place and fortunately was to the couple’s taste, although they 

have recently installed a temperature controlled wine cabinet 

in the dining area of the kitchen, into the fireplace, in place 

of the existing wood burner (potentially just as warming). 

“Everything the previous owners did to the house was 

really well thought out and finished to a high standard,” 

says Michelle. “All the doors and floorboards are solid oak.” 

So thankfully there wasn’t too much to do inside at first, 

although they did update the bathrooms and completely 

redecorate. “The whole downstairs was painted bright yellow 

when we moved in,” she remembers. “I’m not really one 

for bold colour.” Now painted in neutrals and woodwork 

in soothing mid grey, the interior is calm and serene. 

Upstairs, the main bedrooms have windows that overlook 

the gardens. Decorative themes are subtle and understated and 

Michelle has kept to colour schemes of muted neutrals and greys. 

The couple’s son’s bedroom is particularly striking; here off-white 

teams with deep blue, and features a smart line up of cricket bats 

and Formula One racing posters. All over the house there are 

hints at the family’s interest in sports – motor sports in particular. 

The couple decided to replace the existing conservatory 

with a light and airy orangery, that brings light into the 

house and opens out onto a large patio with views across 

the garden to the countryside in the far beyond. “I very 

much like the garden to come into the house and for 

its features to be seen from inside,” says Michelle.

The garden’s layout, with paths and vistas gives clear 

sight lines and maximises the effect of focal points. 

Among traditional Lutyens benches and urns, there 

are contemporary sculptures chosen by Michelle. A 

huge metal ball made from bars of Corten steel looks 

particularly effective next to a new seating area they’ve 

installed. Here there are gabions (large metal cages filled 

with stones) as seating and a fire pit. “The big ball came

The house – and especially the garden – offer an ideal 

location for photo shoots. “The garden takes up so much of 

my time that it’s good to share it and to make it pay for its 

keep,” says Michelle. “We had a wedding shoot last week. It’s

interesting to do, and people like different parts. The mulberry 

tree is a lovely spot and has spring flowers that come up in a 

very natural and pretty way. The Snake’s Head Fritillaries are 

Ian’s favourite.” This area is near to the lake, which is fed by a 

winterbourne stream (a stream that often dries up in the summer 

months) that comes down from Benenden Girls’ school. 

Although there wasn’t too much structural work to do in the 

house, Michelle’s sincere philosophy is that you become a curator 

of sorts when you buy a property. “You never own a garden or a 

house,” she says. “Everyone must do something to preserve and 

improve their home.” The old Victorian glasshouse to the side of 

the house is a case in point. “It was in a terrible state and we had 

to decide whether to save it or to knock it down... We couldn’t 

knock it down. I have no right to do that,” she says. “So we got 

the Victorian Glasshouse Company to restore it, keeping all the 

old features. It was a huge job, but it’s an original Messenger 

Glasshouse.” This style of glasshouse was designed by the 

engineer Thomas Messenger and has become a standard design, 

much copied to this day. The project was quite an undertaking, 

but they have no regrets. The glasshouse is now home to a 

collection of antique gardening equipment and looks picture 

perfect next to the bothy within the walled garden. This enclosed

Lemony linguine with 

kale, walnuts & anchovy 

Prep time: 15 minutes Cooking 

time: 20 minutes Serves 4 

This is a light, but filling and nutritious 

pasta dish. Anchovy brings a subtle, 

salty umami taste (undetectable 

as anchovy), and underpins the 

flavours – but leave out if you want 

to make this a vegetarian option. 

• 400g dried linguine or spaghetti 

• 100g jar anchovy fillets in oil 

• 200g kale, shredded 

• 75g chopped walnuts 

• 1 red chilli, chopped 

• 4 garlic cloves, crushed/minced 

• grated zest and juice of a lemon 

• 150ml soured cream 

• 200g Parmesan (50g 

shaved, rest grated) 

1. Put water on to boil for the pasta, 

then while the linguine is cooking, 

gently fry the anchovy fillets (which 

will melt away into the pan), garlic 

and chilli for three minutes or so. 

2. Add in the kale (if using older leaves, 

you may want to steam them lightly 

first) and cook for a further 5 minutes. 

3. Add the other ingredients 

and mix thoroughly. 

4. Strain pasta once cooked 

and combine with sauce. Serve 

with shaved Parmesan.

Goats’ cheese, 

nectarine & 

Parma ham salad 

Preparation time: 20 

minutes Serves 4 as a 

starter, 2 as a light main 

Make the most of golden 

summer nectarines with 

this simple to prepare, but 

very flavoursome salad. 

The bitterness of rocket 

(a mustardy salad mix will 

work well too) contrasts 

with sweet fruit, salty 

ham and tart cheese. 

• 2 x 125g packs 

soft goats’ cheese 

• 4 ripe nectarines, 

de-stoned, halved and 

lightly brushed with oil 

• 120g rocket leaves 

• 4-5 spring onions, 

chopped 

• finely grated zest 

of 1 lemon 

• 80g prosciutto 

(Parma ham) 

• 40g toasted, 

flaked almonds 

For the dressing, combine: 

• 3 tbsp olive oil 

• 1 tbsp lemon juice 

• 1 tsp sugar or honey 

• salt and pepper to taste 

(you will have some left 

over with these quantities) 

1. Griddle the nectarine 

halves for approx 3 minutes 

until lightly charred 

on cut sides. Leave to 

cool, then slice each half 

into four segments. 

2. Roughly cut up the 

goats’ cheese and combine 

with nectarines, rocket and 

spring onion in a salad bowl. 

Add approximately half the 

dressing and toss together. 

3. Pile on the prosciutto 

and sprinkle with toasted 

almonds to serve.

Blackberry & hazelnut 

mini baked Alaskas 

Cooking time: 45 minutes Serves 4 

Hints of autumn suffuse this version of the classic ice-cream 

cake. I’ve made 4 mini Alaskas here, but the recipe should 

adapt to one larger (which might stay solid in the middle 

for longer). This is not difficult to make, but timing is of 

the essence to stop the ice-cream centres melting away. 

For the vanilla sponge base: 

• 100g self raising flour 

• 100g caster sugar 

• 100g softened butter 

• 2 eggs, beaten 

• 1 tsp vanilla essence 

For the blackberry coulis: 

• 150g (1 punnet) blackberries 

• 1 tbsp sugar (or to taste, 

depending on tartness of fruit) 

• 2 tsp cornflour (optional) 

For the hazelnut meringue: 

• 3 egg whites 

• 150g caster sugar 

• 30g ground hazelnuts 

• small tub of good 

quality vanilla ice-cream, 

but not soft scoop! 

1. Mix together the sponge base ingredients and beat lightly for a 

few minutes (or combine in stages if preferred – a lighter sponge 

will result from whipping the butter and sugar together before 

gradually adding the egg and then folding the flour in carefully). 

Spread into a 20cm square cake tin and bake for approximately 

20 minutes at 180˚C (350˚F/Gas 4) – exact timings will depend 

on your oven. Cool (cake can be made the day before). 

2. Combine blackberries and sugar in a pan and cook together on a 

low setting until the blackberries are a good consistency. If the coulis 

mixture is very juicy or thin, add a little cornflour to some water 

and carefully add this to the mixture a little at a time until the right 

consistency (runnier than jam, but not watery) is achieved. Cool. 

3. Cut sponge into 4 x 8cm rounds using a pastry cutter or 

rim of a glass, then remove a section in the middle (large 

enough for a dessert spoon of blackberry filling). Pile in 

the coulis and chill while you make the meringue. 

4. Whip egg whites to ‘soft peak’ stage (this is when they are 

stiff enough not to fall out of the bowl when tipped up, but 

not over-whipped…) then gradually add the sugar, whipping 

in between until the mixture is stiff and glossy – if you hurry 

this stage (as I often do), the meringue will go gloopy and not 

keep its shape. Carefully fold in the ground hazelnuts. 

5. You will need to be quick with this next bit (and ready to serve). 

Either pre-heat the oven to hot setting – 200˚C or Gas 7, or have 

a blow torch standing by. Remove filled bases from the fridge, 

place a small scoop of ice-cream on each, spread with a layer of 

meringue mixture and then either place in the pre-heated oven 

for 2-3 minutes until the meringue starts browning, or lightly 

scorch with the blow torch (practise first…). The idea is to cook 

the meringue, but keep the ice-cream solid. Serve immediately.

We can honestly thank our lucky stars to be 

living at a time when the word ‘menopause’ 

isn’t just something that’s mentioned gravely 

in hushed whispers. (If mentioned at all.) It used to be 

totally taboo – certainly, in my mother’s day. And until 

recently, the beauty industry has continued to regard 

it as such, ignoring the many beauty challenges faced 

by women going through menopause, and beyond. 

Ah, ‘beyond’. You might think that’s something I 

understood, working in beauty and wellness. But no. At a 

women’s literary festival at the end of July – Primadonna, in 

East Anglia (which I thoroughly recommend for 2022 for a 

weekend of fun, friendship and fab books), a mate asked if 

I’d like to join her at a menopause workshop. We both joked 

that menopause was a ship that had sailed long ago, but were 

nevertheless keen to hear Eleanor Mills speak; formerly a 

high-flying editorial dynamo at The Sunday Times, she’s since 

launched her own media platform, noon.org.uk, to empower 

women at midlife. We duly trotted along – and not only did 

my friend and I end up eating our words but in fact, our 

jaws were open, most of the workshop. Because officially, 

far from ending when hot flushes and night sweats do, 

menopause lasts the rest of our lives – and there’s much we 

can do to mitigate the impact of menopause on our health. (I 

thoroughly recommend bookmarking Noon’s resident medical 

expert, Dr. Nighat Arif, for her wisdom on the subject.) 

Officially, menopause has three stages: perimenopause, 

menopause and post-menopause (that ‘rest of your life’ 

bit). And whether you sail through it almost without 

noticing, or are a slave to hot flushes every five minutes, 

you’ll almost certainly find that menopause poses plenty 

of beauty challenges. The aforementioned rollercoaster 

body temperature drenches underarms and has us 

throwing off covers in the night. Often, perimenopausal 

women will find their skin breaks out, or develops dry 

or oily patches (which is linked to a drop in oestrogen 

levels or an increase in others, such as testosterone). 

At menopause, collagen production also slows down, 

meaning skin starts to sag. Dryness can be a problem, 

too, while natural hyaluronic acid and ceramides in 

the skin – which act a bit like cement, in the skin 

barrier – both start to drop, so skin becomes thinner. 

So: let’s look at those different challenges, what you 

can do about them – and at some of the products 

(from brands including Vichy, PRAI, VENeffect and 

even good old Avon), which are daring (YAY!) to 

tackle the problem loud and proud, even emblazoning 

the word ‘menopause’ across their packaging. 

Skin starting to lose its ‘bounce-back’ factor? 

Sagging, bagging and softening of facial contours is 

caused by plummeting collagen and elastin levels. One 

of the brands specifically setting out to tackle this is 

VENeffect – founded by sisters Rebecca Booth, M.D., an 

experienced gynaecologist and hormonal wellness expert, 

and her sister Cecil Booth, who’d worked for 30 years in 

the beauty industry – which offers age-defying skincare 

designed to ‘restore skin to peak hormonal vitality’. It’s 

definitely a range worth exploring for its radiance-boosting 

product line-up, with two particular favourites of mine 

being the wonderfully plumping VENeffect Anti-Ageing 

Intensive Moisturiser, £148 for 50ml, and the VENeffect 

Firming Neck & Décollete Crème, £124 for 60ml. 

More affordably, we have Vichy Neovadiol Rose 

Platinum duo, £59 for two x 50ml, a ‘matching’ night 

and day cream which specifically target menopause, 

offering rose-hued pigments to restore luminosity while 

boosting hydration and targeting pigmentation issues, 

and PRAI x M&S MenoGlow Collagen Boosting 

Cremegel Moisturiser, £25 for 50ml, which has the 

most wonderful skin-quenching texture. (I recommend 

you check out the whole PRAI x M&S MenoGlow 

range, actually – brilliant formulas, brilliant value.) 

Skin acting super-sensitive? A very common problem, 

because of skin-thinning. Avoid potentially sensitising 

ingredients like retinol, simplify your routine while you allow 

skin to settle down, and work to rebuild the complexion’s 


BOTOX FOR GRINDING 

& CLENCHING 

EASE TEETH GRINDING 

If you grind your teeth when you’re not eating, you may have a disorder called 

bruxism. Constant teeth grinding and clenching can cause your teeth to wear down 

over time. They can even become shorter and eventually break. Tooth grinding 

affects more than just your teeth, too – you may face discomfort and stiffness 

in the jaw, frequent headaches, migraines, insomnia, or even depression. 

What is BOTOX for grinding and clenching? 

BOTOX can help relieve the muscle soreness that comes with bruxism and 

can remove the pressure on the teeth due to grinding that can break teeth. 

It will also reprogram the brain and teaches it not to overuse the muscles. 

What does BOTOX for grinding 

and clenching involve? 

During a bruxism treatment, Dr. Eben Van Der Walt will thoroughly 

assess all the muscles involved, trigger points, and referred pain areas to 

ensure he injects the BOTOX correctly. Once he has a treatment plan, 

he will inject BOTOX into the muscles that are involved. The injection 

will impair the muscle and teach your brain not to misuse it. 

This weakening will only reduce the amount of overuse (hypertrophy) 

of the muscles, so you can still function, eat, and chew properly 

without breaking or chipping any of your teeth. It will take between 3 

days and 2 weeks for the effects to fully show, that’s why Dr. Eben Van 

Der Walt always begins with the minimum dose and will re-evaluate 

after two weeks to see if any of the muscles require more BOTOX 

Does BOTOX for grinding and clenching hurt? 

A very fine needle is used to inject the medication during this treatment so you don’t have to worry about any severe pain 

or discomfort. Most patients find it to be very tolerable, especially when a topical anaesthetic is used before the injection. 

Why BOTOX for grinding and clenching? 

BOTOX is usually prescribed as the ideal treatment and maintenance 

protocol for bruxism and might combine it with medications, mouth guards, 

stress management methods, physical therapy, chiropractic techniques, 

and other treatments for bruxism to fully combat the condition. 

What results will you see? 

While BOTOX is not a cure for bruxism, you may notice it can control its symptoms 

better than other treatments and it’s effective all the time. The results of this teeth 

grinding treatment will usually last for about a year, and in the following years.

Is your skin breaking out? Life really is unfair: many 

of us find we’re battling both blemishes and wrinkles, at 

the same time. Well, I almost hesitate to say it, but there 

are some lifestyle factors that can really help here, including 

limiting alcohol and caffeine, which can overtax the liver 

and lead to skin congestion. Make sure you’re getting plenty 

of omega-3 and omega-6 fatty acids (from oily fish), learn 

to love chia and flaxseeds and eat plenty of wholegrain, 

fibre-rich foods. Meanwhile, the Paula’s Choice Skincare

rebalance – and I like the fact you can try the products 

in dinkier sizes while you see if they suit your (recently 

changed) complexion. To target individual breakouts, I

Blowing hot (mostly) and cold? One of the least 

pleasant effects of menopause is the tendency to hot flushes. 

‘Is it hot in here – or is it me…?’ I think we mostly know 

the answer to that one. Personally, I recommend sleeping 

on a linen pillowcase at night, in a linen nightie – much 

cooler than cotton, and particularly heavenly when you flip 

your pillow over in the middle of the night. And for instant 

daytime cooling, reach for PRAI x M&S MenoGlow Hot 

Flush Cool Fix Serum, £28 for 60ml, or Avon Adapt Icy 

Cooling Elixir Facial Mist, £7 for 30ml, part of a threeproduct 

Avon range which targets perimenopausal and

Trouble sleeping? If drifting off is a problem, make 

generous use of a pillow spray – if not an arsenal of 

pillow sprays; many, many women find aromatherapy 

oils are incredibly effective for inducing sleep. Again, 

a few recommendations from the Beauty Bible Awards 

2021 here – because we had literally hundreds of women 

trialling these, declaring the following to be truly effective 

(so you needn’t just take my word for it!): The Universal

be in menopause forever). Meanwhile, my 

advice is to keep cool – and carry on…

Love running and want to improve your performance? 

In the second part of a special look at running, 

Sarah Maxwell explains how you can 

build speed and stamina 

Once upon a time I was a young 

athlete (sprinter/hurdler) 

pushing myself to the limit in 

an attempt to become elite. I was very 

lucky to have a brilliant and insightful 

coach who noticed that I was far more 

interested in helping other athletes 

and suggested I train as a coach. 

During four intense years of study 

I harnessed the expertise of Brendon 

Foster and many others and had the 

great privilege of working alongside 

one of the best conditioning coaches 

in the world, Steve Green (Steve is still 

my mentor 20+ years on!). So, this is 

a snapshot of what you need to do to 

power your way to being a speedy runner. 

Work on your form 

Working on your running form will 

enable your body to move more 

efficiently. As you will not be wasting 

energy, you will have more available 

to increase your pace more easily. 

Think about how you land as 

you run, your stride length and 

remember to relax your upper body. 

Play with speed 

Fartlek is a Swedish term that means 

‘Speed Play’. It is a form of interval or 

speed training that can be really effective 

in improving your speed and endurance. 

Fartlek running involves varying 

your pace throughout your run, 

alternating between fast segments 

and slow jogs. Beginners often enjoy 

Fartlek training because it involves 

speed work, and it is not as intense as 

traditional interval training. Regular 

Fartlek leads to faster speed due to 

improving your anaerobic threshold. 

If you like HIIT workouts and 

running, you will LOVE Fartlek running. 

Here is a good plan to get you started: 

• 10-minute steady run at an easy pace 

• 1 minute on (fast pace), 2 minutes 

off (easy), 2 minutes on, 1 minute off 

• Repeat this 4-5 times 

• 10-minute cool down run 

at a gentle, easy pace. 

Tempo runs 

Running at a slightly slower pace than 

you would usually can really help develop 

your anaerobic threshold, which is 

absolutely critical for running faster. 

Start running at an easy pace for 

10-15 minutes then continue with 

15-20 minutes of running at about 

10 seconds slower per mile than your 

10K pace then run at a much slower 

pace for 5-10 minutes to cool down. 

Your tempo run should feel hard 

but not so much that you are gasping 

for air. At the same time, if you can 

have a conversation whilst doing this 

you are not going hard enough! 

Hill training 

Running up a hill and jogging or 

walking down is a great way to 

improve your pace. I recommend 

you build a good endurance base 

before adding in hill training. 

Schedule in one hill running session 

per week. Warm up with 10-15 minutes 

of easy running. A moderate hill slope of 

around 100/200m in length is perfect for 

this type of training. Run up the hill with 

gusto and keep it consistent. Be careful 

to keep a check on your form, do not 

let that go to pot for the sake of speed. 

When you reach the top, walk down the 

hill to recover, then repeat 5-6 times. 

Add on 1 repeat each week or up to 

a maximum of 10. You can add in a 

tempo run to your hill work program 

to make your time more efficient. 

Remember! 

Running hard every day will not make 

you faster. Rest days are essential. 

You can still exercise but make it 

light and enjoyable, alternatively a 

sports massage, gentle walk or swim 

will do you the world of good. 

Finally... 

Running alone will not make you 

a great runner. Incorporate pilates, 

stretching, weight training and control 

dietary intake according to your running 

schedule. Good nutrition and hydration 

is essential, whatever your level!

mood but when designing supermarkets it is 

something retailers plan carefully. In fact every 

aisle, smell and product position is mapped 

out. Flowers by the entrance; visually pleasing. 

Confectionary near the checkout; turns waiting 

time into buying time. By looking at your 

surroundings you can either place hurdles in the 

way of bad habits or take them away to achieve 

better ones. For example, if you know you like to 

snack, swap the biscuit tin on the counter for a 

fruit bowl or a jar of nuts. If you’re trying to move 

more, lay your workout clothes next to your bed 

the night before or arrange to meet a friend for a 

walk at a specific time and place that inspires you 

so you’re motivated and accountable. If quality 

sleep is an issue, remove technology and clutter 

and create a dark and calming sleep environment.

Hardy annuals, as their name suggests, are tough, easy 

going plants that will survive the frosts, so they can 

be sown in the autumn to flower next summer and 

be stronger and earlier than those from spring sown seeds. 

An annual will only live for one year, it’s true, but what 

a year that will be. These are happy-go-lucky plants that 

live fast and die young – their main aim in life is to set 

seed for the next generation as soon as they can. Your 

main aim, by picking their flowers, is to prevent this 

happening. The more you pick, the more they flower, 

until one of you drops from exhaustion. Compare this to 

a long-lived herbaceous perennial humming along with 

Louis Armstrong, thinking it has all the time in the world. 

There’s no rush to do much if you aren’t under a deadline. 

Some perennials will obligingly flower again if they are 

deadheaded, but there are others – divas like peonies that 

you’ll wait all year for. Like Cinderella at the ball, they 

make their entrance, dazzle – and disappear back into rags. 

We love them, but they’ll never be reliable stalwarts in the 

cutting garden. If you have vases to fill, then annual plants 

may end up as the mainstay for your cutting garden. 

You don’t need a dedicated space in order to grow cut 

flowers, but I find it hard to decimate my flower borders, so 

will often use a corner of the veg patch. By the early autumn, 

many of the edible crops have been harvested, so there are 

spaces that can be allocated to either direct sown hardy 

annuals, or later on, transplants from those sown into pots. 

Choose varieties according to taste, but try to include 

a range of focal point flowers and then some smaller 

less showy filler plants that will blend with your 

colour palette. Well chosen foliage will bring structure 

and a supportive background for the flowers. 

How to grow 

Early autumn is the best time to sow hardy annuals. The 

soil is still warm, so you can sow them directly into the 

ground where they are to flower, or into a nursery bed to 

plant out later. They will germinate easily, grow into sturdy 

little plants and then wait out the winter at this stage. 

They’ll look as if they’ve stopped growing in the winter, but 

will be secretly busy developing strong roots in preparation 

for a surge of growth in the spring. When the weather 

warms up again they’ll be raring to go and so will rush into 

growth and flower earlier than spring sown plants. That’s 

the theory, but our winters can be hard on young plants, so 

you may want to sow some in containers and under cover, 

to protect them from pests and the vagaries of our weather. 

If you are growing them in pots to plant out, watch 

that you don’t overcrowd them, and that you are able 

(and have the space) to thin/prick them out and generally 

look after your new plants. It’s a good idea to sow half 

the packet in early autumn and the rest in the spring – 

that way you’ll extend the flowering season and have a 

contingency if something goes wrong over the winter. 

Some hardy annuals, despite their official status of 

hardiness, are not able to hang on through a very cold wet 

winter, either because of the weather, or because they get 

eaten by slugs (rabbits, caterpillars, or other ravening

beasties) and disappear before they get the chance to grow to 

flowering size. These are best sown under cover in the early 

spring to plant out. Sunflowers, Rudbeckia, Gypsophila and 

others may prefer a spring sowing. If in doubt, look on the 

back of the seed packet for sowing times. They are hardier 

than the half hardy plants – sort of three quarters hardy. 

Half hardy annuals (HHA) 

Half hardies need heat for germination and must stay under 

cover until the frosts have passed. These are not generally 

sown in the autumn, but given some bottom heat and 

protection from frosts will reliably pop up in the early 

spring and be ready to plant out into the garden when 

conditions warm up – usually by mid May, but check the 

forecasts before you plant them out and be prepared for a 

hardening off period – gradually accustoming your babies 

to life in the big outdoors, which can involve traipsing 

in and out with them for a while. I often sow Cosmos, 

Antirrhinum (snapdragons) and Nicotiana (tobacco plants) 

directly into the soil in mid April and let them take their 

chances (there’s only so much traipsing in and out we can 

do). Do grow them though. These are really useful annuals 

for cutting, and will flower their socks off until the frosts. 

Annuals tend to prefer sunny, free draining positions 

and most are summer flowering – many are derived from 

meadow plants and tend to be tough and opportunistic 

– and a little wild. Left to their own devices they will selfseed 

around the place – sometimes this is fantastic – truly 

‘plants for free’, but if they pop up in all the wrong areas, 

the novelty may well wear off. Judicious weeding, however, 

is easier and cheaper than buying trays of new plants. 

If you have been diligently dead-heading through the 

summer months, leave the last few flowers of the season 

to set seed and then either collect them when ripe and 

store them somewhere dry until you are ready to sow, or 

leave them to take their chances and do it themselves. 

I am completely obsessed by collecting seed and have 

oodles of little packets around the place. One thing 

I have learned over the years of discovering mystery 

envelopes – and sowing surprises, is that you must label 

them. A date is also useful, as stale seed is not as viable. 

Annuals are wonderfully cheerful plants that are useful for 

picking, and are also excellent fillers for new borders – and 

a cheap way of adding long-lasting colour to your garden. 

They will only live for one year, but their offspring could 

live on in your garden forever more. Let’s get sowing!

Two little granddaughters went home earlier in 

the week with, amongst other things, a plastic 

container full of seed heads that they had chased 

across the garden (let’s hope that they weren’t thistles) and 

a galvanised baby’s bath by then complete with a few shells, 

interesting pebbles and a pile of crabs’ claws that they had 

found on the beach. The baby’s bath is now going to be 

‘repurposed’ as a tiny wildlife pond. September is a perfect 

time of the year to plan projects like this but perhaps 

in their case they need to wait until the bath fills with 

rainwater and then it can be planted up in the spring. 

So, September brings shorter days, warm afternoons 

but cooler nights. The light in September always seems so 

intense to me and the jewel colours of dahlias and salvias, 

aconites and autumn flowering nerines are so beautiful. 

Things to do in September 

• Taking photos and notes of your borders. What 

didn’t work and which combinations did. 

• Keeping on top of weeding, but take out anything 

which is ‘ugly’ or diseased. It’s often difficult to actually 

get into your borders at this time of year without treading 

on things by mistake, but it is definitely worth having 

a go. And you might find that missing tennis ball... 

• Keep checking stakes and avoid earwig damage by popping 

upturned pots stuffed with paper or straw on canes nearby. 

Dahlias, if they are regularly dead-headed and fed with a 

liquid tomato fertiliser or something similar, will go on and 

on flowering until the first frosts. A few of ours which are still 

languishing in pots seem to be succumbing to some form of 

mosaic virus which results in mottling of the leaves. There 

is nothing for it but to dispense with the infected plant. 

It might be a good idea not to compost them as the virus 

could well persist causing all sorts of problems next season. 

It is a perfect time to take cuttings of salvias which are 

at their best this time of year. They strike so easily. I’m 

particularly keen on Salvia confertiflora with its spiky, velvety 

red flower spikes and red stems. A piece accidentally broken 

off last night should make a good plant for next year. Just 

snip below a leaf node, cut any large leaves in half so that 

the cutting doesn’t need to expend excess energy on them 

and then pop around the edge of a small pot of potting 

compost. I keep mine out of the sunlight outside until they 

take and then put them somewhere frost proof for the winter. 

Nerines need a thorough summer baking, so a sheltered 

sunny spot is a bit of a must. Ideally you would have 

tidied up their leaves last month. Oh, and they need to be 

planted at or above the soil surface. Amarines are worth 

trying as they are a cross between Amaryllis and Nerine 

‘taking the best from each parent’. Each bulb should 

produce up to ten flowers per stem and as they are larger 

flowers than the nerine, they’ll give you a good show. 

Talking of that, now is the time to get on with bulb 

ordering. If this summer is anything to go by, demand will 

be higher than usual. I grew Tulip ‘Apricot Parrot’ this year 

in my containers. What a beautiful plant this is. It seemed

to go on and on, its subtle colour changing as it matured. 

Rose hips are colouring up now. Good old R. rugosa 

makes such a good hedge and its hips are a treat. This 

year our moyesii hybrid, Rosa ‘Geranium’ has not only 

flowered well for the first time producing bright red 

single flowers but the flowers have been followed by 

elegant orange red hips. Sometimes roses take their 

time to get going but it is always worth the wait. 

Compost and composting 

If you have a small compost bin, now would be 

the time to take out any ‘ready’ compost from 

the base and put it to one side for adding to 

your borders or vegetable patch later on. 

If you are cutting long grass, and I think that most 

of us will be, add it to your compost heap damp as it 

will rot down faster. If your compost heap is near a 

water source/hose, dampen it as you add the layers. 

And if you have a wormery, think about 

getting it in to somewhere sheltered and 

frost free as the month progresses. 

Soil 

The quality of your soil is hugely important: adding 

a ‘low nutrient’ mulch of something like newly fallen 

leaves or leaf mould now is a good way of protecting 

any open ground. In the first part of the month you can 

still sow green manures such as grazing rye, winter vetch 

and Phacelia tanacetifolia – the latter being a premier 

nectar source for hoverflies and all manner of bees. 

Green manures also protect soil structure, prevent 

soil erosion and the leaching out of nutrients and 

essential minerals and importantly provide a green 

carpet for overwintering beneficial insects. 

According to the Bugs Matter project, there 

has been a 50% decline in the number of insects 

‘hitting car windscreens’ in Kent in the last 15 

years. We can help reverse this sobering statistic. 

Fewer insects inevitably means fewer birds.

that provide autumn interest 

are from the crataegus family. 

Crataegus persimilis ‘Prunifolia’ has 

showy fruit which colour up well later 

in the month. They need sunshine to 

become the dark red that is so typical 

of this plant and interestingly, if there 

are not many fruit in a particular season 

the leaves will colour up more than 

they would if the tree was laden with 

fruit. Another crataegus, C. laciniata 

from the Eastern Mediterranean is very 

decorative with deep cut grey leaves 

and soft orange haws in the autumn. 

It is not too late to prune plum/ 

greengage trees up until the middle 

of the month. If you prune after 

that, there is a good chance of 

introducing silver leaf to the 

plant. Take out dead, 

diseased and crossing 

wood. 

Herbs 

Cut back chives, 

sorrel and lovage now 

and they will reward you 

with new, fresh growth. Any 

other long season herbs can 

get the same treatment. It is also 

a good time to dry herbs and to 

collect seeds. Also to sow coriander, 

parsley and delicious rocket. 

And now out to the garden to give 

the hammock a cursory glance and to 

get on with some of these jobs. And 

don’t forget to order your daffodils! 

They need to be planted in September 

whilst the tulips can hang on until 

Christmas if needs be. If they are going 

into pots it may be that they are all 

still full so that works perfectly.

Hurst’s Show Jumping champions 

“After 18 months of patience, Hurst College’s equestrian team 

produced a winning performance to become National Inter Schools 

Show Jumping champions at the Royal Windsor Horse Show. 

Taking advantage of being drawn 17 th out of 20, each rider 

watched the other teams to determine how they could achieve 

the quickest times. Team coach and international show jumper 

Brian Cassidy, who walked the course, escorted each team member 

to the arena entrance and passed on last-minute instructions. 

It was an anxious wait while the final three teams 

jumped. Team Hurst had done enough to secure victory 

by four seconds, for the second time in three years. 

In addition, four members of the Hurst Equestrian team were 

selected for international, national and regional representation 

across multiple disciplines, this summer. One represented 

the Great Britain team at the FEI Dressage European Junior 

Championships; another two represented the England team 

at the Welsh and Scottish Home Pony events; and the fourth 

represented the South-East of England Regional U18 team

Keeping it Sustainable 

“At Vinehall we are embedding learning about sustainability

have recently appointed a School Horticulturist who will, alongside

How are you keeping children 

abreast with the latest technological 

developments? In terms of keeping 

up with the latest technological 

developments, our Digital Steering 

Group always has an eye on emerging 

opportunities and latest developments 

in educational technology. We have had 

1:1 devices in the school (iPads in Prep 

and Microsoft Surfaces in Senior) for 

a number of years and the confidence 

with which children use these devices is 

staggering – they are incredibly skilful 

and responsible users of technology. 

This has been vital to ensuring that 

even in the challenging context that we 

have all lived through over the last year, 

our pupils have not simply survived 

educationally but genuinely thrived and 

the school has been operating as close 

to business as usual, even when their 

physical classroom was the kitchen table. 

What type of emerging technologies 

are you currently focusing on in 

lessons? Our curriculum at the Prep 

School is broad and covers a range of 

technologies. We have a growing focus 

giving our children the opportunity 

to experience augmented reality (AR), 

not only in their computing lessons, 

but as a way of enriching the wider 

curriculum and providing learning 

opportunities that would simply 

be impossible without technology. 

For our youngest learners in Early 

Years, this might be colouring that 

comes to life in front of their eyes 

through Quiver, ranging to real-time 

exploration of human anatomy with 

AR t-shirts. We will be exploring the 

impact of using AR to redefine learning 

opportunities through our own small 

scale action research project this year 

including looking at how to integrate 

AR into classrooms and corridors of 

the school with interactive displays. 

Do pupils get to try their hand at 

robotics? Absolutely! We are very 

excited to have got our hands on a 

brand-new set of Sphero Bolt robots, 

which will allow our children to 

apply what they have learnt in their 

coding lessons and use it to control 

their very own robot to complete 

tasks and missions. We hope to 

be able to offer this opportunity 

to other schools in the local area 

through community initiatives. 

What proves most popular with your 

pupils? The use of Minecraft in lessons 

has proved hugely popular, particularly 

in Upper Prep. I was blown away when 

I got to see first-hand how they had 

used Minecraft to create their own 

working example of how pollination 

takes place, with the children acting 

as virtual bees in the environment 

that they had created collaboratively. 

It reiterated the huge potential for 

working together as a team to create 

something that they would not have 

achieved on their own. This ability to 

work collaboratively, perhaps without 

even being in the same room, is a 

21st century skill that I believe will 

become increasingly important given 

the changes to working life that we have 

witnessed globally over the last year. 

How can you help them to develop 

an interest in a particular new 

technology? I think that fostering 

the ability and confidence to work 

iteratively; making little tweaks 

when something doesn’t work, is 

key. However, I think that the most 

important factors in helping young 

people to develop an interest in 

anything, not just technology, is breadth 

of opportunity and time. Put simply, if 

you want a child to develop an interest 

in something, they have to have the 

opportunity and time to experience it. 

It greatly concerns me that at 

times we seem to have a very narrow 

perspective of what the formative years 

of education are all about as a nation. 

For me, it’s about nurturing happy 

and confident learners, broadening 

horizons and inspiring minds, and 

ensuring that every child moves on to 

secondary education with everything 

they need to be the best that they can 

be as they become young adults. Time 

to explore, create and truly challenge 

children rather than a race to arbitrary 

milestones needs to be prioritised. 

We need to seriously ask ourselves 

what skills, knowledge, understanding 

and (perhaps most importantly) 

values we want the next generation 

of citizens to have. Technology will 

have a big role to play in the world 

that our children will inherit, so my 

view is that the earlier they can use 

this technology with confidence, 

responsibility and most importantly 

balance (nothing replaces the joy of a 

good book or time outdoors) the better.

How are you keeping children abreast with the latest 

technological developments? At Reed’s we not only start 

computing lessons for pupils from Year 7 onwards, we also 

have a bespoke FutureTech programme. This involves a series 

of initiatives that inspire pupils to gain knowledge and skills 

in a variety of STEM areas and improves their technological 

literacy. There’s a whole curriculum based around these areas 

delivered in Year 9 that removes the barriers between subjects 

and encourages interest, skill development and creativity. 

What type of emerging technologies are you 

currently focusing on in lessons? In lessons we focus 

on and use many new and emerging technologies. For 

example, pupils learn about the wide variety of uses 

for artificial intelligence in computing, view organs 

using augmented reality in biology and travel the 

world with virtual reality headsets in geography. 

Do pupils get to try their hand at robotics? Yes, most 

definitely! There are Robotics Clubs as well as opportunities 

during lessons to programme Lego, Vex and Sphero 

robots. We are really eager for pupils to learn skills such 

as a problem solving, programming and teamwork 

and realise the thrill of coding through robotics. 

What proves most popular with your pupils? One of 

the most popular activities is FutureTech CSI. Pupils apply 

their knowledge from various subject disciplines and learn 

to use new technology, such as DNA fingerprinting and gel 

electrophoresis, to solve fictional crimes. They also enjoy 

learning about the importance of renewable energy and 

exploring environmentally friendly ways we can generate 

electricity such as by using magnets, building their own 

wind turbines, and generating electricity from plants. 

How can you help them to develop an interest in a 

particular new technology? We run a regular series of 

thought-provoking lectures by speakers from industry. Most 

recently these have covered topics such as autoimmune 

diseases and genetic modification, artificial intelligence. 

Pupils also hugely enjoyed a visit from a scientist who 

was part of Tim Peake’s space mission talking about the 

technology involved with getting people into space!

pupils who are following EPQ and 

the ISEB Project Qualification, a mini 

EPQ of sorts, which means the Year 8s 

each have to come up with and answer

Year 8s include ‘Can money buy you 

happiness?’ and ‘Is space exploration 

a waste of money?’ The research skills 

the children develop in completing 

this qualification puts the school

in both the Prep and Senior 

Schools at Hurstpierpoint. The 

Prep School library is housed within 

the heart of the Prep School and is 

regularly used for clubs, reading and 

group work. In the Senior School, 

we have a fabulous, stylish library on 

two floors that overlooks the Sussex 

countryside. It is very modern, with 

an abundance of glass and white 

furniture. People comment on how 

it resembles a university library – 

which is just what we were aiming 

for when the new library opened in 

2014. The first floor is the general 

library area for Senior School 

students and in addition to the usual 

books there are work areas equipped 

with computers, a breakfast bar 

area for those who bring their own 

laptops and a small café area with 

a range of refreshments, magazines, 

casual seating and a variety of DVDs. 

There is a choice of fully equipped 

meeting rooms, perfect for small 

group or individual revision or 

teaching work. The top floor is 

reserved solely for Sixth Form 

students and included in this area 

is a multi-function seminar room 

as well as a specialist Careers and 

Higher Education department 

holding information on university 

options, careers and gap years. 

The library is also the EPQ 

centre for Sixth Form students. 

The library is a mix of old and 

new technology. The most popular 

feature of our bookable rooms is a 

whiteboard: simple, yet versatile, it’s 

what most students use to revise for

People still like to borrow physical 

books, however, so we do have 

a large physical collection. 

The College is very lucky to have 

three full time library staff: one 

in the Prep school and two in the 

Senior School. The Senior School 

library staff are also responsible 

for EPQ, which ties in very well 

with their skillset. The Prep School 

Librarian is a reading champion 

and is always ready with a good 

book recommendation for all kinds 

of readers. Members of the Senior 

School Library organised the SSBA 

– Southern Schools Book Award 

– for the first time in 2020. There 

are also regular reading challenges 

– for example, an around the 

world challenge when pupils (and 

staff) select books to read and as 

they finish, their balloon is moved 

around the world; if they complete 

the challenge they win a prize. 

Students can use the library when 

they have a study period, at break 

and lunch times, after school and for 

prep. The library is also available if 

teachers want to bring students in 

for a lesson. The history department 

are big supporters of the library 

as the students use the books to 

complete their coursework. The 

student magazine, Oculus, is also 

run from the library. We conduct 

EPQ lessons on referencing and 

electronic sources and, of course, 

there is Crafternoon – where 

students complete crafts whilst 

listening to audio books. 

We always encourage students to 

borrow something for the holidays 

– at Christmas the Senior School 

library runs a Christmas reading 

treat promotion and have a book 

stand near the dining room to 

showcase what we have to offer. 

The Prep School Library runs 

a Summer reading challenge and 

loans (sometimes large piles) of 

books to pupils for the vacation.

to study in many of the holidays.

Get Involved! 

Parents of Parkside create a new Outdoor Classroom 

Parents of Parkside (PoP) is a 

PTA with a difference. They 

are an inclusive ‘Community’ 

of families connected to Parkside 

School, who have a variety of 

talents to bring to the table. They 

are wholeheartedly supported by 

the Head and Deputy Head of 

Parkside, who are both actively 

involved; along with teachers, 

suppliers, and extended members 

of Parkside families and friends. 

During a particularly challenging 

year, when few events could be 

hosted, PoP launched a number 

of creative and innovative ways 

to raise funds. Recognising the 

importance of supporting local 

community businesses, they 

partnered with them to provide 

events which could be held 

individually at home during 

lockdown. For example, PoP sold 

an outstanding £1700 worth of 

beautiful Valentines’ roses and raffle 

tickets where the winner enjoyed 

a romantic meal delivered to their 

door. Parents also forfeited their 

discount on school fees, offered 

during the pandemic, to raise 

further funds for the development 

of the Outdoor Classroom. 

It was not only the money raised 

which realised the completion 

of the Outdoor Classroom, but, 

more importantly, the generous 

contribution of people’s time and 

energy in building it. Having 

raised sufficient funds, PoP 

went about recruiting volunteers 

to help build the classroom; 

which largely consisted of family 

members, pupils, teachers and 

support staff from the school. 

The passion to create an outdoor 

multi-purpose classroom for pupils 

at Parkside is truly inspiring. 

Every pupil attending the school 

will benefit from this area, which 

provides them with a natural, 

organic space to learn. It offers 

space for everything from maths 

and coding to photography in 

the fresh air, where there is peace 

to focus on the importance and 

value of positivity, happiness 

and working together. 

Parkside’s Outdoor Classroom 

project has been shortlisted at the 

Independent School Parent Awards 

for best Fundraising Achievement 

2021, which is testament to the 

school’s strong family ethos. Values 

such as resilience, togetherness and 

determination are underpinned 

by the Head’s mantra of ‘Make 

it Happen’ – never more relevant 

and necessary than in the past

Head of Claremont Senior School, Ed Dickie, chats 

career progression, teaching, and the rewards of 

overcoming learning challenges with students 

What were you doing before you 

joined Claremont? Before I joined 

Claremont I spent 13 years at Bedes/ 

St. Bedes School in a variety of 

roles – starting as a labourer on 

their Facilities Team and ending up 

on the Senior Team as Senior Day 

Housemaster. In between I was a 

History & Politics Teacher, Head 

of Sixth Form and Housemaster. 

What are you looking forward 

to next year? Hopefully spending 

less time thinking about Covid 

protocols and more time helping 

students discover their personal 

pathways. I am particularly looking 

forward to teaching History at A 

Level again, having taught only 

Politics over the past few years. 

Tell us a little about your school 

days... Hmm. Perhaps less said 

about that the better! I happened 

across the Deputy Head from my 

old school a few years back. After 

overcoming his surprise at seeing me 

he exclaimed that ‘the poacher has 

turned gamekeeper!’. It’s fair to say 

that I was a reluctant student until 

my A Levels when I was inspired by 

two fantastic teachers who managed, 

somehow, to instill in a rogue 17-year 

-old a passion for Shakespeare and 

19th Century British Politics. My 

own experience at school, both 

the good and the bad, has guided me 

throughout my career in education. 

What was your favourite 

subject at school? Despite now 

being a History teacher it was 

probably English Literature. 

How do you hope to inspire the 

pupils at Claremont? I hope to inspire 

pupils by providing them with endless 

evidence of what is possible when you 

back yourself, work hard and take the 

opportunities that come your way. 

Seeing young people discover and 

develop their potential is why I teach. 

What’s been your proudest 

achievement? It is always difficult 

to pinpoint one particular moment. 

Seeing Claremont develop 

academically and pastorally has been 

hugely rewarding but, for me, the 

proudest moments in my career 

have always been seeing individuals 

‘come good’ when the odds were 

against it. This might manifest in all 

sorts of different ways – both inside 

and outside the classroom – but 

when it happens I know we have 

really made a lasting difference. 

If you could teach anyone from 

history, who would it be? A very good 

question! I am not sure that any of the 

many people I admire from history 

would have gained much from being 

taught by me! In terms of someone 

who I would have been most interested 

to teach when they were child I would 

lean towards a political figure such 

as Nelson Mandela or Adolf Hitler, 

each for very different reasons! 

What’s your favourite place to visit in 

the Weald? Again, very difficult! Born, 

and initially brought up, in Sussex 

I feel very much at home across 

the Weald. At the moment I am 

never happier than walking with my 

dogs through the fields and woods 

north of Battle, where I now live.

Slow, 

Grow, Eat 

Hairdresser-turned-shepherdess, Zoë Colville farms 

nearly 100 acres of land near Maidstone with her 

partner, Chris Woodhead. With prime focus on 

their animals’ wellbeing, together they rear cows, 

sheep, goats and pigs, eventually selling their meat 

through The Little Farm Fridge. This month, Zoe 

challenges her idealistic childhood view of pigs 

As a young girl I was obsessed with pigs. Pig mugs, 

watching Babe, Percy Pigs... you name it. So you 

can imagine my joy at the ripe old age of thirty 

when Chris said we were getting some pigs. We would rear 

them to eventually go through the shop. I was worried 

about getting too attached seeing as my childhood dreams 

were playing out, but I needn’t have worried. Firstly when 

I went to pet one it snapped at me literally like a crocodile 

in the wildlife programmes and, secondly, I watched one 

devour an apple from one of the trees and the pure strength 

in its jaw made me stand open mouthed for a good ten 

seconds after he had swallowed. From that moment I 

realised that the imaginary Pinterest board in my mind of 

becoming best pals and putting flower crowns on them 

and getting cute photos wasn’t realistic and I should give 

up that pipedream. I have now developed a new type 

respect for these powerful and intelligent creatures. 

What I have found incredible is how smart and surprisingly 

clean they are. For a start they pretty much only go to 

the loo in one designated place in the pen which, other 

than domesticated animals, I’ve never seen happen. 

Pigs’ eyes are very much like humans, too, even the 

iciest blue or grey, which when you get them back from 

the abattoir can be a little off putting. In actual fact 

we are extremely similar genetically to pigs in many 

ways – before plastic practice skin was developed, 

people used to learnt the art of tattooing on waste 

pig skin as it’s supposedly similar to humans. 

We shall take our pigs to the abattoir at around 70-80kg 

which I think you’ll agree is a fair size compared to the 

lambs who weigh about 40-45kg when they go. I hope 

this time we can try to make some pork scratchings 

because, well, we’re rather partial to a pork scratching! 

I’ve found it quite remarkable how many people ask us 

for more unusual cuts such as the trotters and also the 

cheeks – both of which I am yet to sample myself. 

I shall keep you updated on how our pigs are getting 

on with us and hopefully they get more fond of me as 

time goes on and maybe even pose for a photo for me. 

The Little Farm Fridge Recipe of the month 

How to cook it... The Little Farm 

Fridge Breakfast Brioche. 

• The Little Farm Fridge 

Breakfast Burgers 

• free-range eggs 

• brioche buns 

• cheddar cheese 

• 5tbsp tomato ketchup 

• 1tbsp brown sugar 

• 1tsp Lea & Perrins 

• crushed chilli flakes to taste 

• avocado (optional) 

1 Firstly add your ketchup, brown sugar, Lea & 

Perrins and crushed chilli flakes into a small bowl 

and really mix to make your spicy relish. 

2 Heat up a frying pan with a little butter and fry your breakfast 

burgers. Once they are cooked, leave them to cool slightly and 

fry your eggs in the pan, plenty of black pepper on the yolk. 

4 Melt your cheese onto the top of your brioche bun 

in the grill – for optional naughtiness you can brush 

both sides of the bun with butter before grilling. 

5 Stack your burger up and enjoy! (I sometimes substitute 

the cheese with avocado if I’m pretending to be healthier)
